Farmstead creameries adjust during pandemic Iowa dairies nd new ways to market product

The COVID-19 pandemic has created challenges for dairy at the farm, processor and retail level. For those who milk the cows, process the product and market it themselves, their entire distribution chain is affected.

Country View Dairy, owned by Dave and Carolee Rapson of Hawkeye, Iowa,

and Hansen’s Dairy, a family enterprise of Hudson, Iowa, are among those who have had to adjust.

The Rapsons began a farmstead yogurt business in 2011, processing and selling products across seven states.

They also operate a farm store, selling their products as well as other food and specialty items made in Iowa.

The Hansens established their creamery in 2004 and operate two consumer-facing

stores in Waterloo and Cedar Falls. They process and sell milk, cream, butter, cheese curds, ice cream, and Holstein and Waygu beef.

The pandemic has created both hurdles and new opportunities for the two familyowned businesses.

Country View Dairy lost 70% of its orders nearly overnight when governors ordered state lockdowns, said Bob Howard, the dairy’s director of marketing.

“We actually had a 2,000-pound order in transit to Chicago canceled the day things shut down,” Howard said.

Roughly half of Country View Dairy’s business is foodservice, including 15 colleges and 30 schools, all of which closed, Howard said. The other half of the business is retail grocery.

Hansen’s Dairy has also lost its sales to restaurants, but their own stores remained open as essential businesses.

“The very rst week, the time when there was no milk on the shelf, was great for us,” said Jordan Hansen, the creamery’s marketing manager. “We were never out of milk in our two stores, so that was a little surge. But a week later, everybody had their milk, and the restaurants were still closed.”

They have made stops every other week in New Hartford, Wellsburg, Jesup and Dike, and weekly stops in Grundy Center. They also added a Waterloo stop and have, on request, made private neighborhood visits. Employees who would normally have been assigned to the dairy’s many spring tours are being assigned to the deliveries.

The deliveries are no-contact with people staying in cars and using credit cards.

Demand for Hansen’s Dairy hamburger has been so strong they have limited purchases.

Country View Dairy’s product line included yogurt, frozen yogurt mix for soft-serve machines, sour cream and whole milk packaged in bags for coffee shop use – until the pandemic hit.

“We developed a retail label for our whole milk bags and began offering it in the farm store,” Howard said. “Lots of people discovered (the store) for the rst time. And we’re nalizing getting the frozen yogurt mix into a cold packed frozen yogurt for retail.”

Country View Dairy’s yogurt sales to grocery stores also went down initially but picked back up.

In all, Howard believes Country View Dairy’s sales are now down about 30% from what they were prior to the pandemic. The business has applied for a United States Department of Agriculture program that will buy products for food relief.

“That would be big for us,” he said.

“If we were accepted for that, we would actually make up the sales and then some.”

But Howard said Country View Dairy is fortunate because the co-op that processes the remainder of the herd’s milk, Wapsie Valley, has been able to take more of the daily production.

Hansen’s Dairy also ships a small amount of milk to Wapsie Valley, and has maintained the same balance of milk between the dairy and the co-op.

Both Hansen and Howard said they are seeing customers become creative in how they sell their products. Howard said one coffee shop in the Quad Cities is back to its regular usage of Country View Dairy’s milk because of curbside delivery.

Both dairies are also helping area food shelves buying dairy products and taking donations.

Howard said the trend toward buying local has helped. One of their distributors in Chicago added home delivery while another ramped theirs up. A customer in Des Moines also expanded home delivery.

“Their business exploded,” he said.

Hansen shared a similar thought, but said she is curious about future trends.

“We’re being well received,” she said. “I think people are seeing it’s easier for these small producers not to have breaks in the supply chain. They are noticing the local producers are there. I hope that mentality sticks around.”

Dairy farmers eligble for PPP, economic disaster loans

The Agriculture Department announced the April Federal order Class III benchmark milk price at $13.07 per hundredweight (cwt.), down $3.18 from March, $2.89 below April 2019, and the lowest Class III price since May 2016, another victim of the COVID-19 pandemic that has invaded our world.

The four month Class III average stands at $15.84, up from $14.71 at this time a year ago and $14.02 in 2018, but that average and farm prot margins will slip more as Class III futures late Friday morning portended a May price bottom at $11.26; June, $12.23 and July at $13.53, with a peak at $15.76 in November.

The Class IV price is $11.40, down $3.47 from March, $4.32 below a year ago, and the lowest Class IV price since September 2009. Its average for the year stands at $14.78, down from $15.69 a year ago and compares to $13.13 in 2018.

A letter from 23 U.S. dairy cooperatives this week requested USDA call an emergency hearing to amend Federal Milk Market Orders and establish a minimum Class I milk price mover of $15.68 per cwt. for June, July and August.

