Staying true to dairy roots

Cheese shop honors farming background

WEST SALEM, Wis. — Nick Miller grew up on his family’s 40-cow dairy farm and enjoyed frequent trips to a cheese store, where he could get a scoop of ice cream. When he graduated college with a business degree, he was looking for a job close to home so he could continue to help his parents on their dairy farm.

Then, his dad heard that the owners of the beloved cheese shop, Duane and Mary Lou Pfaff, wanted to sell their business and retire. Not long

after the revelation, Miller became the proud owner of Le Coulee Cheese Castle in West Salem.

“I thought it was awesome, because I had a background in the dairy industry growing up on a farm and what a cool business to continue in,” Miller said.

The shop operated under the original owners until the day Miller bought it. The shop closed for four hours while Miller and the Pfaffs signed papers at the bank. That afternoon, Miller returned to the shop and resumed operations. Duane stayed on for a few weeks to help Miller make the transition. Miller has been on his own for the 21 years since.

“It was really nice that it was an established business already that had a following of customers,” Miller said. “It really helped that people knew

the products here were high quality.”

The Pfaffs, cheesemakers by trade, started the business in Mindoro in 1980. Their creamery is now a Prairie Farms Dairy Inc. plant. The Pfaffs opened a retail space in the upper room of the creamery, which is the origins of the castle part of the business name. When they wanted more exposure for the business, they moved the retail portion to West Salem in 1981.

The Pfaffs continued making cheese in Mindoro while their daughter ran the retail space in West Salem for 10 years. When Duane retired from cheese making in the early 1990s, he ran the retail busi-

ness for another 10 years until 2003 when Miller purchased the business.

“He told me the things that I should look out for in nding quality cheese,” Miller said. “He knew the places that were the best manufacturers in making cheeses. It’s true because customers will tell you if they like it or not, and nobody’s ever complained about most of the things he told me back then.”

Miller carries around 60 varieties of cheese at any given time. All products are sourced as blocks 5-40 pounds in weight from Wisconsin companies and cut and packaged by Miller at Le Coulee Cheese Castle. Some of the suppliers include

Miller’s shop is a short drive from downtown La Crosse, and many of his customers are tourists who come to visit the Driftless Area. It provides them with an opportunity to discover the unique varieties of cheese that are not available in their home states.

“There’s hardly any bad cheese in Wisconsin,” Miller said. “We take it for granted.

Le Coulee Cheese Castle is a cheese and ice cream shop owned and operated by Nick Miller in downtown West Salem, Wisconsin. The shop offers eight varie�es of ice cream and 60 varie�es of Wisconsin-made cheese.

Cheese curds are delivered fresh three times a week and are always the top selling item, Miller said.

In addition to cheese, Miller also carries eight varieties of Kemp’s ice cream sold by the scoop. Miller goes through about 13 3-gallon pails of ice cream per week. A lot of kids who walk or ride their bikes to school stop in for a treat on their way home in the afternoon. In the summer, Miller said it is common for kids to hang out on the benches outside the shop or stop in for a break from playing at the nearby playground.

“So many people, in the summer especially when it’s busy and kids are on their bikes or hanging out on the bench-

es outside, will come through and ask where the parents are because there’s kids all over,” Miller said. “This would never happen wherever they’re from. It’s the benet of a small town, I guess.”

Another busy time of the year is June Dairy Days, which is a festival that West Salem hosts every year in honor of June Dairy Month. Miller often runs specials or has sampled items to promote the event. At Christmas, he is busy shipping out cheese gift boxes all over the country.

In addition to the food products served at the shop, Miller stocks a variety of gifts and cheese utensils. There is a common farm and cow theme among the items, giving a nod to the source of the dairy products and his background.

“Growing up on a dairy farm, I have always had a spot in my heart for the dairy industry,” Miller said. “Without farmers, especially, we wouldn’t have a lot of things that we rely on every day in the food supply, especially in a cheese shop like here. Denitely, you need the farmers, and you need the cows.”

