Jinglebell and wedding bells Johnson proposes to Belden on Christmas Day with newborn calf

BROOK PARK, Minn. – Zeb Johnson knew other dairy farm couples had become engaged with some help from a cute calf when deciding how he’d pop the question, but he also knew that it wouldn’t seem quite as special any other way.

Fortunately for Johnson and his new ancé, Danielle Belden, his judgement was right. Johnson and Belden, who

milk about 50 cows near Brook Park, Minn., are planning a wedding for 2019 after he wrote “Will you marry me?” on the left ear tag of an hours-old heifer calf named Jinglebell.

“Jinglebell was born on Christmas morning and I knew other people had done similar proposals,” Johnson said. “But since she loves calves so much, if I had proposed any other way I don’t know if it would have meant as much.”

had connected via FarmersOnly.com. Johnson, a lifelong dairyman, and Belden, who grew up in the Twin Cities suburb of Apple Valley, found a kindred spirit in each other by their birthdays being a day apart (she’s older by one day) and a common love for all creatures great and small.

“She’s a city girl,” Johnson said, grinning.

Belden rolled her eyes,

laughing.

“He likes to point that out to everybody we meet,” Belden said. “But the cows like me better.”

Their rst date went well, but Johnson was quiet and shy around Belden, which surprised her.

It continued up until the rst time she came to visit him at the farm, when she discovered what really made Johnson

tick.

“I was like, ‘Who is this guy?’” Belden said. “He was very chatty and easygoing around the cows, and a completely different person.”

Johnson had a brief yet simple explanation for his change in demeanor.

ZUMBROTA, Minn. – From the outside, Tyler Holst acts like a typical 9-year-old boy. He likes to draw farm scenes, play with his trains and do things in the barn with his family; however, the scar on his chest shares a different story.

Tyler, the son of Shane and Casey Holst, and brother to Kelsey, 12, was born with a congenital heart defect and is on the transplant list to receive a heart. The Holsts, who milk 200 cows near Zumbrota, Minn., were not expecting the news at their ve-month ultrasound.

“Everything was a shock,” Casey said.

According to Mended Little Hearts, which is the nation’s largest congenital heart disease support organization, congenital heart defects are the most common birth defects in the United States, affecting about one in every 110 babies each year. The organization tries to draw attention to the facts during Congenital Heart Disease Awareness week, Feb.

Although the diagnosis was a shock, the doctors had a plan.

“They did an echocardiogram through my belly on his heart, and they could see what was wrong so they had a plan for surgery.

They knew exactly what they needed to do after he was born,” Casey said.

Tyler came almost three weeks over due on Nov. 25, 2008. Three days later, he had his rst surgery. Two more followed when he was 5 months old and again at 3 years old.

The doctors were hopeful for a full recovery following the surgeries, but there was a complication with his last one and he ended up with chylothorax, a condition where blood vessels in the gut leak fat.

“Not all kids with his heart defect end up with complications, but the surgeries they do – they do them a lot – it changes the internal body pressure and sometimes it can mess with your lymphatic system. In his case, it did,” Casey said.

With no success in stopping the condition, the doctors put Tyler on the heart transplant list in November 2016.

“Sometimes they can get it stopped.

He’s on steroids to keep it under control.

Every time we’ve tried to wean him off it comes right back,” Casey said.

Tyler is on the Status 2 tier of the heart transplant list. There are three tiers to the list. Status 1A is the tier for people in urgent need, those who require intensive care hospitalization and may be on life support. Status 1B is someone who is dependent on intravenous medication or a device at home or in the hospital. Status 2 is someone who is stable or on oral medications and able to wait at home.

“He’s relatively healthy so he’s Status 2,” Shane said.

Despite his relatively good health, he still has to be watchful of disease.

During the month of January, Tyler had to stay home from school at least four weeks while inuenza went through the classrooms.

“The nurse wanted to wait for a whole week without any new cases of the u before he could go back,” Casey said.

Although Tyler did not like having to stay at home and be tutored, the family feels fortunate to be located where they are.

“That’s one good thing about farming. You can be isolated. We’re stuck out here,” Shane said.

After over a year of waiting, the Holsts are hopeful for a heart in 2018.

“At December’s check up they said this year is probably going to be the year,” Casey said. “Quite a few kids in front of him with the same blood type received hearts last year so that means he goes higher on the list.”

That means the Holsts are waiting for the phone call. Once they answer the call, the Holsts have four hours to get Tyler to The Mayo Clinic in Rochester, Minn., a 45-minute drive from their farm.

“Basically they want him on the table and ready to go when the heart arrives,” Casey said.

So that means the Holsts will stick close to home, although they admit their dairy farming schedule does not allow for a lot of time off anyway.

After the surgery, Tyler will most likely spend one month in the hospital and another two months within Rochester to be close to the hospital.

“We just have to y by the seat of our pants,” Shane said.

It will mean time away from the farm for Casey and Shane, but the couple hopes they can call on family and friends in time of need.

The last nine years have been an emotional roller coaster for the family.

“It’s been a lot of prayers and trust in the Lord for getting through this,” Casey said. “We’re very thankful for all the doctors and other people we’ve met.”

“Doctors have said Tyler is the golden child for this [...] He’s stronger, he’s bigger. He’s proved doctors wrong more than once.”

The Holsts feel living on the farm has helped keep Tyler healthy, despite his need for a donor organ.

“I always felt like being on the farm makes him stronger. He’s able to get outside and get fresh air,” Shane said. “We gured he wouldn’t be able to come out of the house [to the barn] and do anything. That he wouldn’t have enough energy. But he doesn’t seem any different from other kids energywise.”

Since their relationship began, Belden came up from the Cities every weekend and sometimes during the week to help Johnson on the farm whenever her job allowed.

Despite her roots, Johnson realized Belden was going to be more than just a girlfriend by watching her work with his cattle. Just as the animals spoke to Johnson about Belden being particularly special, she realized the same thing through an animal as well – albeit not through the cows, but through her cat, Colby.

“I knew he was the one because of how Colby acted around him. Colby lives at my parents’ house, has only ever been there, and she’s never alone. She also has health issues,” Belden said. “I bring her here with me when I come to visit. Colby is unbelievably happy here and only wants to be with Zeb when he’s around.”

About a month before he proposed, Johnson bought a ring with the intention to ask her to marry him at Christmastime.

“I was a little nervous to ask her,” Johnson said.

In keeping with his plan to enlist help from a calf, a feisty Holstein heifer calf, white as snow, was born on Christmas morning. That calf would go on to become Jinglebell.

Johnson wrote down “Will you marry me?” on a white ear tag with permanent marker before putting the tag in the calf’s ear and trotting her out for Belden to see.

Belden, lled with excitement and joy, grabbed a calf bottle and a permanent marker. To give Johnson an answer to his question, she wrote “YES!” in large block letters down the side of the bottle.

“I 100 percent knew that it was happening sooner or later, but I didn’t know [for sure] if, when or how,” Belden said.

