German roots keep them going Petzels named 2016 Sibley County Farm Family of the Year

HENDERSON, Minn. – The Petzels don’t let challenges get them down. One thing that has kept them going through tough times on the farm has been their heritage.

“We’re stubborn Germans,” Marvin said with a laugh. “It’s true. That helps.”

This stubborn lineage has helped pave a career and a lifestyle in farming on their 78-cow, 700-acre farm near Henderson, Minn. In 2016, the Petzel family received the Sibley County Farm Family of the Year award. Brothers, Marvin and Curtis, farm together with Marvin’s sons, Greg and Bryan, and Curtis’ children, Doug and Cheryl.

Curtis’ wife, Judy, and daughter, Emily, work off the farm, as do Marvin’s daughters, Lynnsay and Kathy, along with his special friend, Kathy.

In addition to counting on their stubborn family roots to push them through rough times, they all lean on each other for support.

“We all pull together,” Marvin said.

The Petzels feel fortunate they haven’t had signicant challenges.

“Everyone has to deal with sick cattle, mastitis or wet springs every once in awhile,” Marvin said. “And it’s nerve-racking trying to get the crop in and the weather won’t let you, but that applies to all farmers.”

They all agreed farming with family can sometimes bring out frustrations.

“You don’t always agree on everything, but you try to be civilized in your disagreements and compromise,” Marvin said.

Good things have also come about because they farm together.

“Our dad died when I was a couple months out of high school. Marvin is 10 years older than me so to a certain extent he is like a father gure to me.

When I was starting to farm, he was showing me the way,” Curtis said.

Plus, they have a lot of good memories with other family members on the farm. Curtis and Marvin’s mother fed calves until the age of 85, ve years before passing away at the age of 90, in 2009.

“She was on the farm every day,” Cheryl said.

Greg remembers gardening with her in between chores.

“I would help her plant and pick weeds. It was a huge garden,” he said.

Now Greg carries on his grandma’s gardening legacy.

“Our mother loved gardening and would be so proud of him. Greg keeps us stocked with fruits and vegetables,” Curtis said.

Along with their milking herd of mostly grade Holsteins and a few Ayrshires, the Petzels raise all their replacement heifers and feed out their steers.

They also farm 700 acres of corn, soybeans and alfalfa. Although everyone on the farm is cross trained to help in any role, the dairy herd is mostly managed by Curtis, Doug and Cheryl while the crops are taken care of by Marvin, Bryan and Greg.

They milk in a barn they built in 1962 after their previous barn burned down when struck by lightning. That had been the barn original to the farm when Curtis and Marvin’s grandpa bought it in 1908. Their great-grandfather emigrated from Germany to the area in earlier years.

“We’ve always had dairy cows,” said Marvin, who started farming fulltime when he graduated from high

school in 1966.

It’s the dairy that helped them get through the farm economic crisis in the 1980s.

“Things were tough for cash cropping. Someone asked me what my farm insurance was. My dairy cows are my insurance,” Marvin said.

Curtis joined the farm in 1980 af-

ter attending college rst at the University of Minnesota-Waseca and then at the University of Minnesota-Twin Cities. After a short stint working at a grain elevator, Curtis knew he needed a change.

Both Bryan and Greg work full-time jobs – Bryan as a civil engineer and Greg in crop insurance – as they continue to farm, focusing mostly on the cropping side.

With six family members as a part of the farm, they Petzels have opportunities to take time off. Each of the family members has taken a vacation at least once in the last couple years.

“There are enough of us here that if you don’t get away, that’s your own fault,” Marvin said.

When the Petzels learned about their Sibley County award, they weren’t sure they believed it.

Johnsons going organic to make room for sons Higher milk price eliminates need to expand

FERRYVILLE, Wis. – Wanting to escape the chronic ups and downs of milk prices, Lee and Cheryl Johnson are taking their dairy operation organic. The price farmers are paid for organically produced milk is much more stable. “In the organic world, you know what you’re going to get,� Lee said. “And they monitor the milk supply.� “If they have to, they’ll put a quota on,� Cheryl said referring to their cooperative, Organic Valley.

The Johnsons, who milk 150 Holsteins on their farm, Whispering Pines Dairy Farm, in Vernon County, near Ferryville, Wis., are scheduled to start selling milk to their or-

ganic processor on Dec. 1.

The Johnsons are seeking steady milk prices for one major reason. “The three boys want to come home and farm,� Lee said. “I don’t want to have to go out and borrow $1 million to build another milking facility. If we’re going to stay (producing) conventional (milk), we’ll have to milk more cows.�

According to the USDA’s Economic Research Service, in 2016 Organic Valley paid an average of $35.67 for milk.

Lee estimated that his farm has recently been receiving approximately $17 per hundredweight for its nonorganic milk.

Getting more than double the price of conventional milk will let the Johnsons employ their sons – Chad, 25; Cole, 22; and Dylan, 18 – without adding cows and without building

Cole already farms with his parents. Chad is working on his master’s degree at Augsburg College. Dylan is a senior at De Soto High School and intends to work full-time on the farm after graduation. Cheryl said the entire trio should be home by the end of May. In their transition to organic, the Johnsons are expecting slightly lower milk production. “The cows are meeting our expectations. We penciled in a 20 percent reduction, and we’re holding it now at less than 10 percent,� Lee said.

Before the transition began, the rolling herd average stood at about 24,500 pounds per cow, according to Lee. Now, it’s at approximately 23,000 pounds on twice-a-day milking, Lee said. The butterfat average is 900 pounds per cow, with the protein at 700 pounds.

An unexpected bright spot is the cows’ somatic cell count.

Lee pegged it at 120,000 and said it’s as low as it’s ever been, even though conventional drycow treatments have not been used for nearly a year.

Along with dropping drycow treatments, the Johnsons have stopped using antibiotics on their dairy cattle, as

the National Organic Program (NOP) requires. They stopped de-worming, too, and are intent on preventing the parasites from becoming established.

They use an organic teat sealant on cows they’re drying off, and they’ve stopped feeding milk replacer to their calves. The Johnsons bought a pasteurizer several months ago and are giving their calves pasteurized milk.

Vaccinations are still allowed, Lee said. And, the Johnsons have been introduced to organic-compliant treatments for some ailments. One Turn to JOHNSONS | Page 6

“It really does work,” Cheryl said. “I use a lot of garlic on my calves.”

Cheryl and Lee are also learning how to grow crops organically. They crop 1,400 owned and rented acres, while Cole rents 150 acres on his own. The Johnsons grow corn, hay, barley, oats, soybeans and a cover crop of rye.

Synthetic fertilizers and pesticides are not allowed in organic production. Yet, without them, last year, the Johnsons got excellent corn yields that ranged between 150 and 195 bushels per acre, Lee said.