More barns collapse under weight of snow

When another blizzard hit Minnesota in early March 2019, it left snow weighing on the roofs of buildings. At Blumenfeld Holsteins, a 450-cow dairy near Hawley, Minnesota, 80 feet of their freestall barn roof collapsed in the early hours March 10. There were 17 cows lost in the collapse, but no one was hurt. The farm had to temporarily relocate nearly 100 cows. Another family had a cave in due to the snowfall as well. Roy and Rhonda Koehler, of New York Mills, Minnesota, had the majority of one side of their freestall collapse at their 400cow dairy. They lost six cows but were able to keep their cattle at home.

Family-focused farming

Luke Sauder and his wife, Rosana, of Sauk Centre, Minnesota, wanted to raise their family on a dairy farm. When Sauder was 14 years old, he started working on his uncle’s dairy farm. After moving to Minnesota, he worked for an organic farmer. In 2015, he and Rosana were married. The couple bought a herd of Jerseys in April 2018 and started milking in a rented tiestall barn that spring. Initially, the couple had to drive 10 miles back and forth between the farm and their home. Sauder said he would spend about an hour driving back and forth every day and that his day was busy enough without having to make the drive. In January 2019, the couple and their 2-year-old daughter moved to the farm site.

Fond du Lac County couple wins Distinguished Young Holstein Breeder award

Kurt and Sarah Loehr, of Eden, Wisconsin, were named the Wisconsin Holstein Association Distinguished Young Breeder. The couple received the award at the annual Wisconsin Holstein Association’s convention Feb. 22-24, 2019. At the time, they milked 72 cows and had a herd average of more than 26,000 pounds of milk, with nearly 1,000 pounds of fat and a somatic cell count of less than 60,000. The Loehrs had bred or developed over 70 Excellent cows, had four state show winners, ve national show winners and numerous All-American and junior AllAmerican nominations for both Holsteins and Red & White Holsteins. This award is given to successful registered breeders between the ages of 21-40.

Legacy Farms find help from area prison

Near Shell Lake, Wisconsin, Legacy Farms could be found working with the Wisconsin Department of Corrections Gordon Correctional Facility to nd hired help. Dan Coates, the operations manager of Legacy Farms, worked with the correctional center to coordinate times when prisoners would help at the farm. Coates said it was a benet for both sides. The farm got the help it needed, and the workers got a chance to start over. Coates said it was a way for the workers to have a form of income, as a portion of their

A new palace for the calves

Dean and Lois Klein and their son, Eric, had a 390-cow dairy farm near Lake City, Minnesota. At the time, the family had moved into a calf barn with 80 individual stalls in January 2019. The barn also included four group pens for newly weaned calves. The barn was built with a 1.5% slope. Dean said this saved on the cost of excavation. The individual pens are separated into three rows and two 10-foot walkways. At the same time the barn was built, the Kleins also purchased a portable pasteurizer.

Making room for a son-in-law

Gregg Stangl, of Pierz, Minnesota, sold his milking herd to Justin Froelich, who at the time was his soon to be sonin-law, in October 2013. Froelich was dating Stangl’s daughter, Tracie, when he was looking for work and expressed interest in dairy farming full time. Gregg hired him on as an employee, and over time, Froelich gained ownership of animals. By the time Froelich had bought the farm, he owned 30 heifers. Froelich was renting the milking facility from Stangl, and Stangl stayed working on the farm as

Froelich’s employee. Stangl said Froelich would ask him questions and he would offer suggestions, but he said he wanted Froelich to make the decisions.

Nelsons share a story of success

In August 2003, Eric Nelson I and Eric Nelson II, of Caledonia, Minnesota, moved their herd of 113 cows into their new freestall barn paired with a double-12 parallel parlor. Originally, the father and son duo were milking in an 80-cow tiestall barn. It was decided to build the new facility when Nelson II moved home to work on the farm three years prior to the new system being built. The barns were built in two days with precast cement walls weighing around 11,000 pounds. The duo held an open house April 8, 2004, to showcase the hard work of everyone involved in the building process.

Modifying buildings key to Austingʼs success

Dale Austing, of Freeport, Minnesota, converted his heifer shed into a freestall barn in 1996 and added on to it in 1997, creating a total of 82 stalls. Following the construction of the freestall barn, in 2001, the tiestall barn was converted into a double-8 swing parlor. Austing said the construction went well. In only nine days, they were milking with the new system. With the conversion, Austing had to send his heifers to a custom raiser; however, he had the goal of being able to create room or build in order to bring the heifers home.

