Dairyman makes news headlines across the nation

Berg’s spur-of-themoment video turns into viral Facebook post

PINE ISLAND, Minn. – Following a frustrating Monday morning April 10 at his family’s dairy, Mark Berg sat in the skidloader and recorded a video about the state of the dairy economy and the toll it has taken on their farm. He posted the video to his personal Facebook page.

“We’re not asking to make a million … but, you literally work day in and day out all the time for nothing. … We’re taking loans just to pay bills.

That’s literally the current situation for dairy farming. We’ve got literally farmers committing suicide all the time,” Berg said during the video that runs over ve minutes.

Although Berg said he posted the video to give his local friends an idea of the dire state of the industry, the video has reached far greater distances than Berg ever imagined. The video has now been viewed over 543,000 times and shared over 7,500 times, with over 1,200 comments and 2,900 reactions.

Berg has also garnered attention from local, national and international media outlets.

“It was just something I had to get off my chest,” Berg said. “I didn’t plan what I was going to say. There was a lot of truth there. It’s reality. It wasn’t made up.”

Berg also said he made the video more for his parents’ sake than his own.

The 26 year old works for his parents, Tom and Penny, who milk 200 cows near Pine Island, Minn.

“They’ve been working for 40 years and the problem is they’re not worth anything unless they sell everything and that’s not the way it should be,” Berg said.

Within minutes of posting his video, Berg said it had been shared several times. Within four days, so many peo-

“I was so shocked. It was almost like I was speechless.” Penny said. “The rst comment I made was, ‘Mark, you sure did use the F word a lot – because I don’t like it – but wow am I proud of you.’”

Then, Berg started receiving media requests. Several local television stations and newspaper reporters came to the farm for in-person interviews. The Minneapolis Star Tribune also covered the viral post. Several large news outlets, including the Detroit Free Press, Washington Post, New York Times and London Daily Mail, picked up the story.

think somebody was listening now,” Berg said.

He also did interviews with National Public Radio and went live on Fox Business. Perhaps the biggest interview the family did was with Dean Reynolds for a segment on CBS Nightly News.

During one of these interviews, one reporter, originally from New York City, admitted he had not ever had much interaction with animals, including never petting a cat, much less a cow.

“That really opened my mind as to why farming is having such an uphill battle. I knew there was a gap between my farm and someone’s table, but I didn’t realize how big it was. The fact people have never even petted a cat to me is mind blowing,” Berg said.

From all this attention, the Bergs have received stacks of letters in the mail. Berg has received thousands of personal messages on Facebook in addition to the comments on the video.

One woman drove from Wisconsin and showed up at their dairy to show her support and share her own family’s dairy trials from years ago. Even Governor Tim Walz called and had a conversation with Berg.

“The response has been unremarkably positive and supportive from people from every walk of life – from farmers to someone who has never stepped foot on a farm. They all want to help. Everybody wants answers and a solution,” Berg said.

But, the solution is not an easy one.

“I wish I could say here’s the problem and here’s the answer, but I can’t.

I don’t have the answer. It’s a lot of different things. Some political, but majority is supply and demand,” Berg said.

An overwhelming amount of people asked the Berg family to start a Go Fund Me page where money could be donated to help with farm expenses.

But, the Bergs insisted that was not the point of the video.

“One thing I think I did through the video and through messages is the education part. There’s no class in school that teaches you where your food came from. You just sit down and you eat it.

I think that’s what’s happening. In the United States, we’re [the] 2% feeding 98%,” Berg said.

Because of the persistent requests, the Bergs started a page for donations; however, they are going to use a large portion of it to benet the dairy community, such as giving to the rural help hotlines or programs to help others in the dairy community cope with the stress. They also would like to use the money to get better packaging for milk in schools.

“We’re going to try to do something good with it more than just keep it ourselves,” Berg said.

Although their farm is still facing one of the most difcult years it has ever faced, the viral post caused a distraction from the stress.

“It took our mind off the struggles for a little bit,” Berg said. “And, I think that was a good thing.”

Industry perspective about robots

Company representatives share thoughts on SCC issues, regulation, repair costs

ROCHESTER, Minn. – Robots have been a popular choice for upgrading milking systems in the past few years; however, dairy producers are not the only ones who have to be familiar with them on the farm.

Farmers, inspectors, processor eld representatives and others working in the industry gathered April 17 for the Upper Midwest Dairy Industry Association and Iowa Association for Food Protection spring meeting in Rochester, Minn.

A panel about the Automated Milking Systems company and regulatory updates included Brad Cupery, production specialist for Lely; Julie Whitmer, dairy solutions specialist for Boumatic; Chris Horton, AMS system specialist for DeLaval; and Steve Pretz, director of large production sales for GEA. They rst responded to a question about how to troubleshoot a somatic cell count issue or how to deal with robots and a contagious infection.

“We want to go through standard protocol to try to reduce the somatic cell count, whatever bug it is before we get into the robots. Robots are not going to be the cure,” Cupery said.

Whitmer echoed those statements.

“If you get robots, you’re going to deal with the same issues you do in a milking parlor. You don’t want to stop managing your facility and your cows like you would in a parlor,” she said.

Making sure the chemical line is cleaning and sanitizing properly is important along with getting a culture to gure out which cows are infected and shedding, Whitmer said. Her company

also has a milk quality team to help with these type of problem areas.

“I highly encourage a special needs group. You do have options for sorting them [with the robot],” Whitmer said.

Horton said one benet of robots is robot facilities generally have smaller pens, which gives more options for segregating cows and keeping an infection from spreading throughout the herd.

“You’re not putting 500 cows through one parlor. You have more capabilities for isolation with robots,” he said.

Horton also said troubleshooting a somatic cell count issue is the same on every farm.

“Do the exact same things you do on a conventional farm. Is my cleaning correct? Are my procedures correct on the farm?” he said. “You want to look at the farm systematically to determine where the problems are and how to resolve them.”

