Cheese Lovers Pizza Squares Servings: 10 Prep Time: 15 minutes Cook Time: 18 minutes Ingredients 1 can refrigerated pizza dough 1 cup Ricotta cheese 2 cups (8 oz.) shredded low-moisture partskim Mozzarella cheese 2 ounces turkey pepperoni, diced 2 plum tomatoes, thinly sliced 1 cup yellow pepper, sliced 1 tsp oregano 2 tbsp chopped parsley Preparation Preheat oven to 400 degrees Fahrenheit.

Press pizza dough into 15 x 10-inch jelly roll pan.

Bake for 12 minutes; remove from oven and spread Ricotta cheese over crust.

Top with Mozzarella, pepperoni, tomatoes, pepper and oregano.

Return to oven and bake for 6 minutes or until cheese is melted. Sprinkle with parsley, cut into squares and serve.

Cheese Stuffed Burgers Servings: 4 Prep Time: 10 minutes Cook Time: 15 minutes Ingredients 1 1/4 pounds extra-lean ground beef 2 tablespoons ne breadcrumbs 1/4 cup egg substitute 1/4 teaspoon seasoned salt 1/2 teaspoon chili powder 4 slices part-skim Mozzarella cheese 4 tablespoons low-fat plain yogurt 4 tablespoons salsa 4 thick slices red onion 4 thick slices tomato 4 pieces arugula or lettuce 4 whole-grain hamburger buns, toasted Preparation Mix beef, breadcrumbs, egg substitute, seasoned salt and chili powder in a medium bowl. Divide mixture evenly into 8 patties. Top four patties with a slice of cheese and cover with remaining 4 patties.

Press edges together to seal in cheese.

Grill burgers over medium-hot coals about 5 minutes each side.

Mix yogurt and salsa in a small bowl. Place a burger on each bun and top with onion, tomato, arugula and salsa mixture.

Cheeseburger Macaroni Casserole Servings: 4 Prep Time: 20 minutes Cook Time: 35 minutes Ingredients Non-stick cooking spray 1 pound lean ground beef 1/2 cup chopped onion

1 cup whole-wheat elbow macaroni (or penne or rotini pasta) 1 medium tomato, chopped 1 (8-ounce) can tomato sauce 1/2 teaspoon seasoned salt, optional 1/4 teaspoon black pepper 1 cup shredded Cheddar cheese

Preparation Preheat oven to 350º F. Spray an 8x8-inch baking pan with nonstick cooking spray; set aside. In large skillet over medium heat, cook ground beef and onion until beef is brown and onion is soft; drain.

Cook macaroni according to package directions; drain. Spoon macaroni into prepared pan.

Spread beef mixture and chopped tomato over macaroni. Pour tomato sauce over beef.

Sprinkle with seasoned salt, pepper and shredded cheese.

Cover loosely with foil and bake for 35 minutes or until cheese is melted and edges of casserole are bubbling.

Pumpkin Pancakes with Maple Yogurt Topping Servings: 4 (12 pancakes) Prep Time: 5 minutes Cook Time: 10-15 minutes Ingredients Pancakes 1 cup all-purpose our 1 tablespoon sugar 2 teaspoons baking powder 1/2 teaspoon cinnamon 1 cup 1% low-fat milk 2 tablespoons melted butter 1 egg 1/2 cup canned pumpkin 1/2 cup low-fat vanilla yogurt Topping 2 cups low-fat vanilla yogurt 1/4 cup maple syrup 1/4 teaspoon cinnamon

Preparation In small mixing bowl, briskly combine vanilla yogurt, maple syrup and cinnamon until yogurt becomes looser texture. Reserve.

Combine our, sugar, baking powder and cinnamon in a large mixing bowl. In a medium bowl, combine milk, butter, egg, pumpkin and yogurt, mixing well. Add wet ingredients to our mixture and stir until just moist. Do not overmix. Batter may be lumpy. For thinner batter, add more milk.

Lightly coat a griddle or skillet with cooking spray and heat on medium. Using a quartercup measure, pour batter onto hot griddle.

Cook until bubbles begin to burst, then ip pancakes and cook until golden. Serve warm with maple yogurt topping.

30-DAY REGIONAL OUTLOOK The last 30 days have brought a continuation of the very warm weather pattern that has gripped the region for several months. Temperatures across much of the Upper Midwest have averaged 3-5 degrees above normal. Rainfall amounts have been variable; some places have had average precipitation while others have had very little. During the last couple of weeks of August and the start of September, the weather pattern will once again favor above-average temperatures across the region. High pressure will reside over the Plains much of the time, keeping cooler air bottled up across Canada.

Temperatures across the Dakotas, Minnesota and Iowa may be 2-4 degrees above average over the 30-day period. Precipitation amounts are expected to be below normal.
