A team approach to milk quality Valley Acres Dairy wins national award

LEWISTON, Minn. – At Valley Acres Dairy, high quality milk and a low somatic cell count is not the result from one person. It is a team effort.

“I think it’s exciting and shows the employees are doing a good job and doing it consistently,” Carey Tweten said. “We’re communicating and trying to do the best from a management standpoint too.”

Tweten and his wife, Emily, and their kids, Emerson, 12, Avyn, 10, Llewyn, 6, and Wren, 4, farm together with Emily’s parents,

Gene and Phyllis Speltz, on their 780-cow dairy, Valley Acres Dairy, which is split into two farmsites near Lewiston. Both of the sites received recognition by the National Mastitis Council as a gold winner in the National Dairy Quality Awards program.

“It is exciting to share the news of this award with our employees and the businesses we work with,” Tweten said. “This award is as much their award as ours because they’re doing their jobs and we’re doing our job.”

Valley Acres Dairy has a yearly average SCC of 75,000.

“Our SCC wasn’t always this low,” Tweten said. “It took time to get here.”

Jamie came out to the farm and simply told me about the RECAL PLUS and showed me some of the research that he and Doc Nathan Thomas had been working on together.

Triple-T Holsteins He never once tried selling me North Lewisburg, Ohio anything. We talked about the RECAL PLUS and he told me what he does to prove the product. Then he told me he would give me a 30-day supply and if I didn’t see any diīerence, I didn’t have to pay anything for it.

Normally Jamie likes to monitor dry maƩer intakes, milk producƟon, % BF, % Pro, MUN’s, Eī., feed costs, income, & income over feed cost and perform manure screenings. Well since we feed grain and hay, we could not do that, so we could only do manure screenings.

I was already feeding a probioƟc, but from what I had heard from Jamie, other dairymen and the oīer he gave me, I couldn’t pass it up. So, Jamie & I collected some manure samples, and screened them. I quit feeding the probioƟc I was feeding and he got me started feeding the RECAL PLUS and told me what to watch for and said he would be back in two weeks to collect manure from the same cows and screen that. I called him in about ten days and said don’t waste your Ɵme coming down, I see the diīerence already and that I am I going to conƟnue with it. I was seeing a lot less undigested feed in the manure.

I then started on the RECAL PLUS SS because Doc and other dairymen had been seeing signs of beƩer blood circulaƟon. Some other things I have really noƟced and like about the RECAL PLUS SS is how well my cows stay on feed when going to shows, and stress Ɵmes, they don’t go oī feed and just keep eaƟng and handle the stress well. I have also noƟced that my fresh cows get oī to a beƩer start and that when cows come into heat, they are stronger heats, and the reproducƟon is beƩer.

From one dairyman to another, I highly recommend the RECAL PLUS, and RECAL BOLUSES whether you just have show caƩle or a commercial dairy.

This product really does work and I really like the way and eīort Jamie puts into proving the product.

Once that is done, the employee goes back to the rst cow to wipe off the teat and the teat end with a microber towel before attaching the unit and moving to the next animal. The same routine happens when both employees move to the other side of the parlor.

Plus, Tweten said they check the milking system quarterly and do regular maintenance. Clean air systems on the parlors and lters on the fresh air coming into the pulsators have helped keep the equipment clean and run more efciently.

“Some of the employees with more experience can identify issues quicker, resulting in a faster x,” Tweten said.

“They pay attention.”

If something breaks, Tweten xes it as soon as possible.

“The communication and trust between our employees and ourselves are important,” Tweten said. “When an issue has been brought up, we take it seriously and work to resolved it as quickly as possible.”

If a cow has a noticeable change in the milk during routine preparation, she is tested and then treated if it is conrmed mastitis.

“Other things we keep a close eye on are our wash machines and dryers for the functionality of our towels,” Tweten said.

“Sometimes the smallest details are ones that can be over looked, but can cause real problems if not monitored.”

Tweten also checks the milking equipment.

“We will try to pay attention to every little detail,” Tweten said.

He also checks that routines are being followed. The ends of the stalls are manually raked every milking.

“Even in the barns, if there is a new scraper or pusher, it’s important for him to be cleaning, raking the beds just like everyone else,” Tweten said. “The environment is a huge deal.”

Three nights a week, a mechanical groomer attachment on the skidloader is used to clean the stalls and fresh sand bedding is added twice weekly.

Tweten has an employee team meeting once every quarter and asks for input during that time.

“We want our employees to always be involved and feel like they are part of the Valley Acres team because they are a real part of our farm’s successes,” he said.

“We encourage our employees to bring new ideas, thoughts and ways to improve to each meeting.”

They also talk about goals at the meeting. Their most recent SCC goal has been to maintain under 100,000.

“Now that we’re there, maybe go one step farther and we’ll minimize the number of cows we treat,” Tweten said. “And if you have a low SCC, you should probably have pretty healthy cows. That can lead to better reproduction, more pounds of milk, vet costs will be less.”

Along with their employees, Tweten said the dairy works with many good companies who provide great service and practical information to help further their achievements.

“Having good herd health and milk quality lowers costs,” Tweten said. “And at the end of the day, it helps us be more protable.”