Pretz said more than likely it is the cleaning process and environmental factors. The change to robots can be different.

“It’s a considerable challenge because primarily with environmental [factors] … it mitigates to mattresses.

There are cows in the pens all the time.

It’s difcult to groom the stalls and difcult to add more materials because you always have cows in there,” he said.

Pretz answered the next question specically about his brand on how the robot protects the milk supply with the washing and dipping of each teat within the line of the milker.

“That was a hard journey to get that process approved in the United States. That’s why when you look at our machine, the block process … is so important. We’re basically putting the same protection we’re putting in one of our processing plants,” Pretz said.

One person asked about the quality of milk as dairy farms get larger and the distance to the bulk tank becomes greater. All the companies were in agreement for their answer. They have not seen any issues.

we didn’t preach enough from the pulpit [in earlier years] about why they needed to do the maintenance ahead of time,” Horton said.

Pretz said while robots cut down on labor cost, a portion of that money will go into keeping the robots functioning.

“The maintenance is just paying for labor in a different way,” Pretz said. “Mandate the maintenance as part of the nance package in the beginning, and you’ll have a much happier customer at the end of the day.”

All four agreed it is important for the industry to continue to attract and retain quality employees who know how to work on this high-tech equipment.

“We are seeing a labor gap in the skill traits. All our dealerships are. We can’t keep selling if we don’t have people there. The labor rates have to go up,” Cupery said.

The competition – telecommunications and farm machinery – is doing a better job recruiting technicians, the panel said.

“The farm machinery industry is growing their own, and that’s what we need to do in the dairy industry. We need to recruit our own rural talent, and we need to start when they’re in high school. We can’t just wait for them to roll out of the universities because there are not enough graduates from our land grant colleges to ll the job needs in agriculture right now,” Horton said. “We need to be proactive.”

than what we see on the conventional side,” Cupery said. “As long as the design is used correctly, we’re using the correct chemical concentration, times and heat … everything stays in the good range.

Whitmer said her company tries to keep robots centrally located, which helps for both milk and cow ow.

Another question was asked about robots and their approval by the Food and Drug Administration.

“From our standpoint, we have what we refer to as a letter of nonobjection from the FDA. We think that’s as good as it’s going to get. There will never be approval in my working lifetime, in my opinion.

It’s been a long time since the last piece of milking equipment was approved,” Pretz said.

Horton’s company is similar. He said there is more regulation at the state level.

Cupery and Whitmer also said their companies work closely with individual states to comply and communicate how the robots work.

The last two questions asked each company representative to share thoughts about the repair aspect of robots.

“It’s like any piece of equipment out there. You could have two Chevy trucks sitting side by side and the repair costs could be vastly different. So, you’ll see it farm to farm,” Cupery said.

The biggest aspect all four shared was that the robots need regular maintenance.

“How is it being taken care of day to day?

If someone does not pay attention to a piece of equipment until it breaks, it’s going to break more often. If someone does daily maintenance, it’s not only going to last longer, it will give them a lot less grief. I always go back to you’ve got to take care of your equipment and it will be good to you,” Cupery said.

Whitmer said her company makes a list to make sure maintenance is being done regularly to keep repair costs down.

“We have a double box with one arm so there are less moving parts, which also helps keep the cost down,” she said.

For Horton’s company, maintenance used to be optional. Now, the rst four years of maintenance cost is built into the initial price.

“The idea is after the rst four years, the farmer realizes I’ve had all this trouble free service because it’s being done preemptively. … As manufacturers,

Mursus host kindergarten classes at annual farm tour

NEW YORK MILLS, Minn. – School is almost out for the summer, but education continues right up until the last bell at New York Mills Elementary School.

Kindergarten students learned about dairy farming, and agriculture as a whole, during the classes’ annual farm tour at Mursu Dairy May 8 in New York Mills, Minn.

“We live in a rural area, yet there are children and adults with no exposure to agriculture,” Tammy Mursu said. “We need to keep doing

these tours because of that.”

Mursu dairy farms with her husband, Tom, and son, Jeremy. For the past ve years, Mursu has coordinated with her daughter and local kindergarten teacher, Bridget Weller, to host the three classes of students on the family’s farm.

The students learn about dairy farming – from calf care to nutrition – but also other entities of the agriculture industry, such as farm machinery and smaller farm animals.

This year, Princess Kay of the Milky Way Rebeka Paskewitz spent time in the classroom May 7 to prepare the students for their eld trip the following day.

Paskewitz distributed farming puzzles about dairy farming to each classroom during her visit. Mursu purchased the puzzles using grant funding from Midwest Dairy, and the puzzles will be shared between the three classes throughout the school year.

In the milk room, the students paused for a short break in which they drank a carton of milk provided by the school. At the end of the tour, children enjoyed a small cup of ice cream donated by Mills Country Market.

Weller agreed. “I’m so fortunate my family wants to share their passion,� she said. “This is a huge time commitment, especially during planting season, and they’ve made it special to New York Mills.�

The Mursus ďƒžrst gave a tour to the local kindergarten classes when Weller’s oldest daughter – Tammy and Tom’s ďƒžrst grandchild – was in kindergarten. Now, a grandson participated in the tours as his dad and the Mursus’ son, Trent, helped at an educational station.

The ďƒžrst tour was meant to be as the Mursus recently completed a renovation on their farm, which included a new freestall barn and two milking robots for their 160-cow dairy.

Both Mursu and Weller saw the opportunity to connect younger generations with the dairy industry.

They worked together to create a curriculum of sorts for kindergarten students to learn more about farming. “That ďƒžrst year we tried it and saw the excitement the kids had,â€? Mursu said.

Weller agreed. “I grew up on a farm and never realized how good that was,� she said. “I love to have these students see what farming is like and realize it’s not your average lifestyle.�

Weller worked with the other two kindergarten teachers to prepare the students for the tour.