The farm’s soybeans yielded 40 to 50 bushels per acre last year, according to Lee. “They were normal,” he said. “Everybody talks about the yield hit you take when you go to organic, but not if you do a good job. You can’t just cultivate once and call it good enough.”

Organically grown soybeans and corn need to be both rotary hoed and cultivated, the Johnsons have found. To that end, they’ve added cultivators and rotary hoes to their machinery inventory.

Although growing corn and soybeans organically takes more time and labor, Lee said he enjoys the work.

“It was fun last year, when we were working with the crops,” Lee said. “It was just a different feeling. It was freaky the rst time you went out with that cultivator and thinking the only way you’re going to save this crop is to cultivate it.”

Besides making growing crops more enjoyable, organic production is saving the Johnsons money.

They’re not buying genetically modied seeds, chemical pesticides and many kinds of fertilizers. Cheryl and Lee estimated the savings amounted to $70,000 to $80,000 during 2016.

To make up for the absence of those inputs, they’ve bought organic fertilizer for elds that did not receive cow manure. And, they’re using more cover crops and will plow under hay stands earlier, to reap the benets of the nitrogen and organic matter.

After a three-year transition, the Johnsons’ land can be certied as organic. In the meantime, they’ve bought organic feed and are renting land nearby that has been certied. By June 2018, Cheryl said just about every acre they own or rent will be certied.

The Johnsons also raise beef steers and have a herd of 75 Angus cows. Those cattle will be managed conventionally, Lee said.

Full-time employee Adam Barr mixes feed, works in the elds and works with the beef cattle. Part-time employees include Mike Isbell, Ryan Gottbeheat and Jeremy Braadland. Lee’s aunt, Virginia Hendrickson, feeds calves in the mornings.

The Johnsons plan to divide the family labor so Lee continues to milk each morning, handles the vet work and breeding, cultivates and rotary hoes, and repairs machinery. Cheryl is a loan ofcer for Farm

Service Agency (FSA). She feeds calves evenings and keeps the farm’s records.

Cole works with the beef cows and crops, and mixes feed. Chad’s duties include the calves and youngstock, along with crop work. Dylan’s main focus is the dairy cows.

The Johnsons started considering organic farming in 2015. Milk prices were depressed then. While at a birthday party, Lee was asked about dropping milk prices.

“An organic guy was sitting there,” Lee said, “He turned around and said, ‘The milk price is dropping?’”

Farmers contemplating a switch to organic production should be aware of the recordkeeping that’s necessary, Cheryl said.

“There’s a lot of paperwork to it,” she said. “But there are a lot of good, helpful people. They want you to succeed, for sure.”

The Johnsons recommend going to as many organic eld days and meetings as possible.

“They’re worth their weight in gold,” Cheryl said.

As for their own transition to organic dairying and cropping?

“I think it’s gone better than we even anticipated,” Lee said.

Family members: My wife, Ann, and I have six children who were all active on the farm while growing up. Ann and I have started transitioning to the next generation, as our oldest son, Chris, is in partnership with the family dairy business.

Our oldest daughter, Shannon, works as a speech pathologist and lives with her husband, Chuck, and their family in Minneapolis. Our daughter, Amanda, lives in Fargo, N.D., with her ve children and husband, Matt, and works as a RN. Brian is a eld agronomist for Pioneer and lives in Goodhue with his wife, Lindsey, and their family. Our son, D.J., started a chopping and manure pumping business, Buck’s Custom Services, in partnership with me. He also helps on the dairy. D.J. and Leah will be married this summer. Our son, Taylor, is attending school and helps do chores when he is home. Our family has grown to include 15 grandchildren (and counting) who love to come to the farm.

Tell us about the farm you currently operate. We own 630 acres and rent an additional 170. We grow alfalfa and corn. We milk 225 Fleckvieh-Holstein crosses and also market Fleckvieh bulls. Liz joined us last year, after receiving her degree in dairy science, and also operates her own Fleckvieh semen sales business on the side. Paul is joining the operation while nishing his agriculture power degree.

This year, he is starting a custom baling and wrapping business. Michaela (junior at University of Wisconsin-River Falls), Anna and Nathan help when they can.

Tell us about the farm you currently operate. Buck’s Unlimited is a family owned and operated dairy farm in southeast Minnesota. We milk 500 cows in a double-12 parallel parlor. Cows are housed in four barns, three with sawdust bedding and one with sand. Four years ago we began raising all our own heifers.

We also feed out about 60 percent of our bull calves. We crop about 950 acres of oatlage, hay and corn. We also buy crops from Chris, Brian and D.J. from land they farm.

How often do you and your siblings talk about dairying? Since I am in Wisconsin, I do not see the others as often, but we get together at least ve times a year.

Our visits are centered around our farms and families. Once in a while we email or call each other.

How did you get into farming? Both Ann and I grew up on family dairy farms.

My parents built a 100-cow parlor and freestall barn setup in 1972. Three years later, Dad was killed in a farm accident, so I began farming full time with my mom, brother and sister. And and I we married in 1977 and continued to farm with my family until 1991 when a neighbor asked if we would be interested in his dairy farm and we said yes. We bought the farm, starting with 35 cows of our own and purchasing another 60. Since then we have gradually grown the dairy to its current size of 500 crossbred cows.

How often do you and your siblings talk about dairying? I would say at just about every family gathering somebody starts talking about something dairy related. We are a diverse group.

What are the benets of having family members involved in the industry? We have something to talk about!

What is one fundamental philosophy you learned growing up and still stand by on your farm? Work hard, play hard.

What piece of technology/equipment do you have now that you wished you had growing up? TMR with drive by feeding.

What’s a highlight for you and your dairy each year? We like when all the fall work is done. Some years it is more of a feeling of relief than a highlight.

What does the dairy industry mean to you? It has been our livelihood and our life. There are a lot of good people in the industry.

Besides family, who else do you network with about dairy topics? We live in a strong dairy area so we have a lot of neighbors to talk to. We also go to a lot of Minnesota Milk Producers Association events, which are a great place to network.

How did you get into farming? We purchased a 60-cow herd in 1994, and rented a barn for the rst couple years before returning to Mike’s home farm after his father had an accident that forced him into retirement. We built a freestall barn and slowly grew from there.

What are the benets of having family members involved in the industry? It’s always good to have someone who understands what you’re going through when times get tough. Each of our farms gives examples of the diversity within the dairy industry. We can all understand and appreciate what each of us contribute.

We have specialized heifer raising, organic and conventional farming within our family.

What is one fundamental philosophy you learned growing up and still stand by on your farm? Be bold and persevere through the ups and downs. Building a freestall barn and parlor for 100 cows in the mid-70s must have been a bold move for my parents. My mom and brothers made it work after Dad’s accident. It took commitment from everyone to work through the ups and downs, but we are where we are today because of their perseverance. We carried that same philosophy when we switched to an all Fleckvieh herd.

