Teamwork keeps family businesses thriving

Schatzes manage dairy farm, custom chopping, restaurant

CRESCO, Iowa – The Schatz family of Cresco has a lot going on.

Aaron Schatz and his father, Tom Schatz, are partners in a limited liability company that includes 240 cows, steers and 1,600 owned and rented cropland acres. A custom chopping business is also part of the LLC. Aaron’s wife Melissa also owns a restaurant – Sue-Z-Q’s in Cresco – open from 5:30 a.m. to 8 p.m. daily. She cooks there ve days a week and puts in time on a sixth day most weeks, along with being active with the Howard County 4-H Alumni group and volunteering at school.

Their children, Nolan, 11, and Alanna, 9, are responsible for calf chores, and Nolan is completing his rst year in 4-H. He showed a calf at the Howard County Fair this year and is beginning to help haul silage. Both kids belong to a youth bowling league and enjoy playing basketball, soccer and softball.

The Schatzes make it all work, squeezing in family time in ways that take advantage of everyone’s schedules.

“It’s a lot of teamwork,” Melissa said. “The best you can do is take it one day at a time. It may seem hectic, crazy, but when I look back to when the kids

The family’s businesses dictate their daily schedule. Weekdays, Melissa leaves early for the restaurant. Aaron heads out to do chores at 4 a.m. and gets Nolan and Alanna up at 5:30 to do calf chores with supervision from a farm employee followed by getting ready for school. He takes them to Sue-Z-Q’s for breakfast and a visit with Melissa before dropping them off for classes.

Melissa tries to leave the restaurant by about 3:30 p.m. to help the kids with homework and the day’s second round of calf chores.

When Aaron is in the eld, he and the crew often get a delivery of the restaurant’s food from Melissa and the children. The three of them also enjoy riding a few rounds with Aaron.

And, they both admit to serving as the other’s helper and occasional errandrunner. For Melissa, that is picking up parts or helping when a farm employee is not available. Likewise, Aaron sometimes comes to the rescue for SueZ-Q’s.

“I x what needs to be xed at the restaurant,” Aaron said. “One morning, I quit feeding cows at 5 a.m. on a Sunday

and went to Walmart to get her a new microwave.”

It is not surprising the Schatzes stay busy, given their backgrounds. The two met as youth serving on the Howard County 4-H Council and will be married 15 years. Aaron returned to the family farm after graduating from Northeast Iowa Community College in Calmar after which he was employed by a dairy supplier for a year and a half. Melissa attended nursing school and worked for nearly a decade as a licensed practical nurse.

Aaron’s path followed his parents’ wishes along with his own.

One of my many nieces got married Saturday. Not the nicest weather, but we had a good time together as most of my siblings from PA were also able to be here. The boys had a good week of deer hunting. I lost track how many total, but they each got some which means there’ll be some venison in my future, and I like that! We didn’t have a sale last week, but markets are definitely trending up on quality Dairy cattle. Most people I’ve talked with got over $20 a hundred for milk with some high testing Holstein herds up to $24.

That just flat out makes the better cows we’re selling worth more! As always, if you can’t make the sale, we do order buying. Still taking Consignments of top-end cows for our Holiday Select sale on December 26th.

ConƟnued from SCHATZES | Page 3 said. “I never had another plan in life. It was all about trying to gure out when to come back home. My parents said I needed to work away for a while, and I needed to bring my own cows into the dairy.”

So, in 2004, Aaron bought 45 cows to add to his father’s 50 head which were milked in a stanchion barn. He kept working his off-farm job for six months.

“I was getting up at 3:30 in the morning, working all day and then coming back to the farm,” Aaron said.

“After six months, we could see I needed to be at the farm more.”

Aaron’s role at the farm has allowed him to work on lowering somatic cell count and operating more efciently.

While she was not from a dairy

background, Melissa knew from the start of their relationship that Aaron was not going to stray far from the farm.