Two days later, the answer was no. The USDA stated it “would not be able to complete a rulemaking proceeding that allows all industry stakeholders the opportunity to adequately participate and implement the proposal timely.”

The proposal drew comment from many in the industry, many of which opposed the plan. The Minnesota Milk Producers Association argued; “While we all want higher milk prices, arbitrarily bumping prices to a made-up number could cause more harm than good,” and warned; “While raising the Class I price would help those in Class I (uid milk) areas, those farms without most of their milk in Class I would be left behind. While a mandated change in Class I milk price could affect government-related risk management programs, it could also limit hedging on the CME, which would adversely affect market liquidity.”

Bob Gray, editor of the Northeast Dairy Farmers Cooperatives newsletter, wrote, “A disservice was done to dairy farmers by rejecting this hearing out of hand. You hold the hearing, weigh the facts and make a decision based on the arguments presented. That is the proper way to proceed under the circumstances we nd ourselves in today.”

Meanwhile, the US Small Business Administration resumed accepting loan applications for the Paycheck Protection Program April 27 from approved lenders on behalf of any eligible borrower.

National Milk says “Dairy farmers are eligible to apply for the PPP, along with a separate initiative, Economic Injury Disaster Loans, for which the application window is also imminent.” But, both initiatives are rst-come, rst-served, and funds are expected to be depleted quickly after Congress replenished them.

The Federation called for elimination of the proposed $125,000 cap on federal disaster assistance for dairy, citing a new economic analysis that projects a 58% decline this year in net cash income for US dairy farms due to COVID aftereffects NMPF also says work must continue to expand overseas markets “not with an eye on what’s going to happen necessarily in the next week, but what needs to happen over the next year or two to help the industry recover.”

NMPF and the US Dairy Export Council praised a ruling this week by the US Trade Representative (USTR) rebuking the European Union (EU) for what it termed “protectionist dairy trade policies.”

The USTR charged that the EU has erected a “complex regime of trade barriers that harm opportunities for US exports to Europe. In addition, the EU has aggressively sought to restrict US exports in global markets by weaponizing geographical indications protections and blocking the ability of US suppliers to use common names to market cheeses like fontina, gorgonzola, asiago and feta.”

“The USTR has rightly taken Europe to task for their destructive and unfair campaign against American-made dairy exports, and in particular the highquality cheeses produced by the dedicated men and women of the US dairy industry,” said Tom Vilsack, president and CEO of USDEC. Dairy products were owing to China in March and whole milk powder imports were up 6.9%, strongest for the month in four years, according to HighGround Dairy (HGD). New Zealand represented a 90% market share, says HGD, but that was down from 95% last year. The second largest supplier was Uruguay.

Butter imports were up 108.1% from a year ago, anhydrous milkfat imports were up 21.4%, and cheese imports were up 53.6%. HGD said combined dairy imports were the strongest to start a calendar year on record and the biggest jump was from the US in the form of whey products. Whey imports from the US jumped 56% in rst quarter, but are still well below 2017 and 2018 levels.

Fluid milk imports were also the highest on record for rst quarter, with New Zealand the number one supplier. HGD says China was actually promoting dairy consumption as a way to build immunity against

Covid-19, which presumably increased demand for uid milk this year.

March imports of skim milk powder by Japan were down 16.0% from a year ago. Butter was up 31.5%, cheese was down 15.4%, and whey was off 3.5%.

HGD points out that market share shifted dramatically into March. Volumes from the EU were down 48% versus last March, shifting market share from 34% to 21%, but “It was the US that capitalized on much of that volume shift with SMP received from the country up 130% year over year, moving market share from 14% in March 2019 to 37% last month. New Zealand showed the steepest volume decline of any country YoY with volumes received down 62%.”

Meanwhile, the April 29 Daily Dairy Report warned that dairy exports to Mexico may be in jeopardy. The DDR says Mexico entered a mild recession in 2019 but “The seriousness of the situation did not truly become apparent until March when the Mexican peso crashed, losing nearly 20% of its value over the course of the month. The crisis deepened further in recent weeks as global crude oil markets collapsed,” the DDR stated, plus the COVID pandemic has added even more woes for our neighbor to the south.

Most cash dairy prices strengthened going into May. The Cheddar blocks closed Friday May 1 at $1.2050 per pound, up 13.5 cents on the week but 47 cents below a year ago. The barrels nished at $1.19, 14 cents higher, but 47.25 cents below a year ago. 3 cars of block were sold on the week and 13 of barrel.

Midwest cheese producers continue to nd milk at discounted prices and output has increased at some of the plants that recently cut back. Food service demand is more positive but sales are not where they were last year but are trending higher according to multiple producers. Cheese storage remains a concern.