The teachers used resources provided by Midwest Dairy, including a coloring book, as educational tools. Following the tour, the students received treat cups from the dairy association, Midwest Dairy,

Every year, there is resounding enthusiasm for the way students are able to interact with the animals and tour guides at each station. “Before, we were milking in a 100-plus-year-old tiestall barn, and it wasn’t built for tours,� Mursu said. “Now, Jeremy is able to walk the kindergartners through the facility.�

Mursu especially likes how each tour guide puts farming into a perspective young children can relate to.

When in the milk room,

students learned how much the bulk tank holds by comparing its capacity to the number of pails of ice cream that might ďƒžt in it. Then, at the calf station, students were asked to remember the cows they saw in the freestall barn and know in two years the calves would be as big as those cows. “The children have fun and learn without even realizing it,â€? Mursu said. “We want it to be safe and fun, and for the kids to learn where their milk comes from. We want them to see how the animals are taken good care of.â€?

As dairy farmers, the Mursus realize the importance of hosting events, such as their farm tour, to connect with consumers and encourage support for the industry.

At the end of the day, their hope is they have created a positive association between children and the dairy products they consume. “These kids go home and talk about the farm tour at dinner,â€? Mursu said. “As part of the two percent that feeds the world, we need to speak out and share what farming is about. We all have different talents and situations, and we can speak out in whatever way ďƒžts.â€?

Class III price at $15.96, highest since Sept. 2018

The Agriculture Department announced the April Federal order Class III benchmark milk price at $15.96 per hundredweight, up 92 cents from March, $1.49 above April 2018, and the highest Class III price since September 2018. The four month average stands at $14.71, up from $14.02 a year ago and compares to $16.17 in 2017.

Late Friday morning Class III futures portended a May price at $16.38; June, $16.55; July, $16.74; and August at $17.05, with a peak of $17.19 in September.

The April Class IV price is $15.72, up a penny from March, $2.24 above a year ago, and the highest April Class IV since 2014. The Class IV average now stands at $15.69, up from $13.13 a year ago and $15.03 in 2017.

California’s 4b cheese milk price was $14.27 in April 2018, 20 cents below the FO Class III price, and its 4a butter powder price was $13.29.

You’ll recall that preliminary data showed March 50-State milk output at 18.9 billion pounds, down 0.4% from March 2018 and that was evidenced in the May 2 Dairy Products report which pegged March cheese output at 1.1 billion pounds, up 11% from February but 0.7% below March 2018. Yearto-date cheese output is now at 3.2 billion pounds, down 0.3% from a year ago.

Cheese output had been moving relentlessly higher since September 2015, but ended its 28-month streak in January, according to the Daily Dairy Report. The DDR stated “Although USDA initially reported year-over-year increases in cheese output in January and February, the agency revised upward its assessment of 2018 cheese output, resulting in yearover-year declines in the rst two months of this year.”

Wisconsin contributed 293.3 million pounds of cheese in the March total, up 12.4% percent from February but 0.7% below a year ago. California produced 209.1 million pounds, up 4.1% from February but 3.1% below a year ago. Idaho contributed 89.7 million pounds, up 25.4% from February and 4.2% above a year ago. Minnesota, with 62.5 million pounds, was up 9.9% from February but 1.4% below a year ago. New Mexico produced 77 million pounds, up 8.2% from February and 1% above a year ago.

Italian cheese totaled 483.5 million pounds, up

9.6% from February and 0.1% above a year ago.

YTD Italian stands at 1.4 billion pounds, up 1.4%.

Mozzarella, at 378 million pounds, was up 1.4% from a year ago, with YTD at 1.1 billion pounds, up 3.6%.

American type cheese totaled 435.1 million pounds, up 11.3% from February but 1.8% below a year ago, with YTD at 1.27 billion pounds, down 2.5%.

Cheddar, the cheese traded daily at the CME, totaled 309.9 million pounds, up 29.1 million pounds or 10.4% percent from February but 10.4 million pounds or 3.2% below a year ago. YTD Cheddar hit 913.9 million pounds, down 4.2%.

U.S. churns gave us 174.8 million pounds of butter, up 10.3 million pounds or 6.3% from February but 7 million pounds or 3.9% below a year ago. YTD butter is at 529 million pounds, down 0.5% from this time in 2018.

Yogurt output, at 398.6 million pounds, was up 2.2% from a year ago, with YTD at 1.1 billion pounds, down 1.3%.

Dry whey totaled 78.4 million pounds, down 14.2%, with YTD whey at 234.6 million pounds, down 13.6%. Stocks totaled 80.2 million pounds, up 5.5% from February and 16.3% above those a year ago.

Nonfat dry milk production totaled 163.7 million pounds, up 6.4% from February but 8.0% below a year ago. YTD powder is at 490.2 million pounds, down 0.8%. Stocks fell to 288.8 million pounds, down 21.6 million pounds or 7% from February and 8.5 million pounds or 2.9% below the 2018 level.

Skim milk powder totaled 49.6 million pounds, up a whopping 39.2% from February and 17.9% above a year ago. YTD skim hit 125 million pounds, up 0.7% from a year ago.

A higher U.S. All Milk price pushed the March milk feed price ratio higher for the third consecutive month. The Agriculture Department’s latest Ag Prices report marks the March ratio at 2.14, up from 2.07 in February and tops the 1.09 in March 2018, the second month to top the previous year since October 2017.

The index is based on the current milk price in relationship to feed prices for a dairy ration consisting of 51 percent corn, 8 percent soybeans and 41 percent alfalfa hay. In other words, one pound of milk today purchases 2.14 pounds of dairy feed containing that blend.

The U.S. All-Milk price averaged $17.50 per hundredweight (cwt.), up 70 cents from February and $1.80 above March 2018.

New Mexico again had the low end at $15.90, followed by Michigan at $16.50. California, at $17.30, was up 80 cents from February and Wisconsin, at $17.30, was up $1 from February.

