Mueller Dairy receives quality award

Cleanliness, sand bedding among factors leading to low SCC

SAUK CENTRE, Minn. – Producing quality milk is not something new for Bob Mueller and his two partners – Tom Stangler Jr. and Jeremey Smith. But this year was the rst the farm received Organic Valley’s Cream of the CROPP Award for the lowest somatic cell count in the Midwest Region.

The farm had previously received the co-op’s Gold Award the past three years for consistently producing milk with a somatic cell count lower than 100,000 cells/mL. “It was surprising,” Mueller said.

“There are some good farmers in this region with some good counts.”

Stangler, too, was surprised but knew it was within their reach.

“It’s always been our goal to stay under 100,000 SCC,” Stangler said.

and has been part of the Organic Valley cooperative since. The dairy milks a herd of 110 cows; one-third of which are Swedish Red and Montbeliarde crosses.

The rest of the herd is Holsteins.

One person milks the herd twice a day in a swing-10 New Zealand-style parlor. The milking units are automatic take-offs.

Mueller credits several management practices including sand bedding in the freestall barn, cleanliness, consistent milking procedures and milk out that have all contributed to gradually lowering his herd’s somatic cell count through the years.

When the herd was in the stanchion barn, Mueller noticed a drop in the herd’s SCC after switching to paper bedding from straw. Mueller credited the better absorbency of paper. Since 1996, the cows have been housed in the freestall barn with sand bedding. Mueller noticed a 10 percent drop in SCC after the switch.

Monitoring each cow is also important.

“Three years ago, we started [CMT] paddling the cows,” Mueller said. “That helps because sometimes a cow that looks cleared up, may not be. Her counts still may be high and the paddle catches that.”

If a cow is running a high cell count or has a case of mastitis, it is tested with a CMT paddle to nd which quarters are infected. The cow will be milked accordingly with a quarter milker or bucket until her CMT test runs clear. The withheld milk is fed to the calves. Then the quarter is rubbed with a liniment.

“We’ll do the liniment rub for about a week and if it doesn’t clear up, we keep milking with a quarter milker and paddle testing her until it clears up,” Stangler said. “In really bad cases, I will give a shot of vitamin C under the skin.”

“I have talked to other farmers that have used them and said they work really well,” Mueller said. “I haven’t had time to try it and what we are currently doing has been working really well.”

Communication is key among the people milking the cows to keep milking procedures consistent. A white board helps keep everyone informed on chang-

The only difference is Stangler adds an extra step of dry wiping each cow before coming back to pre-strip and pre-dip where Smith and Mueller usually start their milk prep. The cows are pre-dipped and post dipped with the same iodine solution.

Mueller’s herd is SCC tested on every milk pick up. The SCC averaged 77,000 for 2017. The count is something Mueller, Stangler and Smith are all very proud of. It is something Mueller said he has always worked on as the SCC count has gradually gone down the last 20 years.

“It’s really about having healthier cows,” Mueller said. “The SCC is indicative of how the cows are doing. Milking takes a little more time, but it’s worth taking a few extra minutes.”

Mueller received a somatic cell premium between $1.25 and $1.45 per hundredweight throughout 2017.

“It adds up pretty quick,” Mueller said. “Premiums can make a big difference.”

Mueller also pushes for components. The herd averages a 4.2 butterfat and 3.2 protein in the winter

months.

“Nutrition plays a key role in keeping the cows healthy and somatic cell counts low,” Mueller said.

“We have fed kelp if there is an increase in problems with mastitis.”

From April until October, the cows are grazed on 100 acres, some of which will be harvested for dry hay or in a different crop before being pastured later in the season. During the summer, the cows’ TMR ration of corn silage, haylage, snaplage, dry hay and grain is cut in half.

“Hay is good for butterfat and keeps the rumens

going,” Mueller said.

Cows are on pasture most of the day during grazing season. Every day the cows are turned onto a new pasture. The cows are managed by two groups – a high and low. There are nine pastures where the wire can be moved every day with the goal of being done with one pasture in ve days before moving on to the next one.

The low group will run clean up once the high group goes through. Then, the high group will move on to starting on a new pasture.

“I love seeing the cows on pasture,” Mueller said.

“It makes a lot more sense to bring the cows to the feed than bring the feed to the cows. It’s a lot more efcient.”

After so many years of working to keep the SCC low, Mueller said it is all been a part of his management plan for the dairy. Receiving the milk quality award was nice recognition for the years of extra, detailed work.

“We’ve worked really long and hard at it,” Mueller said. “It’s not an overnight thing to change a SCC. It takes a bit of time to whittle it down. It’s a slow process.”

A combined 13 decades of dairy dedication

Hines brothers work in industry on, off the farm

ELLSWORTH, Wis. – When it comes to their careers, the Hines brothers can condently say they are dedicated to dairy.

Between the three of them, the Hineses have worked 136 years in their careers. The eldest, Joe, has worked for Ellsworth Cooperative Creamery for 51 years and is plant superintendent. Dean has put in 43 years at the creamery and is the eld supervisor. Dale, who said his career as a dairy farmer started at age 16

even if he put in many years prior as a kid, has been dairying for 42 years on the family’s 70-cow farm near Ellsworth, Wis. Beyond their two jobs at the creamery, Dean farms with Dale, milking cows every morning and evening, while Joe helps with eldwork, fencing and other odds and ends.

“It’s not the idea that we love work, but we like to see at the end of the day we accomplished something. We can get a lot more done working together than we can alone. We’re fairly efcient,” Dale said about working together with his brothers.

Hard work is a trait ingrained into the Hineses from a young age by their parents. While their dad worked off the farm as a milk hauler for the creamery, their mom took charge at home on the dairy.

“We did chores with her morning and night,” Dean said. “Then, she would come out and help us cut hay and run the hay baler in the summer.”

A lot of the work in their earlier childhood years on the diversied farm was done the hard way. “[Mom] would run the wheelbarrow when I was too small to run it,” Joe said.

“We cleaned the gutters by hand.”

By the time they were 11 years old, the Hines brothers had mastered milking cows.