Western cheese sales were unchanged to a bit higher. Retail demand remains stronger than normal and food service requests continue to revive but are still lower than usual as increase takeout orders is helping restaurants keep cheese orders coming. Cheese output is active but inventories are ramping up as sales are still below output. Most manufacturers have enough cheese storage but are concerned they may run out if the quarantine persists for a longer time.

Butter got to $1.1975 Thursday but closed Friday at $1.1875, up 4.25 cents on the week, ending 7 weeks of loss, but $1.0850 below a year ago, with 14 sales.

Butter plants are actively churning and cream remains widely available. That said, a number of contacts do not expect the easily accessible cream stores to remain as they are. Cream prices are trending higher and plant managers say domestic retail business is busy as customers take advantage the low prices.

Plentiful cream is keeping western butter output heavy. Demand from retail has slowed from the panic buying a few weeks ago. Some contacts report a slight increase in restaurant purchases due to drive-thru and takeout meals but butter usage is typically very light for takeout items. Educational institutions and much of their food service activities are shut down though some schools are providing meals, but again, butter usage is light and not close to normal volumes. Some parts are planning to reopen restaurants in the next month but it may take time for the food service segment to get back up to normal levels, says DMN. Grade A nonfat dry milk closed Friday at 79.25 cents per pound, 1.75 cents lower on the week and 26 cents below a year ago. 3 sales were reported on the week.

Whey saw a Friday nish at 39.50 cents per pound, up a penny on the week and 4.75 cents above a year ago, with 7 sales reported for the week.

Wisconsin remained the leading cheese producer, with 25.6% of the total.

Italian cheese amounted to 5.67 billion pounds, up 1.8%, and made up 43.2% of total cheese output in 2019. Mozzarella accounted to 79.3% of the Italian total, followed by Parmesan with 7.3%, and Provolone at 6.8%. Wisconsin was the leading producer of Italian cheese at 30%.

American cheese output totaled 5.23 billion pounds, down 0.4% from 2018 and accounted for 39.8% of total cheese output. Wisconsin again was the leading American producer at 19.2%.

Butter output hit 1.99 billion pounds, up 1.3% from 2018. California was the Number 1 butter producer, with a 29.8% share.

Nonfat dry milk powder totaled 1.85 billion pounds, up 4.1% from 2018, and skim milk powder, at 573 million pounds, was up 2.2% from 2018. Dry whey totaled 978 million pounds, down 2.2% from 2018.

Reports warn that the US food supply chain is breaking as primarily meat packing plants are being idled due to employee COVID sickness. The President issued an Executive Order to keep such facilities operating yet protect their employees.

FC Stone’s April 28 Early Morning Update stated; “It looks like the average animal processing plant, excluding poultry, has more than twice as many production line and handling employees as the average dairy plant.”

“The averages probably hide a very skewed distribution of plant sizes though,” says FC Stone. “Tyson’s Waterloo Iowa hog plant is their largest and has 2,800 employees while their Logansport Indiana plant has 2,200 employees. The JBS cattle plant in Greely Colorado has 6,000 employees. Not all of these would be production line material handling, but a large percentage would be.”

FC Stone adds that “The new cheese plant in St. Johns Michigan will be one of the biggest in the country but will only have about 290 employees at the plant. In 2011 the Hilmar Dalhart, Texas cheese plant had about 250 employees operating a very large plant.”

“We’re not saying dairy plants are immune or we won’t see some shutdowns due to an outbreak, but the slaughter plants look a lot more vulnerable than the dairy plants,” FC Stone concludes.

A lower All Milk price could not be offset by lower feed costs so the March milk feed price ratio fell for the fourth month in a row and is at the lowest level since July 2019. The USDA’s latest Ag Prices report put the ratio at 2.23, down from 2.34 in February but compares to 2.14 in March 2019.

The index is based on the current milk price in relationship to feed prices for a dairy ration consisting of 51% corn, 8% soybeans and 41% alfalfa hay. In other words, one pound of milk purchased 2.23 pounds of dairy feed containing that blend in March.

The All-Milk price averaged $18.00 per cwt., down 90 cents from February but was 40 cents above March 2019. California’s All Milk price slipped to $17.60, down $1 from February but 30 cents above a year ago.

Wisconsin’s, at $18.10, was also down $1 from February but is 80 cents above a year ago.

per bushel, down a dime per bushel from February but 7 cents per bushel above March 2019. Soybeans averaged $8.46 per bushel, down 13 cents from February and 6 cents per bushel above a year ago. Alfalfa hay averaged $175 per ton, up $4 per ton from February but $11 per ton below a year ago.