Increasing stall size pays off for Schmitzes, Witts

ONTARIO, Wis. – A year ago, Aaron and Sarah Schmitz had the idea to enlarge some of the stalls in their dairy barn. Then the coronavirus pandemic hit, the bottom fell out on milk prices and the plan was put in the drawer. A chance purchase of used stall mats caused the plan to not only crawl back out of the drawer but to come to full fruition.

“We were getting frustrated with how the cows would beat themselves up in the old stalls,” Sarah said. “We would calve in a really nice 2-year-old, something we would be really excited about, and then she would bang herself up.”

The Schmitzes milk 35 Holsteins and Jerseys, along with Sarah’s parents, Scott and Genise Witt, on the farm that has been in the Witt family since the early 1900s. At just 58 inches long, the stalls in the century-old barn were too small for the Holstein cows in the herd to be comfortable and barely t the bigger Jersey cows.

“We’ve known for a while that we would have to remodel the barn,” Sarah

said. “The biggest upgrade we had done so far was to take out the stanchions and use some chains to make what we called a poor man’s tiestall.”

In June 2020, the Schmitzes purchased Animat stall mats that had been in use less than a year at a savings compared to purchasing new.

“It started out as a cow mat project,” Sarah said. “We gured that we could at least put in new mats to help improve cow comfort since the rest of the plan didn’t seem feasible.”

Once they got the mats home, the Schmitzes realized the mats were bigger than they had originally thought they were, most being from 68 to 71 inches.

“We had thought they were all 63 inches, and I gured we could just cut the mats to t the current stalls,” Aaron said. “Then we got them home and realized most of them were much bigger than that. I could have handled cutting ve inches off, but I knew I was going to have a really hard time cutting so much off those almost-new mats down to t stalls that small.”

After some discussion, Aaron and Sarah presented their plans for redoing half the stalls in their barn to Scott.

no way we could get it done this year,” Scott said.

Then to Aaron and Sarah’s surprise, Scott had a change of heart.

“On a Monday, Dad told us he didn’t think it would work this year,” Sarah said. “By Wednesday we had ordered the parts we needed for the new stalls, and on Thursday, we drove up to Medford to pick them up. It was sort of typical Witt fashion.”

The project to increase 12 of the stalls in the barn 7 inches, to 65 inches, commenced the following Monday and took two weeks to complete. The Schmitzes and Witts chose to replace their old stalls with Freudenthal Comfort Stalls.

“We started breaking concrete on Monday using a sledgehammer,” Aaron said. “Tuesday we rented a jackhammer. The skidsteer doesn’t t in the barn, so all of the broken concrete had to be hauled out in a wheelbarrow.”

More concrete had to be removed than they had planned as they found additional issues with the stall beds as they worked.

“We planned at rst to knock out and replace the manger and the curb, but once we got into the stall bed, we kept nding more and more bad concrete,” Sarah said. “We even ended up having to replace the gutter wall; so everything from the gutter wall forward to the barn wall ended up being new concrete.”

By that Friday they were setting up the forms and pouring the concrete for the new curbs. The new stall oors were poured the next Monday, and they poured the new manger which replaced a recessed manger on that Tuesday.

“I did a lot of babysitting during the project,” said Genise, who cared for the Schmitz’s son Tanner, who was six months old at the time. “When we poured the concrete, though, it took all four of us out there working to accomplish that.”

They made the decision to depart from using a manger liner to painting the manger with epoxy, a choice they have been happy with thus far. All of the drinking cups and water lines to those stalls were replaced as well.

Newly renovated comfort-stalls in the barn are the result of tearing out and re-pouring the concrete and increasing the stall length from 58 inches to 65 inches.

The Schmitzes and Witts did the work themselves, which allowed them to complete the project in a year that did not start out as a stellar one for dairy farmers.

“We have a lot of Menards rebates after this year,” Aaron said. “We were able to get 11% off of everything because of a sale, and then an extra 2% off using a Menards credit card. That really helped us save a lot of money.”

were completed, they moved some of their larger cows into them and immediately noticed a difference.

“You could really see a lot of differences in how the cows act,” Aaron said. “They were almost like a different group of animals. We see a lot fewer swollen hocks. The cows spend more time lying down. They have an easier time reaching the feed.”

The differences in the 12 cows who got the newly remodeled stalls led them to move on to the next group of stalls in August, lengthening what had been their four largest stalls, increasing them to 72 inches in length.

“It wasn’t ever about increasing production or anything like that,” Sarah said. “It was always about cow comfort. But as the cows are more comfortable, everything else seems to improve too.”

Tight margins return to U.S. dairy farms

The Agriculture Department announced the January Federal order Class III benchmark milk price at $16.04 per hundredweight, up 32 cents from December but $1.01 below January 2020.

Late Friday morning futures portended a February Class III at $15.62; March, $16.60; April, $17.10; May, $17.46; June, $17.59; July, $17.69; August, $17.75; September, $17.75; October, $17.63; November, $17.54; and December $17.29.

The January Class IV price is $13.75, up 39 cents from December but $2.90 below a year ago.

You’ll recall December milk output totaled 18.94 billion pounds, up 3.1% from December 2019. The latest Dairy Products report shows where that milk went.