The Iowa State University Extension and Outreach Dairy Team monthly webinar series continues from noon to 1 p.m. April 2. The program will help Holstein breeders understand the muscle weakness genetic defect in Holstein calves.

Dr. Chad Dechow, associate professor of dairy cattle genetics at Penn State, will outline the newly identied genetic defect in Holstein calves: Early Onset Muscle Weakness Syndrome (MW). MW affects Holstein calves’ ability to stand. Dechow will discuss the emergence of genetic defects, the discovery of the MW mutation, clinical signs of MW and prognosis.

The Iowa State Univeristy Dairy Science Club will host the Iowa Youth Dairy Coalition April 12-13 in Decorah, Iowa. This overnight event is an opportunity to give students (ages 10-18) with an interest in dairy to learn more about the dairy industry. The event will feature a tour of two dairy farms in northeast Iowa. Participants will engage in a dairy quiz bowl competition and interactive games, activities and workshops. The participants will not only learn more about the dairy industry but also meet new friends and develop leadership and communication skills.

A solution in the sustainability discussion

PDP rolls out new initiative

JUNEAU, Wis. — With increasing demand for transparency from consumers and the trend toward climate neutrality growing, Professional Dairy Producers is helping farmers drive the discussion with a new sustainability measuring program called Your Farm –Your Footprint.

with a report that itemizes the impact of each farming practice.

For example, Pagel found that by having a manure digester, planting cover crops and utilizing no-till farming, his farm has 3,533 fewer tons of carbon emissions, which is equivalent to removing 686 passenger cars from the road. The farm also sequestered 963 tons of carbon, which is equivalent to 48 large dump trucks.

“It’s very cool what you can put into layman’s terms, and you can show people how this is affecting things you do on your site,” Pagel said. “It was cool to learn about other things we can do to make our score even better.”

“I wholeheartedly believe that there is no one more sustainable on this planet in the work that we do in feeding the world than fellow dairy farmers,” Shelly Mayer said. “This initiative is a leap forward in supporting us and putting information in our hands that allows us not just to tell our story but to hone and continue to improve what we do every single day and that is to produce the very best food for the world in the most sustainable way.”

The reports come with a custom road map for how to improve the farm’s sustainability score. When the report is delivered, it includes two hours of farm-based support from SEC representatives who explain the data and provide suggestions for going forward.

Producers also have the option to participate in a peer group. The farm score and all data remain condential unless producers opt in to a peer group. In the peer group, each farm’s sustainability score is shared with other members as well as an overall group score.

Mayer is the executive director of PDP and announced the initiative Feb. 29 in a webinar. Joining Mayer were JJ Pagel from Kewaunee and Janet Clark from Rosendale, both participants in a pilot program that tested the initiative in 2023.

The initiative allows farmers to know and understand the environmental impact of their farms by measuring their carbon and methane emissions. This gives farmers a baseline and guides them toward improving their sustainability score.

The program has ve elements. It provides a sustainability score, a customized roadmap to operational improvements, farm-based technical support, peer group sharing and cost-share grants.

To obtain a score, producers sign up for the program through the PDP website. Once engaged, a third-party data collector, Sustainable Environmental Consultants, will call the producer and collect data regarding the farm’s energy use, propane use, electricity use, herd data, feed rations and nutrient management plans.

Clark said this was easy to do.

“You supply your data either electronically or over the phone,” Clark said. “The information or practices we are currently doing was at our ngertips. All that information are things that we use on a daily or monthly basis on our farm.”

The data is kept condential. Once it is submitted, producers will get their score within 45 working days. The score comes

Clark said the collaborative discussion in the peer group helped her determine which areas of improvement should be prioritized.

“The interesting part of the peer group was learning from farms that farm differently than us,” Clark said. “I was really excited to see how some of the farms had a more measurable impact on their overall sustainability score. When my family and I are looking at plans for the future of our farm, we’re going to make sure that some of those practices we take into consideration as we move forward through expansion or the current process of our dairy farm.”

