Bringing the moo to the manger Schimeks participate in live nativity

PINE ISLAND, Minn. – Laura and Jake Schimek helped bring the Christmas story – Jesus being born in a stable and lying in a manger – to life this year. To them, that means adding dairy to the scene.

The mother-son duo participated in a live drive-through nativity put on by their church, Zwingli United Church of Christ also known locally as the Berne church, Dec. 20. Playing the role of shepherds, the Schimeks also kept watch over the nearly year-old Jersey steer they brought as one of the animals in the stable.

I was just really excited to be with our church family,” said Schimek, who milks 600 cows together with her family on their farm near Pine Island. “And we were excited to bring our animal and let other people see them.”

Jake agreed.

“I liked being there and seeing people I can’t see in person,” said the 10-year-old fourth grader. “Even just to see them drive by is good enough for me. It feels good to be a part of it.”

When the Schimeks were asked to provide an animal for the event, they decided on Jake’s project steer, Bolt.

“I was worried about the weather,” Laura said. “I didn’t want to bring a baby calf in case it was really cold. Pastor Karen suggested a steer. I thought we denitely have one of those.”

Jake was supposed to show Bolt at this year’s Dodge County Fair as a prospect beef project, but it did not happen because the fair

was cancelled. He was glad to have a chance to show Bolt off in a different but meaningful way.

“I think we’ll grow him out and sell him or butcher him,” Jake said about

This is the ďƒžrst year the church hosted the event, a vision brought to life by the 40-member congregation. “They were trying to come up with safe ways for people to celebrate the holidays – something fun to do that is COVID-19 safe,â€? said the church’s pastor, Karen Larson, who grew up on a Guernsey dairy farm in Steele County.

The church did not need to search for a location for the nativity. It already had one available.

Mitigating climate change with soil carbon sponge

Discovery Farms virtual conference explores fundamentals

This year’s Discovery Farm Conference is being conducted in a series of weekly webinars.

The rst in the series beginning in December, under the theme of “Keeping Up with Your Conservation Goals Through Change and Challenge,” was focused on mitigating climate change

through the soil carbon sponge.

Walter Jehne, an Australian microbiologist and climate scientist and the director of Regenerate Earth, and Didi Pershouse, of Vermont, an author and the founder of the Land and Leadership Initiative, shared what they have learned from their experiences and research on mitigating climate change.

“The challenge is really fundamental because things are changing, the climate is changing,” Jehne said.

“In Australia, we have had extreme hot weather, 40 to 50 degrees centigrade, with really serious impacts like wildres.

fundamental challenge across all parts of agriculture, all countries. How do we address these hydrological climate extremes?”

Jehne explained the challenge lies at the grassroots community level, the individual farmer level, to address these problems.

“It’s all about building resilience in our ecosystems,” Jehne said. “How do we take our existing landscapes, farms, agriculture and forests; and how do we build resilience in those systems so they can buffer these changes? It also applies to our social systems because the (coronavirus) has shown us we are more vulnerable to these extremes.

What did nature do to create

resilient, buffered, productive biosystems and what can we do to restore them?”

The answer, according to Jehne, boils down to regenerating the earth’s soil carbon sponge, and we can use those same systems that nature used to rebuild resilient biosystems, cool the planet and stabilize what could be serious impacts.

“It is what nature did,” Jehne said. “It took carbon dioxide from the air, through plant photosynthesis, biosequestered it in the soil, creating the soil carbon sponge.

In that process, was able to basically build the hydrology of the planet, the biosystems, the forests, the vegetation, the animals, all those ecosystems

we depend on; and through that hydrology, naturally cool and stabilize the climate.”

Pershouse explained how the earth’s carbon sponge works.

“One aspect of a sponge is the structural integrity of it,” Pershouse said, talking about a household sponge in comparison to a soil sponge.

“Another thing is its capacity to hold water. For a soil sponge, you want it to soak up water and keep it at the plant root zone for later use, and to lter through to ll our wells and aquifers, and to slowly ll our lakes, rivers and streams from the sides the bottoms, not from the top. “As the plant roots, fungal hyphae, worms and other life moves through there, you suddenly get a porous structure,” Pershouse said. “You will see in healthy soils, that something that has the structure is affected differently by the rain that falls, soaking it up. It goes down the roots to the plants; there is no erosion happening, no mudslides.