Cheese output totaled 1.13 billion pounds, up 2.6% from November and 0.5% above December 2019. Output for 2020 totaled 13.2 billion, up 0.4% from 2019.

Wisconsin produced 279.3 million pounds of that December total, up 0.9% from November and 1.2% above a year ago. California output, at 208.5 million pounds, was up 3.8% from November but 4.1% below a year ago. Idaho, with 85.5 million pounds, was up 2.7% from November but 3.8% below a year ago.

Italian type cheese totaled 484.7 million pounds, up 5.9% from November and 0.3% above a year ago.

YTD Italian was at 5.6 billion pounds, down 1.2%.

American type cheese totaled 461.1 million pounds, up 2.9% from November and 1.0% above a year ago. YTD American hit 5.3 billion pounds, up 2.1%.

Mozzarella output, at 373.1 million pounds, was down 2.8% from a year ago, indicative perhaps of lagging pizza sales. YTD mozzarella, at 4.4 billion pounds, was down 1.7% from 2019.

Cheddar, the cheese traded at the CME, climbed to 334.2 million pounds, up 14 million pounds or 4.4% from November and 3.8 million or 1.2% above a year ago. Cheddar for the year totaled 3.84 billion pounds, up 2.7% from 2019.

Churns produced a December record of 205.5 million pounds of butter, up 32.3 million pounds or 18.7% from November’s total, which was revised up 4.9 million pounds, and was a bearish 21.7 million pounds or 11.8% above a year ago. Butter output for the year totaled 2.1 billion pounds, up 6.6% from 2019, and the rst time butter production ever topped 2 billion pounds in a year.

Yogurt production totaled 355.5 million pounds,

up 1.9% from a year ago, with the YTD total at 4.5 billion pounds, up 2.4% Dry whey totaled 81.7 million pounds, up 12.3 million or 17.7% from November and 1.9 million or 2.3% above a year ago, with YTD at 956.2 million pounds, down 2.2%. Dry whey stocks fell to 65.7 million pounds, down 2.2% from November and 8.0% below those a year ago.

Nonfat dry milk output jumped to a December high 204.5 million pounds, up 45.3 million pounds or 28.5% from November and 39.6 million or 24.1% above a year ago. Powder production for the year hit 1.94 billion pounds, up 5.0% from 2019. Stocks, at 283.3 million pounds, were up 34.3 million pounds or 13.8% from November, and a bin bulging 35.9 million pounds or 14.5% above a year ago.

Skim milk powder production fell to 40.9 million pounds, down 11.5 million pounds or 21.8% from November and 24 million pounds or 36.9% below a year ago. YTD skim milk powder hit 603.5 million pounds, up 5.4% from 2019.

Global dairy prices remain rm. Tuesday’s Global Dairy Trade auction saw its weighted average rise for the sixth consecutive session, though the gain was smaller, at 1.8%. That’s down from 4.8% on January 19 and compares to a 3.9% rise on January 5, and a 4.7% drop on February 4, 2020.

The gains were led by buttermilk powder, up 10.7%. It did not trade in the last event. Butter was next, up 6.2%, following a 4.6% rise last time, but anhydrous milkfat was only up 1.3%, after leading the gains January 19, with a 17.2% jump. Lactose was up 3.8%, followed by GDT Cheddar, up 2.3%, after slipping 0.3% last time. Whole milk powder was also up 2.3%, following a 2.2% uptick, but skim milk powder was down 1.5%, only loss on the day, after jumping 7% last time.

StoneX Group equated the GDT 80% butterfat butter price to $2.2249 per pound U.S., up 13 cents from the last event, which saw a 9.2 cent rise. CME butter closed Friday at a huge bargain $1.2675. GDT Cheddar cheese equated to $1.8950 per pound, up 4.3 cents, and compares to Friday’s CME block Cheddar at $1.64. GDT skim milk powder averaged $1.4506 per pound, down from $1.4709, but whole milk powder averaged $1.5685, up from $1.5333. CME Grade A nonfat dry milk closed Friday at $1.12 per pound.

Cooperatives Working Together members accepted 32 offers of export assistance this week to help capture sales of 1.155 million pounds of cheese, 216,053 pounds of butter, 870,826 pounds

of anhydrous milkfat, 1.812 million pounds of whole milk powder, and 1.351 million pounds of cream cheese. The product will go to customers in Asia, Central and South America, the Middle East, and Oceania through June.

Dairy prices were mixed in the rst week of February, or mixed up, as traders weighed Tuesday’s GDT and the December Dairy Products report. The Cheddar blocks fell to $1.5350 per pound Thursday, lowest since May 12, but jumped 10.50 cents Friday to close at $1.64, up 6.50 cents on the week, reversing three weeks of decline, but were 29 cents below that week a year ago.

The barrels nished Friday at $1.50 per pound, up 11 cents on the week, 2.25 cents above a year ago, and reduced the spread to 14 cents. 19 cars of block were traded on the week at the CME and 14 of barrel.

StoneX Dairy’s Feb. 5 Early Morning Update stated; “With uncertain government purchases and the potential for increased food service business in the coming months, it seems 0.5% cheese production growth (Dairy Products report) is not enough to give cheese buyers peace of mind.”