What piece of technology/equipment do you have now that you wished you had growing up? I was fortunate to grow up on a modern dairy farm. Computer farm records would have been nice for the farm back then. I remember my mom doing endless hours of record keeping on the farm. When we started, I did it the same way. Now, with the computer, I can do more with the same information in a shorter time. I think it would have made Mom’s work easier if she had the programs I now have.

What’s a highlight for you and your dairy each year? Watching our children’s love for agriculture grow. Whether or not they end up with a career in agriculture, we know they have something many kids don’t. We are fortunate to have children who want to continue in production agriculture as well as the numerous supporting industries. We hope that carries through for generations to come.

What does the dairy industry mean to you? Endless opportunities in the future for all who want to be a part of it. It won’t be easy, but is guaranteed to be rewarding.

Besides family, who else do you network with about dairy topics? Our support group includes our nutritionist, vet and fellow farmers. The circle continues to expand through our children as they create their own circles through school and work. Because of the Fleckvieh cattle, we have friends worldwide. No matter where you go, farmers face the same challenges.

Tell us about the farm you currently operate. We raise 225 head of dairy replacement heifers and care for dry cows. We sold our milking herd in 2009 and started our heifer business in 2010. We operate 230 acres of alfalfa and corn. Our youngest son, Buck, did not want his 4-H heifer to leave the farm when she calved, so we milk her here and started raising bull calves.

Tell us about the farm you currently operate. We are an organic dairy farm. We milk 130 cows and run 560 acres. In 2015, we installed two Lely robots.

How did you get into farming? I was born and raised on a dairy farm by Goodhue, Minn.

I worked with my mom and brothers and milked for dairy farmers. I then married a dairy farmer.

How often do you and your siblings talk about dairying? Whenever we have family gatherings, farming is always a topic. We have each taken a different path with our farms, so there is always a lot to talk about.

What are the benets of having family members involved in the industry? Having something in common as a family and understanding the struggle to schedule family gatherings around chore times.

What is one fundamental philosophy you learned growing up and still stand by on your farm? Having cattle is a big responsibility. You have to keep taking care of them even if you don’t feel up to it or if the weather is crappy.

What piece of technology/equipment do you have now that you wished you had growing up? Cellphones and computers. We use our phones everyday for heat detection or talking with our customers. We can call the vet on the spot if there is a problem with an animal.

What’s a highlight for you and your dairy each year? We look forward to the Dodge County Fair. Our kids have been showing dairy for 28 years.

What does the dairy industry mean to you? Independence. We are making decisions for our own business and working with family and cattle.

Besides family, who else do you network with about dairy topics? The farmers we work with, vet, nutritionist and other farmers. Curt also hauls milk every other day and has those contacts.

How did you get into farming? I am on our family’s home farm. I was in partnership with my mom, Dolores, and brother, Dave, in the early 1980s. Dave purchased his own farm in 1991. We continued in partnership with Mom and my sister, Mary, until Ruth and I purchased the farm in 1998.

How often do you and your siblings talk about dairying? Whenever there’s a family gathering, farming is the topic of conversation.

What are the benets of having family members involved in the industry? It’s interesting to hear when someone is trying something new to see how it’s going for them. We have robots, and Lori has automatic calf feeders, so there’s usually some new equipment to talk about.

What is one fundamental philosophy you learned growing up and still stand by on your farm? Respect your soil. People and cows will come and go, but the land is here forever.

What piece of technology/equipment do you have now that you wished you had growing up? In-line baleage. I like that you can make hay way faster with far less labor and horse power than it took to do the small square bales. We baled a lot of small squares when we were young.

What’s a highlight for you and your dairy each year? Spring. It means long days and warmer weather. We like seeing everything green up, and there’s always optimism for the new growing season.

What does the dairy industry mean to you? It is truly a sustainable industry. You grow crops to feed the animals, use their manure for the majority of fertilization needs and you have a nished product in milk that leaves your farm.

Besides family, who else do you network with about dairy topics? Other members in the Organic Valley co-op, nutritionists, veterinarians and hoof trimmer among others.

2017 production predicted 2.3 percent greater than 2016

The Agriculture Department lowered its 2017 milk production forecast in its latest World Agricultural Supply and Demand Estimates (WASDE) report as “reductions in milk per cow offset increases in milk cow numbers.”

2017 production and marketings were projected at 217.3 and 216.3 billion pounds respectively, down 200 million pounds from last month. If realized, 2017 production would be up 4.9 billion pounds or 2.3 percent from 2016.

“Fat basis imports were reduced on weaker imports of cheese and butterfat products, but imports of milk protein products support a higher skim-solids basis import forecast. Fat basis exports were lowered on weaker sales of whole milk powder (WMP), but skim-solids basis exports were raised as weaker WMP is more than offset by higher sales of a number of skim-based products. Ending stock forecasts were raised on both a fat and skim-solids basis, reecting current large supplies and lower expected domestic use,” the report stated.

Dairy product price forecasts for cheese, butter, nonfat dry milk, and whey were lowered as both domestic and international supplies are large.

As a result both Class III and Class IV price forecasts were reduced from last month.

The Class III milk price is projected to range $16.10-$16.60 per hundredweight (cwt.), down from the $16.60$17.20 expected a month ago, and compares to $14.87 in 2016 and $15.80 in 2015.

The Class IV forecast averages $14.30-$14.90, down from $14.85$15.55 predicted last month, and compares to $13.77 in 2016 and $14.35 in 2015.

The California Department of Food and Agriculture announced its May Class I milk prices at $16.65 per cwt. for the north and $16.92 for the south.

They are down 11 and 12 cents respectively from April, both are $1.81 above May 2016, but are the lowest Class I prices since November of last year.

The ve month average for the north stands at $17.79, up from $15.67 at this time a year ago and compares to $17.45 in 2015. The southern average, at $18.06, is up from $15.94 a year ago and $17.72 in 2015. The May Federal order Class I base price is announced

by USDA on April 19.

Meanwhile; the April Crop reports were “neutral to bearish, with the data released in line with expectations,” according to FC Stone. Corn stocks were unchanged and soy stocks raised by 10 million bushels.

Three percent of the nation’s corn crop was in the ground, as of April 9, according to the USDA’s latest Crop Progress report. That’s down 1 percent from this time a year ago but on par with the latest four-year average.

Penn State’s Dr. James Dunn reports in his latest Dairy Outlook that “The long-term issues depressing dairy prices are the strong dollar, the continuing Russian embargo on EU dairy imports, and problems in the Middle East.

Overall the outlook for milk prices for 2017 is better than 2016, although not as attractive as it was a few weeks ago.

Feed prices will remain low so dairy protability this year should be better than in 2016.”

Regarding feed prices, Dunn reports that corn and soybean meal prices are lower than last month, with corn down 6 percent, meal down 6 percent, and soybean prices down 6.5 percent.

