Enough goats to go around Springers milk caprines with rotary parlor

HENNING, Minn. – When Stephen Springer was young, he knew he wanted to milk goats when he grew up. Today, his dream has come true and he milks 500 goats with his family in a rotary parlor on their farm, Cornerstone Farms, near Henning, Minn.

“I had six milking goats when I was a kid,” Stephen said. “I milked them by hand before and after school.”

He soon owned too many nanny goats and had to decide to sell or build a facility so he could ship milk.

He could not afford to build a new facility at the time and ended up selling his herd in 2004.

“I didn’t want to be milking all those goats by hand,” Stephen said. “The dream was still there but it was fading.”

In 2008, Stephen saw an article in Dairy Star about Jim Harter, who installed his own goat rotary parlor. Stephen decided that if he was going to get back into milking goats, that was the way to do it.

After Stephen met Brittany in 2009, they began to think about the future. They had their rst child in 2011 while he was working in the oil elds.

“At that point there was no plans of dairying in sight,” Stephen said. “I didn’t like working out there and hated being gone from the family.”

By 2012 their oldest, Savhannah, had started noticing Dad being away for long periods of time.

“I suggested that we look into milking goats,” Brittany said. “I didn’t want to milk cows, but I wanted him to be able to be home.”

Stephen was excited that his childhood dream might be coming true. After consulting with the bank, they took the cash they had and began dirt work for a new barn. They ran the power and water to the area and had the poles for the shed installed when the bank became concerned in 2013.

“They didn’t want to do it unless we had an FSA guaranteed loan,” Stephen said. “And, the interest on that wasn’t cheap, and I didn’t want to deal with all the regulations so we pulled the plug on it. Everything sat here for three years until we actually were productive in the facility.”

In February 2017, the Springers were determined to nish the project they had started.

“I told [the bank] if they weren’t on board we were going to go to a different bank, so we did,” Stephen said. “We talked to another bank that was in the process of buying out a different bank who had

Petersons open Brickeld Brewing in Grantsburg

GRANTSBURG, Wis. – Growing 2,000 acres of quality crops to make feed for quality milk production is a no-brainer for the Peterson family of Grantsburg, Wis. It is also a requirement for brewing premium beers.

Ben and Nicki Peterson, who milk 900 cows at Four Cubs Farm with Ben’s parents, Gary and Cris, opened Brickeld Brewing in their hometown this September with a true eld-toavor experience at the heart of their new endeavor.

With beers such as the Milkshake, a New England hazy IPA brewed with milk sugar; the Burnett Alt, a German brown ale; the Farmer’s Daughter Blonde, and the Bricklayer pale ale, Brickeld Brewing has something to offer for every palate.

“We have eight different beers on tap with capacity in our tap line for 12,” Nicki said. “We will have three or four house beers that will always be on tap and then rotate out seasonal beers so that we are constantly providing something new. Right now, we’ve been releasing one new beer a week and people have really enjoyed coming in and trying the Turn to BRICKFIELD | Page 5

Nicki said they wanted to breathe new life into their city’s downtown by adding a new business that would draw a lot of trafc from locals and tourists alike.

“We wanted to start a business that would inspire economic development in downtown Grantsburg,” Nicki said. “The business needed to be one that people would actually venture off a busy highway on their way to cabin country to visit. Breweries are often found in old industrial or underdeveloped neighborhoods, and studies show that they help spur growth in their neighborhoods.”

The Petersons will begin growing their own grains and hops for their beers in 2019, and are currently feeding the brewers’ grains to the cows – a practice they will continue in the future.

“Right now, we are feeding the spent grains to our cows at Four Cubs Farm,” Nicki said. “We want to create a true grain to glass experience. We planned on doing the grains this past year but with the [November 2017] parlor re at our farm that had to take a back seat in planning. Next year, we will begin growing barley, hops and other grains to use in our specialty beers.”

The Petersons purchased the building for the future Brickeld Brewing, which was a former creamery, in September 2017 with the remodel

beginning a month after their milking parlor burned down.

Between getting an old building up to code, laying out plans for their new farm-centered enterprise, rebuilding their freestall barn and milkhouse, and installing 16 milking robots after the parlor re, the Petersons had their hands full.

“The remodel began in December 2017 and it became a much bigger project than we anticipated,” Nicki said. “We ended up taking out 350,000 pounds of concrete, installed in-oor heating and new plumbing and new concrete, redid all of the electrical, and all of the elements it takes to bring an old building up to code. Over the summer we worked with our local landscaper to build a huge patio overlooking Memory Lake. We also wanted to incorporate a lot of handcrafted items so we worked with two of our farm employees who are very skilled in metal working and welding to create our bar top, our tap lines, all of the table bases, our picnic tables and railings.”

However, when Brickeld Brewing opened to the public in September 2018, the Petersons said it turned out better than they had dreamed with the support of their family and community behind them.

“It turned about better than we could have ever hoped for,” Nicki said.

“The community has been extremely supportive and excited for this venture.

“The support pushed us through the hard and long days,” Nicki said. “And, when we opened it was very exciting to see people show up and continue to come back every week for a tasty beer.”

Once the Springers had the nancing they began to search for a herd.

“The market was really high at that time,” Stephen said. “I had been looking for goats, and there was nothing available.”

Eventually he found a herd from another family getting out of dairying.

They purchased 200 milking goats and doelings and were milking 220 goats by August 2017 in the rotary parlor, which was built by Harter.

The parlor holds 24 goats, but with the lag time of goats getting on and off, they milk 18 at a time.

This summer they added onto the barn to have room to grow their herd.

About that same time, they bought an-

other herd and hired an employee.

“We weren’t planning to ll the barn with another herd,” Brittany said.

“We were planning to grow into it, so it was one of those things where you dig a ditch and pray for rain.”

Stephen agreed.

“We did a lot of digging and a lot of praying,” Stephen said. “There’s a lot of faith in this. There were a lot of things that happened that we were just praying it would all work out.”

The barn with the addition is now 80- by 240-feet and can t 750 goats.