There is protection against drought, that water is held for all the life in the soil.

And you will see when the water does start coming out to ll the lakes and streams, it is ltered and pure.”

Pershouse expounded on the importance and fragility of the soil sponge, and the conditions needed for it to thrive.

“The soil sponge is the fundamental infrastructure for life on land,” Pershouse said. “It underlies all successful human economies and societies, but humans cannot build this infrastructure. It requires a diverse biological workforce. We need to let this biological workforce build the sponge and not disturb it with plows.”

Jehne said only 4% of the earth’s heat dynamics are a result of carbon dioxide, but that 95% of the heat dynamics are governed by water.

“By managing the sponge, we can enhance and restore the management of the hydrology, so that we can use that to buffer and mitigate climate change, so that we can naturally and safely cool the planet,” Jehne said.

The Wisconsin and Minnesota Discovery Farms programs are a farmer-led research and outreach group focused on the relationship between agriculture and water quality, all of the presentations of the series are available on YouTube.

U.S. milk production up 3 percent

High milk prices produce high milk production and preliminary data in the USDA’s November Milk Production report proves that. Output totaled 18.0 billion pounds, up a very bearish 3.0% from November 2019, biggest gain since December 2014 with November output in the top 24 producing states hitting 17.2 billion, up 3.1%.

Revisions lowered the October 50-state and 24-State totals 7 million pounds, putting the 50-States at 18.55 billion pounds, still up 2.3% from October 2019.

November cow numbers totaled 9.41 million in the 50 states, up 12,000 from October’s count, which was revised up 5,000 head, and is 62,000 above a year ago. November output per cow averaged 1,916 pounds, up 43 pounds or 2.3% from a year ago.

California milk output was up a hefty 2.6% from a year ago, thanks to a 55 pound gain per cow offsetting 5,000 fewer cows milked. Wisconsin was up 2.7%, on a 60 pound gain per cow offsetting 5,000 fewer cows. That’s a lot of extra milk.

Idaho was up 2.0%, thanks to 11,000 more cows and 5 pounds more per cow. Michigan was up 3.6%, on a 45 pound gain per cow and 6,000 more cows.

Minnesota was up 3.9%, on a 60 pound gain per cow offsetting 2,000 less cows. New Mexico was up 2.5%, on a 35 pound gain per cow and 2,000 more cows.

New York was up 2.1%, thanks to a 40 pound gain per cow. Cow numbers were unchanged. Oregon was down 1.4% on 2,000 fewer cows but output per cow was up 5 pounds. Pennsylvania was up 0.9%, on a 25 pound gain per cow offsetting a loss of 3,000 cows from a year ago.

South Dakota was up 13.4%, on 13,000 more cows and 55 more pounds per cow. Texas was up 9.8% on a whopping 33,000 more cows and a 75 pound gain per cow. Vermont, one of only six states showing declines, was down 3.3% on 5,000 fewer cows. Output per cow was unchanged. Washington State was off 0.4% on 2,000 less cows, with milk per cow up 5 pounds.

In the week ending December 5, 65,900 dairy cows were sent to slaughter, up 10,800 from the previous week, but 300 or 0.5% below a year ago.

Meanwhile, the Agriculture Department’s monthly Livestock, Dairy, and Poultry Outlook, issued December 16, mirrored milk price and production

projections in the December 10 World Agricultural Supply and Demand Estimates report.

The Outlook stated that the National Agricultural Statistics Service revised its September milk cow estimate upward by 10,000, to 9.376 million, and estimates that the average for October increased to 9.39 million. The estimate for milk per cow was 1,977 pounds, up 37 pounds from October 2019. The 2021 herd size forecast was raised to 9.395 million head, up 15,000 from last month’s estimate.

The world still loves butter and butter led the gains in the last Global Dairy Trade (GDT) auction of 2020. The overall weighted average moved up 1.3%, following a 4.3% jump on December 1, and 1.8% on November 17. Traders brought 69.9 million pounds of product to auction, down from 70.7 million on December 1.