“During deer hunting I wasn’t old enough to go,” Dale said. “When everyone came home I was almost done with chores. It’s hard to comprehend someone that young doing that kind of responsibility because today you never see that.”

“Before we had our drivers’ license Joe would pick us up at the school so we’d get home quicker,” Dean said.

“Then Joe would help us do our chores.

We all worked together. Joe would supervise us. We were little kids and he would direct us.”

In the summer of 1966, Joe had an opportunity to work at the creamery, a prominent business in the local commu-

nity. It’s also where the family sold their milk since the processor rst opened.

“I was baling hay one day when Dad came home and said they’re looking for help at the creamery. I worked 50 hours the rst week, about 60 hours the second week and 51 years later I’m still working 50-some hours a week,” said Joe, whose position is just one level below Turn to HINESES | Page 7

“I had been making $2.10 per hour in construction before working at the creamery. I had to take a pay cut,” Joe said with a laugh.

As time progressed, so did the technology. Joe progressed with it, earning his cheesemaker, well and wastewater licenses.

“I’ve got just about all the licenses I can,” he said. “I’ve seen a lot.”

Dean followed a similar route, starting in the plant and working his way up.

He received his butter maker license and worked in that division.

“It was a lot of physical labor,” Dean said. “They don’t have the continuous churns like they do now. Pulling that butter out and boxing it up was tough.”

In 1995, a few years before the creamery stopped their butter making end of the business, Dean took his current job as eld supervisor working with the farmers.

“I wanted to get out and see the farmers and it’s worked really well,” he said. “I can walk the walk and talk the talk because I also dairy farm.”

Dean has been through both high and low milk prices with the creamery’s patrons.

“In these hard times you have to be careful of what you say,” he said. “You try to do the best you can, but you have to be rm. The farmers have tragedies and you have to deal with all their tragedies, too. You have a lot of different hats you have to wear. But I enjoy every bit of

it. It’s a new challenge every day.”

On the Hines family’s dairy, Dale and Dean started making business decisions and taking over in 1975 at the ages of 16 and 18.

“We took the greatest interest [out of our siblings],” Dale said. “Our dad was always working … so we were given the freedom to gure stuff out.”

They started breeding using A.I. and were early adapters to DHIA testing.

ment, and making sure everything was in working order.

“Our dad and mom taught us how to keep things clean and looking nice,” Joe said. “Dad had to wash his semi tanker every weekend and we helped. Mom taught us how to be organized.”

The three agreed that their parents, especially their mother, have been two of the greatest inuences on their lives.

Dale described his mother with the word discipline.

“It wasn’t that she cracked the whip at us – she did do that, too – but it was discipline in managing money, work ethic, respect for others,” he said. “Discipline takes a lot of different avenues rather than the reprimand type that many people think of. It more of an aptitude of teaching.”

On a daily basis, Dean milks the cows while Dale feeds, cleans and breeds cows, and does other herd health aspects.

“When we’re doing our work we know what each other is doing,” Dean said. “We don’t even have to talk about it.”

When it’s time for eldwork, all three Hines brothers have their jobs.

They work together to accomplish each of the tasks on the farm, not worrying about who does what as long as it gets done.

That mentality has long been instilled in the brothers, and carries through in their day-to-day lives both on and off the farm.

“To be efcient and protable, you have to put in the work and the time,” Dale said. “Joe and Dean have also done that with their jobs. They aren’t 40-hour per week jobs and if they’re asked to do something on weekend or a holiday, they’re there. They’re on call 24/7.”

It’s this hard work ethic the Hines brothers learned years ago that continues to keep them going, dedicating a large portion of their lives to dairy.

WITHEE, Wis. – Nearly 50 dairy producers from throughout central Wisconsin traveled to Premier Livestock Auction near Withee, Wis., April 27 to learn more about the Dairy Pricing Association (DPA). The meeting was led by DPA representative Tom Olson, who shared the idea behind the DPA with those in attendance.

The meeting at Withee was held at the request of Greenwood, Wis., dairy farmer Ken Shirk, who milks about 45 cows.

“The whole concept of buying cheese off the market to give to humanitarian causes, to raise the price of milk really spoke to me,” Ken said. “It takes farmer involvement to make it work, to help ourselves.”

After speaking with Olson, Ken made a few calls to get the ball rolling in planning a meeting in his area, speaking with other dairy farmers and representatives of local businesses and milk cooperatives.

One local business that got involved in promoting the meeting was Clarco Farmers’ Cooperative, a milk marketing agency based in Thorp, Wis. Irvin Shirk serves as the president of the board for the cooperative, and said the group pools the milk of patrons to nd a market, allowing smaller farmers to reap the same benets as larger dairy producers. Clarco is responsible for marketing the milk from about 70 patrons.

Olson met with the Clarco Board of Directors, detailing how the DPA works in regards to the marketing aspect of milk.

“As a group, we decided that the DPA was a good thing to support, and to tell our members about,” Irvin said. “We decided to share the information with our members, but let them decide

as individuals whether or not they wanted to participate and sign up.”

Olson was ecstatic about the turnout from the meeting held in Withee, and the questions asked by the producers in attendance.

“The atmosphere was great; it was energetic with a good bunch of people,” Olson said. “Holy moly, they asked some good questions.”

The DPA has gained several new members from that meeting, and Olson expects more attendees will sign up in the near future.

“That group was eager to learn and eager to share,” Olson said. “We’ll see more members coming out of that meeting.”

In the past couple of months, DPA has gained about 30 new members, Olson said. However, he said several members have sold out, so the overall numbers have not grown in terms of membership.

“We have some farmers who have seen their milk check pretty much zero out,” Olson said. “So we get dropped from the milk check assignment.

They are still members, but they aren’t contributing right now. These are tough times, these prices are really hurting these guys.”

Despite the continued economic downturn in the dairy industry, Olson tries to stay positive, and reminds DPA members and producers to soldier on as best they can, continuing to try to grow the Turn to DPA | Page 9

association and positively affect milk prices.

“We need to stay the course,” Olson said. “We need to keep having meetings and keep working to bring more producers on board.”

One area Olson is hoping to work at growing is interest and commitment from larger dairy producers.

