Grazing made dairy farming fun again Burkholder starting 18th year with cows on pasture By Krista Kuzma

CLAREMONT, Minn. – Going into his 18th grazing season, Dwight Burkholder is feeling good about managing his dairy with rotational grazing. “Grazing has allowed me to have more up days than down days,” Burkholder said about his attitude towards farming. Burkholder and his family – wife, Darla, and their kids Jessica, Kara, Katelyn, Meredith, Matthew, Micah and Angela – milk 60 cows on their dairy near Claremont. The herd rotationally grazes and calves seasonally every spring. Their oldest son, Justin, who is also a partner in the Byron Seeds business Burkholder manages, helps occasionally on the dairy when needed. Cows start calving in March after about a two-month break from milking. Since pastures typically are not ready until the beginning of May, Burkholder will feed a variety of stored feeds along with 10-15 pounds of ground shelled corn, minerals and protein as needed to balance the ration. When the cows are able to graze, stored feed will be replaced with grass. “Grazing requires more exibility in management than mixing a daily TMR where it’s the same ingredients every day,” Burkholder said. “Flexibility is huge in the grazier’s world.” During the spring transition to pasture, Burkholder continues offering baleage at the bunk.

This will be his 18th year rotaƟonally grazing his herd. “I let the girls tell me what they want,” he said. “They can eat baleage at the bunk or go out to pasture. It’s their choice. Once the cows won’t come in for baleage, we know they’ve had enough out there. Then we quit feeding baleage.” Every 12 hours, the milking herd has access to a new half-acre parcel of pasture. Burkholder keeps a 30-day
rotation where cows will not revisit a piece of land until nearly a month later. “Some people would say the pasture is too mature at 30 days, but I don’t mind a little ber out there,” Burkholder said. “If you let that grass have adequate time to recover, you won’t run out of pasture very fast.” During the rst rotation of the year, Burkholder has to be extra patient.
“Because it grows so fast in the beginning of the growing season, by the time the rst cycle is complete, there will be grass that is heading out and losing quality,” Burkholder said. “People who want their cows to have the same forage quality in front of them every Turn to BURKHOLDER | Page 4

day would nd that extremely frustrating. You can’t let that frustrate you. The cows will eat the more tender stuff and leave the seed head anyway.” To help eliminate this issue for the rest of the season, Burkholder clips the pastures during the rst rotation after the cows leave to go to the next paddock. “After I’ve clipped it once, the grasses won’t head out the rest of the season,” he said. “I just had to get used to it and realize it’s part of the grazing process.” Burkholder has three types of grasses and three types of legumes in his pastures: meadow fescue, orchardgrass, bluegrass, grazing type alfalfa, white clover and red clover. “The pasture grasses and legumes I use now are much more durable, hardy and winter tolerant, and things click a little better,” Burkholder said. When he rst started grazing in 2003, Burkholder seeded primarily perennial rye grass. “You can’t beat it for quality and you can get a lot of milk. But it likes to go bye bye when it turns dry, and it’s a little nicky to get it to overwinter,” he said. “I fell out of favor with it pretty quick.” During his years grazing his herd, Burkholder has learned there are many principles that can be incorporated into any operation. This biggest lesson is that a
high in digestible ber is a way to increase herd health and protability. Weather can create challenges with grazing. “Last year was probably the most challenging year as a grazer I have ever had,” he said. “It wasn’t a fun year. We had a lot of rain here. There were a lot of days where we had to adjust the rotation just because we couldn’t graze a certain part of a eld.” Burkholder usually designates one pasture as go-to for rainy days where having cows on the grass might ruin the eld. It is usually a pasture he plans to tear up and reseed for the following year. There are also days where he has to keep cows up by the barn and feed them baleage from the bunk if the rain is too bad. Aside from a few frustrations, Burkholder said grazing has been benecial to his herd. The biggest improvement has been in cow health. There has not been a displaced abomasum on his dairy in 12 years, and his vet bill has reduced over $10,000 per year. The cows also no longer need their hooves trimmed every year because they do it themselves while on pasture. Turn to BURKHOLDER | Page 6