The Springers are proud of their lifestyle and glad they can raise their children on the farm. Stephen and Brittany have four kids with one on the way: Savhannah, 7, Gracie, 5, Peter, 3, Paisley, 2, and the baby is due in January 2019.

I have strong family values” Brittany said. “In my opinion, farming is the best way to raise a family.”

The Springers also homeschool their children, so they can spend their days together.

“Savhannah is our vet,” Stephen said. “If we have a baby goat that’s not coming out or is stuck, she pulls them for us. Gracie also helps out by feeding the babies.”

As far as future plans, the Springers are hoping the children can become more involved, and they can continue to grow their value-added businesses on the farm.

“By April we will have 650 milking goats,” Stephen said. “They were part of the herd we bought earlier this year.

They just aren’t milking quite yet.”

The Springers also sell grass-fed beef and organically raised pork, chicken and eggs.

“We put up a high-tunnel [greenhouse] last year, so I run a vegetable garden in the summertime,” Brittany said. “We go to two farmers markets a week.”

It’s all part of how the Springer family has made Stephen’s childhood dream come true.

Minnesota water quality program nears 450,000 acres Minnesota farmers and landowners have implemented conservation measures on hundreds of thousands of acres of farmland since 2014. Recently compiled statistics show the impact the Minnesota Agricultural Water Quality Certication Program (MAWQCP) has had on the state’s water quality protection efforts.

The MAWQCP was initiated through a memorandum of understanding (MOU) signed in January 2012, by Governor Mark Dayton, U.S. Agriculture Secretary Tom Vilsack and EPA Administrator Lisa Jackson. Since the build-out of the program in 2014, the Ag Water Quality Certication Program has: – Enrolled nearly 450,000 acres; – Included 680 producers; – Added more than 1,300 new conservation practices; – Kept over 48.1 million pounds of sediment out of Minnesota rivers; – Saved 122 million pounds of soil and 28,291 pounds of phosphorous on farms; and, – Reduced nitrogen losses by up to 49 percent.

“This is excellent news. I want to thank the 680 Minnesota farmers and landowners who have voluntarily committed to improving the quality of water that all Minnesotans drink,” said Governor Mark Dayton. “I also thank Commissioner Dave Frederickson, and the many talented professionals at the Minnesota Department of Agriculture, for their outstanding leadership on this initiative. This program’s positive impacts will endure far beyond this current Administration, and signicantly improve our state’s water quality for generations to come.”

The MAWQCP was developed to recognize and inspire conservation efforts and

connect farmers with resources to continue enhancing their water-quality practices. The voluntary program gives certied farmers 10 years of compliance with new water quality laws and regulations. It is an award winning public-private partnership that now includes companies like Land O’Lakes, Hormel Foods, and Central Farm Service Cooperative.

“We all need to work together to help protect Minnesota’s ground and surface water,” said Minnesota Agriculture Commissioner Dave Frederickson. “The Minnesota Ag Water Quality Certication Program, along with our partners, are helping family farms ensure a legacy of sustainability that will benet generations to come.”

According to a recent survey of 250 certied producers, nearly 63 percent say they participate in the Ag Water Quality Certied Program to demonstrate their commitment to water stewardship, while 99 percent say they are likely to recommend the program to others. Survey participants also say the use of the MAQWCP as a marketing opportunity is one of the top four reasons they participated in the program.

Midwest cheese production slows

A higher U.S. All Milk price average and some lower feed prices pushed the October milk feed price ratio higher for the third month in a row and the highest level since January 2018, but farm margins have since fallen. The Agriculture Department’s latest Ag Prices report shows the October ratio at 2.20, up from 2.10 in September but down from 2.47 in October 2017.

The U.S. All-Milk price averaged $17.40 per hundredweight (cwt.), up 70 cents from September but 70 cents below October 2017. New Mexico again had the low at $15.80, followed by Michigan at $16.50. California, at $16.46, was up 49 cents from September; and Wisconsin was at $17.60, up 20 cents.

The national average corn price averaged $3.41 per bushel, up 2 cents from September and 15 cents per bushel above October 2017. Soybeans averaged $8.58 per bushel, down 19 cents from September and 60 cents per bushel below a year ago. Alfalfa hay averaged $178 per ton, down $2 from September but $25 per ton above a year ago.

The milk-over-feed margin was up 70 cents from September, at $8.96 per cwt., based on the Margin Protection Program calculation, highest margin of the year but still $1.17 below a year ago.

Looking at the cow side of the ledger; the October cull price for beef and dairy combined averaged $57.80 per cwt., down $3 from September, $7.60 below October 2017 and $13.80 below the 2011 base average of $71.60 per cwt.

The Agriculture Department’s latest Crop Progress report shows 94 percent of US corn is now harvested as of the week ending November 25, up from 90 percent the previous week, unchanged from a year ago, and compares to 96 percent for the ve-year average.

Soybeans are at 94 percent harvested, up from 91 percent the previous week but compares to 99 percent a year ago and 98 percent in the ve year average.

Cotton is at 70 percent harvested, up from 59 percent the previous week and compares to 78 percent a year ago, and 77 percent for the ve year average.

CMC cash cheese prices ended November strengthened but still in the cellar. Block Cheddar, after dropping 10 3/4-cents Thanksgiving week, nished the week after and the month at $1.36 per pound, up 1 1/2-cents on the week but 9 1/2-cents below its November 1 level and 20 1/4-cents below a year ago.

The barrels closed at $1.3150, up 7 1/2-cents on the week, after plunging 12 cents the previous week, but 6 cents lower on the month, 22 cents below a year

ago, and 4 1/2-cents below the blocks. There were 7 cars of block sold on the week, 71 on the month, plus 8 cars of barrel sold on the week; 44 on the month.

Midwest cheese production has slowed, reports Dairy Market News, and some plants are shifting away from barrel production to other varieties, such as curds, or selling milk into bottling. Shredded cheese demand is reportedly strong. Other orders are average to slow according to a growing number of contacts.