Just as Johnson came up with a creative means of asking Belden to marry him, Belden devised a plan later that week to creatively tell her family that she was going to marry a dairy farmer from Kanabec County.

“My niece, Viola, is 2 years old, and I bought her a necklace for Christmas, then I asked her to be my

ower girl,” Belden said. “Her telling people she was going to be my ower girl was how I told my family Zeb and I are getting married.”

The couple are not only busy planning a wedding for June 2019, but working on moving Belden to the farm so she can be with Johnson and the cows.

“We’re getting married on the farm during June Dairy Month. That’s how we want to do it,” Johnson said.

In the meantime, they are building their dreams together and making sure Jinglebell is spoiled.

“She’s got quite the personality,” Belden said.

More than anything, they’re looking forward to tackling the ups and downs of being dairy farmers side by side.

“Farming is such a team effort. I like cows and she likes working with the calves, and we like milking together,” Johnson said. “If you love cows and they love cows, too, it is so much better than not having that support system.”

Helping heifers thrive Producers share youngstock-raising strategies during panel

RED WING, Minn. – While milking cows are important, how heifers are raised is also a signicant part of the dairying equation.

Three farms participated in a discussion about their heifer raising strategies during a panel titled, “The Benets of Proper Heifer Grouping” on Jan. 18 during the Form-A-Feed Professional Dairy Conference in Red Wing, Minn. Panelists included Nick Bohl from Udder Wise Dairy in Tilden, Wis.; Wade Gustafson from Gustafson Dairy Heifers in Willmar, Minn.; and the father-daughter duo of Keith and Megan Schaefer from Evergreen Acres in Paynesville, Minn.

Each farm gave a brief explanation and virtual tour of their heifer raising facilities followed by elding questions from the audience.

Heifers are raised in four locations.

They start on the home farm in a facility built four years ago with automatic feeders. There are two feeders with 30 calves per pen and 60 calves per feeder where they feed a 26 percent fat, 22 percent protein milk replacer.

The feeders are washed twice a day and the nipples are also changed twice a day. The nipple portion of the feeder is in a stainless steel box that can be accessed inside the feeding room.

“You can hose down the nipple and wash everything without having to walk outside. It works quite well,”

Bohl said.

Hoses are changed once a month.

Weaned calves occupy the newest barn on the farm, which can accommodate 90 animals.

After that, heifers go to open lots with concrete. The heifers are grouped in pens of 60 to 120.

“We were able to purchase another farm six years ago for some of our short-bred heifers. It eases up on room for us,” Bohl said.

Three months before they calve, heifers are sent to the stanchion barn, which the Bohls converted into sand

bedded freestalls.

Heifers are grouped by age and are bred with sexed semen for the rst service. They freshen at 23 months of age.

“Our breeding pen is pretty small, so a lot of times we’ll just watch for natural heats for a couple days. If we’re in a hurry, we’ll (give them Prostaglandin) and try to catch as many heats as we can. After that we’ll try a CIDR program before going to a bull,” Bohl said about his reproduction program.

In the next three to ve years, Bohl hopes to build a new freestall barn for breeding heifers. He feels this would enhance their reproduction program, allowing them to use more A.I. rather than resorting to a cleanup bull. He also would like to start genomic testing to use more sexed semen on the top cows and beef semen on the bottom portion of the herd.

Gustafson Dairy Heifers Gustafson farms in partnership with his dad, Tom, and brother, Riley.

They raise 1,700 dairy heifers on their farm, and have been custom raising since they sold their herd in 1993.

“We are looking to effectively and efciently raise an animal that will produce at the highest genetic potential they can at the dairies when they get back,” Gustafson said about the goal for their enterprise.

Cost for the custom raising is based per day for feed, labor and housing.

“Everything above that is based on what the dairies want,” Gustafson said.

Evergreen Acres The Schaefers raise all the heifers from their dairy, which milks 3,200 cows on ve sites.

Calves start in polydomes and are then moved in groups by age to other farm sites. The size of groups ranges from 15 animals while they are young to up to 200.

“Heifers are moved to the next pen based on what we have space for,” Megan said. “We wean about 50 calves every ve days. When that happens, everyone gets moved down the line.”

The rst farmsite is an old laying hen barn that has been converted to house heifers. The next farmsite has larger groups and is where the heifers are introduced to TMR. At 5 months, heifers are moved to a farm in Morgan, Minn. This was an old feedlot set up that was converted to house heifers. This is where the heifers are bred and will stay until about 100 days conrmed pregnant. Then they are moved to an open lot setting with sand hills until they are ready to go to the pre-fresh pen.

“We’re excited about being able to keep our heifers together at the same age. Keeping them together enables us to breed them at the same time,” Keith said.

The Schaefers start breeding at 11.5 months in order to freshen their animals early. Currently, Evergreen Acres is averaging 21.6 months at calving.

They tried to go as young as 20 months, but found milk production suffered.

“We push our calves in the earlier months to get the size there,” Keith said.

Each animal is genomic tested. Low-end animals are culled, kept for beef or bred to beef semen and sold as a springer.

All heifers are bred with sexed semen on their rst two services. If a heifer is not conrmed pregnant after four services, she is placed on the do not breed list.

Natural heats are used for breeding until 1 year of age. If there has been no sign of heat, a heifer is put on a double ovsynch program with a CIDR before being bred and pregnancy checked at 30 days.

A TMR of a grain mix, wet gluten and four pounds of chopped alfalfa hay is given to heifers starting at 400 pounds.

In the next three to ve years, the Schaefers hope to consolidate things on their dairy.

“We milk on a few different sites so we want to bring things back to a couple sites,” Keith said.

“We’re also looking at our land base and how we can keep using technology.”

Megan would like to consolidate their heifer sites.

“We’re hauling cattle all the time,” she said. “I also want a freestall barn for the heifers.”

Overall in their heifer raising program, the Schaefers are trying to keep up with their philosophy to start a heifer off right and keep her going that way all through her lactating years.

When heifers from their three farms arrive, they start in groups of 30. At 600 pounds, the groups contain 70 animals. At about 800 pounds, the heifers go into groups of 150.

“Once they’re in a group, they’re usually in that group all the way through the growing process.

There is not a lot of excess sorting,” Gustafson said.

Heifers are segregated by breed. From there, heifers are grouped by age partly because of the variability in size and weight of crossbred animals.

“We have to separate the crossbreds and Holsteins because they need different diets,” Gustafson said.

Moving full groups of heifers to the next pen is dictated by pregnancy checks, Gustafson said.

Most of the barns are monoslope sheds bedded with cornstalks, wheat or bean straw, and drive by feeding.

Once they reach breeding age, heifers are bred with sexed semen, with a goal to freshen between 22 and 23 months. They are not genomic tested. The goal is to have a heifer bred by 16 months. If she is not, each dairy will make a nal decision about the individual animal.

“Two of the dairies are expanding right now so they need the heifers,” Gustafson said, explaining the use of sexed semen.

Gustafson follows a prostaglandin protocol for breeding and ultrasounds heifers at 28-30 days in order to get them rebred if needed.