“It’s not like we’re not doing it because we don’t know any better, it’s just that none of them need it,” Burkholder said. Family time and time for other activities has increased for the Burkholders because the amount of chore time in the summer decreases. The barn only needs a thorough cleaning twice a week rather than daily and the barnyard is scraped twice a month rather than three times a week. The daily feeding is also eliminated. “All we really have to do is milk the cows and change the fence,” Burkholder said. “There is a certain amount of time that goes into changing fence that other dairymen may spend mixing a TMR or some other daily chore, but I personally enjoy it more.” Plus, the Burkholder family has a two-month break from milking in the winter. They dry most of their cows up by Jan. 1. Overall, grazing has made the Burkholders’ dairy more protable; however, Burkholder had to accept having a lower rolling herd average. “It’s hard, if not impossible, to be a grazier and have a really high herd average,” he said. “Yes, we’ll probably get

That’s where the prot lies in grazing – the cost savings far exceed the somewhat reduced revenue.” When Burkholder started grazing, his feed bill dropped by 70%. Fuel, repairs and hauling manure also had dramatic drops in expense. Because of
this, Burkholder said grazing helped to nearly double their net prot per cow. But wealth is measured beyond the checkbook for the Burkholders. “If the checkbook is in great shape, but you’re physically exhausted and emotionally drained, that to me is a miserable existence,” Burkholder
said. None of these aspects of life were going well for the Burkholders in the early 2000s, which is why they made the switch to grazing. Although he started grazing in 2003, Burkholder had been milking cows and feeding them conventionally since he
bought the farm after moving from Pennsylvania in 1995. “We had far more health problems than I thought a farmer should have,” Burkholder said. This included nearly half of his herd having a displaced abomasum. “Farming wasn’t fun for us,” he said. “We knew something had to change.” That is when he received a promotional yer in the mail from a seed company promoting rotational grazing. Burkholder had been interested in the management style while farming together with his dad before moving to Minnesota. “I thought I should look into it again,” he said. In 2003, he seeded 40 acres of his corn ground for pasture and never looked back. While there were challenges to overcome, Burkholder felt the lifestyle t his family. Plus, it made dairy farming fun again and gave the family greater purpose. “Ultimately, true wealth lies in when we understand that all we are is stewards of what God gave us,” he said. “Being a grazer has helped me realize these things.”

Immunity is a hot topic these days with the spread of the novel coronavirus across the globe, but developing immunity for newborn calves is something that has been on the minds of dairy farmers for years. Dr. John Ellis, a professor with the University of Saskatchewan Western College of Veterinary Medicine Department of Microbiology, shared how nature works to build immunity for the most vulnerable during his presentation at the Dairy Calf and Heifer Association Virtual Conference last month. “I want to have us think about how we are vaccinating, and put it in the context of how Mother Nature deals with infectious disease,” Ellis said. “We have a lot of good vaccines available, and I think we can really improve their efcacy if we rethink the way we are using them.” Ellis said many infections dealt with in both human and veterinary medicine are similar. “Calves and babies each have their own coronaviruses and rotaviruses,”
Ellis said. “There is little evidence of cross-transmission of those types of viruses between the species. Most of the respiratory viruses are speciesspecic.” Developing immunity is important for newborns because of the immediate exposure to pathogens they experience at birth, Ellis said. “We are born into a very dirty world, a world lled with millions and millions of bacteria and viruses,” he said. Ellis said there are differences among species in terms of how the infant is protected from disease by the mother. “In humans, rodents and lagomorphs (rabbits), there is essentially blood to blood connection between the mother and the fetus,” Ellis said. “What that means is immunoglobulin, or IgG, can pass between mother and fetus, so colostrum isn’t necessary in those species.” In the veterinary species, Ellis said there are many more layers of placenta between the fetus and the mother so the immunoglobulin does not transfer effectively. ConƟnued from MOTHER NATURE | Page 7 are endemic infections, something present in the environment. “What that allows is essentially free vaccination or priming of the immune system,” Ellis said. “Many of the respiratory viruses are there at some level, and we have the chance for the young individual to be primed by this natural infection.” The endemicity of these infections also allows for frequent boosting for the animals. “Both of these priming and boosting situations happen through the mucosal surface,” Ellis said. “In a natural situation, prior to vaccination, whether it was smallpox or measles, you name it; we had some level of priming and multiple opportunities for boosting. That made for some very effective immune response against some very dangerous organisms.” According to Ellis, the story of the importance of immunity is validated by the history of the western hemisphere and the spread of diseases such as smallpox and measles. “When the Europeans came, they had many of these bugs as endemic infections, and there was good herd immunity,” Ellis said. “Whereas the Native Americans, whether it be in North or South America, were essentially naïve to these pathogens, had no herd immunity and died in massive numbers.” Ellis said the current COVID-19 pandemic is a classic example of a virgin-soil epidemic, meaning it is the entry of a fairly new pathogen into a popula-