Looking at the cow side of the ledger; the March cull price for beef and dairy combined averaged $67.50 per cwt., up $1.70 from February, $4.70 above March 2019, but is $4.10 below the 2011 base average of $71.60 per cwt.

The USDA’s latest Crop Progress report shows that, as of the week ending April 26, 27% of the US corn crop has been planted, up from 7% the previous week, 15% ahead of a year ago, and 7% ahead of the ve-year average.

8% of the soybeans are in the ground, up from 2% a year ago, and 4% ahead of the ve year average. 13%

of US cotton has been planted, up from 11% the previous week, 3% ahead of a year ago, and 2% ahead of the ve year average.

Cooperatives Working Together (CWT) member cooperatives accepted seven offers of export assistance from CWT that helped them capture sales contracts for 191,802 pounds of Cheddar, 83,776 pounds of butter, and 2.094 million pounds of whole milk powder.

The product is going to customers in Asia, Central and South America, and North Africa through August and raised CWT’s 2020 exports to 16.076 million pounds of American-type cheeses, 4.268 million pounds of butter (82% milkfat), 1.960 million pounds of anhydrous milkfat, 2.439 million pounds of cream cheese and 16.338 million pounds of whole milk powder. The product is going to 24 countries and are the equivalent of 436 million pounds of milk on a milkfat basis.

World commodity markets have been challenged with a price discovery game that has never been played before. Cheap prices are sending the signal to slow production and encourage new demand, but much of the demand is restricted in how it can function even though it would like to at these prices. Livestock futures are anticipating a late year demand recovery, while grains are indicating a longer term bearish situation as demand slows and stocks build.

Class III prices have seen a modest bounce off of recent lows. Price strength is coming from a 7-9 cent whey price improvement in the past month for 2020 contracts and a 20 cent rebound in block and barrel cheddar in the CME Group spot market. Cash markets are now showing a projected Class III settlement of $11.50 vs. the mid-April sub $10 estimate.

Butter and NFDM prices continue to weigh heavily on Class IV prices, with most 2020 contracts trading in the $12’s or lower. For producers shipping milk and pooling in the Central FMMO order this is not good news, as this will impact a larger portion of your PPD in the pay price calculation.

trading over $2/lb, EU $1.40, and U.S. spot near $1. This should encourage world cheese buyers to call on U.S. suppliers. Although positive, the strong U.S. dollar is hindering international buyers from fully benefiting from this significant U.S. price discount.

The corn market is showing the exposure it has to the energy market. Like it or not that is the reality of today’s world. Given the current rate of ethanol production and energy use, it is likely that at least some of the shutdown ethanol plants will need to fire back up at some point in the coming month/s to keep ethanol stocks near normal levels.

May 12 will be the first USDA Supply and Demand report showing 2020 crop year projections. The report will likely use the large surveyed corn planted acreage number released in the Prospective Planting report.

This may lead to the first three billion bushel projected corn carryout and show the trade just how low corn prices can trade in a black swan event.

Cramer offers tips to reduce lameness

Find ways to control digital dermatitis, corkscrews

MADISON, Wis. – Reducing and preventing lameness is a constant goal of most dairies and one Gerard Cramer, DVM, thinks is attainable.

“Aiming for zero percent new lame cases in a day is not complicated,” Cramer said.

Cramer presented, “Let the hoof chips y,” at the Professional Dairy Producers of Wisconsin Virtual Business Conference March 18-19 in Dr. Gerard Cramer Madison.

University of MN Cramer, an associate professor in the department of veterinary population medicine at the University of Minnesota College of Veterinary Medicine, discussed ways to reduce lameness on dairies while focusing the conversation on digital dermatitis and corkscrew lesions.

“Dairies need to nd an approach that works for them,” Cramer said.

“The goal is to keep cows mobile.”

One of the most common hoof ailments on dairies everywhere and a leading cause of lameness is digital dermatitis.

“Digital dermatitis is a lifelong infection,” Cramer said. “If an animal gets it, she’s going to have it for life.

Therefore, the goal with digital dermatitis is not a cure. Rather, we want to get it to a certain level and maintain it. It’s actually the easiest of the foot diseases to control. We know what we

have to do.”

Digital dermatitis prevention and control begins in heifers. Heifers that contract DD are set up for a lifetime of hoof problems. A 2015 study by Gomez et al., found that 80% of heifers that never had DD pre-calving stay clean in the next lactation. In those treated for one case pre-calving, about 50% stay clean, while the other half become repeat offenders. For heifers with more than one case before calving, 70% will get repeat cases in their rst lactation.