“South American corn and soybean crops will be very good and world inventories are very high,” according to Dunn. “U.S. exports of corn and beans are large despite the strong dollar. There is no reason to expect corn and soybean meal prices to increase, given the large inventories worldwide if 2017 crops are good.”

“Income over Feed Costs (IOFC), Penn State’s measure of income over feed costs, fell by 0.5 percent in February from its January value. February’s value is about the same as the last two months, with all three months well above 2016. Income over feed cost reects daily gross milk income less feed costs for an average cow producing 65 pounds of milk per day,” he says.

“The net revenue per hundred pounds of milk (milk margin) is the estimated amount of the Pennsylvania all milk price that remains after the feed costs per hundredweight of milk production are paid. Like income over feed cost, this measure shows that the February PA milk margin was 0.5 percent lower than in January. The Pennsylvania drought continues, Dunn concludes, with the southeastern part of the state having moderate drought.”

Dairy prices were mixed in the Good Friday holiday-shortened week, as a lot of product made its way to Chicago and traders awaited the April 18 Global Dairy Trade auction and the April 20 March Milk Production report.

The CME’s 40-pound Cheddar blocks closed Thursday at $1.4750 per pound, up 1 1/2-cents on the week and 4 3/4-cents above a year ago. The 500-pound Cheddar barrels nished at $1.4275, down three-quarters but 1 3/4-cents above a year ago. Three cars of block traded hands on the week and 37 of barrel.

potentially would be the lowest monthly volume since February 2010,” the DDR warned. “That said, the Easter and Passover holidays were earlier last year than they are this year, making it quite possible that sales took place in February 2016 driving higher totals.

Still, commercial disappearance for the rst two months of this year has fallen 14 percent behind last year’s pace and is 9 percent lower than the ve-year average pace for the same months,” according to the DDR. The April 7 Dairy and Food Market Analyst (DFMA) conrmed the DDR’s report on slipping butter demand and adds that supplies of American cheese have also outpaced demand.

“During the three-months-ending February 17, domestic use of American cheese grew a mere 0.8 percent year over year,” the DFMA stated. “Including exports, total usage was in negative territory: 1.8 percent below prior-year levels. While demand contracted, supplies of American cheese increased 4.2 percent YoY.” “The market for other (than American) cheese varieties appears less sloppy,” the DFMA says. “Consumption grew by 2.4 percent during the threemonths-ending in February, while output increased by 1.4 percent.”

Spot Grade A nonfat dry milk closed April 13 at 84 1/2-cents per pound, up 3 1/2-cents on the week and 13 cents above a year ago, with only one carload sold.

FC Stone’s Dave Kurzawski gave a strong dose of reality regarding exports, writing that “Recent chatter was starting to circulate in regards to when US/ EU dairy imports may be allowed back in to Russia but it’s hard to conceive how the most recent atrocities handed down by the Russian supported Syrian government will not halt the most recent thawing of relations between them.”

He says “The retaliatory sanctions Russia has imposed on the US and EU dairy industry is not a direct issue for US exporters as our market share of Russia was very small but the impact of displaced EU imports has greatly affected our ability to source product into traditional US exporting areas.”

The EU successfully shifted supply to other importers, according to Kurzawski. “World demand isn’t a zero net sum game,” he said, “and there are only so many dollars to go around so Europe’s shift to other importing nations

the market “uncertain” but says Midwest cheese production is active. Some cheesemakers cancelled planned production downtime in order to keep up with the milk surplus. Readily available milk continues to ow into cheese vats.

Class III spot milk prices remain $1.50 to $5.00 under Class. Some processors are hesitant about using stored nonfat dry milk to fortify their cheese because milk is so abundant. Cheese orders vary from steady to strong. Even with some good sales reports, some contacts question whether demand will keep up with supply, as most reports point to long inventories of both block and barrel cheeses.

Western cheese output is increasing at a declining rate. Sales are lower and reports suggest that people are buying only what they need. Export sales are picking up as South Korea and Mexico have increased demand for U.S. cheese.

Contacts believe exports might increase if the exchange rate drops.

Cash butter dropped to the lowest price since December 9, 2016 on Monday but it saw a pre-Easter close at $2.0875 per pound, down a penny on the week and 1 3/4-cents above a year ago, with 28 cars exchanging hands on the week.

Butter demand is mixed, according to DMN. Some Central region butter makers report continued strength in sales. Others point to a drop following the spring holiday peak. Some contacts expect a tightening of cream in the weeks to come, with increased interest from Class II and Class III producers.

Butter inventories are adequate. The market tone is steady in the near term, says DMN. Western butter processors say inventories are heavy, but still manageable. Cream is plentiful and a few manufacturers are opting to sell extra cream as opposed to churning it all.

FC Stone’s Dave Kurzawski noted in his April 10 Early Morning Update that “dairymen across the country have been working diligently with their nutritionists to boost butterfat components, and that is starting to become noticeable in the amount of cream available.”

Unfortunately, butter demand may be slipping. Daily Dairy Report (DDR) analysts estimate February commercial disappearance at about 107 million pounds, down 17 percent from a year ago after adjusting for leap year.

New Zealand milk output may be impacted by Cyclone Cook. HighGround Dairy reported that the storm would “likely negatively affect the tail-end of the milking season as sodden paddocks will continue to be an issue for producers. Industry chatter included the potential for early cull rates, which may translate into a revision to Fonterra’s estimate for a 3 percent decline for the season.”

Cooperatives Working Together (CWT) accepted 15 requests for export assistance the week of April 10 from member cooperatives to sell 2.6 million pounds of cheese to customers in Asia, Central America, the Middle East and Oceania.

The product has been contracted for delivery through July and raised CWT’s 2017 exports to 26.1 million pounds of American-type cheeses and 1.4 million pounds of butter (82 percent milkfat) to 12 countries on four continents.

In politics; National Milk reports that “During a Senate Agriculture Committee conrmation hearing March 23, Agriculture Secretary-elect Sonny Perdue indicated that he supports improvements to the dairy safety net. He also said he would “advocate for policies that expand the availability of farm labor in dairy production.”

“The nomination of the former Georgia governor as the next Secretary of Agriculture was approved by the Senate Agriculture Committee on March 30. His conrmation awaits action by the full Senate, expected to take place sometime after Congress returns from its two-week Easter recess.

“Perdue, who grew up on a farm, told Agriculture Committee members that he understands the plight of dairy farmers, and promised to work with the dairy sector on improving the Margin Protection Program (MPP).” This, says NMPF, includes reviewing the Federation’s recent four-point plan to x the MPP. Perdue also “expressed an openness to examining ways to create additional risk management coverage for milk through USDA’s Risk Management Agency.”