“This program can benet everyone, small producers and large producers,” Olson said. “When the price goes up, it goes up for all of us, regardless of how much milk you ship.”

Olson encourages DPA members to get out and spread the word, talking to their neighboring farmers, particularly those larger dairy farmers.

“We have one member who worked on a 2,500-cow dairy for eight or nine years,” Olson said. “He’s going to be talking to his former employer. I hope that gives us a better idea on what the larger producers are thinking.”

there not only interested in the pricing aspect of the program, but also in the humanitarian aspect.”

Edelburg said she felt that the DPA is a great concept, and could do great things, but getting people to sign on during times of already shrinking margins is a difcult prospect.

“It’s really too bad that this couldn’t be tied into some type of federal mandate to help curb over-supply,” Edelburg said. “But that is unlikely to ever happen, as most do not want further federal involvement in the milk pricing system.”

milk powder averaged $1.4657 per pound U.S. CME Grade A nonfat dry milk price closed Friday at 84 1/4-cents per pound.

Back home; a small increase in the U.S. All Milk price average could not overcome sharp increases in corn, soybean, and hay prices and thereby pulled the March milk feed price ratio lower. The USDA’s latest Ag Prices report shows the March ratio at 1.97 down from 2.03 in February and 2.40 in March 2017.

The All-Milk price averaged $15.60 per cwt., up 30 cents from February but $1.70 below March 2017.

The low was $14.10 in Michigan, with California at $14.86, up 11 cents from February, and Wisconsin at $16.20, up 60 cents.

March corn averaged $3.51 per bushel, up 13 cents from February and 2 cents per bushel above March 2017. Soybeans averaged $9.81 per bushel, up 32 cents from February and 12 cents per bushel above a year ago. Alfalfa hay averaged $166 per ton, up $11 from February, and $32 a ton above a year ago.

The March cull price for beef and dairy combined averaged $68.90 per cwt., up $3.30 from February, 60 cents below March 2017 and $2.70 below the 2011 base average of $71.60 per cwt. Milk cows averaged $1,360 per head in April, down from $1,520 in January, and $280 below April 2017. They averaged $1300 in California, down from $1500 in January and $1600 a year ago. Wisconsin cows averaged $1320 per head, down from $1470 in January and $1710 per head in April 2017.

The April 27 Daily Dairy Report points out that; “Combined with higher feed costs, these prices resulted in a decline in the U.S. milk-over-feed margin to $6.85 per cwt. based on the dairy Margin Protection Program (MPP) calculation, the lowest result so far this year and the lowest margin since June 2016.� “In 2017, the milk-overfeed margin, based on these calculations, did not fall below $7 per cwt. If current futures projections are to be believed, the worst margins for 2018 are potentially in the rearview mirror at the end of this month.�

Meanwhile; Chicago-based Commodity & Ingredient Hedging LLC’s latest Margin Watch (MW) says “Dairy margins improved slightly over the last half of April as increased milk prices more than offset the impact of rising feed costs. While margins are still only about average from a historical perspective, with the exception of spot Second Quarter, they are projected positive into early 2019.

Milk prices are drawing support from a delayed spring ďƒ&#x;ush following unseasonably cold weather in the Upper Midwest while a recent surge in nonfat dry

The Agriculture Department announced the April Federal order Class III milk price at $14.47 per hundredweight (cwt.), up 25 cents from March, 75 cents below April 2017 and the highest Class III since December 2017 and 20 cents above California’s comparable Class 4b cheese milk price. It equates to $1.24 per gallon, down from $1.31 a year ago. The four month average stands at $14.02, down from $16.17 a year ago and compares to $13.72 in 2016.

Class III futures late Friday morning portended a May price at $15.10; June, $15.59; July, $15.96; and August at $16.36, with a $16.57 peak in October.

The April Class IV price is $13.48, up 44 cents from March, 53 cents below a year ago, but the highest Class IV since December 2017. Its 2017 average stands at $13.13, down from $15.03 a year ago and compares to $13.06 in 2016.

California’s April Class 4b cheese milk price was announced by the California Department of Food and Agriculture at $14.27 per cwt., up 31 cents from March, 3 cents below a year ago, but the highest 4b since November 2017. The average stands at $13.75 and compares to $14.97 a year ago and $13.02 in 2016 The 4a butter-powder milk price is $13.29, up 28 cents from March but 44 cents below a year ago. Its four-month average, at $12.99, is down from $14.69 a year ago and compares to $12.87 in 2016.

Some of the wind in dairy’s global “sales� got knocked out in the May 1 Global Dairy Trade (GDT) auction. The weighted average of products offered slipped 1.1 percent, following a 2.7 upshot on April 17.

Leading the losses was rennet casein, down 10.5 percent. Anhydrous milkfat was down 1.9 percent, after jumping 5.3 percent last time, and whole milk powder was off 1.5 percent, after it inched 0.9 percent higher last time.

The gains were led by skim milk powder, up 3.6 percent, which follows a 3.6 percent increase last time. Cheddar was up 3.1 percent and follows a 4.6 percent boost. Lactose inched up 0.6 percent, after leading the gains last time by 14.8 percent and buttermilk powder was up 0.5 percent. It was not traded last time.

FC Stone equates the GDT 80 percent butterfat butter price to $2.4991 per pound U.S. CME butter closed Friday at $2.3525. GDT Cheddar cheese equated to $1.8252 per pound U.S. and compares to Friday’s CME block Cheddar at $1.6650. GDT skim milk powder averaged 90.68 cents per pound. Whole

milk prices has lifted Class IV Milk futures on the CME.� “Feed costs have continued to advance on strong demand amidst ongoing planting delays,� according to the MW. “USDA reported corn planting progress for the week ending April 29 at 17 percent complete compared to 32 percent last year and 30 percent on average for the end of April over the past 10 years.