Butter was up for the sixth consecutive session, jumping 6%, following a 3.8% rise December 1. Anhydrous milkfat was up 1.9%, after gaining 2.6% last time. Cheddar was up 4.2%, after gaining 2.4%, and lactose was up 1.5%, after leading the gains last time with a 13.5% jump. Skim milk powder was up 1.2% following a 3.6% rise, and whole milk powder was 0.5% higher, after a 5.0% gain.

StoneX equated the GDT 80% butterfat butter price to $1.8680 per pound U.S., up 10.4 cents from the last event. CME butter closed Friday at a bargain $1.4550. GDT Cheddar equated to $1.7659 per pound, up 7.2 cents, and compares to Friday’s CME block Cheddar at $1.6175. GDT skim milk powder averaged $1.3290 per pound, up from $1.3103, and whole milk powder averaged $1.4560, up from $1.4435. CME Grade A nonfat dry milk closed Friday at $1.15.

Cooperatives Working Together member cooperatives accepted 23 offers of export assistance this week to capture sales of 753,981 pounds of Cheddar, Gouda, and Monterey Jack cheese, 723,116 pounds of cream cheese, and 6.7 million pounds of whole milk powder. The product will go to customers in Asia, the Middle East, Oceania, Central and South America through April 2021.

U.S. commercial disappearance in October was below year ago levels on most products. Total cheese, at 1.18 billion pounds, was off 2.5% from a year ago.

Butter totaled 214.9 million pounds, down 4.8% and the lowest October since 2017, according to HGD. Nonfat dry milk/skim milk powder totaled 194.4 million pounds, down 7.2%, and dry whey disappearance amounted to 91.4 million pounds, down 2.7%.

October uid milk sales did not fare well. The latest data shows 3.7 billion pounds of packaged uid products sold, down 1.8% from October 2019.

Conventional sales totaled 3.7 billion pounds, down 2.1%. Organic products, at 237 million pounds, were up 2.8%, and represented 6.0% of total sales for the month.

Whole milk sales totaled 1.3 billion pounds, down 1.6% from a year ago. Sales for the 10 month period totaled 12.9 billion pounds, up 3.5% from 2019, and made up 32% of total milk sales for October and 33.7% thus far for the year.

Skim milk sales, at 232 million pounds, were down 16.3% from a year ago and down 14.6% year to date.

Total packaged uid milk sales, January through October, amounted to 38.4 billion pounds, up 0.2% from 2019. Conventional product sales so far, totaled 36.0 billion pounds, down 0.5%. Organic products, at 2.4 billion pounds, were up 11% and represented 6.2% of total uid milk sales so far for the year.

CME dairy prices showed little reaction to the Milk Production report. The Cheddar blocks marched to $1.6525 per pound Tuesday but closed Friday at $1.6175, unchanged on the week and 24.25 cents below a year ago.

The barrels nished at $1.4750, up 3.25 cents, but 19 cents below a year ago and 14.25 cents below the blocks. 17 cars of block traded hands at the CME the week before Christmas and 16 of barrel.

StoneX Dairy says Food-service data from Black Box Intelligence showed sales in the last week of November down 16% from a peak of about negative 6.5% in early October. It was the 3rd consecutive week of negative growth and all regions it collected data from saw negative growth, clear that the winter weather is taking its toll on foodservice on top of many cities banning indoor dining.

StoneX calculated domestic sales disappearance year-over-year levels without government purchases and warned; “It paints a grim picture. Without a renewal of government purchases we could likely see a movement towards the trend that our milk, butter, and cheese gures are presenting. Over the course of the pandemic we have seen a decline in non-government domestic sales compared to 2019 levels. Dairy Market News reports that Midwest cheese market tones have “steadied.” Mozzarella and or pizza style cheesemakers say buyers are returning. Curd and barrel producers say interest remains but sales have slowed. Food service demand is “tricky at best.”

Spot milk is widely available and offers remain well below Class but production is steady. Cheesemakers also report that employees are returning after COVID quarantines but stafng remains a concern in plants.

Western cheesemakers have no issue getting milk, thus cheese output is active. Retail and pizza cheese sales have been adequate to solid but food service demand is disappointing, says DMN. “As schools enter their winter breaks and pockets of the region face tighter restrictions on sit down dining, food service demand could diminish into the abysmal category.”