Cheese contacts tell Dairy Market News that spot milk offers were quieter than in recent weeks but far from tight. Prices for spot milk remain at strong discounts. Cheese production is busy as managers keep ahead of the milk by producing cheeses that require aging. Winter weather hit the Northeast and added stress for Midwestern cheese producers who provide restaurants that will not be able to offer outdoor dining for the near term. DMN says “There are myriad questions regarding near and long term market conditions, as contacts’ outlooks are foggy.”

Western cheese is widely available and inventories are growing for most varieties as cheese output also tries to keep pace with the available milk.

Cheese supplies are outpacing demand as retail sales decreased following the holidays and pizza cheese demand has eased some, with the football season ending. Super Bowl is characteristically the biggest cheese selling time of the year and hopefully that’s still the case. Food service demand has yet to see much improvement even as some areas relax COVID restrictions on restaurants. DMN says “Government purchases can help clean up some of the cheese stocks but market observers are also wary of the impact that additional purchases can have on price volatility.”

Butter dropped 3.50 cents Monday to $1.21 per pound, lowest since May 5, but jumped 8.25 cents Tuesday, spurred by the GDT, and ended Friday at $1.2675, up 2.25 cents on the week, but 56.50 cents below a year ago, on 23 sales.

Cream prices remain within reach for butter makers in the Central region, says DMN, but steadily growing ice cream production has some contacts reporting slight upticks on the multiples. Plant managers have said they are using primarily internally sourced cream, which is abundant. Butter production remains busy, although food service demand is “a shell of its pre-COVID-19 self,” says DMN, but retail demand has covered some of the lost ground.

supply management programs, even as milk is being dumped in some regions. Feed prices are rising rapidly. Dairy demand is uncertain, even with the arrival of COVID vaccines, and we don’t know how the new administration will operate government feeding programs and assistance.

Matt Gould, editor and analyst of the Dairy and Food Market Analyst newsletter, added one in the February 8 Dairy Radio Now broadcast, namely a shortage of shipping containers on the West Coast which, he said, is backing up inventories and hampering dairy exports.

This all has brought volatility and tension, he said.

We saw extremes in 2020, cheese as low as $1 per pound and months later at $3, but he believes 2021 will be less extreme with milk prices “in the middle.”

“We’re seeing craziness in the rst half of the year,” he concluded, “If we can get through it, we’ll see a reverse pandemic in the second half, with solid dairy demand and dairy farmers should be just ne.”

In the week ending January 23, 2021, 67,900 dairy cows were sent to slaughter, up 500 from the previous week and 100 head or 0.15% above a year ago.

StoneX says “This may be a sign that the bearish market pressure is encouraging cows to be culled, but given that cull prices are still at a discount to 2020 levels we’re inclined to believe that this slaughter is from cows that were held back to add production when prices were higher last year.”

The February 1 Early Morning Update says “January marked the rst month in the last six that dairy cows were being killed faster than replacements were being put into the herd. As both production and components have been stronger than anticipated recently, it is likely that if slaughter does not maintain this pace then supply will continue to outpace demand by a larger margin.”

Western cream supplies are increasing seasonally and churns are on full schedules in many cases. Butter inventories are adequate for some, but heavier than anticipated for others, though domestic butter demand is described as good.

Grade A nonfat dry milk fell to $1.09 per pound Thursday, lowest since Nov. 24, but saw a Friday nish at $1.12, down 5.25 cents on the week and 13 cents below a year ago. A whopping 60 carloads exchanged hands on the week, including a single day record of 33 on Wednesday.

StoneX says “The conventional wisdom this year is that the slack in domestic powder demand was balanced by strong global markets. That dynamic likely still exists, but we do wonder if price weakness, even modest price weakness, on NFDM will increase domestic usage. With plenty of uid milk available we don’t expect to hear about fortifying the cheese vats now, but maybe there is an attraction to the storability of powder.”

Dry whey held all week at 53.50 cents per pound, 14.50 cents above a year ago, with just 1 sale reported on the week at the CME. Tight margins are returning to U.S. dairy farms as falling milk prices and rising feed costs take their toll. The USDA’s latest Ag Prices report shows the December milk feed ratio at 2.18, down from 2.58 in November and the lowest since May 2020, and compares to 2.57 in December 2019.

The index is based on the milk price in relationship to feed prices for a dairy ration consisting of 51% corn, 8% soybeans and 41% alfalfa hay. One pound of milk could purchase 2.18 pounds of dairy feed of that blend in December.

The US All-Milk price averaged $18.50 per hundredweight (cwt.), down $2.80 from November and $2.20 below the December 2019 average.

California’s All Milk price fell to $19.20, down $3.80 from November and 60 cents below a year ago. Wisconsin’s, at $18.10, was down $4.60 from November and $3.30 below a year ago.

The national average corn price averaged $3.97 per bushel, up 18 cents per bushel from November, which followed an 18 cent rise the month before, and a 21 cent rise in October. It was priced 26 cents per bushel above December 2019.

Soybeans averaged $10.50 per bushel, up 20 cents from November which followed a 67 cent rise from October, and $1.80 per bushel above a year ago.

Alfalfa hay averaged $169 per ton, up $2.00 from October but $3.00 per ton below a year ago.