Soybean planting progress was reported at 5 percent complete versus 9 percent last year and 6 percent on average for this point in the season.�

Dairy farmers have until June 1 to sign up for one of Uncle Sam’s dairy safety nets but National Milk President and CEO Jim Mulhern states in his monthly “CEO Corner;� “While the Agriculture Department currently allows farmers the option of using either the MPP or LGM programs, but not both simultaneously, the elimination of the budget cap on LGM policy underwriting may make that program more attractive to larger-scale operations, as the support provided by MPP tapers offs for bigger herds. What’s more, the new risk management options that USDA is expected to introduce should create a menu of options that will likely be of particular interest to larger producers.�

The Progressive Agriculture Organization thinks otherwise and called on lawmakers to “Take immediate action to help correct the pricing inequities that the majority of dairy farmers are experiencing. Also, there is much advice given to dairy farmers in an attempt to prevent more suicides by our dairy farmers.

There is only one way to prevent suicides by dairy farmers,� Pro Ag concludes, “and this is simply is to give the dairy farmers a fair price for their milk.�

Dairy prices start May a little stronger. Block Cheddar closed Friday at $1.6650 per pound, up 4 1/2-cents on the week and 6 1/2-cents above a year ago when it jumped 12 cents. The barrels skyrocketed to $1.6025 Tuesday, highest price since December 15, 2017, but ďƒžnished Friday at $1.60, up 11 1/4-cents on the week, 15 cents above a year ago, and a closer to normal 6 1/2-cents below the blocks. Twenty four cars of barrel sold on the week at the CME and 3 of block.

The cheese market tone remains uncertain, according to Dairy Market News, but Central sales activity is reported as fair to up slightly. Cheese production in the West has remained active as milk availability is stronger. Block and barrel demand is solid, keeping market prices at higher levels. Cheese demand from the international market is good due to favorable U.S. prices but participants are impatiently waiting for the grilling season here, hoping that it will help increase cheese sales and relieve processor pressure of having higher inventories.

Cash butter ďƒžnished the week at $2.3525 per pound, down three-quarter cents, but 24 1/2-cents above a year ago, with 55 cars exchanging hands on the week.

Butter market prices appear to be easing but butter interest is appealing, in both domestic and foreign markets. Stronger cream availability in the West is conducive to churning. Some contacts report that higher freight costs to move cream out of the West are also contributing to augmented butter production.

Butter stocks are ample, says DMN, and U.S. prices are competitive with international prices and export sales are “lively.�

Dry whey closed the week at 31 3/4-cents per pound, up three-quarter cents.

USDA’s latest Dairy Products report pegged March cheese output at 1.1 billion pounds, up 11.6 percent from February and 2.7 percent above March 2017. That put First Quarter output at 3.2 billion pounds, up 2.9 percent from a year ago.

California produced 215.7 million pounds of that cheese, up 8.6 percent from February but 0.4 percent below a year ago. Wisconsin, at 290.2 million pounds, was up 10.3 percent from February and 1.6 percent above a year ago. Idaho contributed 86.1 million pounds, up 19 percent from February and 3.6 percent above a year ago. Minnesota, at 63.9 million pounds, was up 11 percent from February and 3.5 percent above a year ago. New Mexico produced 76.1 million pounds, up 17.4 percent from February and 14 percent above a year ago.

Italian cheese totaled 481.6 million pounds, up 12.9 percent from February and 2.5 percent above a year ago. Year to date (YTD) Italian cheese is at 1.4 billion pounds, up 3.9 percent from a year ago. Mozzarella, at 371.5 million pounds, was up 2.8 percent, with YTD at 1.1 billion pounds, up 3.6 percent.

American type cheese production totaled 437.0 million pounds, up 10 percent from February and 1.7 percent above a year ago, with YTD at 1.3 billion pounds, up 1.1 percent. Cheddar output, the cheese traded at the CME, totaled 314.8 million pounds, up 7.3 percent from February but 2.7 percent below a year ago, with YTD Cheddar hitting 926.3 million pounds, down 1.7 percent.

Butter churns produced a bearish all time high of 185.6 million pounds, up 9.1 percent from February and 4.8 percent above a year ago. YTD butter output is at 537.8 million pounds, up 4.2 percent.

California butter output totaled 59 million pounds, up 16.4 percent from February and 16.4 percent above a year ago. Pennsylvania was down 5.3 percent from February and 7.6 percent below a year ago.

Yogurt output amounted to 392.3 million pounds, down 4.7 percent from a year ago, with YTD hitting 1.1 billion pounds, down 2.6 percent.

Dry whey totaled 88 million pounds, up 1.5 percent, with YTD output at 267.9 million pounds, up 8.6 percent. Stocks totaled 74.7 million pounds, down 15.4 percent from February and 3.5 percent below those a year ago.

Nonfat dry milk production totaled 180.3 million pounds, up 14.2 percent from February and 12 percent above a year ago. YTD output stands at 498.4 million pounds, up 8.8 percent. Stocks slipped to 298 million pounds, down 400,000 pounds or 0.1 percent from February but 51.5 million pounds or 20.9 percent above a year ago. February stocks were revised 25.6 million pounds lower.

Skim milk powder production totaled 41 million pounds, up 8.8 percent from February but 22.2 percent below a year ago.

Checking dairy’s rear view mirror, the Dairy Products Summary shows total cheese production hit 12.7 billion pounds in 2017, up 3.9 percent from 2016. Wisconsin produced 3.25 billion pounds of

that, or 26.6 percent. California was a distant second, at 2.51 billion, with Number 3 Idaho, at 954.99 million pounds.

Italian varieties totaled 5.38 billion pounds, up 1.5 percent from 2016 and accounted for 42.5 percent of total cheese in 2017. Mozzarella accounted for 77.3 percent of the Italian production followed

by Parmesan with 8.4 percent and Provolone with 7.4 percent. Wisconsin again was the leading State in Italian cheese production with 31.6 percent of the production.

American type cheese production climbed to 5.07 billion pounds, up 6.4 percent from 2016 and accounted for 40.1 percent of total cheese in 2017.

Wisconsin was the leading State in American cheese with 20.0 percent of the production.

U.S. butter production totaled 1.85 billion pounds, just 0.4 percent above 2016. California was the leading state at 534.38 million pounds or 28.9 percent of

total U.S. production. Pennsylvania was second at 95.6 million pounds, and New York third with 27.5 million pounds.