“On the issue of immigration reform, Perdue said he would support an exemption to the H-2A program so that dairy farms could hire workers for year-round labor,” NMPF said. “The current seasonal H-2A visa program does not apply to dairy farms because of their perennial need for farm labor.”

In other legislative news, Californians face higher fuel prices. Western United Dairymen (WUD) reported in its April 7 member newsletter that “Led by Governor Brown and legislative leadership, SB 1 was amended and ushered through the process to impose the single largest gas tax increase we have seen.”

“The bill will generate $52 billion dollars over the next ten years to fund deferred maintenance on state highways, local streets and roads, and to improve trade corridors, transit and transportation facilities.

SB 1 passed, earning the bare minimum of aye votes to secure a two-thirds vote threshold needed to win approval.”

“Most impactful to our members,” says WUD, “is the bill’s tax on diesel fuel which starting on November 1, 2017, includes an increase in the diesel excise tax by 20 cents per gallon, an increase in the diesel sales tax by 4 percent per gallon, and an increase in the vehicle license fee between $25-$175 annually based on the value of the vehicle.” WUD says the bill will cost dairy operations with 1000 head of cows, $30,000 annually.

And, the California Department of Food and Agriculture held an April 4 meeting in Modesto to collect input from dairy producers on how the quota program should be administered in the event that a Federal Milk Marketing Order is adopted in the state. Complete details are posted at WUD’s website.

Domestic demand for nonfat dry milk (NDM) and skim milk (SMP) fell to a paltry 32.5 million pounds in February 2017, the lowest monthly tally since February 2002. February’s domestic disappearance of NDM/ SMP was less than one-third of January’s level, suggesting end users replenished stocks during the Àrst month of the year. Fortunately, strong export sales in February of 114.6 million pounds topped the prior month by 21%, were 30% higher than February 2016, and boosted NDM/SMP commercial disappearance in February 2017 to 147.1 million pounds. The latest Global Dairy Trade (GDT) results breathed life into dairy markets that appeared to be stalling with the potential for heading lower. GDT event #186 ended with the overall index rising 3.1% vs. the previous auction with a weighted average price of $3,139 per metric ton (MT), marking the third straight increase since the sharp declines toward the end of February.

Stronger performances from skim milk powder (SMP) and whole milk powder (WMP) drove the overall results higher as the combined volume accounted for 70-75% of the trade today. GDT butter continues to move higher, a trajectory that began last July. CME spot markets seemingly shrugged off the higher GDT results and maintained their course.

old free trade agreement between the two countries. While South Korea is not as large a trading partner for U.S. dairy products as Mexico, it is still a growing, vibrant market for U.S. dairy exports. From 2012 through 2015, the value of U.S. dairy product exports grew from $225 million to more than $305 million.

In 2016, U.S. dairy product exports to South Korea hit a headwind as a strong U.S. dollar and ample supplies from Europe contributed to a 12% drop in U.S. sales from 2015.

Cheese exports account for more than 50% of all U.S. dairy exports to South Korea. During the first quarter of 2017, U.S. cheese exports at were 7% above 2016’s level and milk powder exports were up 344% from 2016’s beleaguered volumes.

The European Union also has a freetrade agreement with South Korea.

Therefore, it is important to the U.S. dairy sector that any review and reform of the U.S.–South Korea free trade agreement does not place U.S. dairy exports at a competitive disadvantage vs. other global marketers.

The National Dairy Products Sales Report prices for the week ending April 15 were mostly higher.

Diversity aids in success

Honduran family raises beef, poultry alongside dairy

SAN BUENAVENTURA, Cortes, Honduras – Nestled amongst elds of banana trees and coffee bean plants in Honduras is a pocket of dairy farms that have settled within the mountainous terrain of the Central American country.

Amapa River R a n c h is one of those farms.

“Amapa R i v e r Ranch beOscar Fernandez gan with my grandfather, and now my father is in charge,” Oscar Fernandez said.

“When my father got his degree in agriculture, he worked in many things to increase production on the farm.”

The family farm, located near San Buenaventura in the western department of Cortes, rst began as a beef farm in the 1980s. By 2002, Ferndandez’s father incorporated dairy cattle into the business.

“All my life, my father

has worked hard, wishing the best for our family. He thought an investment of dairy cows would be a better income,” Fernandez said. “He began with a couple cows, milking by hand and practicing A.I.” Today, Fernandez is a part of his family’s farm – after graduating with an agricultural degree in 2010 – and helps his father milk 100 Brown Swiss and Holstein cows.

The herd is milked twice each day in a double-4 herringbone parlor, with the rst milking beginning at 4 a.m.

After the rst milking is complete, the herd returns to a sand-bedded freestall barn, where they are fed TMR. The ration consists of corn silage grown on the farm and distilled grains purchased from a brewery nearby.

Due to the tropical climate of Honduras, and receiving nearly 120 inches of rainfall annually, farming traditional crops is a rarity. Most elds are sown with red bean, palm, coffee, plantain, banana, pineapple, orange, sugar cane and lemon.

Once the rst batch of TMR is fed, Fernandez nishes morning chores.

“We have to clean the equipment, detect heats, feed calves and heifers, mix feed and maintain the equipment after the rst milking,” Fernandez said.

By 1 p.m., the lactating groups return to the milking parlor for the afternoon shift.

“After the second milking, the high production group goes to the barn for another batch of TMR and the low production group goes to pasture right away,” Fernandez said. “Later

that evening, we let the high production cows out to pasture.”

While on pasture, Fernandez ensures the paddocks are maintained well enough for each cow to have 1.73 acres of land. The high producing cows are moved to a new paddock every night, as the low producing cows clean up the paddock from the high producing cows the night before.

Following this strict routine, Fernandez’s herd aver-

ages 70 pounds per cow and produces more than 1.2 million pounds of milk each year.

There are roughly 30 other dairy farms surrounding Amapa River Ranch; however, in terms of milk production, none are as progressive.

Due to the on-farm advancements that allow Fernandez to produce more milk, Fernandez sells his milk to the Honduras-based processing plant Lacthosa, based in San Pedro Sula. Every other day, Fernandez drives an hour to deliver his product, where it is further processed into uid milk, cream and cheese for the export market.

“The milk price in our country depends on the quality of milk,” Fernandez said.

Currently, Fernandez and his family are receiving 45 Lempira per kilogram of milk solid or roughly $11 per hun-

dredweight.

While the dairy farm supports the Fernandez family’s way of life, the Hondurans are always looking for ways to improve and diversify their operation within the dairy herd and also elsewhere on the farm.

“We breed 60 percent of our dairy cows to beef bulls so that we might have more steers to sell and add to our income,” Fernandez said.

Fernandez follows a synchronization program, but also watches for natural heats. The top 40 percent of the herd is bred to sexed semen from Holstein and Brown Swiss sires; the remainder of the herd is bred to Brahman, Angus, Brangus and Simmental.