The Gustafsons feed four rations on the farm.

“The most exciting technology we have … (is) the TMR feed tracker. That’s been a lot of fun,” Gustafson said.

Class III price falls $1.44 below December 2017

The rst benchmark milk price of 2018 is not good news for dairy producers and, hopefully, not a Punxsutawney Phil type prediction of “six more weeks of winter.”

The Class III fell to $14.00 per hundredweight (cwt.), down $1.44 from December 2017 and $2.77 below January 2017, lowest Class III price since June 2016, but is 63 cents above California’s comparable 4b price. The Class III price equates to $1.20 per gallon, down from $1.33 in December and $1.44 a year ago.

Late Friday morning Class III futures portended a February price at $13.58; March, $13.61; and April at $13.81; with a peak at only $15.78 in October.

The January Class IV milk price is $13.13 per cwt., down 38 cents from December, $3.06 below a year ago, and the lowest Class IV since May 2016.

California’s comparable January 4b cheese milk price is $13.37, down 15 cents from December, $2.62 below a year ago, and the lowest 4b price since June 2016. The January 4a butter-powder price is $12.93, down 43 cents from December, $2.74 below a year ago, and the lowest 4a price since May 2016.

You’ll recall that preliminary USDA data reported December’s 50-State milk production at 18.0 billion pounds, up 1.1 percent from December 2016. USDA’s latest Dairy Products report shows where that milk went.

December cheese output totaled 1.09 billion pounds, up 3.0 percent from November and 2.6 percent above December 2016. Total cheese output for 2017 hit 12.48 billion pounds, up 2.6 percent from 2016.

California produced 217.4 million pounds of December’s cheese, up 3.0 percent from November and just 0.1 percent above a year ago. Wisconsin, at 288.7 million pounds, was up 3.9 percent from November and 2.6 percent above a year ago. Idaho produced 84.7 million pounds, up 10.2 percent from November and 3.7 percent above a year ago.

Minnesota was up 7.7 percent from November and 9.0 percent above a year ago. New York was down 1.9 percent from November but 8.3 percent above a year ago.

Italian cheese output totaled 466.6 million pounds, up 2.4 percent from November and 0.9 percent above a year ago, with YTD output at 5.38 billion pounds, up 1.7 percent. Mozzarella, at 363.4 million pounds, was up 1.4 percent, with YTD at 4.16 billion pounds, up 1.2 percent.

American type cheese production totaled 432.9 million pounds, up 7.5 percent from November and

2.9 percent above a year ago. YTD totaled 4.91 billion pounds, up 3.2 percent. Cheddar, the cheese traded at the CME, totaled 317.1 million pounds, up 1.1 percent from November and 3.2 percent above a year ago, with YTD at 3.56 billion pounds, up 4.1 percent.

U.S. churns produced 170.3 million pounds of butter, up 15.5 percent from November and 4.2 percent above a year ago. YTD butter totaled 1.84 billion pounds, up 0.2 percent.

Yogurt output amounted to 353.9 million pounds, down 1.5 percent from a year ago, with YTD at 4.4 billion pounds, down 1.4 percent.

Dry whey totaled 83.1 million pounds, up 6.1 percent, with YTD hitting 1.03 billion pounds, up 8.3 percent. Stocks were down 1.6 percent from November but a hefty 51.7 percent above those a year ago.

Nonfat dry milk totaled 163.3 million pounds, up 14.7 percent from November and 5.4 percent above a year ago, with YTD at 1.8 billion pounds, up 4.1 percent. The report also showed nonfat dry milk stocks at 330.4 million pounds, up 13.3 million pounds or 4.2 percent from November and a whopping 104.9 million pounds or 46.5 percent above those a year ago.

Skim milk powder production totaled 49.9 million pounds, up 19.1 percent from November but 8.8 percent below a year ago. YTD output is at 534.0 million pounds, down 4.5 percent.

Meanwhile; a drop in the U.S. All Milk price average, plus higher corn and soybean prices, served to pull the December milk feed price ratio sharply lower. The Agriculture Department’s Ag Prices report shows the December ratio at 2.38 down from 2.54 in November and 2.73 in December 2016.

The U.S. All-Milk price averaged $17.20 per cwt., down 90 cents from November and $1.70 below December 2016. California showed the bottom price, at $15.73 per cwt., down $1.22 from November and $1.82 below a year ago. Michigan and Arizona didn’t fare much better, at $16. Wisconsin averaged $17.80, down $1.20 from November and $1.90 below a year ago.

December corn averaged $3.23 per bushel, up 8 cents from November but 9 cents below December 2016. Soybeans averaged $9.30 per bushel, up 8 cents from November but 34 cents per bushel below a year ago. Alfalfa hay averaged $148 per ton, unchanged from November, but $21 per ton above a year ago.

The December cull price for beef and dairy combined averaged $62.00 per cwt., down $1.40 from November, after dropping $2.00 the previous month.

The January price received for milk cows averaged $1,520.00 per head, down $90 from October 2017 and $100.00 per head below January 2017. Wisconsin cows averaged $1470.00 per head, down $140 from October and $260 below January 2017. California averaged $1500 per head, down $100 from October and $100 below January 2016.

National Milk’s and Dairy Management Incorporated’s January Dairy Market Report states that the USDA estimates the U.S. all-milk price averaged $17.65 per cwt in 2017, $4.85 higher than the 2009 average but $6.35 below 2014. It was also the third year in a row to average less than $18 per cwt, rst time that’s happened since 2006 when feed costs began to rise, according to the report.

“Taking into account the effects of such costs, the current Margin Protection Program (MPP) margin calculation should average about $9.70 in 2017, which would be the second-highest annual MPP margin over the past 10 years,” the report said. “It would be $3.60 below the highest, during 2014, and $5.12 above the lowest, during 2009. Monthly milk prices and margins both improved fairly steadily since last April, but federal order prices took a sharp drop at the end of the year, presaging a likely more difcult year ahead in 2018,” the report warns.

Cash dairy prices saw little change the week of Jan. 29 as traders absorbed the Dairy Products report.

Block Cheddar closed Friday at $1.4625 per pound, down a penny on the week and 27 3/4-cents below a year ago. The barrels nished a half-cent higher at $1.3250, 38 1/4-cents below a year ago and 13 3/4-cents below the blocks. Three cars of block traded hands and 25 of barrel.

Dairy Market News reports that cheese production in the Midwest varies by plant but cheese sales are “generally meeting expectations.” Process cheesemakers, in particular, suggest that sales have increased from a very slow start in 2018. Pizza cheese suppliers also report a demand uptick. But, milk into cheese, for the most part, is discounted, with prices ranging $3 under to $1 over Class. It adds that “There is some positivity regarding market tones among contacts. Although the path to some steadiness has not been cogent, there is currently a bullish sentiment as prices are appealing to buyers who have, until recently, been very hesitant to purchase more than absolutely necessary.”