“We can control it in our lactating herd, but if we don’t control it in heifers, they come in with new lesions and continuously introduce new cases into the herd,” Cramer said. “The footbath is one strategy for controlling the disease in heifers. Zinpro also has a (feed additive) product that has shown efcacy towards reducing the incidence of new lesions in heifers.”

The key is to treat DD early and aggressively, and then rely on the footbath for control.

“Our goal for treatment is to reduce the pain,” Cramer said. “The next part of treatment involves the footbath in which we try to progress the lesion to where it’s healing or at least maintain it at a chronic stage without making it worse.”

Cramer has found tetracycline to be effective in treating DD when spread over the whole lesion in a liquid or paste solution. To use responsibly, Cramer said it needs to be applied at the lowest possible dose.

“You can see success using as little as 2 grams of tetracycline and likely get away with using even less,” Cramer said.

Tetracycline shows up in milk, and the higher the dose, the longer the residue. This has led people to try other products. However, Cramer said the efcacy of some of these products is questionable.

“If you only have one or two

cases, treating a cow with antibiotics wouldn’t be an issue,” Cramer said. “There are herds where we see very low levels – less than 1% of DD cases – so then treating the odd cow isn’t as much of an issue as treating a lot of cows in one herd. You can also use pastes and copper-based products.

We have to consider what we are trying to do. Does it harm the cow? Digital dermatitis is very painful, and we need to reduce that pain as fast as possible.”

The control of digital dermatitis focuses on two things – hygiene and footbath, with hygiene being the biggest driver. Cramer is not a fan of alley scrapers, which he refers to as a foot bath with a manure tsunami in front.

“Hygiene is a key component and something we need to focus on when it comes to digital dermatitis,” Cramer said. “The goal is to have clean, dry feet, and there are different strategies for achieving that. If you have alley scrapers, look at the timing. Are they running on herd check day? Does the vet have to jump over the alley scraper when cows are in head locks? Are cows left standing in too much manure or crossing when there’s a huge wave of manure to travel through?”

When designing a footbath, make sure it is at least 10 feet long. This helps increase contact time. To get appropriate volumes and save money, a farm might create a narrower footbath.

A typical width is 20-24 inches. The bath should feature tall sides to prevent loss of solution. Footbaths may incorporate a tunnel design for tighter product containment. Footbath frequency depends on the farm’s goals, what the footbath looks like, products used and hygiene of cows’ feet.

“There is no simple answer,” Cramer said. “Run it as frequently as you need to get to the level of DD that you

want. If you’re not happy with the number of cases, crank up your footbath frequency. If you are happy, then start looking for opportunities to save costs on product and start switching out products or reducing frequency.

For example, you could switch out copper sulfate for soap or rock salts.”

can be used at 1%-2 % with no handling when pumped from a barrel into a vat. The key is to minimize exposure for the sake of human health. If people are carrying the product back and forth, they should wear a gas mask.

“I don’t think we need to stop using formalin, we just need to use it wisely,” Cramer said. “I think it’s the most cost-effective solution we have at this point with the lowest environmental impact post-foot bath.”

Copper sulfate is another popular footbath product. Cramer recommends using it with acid to reduce the pH to between 3 and 5. There is some concern with driving the pH too low, however, which could actually create more chronic lesions.

In discussing corkscrew lesions, Cramer said they occur when the P3 bone rotates all the way through the foot. Corkscrews can result in thin soles. A toe that is curved is not necessarily a corkscrew – it may be a long toe. A true corkscrew exhibits curvature all the way from the coronary band on down. The overcrowding of heifers combined with the use of headlocks and sand bedding is a common cause of corkscrews. If a heifer is put under pressure while reaching for feed during a critical growth period, it can change the foot’s bone structure. The bone rotates as the animal pushes forward, putting tension on ligaments.

The more she reaches, the more it rotates, and the more severe the damage.

On sand, animals have added traction, allowing them to put even more pressure against the headlock when reaching for feed. This places additional pressure on the inside of the hoof, putting tension on a bone that is loose and developing.

Pushing feed up more often can help alleviate the issue. But some experts believe the only way to truly eliminate the problem is to not raise heifers on sand.

Corkscrew feet should be trimmed like normal, trimming at and then 90 degrees to the cannon bone with more aggressive trimming on the modeling to remove pressure. Trimming a reverse corkscrew in the medial hoof requires great care. Because the bone is turned, it is difcult to judge the foot’s thickness.

“Removing the curvature is the worst thing we can do for the corkscrew,” Cramer said. “Although it’s tempting to want to remove this loose horn, it actually provides stability.

Removing it would reduce the surface area and decrease stability, and I would argue the cow is going to grow it back as fast as possible. Hooves grow around the shape of the foot, and in this case, the bone is rounded so the hoof grows at an angle.”