Western cheese prices are low and overall U.S. cheese prices are lower than that of the European Union. Western processors are seeing more demand from the export market, particularly from Mexico.

However, the general market undertone seems mixed as some market players say they have been seeing more push back on cheese demand this week. Cheese output remains active as milk is plentiful. Cheese is abundant in the West.

October Cold Storage data was a bit bullish for butter but that didn’t do much for the CME price. It closed the week and the month at $2.2425 per pound, down 3 3/4-cents on the week and 5 3/4-cents lower on the month, but is 2 3/4-cents above a year ago when it fell 14 cents. 7 cars sold on the week; 59 on the month.

Butter markets typically see a signicant decline this time of year, warned DMN. The difference of the weekly average CME butter market price, between weeks 48 and 52, from 2013 to 2017, was a decrease of 24.15 cents. Contacts are concerned about the potentiality of a large drop-off this year. Cream is becoming more available for butter in the region, although some suggest the momentum is slow to build. Butter inventories are balanced to declining says DMN. Western contacts say retail sales have been strong and print orders are coming in for the nal holiday push. Butter inventories are seasonally lower but butter makers know they will have the opportunity to rebuild stocks after the holidays.

Grade A nonfat dry milk saw a November 30 close at 90 1/2-cents per pound, up three-quarters on the week, up 1 1/4-cents on the month, and 18 1/2-cents above a year ago. 17 cars exchanged hands on the week and 69 for the month.

Dry whey closed at 43 1/2-cents per pound, up a penny on the week but 1 1/4-cents lower on the month, with 11 cars selling on the week and 86 for the month.

Dairy margins weakened further through the rst half of November as lower milk prices more than offset a slight decline in projected feed costs, according to the latest Margin Watch (MW) from Chicago-

based Commodity & Ingredient Hedging LLC. The MW stated “Nearby dairy margins in both spot fourth quarter and rst quarter 2019 are now negative with deferred margins in second and third quarters only slightly positive and above average from a historical perspective.”

“Milk prices continue to suffer from insufcient demand being able to absorb increased production,” the MW warned. “USDA reported October Milk Production of 17.9 billion pounds, up 0.8 percent from last year despite increased cow slaughter as the remaining cow herd becomes more efcient. USDA reported the October dairy herd at 9.365 million head, down 2,000 from September and 30,000 below last year. The Midwest continues to struggle with milking economics where production shrank last month, while production increases in Western states more than offset those losses.”

“USDA also released the November WASDE report which provided shocking revisions to the world balance sheet. U.S. corn production declined 152 million bushels from October due to a reduced yield forecast, with ending stocks down 77 million bushels from last month as reduced exports and feed demand offset some of the production decline. World ending stocks however increased a sharp 149 million tons from October as revisions for China were made back to the 2007-08 marketing year, which raised the country’s corn production by an unprecedented 266 million tons. While the changes are not expected to factor into world trade, the tone of the report was decidedly bearish for the corn market,” the MW concluded.

Penn State’s November Dairy Outlook examined the state’s dairy industry and reported; “Based on our sample of nearly 100 annual actual cash ow plan analyses, more than 50 percent of dairy farmers reported cash surpluses in 2013 (i.e., gross milk prices above their break even cost). In 2014, while the production costs were reported to be higher than 2013, the increase in gross milk prices compensated for the increase in the production costs and more than 75 percent of dairy farmers in our sample reported gross benets.”

“However, the picture reversed in 2016 where the gross milk prices were below their average levels in 2014 and 2015 in such a way that producers could not benet from lower costs of production. More than 75 percent of dairy farmers in our sample reported cash losses. In 2016, the increase in the costs of production, accompanied with at gross milk prices made a dire situation even worse. Almost all of the dairy producers in our sample reported losses in 2016. While the situation got slightly better in 2017 due to a small increases in the gross milk price and lower production costs, more than 50 percent of dairy farmers in our sample reported cash losses,” according to the Outlook.

University of Wisconsin emeritus professor Dr. Robert Cropp and Dr. Mark Stephenson state in their latest podcast that “We’re range-bound. Dairy markets are prepared to move up a bit and then retreat from those gains in the absence of any strong evidence that milk supplies are tightening or demand is picking up.”

The fundamentals wouldn’t seem to dictate where cheese prices are today, Stephenson said. They cited abundant cheese output, mixed reports on demand, and tariff affected export losses as the factors impacting prices.

They also pointed to disappointing global prices as evidenced in the past seven Global Dairy Trade auctions and stated that weather will be a big factor ahead. New Zealand milk output looks to be very Turn to MIELKE | Page 11

Cropp believes Class III futures prices are “too soft.” He’s a little more optimistic but doesn’t see “a great rebound in milk prices where farmers like to see them,” but should mirror those in 2017 “even though the futures aren’t there yet.”

HighGround Dairy’s director of market intelligence, Lucas Fuess, stated in the December 3 Dairy Radio Now broadcast that the fundamentals look pretty bearish after the holiday season and into 2019. A look at Class III futures underscores that. Prices are below $16 per cwt. through the rst half of 2019 but Fuess says a continued drop in cow numbers could change that.

The last Milk Production report showed numbers continue to tick lower and are well below a year ago and, if that continues and milk output slows to levels lower than where they were in 2018, that could indicate a rebound in the making but “there’s plenty of product to work through before that happens,” he said.

When asked if the tariff and trade wars are responsible for the depressed prices, Fuess said they certainly contribute to it as it remains difcult to get product into China and, even with the new USMCA agreement, Mexico still has tariffs on some U.S. dairy products, he concluded.

Dairy producers must call on their elected representatives to respond to the nancial crisis on U.S. dairy farms, according to Arden Tewksbury, manager of the Progressive Agriculture Organization. Tewksbury charged that “For the last four years, United States dairy farmers have been underpaid nearly 11 billion dollars per year” and he called for three specic actions.

First, lawmakers need to immediately implement a $20 per hundredweight oor price under milk used to manufacture dairy products. Second; Agriculture committees need to hold hearings for dairy farmers to testify “how bad things are, and develop a new milk pricing formula which includes the dairy farmer’s cost of production.” Thirdly, he called for an investigation “to determine if whey and milk protein concentrate products are causing an unnecessary surplus of milk.”