Western cheese makers continue to push milk through cheese vats. With ample milk supplies, cheese production is active and many facilities are running at or near capacity. Some Class II manufacturers have pulled a little more milk into their facilities, helping ease the pressure. Contacts report an increase in demand from both export and domestic markets, possibly due to lower prices. “Whether due to more favorable prices or the Super Bowl surge, manufacturers note an increase in buyer activity,” says DMN. “Inventories are still heavy but the uptick has drawn total stocks down slightly.”

Butter sales are seasonally quiet, according to DMN, but demand is “generally meeting seasonal expectations.” Butter makers suggest production activity is steady, as cream remains available from within and outside the Midwest and contacts suggest that the uptick in butter stocks in the latest Cold Storage report is “less concerning for butter than other commodities. As butter’s public perception has shown marked improvements in recent years, contacts suggest a need for increased supplies.” That said, others “question whether the butter market tones can remain resilient, as all other dairy commodities bear the brunt of low prices and/or instability.”

Western butter output is heavier due to “above needs supplies of cream.” Processors are selling some of their cream but supplies are so abundant they have to churn more butter and processing capacities seem to be limited in some areas. Butter inventories are also growing. Current demand is “alive but seems to not be enough to keep up with the speed of production.”

Cash Grade A nonfat dry milk closed the week at 72 1/4-cents per pound, up 1 1/4-cents but 21 3/4-cents below a year ago, with 21 cars sold on the week.

The EU Commission announced that, as expected, it has temporarily changed its public intervention program for skim milk powder (SMP).

FC Stone points out that the scheme ran from March to September, with a limit of 109,000 tons at a buy-in price of “1,698 per ton, moving to a tender process for additional volume. In 2015 and 2016, the scheme was extended a number of times and effectively remained open continuously with volume limits increased in order to cope with the high volumes being sold into the scheme. The scheme ultimately closed at the end of September 2017, with SMP stocks at 378 kilotons.”

“Under the revised system, the Commission will forego the automatic buying-in of SMP, instead setting the xed-price buy-in volume limit for 2018 at zero. The Intervention programme will still open on the 1st of March and function as a safety net with the Commission able to buy into the scheme via a tendering process affording them more discretion over the volumes bought into the scheme and the price paid for said product,” according to FC Stone, an action it says will likely prove to be bearish for powder prices in Europe.

U.S. dairy exports keep moving under the farmer-funded Cooperatives Working Together program (CWT). Export assistance was granted to 25 requests from member cooperatives this week. A reported 4.365 million pounds of cheese will move to customers in Asia, the Middle East and North Africa through April and raised 2018 CWT exports to 9.714 million pounds of American-type cheeses and 729,730 pounds of butter (82 percent milkfat) to 10 countries on three continents.

The 2018 International Dairy Foods Association Dairy Forum is history. I talked about it in the January 29 “Dairy Radio Now” broadcast with Jerry Dryer, analyst and editor of the Dairy and Food Market Analyst newsletter.

Dryer said he heard good news and bad at the conference but a series of presenters from inside and outside the dairy industry were very optimistic about the long term future for dairy, based on a continued growing middle class in the U.S. and world. When asked about reports, particularly out of Europe, that dairy is antiquated and will be replaced by plant based beverages, Dryer responded, “Not in our life time, if ever,” as “dairy is highly desirable on most people’s minds.”

“When a dog bites a man, that’s not news,” he said.

“When a man bites a dog, that’s news. Most everyone drinks milk. That’s not news. But, when people start drinking oat milk, that’s news and the media coverage you see and the interest that you hear about is greatly exaggerated because it’s news; it’s different.”

He admitted 2018 milk prices are bleak but he ran some possible bullish scenarios by some of the attendees who “looked at me like I was from another planet.” They remain bearish, at least the rst half of the year, he said, but he will soon issue his long range forecasts and says he “may be a little more bullish.”

In politics, the Agriculture Department drew praise from the National Milk Producers Federation

and the International Dairy Foods Association this week over a proposed rule returning low-fat avored milk in schools. A joint press release stated that, “In 2012, USDA eliminated low-fat avored milk as an option in the school meal and a la carte programs, which resulted in students consuming 288 million fewer half-pints of milk from 2012-2015.”

“Removing low-fat avored milk causes schools to fail the test of how best to provide optimal nutrition for students,” said Dr. Beth Briczinski, Vice President of Dairy Foods and Nutrition for NMPF. “Fortunately, USDA recognizes the need to be more exible in providing schools a range of milk options to enhance the dietary intake of the nine essential nutrients milk offers.”

Lastly, the Northeast Dairy Farmers Cooperative’s Bob Gray reports that the U.S. Appeals Court has granted a stay on the CERCLA/EPCRA Air Emissions Reporting Requirements and the Stay will remain in place until May 1, 2018.

EXETER, R.I. – For Edwin ‘Scooter’ and Cynthia LaPrise, plus a quartet of children, juggling full-time jobs, growing families and their dairy has become commonplace. The LaPrises celebrated 10 years of shipping milk Feb. 8.

Scooter and Cynthia purchased their 12-acre farm in Exeter, R.I., in 1990 with hopes to establish a beef operation. Other plans were in order, because in 2002 the family dairy was born.

“Our farm started as just three show calves,” Alexandra LaPrise said. “We consider it

the 4-H project gone wild.”

In 2008, the rst shipment of milk left EMMA Acres, so named for Scooter and Cynthia’s four children – Elizabeth, Matthew, Margaret and Alexandra. In addition to managing their dairy, all family members have full-time careers.

Edwin owns and operates his own trucking company, hauling timber; Cynthia is a full-time registered nurse; and Elizabeth, 27, works alongside her mom as a full-time nurse, as well as caring for her 6-month-old son, Henry, with her husband, Ben. Matthew, 25, and his wife, Tiana, have a 1-year-old daughter, Lillian, and he owns a fully mechanized logging company.

Alexandra, 24, has a daughter, Reagan, 3, and works full time as the managing director of the Rhode Island Dairy Farms Cooperative, known for selling Rhody Fresh products. She also helps with the reproductive program on the farm, including A.I. and sire selection.

The youngest, Margaret, 18, is the most active sibling

on the farm. She performs all nightly chores and is responsible for all calf protocols and vaccination treatments. Margaret is a full-time student at the University of Rhode Island, studying animal science.

“The farm is a family operation,” Alexandra said. …

One hired man helps during the day, cleaning barns, bedding stalls, watching for heats and performing tasks as needed.

“We make an effort to get family together on Sundays for dinner or as often as possible,” Alexandra said.

The herd averages 60 pounds of milk per cow per day and that milk is sold to Agri-Mark Cooperative, Cabot, V.T. After selling to Agri-Mark, the LaPrise family and four other local farmers buy a portion of the product back and sell it under the label of Rhody Fresh.

“Rhody Fresh is the state’s cooperative of local dairy farmers who are marketing and selling their own milk,” Alexandra said. “Rhody Fresh buys (milk) back as a packaged product from another dairy who processes the milk for us out of Connecticut. It is at that point where we resell to our customers.”