The December cull price for beef and dairy combined averaged $58.10 per cwt., down $1.20 from November, after dropping 70 cents in November from October, and is $1.20 below December 2019 and $13.50 below the 2011 base average of $71.60 per cwt.

Milk cow replacements averaged $1,360 per head in January, up $20.00 per head from October and $60 above January 2020. They averaged $1350 per head in California, unchanged from October but $50 per head below a year ago. Wisconsin cows averaged $1,470 per head, up $50 per head from October and $210 per head above January 2020.

I have the privilege of interacting with some of the best dairy producers in the business. One of the topics that continues to come up is the amount of money that our elected politicians are giving away. In 2020 U.S. dairy producers received as much as $2.50/cwt in payments.

This could be higher or lower based on size and eligibility to other stimulus programs.

Here is some interesting facts to ponder on U.S. debt obligations. As of this writing, the U.S. has debt obligations of $575,199 per citizen from Federal, State, Local, and unfunded liabilities. Only 38% of U.S. citizens pay income taxes. When allocated to the citizens that pay income taxes this equates to over $1.5 million dollars per taxpayer.

Keep in mind that this figure doesn’t include personal or business debt.

Traders are watching the progress on another $1.9 trillion stimulus bill. There is some talk that if passed it could lead to double digit inflation. Our economy already has a growing pile of cash sitting in a “Liquidity Trap”. What this means is there is so much cash being pushed into bank deposits with no opportunities to receive a good return that many are choosing to leave it sit drawing minimal or no interest. there will be to many dollars chasing a fixed number of assets leading to true inflation. Are we seeing this already in the stock market? Could that be why China is buying up all of the worlds food supply?

What does all this mean for Ag? At some point the massive cash infusion from the government will end, and producers will be left finding their revenue from cash buyers in the market.

In the latest Global Dairy Trade auction products sold at values that equate to $19.25 Class III and $19.96 Class IV. U.S. prices are trading at much lower values. This will keep pressure on international markets and support U.S. values if exports compete in a fair market. For now, U.S. stimulus intervention is likely impacting export buyer demand flows.

Last week China made a record large U.S. corn purchase. This should be concerning for domestic feed buyers as carryout stocks continue to tighten. Canada has seen its canola seed inventory drop below what is needed to fulfill domestic crush needs. Could the U.S. see similar corn and soybean issues?

A different dairy Spertus milks sheep in Missouri

WESTON, Mo. – On the rural hills lining the Missouri River lies an idyllic sheep farm right out of a storybook.

To Eliza Spertus, this haven is home.

In 2002, Spertus’ mother, Sarah Hoffmann, purchased a parcel of land just outside quaint Weston, about an hour’s drive northwest of Kansas City. She was looking for a good place to raise her children and start a farm.

The farm, coined Green Dirt Farm, pasture-raised East Friesian dairy sheep and eventually began to make cheese with the milk produced.

Today, 200 sheep are milked twice-daily in a 12-sheep pit parlor. The sheep spend the days grazing and evenings in the barn.

“I love the work,” said Spertus, farm manager. “It’s hard work, and it’s too hard that if I didn’t love it, I wouldn’t do

After working various ofce jobs post-college, Spertus assumed the role of farm manager in 2015.

“At that time, I hadn’t worked on the farm or with animals in years, so Mom really took a gamble on me,” Spertus said. “I’m very appreciative, and I’ve been farm manager for ve years now. It’s a lot of fun.”

Spertus begins her day in the parlor at 5:30 for morning milking. That is complete around 8 a.m., and the milk-

ing ewes go out to pasture and spend the day on the grass.

Then, Spertus takes care of the rams and any dry ewes as well as the farm’s livestock guardian dogs.

The day takes shape around the seasons and projects happening on the farm and ends after evening milking around 8 p.m. Their busiest season is during lambing, and spring or summer when sheep need to be moved to new pastures on a frequent basis.

Spertus said one of her largest challenges since taking

over the farm’s management has been establishing strong genetics.

“In the United States, there’s not very much research in sheep genetics,” Spertus said. “The ock I inherited when I came on as manager was low-producing. We had a lot of sheep but low production.”

Green Dirt Farm’s 200 dairy sheep rotate paddocks throughout the day to ensure fresh grazing pastures. The dairy is in the hills of the Missouri River valley near Weston, Missouri. and land available.

“My goal is to have 200 high-performing ewes milking year-round with staggered lambing,” Spertus said.

The dairy grazes their sheep on the acreage surrounding the farm, maintaining a mostly grass-fed ock. Spertus conducts monthly health checks on each animal, recording weight and production numbers so she can cull the ock based on the data.

“We are lucky enough to have a DeLaval single 12-pit parlor and have milk meters on the milkers,” Spertus said about tracking her ock’s production. “We don’t collect daily right now, but twice a week in morning and evening milking we collect the data and put it in a spreadsheet.”

She also uses a service similar to DHIA that records production data like fat, protein, lactose and somatic cell counts.

This is the second year Spertus has been using articial insemination, with semen imported from France. Lacaune, a dairy sheep breed from southern France, is known for their hardy nature against disease, large temperature swings, and high fat and protein components in the milk they produce. “(The Lacaune) are high-production, all around great animals that do well on pasture,” Spertus said. “Our farm is mostly pasture based, so this is a priority for us.”