tion that has nearly zero herd immunity. Ellis said he feels the COVID-19 pathogen will not be effectively dealt with from clinical perspective until herd immunity to the organism is achieved. “That is going to take probably about 65% of the population being immune to this particular agent and its transmissibility,” Ellis said. “I think this particular example should turn disbelievers into believers in terms of the way that nature deals with infectious disease.” Ellis said in terms of the availability of vaccines, bovine medicine has been a leader in the area of respiratory diseases, and they work very effectively if used properly. He said most vaccines do not engender sterile immunity and complete prevention of disease but instead are meant to reduce infection. Using different forms of antigens for priming and for boosting has shown positive efcacy results, Ellis said. “The concept is that if you expose immune systems to different forms of an antigen by different routes, you will get a boarder and more durable response,” Ellis said. Ellis urges dairy producers to continue to be vigilant about passive immunization to create a base for building the immunity of their calves. “It’s really all about rethinking the way Mother Nature does it,” Ellis said. “We want to be using early mucosal immunizations to prime the immune response. Then we want to use timely boosting to engender long-lived response. The approach here is to improve on Mother Nature.”

What is your favorite subject in school? I like gym because you can run around and get to learn about different sports. What is something you have done academically while distance learning? I have learned about the earth’s crust and plate tectonics and all the different layers that make up our planet. What do you want to be when you grow up? A cop or a potato farmer. If you had your own farm, what would it look like? I would have a whole bunch of farm equipment and a lot of trucks. My farm would have a nice house, a horse, a dog and a few cows. Trainings geared towards Spanish-speaking employees Vázquez shares about free on-farm program through UMASH By Krista Kuzma