The farm receives $23 per cwt. for their milk thanks to their components.

Alexandra said the average in the state ranges from $18-$20 cwt.

The purpose of the herd is split: for both commercial milk production and showring caliber cattle.

Alexandra said there are approximately 10 dairies residing in the state, with two located nearby. She said the average herd size is 60 cows, and the largest herd in Rhode Island is no more than 150 cows.

Due to the lack of farms to service, there are no dairy distributors in Rhode Island.

“We deal mostly with Connecticut dealers,” Alexandra said. “We work with Haneld Dairy, which is a DeLaval dealer in Connecticut. … My father has a mechanic who is able to work on all the farm tractors and skid steers. As far as milking equipment, when it is broken Haneld does a good job getting out to help out.”

With so few dairies left in the state, dairying can pose a challenge.

“Either it is your neighbors becoming more removed from the farm to the prices of milk,” Alexandra said.

“It is becoming more challenging to run a small dairy farm. The idea of the fewer farms with more cows is becoming reality. It is sad to think the small farms aren’t needed. … Being in a small state is unique because although the communities are so close in distance, still not many people know what is going on in agriculture anymore.”

Despite the challenges facing the state and their dairy, the LaPrise family is optimistic about the future with hopes to diversify.

“We always bounce ideas around, but we would love to bring a value-added product like ice cream,” Alexandra said. “We would love to open up an on-farm stand or store to bring more people on the farm and see the realities and how animals are actually treated.

Eight decades of dairying Posts have seen many changes during their lifetime of dairy farming

CHANDLER, Minn. – For most people, a career that lasts 30 years merits a gold watch. A career that spans 40 years is rare and 50 years is almost unheard of.

Frank and Arlene Post have careers in dairying that span eight decades. During those years, the Posts have seen dairy farming technology evolve from milking cows by hand to milking cows with robots.

Their son and daughterin-law, Bill and Merri, now own and manage the dairy that was once theirs near Chandler, Minn.

As soon as he was able, Frank began to help with the milking on his parents’ dairy farm.

“Dad milked 15 cows by hand,” Frank said. “We separated the cream and sold it once a week in Chandler. … I had to milk cows every morning before walking to school and every night when I got back home. After eighth grade, I helped on the farm and did not continue to high school.”

Frank served in the Army from 1953-55, at the height of

the Korean Conict.

“I got back home and went down to the barn and resumed milking cows with Dad,” Frank said. “I was homesick or seasick until I got back home. I decided I would never leave the farm again. We milked by hand until 1957, when Dad nally bought a vacuum pump and Surge belly buckets.”

After graduating from high school, Arlene attended college and became a teacher. In 1963, Arlene was teaching in Sioux Falls when her roommate told her that she knew a certain young man she should meet.

“My roommate, Jennet Van Reulder, … knew Frank from when they were kids,” Arlene said. “Frank and I hit it off right away.”

Frank and Arlene were soon planning a wedding. In 1963, the couple along with Frank’s brother, Jim, made a deal to rent Frank’s parents’ farm and purchase their dairy herd and farming equipment.

The Posts named their farm Middleroad Acres, a nod to the fact that a township road bisects the farmstead.

Frank and Jim built the herd to about 30 head. When Jim married in 1972, the Posts needed to support two families.

We really thought that we had something,” Frank said.

That was the last time we ever bought cows.”

Frank and Arlene were blessed with four children.

Ben and his wife, Connie, dairy farm a mile west of Middleroad Acres on Corner Post Dairy.

Bill and his wife, Merri, are the current owners of Middleroad Acres and live on the original Post homestead, located a short distance from Frank and Arlene’s house.

Brent and his wife, Niki, live in Sioux Falls where Brent is in the South Dakota Air National Guard.

Polly and her husband, Dean Vander Wal, live near Bruce, S.D. Polly is a quality assurance manager at Agropur Cheese in Lake Norden, S.D. Frank and Jim farmed together until 1986, when Jim’s family moved to Ridgeview Dairy, situated four miles away.

“We divided the dairy herd and the machinery, but we continued to help each other with eld work,” Frank said.

Ben married Connie in 1992 and purchased a farm located one mile west of Middleroad Acres. An addition was added to the original horse barn to milk 48 cows.

Bill and Merri were married in 1991 and took over the operation of Middleroad Acres in 1995.

“We turned over half of the herd to each of the boys,” Frank said. “I quit dairying one day and from that day forward, the milk check was theirs and all of the new calves that were born were theirs. Arlene and I got the money whenever one of the original animals was sold. The boys didn’t have to buy a single cow.”

The machinery was equally divided between Ben and Bill. All pieces had a set fair market value. As they used it, they had to keep it maintained.

When they were able to buy the piece of machinery they paid the original set price.

“Doing things that way helped the boys get started. They didn’t have to borrow money to buy cows,” Arlene said. “It also helped us with our taxes.”

Frank and Arlene have added to Middleroad Acres’ land base over the years.

In 1967, Jim and Frank purchased their dad’s farm for $237/acre which was the going rate for this area at that time.

“We purchased an 80 east of us in 1973 for $150 an acre,” Frank said. “In

1990, we (Frank and Arlene) bought another 320 acres next to us for $500 an acre for the farmland and $200 an acre for the pasture. We live in a wonderful neighborhood. Our neighbors having no family members to take over actually wanted us to have their land, if we wanted it. We simply asked them how much they wanted for it and that’s what we paid.”

Arlene agreed.

“Our neighbors and the good Lord have helped us get to where we are,” Arlene said.

Middleroad Acres has come to be known for their Red Holstein genetics.

“About half of Bill and Merri’s cows are Red Holsteins and the rest are red carriers,” Frank said. “Dad started using A.I. in 1957. His rst red carrier used was MN Valley Breeders H100Greyview Burke Presto, which is when he got interested in red genetics. But we didn’t get our rst Red Holstein calf until the late 1960s.”

Neighbors started asking to buy bulls from their herd in the late ‘60s and the farm has been selling Red and White and red carrier breeding bulls ever since.

The more recent past has seen some changes at Middleroad Acres. About ve years ago, Bill and Merri decided to build a robotic milking facility across the road from Frank and Arlene’s house.

“That was a pretty big step,” Frank said. “… Bill couldn’t keep on doing things the way he was. He has had great help including his herdsman, Daryl Rylaarsdam, and other great former employees who have gone on to stay in the dairy industry. Bill was needing four surgeries to repair his body, the barn was needing a lot of upkeep and his two children would be leaving for college.

He either had to sell the cows or do something different. They still spend a lot of time with the cows, but now things are so much easier for them to manage.”

Frank and Arlene are 84 years old. They continue to help around the farm as much as possible. They also enjoy spending time with their 10 grandchildren.

After 54 years of marriage and eight decades of dairy farming, Frank and Arlene look back with few regrets.

Out of one dairy herd, two more were developed.

“It was a big challenge to keep everything together over all those years,” Arlene said. “But Frank and I didn’t go into dairy farming to get rich. Our main goal was to work with our family. We are very thankful that the Lord has allowed us to do that.”