The U.S. produced 1.84 billion pounds of nonfat dry milk for human consumption, up 4.7 percent from 2016, and skim milk powder totaled 530 million pounds, down 5.3 percent. Dry whey totaled 1.037 million pounds, up 8.6 percent.

Milk production increased 1.4 percent in 2017 to 215 billion pounds. The rate per cow, at 22,941 pounds, was 163 pounds above 2016. The annual average number of milk cows on farms was 9.39 million head, up 67,000 head from 2016.

The 2017 Milk Production, Disposition, and Income Summary shows cash receipts from marketings of milk totaled $37.9 billion, up 9.8 percent from 2016. Producer returns averaged $17.69 per hundredweight, up 8.3 percent. Marketings totaled 214.5 billion pounds, 1.5 percent above 2016.

A glance at Flood Brothers Farm

Family dairy operating in central Maine for 200 years

CLINTON, Maine – When Jenni Tilton-Flood married Dana Flood in 1995, she not only joined the Flood family, but also joined a farming operation ourishing in central Maine for over 200 years.

The Floods have engaged in agriculture practices near the Kennebec River outside of Clinton, Maine, for over two centuries. The dairy sector of the farm began in 1927 when Dana’s grandfather began shipping milk at the age of 14.

LLC spans three generations, six families, 22 family members ranging from 4 to 70 years old, 3,400 cows with 1,700 milking and producing 17,000 gallons of milk every day.

“We are a family farm from the cows to the farmers,” TiltonFlood said.

Today, 10 family members work on the farm, and they employ 32 others to tend to 5,000 acres of cropland and the three daily milkings.

The farm also welcomes 1,000 visitors a year for tours as well as children taking part in the Maine Agriculture in the Classroom program.

The Flood Brothers Farm is home to 3,400 cows, including Holsteins, Red and White Holsteins, Jerseys and crossbreeds.

The milking herd, far-off dry cows and oldest heifers are housed in freestall barns. The youngstock, close-up heifers and cows are housed on bedded packs.

The black and white Holsteins, Red and White Holsteins along with a few Jerseys and crossbreeds are milked at 4 a.m., noon and 8 p.m. in a 100-stall DeLaval rotary parlor.

Tilton-Flood said the parlor averages about 400 cows per hour with each milking taking

about four hours.

The family focuses on structure when making mating decisions.

“We like conformity in our herd, especially when it comes to those traits that help ensure and perpetuate health and wellness for our cows,” Tilton-Flood said.

The herd is averaging 90 pounds of milk per cow, per day.

That milk is marketed through Agri-Mark (Cabot Creamery Cooperative) to H.P. Hood, a processor in Portland, Maine.

“The milk is bottled at the Hood plant just 75 miles south of our farm and on store shelves within a day or so,” Tilton-Flood said. “Like many areas, the milk for brand names as well as the store brands comes from local family farms like ours; same great quality and freshness.”

Portland, Maine. Another bottler, Houlton Farms Dairy, is located in Houlton. TiltonFlood said another major processing plant is opening in 2018 to focus on cheese production and other milk ingredients.

The most recent Class I price in Maine was $17.69, Tilton-Flood said. She said Flood Brothers Farm supplies the sole source of income for all but one of the six families.

“Our major focus right now is ensuring that we are able to run our business efciently and protably, and ensure that our youngest generation has the opportunity to choose whether this is where they want to plant their roots as adults and grow their lives and family,” Tilton-Flood said. “The daily work of improving soils and herd health continue, as well as safeguarding our investments and heritage.”

In Clinton, a town of under 4,000 inhabitants, there are ve dairy farms producing 17 percent of the state’s milk, giving the area recognition as the Dairy Capital of Maine.

“The cows denitely outnumber the people,” Tilton-Flood said.

The Flood family has access to equipment dealers including John Deere, New Holland, DeLaval and Westfalia/BouMatic.

“There are around 1,400 on-farm jobs throughout our state and at least 4,000 jobs directly related to our dairy farms,” Tilton-Flood said.

Maine is the eastern-most state in the contiguous United States and is known for its ragged coastline and forested interior as well as being sparsely populated.

Tilton-Flood has a seat on the Maine Dairy Promotion Board, the state’s checkoff organization, represents Maine dairy farmers as a director on the United Dairy Industry Association Board and serves as her county Farm Bureau president. She said the state is home to 236 dairy farms totaling 30,000 cows in milking herds ranging from 10 to 1,700 with an average herd size of 120 cows.

Maine’s dairy farms span from organic to traditional and include a learning center at Wolfe’s Neck Center for Agriculture and the Environment, Freeport, and the Witter Farm herd at the University of Maine, Orono, as well as a milking herd at Pineland Farms, New Gloucester, which is

administered by a non-prot group.

The state often experiences Mother Nature’s extreme temperate swings.

“We regularly run the gamut of extremes from cold to hot and humid, but rarely for long stretches,” Tilton-Flood said. “Our growing season is not too long (90-ish day corn is about as much as we will tempt Mother Nature), but we get some great weather, usually, to make up for the more brutal storms and temps. We are … also impacted, weather wise, by the Atlantic and our extensive coastline.”

Albeit the weather, farmers in central Maine produce a variety of crops including corn, potatoes, apples, diverse gardens, various berries and grapes for wine production.

“Every spring, I am pretty convinced that nowhere else grows rocks like we do,” Tilton-Flood said.

While the state boasts a longstanding dairying heritage, the dairy way of life does not come without challenges from the climate, geography and location of farms.

“The demographics and statistics of our dairy farms really epitomize and reect those of the nation in many ways but being the literal end of the road presents many uphill battles to our industry, coupled with our older population, mostly rural state without larger urban population centers and our extensive shared international border with Canada,” Tilton-Flood said.

Despite the challenges, Tilton-Flood said there is a mix of both young and old farms and farmers, emerging products and well-recognized brands.

“We may be the black sheep and the red-headed stepchild of the New England and Northeast dairy sector, but our uniqueness has led to and has necessitated innovation in policy and product,” she said.

So where the dairy industry meets the end of the road in the United States and fades to the Atlantic Ocean, the Flood family will prevail despite the industry’s challenges.

“Dairy farming has allowed us to make a living from our way of life,” Tilton-Flood said. “We are able to raise our children while we grow our crops and it’s what we know. It’s what we love. Dairy farming is who we are.”