“We’re losing thousands of dairy farmers each year, and this cannot continue,” he writes. “Many other dairy farmers are on the verge of going out of business. Demand Congressmen and Senators take immediate action,” he concludes.

The loss of dairy operations will impact several state economies, according to 10 new videos created by a coalition of dairy organizations and posted on the U.S. Dairy export Council website. The posting talks of dairy’s “ripple effect” to related industries like retailing and manufacturing and “the numbers are eyeopening.”

The dairy industry supports more than 390,000 jobs and pumps $98 billion into the California economy alone, the video states. Dairy in Wisconsin creates 215,128 jobs and $62 billion, plus 203,254 jobs and $39.5 billion in Texas. Nationally, dairy supports 2.9 million American jobs, according to the videos.

The data comes from “Dairy Delivers”, the International Dairy Foods Association’s economic impact tool, as well as quantitative analysis by the U.S. Dairy Export Council and National Milk. Meanwhile; the International Dairy Foods Association (IDFA), National Milk (NMPF) and the U.S. Dairy Export Council (USDEC) joined their global counterparts urged the G20 ministers who met this week in Buenos Aires to “prioritize maintaining, reforming and reinvigorating the World Trade Organization (WTO), which is the multilateral rules-based trading system.”

The groups called on the ministers to “reject trade distorting actions, such as imposing unscientic, overly burdensome or trade-distorting nontariff regulations; unilaterally raising tariffs in ways that are not WTO-compliant; or providing WTO illegal export subsidies.” They charged that such actions “undermine the functioning of value chains and lead to trade diversion, more volatile commodity prices and a less efcient allocation of resources with higher costs.”

The signing of the USMCA was praised by NMPF, USDEC, and IDFA, although the processor organization called the signing “a hollow victory unless the Section 232 tariffs on steel and aluminum imports are lifted.”

Lots of eyes and ears were focused on the G20 meeting. President Trump was also scheduled to meet with China’s President Jinping and, hopefully the two will come to agreement on trade spats that have hurt both countries.

Lastly, the 2018 U.S. Farm Bill is making “signicant progress,” according to Bob Gray, editor of the Northeast Dairy Farmer Cooperative’s newsletter. Gray reported that House and Senate Agriculture Committee negotiators had conference calls and meetings even during the Congressional recess in October in order to “keep the ball rolling.” Gray says the Bill’s Dairy Title promises to be “a good nal product overall.”

CME Group cash cheese trading is pointing to the possibility of December Class III settling with a $13 in front of it, while Class III futures are anticipating a disappointing recovery into the low 15’s by the end of the first quarter of 2019. In a nutshell what prices are saying is more pain is needed to force additional production contraction. From what we are hearing market forces are working, but at a much slower pace than most producers and bankers would like to see.

Recently released EU milk production data in the top three regions (Germany, UK, and France) reported a decline of 1.8% below prior year. This is being driven by market forces as EU producer margins have declined by over $2/cwt since the end of March. Although price supportive, NZ milk production is running at 5.8% over prior year, and U.S. milk production remains stubbornly strong offsetting the EU situation.

For the moment milk markets remain focused on supply problems, but world financial stability concerns could make a bad situation worse if demand softens further. Remember 2009? This writer isn’t forecasting

another 2009 type of market, but there are early signs of a similar type of event playing out such as higher interest rates, strengthening dollar, distorted demand, and a slowing world economy. The only thing missing is an event to trigger major financial instability.

Soybean prices are finding short term support from expectations of a possible resolution of U.S./China trade issues. World demand has done a good job of adjusting to this situation. This may leave those expecting a significant positive reaction to grain, milk, hog, and cattle prices disappointed if resolved. Initial market value adjustments to the tariffs were likely much more extreme than what the realignment process may reflect if the tariffs are removed. Don’t expect significant moves in affected markets if tariffs are removed. If wrong on this assumption just be thankful!

DEARING, Ga. – Reaching milestones has become somewhat of a tradition for Mark Rodgers of Hillcrest Farms in Dearing, Ga. From being the rst dairy herd in the Deep South to break a daily average of 100 pounds of milk per cow to being the rst dairy in the same area to reach a 31,000-pound rolling herd average, Hillcrest Farms has the mark of success.

During 2019, Hillcrest Farms will add another rst, becoming Georgia’s inaugural

dairy farm with a robotic milking system. Also, Hillcrest Farms has plans to launch their farm into the agritourism world with the addition of onfarm tours and events.

“We’ve been blessed,” Mark said. “We are really lucky with what we do. We pay attention to detail and use technology to do that.”

and in 1974, became a closed Holstein herd.

“We haven’t purchased a cow since then,” Mark said.

In 2009, Hillcrest Farms transitioned from a pasture-based system to a sand-bedded freestall barn. The barn is a Florida-style conventional freestall with 13-foot side walls and a 3-foot open ridge. The barn is positioned east-west to minimize heat absorption.

“This barn is built to lessen the heat load,” Mark said. “It works really good; in the winter and summer it is the coldest place at the farm.”

The barn is built at a 1.5 percent slope, and sand is reclaimed at one end. The reclaimed nutrients from the manure are spread on the elds and recycled water from a lagoon system is used for irrigating crops and for ushing the sand and manure from the alleyways.

“We can grow three crops a year,” Mark said. “We can grow rye grass through the winter, harvest it in the spring, plant corn and then cut silage, and then plant sorghum …, so we always have a crop growing on irrigated land. We don’t have a lot of irrigated land, but the land that is, we are always growing a crop on that.”

In addition, the freestall barn is equipped with fans that turn on at 68 degrees and sprinklers over the feed bunks that turn on at 74 degrees. The alleyways are also lined with rubber ooring.

“We are doing everything we can to get that cow as cool and comfortable as possible,” Mark said.

With cow comfort being a priority

and a focus on consistent feeding and cow management, Hillcrest Farms has a 31,700-pound RHA and has reached as high as 32,000 pounds in the past.