Value of beef checkoff outlined at dairy conference Building global demand one objective

MADISON, Wis. – John Freitag wanted to make one point clear in his seminar.

“Dairy farmers are beef producers, too,” said the executive director of the Wisconsin Beef Council (WBC).

That was part of the message Freitag delivered Jan. 17 during his presentation, “Catching Up with the Beef Checkoff,” at the Dairy Business Association’s (DBA) Dairy Strong conference in Madison, Wis. In his review of what the council is and does, Freitag said besides milk, dairy farmers also produce beef. Their cull cows, bulls, bull calves and some replacement heifers nd their way into the food chain.

Freitag reminded his audience that the beef checkoff is funded by beef and dairy farmers. “[The money generated is] designed to increase domestic and international demand for beef,” Freitag said. “This can be done through promotion, research, and newproduct development, and a variety of other

marketing tools.”

Every time a dairy or beef animal is sold, $1 is earmarked for the beef checkoff.

The money is divided in half. Fifty cents goes to national efforts, and 50 cents goes to state efforts.

“For every dollar invested, $11.20 comes back to farmers,” Freitag said.

That’s by way of increased demand for beef.

“Ninety-five percent of the world’s population lives outside the United States. That’s a huge opportunity to market our superior product beyond our borders,” Freitag said.

He went on to say that Harvard University has calculated that for every dollar spent on promoting beef beyond U.S. borders, $48.39 came back to U.S. beef producers.

“Foreign countries consume beef products that would otherwise go to waste in the United States, such as tongue, liver and tripe,” Freitag said.

A portion of the beef checkoff money goes for consumer education.

“Telling the story of agriculture is extremely important in a world with so many inuences on the average consumer,” Freitag said.

He said the WBC is a partner on various “farm to fork” tours each year. “[Such tours] promote both the beef and dairy industries to inuential consumers such as medical professionals, dietitians, family and consumer science teachers, chefs, and culinary students,” Freitag said.

Turning to research that’s funded by the beef checkoff, Freitag said some of it explores the relationship between eating red or processed meat, and developing heart disease and cancer.

“Research programs give us unbiased and accurate information … to share with consumers across the country. Misleading and misinterpreted information is a threat to our industries. It’s our obligation to set the record straight, for the longevity of our livelihoods,” Freitag said.

On food safety, Freitag said the WBC works with the Professional Dairy Producers of Wisconsin (PDPW) in the “What Matters Initiative.” “[It is] the only comprehensive program of its type that delivers a veriable drug quality assurance program by dening the

roles and responsibilities of those using it.

The proper implementation of this program ensures food safety, as well as transparency and accountability for proper drug use on the farm,” Freitag said.

In 2016, the beef checkoff conducted a National Beef Quality Assurance Audit.

That was done to help make sure that beef is safe and wholesome for consumers, Freitag said.

The audit looked at fed steers and heifers, market cows, and market bulls.

Both dairy and beef animals were included in the audit.

The audit examined cattle, offal and carcasses at 18 commercial slaughterhouses – two located in Wisconsin and one in Minnesota.

Of the dairy cattle examined, 76 percent were rated in the category named, sound. That was up from 51.4 percent in 2007, and up from 58.8 percent in 1999, but down slightly, from 76.5 percent in 1994.

For dairy bulls, 76.9 percent of the animals examined were found to be sound.

That compares to 77.7 percent in 2007, 70.9 percent in 1999, and 76.3 percent in 1994.

The 2006 audit also found that 93.8 percent of the dairy cows examined were muscled too light, Freitag said. And, 35.3

percent of the dairy bulls were found to be too light in their muscling. The too light conclusion came from cattle with muscle score one and two out of a possible maximum of ve.

On the beef breeds, 34.7 percent of the animals looked at were deemed to have muscling that was too light. For beef breed bulls, 29.4 percent were too lightly muscled.

Just 9.3 percent of the dairy cows were found to be too thin. For dairy bulls, that percentage was 0.8.

The audit also looked for injection site lesions that lowered the quality of the carcasses. Fifteen percent of the dairy animals had such lesions in the cut of meat called the round, Freitag said. That

There is room for improvement by dairy farmers and beef farmers when it comes to making beef more desirable, Freitag said. These are his recommendations: Manage cull cows and bulls to increase their muscle condition before slaughter.

Cull animals before the defects become severe. Try to better understand the causes of liver abscesses. Take steps to get rid of carcass bruising. Reduce carcass defects so additional value can be gained. Emphasize education by way of the Dairy Farm and Beef Quality Assurance Programs.

Minnesota, Michigan farmers like robotic milkers ‘Dairy Strong’ panelists have cut labor costs with new technology

MADISON, Wis. – Is a robotic milking system right for your farm? A panel gave helpful insight for seminar attendees to decide the answer themselves on Jan. 17 during a seminar at the Dairy Business Association’s (DBA) Dairy Strong Conference in Madison, Wis. Panelists were Mark Berning, Green Waves Farm, St. Michael, Minn.; Tom Oesch, Swisslane Farm, Alto, Mich.; and Steve Bodart, Compeer Financial, Mankato, Minn.

Investing in eight Lely A4 robotic milkers has freed up labor at Green Waves Farm, said Mark Berning, who farms with his brother, Paul.

A typical day at the Berning family’s dairy nds two family members heading to the barn at 4:30 a.m. The rst chore is to check the robots’ computer to see if any cows need attention.

After that, it’s on to feeding newborn calves, getting cows bred and checking on any cows that are in the hospital pen.

Meanwhile, the robots are taking care of milking. Cows at Green Waves Farm average

2.9 visits a day to the robot milkers, Berning said.

Along with cutting the farm’s hired labor to two non-family people who clean up on evenings, the robots have provided other benets.

Milk production has risen by 18 pounds per cow per day, to 90 pounds, even with the elimination of the use of bovine somatotropin, Berning said.

In addition, the pregnancy rate has climbed while the cull rate has fallen. Berning estimated that the cull rate dropped from 33 percent to 17 percent. He attributed the improvements to the computer system providing cow information, and to people being freed from the chore of milking, giving them more time to devote to cow health.

Besides that, the somatic cell count (SCC) has fallen.

It’s down from 220,000 to approximately 100,000, Berning said.

Moving cows is now easier, too, thanks to the series of gates in the barn.

“One person can move any cow or a bunch of cows,” Berning said.

Breeding costs are down by 40 percent for every hundredweight of milk

Not all costs dropped.

Berning said the farm’s milking equipment maintenance costs climbed 10 cents per hundredweight. The cost of insurance rose, too, due to the valuable robots in the barn.

Cow foot care costs increased, too.

“You need those cows mobile,” Berning said, because they must walk to and from the robotic milkers.

The Bernings shifted to robotic milking partly by chance. Their automatic calf feeder broke down one

Christmas Eve. But the service technician had it up and running again by early afternoon.

“That made a big impression on us,” Berning said. “Down the road, it sold them (the dealer) many robots.