“When we were dating in high school, I learned real quick that if I wanted more time with him, it would be in the barn or helping with chores or eldwork,” she said.

When they began their married life, her nursing shift was 6 a.m. to 2 p.m., and she helped with night chores.

Now, the farm has three full-time employees along with Aaron and his father. In 2005, they constructed a barn with a bedding pack and converted it to sand-bedded free stalls in 2010.

Their double-8 parallel parlor was built in 2008, transitioning from milking 120 head, 50 cows at a time, in the stanchions.

The Schatzes built the parlor themselves, only hiring out the concrete work.

After they bought a self-propelled chopper, other farmers began asking the Schatzes to chop for them. That meant a bigger chopper – a John Deere 7450 – and the custom business was born.

“There is more demand than I ever thought,” Aaron said. “In these times of depressed milk prices, it’s good that we’re doing it.”

They currently have about 25 to 28 regular customers, and Tom drives truck while Aaron chops.

Melissa bought Sue-Z-Q’s six years ago after wanting something more than nursing. Although she did not have restaurant experience, baking and cooking for family prepared her for providing customers Sue-Z-Q’s all-day breakfast menu and family fare.

“It’s a lot different than nursing,” Melissa said. “When my shift ended at

the nursing home, my responsibilities were passed on to someone else. Here, I can’t pass it on.”

But it is the customers, including the both the restaurant’s regulars and the visitors to Cresco, that bring her satisfaction.

“For example, during the county fair, the band came in before their show,” Melissa said. “I like seeing people from all over.”

The restaurant also gives Melissa a chance to promote dairy. She said Sue-Z-Q’s soft-serve ice cream is very popular, and she also serves hard ice cream, both sourced from WW Homestead Dairy in Waukon. Kids’ meals have a yogurt option, and during June Dairy Month, milk is half-price.

Plenty of real butter is served, and dairy is used in meal preparation.

While their businesses are different, both Melissa and Aaron credit their employees with helping them manage the responsibilities.

Ultrasound a tool to manage health Weaning calves with clean lungs a passion for Ollivett

FENNIMORE, Wis. – Weaning calves with clean lungs is a passion for Dr. Theresa Ollivett, a veterinarian at the University of WisconsinMadison, and she shared her passion for using ultrasound as a diagnostic tool with dairy farmers at the Professional Dairy Producers of Wisconsin Calf Care Connection program Nov. 21 in Fennimore.

“I get pretty excited about respiratory disease and using ultrasound to diagnose it,” Ollivett said. “If we really want to manage lung health in our calves, we really have to know what is going on in the lungs of our calves.”

Ollivett has been working with ultrasound to scan calves to determine the health of the lungs. Ultrasound offers a view of what is actually happening in the lungs of calves.

“Based on what a calf might look like clinically, we cannot guess how much lung might be bad,” Ollivett said.

“They can look really sick, but their lungs might be ne; they can look ne but their lungs might be really sick. … If you

went out to your calves today and looked at everybody, you might say ve calves look like they have respiratory disease.

There are probably at least 10 to 20 more that actually have pneumonia.”

Ollivett said pneumonia is an iceberg-effect, and that the clinical symptoms producers see are just the tip of the iceberg. She said producers are likely under-estimating how many calves actually have disease.

Ollivett said about onethird of new lung disease cases are subclinical, and that the severity of the lung disease is not well-correlated with the severity of clinical signs that might be presented. She has found there are two to four calves with subclinical illness for every clinical case located.

“The bigger problem is if she looks like she doesn’t have pneumonia, [it] doesn’t mean that she does not,” Ollivett said.

“That’s where using ultrasound comes into play. That little machine doesn’t care what the snotty noses does, what the temperature of the calf is, or if she is coughing or not. It’s going to tell you what is going in those lungs, and that is what we need to know.”