The remainder of the sheep’s diet is supplemented with grass hay, avail-

able in the barn at night. They also get a treat of grain during milking, but most of their diet is on the rolling hills of the Missouri River valley.

“We manage our pastures using temporary ElectroNet fencing with portable solar boxes,” Spertus said. “This enables us to move our sheep whenever – and pretty much wherever – we want on the farm.”

The paddocks are regularly rotated using management intensive grazing practices.

“In the winter, the sheep graze on free-choice hay in the elds,” Spertus said. “We choose the elds that they winter strategically, focusing on elds that need more nutrients or better grass growth the following spring.”

The farm continues to move the sheep until early spring when the grass starts to come up. At that point, they choose a sacrice pasture to put the sheep on while the grass in other areas is established enough to sustain rotational grazing. This sacrice pasture is then reseeded and vacant until it can support grazing.

When Spertus came on as farm manager, the ock was mostly comprised of East Friesian sheep. A common breed of dairy sheep in the United States, the Dutch breed is not as parasite-resistant as their French counterparts.

Unlike bovines, sheep are very seasonal in their breeding patterns. They long to be bred in the fall and lamb in early spring. As daylight hours decrease, they start to gradually produce less.

“A long-term goal of mine is to continue to milk through the end of the year so the cheese kitchen still has milk in November,” Spertus said.

They are currently supplementing some of their milk with a neighboring grass-fed Jersey dairy, where they combine the milks to make hybrid cheeses and ice cream. Ruby is their featured blended cheese, loosely inspired by Robiola cheese.

Sheep milk is notable for making some of the best cheeses in the world.

Furthermore, there are very few sheep cheese producers in the United States, allowing Hoffman to slip into a niche market with the sheep already grazing her pastures.

The Green Dirt Farm Creamery, a cheese shop and restaurant, opened in Weston in 2016. Before that, Hoffmann was making cheeses and selling them indirectly in local markets.

Today a team of scientists, shop workers and staff ll the shop which offers sandwiches, cheese boards, soups, ice cream, charcuterie, wine, liquor, lamb and more.

Green Dirt Farm’s cheese kitchen, located on the farm, makes a variety of cheeses including Bossa, their signature sheep cheese with a soft, silky texture and custard-like center. Their Prairie Tomme is a hard sheep cheese modeled after Manchego cheese.

Spertus has found her stride as farm manager, and loves working with animals on a daily basis.

“I think farming is one of those things that people are born to do, and they love it,” Spertus said.

She looks forward to the daily trials and problems she can solve.

“It’s exciting to know when an animal needs help, you can help it,” Spertus said about pulling lambs. “It’s so empowering to be able to just jump in and do it, even if you’re terried.”

Overall, she loves spending time with her sheep and the rewards that come from that.

“Sheep are crazy, and they can annoy me 55% of the time, but the other 45% they’re great,” Spertus said.

“I love what I get to do every day.

Managing for feed efciency Council on Dairy Cattle Breeding to include new genomic selection trait

Having cows that are as feed efcient as possible is a goal of any dairy farmer. Historically, there has been little a dairy producer could do to manage feed efciency in their herd, but the development of a genomic selection trait called Feed Saved offers producers a way to impact feed efciencies through genetic selection.

The Council on Dairy Cattle Breeding including this new genomic selection trait was the focus of a recent webinar hosted by BoviNews.

“Feed is the largest expense on most dairy farms, so even small improvements can have an impact,” said Kent Weigel, a professor and the chair of the University of Wisconsin-Madison Department of Animal and Dairy Sciences. “What we are trying to do is maximize the amount of consumed energy that is captured as milk production or body tissue, and limit what is lost as feces, gas, urine or heat for metabolizing feed or maintenance.”

Joel Pankowski, the manager of eld technical services for Arm and Hammer, said it is important dairy producers understand how to calculate feed efciency, which involves a relatively simple formula, taking milk production divided by dry matter intake to determine a feed efciency factor.

“Using energy corrected milk for the milk production parameter allows us to standardize feed efciency across dairies, which allows a nutritionist or a veterinarian to compare a Jersey herd to a Holstein herd to a crossbred herd,” Pankowski said. “As far as dry matter intake, you look at the feed delivered minus the weighbacks. That gives us the gure for efciency.”

Pankowski recommends measuring for feed efciency on at least a monthly basis and to be as consistent as possible in collecting data. Use the same milk production value; feed

cows and collect refusals at the same time of day, and, if possible, have the same person determine the amount of feed refusal each time. Pankowski said the software in feeding tools and delivery systems are generally accurate and unaffected by human error.

The opportunity for the most variation in data comes from people calculating refusal amounts.

Other factors to consider include forage quality Pankowski said. He noted that higher quality forages tend to move through cows at a faster rate than lower quality forages, which will affect the efciency factor.

There are two types of feed ingredients that can impact feed efciency value, Pankowski said. Ingredients that increase rumen microbial growth generate increased efciency opportunities by allowing for additional breakdown of feed. Rumen bypass supplements also have a direct impact on feed efciency by providing components that a cow cannot deliver herself through fermentation.