Cramer recommends looking cows over systematically every couple weeks and putting someone in charge of nding lame animals.

“We need to nd these cows way before that point,” Cramer said. “We need to nd lame cows as early as possible. Once they are three-legged lame, damage has been done inside the foot.”

Lesions found early have less inammation. A block can be applied, and within four weeks, evidence of a prior lesion could be non-existent.

But if left untreated, inammation and bony changes are guaranteed, resulting in an ulcer that returns every lactation.

Cramer identied three groups of cows to trim on dairies – routine maintenance trim, lame cows and cows with a history of lameness. A healthy cow on a larger dairy probably only requires a maintenance trim at dryoff. A cow with a history of lameness should be trimmed every three to four months. Treat lame cows immediately.

Create a foot trim recheck list to follow up with certain cows in about four weeks.

Addressing lameness requires teamwork. The dairy producer, nutritionist, hoof trimmer and veterinarian must all work together to identify bottlenecks on the farm that contribute to lameness – whether trimming, hygiene, footbath or other – and make necessary changes.

“We all like working with healthy cows and see lameness as an impediment to your dairy’s progress, productivity and sustainability,” Cramer said.

“Getting these people to talk and communicate as a team is the rst step in addressing lameness and maintaining good hoof health on your dairy.”

Even if you put the time and effort into something, there is still a chance it ends up being a total failure.

Planting took a break May 1 so they could get the equipment xed and allow the custom planter to work in his own elds.

Gene started the day in the shop, also xing a few items and making sure the tractor that was going to be used for manure hauling later in the day was in top working condition.

Phyllis checked in on the grandkids before checking to see what errands needed to be made or bookwork needed to be done. In addition to working on the dairy, Phyllis works part time at Mayo Clinic.

Emily, who worked on many projects throughout the day, starting with laundry followed by working in her greenhouse where she started to put lettuce in her homemade hydroponic system. It is an addition to her already large gardens where she grows items to sell at the Lewiston Farmers Market, which she started last year and acts as the market manager.

She was looking forward to the second year and helping the weekly event grow; however, it is now on hold because of the pandemic.

“It used to be a family night out,” Emily said.

“We built this whole community where people were venturing out and seeing their neighbors again. We started only with the goal to feed the people and it turned into much more.”

In addition to this job and her role on the farm – running for parts, making meals, doing landscaping and yardwork, along with any other odd jobs that come up – Emily also works part time for the Minnesota Dairy Initiatives Southeast Region. As a hobby, she also blogs about her home projects at Hearty Sol, Living Simply on Purpose.

The days have been full lately as the Tweten children have been distance learning online rather than attending Lewiston-Altura Elementary School; however, May 1 was a day off, so instead of doing school work, the Tweten children enjoyed the day playing in their tent made of blankets outside, feeding their farm animals and helping their parents and grandparents with farm chores.

and Avyn and Wren practiced their guitars. The family dabbles in several instruments, including guitar, ukulele, harmonica, trumpet, clarinet and violin.

“It’s a good place to raise a family,” Gene said about the farm.

One of his favorite parts of farming is being able to regularly see his grandkids.

“They are (doing school work) at home now, but when they were in school, I would get to the farm before they left and give them a big hug,” Gene said.

Phyllis also likes being able to help take care of her grandkids during the day so Carey and Emily have time to work on projects and farm chores.

While the pandemic has created a few worries for the family such as the low milk prices and potentially higher insurance premiums, there have been silvers linings – lower fuel prices, more family time, and more people and food banks seeing the value in dairy products.

“It has recreated family structure where we are all together cooking, doing homework and working together,” Phyllis said. “It’s like an extended summer.”

After the midmorning break, the family went their separate ways to get more work done.

Phyllis said Carey and Gene are very much working managers, working alongside employees and being involved in the day-to-day tasks on the farm. They have 15 full-time employees who work together to get all the chores done, including the three-times-a-day milking schedule. Milking happens at 4 a.m., noon and 8 p.m. at Valley Acres Dairy which runs two farm sites about 1 mile away.

The families bought the farms in 2012 after dairying previously in Eyota and Rollingstone. Carey, who also grew up on a dairy farm, has been farming together with the Speltzes since he graduated from high school in 2000. During his college years at the University of Wisconsin-Plateville, he attended classes during the week and returned to the farm on the weekend.

“The parlors and ventilation for the cows and employees were starting to deteriorate,” Carey said.

They replaced the parlors – one in 2014 and the other in 2017 – with new equipment.

On one farm, cows are freshened and milked in a double-8 parallel parlor. Later in their lactation, cows are moved to the second farm where they are milked in a double-10 parallel parlor until dry off. Dry cows are moved to another rented facility for 45-50 days before being sent back to the rst dairy site.