Because cattle are a prey species, they try to not appear sick until they can no longer keep up the facade, said

“Our job as their caretakers is to nd them the minute they tell us they are sick,” Ollivett said. “I can’t expect you to nd them before without ultrasound because you don’t have X-ray vision, but the minute that calf starts coughing or has a snotty nose, you should be tuned into

it.”

Ollivett said young calves typically get bacterial pneumonia. Sometimes they get viral pneumonia, but that is more common in older animals. She also encourages producers to do necropsies on any deceased calves to help them learn the cause of death.

She said normal lungs should have a sponge-like appearance and be air-lled, while lungs with pneumonia will be more consolidated and have a harder texture, and feel more like the liver.

“When we are using an ultrasound that is what we are detecting, the difference between an air-lled lung and a non-air-lled lung,” Ollivett said.

Ollivett cited research data. Out of 100 calves with lung lesions, only six will be found using only a stethoscope; compiling a respiratory score will increase the number found to about 50 to 60 calves; the use of an ultrasound raised the number to 90 to 95.

“I get frustrated when we are using poor-quality tools, treatment records or respiratory scores to say who has disease and who doesn’t, and not getting anywhere,” Ollivett said. “If we use something that is a better detector and more accurate, we can actually really know who has the disease and who doesn’t and do something about it.”

“When calves get treated the rst time for pneumonia, I want them to be a two or a three most of the time,” Ollivett said. “If I scan a bunch of calves the rst time they got treated, and most are four or ves, we need to have a conversation about how are you nding them? How often are you looking, and what are you looking for?

Are you looking at the right group of calves?”

Reversing the consolidation that appears in the lungs is possible if it is treated properly and early.

“If you are going to treat a calf with an antibiotic for pneumonia, you better

make darn sure that that antibiotic results in clean lungs,” Ollivett said.

“That means we have to nd them early enough and treat them with the right drug, for the right amount of time, at the right dose, the right duration and the right frequency.”

Ollivett encourages dairy farmers and veterinarians alike to keep an open mind when it comes to utilizing new tools and practices, such as the use of ultrasound.

“Sometimes we have to think outside the box,” she said. … “When it is a tool that has a much higher sensitivity and gives you much better information, you can manage your animals at a level far beyond what you have ever been able to do before. It makes the effort you spend working with your animals more worthwhile.”

Upcoming Iowa State University Extension and Outreach meetings will provide guidance for Iowa farmland owners and operators reviewing options under the 2018 Farm Bill. Farmland owners and operators have the opportunity to make new decisions on enrollment and election in the USDA Agriculture Risk Coverage (ARC) or Price Loss Coverage (PLC) programs.

ISU Extension and Outreach will host ten (10) educational “2020 Farm Bill Decisions” programs at multiple locations throughout Northeast Iowa to discuss important considerations for Iowa farmland owners and operators. The meetings are approximately 2.5 hours in length.

Landowners – especially those who cash rent to farm producers – are encouraged to attend and learn more, as landowners will need to provide a release for PLC Yields to be updated by producers using 2013 thru 2017 crop production evidence.

Local USDA Farm Service Agency professionals, who administer the programs, will be present to discuss 2018 Farm Bill regulations and rules. ISU Extension and Outreach farm management specialists will provide information on the current nancial picture for Iowa agriculture, upcoming decision points and online resources to help farm owners and operators in the decision-making process. ISU Extension and Outreach Family Life Specialists will join the program to promote healthy strategies for recognizing and coping with the ever-present stress that accompanies the cyclical nature of agriculture.

There is no registration fee to attend, but pre-registration is strongly encouraged to allow planning for materials and seating. An environmental training session for operators of Concentrated Animal Feeding Operations (CAFOs) will be held Dec. 11 at the Crossroads Convention Center in Huron. Specialists from SDSU Extension, the South Dakota Department of Environment and Natural Resources and the Natural Resources Conservation Service will be conducting the training.