One positive note is that with the lower market prices, buyers, including those from export markets, are more interested in seeking cheese deals, says DMN. Cash butter got a small boost from the GDT, climbing to $1.4750 per pound Tuesday, but it was short-lived and closed the week at $1.4550, 2.50 cents lower and 55 cents below a year ago, with 36 cars nding new homes.

Bulk butter is available according to most contacts but plant managers report continued interest in keeping supplies in check, says DMN. Cream availability is wide and putting stress on suppliers, particularly in trying to nd homes Christmas and New Year’s Week. Butter market tones are “uncertain.”

Western butter output shows no sign of slowing as cream supplies are heavy. Butter makers’ concerns have pivoted to processing bulk butter for storage and use for near term 2021 needs, says DMN. Interest is following normal seasonal patterns as a few buyers assess near term needs. The domestic butter price remains competitive in the export market, as evidenced in the latest GDT, and “industry representatives are keeping a close watch on the global butter price.”

Grade A nonfat dry milk closed Friday at $1.15 per pound, up 2.25 cents on the week but 10 cents below a year ago. 11 sales were reported on the week.

Spot dry whey nished at 45.50 cents per pound, 1.25 cents lower on the week but 14 cents above a year ago, with 3 sales for the week at the CME. Dairy farm margins strengthened over the rst half of December following higher milk prices with feed costs holding mostly steady, says the latest Margin Watch (MW) from Chicago-based Commodity & Ingredient Hedging LLC. “Class III Milk prices are drawing support from expectations for another round of government buying to extend into rst quarter,” the MW stated, and “Much of this speculation stems from optimism that Congress will reach agreement on a new COVID-19 relief bill with Senate Republicans and House Democrats moving closer on terms for a new stimulus package totaling $748 billion.”

Congress also needed to pass a budget bill to fund the government for scal year 2021 as the current Continuing Resolution ran out December 18.

Some in the dairy industry applauded the pick of Tom Vilsack as Secretary of Agriculture in a Biden Administration, due to his current position heading the U.S. Dairy Export Council. That may or may not be totally positive, says Matt Gould, analyst and editor of the “Dairy and Food Market Analyst.”

Speaking in the December 21 “Dairy Radio Now” broadcast, Gould discussed the expectation of government intervention in the markets due to the ongoing COVID devastation. He said that restaurant lockdowns and even the snowstorm that hit the East Coast this week is affecting demand, especially for butter and cheese.

“We’re past the rush of holiday orders, so we’re seeing the fundamentals of dairy products deteriorating,” Gould warned. “You look at that and say that’s got to be price negative. But that sits in the backdrop of a government that’s looking to intervene in markets, funding more food purchases.”

He said it remains to be seen what the new Secretary’s priorities would be in terms of market intervention (but it’s likely he will be intervening.) But, he added that, while Vilsack would come to the job with a better understanding of the dairy industry than previous Secretaries, “He is particularly sensitive about doing anything that would disrupt U.S. dairy exports.”

“Traditionally, dairy policy has focused on the domestic market,” Gould charged, “but Vilsack is going to be concerned the U.S. remains export competitive which might mean policy that creates lower domestic prices some of the time, or at least sensitive to not wanting to spike U.S. prices and make us not competitive.”

In other news from the Hill; Senate Agriculture Committee Chairman Pat Roberts announced he is leaving Congress after 40 years in January. The National Milk Producers Federation praised Roberts, stating that he was the only person to lead both the House and Senate agriculture committees and “takes with him a wealth of wisdom in agriculture policy, but also holds optimism for agriculture’s ability to get things done in an environment of difcult challenges.”

And, an Administrative Law Judge in California has ruled that California dairy producers will vote on a petition to terminate the state’s “Quota” program.

Commodity markets have seen a lot of volatility in preholiday trading. Those needing to procure feed are getting caught having to chase prices higher. Soybean meal futures are up over $115/ton since mid-August. On top of that basis has firmed another $10-25/ton in most locations. That is a $135 flat price swing in a short period of time. For a 1,000 cow dairy that is an additional $15,000/ month for protein.