Calves leave the farm at 2 days old and are cared for by a heifer grower until 60 days pregnant. After that, the heif-

ers are transported to a farm in Eyota where the Speltzes live.

After nishing the morning doing more work in the shop and cleaning equipment, Carey and Llewyn spent the afternoon nishing tillage on a eld near Rushford, a one-hour trek to get to one way.

The families manage 1,100 acres of owned and rented crop land; however, the parcels are spread out over a 20-mile radius of the main farm. It is one of the biggest challenges.

“It would be nice to be closer to the dairy, but that’s not the case,” Carey said. “We need feed for the cows so we do what we have to.”

Because their elds are spread out, it can be hard to keep track of where the trac-

tors are at any one time. To help, the families use an app called Life 360. Everyone in the family has the app so they can check on their locations while in the eld.

“For business use it’s really nice,” Emily said. “It’s proven most helpful on the farm, especially since everything is spread out.”

The Twetens and Speltzes raise corn and alfalfa along with winter rye and a nurse crop of oats in the alfalfa. They have been planting the cover crops for about ve years.

“We think it does the job,” Gene said. “It helps keep the soil intact.”

work together with three farms to get the harvesting and manure hauling done. They also do a little custom harvesting.

Emily, Phyllis and the kids ran errands and did other chores at home while Carey nished in the eld. Gene looked over a new-to-the-farm John Deere tractor before going to the second farmsite to unplug a manure pump.

They day ended with more planting progress, clean sheets and a homemade meal in the eld.

It was a good start to the month of May. “We don’t work until the end of the day, we work until the job is done,” Gene said about the farm’s philosophy.

We started liquid manure April 22 and finished April 24. We started planting corn April 25.

We have all of our corn planted except for a 30- RAINFALL acre field we are doing TOTALS Last 2 some dirt work on. The corn on the sand ground Weeks is 80-90% emerged. We planted Mycogen BMR corn and for grain we did Pioneer and Gold Country. The existing alfalfa fields really came around with the rain. The Since April 11 new seeding is coming 0.8” on really good as well.

We have done some custom tiling and planting for neighbor. We are getting our sprayer ready to go.

We had really good couple weeks. We started pumping manure April 22 and seeded 80 acres of new seeding alfalfa RAINFALL April 26-27. The corn is out in some spots. We finished our corn April 30 and we finished planting soybeans May 1-2. We planted two varieties RAINFALL of corn, Pioneer BMR TOTALS Last 2 and DeKalb. I would say 75% of the corn is Weeks done and around half of the soybeans. The alfalfa looks really nice.

It will probably be three 0.2” weeks before we cut.

All of our oats are up and have a really good Since April 11 start. Our rye from last 0.2” fall is 8 inches tall.

April was a really nice month for us with a lot of opportunities to get seed into the ground.

Our soil worked up RAINFALL like a garden. All of the TOTALS corn and most of the Last 2 soybeans in our area Weeks have been planted.

We are way ahead of last year. We started planting our corn April 1.5” 21 and were able to finish within a few days.

This has been one of the nicest springs that Since April 11 2” we have had in many years.

Everyone around here is rolling and the conditions are nearly perfect for planting. We are RAINFALL starting to put our TOTALS corn in today (May Last 2 6). Some guys are Weeks done, some about half and some just getting started. It really depends on 1.3” where they are and what kind of ground they have. We have Since April 11 1.8” our alfalfa all in.

When I nally needed to hit the grocery store and restock, I discovered some of the things on my list were gone.

The soup aisle was barren. My favorite salad dressing was not to be found. So I stocked up on the basic ingredients to make what I needed – kind of a doit-yourself cooking project. Here are some recipes I discovered and have completely changed what I deem necessary ingredients.

This all started when I could not nd cream of mushroom soup. Ann told me she makes her own creamed soup. I found a recipe on the Tastes Better from Scratch website. It gave me a starting point, and I tweaked it to t my tastes. Here are my shortcuts and what works for me.

Condensed cream of anything soup 1 cup cold milk 2 tablespoons cornstarch 2 tablespoons butter 1 cup sliced mushrooms (baby bella are the best avored) 1 cup chopped onion 1 teaspoon chicken bouillon 1/2 teaspoon salt Dash ground pepper 1/4 teaspoon garlic powder 1-2 tablespoons dried parsley akes In a large saucepan, melt butter.

Sauté mushrooms and onion till translucent, about 10 minutes. (Will be juicy; the liquid is avor.) Whisk together milk and corn starch. Add to vegetables. Add chicken bouillon, pepper, garlic powder and dried parsley akes. Stirring frequently, bring to a boil and simmer for 30 extra seconds to thicken. Use in recipes to replace one can of cream of anything soup. Can add celery or chicken if that is what you are looking for.