The cows are fed a TMR formulated specically for Hillcrest Farms by a nutritionist. Half of the ration is purchased, such as cottonseed and citrus pulp, while the remaining feed is silage and forages grown on the family’s land.

“We use pits in the ground for silage,” Mark said. “Georgia’s red clay is hard and brick-like. So, we make a bunker inside of a hill, chop it and put it in the hole and cover it up.”

Youngstock are raised in individual hutches and are fed milk replacer.

“We tend to do everything here ourselves,” Mark said. “Being we are a closed herd, we don’t want our calves leaving and coming back. All our youngstock are raised by our staff.

At our scale, hutches still work really well.”

Construction began the rst week of December to accommodate the farm’s facility expansion, with aimed completion date in spring of 2019.

“I hope we are that far along by then,” Mark said. “I’ll have a panic attack if we are not.”

Mark said they will implement ve DeLaval VMS V300 robotic milking systems, with the option of adding a sixth system later on. Three robots will be added to one side of the freestall barn with two at the other side. The milking herd will downsize to 330 cows.

dairy farms that are getting bigger and bigger,” Mark said. … “We are like every other dairy. It doesn’t matter where you are everyone is suffering because of pricing. We are always looking for a unique opportunity for sustainable agriculture.”

Mark said it was imperative they began to house their far-off dry cows inside, rather than outdoors where they endured the hot, humid summer heat. They will keep their parlor for special needs cows.

“We are building a maternity barn next to our freestall barn,” Mark said.

“Everyone thinks cows would rather be outside. But, no. Cows in the summer in Georgia do not want to be outside. We’ll have fans and sprinklers, and they will do much better inside.”

Mark said Hillcrest Farms is the last dairy farm left in the eight-county area. Hillcrest Farms is located 30 miles from the Augusta metro area and the Augusta National Golf Club, where The Masters is held annually.

“I think we need to do a better job educating the public on what we do and to be transparent,” Mark said.

“Those dairies that do a good job need to showcase themselves locally or through social media. And, we try to do that.”

Mark said he and his family are looking forward to the new phase of their dairy.

People in the dairy community Tekippe receives Forward Under 40 Award The Dairy Girl Network (DGN) is proud to present the newly created Forward Under 40 award. This award will be presented bi-annually at Forward TogetHER, the Dairy Girl Network National Conference, and will honor four dairywomen who are working to better the industry. These honored dairywomen exemplify passionate involvement and possess strong leadership skills, innovative thinking and ideas that are impacting the industry right now. All applicants were nominated by fellow dairywomen and men from across the country and were judged by an outside panel made of anonymous industry professionals and producers.

Jessica Tekippe was a recipient of the Forward Under 40 Award. She has been deeply rooted in the dairy industry from a young age. From competing in the national dairy quiz bowl contest, to being crowned Iowa Dairy Princess, she has pushed through on her dream to own her own dairy one day. In partnership with her husband, they have started their own farming operation from the ground up. Tekippe has also had a big role on changing the nutritional outline of the global dairy industry. As the lead for research and develop for Ajinomoto Animal Nutrition North America she has decided it is vital that the dairy industry rise to the level that the swine and poultry industries are for amino acids. Tekippe has a hunger to completely change where nutrients for the dairy cow come from.

Allen elected to Minnesota Farm Bureau Board of Directors Keith Allen of Kenyon in Goodhue County was elected to a three-year term on the Minnesota Farm Bureau Federation (MFBF) Board of Directors to represent District I during the 100th Annual Meeting in Bloomington on November 16. District I includes the counties of Dodge, Fillmore, Freeborn, Goodhue, Houston, Mower, Olmsted, Rice, Steele, Wabasha, Waseca and Winona.

Keith and his wife, Morgan, raise registered dairy goats and beef cattle, and he owns and operates a seed business. He is also involved in the Minnesota Dairy Goat Association and is a township supervisor. The Allens have two children.

Re-elected to serve a two-year term as MFBF Vice President was Dan Glessing of Waverly in Wright County. Also re-elected to a three-year term was Miles Kuschel from Sebeka in Cass County representing District VI. Elected to the board of directors serving one-year terms were Promotion & Education Committee chair Tony Seykora from Ellendale in Freeborn County and Young Farmers & Ranchers Committee chair Grant Moorse from Minneota in Lyon County.

Minnesota Milk announces 2018-2019 executive committee and new board of directors The Minnesota Milk Producers Association welcomed two new directors and two new executive committee members as a result of their 2018 annual meeting and Minnesota Milk Conference and Expo November 27-29 at Treasure Island Resort and Casino in Welch, Minn.

Dairying in their DNA

The Driessens carry on a 50-year tradition of dairy farming as a team

PORTER, Minn. – A strong sense of family is important to most dairy farmers. This is especially true at Driessen Farms.

The Driessen operation, which includes brothers Steve and Gary along with Gary’s sons, Derek and Sean, milks 200 cows and farms about 1,000 acres in Porter, Minn.

“Dairy farming is all I’ve ever known,” Steve said. “Our parents, Lawrence and Adeline, purchased this farm in 1964. We milked about 45 cows in a 33-cow stanchion barn when we were kids. We also ran an 80-sow farrow to nish hog operation.”

Tragedy struck the Driessen family in 1970 when Lawrence was diagnosed with terminal brain cancer.

“When Dad got the diagnosis, the doctors told him that he had only six months to live,” Steve said. “They were pretty close to right. He passed away about six months later, when I was 14 and Gary was 13.”

Adeline Driessen suddenly found herself in charge of a dairy farming operation and a brood of 11 children. Her youngest child was only 6 months old.

“Mom took over managing the farm, and Gary and I and our siblings did a lot of the work,” Steve said. “She ran the farm until she passed away in 1990.”

After graduating from high school, Gary studied diesel mechanics at Minnesota West and Technical College in Canby, Minn. He then worked for

a few years at a repair shop in Chamberlain, S.D., before marrying his wife, Kathy, in 1986. Then, Gary decided to come back home and join the family dairy operation.