The national average corn price averaged $3.61 per bushel, up a penny from February and 10 cents above March 2018. Soybeans averaged $8.52 per bushel, unchanged from February but $1.29 per bushel below a year ago. Alfalfa hay averaged $184 per ton, up $4 from February and $19 above a year ago.

The March cull price for beef and dairy combined posted another increase, averaging $62.80 per cwt., up $3.90 from February, following a $4.70 gain last month, but is $6.10 below March 2018 and $8.80 below the 2011 base average of $71.60 per cwt.

Milk cows averaged $1,140 per head in April, unchanged from January 2019, but $220 below April 2018. They averaged $1100 in California, unchanged from January but $200 below a year ago.

Wisconsin cows averaged $1130 per head, up $10.00 from January but $190 per head below April 2018.

The U.S. milk-over-feed margin climbed 64 cents above February’s margin to $8.85 per cwt. based on the Dairy Margin Coverage (DMC) Program calculation, “making it the largest margin since last October,” according to the Daily Dairy Report, “and $2.09 higher than March 2018’s pathetic $6.77.”

The Agriculture Department’s latest Crop Progress report shows 15% of the nation’s corn crop was in the ground, as of the week ending April 28, up from 6% the previous week, even with a year ago, but 12% behind the ve year average.

The report shows 11% of the cotton crop has been planted, up 2% from the previous week, 1% behind a year ago, and 2% behind the ve year average. Also, 3% of U.S. soybeans have been planted, up 2% from the previous week, 2% behind a year ago, 3% below the ve year average.

Traders liked what they saw in the Dairy Products report. CME block Cheddar, after slipping to $1.6550 per pound by Thursday, Jumped 2 cents Friday, to $1.6750, down a penny on the week but a penny above a year ago. The barrels, after holding at $1.63 for ve consecutive sessions, shot up 3 1/4-cents Friday, to $1.6625, up 3 1/4 cents on the week and 6 1/4-cents above a year ago. 25 cars of block exchanged hands on the week, 22 on Friday alone, the largest single day trade since March 24, 2011, and 57 cars for the month of April. 25 cars of barrel were sold on the week and 100 in the month.

Milk remains available for cheesemakers in the Midwest, according to Dairy Market News, but not at the discounts it has seen in spring ushes of the past.

Cheese demand reports remain mixed, with some cheesemakers seeing improved sales throughout April and expect similar results for May. Others say orders are slow and point to plentiful supplies as a bearish pull on orders. DMN says “market tones are maintaining that bullish push from early in the year.”

Western cheese inventories are above what buyers need but are “manageable.” Milk output is plentiful and cheese production is active. While some facilities are running at full schedules, others are reducing output to control supply. Contractual

volumes of cheese are moving steadily while other customers are mostly getting what they need in the short-run while being careful about long term commitments. International cheese sales are termed “fair.”

Butter closed Friday at $2.2725 per pound, up a quarter-cent on the week but 8 cents below a year ago, with 25 sales on the week, 52 for the month of April.

Cream is still headed for Midwestern churns but plant managers say current prices are nearing their limit and intakes have begun to ebb. Some are primarily nding cream from the West. Producers churning organic cream say those supplies are becoming scant.

Western butter makers relay that cream, although available, is somewhat tighter and surmise that ice cream manufacturers are taking the extra loads.

Butter manufacturing is steady and butter stocks are building. While buyer interest for butter remains strong, it is not enough to overtake production, according to DMN. Grade A nonfat dry milk saw a Friday close at $1.0525 per pound, up 1 1/4-cents on the week, highest CME price since October 6, 2015, and 21 cents above a year ago. 11 cars found new homes on the week, 33 for the month of April.

Dry whey closed Friday at 34 3/4-cents per pound, up 2 cents on the week and 3 cents above a year ago on 10 reported sales for the week; 80 for the month.

The latest data indicates that March Chinese imports were up 4.8% from 2018, “a bit light in comparison to expectations,” according to FC Stone dairy broker Dave Kurzawski in the May 6 Dairy Radio Now broadcast.

He believes the gure underestimates food grade imports going into China. FC Stone had expected something like 9%, he said, but he points out that about 80% of the imports are food grade and most come from Oceania.

New Zealand exports were up 50% in February, according to Kurzawski, and up 80% in March and what may have weighed down the Chinese estimate was the feed grade side of the equation. He blamed the African swine fever situation for the lower imports which has especially hurt U.S. whey exports to that country.

Tariff issues also remain between the U.S. and China. An FC Stone staffer in their Singapore ofce recently returned from China and described the tone there as “quietly pessimistic,” according to Kurzawski, who also reported that China’s rst quarter gross national product showed a nice 6.4% growth.

“We don’t know how accurate that number is,” he said, “but it did come in stronger than expected.

Bottom line; People in China are still eating food.”

Speaking of Oceania; DMN reports that dairy industry leaders in Australia are urging dairy producers to increase milk production. “The overall trend the last decade or so has been lower milk output in Australia; the Australian population has grown

during the same period. Concerns being voiced are that milk production increases will better buffer a potential need for Australians to import more dairy products as a matter of necessity,” says DMN. Very severe dry weather has arrived in New Zealand, especially the North Island as the season winds down and has “noticeably impacted milk production,” according to DMN. “Many herds are now being dried off early in response. The overall season is still expected to yield more milk than last season, as most of the seasonal milk has already been produced. But it increasingly appears the season which began with a bang, may end with a whimper,” concludes DMN. Cooperatives Working Together (CWT) members accepted 12 offers of export assistance from CWT this week to help capture sales for 480,608 pounds of Cheddar cheese, 357,149 pounds of whole milk powder, and 480,608 pounds of cream cheese.

These products are going to customers in Asia, the Middle East and South America from May

through August and raised CWT’s 2019 exports to 26.59 million pounds of American-type and Swiss cheeses, 3.96 million pounds of butter (82% milkfat), 1.94 million pounds of cream cheese and 23.44 million pounds of whole milk powder.