In Spring of 2017, the South Dakota Department of Environment and Natural Resources reissued the General Water Pollution Control Permit for Concentrated Animal Feeding Operations (CAFOs). The new permit requires existing permitted operations to obtain coverage under the proposed permit between one and four years after the general permit is issued. One of the proposed permit conditions for existing permitted operations is that an onsite representative attends an approved environmental training program within the last three years prior to obtaining a new permit. If the person who attended training no longer works at the operation, another representative must attend training within one year.

This current training program meets the training requirement of the proposed permit as long as it is attended within three years of obtaining coverage under the new permit.

Manure applicators, producers and any other interested individuals who are not currently applying for a permit can also benet from the information and are encouraged to attend.

Certied crop advisor credits are available as well.

The Farmer Angel Network is a collaboration of Sauk Co. Public Health, Extension Sauk Co., Project Recovery, local churches and concerned farmers whose goal is to support area farmers through a time of depressed farm income, challenging cropping season and the highest rate of farm bankruptcies and exits since 1930s. Mental health awareness and support resources are the key focus of this effort.

The Iowa State University (ISU) Extension and Outreach Dairy Team will host “Fine-Tuning Your Dairy Goat Management” as a part of their annual Dairy Directions program on Saturday, Dec. 14 at the ISU Extension and Outreach ofce in Orange City and the Keystone AEA in Elkader.

The program will focus on managing forages, utilizing health strategies, improving milk quality, implementing business practices and dealing with the challenges of managing dairy goats. All dairy goat producers are welcome.

In response to high levels of both personal and nancial farm stress, Iowa State University Extension and Outreach is offering four “Farm Couple Getaways” aimed at farmers wanting to take advantage of activities to improve farm family communication, work on farm or family goal-setting, farm transitioning, or who would just like a weekend away to discuss farm and family issues.

The rst “getaway” will be held Saturday and Sunday, December 14-15 at EWALU Stone Center in Strawberry Point.

The dates and locations for the other “getaways” are as follows: Friday and Saturday, Jan. 31-Feb. 1, 2020 at Hotel Winneshiek in Decorah. Friday and Saturday, Feb. 21-Feb. 22, 2020 at Lake Shore Center at Okoboji in Milford. Thursday and Friday, March 19-20, 2020 at the Best Western Plus Hotel in Dubuque.

The “getaways” run from 12:30 p.m. on the rst day to 3:15 p.m. on the second day of the “getaway”. There is no cost to attend as food, lodging and other expenses are being paid for by sponsorships. However, there is a $50 per couple deposit to hold each reservation, refundable on the second day of the getaway.

Past “Farm Couple Getaways” have proven to be benecial to farm couples. “They are a very productive and delightful time to discuss items of importance to help farms and families be successful”, says Larry Tranel, dairy specialist with ISU Extension and Outreach.

Get to know Brooke Hammann of Barron, Wisconsin

What dairy or ag-related extracurricular activities are you involved in? I am involved in 4-H, Wisconsin Junior Holstein Association and FFA. I also partake in 4-H and FFA dairy judging. My team and I have always placed well at district, state and national competitions.

Why are you involved in these activities/organizations, and what is your favorite? I am involved in these organizations because I love being around people who share the same passion for agriculture and dairy that I do. My favorite organization is Wisconsin Junior Holstein because I have made so many friendships around the state and get to be around kids who share my passion for the Holstein cow.

Tell us your best experience during your time in these activities/ organizations. My favorite experience is the state fair. It’s a time I look forward to every year. I get to see friends from all over the state in one place for a whole week while doing what we all love – showing our nest cows. It’s wonderful to be able to exhibit at one of the largest state fairs.

What is your favorite social media? Snapchat. This allows me to keep in touch with friends I’ve made throughout my time in the dairy industry who I usually only get to see in the summer.

What are your career aspirations? I will be attending Chippewa Valley

What is something you have learned from being involved in these activities/organizations? The rst to come to mind are hard work and dedication. When you spend every day working with animals and people who love agriculture as much as you do, these values seem to t right in. Also, I have learned hard work and dedication will pay off in the long run. Sometimes the long run is just a little longer than

we expected.