“I liked working with my family better than working for someone else,” Gary said.

Derek, 27, had followed in his father’s footsteps by enrolling in the diesel mechanics course at Minnesota West.

“Derek and I even had the same instructor, although about 30 years apart,” Gary said.

Derek worked in Fargo, N.D., and in Sioux Falls, S.D., before deciding to join the family operation. Derek and his wife, Laura, have a 2-year-old daughter, Jessa.

They are expecting the arrival of a second daughter in February.

“I didn’t really like my job in Sioux Falls,” Derek said. “Working with my family and being my own boss had a lot more appeal to me.”

Sean, 25, attended Lake Area Technical Institute in Watertown, S.D., graduating with a degree in agriculture production in 2013. Sean and his wife, Bailey, are expecting the arrival of their rst child in January.

The Driessens have repurposed a former farrowing barn into a calf nursery. The barn is warm and dry, giving the calves an ideal place to get their start in life.

“We feed our calves colostrum for the rst three days after they are born,” Sean said. “We have found that this gives us healthier and stronger baby calves.”

This past summer, the Driessens

began to put up their alfalfa as baleage. The purchase of a baler with a pre-cutter and a tubular bale wrapper was funded in part by an AGRI Livestock Investment Grant Sean obtained from the Minnesota Department of Agriculture.

“We put up about 600 big round bales as baleage,” Steve said. “We are very pleased with the product.

This fall, after the Driessens had nished chopping their corn silage, a crew of youthful volunteers materialized at Driessen Farms to help put tarps on their silage bunkers. Many of the volunteers were friends of Sean’s who were hoping to trade their labor

for permission to hunt geese on the Driessens’ land. Thanks to the assistance from the crew, it took only two hours to cover the pair of silage bunkers.

“We’re glad that Derek and Sean are here,” Steve said. “The boys help keep us young.”

In the report, it is stated the legislation would ban the use of medicines to improve animal performance or to make up for poor farming practices.

“The perception is so prevalent in this country and everywhere else that you don’t need antibiotics ever,” Singer said. “You’re just using them to cover up for bad management. And for that to be the basis of forming this legislation in Europe is problematic.”

WELCH, Minn. – Antibiotic use in animal agriculture has been widely debated in recent years, regarding food safety, animal welfare and customer perceptions. Randy Singer, professor of epidemiology at the University of Minnesota, presented his research and thoughts on the topic on Nov. 28 at the Minnesota Milk Dairy Conference and Expo in Welch, Minn.

Singer investigated regulations on antibiotics and the global impacts of the practice of antibiotics in animal agriculture in light of a recent publication by the World Health Organization regarding the use of medically important antimicrobials in food-producing animals.

“We’ve been talking for decades on how in the United States we may see more regulation coming that would ban or restrict the ways we use antibiotics,” Singer said. “This document should wake us all up.”

Most medicines farmers use to treat their animals fall under the category of medically important, which means it is related to medicines used for humans.

The WHO report, published in 2017, has caused regulations to pop up throughout the globe.

“It’s not about whether or not your herd uses antibiotics in this way, it’s about if we should be saying that nobody is allowed to do it at all,” Singer said.

The report features a series of recommendations on antibiotic use. Singer focused on recommendations three and four during his presentation.

Recommendation three is on prevention use, which includes things like blanket dry cow therapy.

“We recommend complete restriction of use of all classes of medically important antimicrobials in food-producing animals for prevention of infectious diseases that have not yet been

clinically diagnosed,” the report said.

Recommendation four is about control and treatment use in the presence of disease.

“We suggest that antimicrobials classied as critically important for human medicine should not be used for control of the dissemination of a clinically diagnosed infectious disease identied within a group of food-producing animals,” the report said.

“You would hope the WHO actually evaluated specic antibiotics that we use in animal agriculture and their effects on human health or animal health,” Singer said. “What they did was conduct a systematic review by pulling 36 studies that they said informed this recommendation. Every single one were surveys on retail meats.

Singer conducted research with the University of Minnesota, asking producers what their experience has been raising animals without antibiotics. They could answer either none, some in the past or currently are raising without antibiotics.

The No. 1 reason producers who decided to raise animals without antibiotics was for consumer prefrences.

Animal health generally suffers when we make decisions based on the markets, Singer said.

Singer said when asked about the disease and welfare challenges faced when raising animals without antibiotics, most responses are the same for both conventionally and antibiotic-free raised animals, so the question becomes how does one address the same health challenges if no antibiotics are available.

ics. The majority of responses, both perceived and experienced, stated they think it worsens or signicantly worsens food safety to raise without antibiotics.

The participants were then asked how retailers, restaurants and food servers think raising animals without antibiotics impacts food safety. The majority responded by saying the absence of antibiotics signicantly improves food safety.

“Market driven reasons to a health-related decision will almost always have negative consequences,” Singer said.

There is also an added cost to raise animals without antibiotics. The cost is hoped to be made up for in a value-added product. Oftentimes, there is not an increase in demand for the product.

“People don’t care if their chicken wings are antibiotic-free,” Singer said. “Sure, that’s how people will prefer their meat to be advertised in the grocery store but when you’re ordering wings or chicken nuggets, there’s no special market or demand for that specialty protein. People actually don’t want to buy those products because there is less meat on the wing of a chicken raised without antibiotics.”

The California Department of Food and Agriculture has implemented some restrictions and regulations on the use of antibiotics in animal agriculture, and other states are looking to them to develop legislation.

“Think about your production system,” Singer said. “Not just one aspect of did I use antibiotics or not. It’s about what do you do for your system. How did you raise your environmental sustainability of your herd? How did you look at health as a holistic approach? It’s not about the meat in the package. It’s about the system you use to raise those animals. Did you do it in a certiable, sustainable way?”

A start up against the odds

Woods begin dairying despite current economy, other factors

PLAINVIEW, Minn. – Dan and Nikki Wood’s farm name describes their situation best: Against The Odds Dairy. Despite factors that others may see as a hindrance – a struggling dairy economy, a small herd and not-so-popular breed– the Woods are taking a chance on a business they love.