Lawmakers got a rsthand account of what’s happening on U.S. dairy farms. The House Agriculture Committee’s Subcommittee on Livestock and Foreign Agriculture conducted its rst hearing this year, choosing dairy, which is suffering its fth year of low milk prices and second year of trade-related challenges.

NMPF president and CEO, Jim Mulhern, testied that “Dairy’s challenges reverberate through the U.S. economy, and it’s appropriate that lawmakers put dairy rst on its 2019 agenda.”

Class III futures are trading over $17/cwt for the second half of 2019. The last time the market traded significantly over these values was back in 2014. Most producers should be projecting reasonably good profit margins through 2020 if feed prices remain at or below current values. For many mid-sized and smaller producers the road to financial health may still be an uphill battle, as heavy losses in recent years will need to be recouped.

Globally, cash milk product markets have firmed in recent weeks in U.S. dollar terms. The one exception is milk powders in Oceania. Oceania is the most expensive origin for butter, SMP and cheddar. The EU is the most competitively priced region for sourcing dairy commodities. Softer milk production trends in Oceania are supporting prices in that region, and weak profitability in the EU is minimizing the desire for expanding production.

In the latest USDA Dairy Product Production report, manufacturer production levels for various dairy products appear supportive in most categories. For March year over year production was –3.9%, -.7% total cheese, -1.8% American cheese, -8% NFDM, +17.9% skim milk powder,

-14.2% whey, and –16.1% WPC. Softer American cheese production and stronger demand has dramatically improved the surplus inventory situation in that cheese category. Although supportive, there remains issues with export demand for whey and cheese due to tariffs on major buyers.

Grain markets are finding mild price support on planting delays. Over the coming weeks traders will be sensitive to changes in weather forecasts. If most acres get planted as estimated, world grain supplies will remain burdensome for the next marketing year.

Corn supplies remain the most sensitive to price supportive news, but has a bigger cushion built into the market today than prior to the last quarterly stocks report.

It will take at least 3-4 million acres of prevent plant corn to put life back into this market.

The perfect marriage Ohio, Indiana farms merge herds, product lines

BIG PRAIRIE, Ohio – Not only are two farms coming together, but the farms’ product line is converging to produce dairy products for consumers and animals alike.

Sunrose Holsteins, owned by Bruce and Tricia Gingerich, of Millersburg, Ind., are teaming up with Velvet-View Farmstead, owned by Aaron and Brandi Schlauch, of Big Prairie, Ohio, to form one dairy farm located on the Schlauch family farm.

The combined herd of around 60 Holsteins, Red and White Holsteins and Jerseys is milked in an 8-stall step-up at barn parlor and housed in a freestall barn and loose housing.

Currently, 25% of the milk produced is being used to make foodgrade plain Greek and traditional yogurt as well as ker for animal consumption.

All processing occurs on the farm. The farm’s goal is to process all of the milk produced into various dairy products.

The yogurt is being sold under the Velvet-View Farmstead brand while the ker is sold as Champions Choice Natural Ker. The Gingeriches also own and show purebred Saint Bernard dogs as part of their Blissful Saint Bernards kennel. In addition, the Gingeriches own Long Life Replacements, a commercial dairy cow sourcing business.

“We were looking at how to stay alive in today’s dairy economy,” Bruce said. “We had been looking at

During about the time of [World Dairy Expo] last fall, good friends of ours approached me with the idea of combining our herds and working together.”

The Gingeriches shipped milk for the last time from their Indiana farm Dec. 28, 2018.

“As far as transitioning the herd, for the most part it went well,” Bruce said. “We had a few hiccups, but all in all it went about as smooth as it could have. When you have two families with similar interests, it makes it a lot easier knowing everyone is looking out for the same thing.”

Once the Sunrose Holsteins’ cows were moved to Ohio, Tricia stayed in Indiana to look after the Saint Bernards as well as replacement heifers. The Schlauch family managed the milking,

chores and processing while Bruce drove 230 miles one way twice a week to help manage both operations.

The Gingeriches will build a home at the edge of the Schlauch farm and hope to be settled with all their animals and themselves by June.

“The rst thing I am looking forward to is getting settled into where our animals, my wife and myself are in the same location for more than a couple days,” Bruce said. “Other than that, I want to continue to see what we can do to grow our own markets. If we want to stay in the dairy industry and not be huge, we need to deal directly with consumers.”

Velvet-View Farmstead yogurt was rst created in 2010 and is sold to seven local colleges and served in their cafeterias. The yogurt is also available

at grocery stores in the area.

Brandi manages processing of the yogurt and ker, and makes, on average, four batches per week. The yogurt is packaged in 32-ounce containers.

Champions Choice Natural Ker is available through independent distributors in Ohio, Indiana and Michigan and through various veterinarian ofces. The ker is available in a 32-ounce jug, 64-ounce jug and a 30-pound pail.

“Moving forward, we hope to be able to provide every dairy product for every consumer,” Bruce said. “We will see moving forward how we will name and brand things.”

research of their own, the Gingeriches began making small batches in their home.

“We spent one year playing around with ideas and formulas until we nally got to where we wanted to be,” Bruce said. “Ker is high in probiotics and high in yeast.”

The Gingeriches said they have noticed a signicant health benet in their own dogs. They has also been

adding ker to milk which is then fed to bottle calves.

Bruce said he feeds two to three tablespoons of ker morning and night to the dogs while calves are given four ounces in a bottle morning and night.

He said since feeding ker, he has not had a case of scours. They have also heard from others who use the product that the same is true.

“So far, we are very excited about the potential there,” Bruce said about the market for Champions Choice Natural Ker. “It is a nice marriage for us because we know and love the cows that produce the milk and we know and love the dogs we feed it to. On every side of it, we don’t need to be salesmen because we are telling people what we see, what we know and what we feel in the bottom of our hearts.”