“We have another business in which my father and uncle are partners in broiler production,” Fernandez said.

Each year, the partnership raises 180,000 chickens for butcher.

As the beef and poultry operations contribute to Amapa River Ranch, Fernandez hopes to further develop the dairy sector.

Currently, Fernandez must go to San Pedro Sula for milking and farm equipment parts, or a technician will travel the distance for repairs. If the parts are not available, Fernandez will order from the United States and wait for the shipment.

“That’s the hardest part,” Fernandez said. “Before we buy equipment, we try and make sure we can get most of the parts in our country.”

This past year, the federal government put a greater emphasis on agricultural operations by giving assistance to agricultural producers for taxes and equipment purchases, and is now specically working with dairy producers to nd ways to increase milk production throughout the entire country.

“In our country, we still need more professional assistance on dairy farms so owners can make good decisions about what they are going to do in the

future,” Fernandez said. “Right now, we don’t have the knowledge to improve a good dairy farm from all aspects of it.”

Despite the obstacles, Fernandez envisions Amapa River Ranch growing in the country’s dairy industry. In time, he plans to see his farm expand in dairy cow numbers and also milk production, while still remaining diverse with beef and poultry.

“Eventually, we plan on keeping our milk and making cheese, and become a leader in milk production and dairy products in Honduras,” Fernandez said. “With our farm setup, I think that’s achievable.”

Derousseau Dairy celebrates 134 years milking cows

RICE LAKE, Wis. – When Doug Derousseau bought his family’s dairy farm in 1990, he knew it meant more than buildings and cattle; it was a family tradition, as well. As the fourth generation on the farmstead originally purchased in 1883, he knew he had big shoes to ll.

For the last 134 years, four generations have continued to milk cows on their dairy near Rice Lake, Wis. Today, Doug, his wife, Sandy, and his parents, Fred and Lucille, keep the family tradition alive milking 80 cows.

Fred, now 90-years-old, recalled the early beginnings of the farm that has become his pride and joy.

“My grandfather, Fermine, was living in Montreal. He and his brother decided to come to the United States to settle here.

My grandpa got into Wisconsin and decided to stay here and bought the original farmland from the railroad,” Fred said.

The family settled in a log cabin on the property. They began breaking ground and built the original barn in 1884, with just enough room for ve cows and some horses.

In 1912, a small house was built on the property. Now referred to as the grainery, the building served as the home of Fred’s parents, Medrick and Cordelia, for three years. The building still stands in its original form today.

“That building has become a landmark on the farm. It was just a small building until they built on a lean-to for a buggy and, later, a Model T,” Fred said.

Fred only ever left the farm two times in his life: once for a job in Milwaukee, Wis., for six months and again to serve in the U.S. Army in 1946. He

“My mother wrote a letter asking I be deferred to be home to work on the farm. I got off the train at the depot on Christmas morning, walked across the road and surprised my family at Christmas mass,” Fred said. “It wasn’t until I got back to the farm that I realized what they secretly wanted me home for: they wanted somebody to chop rewood.”

The early years of Derousseau Dairy were quintessential, Fred said. That was until a tornado rolled through the farmstead on June 8, 1952.

“I was supposed to take

I pulled up to a stop sign and the wind was blowing so bad, I thought the car was going to blow over,” Fred said. “I knew it was going to be bad, and when I got home, the barn was gone.”

The barn had a milk pump at the time, but due to the tornado, it was not going to work.

“That is the most cows I ever had to milk by hand,” Fred said. “We were milking 30 cows at the time.”

The family rebuilt the barn to the tiestall that still stands today. It was built to hold 40 cows with additional rooms for calf pens. Fred, who said he

always wanted to be a carpenter, spent many days pounding nails as the barn’s frame took form.

“We pounded 2,100 pounds of nails into that barn. I will never forget those rafters; I was sure my arm had gone to heck from driving in that many nails,” Fred said.

The barn still stands today, though it has undergone a series of changes over the years.

After buying the farm, Doug grew stepwise.

The building was built 105 years ago and withstood the 1952 tornado that destroyed the family’s original barn. in 1990, I added on so the barn held 50 cows with pens for heifers and calf hutches. We also put in a pipeline that year. In 2004, I tore out the remaining pens so there was room for 70 cows,” Doug said. “Most recently, in 2010, I built a heifer barn with room for dry cows, so we now have 80 cows total.”

Doug said the heifer shed has resulted in vast improvements in his youngstock. It is an investment he said he would have liked to have made sooner.

“Everyone should have a good heifer shed. It’s not like you can just go out one day and decide you’re going to do it, but after seeing how much better the heifers perform, I denitely think it was a sound decision,” Doug said.

While Fred retired from milking cows when he sold the farm to Doug, he has spent every summer in the elds

since then. He said being involved on the farm has always been a tremendous source of pride.

“I have always taken a great deal of pride in my farm. Not just the cows, but the crops, buildings and family we grew here, too,” Fred said.

Doug agreed with his father and said he couldn’t imagine it any other way.

“We take great pride in what we do. At this size, we are a bit of a dying breed, but this is what we’ve always wanted to do,” Doug said.

While the buildings on the property have changed across ve generations, the tradition remains the same. Just as the original grainery stands tall beside the machine shed, so does the passion the Derousseau family has for their farm.

University of Minnesota team places rst at national dairy challenge competition

When it comes to evaluating dairy farm management, students from the University of Minnesota are the best in the country.

The university’s team – consisting of Johanna Knorr, Andrew Krause, Fredrick Manseld, Lance Sexton and coach Maria Endres – earned one of the four rst-place spots during the 2017 North American Intercollegiate Dairy Challenge on March 30 in Visalia, Calif. This year’s competition – the 17th annual – had 230 students from 37 colleges participate.

“We’ve spent a lot of time the past few months preparing,” said Krause, a senior and animal science major from Buffalo, Minn. “It was a big moment for us and for our coach, Marcia.”

The team from the University of Wisconsin-Madison – Henry Holdorf, Courtney McCourt, Jessica Pralle, Maxwell Shenkenberg and coach Theodore Halbach – received one of the four second-place spots.

During the competition, a four-person team of students from each university traveled to one of four designated farms to evaluate its management and provide recommendations for areas of growth or opportunity.

“Our coach, Marcia, always told us, ‘Cows are talking, are you listening?’ I always remember that.”

Krause said his team evaluated the nance records, DHIA sheets and Dairy Comp 305 records from their assigned 2,000-cow dairy. After that, they examined things such as body condition, feed and air movement.

While all team members have diverse knowledge in dairy, each of them brought a different skillset, which Krause said helped them be successful. Krause specialized in reproduction and transition, Knorr in nances and records, Sexton in milk quality and milking procedure, and Manseld in nutrition.

found the dairy’s production dropped in the summer and so did its reproduction.