So service was a big key.”

At Swisslane Dairy Farms in Michigan, 500 cows are milked by eight Lely boxstyle robots, said Tom Oesch, one of the owners. The family also milks 1,500 cows in a double-16 parlor.

The dairy traces its roots to 1915, when Fredrick Oesch immigrated from Switzerland.

The family’s third and fourth generations – Fred, Jeff and Tom, and Annie, Tom and Matthew – own and operate

the farm that has 5,000 crop acres.

Overall, Swiss Lane employs 29 people full-time, with 17 of those being family members. Oesch said 33 family members live within two miles of the dairy.

Oesch provided numbers that show how cows in the milking parlor and those in the robot barn, built in 2011, are doing.

At the conventional dairy, the cows average 87.5 pounds of milk per day. On the robots, the number is a bit higher, at 92 pounds per cow per day.

ConƟnued from DAIRY STRONG | Page 22 Oesch said the butterfat test is slightly higher in the conventional barn. There, it’s 3.71 percent, compared to 3.64 percent in the robotic barn.

The protein test during 2017 in the conventional barn stood at 3.12 percent. That was the same as in the robotic barn.

Oesch said the somatic cell count averaged 139,000 during 2017 in the conventional barn. In the robotic barn, the SCC was a bit lower, at 134,000.

Cows in the robotic barn are culled less heavily.

Oesch said the culling rate there is 22 percent, while in the conventional barn it’s 33.2 percent.

But the death loss is higher – 10.1 percent – in the robot barn. In the conventional barn it’s 6.1 percent.

The Oesch family added robotic milkers to their farm in 2012. The brothers returned to the farm after a few years of off-farm employment.

Coming back gave the older generation a way to redeem the equity that was in the place, Oesch said.

At that time, the farm was 4,000 acres and had 1,300 cows.

“We knew we had to get bigger if we were going to feed our families and pay us what we wanted off the dairy,” Oesch said.

To do that, they boosted the land base and cow numbers by 25 percent.

Oesch, a self-described cow and people guy, said he argued vehemently to build a double-8 parlor instead of buying robotic milkers.

“Why would we throw everything we know out the window? Nobody in Michigan had ever milked cows with eight robots before,” he said about his reasoning.

But family members crunched the numbers and made projections. They looked at what the robots might be worth after ve years, and what kind of labor savings they might bring.

The move to robotic milkers did something very valuable besides milk the cows. It brought a unifying purpose to the family.

“We needed something to be on the same team about. We were all very dedicated to making our robotic decision work,” Oesch said.

Steve Bodart, a nancial consultant, said he challenges his clients to answer “what if” questions when they are deciding whether to try new technology.

A main question is, “What if it doesn’t work?’

Other questions are, “What if the cost is more than anticipated?” A third question he asks is, “What if the milk price falls?”

Bodart suggested that dairy farmers look for ways to lower their costs of producing milk no matter what milking system they use. And don’t buy robotic milkers only to reduce labor, he said.

“Robotics are not for everyone,” the lender said.

Siegenthaler is vice president of milk marketing and supply chain at Grande, where he has worked for 28 years. He is in his second term on the Wisconsin Cheese Makers Association Board of Directors and has been a member of DBA since the organization started.

He grew up on a dairy farm that remains in the family.

Siegenthaler replaces Jen Keuning who served the maximum three terms.

Crave, of Crave Brothers Farm in Waterloo, Wis., has been a dairy farmer for 37 years. He served as supervisor on the Portland Town Board for 20 years and helped the township implement its livestock siting law.

Fetzer of Fetzer Farms in Elmwood, Wis., has served on the Ag Partners Co-op Board of Directors for the past 11 years, including two as president. Fetzer is also commander of the local American Legion and is involved with local dairy promotion and county dairy breakfasts.

Ofcer positions were unchanged: Mike North, president; Crave, vice president; Lloyd Holterman, treasurer; and Amy Penterman, secretary.

Dairy Business Association honors Larson with advocacy award The state’s dairy community honored an Evansville farmer for her tireless work in promoting dairy farming in her community and across the state while also maintaining a vital role on her family’s farm.

Sandy Larson shed tears when her name was announced as the Dairy Business Association’s Advocate of the Year on Wednesday night at the Dairy Strong conference at the Monona Terrace.

As dairy production manager for Larson Acres, her family’s 2,400-cow farm in Rock County, Larson focuses on employee management and milk quality and also leads the dairy’s marketing and promotion efforts.

A big believer in community relations, Larson regularly opens up the dairy to the public and is involved in multiple community activities. She hosts onthe-farm picnics for neighbors, welcomes students and other groups for tours, hosts dairy breakfasts and most recently hosted a farm-to-table dinner.

Hagenow said Larson was an early adopter of using social media to communicate about the farm.

Larson is active in dairy promotion organizations, including the county Ag Business Council and the creation of an Ag Ambassador Program, the dairy breakfast committee and local dairy promotion council. Along with her three children, she is also involved in local and county 4-H programs. Larson serves as a dairy project leader and helped host the rst tting and showing clinic for dairy project members.

Perdue names appointees to the Wisconsin USDA Farm Service Agency State Committee U. S. Secretary of Agriculture Sonny Perdue recently announced the individuals who will serve on the Wisconsin USDA Farm Service Agency (FSA) state committee. The state committee is responsible for the oversight of farm programs and county committee operations, resolving appeals from the agriculture community, and helping to keep producers informed about FSA programs.

Each state committee has ve members, one chairperson and four members. The individuals appointed to serve on this committee include: Committee Chair Lisa Condon, Horicon; Thomas Gillis, River Falls; David Heideman, Clintonville; Anthony Kurtz, Wonewoc; Tom McClellan, Delavan.

The Farm Service Agency serves farmers, ranchers and agricultural partners through the delivery of effective, efcient agricultural programs. The agency offers farmers a strong safety net through the administration of farm commodity and disaster programs. FSA continues to conserve natural resources and also provides credit to agricultural producers who are unable to receive private, commercial credit, including special emphasis on beginning, underserved and women farmers and ranchers.

1/4 cup powdered sugar Make and bake cake mix as directed on box in a 9- by 13-inch pan. In a small saucepan place our and milk.

Mix well and boil until thick. Stir to keep from sticking and cool. Set aside.

Cream sugar with Crisco and butter.

Beat until light and uffy. Add salt, vanilla and cooled milk/our mixture.

Beat this until light. Add 1/4 cup powdered sugar. Split baked cake into two layers. Amy suggests using unavored dental oss to slice cake cleanly. Spread lling between layers. Let set two days before using.

I made a quick trip down to Illinois to visit my family. While I was there, I asked my sisters for their favorite recipes. Nancy has been baking a number of different quick breads and this one has been her recent go to. It tastes great and even might be considered healthy.

Amy has a growing family of teenagers on the run with sports. She needs quick desserts to feed a crowd because she never knows who’ll be coming home with the kids. Amy shared a tip to help with slicing the cake in half. Use unavored dental oss. Works much better than using a long knife. I can’t wait to get home to Minnesota to whip up a few of these treats for Valentine’s Day and my sweetie.