Because breeding high type dairy cows has always been important for the Gingeriches, as dairy cattle showing is a passion of theirs, Bruce said the mating decisions will not change with becoming a combined herd. He said they may consider the A2A2 gene if they nd the consumer demand is there for A2A2 milk.

“My life goal is to develop the perfect cow,” Bruce said. “I think we’ve made these cows efcient enough that you can process milk out of any cow these days.”

A day in the life on Heinen Dairy Brothers plant crops before rain May 7

ST. JOSEPH, Minn. – May is typically a busy month for farmers, with planting crops for the year and catching up on projects cut short in the fall. The Heinen brothers were racing the rain clouds

character and charm, and the house, built in 1863, is where their grandfather, also named Peter Heinen, was born.

Peter and Jim have been dairy farming together since 1977. On May 7, their day began at 6 a.m., with mixing feed silage and preparing for

milking.

“We mix our silage with mineral and soybean meal,” Peter said. “After milking, we feed the cows hay.”

and 40 Holstein cows, and have added a few Red and White Holsteins through the years. The herd is bred for calving ease, and the brothers keep their fat at 4.2% and somatic cell count at 140,000. They also let their cows out to pasture as the weather allows. “Not many people pasture their cows anymore, but we do,� Peter said. “Every day they are outside, and in the summer they stay out overnight.�

Jim usually does the milking. It is hard for Peter to move his body in the motions required for milking after an injury in 2011. “I fell through the roof of a neighbor’s shed,�

Peter said. “I was helping shovel off snow and fell through a skylight down to the cement ďƒ&#x;oor. It’s a good thing I didn’t land on any machinery because the shed was full.â€?

Peter broke 10 ribs, his pelvis and his collarbone that day. “The neighbor was giving me a ride to the hospital, and I had to tell him to drive faster because I couldn’t breathe,� Peter said. “A broken rib had punctured my lung.�

and beds the animals. “There’s still plenty for me to do here,� Peter said.

Peter and Jim work full time on the farm, but their brother, Mark, was also helping May 7. “I help with ďƒželdwork when they need me,â€? said Mark, who is employed by the city.

The brothers enjoy working together, and Peter said they all get along well. “It doesn’t matter what job we’re doing, we all pitch in to get it done,� Jim said. “We’re not fussy about who is planting or feeding or whatever.�

Part of the Heinens’ 510 acres are located within the city limits of St. Cloud, Minn. They raise oats, corn, beans, alfalfa and clover.

The oats are baled into small bales for animal bedding and sold locally to gardeners or hobby farmers near the farm. “We don’t feed the oats to the cows, but I do really like it for bedding,� Peter said. “I think it sticks better in the stalls than the rye straw.�

they nished planting their oats, which they started the day before.

Jim harrowed a eld that was planted in oats that afternoon. They completed their planting of their 40 acres of oats the day before.

the skid loader, they began evening chores with feeding silage at 6 p.m. Then, the Heinen brothers took a break for supper when Peter made hamburgers, pork and beans, pickles and potatoes.

When supper was nished, they went back to milk for the evening.

Peter had a short night, and woke a couple times to check for calves due soon.

At the end of the day, they had 40 acres of oats in the ground, harrowed and fertilized.

“I like being around tractors and cattle,” Jim said. “I don’t plan to quit until I can’t do it anymore.”

Peter agreed.

“This is the only job I’ve ever had,” he said. “So we’re going to keep it going.

We haven’t gotten much ďŹ eldwork done in the past two weeks. We got a half inch of rain on April 25 and 2 inches of snow on April 27 that didn’t stick RAINFALL around long. We got an- TOTALS other half inch of rain on Last 2 April 30. On May 2-3 we Weeks were able to get back out in the ďŹ elds. We started pumping our manure lagoon May 3 and ďŹ nished May 7. We also got solid manure hauled over the weekend along with spot seeding because of alfal- Since April 14 fa winter kill. We are now 5â€? ready to start planting corn. It’s starting to dry out.

I think the frost is just about out. We plan to apply lagoon manure with a traveling gun RAINFALL on our winter rye. The TOTALS rye looks good despite Last 2 being wet and miserable weeks when we planted it. The new seeding alfalfa looks good; the older seedings are slow to 0.6� come. It was 20 degree this morning (May 7).

I went out last night and made a couple rounds on the sand I want to plant for oats. The soil isn’t RAINFALL extremely wet; we TOTALS just haven’t had Last 2 enough heat to dry Weeks it off. I was hoping to start planting today (May 8). South of here they have 1� planted some peas and I have a neighbor who was planting corn. We have the Since April 14 2.5� manure hauled. The alfalfa was coming nice, but this cool weather slowed it down.

We planted 25 acres of corn today (May 7) and I’m going back out to seed some more oats.

We seeded 45 acres RAINFALL of oats April 26. We TOTALS started pumping out Last 2 the lagoon at noon toWeeks day. If we could get that completely empty that would be huge. It’s been wet. The neighbors are going with anhydrous and starting with corn.

East of here there is no planting. West of here Since April 14 3.7� they are planting hard.

The alfalfa is looking better. It stands 8-10 inches tall. The rye is 12-18 inches tall.

I have oats in, but am waiting for RAINFALL warmer weather for my TOTALS corn planting. Winter kill Last 2 was a big issue in alfalfa Weeks in Wisconsin and I have been selling a lot of seed to help with the lack of forages this year. Fields with grass and alfalfa grass are in better shape than some pure alfalfa stands. Some of the late Since April 14 cut alfalfas did not fair 2â€? too well. The ground is cold and warmer weather is needed in the Midwest to get this hay crop growing because many are short of forages.