Who do you look up to? My grandpa, Paul. He has an outstanding knowledge of Holstein pedigrees, and his passion for dairy farming is like no other.

Tell us something about yourself that many people do not know. I love to travel. I love the adventure that comes with going somewhere new and all the experiences that come with traveling.

Tell us some of your duties on the farm. Caring for the heifers from 3 months of age to 15 months which includes feeding, bedding and watching for heats or sickness. I also take care of my family’s show animals by feeding, walking, washing and clipping them.

If you could change one thing in the world, what would it be and how would you change it? The majority of the United States population’s view on agriculture. We do not mistreat our animals, and many times animals’ needs come before their owners’ needs.

My favorite animal is Jewel, my 1-year-old kitty. She is playful and likes to play with my winter stocking hat.

Armin Tesch, 96, passes Armin O. Tesch, age 96, life long resident of rural Waldorf, Minnesota, died peacefully at Whispering Creek in Janesville Nov. 8, 2019 at the age of 96. Armin Orlando Tesch was born on Jan. 13, 1923, on the farm in Freedom Township, Waseca County to Otto and Marie (Kluender) Tesch. On Sept. 29, 1950, he was united in marriage to Darlene Proehl at First Lutheran Church in Waldorf. Together they lived and raised their family on the farm in Freedom Township where Armin farmed crops and raised dairy cows his entire life. Armin and Darlene made a wonderful team, they farmed side by side for many years and together raised ve children.

Throughout his life, Armin was involved in the dairy industry. He saw many changes over time from selling milk in cream cans as a young man where he remembered hitching up a team of horses and a sleigh to take cans of cream to the local creamery in the winter storms, to building his herd of registered

Holsteins from a very small beginning to a herd of 100 cows with his son, Marty.

He was a member of the Minnesota Holstein Association and the South Central Holstein Club. He also helped organize the Blue Ribbon Calf Sale in New Ulm for many years along with showing Holstein bulls at fairs and district shows.

Armin was actively involved in several organizations. He was a member and leader in the Waseca County Farm Bureau, Waseca County DHIA, Waseca County Dairy Association, Waseca County Fairboard, the Waldorf Centennial Committee among many other organizations and activities. He was also appointed by the Pawlenty administration to serve on the Rural Finance Authority board.

Throughout his life he was a faithful husband, loving father and humble steward of the land who never took for granted the privilege of being a farmer. He never turned down an opportunity to help others in need. In his later years Armin enjoyed spending time with his grandchildren and great grandchildren. Blessed be his memory.

He is survived by his loving wife of 69 years, Darlene of Waldorf; son: Martin (Jan) of Waldorf; daughters: Marilyn (Dean) Pierce of Woodbury, Kathy (Ted) Roehl of Foreston and Bonita (Rick) Sommers of Waseca; nine grandchildren; two step grandchildren; seven great grandchildren; four step great grandchildren; sister-in-law: Marie Tesch of Waseca; many nieces, nephews, other relatives and many friends.

ConƟnued from UDDER STUFF | Page 15 USDA to gather new data on organic agriculture production In December 2019, the U.S. Department of Agriculture’s National Agricultural Statistics Service (NASS) will begin conducting the 2019 Organic Survey to gather up-to-date data on organic crops and livestock in the United States.

This special survey effort is critical to help determine the economic impact of organic agriculture production across the nation.

NASS is mailing the survey to all known organic farms. The form asks farmers to provide information on acreage, production, and sales for a variety of organic crop and livestock commodities. The agency urges all participants to respond by February 3. After this date, NASS will follow up by phone and personal interviews with those who have not responded.

Producers can return their form by mail or complete the survey online at www.agcounts.usda.gov.