There were also high instances of metritis. Part of this was due to heat abatement, Krause said.

After evaluating the dairy, the team created a 20-minute presentation about their ndings for a panel of judges, who then had 10 minutes to ask questions.

“They were stumped. They really didn’t have anything to ask us,” Krause said.

Knorr felt content with the work of her team.

“No matter how we placed, I felt good about our presentation. Four years of studying had gone into this one moment,” said Knorr, who is from Pelican Rapids, Minn., and a senior double majoring in animal science, and agricultural and food business management.

The judges also thought they had done well, giving the university’s team the top spot for their dairy.

“It’s excitement, but also a sigh of relief after all our work from the last years,” Knorr said. “And hopefully [our presentation] gave insight for the producer, too.”

All four students on the team have taken the dairy systems management class taught by Endres. Similar to the competition, this class helps students evaluate dairy farms and give feedback on what to improve based on their ndings.

Both Krause and Knorr said this class and the dairy challenge competition will help them in their future dairy careers.

“It’s extremely practical to today’s industry,” Krause said about the competition. “A lot of people say it has a lot of relevance for many potential employers.”

Knorr agreed, adding that the competition is a mix of critical thinking, practicality and science.

“Our coach, Marcia, always told us, ‘Cows are talking, are you listening?’ I always remember that,” she said.

The students said they are appreciative of Endres.

“She puts a lot of time and energy into her classes and our team,” Knorr said.

They are also thankful for the farms throughout the state that opened their doors for the class and team to examine as practice.

“Without getting onto the farms we wouldn’t’ have been as successful as we were,” Knorr said.

Multiple updates contribute to Ziegler Dairy’s healthy calves

MIDDLETON, Wis. – Ziegler Dairy has been producing milk across ve generations for 155 years in Middleton, Wis. As the fourth generation on the farm, Greg Ziegler has witnessed the farm undergo many signicant changes as it has grown to 1,350 cows and 1,500 heifers. Most recently, the addition of automatic calf feeders and two new heifer barns have gotten calves off to the proper start.

Greg and his son, Matt, presented their dairy to visitors during the Dairy Calf and Heifer Association conference April 11 in Madison, Wis. Matt Ziegler oversees calf management on the dairy. After installing three automatic calf feeders in 2011, Matt said he has seen an increase in calf intake and growth while simultaneously reducing labor in the barn.

“Each feeder services up to 60 calves and the results have been really great for us,” Matt said.

pens with adjustable side panels. The barn has temperature controlled power ventilation to keep the barn above 40 degrees at all time. He said the controlled ventilation was a solution to a problem his family had always dealt with.

“Air has always been my biggest focus,” Matt said. “It’s always comfortable in here, and it shows in how the calves perform.”

The Ziegler Dairy management team keeps close watch over close-up cows. Once calves are born, their navels are dipped in a seven percent iodine solution before they are dehorned, tagged, fed colostrum and dried off. They are

immediately moved to individual calf pens within the barn where they are fed milk replacer from a bottle twice a day.

On the fth day of life, calves are moved into group housing where they are introduced to starter and trained to use automatic calf feeders. They are kept in the training pen for a week to 10 days before they are moved into the larger group pens to continue their starter and milk replacer diet.

As a result of the automatic calf feeder, the Zieglers are now seeing heifers averaging 485 pounds at 6 months of age, standing at 46.5 inches tall. Additionally, the Zieglers have a current death rate of 0.8 percent in the calves.

Matt said he is extremely pleased with the progress he has seen in the barn over the course of six years.

“It is ridiculous the difference the automatic calf feeders have made,” Matt said.

Calves move from one large group pen to the next within the rst two months of life. At day 20, calves’ diets transition from full milk replacer to 70 percent pasteurized milk and 30 percent milk replacer until they are weaned at 2.5 months of age.

Once calves are weaned, they are moved into one of the two new heifer barns at 3.5 months of age. The heifers rotate through both barns before they are moved to a heifer grower at 11 months of age. While the calf barn has signicant costs associated with the robot and ventilation system, Greg said the heifer sheds are virtually costless.

“A controlled environment is expensive to run, but virtually no money is spent down here,” Greg said.

The barns are naturally ventilated, sawdust bedded freestalls with a headlock feed lane. Heifers are separated into groups of 80 and rotate through the four pens with age. Manure is pumped into methane digesters off the farm, which eliminates costs for manure holding and spreading, as well.

The Zieglers’ relationship with their heifer raiser is also unique. Bruce Hellenbrand has been exclusively raising the heifers from Ziegler Dairy for the past 15 years. The two families have bartered many of their services in exchange for one another. Greg said it has served both families well.

“They take care of our animals as if they were their own,” Greg said. “We share crops and help one another with equipment and employees year-round.

We work very well together.”

Hellenbrand, who houses the Zieglers’ 675 breeding age heifers on his farm, agreed with Greg and said while Greg has the ultimate decision with the heifers, he makes recommendations as necessary.

“I help as much as I can.

I make culling recommendations based on breeding and he checks in regularly on the heifers’ progress,” Hellenbrand said.

run a full-service heat detection and genetic service on the farm every day. As a heifer raiser, his goal is to maximize heat detection without the use of timed A.I. Currently, Hellenbrand achieves this by breeding 99 percent of the herd without the use of timed A.I. All animals are bred with sexed semen on the rst two services, with conventional semen used in the event of a third service.

Currently, Greg’s heifers have a conception rate of 53 percent

on rst service and 93 percent after third service.

While this results in a surplus of heifers, Hellenbrand said it gives him and Greg a lot of options.

“It gives more options to the producer on whether to cull or sell a heifer from the herd,” Hellenbrand said. “There are no strict guidelines to culling, which results in an excellent milking herd.”

We got our wheat planted April 7-8. The fields were in perfect condition. Otherwise, we’ve been hauling manure and doing a little catch-up on fall tillage. I’ve also been able to do a little bit of digging. There are some pretty big spots of hay that don’t look good.

Where it was super wet last fall it drowned out.

We are waiting for it to dry, and then we want to plant alfalfa and do the corn. Nobody in the area has planted corn.

We had 1.8 inches of rain last night (April 17) and this morning it was the first good rain we got. It was one of those million- RAINFALL dollar rains. It woke the TOTALS alfalfa and pastures up.

Last 2 Saturday (April 15) we Weeks planted our triticale and peas. Next, we plan to haul more manure, and then plant oats and peas.

The alfalfa is short but it looks nice; I don’t think we have any winterkill.

The new seeding alfalfa looks good. We have a four-year field that has 25 percent winterkill. I will probably take one cutting, plow it and then plant corn silage. The hay that survived is 3 inches tall. This year we are planting low lignin alfalfa. The cell walls on it are not as hard and you can harvest at 30 days and get the same feed value as 26 days; it gives us more time to make hay. The field conditions are really good.