The couple started milking their herd of 10 Guernsey cows Oct. 1 on a rented dairy near Plainview, Minn.

“It all fell together,” Dan said.

Nikki takes care of most of the chores on the dairy with help from Dan when he is not working his full-time job as a milk hauler. Their youngest three children, Emily Siemer, 18, and twins Jamie and Sawyer, 11, also help with daily tasks when not at school. Their two older children, Alissa Siemer, 21, and Dana Siemer, 19, work full time off the farm and pitch in if they are able.

With the current dairy economy, the Woods went into the venture with realistic expectations.

“Our goal is to break

even,” Dan said. “We’re not in it to make money. It’s a way to keep going with the cows we have to show.”

Their goal is why Dan kept his full-time job and why they started small.

Their herd of 10 cows along with 21 youngstock means they do the work themselves to help keep their cost of production down. It also allows them to focus on details such as keeping everything clean for a lower somatic cell count, which gives them a higher premium on their milk check. For November, the Woods’ herd had an average SCC of 29,000.

“I’m OCD about keeping everything clean,” Nikki said.

They can also hand pick bulls for mating their animals and give individual attention to ensure a healthy herd.

“Genetics play a role [in SCC], too,” Dan said.

Keeping their operation simple is another way to keep costs low.

“We’re a no-frills operation. We have a six-tine barn cleaner,” said Nikki, while exing her arms and referring

There is no total mixed ration. Cows eat baled hay along with dry shelled corn with a complete mix they buy from a local feed cooperative. They blend the two together with an ice auger turned feed mixer and use a bucket to distribute it to the cows.

The herd averages a 4.9 percent butterfat and 3.4 percent protein.

Although only two months in, the Woods are happy with the path their dairy is going. Their journey to milking cows came about because of their background and their children.

“It’s a 4-H project gone haywire,” said Dan, who grew up on a dairy a few miles away from the farm they are now renting.

After leasing a few animals from family in order for the kids to show in the dairy project at the county fair, the Woods wanted to delve further into the project and bought two of their own in 2011. At that time, they shifted from Holsteins to Guernseys.

“They’re docile and easy to work with for the kids to show,” Nikki said about Guernseys.

Dan said he liked the switch.

“The Guernseys are so laid back,” he said. “Their personality is almost like a dog.”

Without a farm of their own, the Woods had to house their animals at other dairy farms, including their good friends, John and Robin Larsen. Although they were appreciative of those people, the Woods wanted to look after

their own cows.

“We were tired of other people taking care of our animals,” Dan said. “We wanted to take care of them how we wanted and feed them how they would need to be fed during the show season.”

After searching for their own dairy for two years, including nearly buying a dairy in northwestern Wisconsin, the Woods took over for distant relatives, Alton and Eileen Wood, who wanted to exit the business after suffering a few health issues. Nikki and Dan had been helping the retiring couple with chores several months prior to taking over.

Nikki and Dan moved to the farm at the same time they took over.

“Now we can keep a close eye on our cows,” Nikki said. “And, everybody’s happier. None of us liked living in town.”

The two have said the dairy has also been better for family life.

“The kids have really taken to it more than I thought,” Dan said.

“They’re able to start halter training earlier and easier, too.”

As long as they can make it work, the Woods are happy to begin their dairy farming career despite the odds against them.

Getting an accurate cause of death in calves is critical for developing successful preventative and treatment protocols.

According to Dr. Richard Wallace, a veterinarian afliated with Zoetis, a necropsy should be performed on all calves that die in order to conrm the diagnosis. The results of the necropsy will provide information to your veterinarian that will allow them to help you develop a plan for prevention and protocols to ensure proper treatment.

“Ideally, I’d get there in the rst 8 to 12 hours following death to perform a necropsy,” Wallace said. “However, if I have a lot of calls, obviously the live animals I can still do something for are going to come rst.”

The veterinarian’s inability to perform the necropsy in that crucial time period before bacteria start the decomposition process should not stop you from getting the answers you need.

Anyone can perform a eld necropsy and collect photographical evidence and tissue specimens for laboratory testing. Wallace recommends a team of at least two people to perform the necropsy; one to do the cutting and one to do the photographing and recording.

To perform a eld necropsy in the most efcient and clean manner, Wallace suggests you have the following supplies: a large plastic cart or table that will serve as a surface to perform the necropsy other than on the ground, latex-type gloves such as milking gloves, sharp knives, hedge clippers, a disposable scalpel or box cutter, 12cc syringes with 16 gauge needles, a plastic ruler, a Styrofoam cooler and cold packs, a necropsy report form that gives you a list of areas to examine, a phone with a camera, light string (stronger than kite string), zip-type, quart-sized freezer bags, a Sharpie marker and pencil, and twine to truss up the carcass after the necropsy. Wallace recommends a small plastic tool box to keep your necropsy supplies in.

First, Wallace tells his clients to record the calf’s identication, date of birth, the vaccination status, feeding program, overall health history and the treatments that have been administered for what you suspect the problem was.

He also recommends taking photographs of the ear tag. He suggests placing some type of common item, such as the ruler in each photo for reference of

In order to make this messy job as neat as possible, Wallace recommends creating what he calls a necropsy bowl out of the carcass, noting the sooner the necropsy is performed after death, the easier the job will be.

The rst step is to lay the calf with its left side down on the table so the rumen is on the bottom. Wallace recommends using a shingle cutter to make a skin incision from the chin all the way down the body along the ventral midline. The incision should go above the navel and continue between the back legs.

The front legs should be reected by cutting through the arm-pit area where there is no boney joint. The hide should be skinned off the rib cage back to the rear legs, taking care not to cut into the gut. The rear leg should be lifted and the joint of the femur and hip should be disarticulated. Then, using a knife or hedge shears cut the rib cage along the sternum. This will give you the bowl-effect, keeping the carcass neat with the lungs in one section and the intestines in the other. At this time, Wallace recommends taking a picture of the entire carcass with the exposed cavities.