A day in the life of the Thaemert family

May 7 is a rush of eldwork before rain hits

MAYER, Minn. – The morning of May 7 began like any other for Wade and Paula Thaemert, but the day was going to be different than most in recent months.

With clear skies and warm temperatures, the Thaemerts were itching to nish planting small grains before spring showers were expected in the forecast.

“We have it down so it takes about an hour a group to get through milking,” Wade said. “We start with the older cows because they know what to do and are OK being in the barn overnight. The second group is mostly heifers, so I don’t want them in the barn until I know they can get up and are comfortable in the stalls.”

“We just watch what each other does and there are no hiccups,” said Paula about their milking routine.

The Thaemerts have been farming together since they were married in October 2010, but Wade has been in the dairy industry all his life.

Curtis and Lanette milked cows from 1965 until 1991, and then raised heifers for the six years that followed. When Wade graduated high school in 1997, he purchased two milking cows and started his dairying career.

“I rented everything from Dad until six years ago when Paula and I purchased the farm,” Wade said.

Most recently, the Thaemerts have increased their herd size from about 40 milking cows to 75.

“Dad never milked more than the barn could hold, but with the prices it’s nice to have more,” Wade said. “But, more is also difcult. We’ve found a herd of 75 cows is enough with this setJENNIFER COYNE/DAIRY STAR up.”

A dairy farm’s future relies on newborn calf protocols

First few hours of life are crucial

The care a newborn calf receives dictates the potential that calf will have to grow into a healthy, strong and productive member of your herd. Virginia Tech University professor emeritus of dairy science Dr. Robert James hosted a webinar May 4 focusing on newborn care as part of his Calf College series, sponsored by DeLaval.

According to James, newborn care begins well before birth. Dry cow management and nutrition play a vital role in the health of the gestating calf. Vaccination programs implemented during the dry period play a signiďƒžcant role in the immunity offered to the calf and the quality of colostrum produced by the dam at parturition.

Dry cow nutrition is not to be taken lightly, either. During the dry period, dairy cows consume less feed, taking in only about 30 pounds of dry matter daily. This feed is typically lower in energy and protein, and higher in ďƒžber, helping to limit intake and encourage rumen health.

During the dry period, cows have great need for the consumption of micro nutrients, such as vitamins A, D and E, as well as trace minerals such as copper (15ppm), selenium (0.3 ppm), zinc (42ppm), cobalt (0.15-0.2ppm) and manganese (50ppm). James also advocates for including supplemental amino acids, such as metabolizable Methionine, during the prepartum period at the rate of 5-10 grams per day.

Besides ensuring sound dry cow nutrition, James said to avoid overcrowding of dry cows, limiting their exposure to heat stress, as well as keeping their environment clean with a low microbial load and excellent ventilation. “Cow cooling during the dry period impacts not only how that cow is go-

ing to perform in her next lactation, but also the calf’s health, as well,� James said.

He advocates for a minimum of a 45-day dry period and said many producers are seeing great successes going back to the traditional 60-day dry period. He said to avoid extremely short dry periods, those under 21 days.

After laying the groundwork for optimal colostrum production and calf health during the dry period, newborn care gets serious as the cow prepares to give birth.

A clean, sanitary calving environment is the ďƒžrst step for ensuring the health of the newborn calf.

James said a farm’s close-up pen should allow for easy and frequent monitoring, allowing farmers to be able to administer colostrum as soon as possible to newborn calves. Ideally, James said colostrum should be harvested and new born calves fed in the ďƒžrst two hours following birth, and no later than six hours. “It’s like a race to see what reaches

the small intestine ďƒžrst,â€? James said. “Will it be the harmful environmental bacteria, or will it be the passive immunity transfer from the colostrum?â€?

Things that can affect the timeliness and quality of this passive transfer include when the fresh cow is milked following calving. Do you have a bucket milker available for use at the calving site? Or, will the cow be milked with the hospital string? Will that milking occur at the beginning or the end of a milking session? How is the colostrum handled between harvest and feeding or storage? Improper handling of colostrum, or use of unclean containers, can cause an increase of harmful bacterial growth in the milk, defeating the result you are attempting to achieve. Cows who leak excessively prior to calving also cause concern, as there is a loss of IgG during the leakage.

The goal is to feed calves at least 200 grams of IgG at birth, within the ďƒžrst two hours of life. That equates to Turn to CALF PROTOCOLS | Page 21

His goal is to feed newborns colostrum that measure at 22IgG or higher. James said producers should keep a supply of colostrum replacer on hand for situations when the dam’s colostrum is not high enough quality to meet these goals.

James maintains that feeding colostrum for the rst four days of life, even if it is under the recommended 22IgG for initial colostrum feedings, can positively impact the calf’s growth and gut development. Calves fed colostrum for several feedings have been found to have higher levels of glucose and have taller villi lining their small intestine

than calves who only receive one feeding of colostrum. Taller villi mean the calf has increased surface area available for absorption of nutrients.

Bacteria introduced into the intestine through improperly handled colostrum can have the opposite effect on the developing intestinal villi, limiting the growth and development, and the future rate of absorption of nutrients for that calf.

“We most often fail at our goals because of our facilities,” James said, noting either they are not set up to allow the cow to be milked and the calf to be fed in a timely fashion, or they introduce environmental bacteria.

When preparing colostrum for storage, rapid cooling is a must.

“Colostrum that sits at room temperature for six hours will have over 6 million coliform forming units per milliliter,” James said. “If you just put colostrum in the refrigerator in a gallon jug or bottle, it takes a long time to get down under 45 degrees. It creates a

bacteria soup.”

James said to adequately cool colostrum, those containers should be submerged in ice water, decreasing the cooling time to less than 20 minutes, limiting bacteria growth. He also recommends avoiding pre-warming of colostrum, in anticipation of a calving for the same reasons.

Cleanliness is important, particularly when handling newborn calves and colostrum. James recommends a simple, but effective procedure for washing calf-feeding equipment: a luke-warm water rinse, followed by hot soapy water, a sanitizer and allowing the equipment to air dry.