The alfalfa is something we are worried about with the winter we had, otherwise everything is greening up nice and there doesn’t seem to be any winterkill.

We have been spreading fertilizer between the rains and now we are getting our ground ready to get some RAINFALL alfalfa in. Hopefully by next TOTALS week we can start thinking Last 2 about planting corn. The hay Weeks seems to be coming up good in the area and our wheat is looking good, so that survived the winter. The rain has been steady, keeping us out of the field. But, we are going now, and hopefully we can get some drier weather so we can really get at it. Since April 1 We’re hoping to get some 3” warmer soil temperatures so the corn can get planted and take off.

250 cows, 775 acres Nobody has started anything here. It has been so wet no one can haul manure with box spreaders. We are at a complete standstill. The RAINFALL way the forecast looks, TOTALS I wouldn’t expect us to Last 2 be doing anything in the Weeks next week unless the rain stops. There were a few nice days where the ground was firming up, but the rain kept coming 1.75” right as that started to happen. We have been getting equipment ready and watching it rain. Since April 1 1.75” Lawns, grass and seeding is looking good right now, though.

If anyone is out in the field, they are spraying fertilizer but no manure yet. We got the equipment ready over the winter, so right now we are getting the pastures RAINFALL ready for the cattle, fixing fence, getting brush off the TOTALS Last 2 fence lines and clearing up walkways. We got hit the Weeks hardest with rain compared to the rest of the area. The fields are wet; I’ve only seen one guy in the area out in the fields so far.

The alfalfa is coming back good, standing anywhere from 2 to 5 inches tall already. We are ready to get Since April 1 3.2” in the fields, just waiting for when we can get out there with the rain.

After milking cows for 45 years, Kevin Roppe of Strathcona in Marshall County in northwest Minnesota has choose to sell his 45-cow dairy herd at the Perham Stockyards.

These 45 cows have really good feet and legs and are outside daily. The Roppe herd has a 65-lb. tank average, 3.2 protein and 3.9 butterfat. Around one half the herd has freshened in the last three months. This is a great herd for milk and type. Some of the cows are registered. The Roppe’s have been using AI for 35 years and some of the recently used sires include Planet, Gavor, Billing and there are also some grand dams from Blackstar. This is an all Holstein herd and some of the animals are registered.

About 2/3 of the herd are first, second or third lactation cows. This is a closed herd and the cows are milked twice a day. No TMR has been used on the herd. This farm has been in the Roppe family for over 110 years. Kevin plans to beef and grain farm.

The Beyer brothers, Chip and Neil, are the third generation on this farm and have been dairying near Red Lake Falls since 1976. These brothers are selling 95 cows including springers. Around 25 cows have freshened since Feb. 1 and many of the cows are producing over 100 pounds of milk daily. This is an excellent registered dairy herd that was last classified July 16. They have a 23,000-herd average, 3.8 butterfat and 3.1 protein.

The Beyer brothers have been AI for many years and some of the recent sires they’ve used include Shottle, Atwood, Dorman, Pety and King Boy. They breed for type and production. There are 26 first lactation, 21 second lactation and the rest are three lactations or older cows to be sold. The cows are milked in a parlor, are on loose housing on a bedded pack. The cows are milking twice a day, are fed TMR and it’s a closed herd. The brothers plan to continue their beef and crop side of their operation.

Spaghetti Bake 16 ounces spaghetti 2 cups light sour cream 2 Tbsp. butter 24-ounce jar spaghetti sauce

1-2 pounds ground beef, cooked, drained 8 ounces shredded mozzarella cheese 1/2 cup shredded Parmesan cheese

Cook spaghetti according to package directions, drain. Combine the spaghetti and butter. Spread in bottom of 9- by 13-inch pan. Spread sour cream over spaghetti. Mix cooked hamburger and spaghetti sauce and spread over sour cream. Top with mozzarella and Parmesan cheeses. Bake at 350 degrees for 30 minutes.

Quick Lasagna 1 pound ground beef, cooked, drained 16 ounces shredded mozzarella cheese 1/2 cup grated Parmesan cheese

15 ounces Ricotta or cottage cheese 32-ounce jar spaghetti sauce 12-ounce box oven-ready lasagna noodles 2/3 cup water

In a medium bowl, combine cooked hamburger and spaghetti sauce.

In another medium bowl, combine Ricotta or cottage cheese, half of the mozzarella cheese, and 1/4 cup of the Parmesan cheese. In a 9- by 13-inch pan, spread 1/3 of the meat mixture. Place 1/3 of the lasagna noodles over the sauce. Spread 1/2 of the cheese mixture over the noodles. Repeat layering once; top with remaining lasagna noodles then sauce. Sprinkle with remaining mozzarella and Parmesan cheese. Cover tightly with foil. Bake for 60 minutes at 425 degrees. Let stand for 10 minutes with foil on.

Boil potatoes. Soften cream cheese, butter and sour cream. Drain potatoes and add a little milk. Put in butter, cream cheese and sour cream. Whip with a mixer until all the lumps are out. Put in a three-quart casserole dish and cover. Bake at 325 degrees for 1 1/2 hours. Crust may get a little golden on the edges. This dish may be frozen after assembly. Take out of freezer and bake at 350 degrees until done.

Use washable terry towels instead of paper towels for teat and udder cleaning and save money!

For Crust: Preheat oven to 350 degrees. Coat a 9- by 13-inch metal baking pan with nonstick spray. Mix graham cracker crumbs, sugar and cinnamon in medium bowl. Add melted butter; stir until coated. Transfer crumb mixture to pan. Press evenly on bottom of pan. Bake until crust is light golden, about 10 minutes. Cool completely on rack.

For filling: Blend cream cheese and sugar in processor until smooth and creamy, about 1 minute, occasionally stop to scrape down sides of bowl.

Add one egg at a time processing 3-5 seconds between to blend. Add the caramelized sweetened condensed milk and vanilla; process until blended, about 10 seconds. Spread batter evenly over cooled crust. Bake until just set in the center and edges are puffed and slightly cracked, about 38 minutes.

Transfer to rack; cool completely.

For glaze: Heat the caramelized sweetened condensed milk and 3 Tbsp. cream in microwave-safe bowl in 10-second intervals until melted. Stir to blend, adding more cream by teaspoons if too thick to pour. Pour glaze over cooled cheesecake; spread evenly. Refrigerate until chilled, about 1 hour (glaze will not be firm). Can be made two days ahead. Chill, cover and keep refrigerated.

To make the caramelized sweetened condensed milk: Take the label off a can of sweetened condensed milk. Put can in a small crockpot covered with water. Heat on the low setting overnight or for at least 7 hours. Let cool before opening can. One 14-ounce can is enough for this recipe. Caramelized milk can also be stored refrigerated for a couple of weeks. Also makes a good ice cream topping or can be stirred into coffee or cocoa.