Lemon apricot tea bread by Nancy Dowell 1 1/4 cup milk 4 bags English tea 1 cup our 3/4 cup whole-wheat our 3/4 cup plus 2 Tbsp. sugar 2 tsp. baking powder 1/4 tsp. salt 1 egg, beaten 1/4 cup canola oil 1 Tbsp. lemon juice 2 tsp. lemon peel 1/2 cup dried apricots, chopped Pre-heat oven to 350 degrees.

Grease loaf pan. Heat milk over medium heat until hot but not boiling; remove from heat. Add tea bags. Cover and let steep 6-7 minutes. Remove bags, squeeze and discard tea bags.

Cool. Stir together ours, 3/4 cup sugar, baking powder and salt. Combine egg, oil, lemon juice and 1 cup cooled milk (mixture will curdle slightly). Add to

Twinkie cake by Amy Thompson 1 box yellow cake mix 5 Tbsp. our 1 cup milk 1 cup sugar 1/2 cup Crisco 1/2 cup butter 1/2 tsp. salt 1 tsp. vanilla

Milk chocolate bar cake by Wendy Huston 1 pkg. milk chocolate cake mix 1 pkg. cream cheese, softened 1 cup powdered sugar 1/2 cup sugar 10 (1.5 oz) milk chocolate candy bars, divided 8 ounces heavy cream whipped, or frozen whipped topping Prepare cake batter according to package directions. Pour into three greased and oured 8-inch round cake pans. Bake at 325 degrees for 20 minutes. Cool in pans for 10 minutes. Beat cream cheese, powdered sugar and granulated sugar at medium speed until mixture is creamy. Chop eight candy bars. Fold cream cheese mixture and chopped candy bars into whipped cream. Spread icing between layers and on top and sides of cake. Chop remaining two candy bars. Sprinkle over top of cake to garnish.

Caramel apple tart by Ivy Bake Shoppe Crust: 1 1/2 cups our 1 1/2 Tbsp. sugar 1/3 cup grated Parmesan Cheese 1/4 tsp. cayenne pepper 1/4 tsp. salt 1 stick cold butter 3 Tbsp. ice water 3 Tbsp. breadcrumbs Mix our, sugar, cheese, cayenne pepper and salt together. Cut in butter until mixture is coarse crumbs, then add cold water. Don’t overmix. Mixture will hold together when pressed between your ngers. Pour into a wellgreased 9-inch spring form pan. Press mixture into bottom and up the sides of the pan. Sprinkle breadcrumbs over the crust.

Filling: 5 Granny Smith apples, peeled and sliced 1 cup sugar 3 Tbsp. our 2 tsp. cinnamon Gently combine all ingredients together and pour into crust.

Topping: 3/4 cup sugar 1/2 cup our 1/4 cup cold butter 1 tsp. vanilla extract For the topping, combine all the ingredients and then sprinkle over the apple lling. Bake at 350 degrees for 6070 minutes until golden brown on top.

Drizzle with warm butterscotch caramel sauce (Mrs. Richardson’s sauce is perfect).

Taco dip 1 package (8 ounces) cream cheese, softened 1 cup (8 ounces) sour cream 1 carton (8 ounces) French onion dip 1 package taco seasoning

4 cups shredded lettuce 2 cups (8 ounces) shredded cheddar cheese 11/2 cups chopped tomatoes Tortilla chips

Prep time: 10 minutes. In a small bowl, beat the cream cheese, sour cream, onion dip and taco seasoning until blended. Spread onto a 12-inch round serving platter. Top with lettuce, cheese and tomatoes. Serve with tortilla chips.

Yield: 10-12 servings.

Liʼl cheddar meat loaves 1 egg 3/4 cup milk 1 cup (4 ounces) shredded cheddar cheese 1/2 cup quick-cooking oats 1/2 cup chopped onion

1/2 tsp. salt 1 pound ground beef 2/3 cup ketchup 1/2 cup packed brown sugar 11/2 tsp. prepared mustard

In a large bowl, whisk the egg and milk. Stir in the cheese, oats, onion and salt. Crumble beef over mixture and mix well. Shape into eight loaves; place in a greased 13x9-inch baking dish. In a small bowl, combine the ketchup, brown sugar and mustard; spoon over loaves. Bake uncovered at 350 degrees for 25-30 minutes or until no pink remains and a meat thermometer reads 160 degrees. Yield: 8 servings.

Chocolate chip cookie delight Prep: 35 minutes + chilling 1 tube (16 1/2 ounces) refrigerated chocolate chip cookie dough 1 package (8 ounces) cream cheese, softened 1 cup confectioners’ sugar 1 carton (12 ounces) frozen whipped topping, thawed, divided

3 cups cold milk 1 package (3.9 ounces) instant chocolate pudding mix 1 package (3.4 ounces) instant vanilla pudding mix Chopped nuts and chocolate curls (optional)

Let cookie dough stand at room temperature for 5-10 minutes to soften. Press into an non-greased 13x9-inch baking pan. Bake at 350 degrees for 1416 minutes or until golden brown. Cool on a wire rack. In a large bowl, beat cream cheese and confectioners’ sugar until smooth. Fold in 1 3/4 cups whipped topping. Spread over crust.

In a large bowl, whisk milk and pudding mixes for 2 minutes; let stand for 2 minutes or until soft-set. Spread over the cream cheese layer. Top with remaining whipped topping. Sprinkle with nuts and chocolate curls if desired. Cover and refrigerate for 8 hours or overnight until firm. Yield: 15 servings.

Boil pasta just to tender. Drain. Melt butter, cheese and milk in microwave.

Add cream corn, whole corn and pasta to melted cheese and bake for 20 minutes at 325 degrees F. Do not overbake.

Butternut squash bake 1/3 cup butter 3/4 cup sugar 2 eggs 1 5-ounce can of evaporated milk 1 tsp. vanilla extract 2 cups mashed cooked butternut squash

Topping: 1/2 cup crisp rice cereal 1/4 cup packed brown sugar 1/4 cup chopped pecans 2 Tbsp. butter, melted

In a mixing bowl, cream butter and sugar. Beat in eggs, milk and vanilla.

Stir in squash (mixture will be thin). Pour into a greased casserole pan. Bake uncovered at 350 degrees F for 45 minutes or until almost set. Combine topping ingredients; sprinkle over casserole. Return to the oven for 5-10 minutes or until bubbly. Yields 4-6 servings. Double recipe for Thanksgiving meal.

Bake at 350 degrees F for 25 minutes or until brownies test done. Sprinkle marshmallows over brownies and return to oven just to make soft and fluffy. Or cool, and then spread marshmallow crème over cooled brownies. Melt peanut butter and chocolate chips in microwave (careful not to scorch – do a minute at a time). Stir until smooth and let cool slightly. Stir in the cereal. Spread over marshmallow layer. Chill before cutting. Store in refrigerator.