Mark will eat this by the spoonfuls before I can use it in casseroles. Ann is right. Tastes better and I can control the salt levels. I will triple the batch to make casseroles for the freezer.

With the garden going in, fresh spinach and lettuce will be hitting the table soon. My favorite salad dressing is raspberry vinaigrette. It is hard to nd and when I do, it is never on sale. I found an unopened jar of raspberry preserves in the back of the refrigerator the other day. I remember buying it for a special recipe but forgot which one. Then I found this recipe and remembered what I wanted to make with it. Here are two options.

Raspberry walnut dressing by Better Homes and Gardens 1/2 cup raspberries, fresh or frozen, thawed 1/3 cup toasted walnut pieces 1/4 cup red wine vinegar 2 tablespoons honey 1 tablespoon Dijon style mustard 1/2 teaspoon salt 1/4 teaspoon pepper 1/3 cup olive oil In a blender, add everything except olive oil. Cover and blend until nearly smooth. With blender still running on low, drizzle in oil until combined. Serve with lettuce, spinach or fruit salads.

Store extra in refrigerator.

6 ounces fresh raspberries 1/2 cup coarsely chopped, toasted walnuts Whisk preserves, oil, vinegar, salt and pepper together. Add spinach and onion. Toss to coat with dressing. Add raspberries and walnuts tossing very lightly. Serve immediately.

Probably the thing I have made the most during this stay-at-home order is bread. I nally read the instructions with my mixer on how to correctly use the bread hook to knead the dough.

Amazing how well things turn out if you read the directions. I am baking at least six loaves of bread a week. Yes, it takes extra time but is so worth the effort as you bite into the heel with remnants of melted butter slices.

Snicker bars by Corena Green 1/4 cup white syrup 2 cups brown sugar 2 cups butter 2 cups roasted peanuts 2 cups chocolate chips Graham crackers Line a cookie sheet or jelly roll pan with whole graham crackers. Boil syrup, butter and sugar for 4 minutes.

Pour over graham crackers. Sprinkle peanuts and chips on top.

Oatmeal bread by Sister Geraldine 3 cups milk, warmed 3 tablespoons butter 1 cup rolled oats 1 tablespoon salt 1/4 cup molasses 3 packages, plus 2 tablespoons yeast 6-7 cups our Warm milk and butter to 105-110 degrees. Remove from heat. Add oats.

Stir. Pour into large mixing bowl. Add salt, molasses and yeast. Beat until smooth. Add our, 1 cup at a time.

Knead 8-10 minutes. Place in a greased bowl, cover and let rise about an hour or so. Punch down. Shape into three loaves. Place in greased pans. Cover and let rise for another 30 minutes.

Bake at 375 degrees for 35-40 minutes.

Why not candy bars? Whenever Matt comes for a visit, he generally brings us his mom’s bars. They have been a hit at graduation parties and potluck. Quick and simple to make.

Preheat oven to 350 degrees. Boil lasagna noodles and fry 1 pound of hamburger. Add 1/4 cup onion and 1/4 cup green pepper to hamburger.

Drain grease off hamburger, add two jars spaghetti sauce and 1/2 container cottage cheese. Drain noodles. In casserole dish, start with noodles on bottom, next is sauce, then top with shredded cheese – one package per layer. Keep alternating for three or four times. To top it off, use two packages of cheese. The Italian blend, Colby-jack and mozzarella are the three I use. Bake for 45 minutes or until top is golden brown.

Line an 11x7-inch baking pan with parchment paper. Place 1 cup of chocolate chips and 3 tablespoons of peanut butter in a heat proof bowl. Microwave for 60 seconds and stir until smooth and combined. Microwave for few more seconds if needed. Pour melted chocolate in prepared pan and spread evenly. Place pan in freezer for 2-3 minutes or until hardened.

Meanwhile, in a clean bowl place marshmallow uff, 1/4 cup peanut butter and powdered sugar. With a wooden spatula stir until it forms a soft dough. (Can be done in a mixing bowl using dough hook as well). Remove “dough” from bowl and press with ngers on top of chocolate layer.

Sprinkle peanuts on top, gently pressing them in. In a small saucepan add the caramels and heavy cream. Cook over medium heat, stirring constantly until melted. Immediately pour over peanuts, spreading it all over with the back of a spoon. Refrigerate for 5 minutes until set. In a heatproof bowl, melt remaining chocolate chips and peanut butter. Pour over caramel layers, spreading evenly. Place pan in refrigerator for 10 minutes until chocolate is set. With a sharp knife, cut into bars.