Weigel said the goal of the research is to give producers the ability to select for cows with high milk yield and low maintenance costs.

“The concept that the Council on Dairy Cattle Breeding is going with is Feed Saved, which was developed

by Jenny Price in Australia several years ago and combines residual feed intake with excess maintenance costs,” Weigel said. “Does the cow eat more or less than she is expected to? Is she bigger than she needs to be?

Those two things together make Feed Saved.”

Weigel said Feed Saved will be implemented by CDCB by using RFI and a body size penalty. The trait will receive approximately 24% of the weighting in net merit calculations in the next genomic proof run coming in April.

Juan Moreno, the CEO of STgenetics, said his company began measuring feed conversion in their genomic and recipient herds in 2014, and has developed genomic predictions through testing of over 260,000 females for the trait. measured feed efciency factor, with a heritability of about 2.1.

“We chose to rank our females on a formula that we call EcoFeed,” Moreno said. “In EcoFeed, the average of the population is 100, so if you are more feed efcient than the average of the population, the number would be over 100, and if you are less feed efcient, the number will be lower than 100. That allows us to rank the bull and decide if his daughters are better or worse than the average of the population for feed efciency.”

Moreno said measuring this data is important for several reasons, one being the high percentage that feed costs represent in the total cost of production on a dairy farm. The second is the pressure the dairy industry is under to reduce the overall environmental impact by lowering the carbon footprint.

“We need to decide how we can move forward as an industry over the next 10 to 15 years to accomplish both goals and be able to feed the over 9 billion people that will be on this earth by 2045,” Moreno said.

Fifth-generation Quebec dairy farmer Tim Clark operates a 210-cow robotic dairy and has taken an interest in selecting for feed efciencies using STgenetics EcoFeed values in recent years.

“If you don’t have protability as a farmer, your banker isn’t happy, your wife isn’t happy and no one gets to be happy,” said Clark of his efforts to increase feed efciencies in his herd.

Clark said another reason, beyond protability, to manage and select for feed efciencies is to take into consideration the amount of waste produced and the impact on nutrient management plans.

“Our target, especially in a robot herd, is to have cows that we never see, because they are never having problems,” Clark said. “That means that everything is going well for them, and they are doing what they need to do without problem.”

He said they have implemented genomic testing in their herd and use the data to determine how animals perform throughout their lifetime.

“Overall, feed efciency is a good tool to help us improve our productivity and protability,” Pankowski said.

“It is all about creating more milk at less cost.”

New discoveries There are different types of draws for people to pick up a magazine. For some, it is the articles. Others, it is the pictures. For me, it is the recipes. I bought the October 2019 Rachael Ray magazine, intrigued by the types of recipes they were highlighting. I ripped out the pages of interest and threw them in my stash of collected recipes to try someday. Well, someday arrived this winter. These are some of my new favorite recipes. They are quick, easy and make me feel like Mark and I are eating out at a fancy restaurant. Just one where we forgot to bring money and had to wash dishes. Luckily, these recipes reuse pots and pans so not a very big bill for a great meal.

One of my nds that I am excited about is agrodolce. It is Italian for a sour (agro) and sweet (dolce) condiment. It is actually a fancy name and some extra ingredients for something I have been making for years. Who knew. Because the recipe makes more than Mark and I could eat in one meal, I saved some back to top off our hamburgers the next night. Delicious. The original recipe called for hanger steak, which is a cut from the plate. I have never heard of it so I substituted different cuts of meat. I sliced medallion steaks from a venison roast for Mark and formed some hamburgers for me. I could also use beef tenderloins or ank steak.

Flank steak with agrodolce and pan roasted cauliower 4 tablespoons olive oil 2 onions, thinly sliced (about 2 cups) ¼ cup raisins or dried cranberries 2 tablespoons balsamic vinegar 2 tablespoons sugar

Transfer the agrodolce to a bowl. Season the steak. In the same skillet, heat 1 tablespoon oil over medium-high.

Add the steak; cook, turning once, until browned about 6 minutes. The steak will not be fully cooked. Transfer to a plate. Add the remaining 2 tablespoons oil to the skillet. Add the cauliower; cook stirring occasionally, until lightly browned, 6-7minutes. Season with salt.

Remove from heat. Move the cauliower to the sides of the skillet. Place the steak in the center. Transfer to the oven.

Roast until the cauliower is crisp-tender and an instant read thermometer inserted horizontally into the thickest part of the steak registers 130 degrees, about 9 to 10 minutes. Transfer the steak to a cutting board; let rest for 5 minutes. Cut crosswise into one-half inch thick slices. Top with the agrodolce. Serve with the cauliower. Garnish with parsley.

Food columnist Natalie Schmitt 1 tablespoon drained capers (nd in grocery store by canned tuna) 2 plum tomatoes (8 ounces) seeded and diced (about 1 cup) 1 ½ pounds ank steak, tenderloin steak or venison medallion steaks 6 cups cauliower orets (1 small head) Fresh at leaf parsley leaves for garnish (optional) Preheat oven to 400 degrees. In a large skillet, heat 1 tablespoon oil over medium heat. Add the onions; cook, stirring often until golden, 10 to 12 minutes. Add the raisins, vinegar, sugar and capers; season with salt and pepper.