“Organic agriculture is a rapidly growing segment of the industry and Minnesota ranks among the top 10 states for both number of organic operations and total organic sales. According to the 2017 Census of Agriculture, Minnesota’s organic farms sold over $100 million in organic products,” said Dan Lofthus, NASS’ Minnesota State Statistician. “As farm sales from organic products increase, demand for accurate statistics about organic farming grows as well. This survey will be another step forward by USDA in its commitment to helping organic agriculture thrive and will ensure that future decisions impacting the industry stem from factual information.”

Agriculture statistics are frequently used by business and policy decision makers, and in this case farmers themselves stand to reap the most benets.

The report, to be released October 2020, will also assist farmers, suppliers and others in the private sector in planning the production and marketing of new products to help sustain industry growth.

“NASS has a long-standing reputation for providing objective, accurate data about all aspects of U.S. agriculture, but the only way for us to provide accurate information is with farmers’ input,” added Lofthus. “I hope that all organic farmers who receive a survey form will recognize it as a way to benet their industry and take the time to respond.”

As with all NASS surveys, information provided by respondents is condential, as required by federal law. NASS safeguards the privacy of all responses and publishes only aggregate data, ensuring that no individual operation or producer can be identied.

AMPI cheesemakers earn champion title The cheesemakers of Associated Milk Producers Inc. (AMPI) are bringing home the coveted Chairman’s Trophy following the National Milk Producers Federation (NMPF) Championship Cheese Contest.

A hand-crafted Parmesan made at the cooperative’s plant in Hoven, S.D., was named best of class in the Italian division and received the distinction of the contest’s best overall entry.

“Making award-worthy cheese is the daily standard at AMPI,” said Kevin Hageman, a veteran Hard Italian-style cheesemaker who manages the plant where the champion Parmesan was produced.

“We don’t make special cheese for contests. This is the quality of product we’re making every day.

Our skilled cheesemakers use high-quality milk from AMPI member farms to create superior artisan cheese.”

The South Dakota plant specializes in making 22-pound wheels of Parmesan, Asiago and Romano.

In addition to the competition’s highest recognition, AMPI cheesemakers earned four additional awards at the contest held in conjunction with NMPF’s joint annual meeting with the United Dairy Industry Association and National Dairy Promotion and Research Board in New Orleans, La. A total of 237 entries from cooperatives across the country were submitted for this year’s contest. Cheese made at AMPI plants received the following awards: – First, Processed American Plain – Portage, Wis. – Third, Medium Cheddar – Blair, Wis. – Third, Processed American Plain – Portage, Wis. – Third, Processed American Flavored – Portage, Wis. “These latest top-three nishes bring AMPI’s total

award count in national contests to 21 for 2019,” said Marshall Reece, AMPI’s senior vice president of sales and marketing. “At AMPI, our products come with a Co-op Crafted promise — AMPI family farms care for their land and animals, and partner with skilled craftsmen to make award-winning dairy products for our customers to enjoy.”

National Dairy Board Scholarship winners announced The national dairy checkoff announced the recipients of its academic scholarships to students enrolled in programs that emphasize dairy and who have shown potential to become future industry leaders. Eight of this year’s scholarship winners are from the Midwest Dairy region, including the recipient of the James H. Loper Memorial Scholarship which is given to one outstanding recipient each year.

The National Dairy Promotion and Research Board (NDB), through Dairy Management Inc., which manages the national dairy checkoff, annually awards $2,500 scholarships to 11 students. In addition, the

NDB awards a $3,500 James H. Loper Jr. Memorial Scholarship.

Eligible majors include journalism, communications/public relations, marketing, business, economics, nutrition, food science or agriculture education. Scholarship criteria include academic achievement, a career interest in a dairyrelated discipline, along with demonstrated leadership, initiative and integrity.

Kathryn Lyne Gardner, a University of Arkansas student who is double majoring in agribusiness and agricultural communication with a minor in agricultural leadership, has earned the 2019-20 James H. Loper Jr. Memorial Scholarship.