Through her on-farm workshops, Chela Vázquez wants to help dairy farm workers know and understand the dangers around them. “This is to make them think,” Vázquez said. “It’s important they take responsibility, become aware and think about themselves. In the end, anything that will happen, the person who is going to bear the consequences is them.” Vázquez is the coordinator and trainer for the Immigrant Dairy Worker Health and Safety Project through the Upper Midwest Agricultural Safety and Health Center. This project offers free on-farm trainings to dairy farms for their Spanish-speaking employees. Vázquez and Ana Contreras, a trainer for the program, work with farms across Minnesota. Contreras has worked as an animal science professional with dairies and joined the project to bring experience to the trainings, Vázquez said. “Raising awareness on health and safety, and discussing strategies to reduce and prevent injuries turns out to be an important factor in decreasing workers’ injuries on the job,” said Vázquez about why this program is important. She also said farm workers who have been on the job for several years tend to get used to it and think nothing will happen to them. “Sometimes our own beliefs contribute to injury because we may take things for granted,” Vázquez said. “Sometimes we think we should not be afraid because it’s our job to work on the farm.” However, Vázquez said being aware of the dangers is important.
Typically, Vázquez prefers the farms to have at least ve or six employees to participate in the program; however, if farms have fewer than ve and still want to participate, there is an opportunity to coordinate with nearby farms who also want to have free training. Over a 12- to 18-month range, dairies will have their employees participate in ve hour-long on-farm sessions. “We’re very exible with scheduling,” Vázquez said. “We want the dairies and employees to enjoy the project. We understand how busy dairies are.” The rst of the ve trainings is about general hazards on the farm. Vázquez said the employees can discuss things they have seen and provide examples. They also talk about why and how these hazards can be prevented. “They give their own solutions,” she said. “The power points are meant to stimulate discussion.” The second training is about animal handling. “Cows are huge animals,” Vázquez said. “From dealing with them in pens to feeding them or being around them in the skidloader, there are opportunities for anything to happen, so (employees) have to be alert.” Bovine diseases and how employees can protect themselves is also covered in this session. This includes how to wash hands and equipment, and using appropriate personal protective equipment. “That’s very relevant right now with COVID-19,” Vázquez said. “The foundation behind the trainings is that we make it appealing for people with low levels of education and this model is suited to easily adapt to emerging issues such as COVID-19. There are so many things we are doing in trainings, from hand washing to keeping healthy and safe, that are so relevant to the COVID-19 disease. Our approach is very important for this kind of public health issue.”
Machinery is covered in the third training session. Working in and around equipment can be dangerous. Vázquez said sometimes there are instances that are overshadowed with equipment. She gave an example such as slipping while getting into a skidsteer. “They need to think in advance about how to prevent that and how they can be safe,” she said. “It’s all about prevention.” The fourth training covers workers’ rights and responsibilities. This helps them understand the law at the state and federal level, and how they are protected. “They are workers,” Vázquez said. “As dairy farm workers, they have the same protections as any other worker.” The session goes through workers’ compensation, employee rules and regulations, responsibilities as workers and the farms’ rules. “They are protected, but they should also comply to the rules,” Vázquez said. “For example, if there is PPE, they should wear it.” The last training is about chemicals, conned spaces and silos. “They should be aware there are very strong chemicals,” Vazquez said. “Sometimes there are accidents, like if it splashes in the eye, they may have to go to hospital. They need to know how to read the label with the active ingredient. If they read them in advance, it can prevent something from happening because they know the risks.” All sessions are participatory training in Spanish and culturally appropriate, Vázquez said. “We don’t demonstrate things in the eld but we give examples in the classroom,” Vázquez said. “It’s mostly talking with them, engaging with them and letting them speak. We really have very good conversations and discussions.” This type of training encourages the employees to think for themselves, Vázquez said. She thinks this is a great
way for employees to learn. “It’s not so much they didn’t know, but it makes them think,” Vázquez said. Once the ve on-farm sessions are complete, one of the employees is chosen as a health promoter to continue the training for any new employees or employees who need the materials to be refreshed in the future. Employees take a quiz at the beginning and end of the program to assess their knowledge. “There are no grades and no names on the quizzes, but we enter the data and analyze it,” Vázquez said. The program has already been successful in Wisconsin, where over 68 dairies have trained employees. “Our results came out that this is statistically signicant that the employees increase knowledge,” Vázquez said. “We are very glad to know they are learning.” Vázquez said she likes hearing the testimonies from the workers about how the program is helping them be a better farm worker. “What they say is what really makes me feel uplifted,” she said. “It’s great to hear what they say. Seeing the engagement in the classroom – the talking, engaging and giving examples – that’s really satisfying to me.” Vázquez said being in the program should be an easy decision for dairy farmers since both the Occupational Safety and Health Administration, and Farmers Assuring Responsible Management require employees to be well trained. “It would be a pity if dairies didn’t use this opportunity,” Vázquez said. “Free training for your workers and your workers are more educated.