Mayer said the program is designed to be workable for farms of all sizes.

“This initiative program is completely size neutral,” Mayer said. “We recognize the strength of the U.S. dairy industry is our diversity. So, it needs to be able to work for dairies of all sizes.”

The cost for dairy farmers to engage in this pilot program is about $1 per acre with a cap of $500. This investment is offset by grants of $4,750 from the Dairy’s Foundation, which covers the cost of implementing, collecting and measuring the data.

“Now the next step is for dairy farmers, all of them out there, wherever they come from in the U.S.,” Mayer said. “Get involved, get engaged. We are empowering you to lead the discussion on your farm’s sustainability.”

Tell us about your chapter. We are a seventh grade through post-secondary FFA chapter with a strong focus on classroom instruction, community service and leadership opportunities. Students are rst exposed to agriculture education in the seventh grade, when each student goes through a class rotation that includes one quarter of a class called Ag 7. We also have seven agriculture course offerings for high school students. Outside of the classroom, we attend leadership conferences, compete in contests, volunteer in our community and participate in the Clark County Fair.

How does your chapter volunteer in the community throughout the year? We are active in our community with a variety of events. Each year, we put on an educational children’s area at the Neillsville Dairy Breakfast. In May, our FFA puts on the Food for America eld trip for

Neillsville fourth graders. The members serve as tour guides on an afternoon eld trip to Byrne Dairy Farm, who has hosted the event for almost 15 years. Each December, we spend a Saturday bringing Christmas gifts to local farmers. This school year, we have been making monthly visits to a retirement home to put on a different activity each month. This has been a highlight, not only for the retirement home residents. Some of our FFA members can’t wait to sign up because they enjoy it just as much.

What fundraisers does your chapter do throughout the year? Our chapter runs concessions for all home football games so we are pretty busy in the fall. We also host a fruit sale in which the fruit is delivered in early December. This is always successful as it is right before Christmas and many community members purchase fruit to give as gifts. New this year, we will be trying our hand at a plant sale in our school greenhouse. The horticulture class has started a majority of the plants from seed, and we recently planted the plugs for our hanging baskets.

What are the biggest events of the year? The community service events and Career Development Events and Leadership Development Events are our most attended events. Neillsville is fortunate to have students who love to give back. Whether it be trick-or-treating for canned goods, doing roadside clean up, monthly visits to the retirement home or involving younger kids in activities we have in the school, members try to give back and reach out. The speaking contest LDE and judging contest CDE involvement has skyrocketed this year. Members are truly putting in so much time and effort to their events, gaining condence in themselves and their team, and representing our chapter well at events.

What is unique about your chapter? Since the 1970s, the Neillsville agriculture teachers and FFA advisers have been Neillsville High School graduates. Herman Seebandt and Terry Sischo (both graduates of Neillsville) were hired in the 1970s as instructors and FFA advisers. They taught Amy Gerhardt, who came back to be the instructor and FFA adviser in 2004. Gerhardt taught Carla Byrne, who is the current agriculture instructor and FFA adviser. It is neat to see teachers having their own students come back to the school they graduated from to take their positions and continue to make a positive difference in the lives of students.

When was your chapter founded, and how has it evolved? The Neillsville FFA Chapter was founded in 1930 with 31 members, all male. In that time, there has only been 10 agriculture teachers in Neillsville. Today, we sit at about 70 members, both male and female, and the department is managed by one instructor.

Tell us about your farm and family. I live and work on my family’s fourth-generation dairy farm. We milk 200 Holstein cows with four

Lely robotic milking units and farm about 1,300 acres. My father and my two older siblings work full time on the farm. My mom is a bookkeeper, and my younger sister and I are both in school yet but help on the farm too. We have an on-farm store where we sell homegrown beef, pork, cheese, eggs, spices and maple syrup.

Why did you join FFA? I wanted to be in a club with people who enjoyed agriculture as much as I do, and I heard it was a lot of fun. My parents and agricultural teacher encouraged me to join.

What is your role in the chapter? I am a chapter member.

What FFA contests do you compete in? I competed in the FFA Creed contest and took rst place at districts. I am also a member of the dairy judging team.

What do you look forward to most in the upcoming FFA year? I look forward to participating in more activities and being more involved in speaking and judging contests.