They are talking heavy rain for tomorrow (May 8), one to two inches. We aren’t really doing much of RAINFALL anything in the ďŹ elds TOTALS Last 2 right now, no one Weeks around us is, and I don’t know when we will be able to. We ďŹ nally got into the ďŹ elds a little, but now we’re supposed to be getting a couple of inches today and tomorrow (May 8 and 9). We’ve interseeded some clover, Italian rye and RAINFALL oats and peas into a bunch TOTALS of alfalfa and clover. We had Last 2 ďŹ elds that were ďŹ ne and Weeks some that were 90 percent winter kill. All of the ďŹ elds that had grasses planted in with the alfalfa and clover didn’t winter kill like the straight clover or alfalfa. We got our bedding pack and manure hauled, and we’re hoping to get the liquids Since April 14 spread and tilled under.

Our winter kill wasn’t as bad as some in the area, but we are going to till under all the hay ground that had winter kill and put corn in to get more tonnage. We’re still plugging away at Since April 14 2.75� getting the manure hauled; we’ve got about another week of that, then we’ll start thinking about putting in corn.

The new seeding from last year looks pretty good, but the ones that are two or three years old had a lot of winter kill. We didn’t take a third cutting off the new seeding last Since April 14 year and I think that 1.25� helped. We’re waiting for it to get drier and warmer to put in corn.

We’ve got a lot of clay and it takes a bit to get dry. The next couple of days are highs in the 40’s and that’s not weather to grow corn.

We are suppose to get some more rain. If we had a couple more nice days we could go. My manure pump guy should show RAINFALL up later this week if the TOTALS ďŹ elds are ready. VIROQUA, Wis. – Upper Midwest Jersey enthusiasts gathered for the 21st annual Wisconsin Spring Spectacular Jersey Show May 3-4 in Viroqua, Wis. Robert Jarrell, of Corbyville, Ontario, served as the ofcial judge for the show, placing 104 head of

Jerseys from Wisconsin, Minnesota and Iowa.

At the end of the day, the winning 4-year-old cow was named senior and grand champion of both the open and youth divisions. Norse Star Scout 4857 was exhibited by Lilly Johnson and Linehan Jerseys of River Falls, Wis. The winning junior 2-year-old and intermediate champion, Gil-Bar Premier Wendy 43-ET, was selected as the reserve grand champion. DAIRY CALENDAR Area farmers are invited to attend a pasture walk hosted by the Coulee Graziers Thursday May 16 at 12 p.m. at the farm of Steve and Pat Kling, W15307 Wilson Road Taylor, WI 51659. Farmers from west central Wisconsin with an interest in grazing and forage resources, from small-scale holding paddocks to full-scale managed intensive grazing are welcome to attend. Topics for discussion at the May pasture walk include managing pasture for beef and dairy cattle and early spring grazing. A light lunch will be provided. The Coulee Graziers Network offers the opportunity to network and learn through farmer lead discussion to improve protability with environmentally sound grazing practices. This year’s UW–Madison Dairy Science Dave Dickson Memorial Golf Classic is scheduled for Wednesday, May 15 at the award-winning University Ridge Golf Course in Verona. The golf outing is the department’s primary fundraising event. All proceeds support the dairy science department’s undergraduate student scholarship program and high impact learning activities including the Dairy Challenge and dairy judging teams, hands-on learning laboratories, and undergraduate research. Last year’s outing raised nearly $25,000 for those programs.

The Golf Classic is a scramble, where each team member plays the ball closest to the hole after each shot.

Registration includes 18 holes of golf, cart rental, lunch and prizes for a fee of $135 per golfer. The registration fee after April 20 is $150 per golfer.

Visit the Kip and Jennifer Kauffman farm at 122112 Oxbo Rd., Stratford, Wis. for Transitioning Dairy Cows from Stored Feed to Pasture, 1 to 3 p.m., May 23. The Kauffmans set up a grazing-based dairy farm from scratch.

They built their farm incrementally, starting with buying 80 acres in 2001. They rented out the cropland until starting on this journey. Jennifer milked a few cows and fed the milk to calves she raised. In 2011 they began their dream of building their own dairy starting with a small parlor and bedded pack housing for their planned herd of 35 Jersey cows plus replacements heifers. In December of 2011 they began milking the cows. The spring brought fencing pastures, building lanes, and grazing cows. Come learn how a small dairy can still get started today, what worked the best and what they would change.

Cookin’ in the garden As I survey the shelves in my basement cold storage room, I notice more empty jars.

Just as it should be, but I also notice shelves still stocked with an abundant supply of pickles.

I keep restocking and not eating enough. I make great sweet dill pickles but cannot copy my mom’s sour dill. You know the ones. They make you pucker, but you can’t wait for the next bite. When she put the cucumbers in the jar, we would start the countdown to when they would be ready to eat. They had to sit for six weeks before we could open the jar. When the time arrived we would clean out a quart jar in a single sitting. I don’t know what I’m doing wrong. I’ve asked my mom, but she’s not sure what is making the difference, either. I would gladly take any tips or advice. Is there a certain variety or type of cucumber I should be planting this spring? Should I use well water or softened water in my brine? I really would like help in replacing the jars of soft pickles sitting on my shelves.

Last year, I didn’t plant very many bell pepper plants because I had a big carry over from the previous year. Now I’m going to have to start rationing my remaining stock to make it through the summer before I can restock. It is my version of stretching out the last of the haylage until the rst cutting of hay. Jonathon and Libby used a new variety of pepper in their relish last year, and I think I’m going to have to plant some Poblano Peppers this year. It added a smoky avor to their pepper relish.

How do you know what varieties of plants to plant in your garden? I didn’t realize the Minnesota Master Gardeners program does its own seed trials on different varieties of garden produce to see which plants do well in our Minnesota gardens. I discovered which yellow bean and carrot varieties should work well in my garden. I’m excited to try them out. The program also recommended a cucumber called Chicago Pickling. Check the website, www.extension. umn.edu, to see what may work in your garden.