James encourages producers to consider pasteurization of their colostrum, particularly in herds with high health risks, such as those that have expanded and brought animals into the herd.

A University of Minnesota study looked at 1,000 calves, half of which were fed raw colostrum at birth and half fed pasteurized colostrum. All calves received their rst colostrum feeding within the rst hour of life. The fresh colostrum averaged 63.9IgG and the pasteurized colostrum averaged 61.1IgG. However, the fresh colostrum had a plate count of 515,000 and a coliform count of 51,500. The pasteurized colostrum had a plate count of 2,100 and a coliform count of 90.

While the IgG was slightly lower, there was a signicant difference in plate counts and coliform counts, and there was a lower incidence in scours in the pasteurized group due to the lower E. coli counts in the colostrum.

Using batch pasteurization, the 60 degrees Celsius for 60 minutes rule of thumb is followed, as opposed to pasteurizing waste milk at 63 degrees Celsius for 30 minutes.

“Colostrum needs to be pasteurized at a slightly lower temperature, over a longer period of time,” James said. “Even a slightly higher temperature will cause coagulation of the milk because of the higher protein content present in colostrum.”

We’ve hauled a lot of manure this past week.

We didn’t do any fall plowing so we can RAINFALL haul manure on the TOTALS fields throughout the since winter, but should have April 25 it done shortly. There is some corn being planted and some oats has been planted, as 2.1” well. Next week we should be back in the field. We have 8 to 10 inches of growth on our new seeding alfalfa. There has been minor winterkill in our area. It’s been raining every other day down here.

Sunday we finished combining the 2017 corn crop. It had a 59 test weight and averaged about 140 bushels. We RAINFALL definitely lost 10 percent TOTALS through the winter. We since put in 65 acres of oats on April 25 May 5 and we are going to seed down another 65 acres of alfalfa, but are waiting for the lime truck. I plant Pioneer alfalfa. I have 130 acres of corn ground ready to go. The alfalfa is really coming along nicely since it got warm.

We are really dry up here in the sand.

We’ve freshened 20 springing heifers in the past month.

We started in the field May 5, and we started seeding yesterday (May 7). We have about 200 acres of wheat RAINFALL in. We plant Linkert, TOTALS since Bolles and Spitfire. The April 25 fields are in really good condition; we just have a couple holes to watch for. Everybody in our 0.35” area started in the past couple days. We are hoping to get corn in later this week. We are probably one week behind where we usually are for fieldwork.

We started in the field on Saturday and Sunday (May 5 and May 6) and put urea on Monday. We planted some barley underseeded RAINFALL with King Fischer alfalfa TOTALS since yesterday (May 7). Then, we started on corn April 25 yesterday, but got chased out of the field by the rain. I would say 30 to 40 percent of the corn is in the ground. The co-ops can’t keep up, so not everybody can get going at one time.

My two fields of triticale are 4 inches and 8 inches tall. I had some winterkill on the home farm where I lost 15 acres. Anything low is dead.

We planted our 25 to 30 acres of small grain and alfalfa on May 5. We have the fields ready to go and the RAINFALL TOTALS rocks are picked. If we since don’t get rain, we’ll start April 25 planting corn tomorrow (May 9). The fields are ready, except the one we hauled a lot of 0.25” manure on. Our alfalfa looks really good; our crop consultant thinks it made it. With a shot of rain it should really perk up. If the weather stays good, we should start on soybeans next week.

We were able to start spreading manure in the last week of April and began doing some tillage the first week of RAINFALL May. We haven’t been TOTALS able to plant anything since yet, but hope to have April 25 our wheat in by the end of the week and get started on our silage corn. Our ground is still wet and cold. You don’t 0.8” see many planters going in our neighborhood.

We haven’t changed any of our cropping plans, although we might have to switch to some shorter day corn varieties.

Last week we got about 0.4 inches of rain on Tuesday night and the next day things got really green, really fast. RAINFALL We started planting TOTALS since corn today, about a April 25 week behind normal.

We’ve been doing some chisel plowing and hauling out some 0.7” bedding packs. We’re still waiting for the road limits to be lifted before we can haul manure.

In the next couple of weeks, we’re going to haul manure, plant corn, lime some fields and hopefully get some alfalfa seeded.

We’ve had no rain since the last snow storm we had in the middle of April; no thunder or lightning or anything. We’re really very dry. The manure trucks showed up yesterday RAINFALL and we hauled manure all day yesterday and today, and TOTALS we will finish up tomorrow since morning. Everyone is going April 25 like crazy planting corn up here. We’ve got about 100 acres in so far, and if we don’t get rain, we’ll have another 100 acres in soon. Our hay is greened up, but not really growing. They are saying rain for tomorrow and this weekend. They are also saying low temperatures in the 30’s later this week, with highs only around 60.

A week ago it was so wet we couldn’t get in the fields, but it’s been so windy the last few days, it’s sucked the moisture right out. My dad always said when there are dirt whirlwinds across the fields in the spring, it’s a sign of a dry year.

We’ll see what the rest RAINFALL of the week brings; it TOTALS since looks like rain for the April 25 rest of the week. It was getting pretty dry, but it’s raining now (May 9). Everything 1.75” is turning green, and I’d say it’s been an average spring so far, just a little late.

It’s supposed to rain a bunch this week and be colder the end of the week. Our agronomist has been out and evaluated the hay fields and winter wheat. The winter wheat looks decent, and just a little winter kill.

We have two days RAINFALL in, but there were guys in TOTALS our area that were going since before the rains. We April 25 plant BMR corn. We had 5 inches of rain a week ago. There has been some reseeding taking place because we got so much rain. The Mississippi River is really high. The alfalfa looks fantastic and is really growing fast. My brother was going to spray on Monday, but it was too tall. If the sun comes out we could get back in the field this weekend. We seeded our alfalfa 10 days ago.

Our area received 8.5 inches of snow on April 22, but we were able to get into the field 10 days later and plant RAINFALL TOTALS 200 acres of alfalfa. We since will raise 1,200 acres April 25 of silage corn this year and are currently about 30 percent done with corn planting. We don’t 2” raise any soybeans. We hope to chop our 180 acres of ryegrass by about May 25, and then plant that ground to 100-day silage corn. Soil moisture conditions are really good in our area.