How has FFA shaped you as a person? A big thing that helped shape me was participating in the FFA Creed contest. I grew in my speaking skills and self-condence. Joining FFA gave me the nudge I needed to expand my involvement in agriculture.

What are your duties on the farm? When I get home from school, I work in the barn cleaning stalls and help wherever needed. I also have horses and goats to take care of.

What are your future plans? I’m in my freshman year, so I have a bit of time to gure things out. Right now, I’m leaning toward a dairy nutritionist or large animal veterinarian technician.

What is your favorite game to play on the farm? I like bedding animals and working in the shop. In spring, I like plowing with my tractor.

Are you involved in activities? Yes, I’m involved in 4-H and FFA, and I also play football. I can’t pick a favorite because they are all my favorite for different reasons.

When do you do chores? I feed calves at 5 p.m. and sometimes in the mornings.

What is your favorite and least favorite chore? My favorite chore is to watch the robot because it is fun to see it milk cows. My other favorite chore is petting Luella. I do not have a least favorite chore.

What is your favorite meal that your mom or dad makes? Croissant egg sandwiches.

What is your favorite thing to do off the farm with your family? Swimming at Nana’s with my cousins.

Drs. J.P. Martins and Paul Fricke of the University of Wisconsin traveled across Wisconsin for to facilitate the university’s Reproduction Roadshow. They came to Edgar Feb. 21 to discuss dairy cattle reproduction with dairy producers.

“In the 1950s, cows had approximately the same fertility as heifers or beef cattle: about 60% conception rates when inseminated after estrus,” Martins said. “Over the years, things have been going bad. In 1999, that was about 42% on lactating dairy cows. In 2009, we did a study at Michigan State and found that cows inseminated after estrus had only a 31% conception rate.”

“The circulating concentration of those hormones will decrease in the blood,” Martins said.

That lower concentration of estradiol affects heat duration, Martins said. Higher-producing cows will be harder to nd in heat because of a shorter estrus period. That follows through with lower pregnancy rates per A.I. service than heifers, higher rates of pregnancy loss and an increased rate of twinning.

“Cows that produce between 50-60 pounds of milk per day would have almost 15 hours of heat duration,” Martins said. “As production increases, heat duration decreases. Cows that produce over 100 pounds of milk per day only have about three hours of heat duration. High-producing cows are really hard to detect heat with visual detection. You need to use tail chalk or activity monitors to nd them in heat.”

As technologies, management and genetics improve, Martins said the industry will continue to have higher-producing cows, but that will come with the drawback of increased reproductive struggles.

Martins also talked about average annual milk yield increases among U.S. dairy cows during the same time frame.

“Cows were producing an average of 4,800 pounds of milk each year in 1945,” Martins said. “It increased about ve times by 2015 to about 22,500 pounds per cow.”

Martins said that Dr. Milo Wiltbank, also of the UW, developed hypotheses to explain why increased production was having such an impact on the fertility of lactating dairy cows.

“He compared a cow that produced 110 pounds of milk per day versus a non-lactating dairy cow,” Martins said. “He saw, of course, that a cow that produces more milk has a higher energy requirement, so she eats way more compared to a cow not producing milk. Cows that eat more and produce more milk require a lot more metabolization through the liver.”

Wiltbank saw that the cows that produced more milk had over 525 gallons of blood pass through their liver each hour. Non-lactating cows only had about 235 gallons going through the liver.

Martins said in double ovsynch, the idea is to create a better response to the second GnRH, which will create an accessory corpus luteum at ovulation.

“Now you have two CLs producing more progesterone,” Martins said. “You need high progesterone before the prostaglandin and low progesterone at the time of A.I. We need it to drop quickly. That is why we added that second prostaglandin. The time of insemination is a perfect environment for that cow to be really fertile.”

Martins said that research has shown that nearly 50% of animals inseminated become pregnant using double ovsynch.

“Now you don’t need to worry about 50% of the animals you treated with double ovsynch, because you got them pregnant,” Martins said. “In an induced heat, you only make about 30% of them pregnant. So, the question is: Can we continue to improve fertility programs? And how do we go about doing that?”