I can’t wait to start eating out of the garden

again. Once Mark takes his big toys through my garden, I’ll follow behind with my tiller to get the seed bed ready. The rst things I plant are spinach and garden salad bowl. I am looking forward to a good salad and homemade dressing. I should have rhubarb ready in a week or two. Its growth is like a perfect thermometer.

It gets bigger as the temperatures get warmer. I will also have our rst full harvest of asparagus this year. Creamed asparagus on toast is a meal in itself. The only thing I’ll be missing from my garden this year is strawberries. My patch was well over 8 years old, and the quack grass nally took over. door. I haven’t tried these salad recipes but I can’t wait to taste the dressing recipes on the salad bowl lettuce from my garden.

Dandelion bacon salad Serves 4 – 6 Simply in Season Cookbook 1/4 cup lemon juice or vinegar 1/4 cup honey or sugar, more or less to taste Dash of salt Blend in a small bowl.

Stir in: 1/2 cup evaporated milk Fry four slices of bacon in a Dutch oven or very large fry pan and drain on paper towel.

Remove all but 1 Tbsp. bacon fat from pan.

Crumble bacon and set aside.

1 Tbsp. our Add to reserved bacon fat in fry pan, heat and stir until smooth. Slowly stir in the lemon mixture. Heat and stir until thickened. Turn off heat but leave pan on the burner.

9 cups dandelion greens, chopped. Use only greens that haven’t been sprayed.

Add to warm dressing and stir gently to coat. Garnish with bacon and chopped hard cooked egg. Can also garnish with sliced red onion rings, mushrooms or dried cherries.

Strawberry spinach salad and dressings Serves 4 Simply in Season Cookbook 4 cup spinach or other mixed greens, torn 1 cup fresh strawberries, peaches, blueberries, kiwi fruit or combination, sliced.

Combine with selected toppings. Pour half of dressing over salad just before serving, then more as needed. Refrigerate leftover dressing.

Topping options: 2 green onions, chopped 1 small red onion cut into thin rings 1 clove garlic, minced 1/2 cup asparagus, cut into 1 inche pieces, blancehed and chilled 2 Tbsp. sunower seeds, toasted 1/2 bacon pieces, cooked and crumbled 1/2 cup walnuts or slivered almonds, toasted 1/2 cup shredded cheese 1 cup cooked turkey, chopped

Two seed dressing 1/4 cup sugar or honey 2 Tbsp. sesame seeds 1 Tbsp. poppy seeds 1/4 cup cider vinegar or balsamic vinegar 1/4 cup olive oil 1/8 tsp. Worcestershire sauce 1/4 tsp. paprika Salt and pepper to taste Combine in jar with tight tting lid. Shake well. Refrigerate left-over dressing.

Rhubarb dressing 2 cup rhubarb, chopped 1/2 cup sugar 1/4 cup vinegar 3/4 cup oil 2-3 Tbsp. onion, grated 1 1/2 tsp. Worcestershire sauce 1/4 tsp. salt Cook rhubarb, sugar, and vinegar over medium heat until soft. Drain in sieve. Discard pulp. To 6 Tbsp. of this juice, add remaining ingredients. Shake in jar or whisk together. Chill at least one hour before serving.

Creamed asparagus Cut asparagus spears from the garden at the base of the plant.

Wash and trim away woody part. Cut where your knife has the least resistance. Discard woody part and cut remaining stalk into serving pieces. I separate the tips from the stalks for cooking purposes.

Blanche cut asparagus stalks over boiling water until slightly tender. Add tips and nish blanching until all pieces are tender. Put asparagus in a bowl.

While asparagus is blanching, start making the creamed sauce. In a separate cooking pan, melt 2 Tbsp. butter. Add 2 Tbsp. our and stir until bubbly over medium heat. Add 2 cups milk and whisk together. Stir until thickened, about 5-10 minutes. Add salt, pepper and a pinch of nutmeg for seasoning. Pour over asparagus in bowl. Serve over buttered toast.

1 cup (4 ounces) shredded colby cheese 1 cup (4 ounces) shredded monterey jack cheese 1/2 cup (2 ounces) crumbled cotija cheese 8 slices sourdough bread Fresh baby spinach

Cook sausage in a large skillet over medium-high heat until no longer pink.

Drain sausage on paper towel; wipe out skillet. Whisk eggs, water and salt if desired in bowl. Melt 1 tablespoon butter in same skillet over medium heat, swirling to coat bottom of pan. Add egg mixture; cook and stir until eggs are almost set. Add in sausage. Cook and stir until eggs are set. Remove from skillet; keep warm. Wipe out skillet. Combine cheeses in a bowl. Layer a fourth of egg mixture on four slices of bread. Sprinkle each with cheese mixture. Top with spinach leaves and remaining bread. Spread the outsides of sandwiches with remaining butter. Toast one sandwich, covered, in a warm skillet over medium heat for 4 minutes. Flip sandwich; cook, uncovered, 4-5 minutes longer or until bread is lightly golden brown and cheese is melted. Repeat with remaining sandwiches. Serve immediately.

Blueberry ricotta coffee cake 1 cup all-purpose flour 1/2 cup oat bran 1/2 cup plus 2 tablespoons packed brown sugar, divided 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon ground cinnamon 1 container (8 ounces) whole milk ricotta cheese

1/2 cup plain yogurt 2 eggs, lightly beaten 1/4 cup butter, melted 1/2 teaspoon vanilla extract 1/2 cup fresh or frozen blueberries, divided 1/2 cup heavy whipping cream, whipped 1 cup thick blueberry yogurt

Heat oven to 350°F. Combine flour, oat bran, 1/2 cup brown sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Whisk the ricotta, yogurt, eggs, butter and vanilla in another medium bowl. Stir ricotta mixture into dry ingredients until just moistened. Fold in 1/4 cup blueberries. Pour into a greased 8-inch square baking dish. Sprinkle with remaining blueberries and brown sugar. Bake for 33-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Fold whipped cream into blueberry yogurt. Cut cake; dollop pieces with cream mixture.