Family food memories Food and family memories are so intertwined. Just a whiff of caramel rolls reminds me of my mom. A raspberry salad is Aunt Linda’s signature dish at family events. The sight of angel food cake topped off with a seven minute frosting can only be my grandma. It wasn’t your birthday until Grandma brought over her special cake. She was known around the county for her cake. And just like any other good cook of her generation, she didn’t see it as a big deal. It was just something she whipped up. Luckily for me, I asked Grandma to teach me how to make her cake. I discovered there is the recipe of ingredients and then there are the tips to making it work that aren’t recorded but learned over the years. Here are some of Grandma’s tips to making angel food cake work: - Use fresh brown eggs. She swore by the brown shelled eggs. I think what really made them work was the fact that Grandpa picked the eggs daily and she always had fresh eggs.

- Watch the weather. Angel food cake will not rise when it is stormy or a low weather pressure system is passing through. Only bake on a sunny, clear day with low humidity.

- When adding the dry ingredients to the beaten egg whites, take your time and use gentle strokes to mix.

- Don’t open the oven door until the timer goes off. No peaking. Turn on the light and look through the oven glass window if you have one.

frosting. I much preferred her lemon topping. As any good farm wife, she wasn’t about to let the egg yolks go to waste, so she made this beautiful lemon topping. The other half dozen egg yolks I use to make my homemade pudding. I learned well, not to waste anything. Enjoy.

- Cool cake upside down. All angel food cake pans have tabs sticking up for this job. Grandma baked her cakes in an oblong cake pan instead of the tunnel cake pan. She swore she could cut more pieces this way and serve a bigger crowd.

I will always treasure the morning I spent in Grandma’s kitchen learning the secrets to her angel food cake. I will have to admit though, I didn’t learn how to make her seven minute

Angel food cake by Mildred Adair 1 cup sifted cake our 1 1/2 cups powdered sugar 1 1/2 cups egg whites (about 12) 1 1/2 tsp. cream of tartar 1/4 tsp. salt 1 1/2 tsp. vanilla 1 cup granulated sugar Measure 1 cup sifted cake our and 1 1/2 cups powdered sugar. Mix and sift together at least three times and set aside. Beat egg whites, cream of tartar and salt with electric mixer, until foamy. Gradually add granulated sugar a couple of tablespoons at a time. Work in well. Add vanilla. Beat until it holds stiff peaks. Gradually fold in sugar/our mixture by hand with wire whisk (this is a key step).

Fill ungreased cake pan. Bake at 375 degrees for 30 to 35 minutes until top springs back when lightly touched.

Invert pan to cool. This helps to keep the cake from falling as it cools.

Angel food lemon frosting 6 egg yolks, beaten Juice of 1 lemon and zest Juice of 1 orange, squeezed 3/4 cup sugar 1/2 pint whipping cream

Beat egg yolks. Add lemon juice, zest, orange juice and sugar. Mix well. Cook over medium low heat till slightly thick. Stir constantly. When thickened, remove from heat and cool completely. In chilled bowl, whip up cream with a little bit of powdered sugar to taste. When egg mixture is cooled, fold in whipped cream and top off angel food cake slices.

Homemade pudding 1 3/4 cup sugar 10 Tbsp. corn starch 1 tsp. salt 6 1/2 cups milk 6 egg yolks, beaten 4 Tbsp. butter 1 Tbsp. vanilla 1 cup chocolate chips, if you want chocolate pudding Combine sugar, corn starch and salt in heavy bottom pan. Add milk and whisk together. Using a wooden spoon, constantly stir mixture over medium heat until starts to thicken (about 8-10 minutes). Remove from heat and pour about a cup of hot mixture into the beaten egg yolks. Mix well and pour back into pan. This is to bring the temperature of the egg yolks up so they won’t curdle when added to the whole pan. Return to heat, stirring constantly for three minutes.

Remove from heat. Add butter and vanilla, stirring until melted. Pour into serving bowls or dishes. If you want to make chocolate pudding, add chocolate chips (milk and semisweet) with butter and vanilla and stir until melted.

1 can cream of chicken soup 1 can chicken rice soup 2 cans water chow mein noodles

lb. lean ground beef medium onions, chopped cup celery, chopped Tbsp. soy sauce cup raw rice

Brown meat in large fry pan, add onions, celery, soy sauce, rice and soups mixed with water. Cook on top of stove until rice quits sticking to bottom of pan, stir often. Put in greased casserole dish. Sprinkle chow mein noodles over top. Bake at 350 degrees for 30 to 45 minutes.

Bean hot dish 1/2 lb. ground beef or pork sausage 1 can kidney beans, drained 1 large can pork and beans 1/2 cup ketchup 1/2 lb. bacon

1 can butter beans 1 can lima beans 1/2 cup brown sugar

Brown ground beef and fry bacon. Drain off excess grease. Add remaining ingredients. Put in casserole dish. Bake in a slow oven, 300 degrees for 1 hour.

Mix together, form balls and cook slowly on low heat for 1 hour.

Teriyaki baked salmon 4 salmon filets, skin on 1 Tbsp. vegetable oil 1 garlic clove, minced 1/4 cup low sodium soy sauce 2 Tbsp. water

1/2 Tbsp. honey 1/2 Tbsp. light brown sugar 1/2 tsp. ginger, minced 1 tsp. cornstarch 1 Tbsp. water

Preheat oven to 400 degrees. To make the sauce add oil and garlic to a medium saucepan cook for 1 minute. Add in soy sauce, water, honey, brown sugar and ginger. Bring to a simmer and cook for two minutes. In a small bowl mix together the cornstarch and water until combined. Slowly add this to the teriyaki sauce and whisk until the sauce has thickened. The sauce should be thick enough to coat the back of the spoon. Line out 4 sheets of aluminum foil lightly oil each. Place a salmon filet on each piece of aluminum foil and brush the salmon with the teriyaki sauce, fold up the edge of the foil and place wrapped salmon on baking sheet. Bake for 12-15 minutes, remove from the skin. The skin should be easy to peel off.