Once the necropsy bowl is created, the rst step is to begin examining the lungs for color and texture, taking photographs. A 2- by 2-inch section of any affected portion of the lung should be removed and placed in a labeled bag and placed immediately in the cooler.

Then the trachea should be cut open and examined, looking for signs of mucous.

The heart should be examined, noting if there is any fat deposited around it.

A 1-inch cross section of the widest part of the heart should be removed and placed in a labeled bag.

Next, the intestines, kidneys and liver should all be examined for color and fat deposits around them. Two- by 2-inch sections of the liver, spleen and kidneys should all be collected and placed in labeled bags. A section of small intestine, nearest the stomachs, should be collected for a tissue sample.

To minimize the mess, Wallace suggests tying two strings around the intestine, about 1 inch apart. Then, moving 3-4 inches down the intestine, tie two more strings again 1 inch apart. Cut across the intestine, between each string that is 1 inch apart, making a small sausage-like sample of intestine to place in a labeled bag. The process should be repeated to take samples of the large intestine, only taking the sample closer to the rectum.

Using the 12cc syringes, aspirate uid from the abomasum and then the rumen, labeling each syringe and placing it in a separate bag. Finally, obtain a stool sample in a labeled bag.

Once all of the tissue samples have been collected and photographs of anything unusual have been taken, fold the front and rear legs over into their original position. Using your knife, poke holes along the skin incision, and use the twine to lace up the abdomen to keep everything contained before disposing of the body.

Performing your own eld necropsy may at rst seem daunting. However, with practice, Wallace assures producers they will appreciate the answers they gain in regards to their treatment and prevention protocols.

Christmas in a jar For the past couple of years, I have been moving a jar of cookie ingredients around in my cupboard to get to other things. The layered red and green candies topped off the our and brown sugar base. It looked so cute, but I never took the time to make the cookies, until last week. I was surprised at how easy it was to make the cookies. They did taste a little old to me, but Mark and Austin did not notice a difference.

I have made cookies in a jar for Christmas presents in the past, but it took so much time to pound the sugar in tightly so all the ingredients would t in the quart jar. They look pretty topped off with Christmas fabric tied up with ribbons on top but not a very practical gift. I wanted to do something different. All I had to do was catch a post on Facebook from my cousin’s wife, and I found my practical Christmas gifts in a jar.

Deb shared a post from Old Fashioned Cooking. It contained three recipes for seasonings I use all the time: taco, ranch and dry onion soup mix.

Perfect. Gifts I can make to have on hand for sharing or using. I also tried out a new granola recipe this morning that works great as cereal or topping on yogurt. It also stores well in a jar in the cupboard. Finally, if you are daring, I have also included a toffee recipe that seems pretty easy and stores well in a jar. Enjoy.

Once rm, lift parchment paper by handles and put on a hard cutting surface. Using a knife, break into pieces. Store in an airtight container in a cool place.

Plainer, lesser quality and lower producing cows a lot lower with the major drop in market cow prices taking the Áoor right off ‘em! We sold lots of cows and springing heifers below $700. Place egg whites in a large bowl; let stand at room temperature 30 minutes. In a large heavy saucepan, whisk egg yolks, eggs, 1 cup sugar and cornstarch until blended; stir in 4 cups milk. Cook over medium-low heat 10-15 min. or until mix is thick enough to coat a metal spoon and is at least 160 degrees, stirring constantly. Do not allow to boil. Remove from heat immediately. Strain through a fine-mesh strainer into a large bowl. Place bowl in an ice-water bath. Stir occasionally for 5 min. Stir in 1 1/2 tsp. vanilla. Press plastic wrap onto surface of custard. Refrigerate until cold, about 1 hour. For snowballs, add cream of tartar to egg whites; beat on medium until foamy. Gradually add remaining sugar, 1 Tbsp. at a time, beating on high after each addition until sugar is dissolved. Stir in remaining vanilla. Continue beating until stiff glossy peaks form. In a large heavy skillet, bring remaining sugar, milk barely to a simmer over med-low heat. Working in batches and using two soup spoons, drop meringue by 1/3 cupfuls into milk; poach meringues 4-6 minutes or until firm to the touch, turning once. Using a slotted spoon, remove meringues to paper towels to drain. Repeat with remaining meringue, making a total of 12 snowballs. (Discard remaining milk.) If desired, serve with pecans.

Creamy caramel mocha 1/2 cup heavy whipping cream 1 Tbsp. confectioners’ sugar 1 tsp. vanilla extract, divided 1/4 cup Dutch-processed cocoa

1 1/2 cup half-and-half cream 4 cups hot strong brewed coffee 1/2 cup caramel flavoring syrup Butterscotch-caramel ice cream topping

In a small bowl, beat whipping cream until it begins to thicken. Add confectioners’ sugar and 1/2 tsp. vanilla; beat until stiff peaks form. In a large saucepan over medium heat, whisk cocoa and half-and-half cream until smooth. Heat until bubbles form around sides of pan. Whisk in coffee, caramel syrup and remaining vanilla. Top servings with whipped cream; drizzle with butterscotch topping.

To prepare in a slow cooker: Prepare whipped cream as directed. Whisk together cocoa, half-and-half, coffee, caramel syrup and remaining vanilla in a 3-qt. slow cooker. Cook, covered, 2-3 hours or until heated through. Serve as directed.

Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture. Divide dough in half; shape each into a disk. Wrap and refrigerate until firm enough to roll, at least 1 hour. Preheat oven to 350 degrees. On a lightly floured surface, roll each portion of dough to 1/8-inch thickness. Cut with a floured 3-inch round cutter. Place half of the circles 1 inch apart on ungreased baking sheets; top with candy bar pieces. Top with remaining circles, pinching edges to seal. Bake until bottoms are light brown, 10-12 minutes. Remove from pans to wire racks; cool completely. Tint 1 2/3 cups frosting red; spread over cookies. Tint 2/3 cup frosting black; pipe belts and buttons over top. Tint remaining frosting yellow; pipe buckles on belts.