Simmer until the liquid is syrupy, 2 to 3 minutes. Stir in the tomatoes; cook until softened, about 2 minutes more.

This recipe looked so good in the pictures that I just had to try it out.

Well, I could not nd any Bok choy but know it is from the cabbage family, so why not substitute a small head of green cabbage? It worked and looked just as good as the magazine picture.

I made some other adjustments and tweaks. I love wild rice with chicken so I added half a cup of wild rice with the white rice. I discovered I should have simmered the wild rice in 2 cups of water for 30 minutes to soften up before adding to the recipe. I also put the chicken and marinade in the slow cooker on high heat for about an hour. I have learned the dark meat (thighs and legs) need extra time at low temps to be tender. By adding this step, the meat just fell off the bones.

Hoisin and marmalade chicken with Bok choy 2 scallions, chopped 1 tablespoon grated, peeled fresh ginger (from a 2-inch piece) or 1 teaspoon dried ginger 1 tablespoon less-sodium soy sauce 2 teaspoons toasted sesame oil 1 chicken (4 pounds) cut into eight pieces 1 cup long grain white rice (or ½ cup white and ½ cup wild rice softened) 3 carrots, cut on an angle into ½-inch slices 1 tablespoon plus 2 teaspoons canola oil 4 baby Bok choy, halved lengthwise (or cabbage) 1/3 cup hoisin sauce ¼ cup orange marmalade Preheat oven to 425 degrees.

Grease a large rimmed baking sheet.

In a large bowl, combine the scallions, ginger, soy sauce and sesame oil. Add the chicken and toss until coated. Let the chicken marinate at room temperature or put in slow cooker on high temp for an hour. Meanwhile, spread the rice on the prepared baking sheet. In a measuring cup, mix 2 ½ cups water and ¼ teaspoon salt and pour over the rice.

Bake the rice for 15 minutes. In a large bowl, toss the carrots with 2 teaspoons canola oil; season with salt. Stir the rice and smooth it into an even layer. Top with the carrots and chicken. Roast for about 20 minutes. Meanwhile, add the Bok choy to the empty bowl and toss with the remaining 1 tablespoon canola oil; season with salt. In a small bowl, mix the hoisin and marmalade. Soft-baked white chocolate cranberry cookies 3/4 cup unsalted butter, softened 3/4 cup packed dark brown sugar 1/4 cup granulated sugar 1 large egg 2 teaspoons pure vanilla extract 2 cups all-purpose our

2 teaspoons cornstarch 1 teaspoon baking soda 1/2 teaspoon salt 3/4 cup white chocolate chips 3/4 cup dried cranberries

In a large bowl using a hand-held mixer or stand mixer with paddle attachment, beat the butter for one minute on medium speed until completely smooth and creamy. Add the brown sugar and granulated sugar and mix on medium high speed until uffy and light in color. Beat in egg and vanilla on high speed. Scrape down the sides and bottom of the bowl as needed.

In a separate bowl, whisk the our, cornstarch, baking soda and salt together until combined. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick. Add the white chocolate chips and dried cranberries mix on low for 5-10 seconds until evenly disbursed. Cover dough tightly with aluminum foil or plastic wrap and chill for at least two hours and up to two days.

Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 to 30 minutes.

Preheat oven to 350 degrees. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.

Once chilled, the dough will be slightly crumbly, but will come together if you work the dough with your hands as you roll into individual balls.

Scoop and roll balls of dough, about one heaping Tablespoon of dough each, into balls. Place 10-12 on each baking sheet. Bake in batches for 10-11 minutes, until barely golden brown around the edges. They will look extremely soft when you remove them from the oven. Allow to cool for 5 minutes on the cookie sheet. If the cookies are too puffy, try gently pressing down on them with the back of a spoon. They will slightly deate as you let them cool. Transfer to cooling rack to cool completely.

Brush the chicken with the remaining hoisin and marmalade. Roast until an instant-read thermometer inserted into the thickest part of the chicken breasts registers 160 degrees, 10 to 12 minutes more.

Here is the perfect dessert to top off these main courses. It is so light and springy. It is also easy to make. Frozen berries work well too. You could probably even substitute blueberries for the raspberries.

Even though it serves 18, Mark and I ate the whole pan. We will try and share next time.

Raspberry-lemon cheesecake bars 2 cups graham cracker crumbs 1 cup plus 2 tablespoons sugar, divided 6 tablespoons butter, melted 3 cups (12 ounces) raspberries, divided 1 tablespoon each zest and juice from 1 lemon

4 packages (8 ounces each) cream cheese, softened 4 eggs Heat oven to 325 degrees. Line a 9-by-13 pan with foil or parchment paper with ends extending over sides. Combine graham crumbs, 2 tablespoons sugar and butter; press onto bottom of prepared pan.

Bake 10 minutes. Reserve ½ cup raspberries and 1 teaspoon lemon zest for later use. Beat cream cheese, lemon juice, remaining zest and remaining sugar in large bowl with mixer until blended. Gently stir in remaining raspberries; pour over crust. Bake 35 to 40 minutes or until center is almost set. Cool completely.

Refrigerate four hours. Top with reserved raspberries and lemon zest. Use foil handles to remove cheesecake from pan before cutting into bars.