Corn prices have firmed over a dollar per bushel in the same period. This is an unprecedented move given the time of year. Price changes of this magnitude are typically only seen when crop conditions deteriorate quickly. Strong China demand gets the credit for the current situation.

On the revenue side of the dairy business, milk prices are seeing a sharp sell off after briefly touching $18 Class III in the Feb/March 2021 contracts. Supply fundamentals continue to show increasing milk production, with November being reported up 3% over prior year by USDA. This type of a supply response will likely erode profit margins without a major increase in domestic or export demand.

Block cheddar spot CME Group prices have been trading in the $1.60’s and barrels in the $1.40’s. Buyers have stepped into the market more aggressively at these values which has stabilized the price decline.

Spot butter has been trading $1.30-1.54 over the past month, and currently trading in the middle of this range.

Nonfat dry milk prices are trading $1.15 in the spot session, with futures ranging from $1.12 in the front end of the market to $1.26 in the deferred contracts.

Whey prices have seen a nice run up, trading from 28 cents in early July to the current price of 46 cents. Whey prices have seen a light sell off in recent trading sessions.

Inventories remain tight. This should allow prices to remain well supported at current levels.

I would like to believe that 2021 couldn’t be as crazy as 2020, but it is starting to look like that may not be the case.

Feed prices will remain extremely volatile and milk prices will struggle with growing supply and distorted demand.

A jaunt into a Japanese dairy Dendo family farming on Hokkaido island

TOYOKORO, Hokkaido, Japan – In the northernmost region of Japan, the Dendo family is caring for the land and their livestock as rst-generation dairy farmers.

Tom Dendo and his family – his wife and their grown children, a son and two daughters – milk 40 cows on their farm located in the town of Toyokoro in the Tokachi Subprefecture on the island of Hokkaido. Dendo is the sole workman for the farm alongside his wife.

one hour to complete. After milking is taken care of, the barn is cleaned. Dendo feeds the cows at 8 a.m. In the afternoon, Dendo begins milking at 4 p.m. and is typically done for the day by 6 p.m.

“We make approximately 100 yen, including subsidies,” he said.

The farm is home to a collective herd of Holstein, Red and White Holstein, Jersey and Brown Swiss. Dendo said the cows produce 400 tons of raw milk every year. Dendo milks his cows using a pipeline system in a tiestall barn.

Japan traverses an archipelago of 6, 852 islands; Hokkaido is one of the ve main islands, joining Honshu, Shikoku, Kyushu and Okinawa. Hokkaido is the country’s second largest island but is home to a very small percentage of the country’s population.

According to The World Encyclopedia Book, much of the island is covered with forested mountains and hills.

From southwestern Hokkaido, a curved peninsula extends. But, northeast of the

peninsula is the Ishikari Plain, which is Hokkaido’s largest lowland and principal agricultural region. Along the east coast are small plains areas. The economy of the island revolves around the dairy industry, shing and forestry.

Toyokoro lies along the east coast of the island near the Pacic Ocean.

The Holstein, Red and White Holstein, Jersey and Brown Swiss herd is milked in a Ɵestall barn and produce 400 tons of milk every year. The island receives signicant snowfall and biƩerly cold temperatures in the winter, but experiences mild summers making the region aƩracƟve for dairy farming and tourism. farm is sent to a dairy plant where it is processed into cheese and butter.

According to livejapan.com, Hokkaido is dairy kingdom, producing 4 million tons of milk each year – a whopping 55% of Japan’s annual production of 7.3 million tons.

While the dairy industry is prevalent on the island, the number of households dairying has dwindled in recent years. According to the Ministry of Agriculture, Forestry and Fisheries, 18,600 dairy farms were in operation in 2014.

By 2018, that number had dropped to 15,700. The number of milking cows has fallen from 772,500 to 731,100 in the same period.

Dairy cows can thrive in the island’s climate. Similar to the state of Maine, Hokkaido has cool summers and cold winters. Rain is plentiful in the country but varies greatly depending on region. The mountains of the Sea of Japan coast may receive 63 inches while the Sea of Okhotsk coast may have 31 inches of precipitation.

Dendo said wintertime temperatures can dip as low as 20 degrees Fahrenheit below zero. The area is subarctic; snowfall can accumulate as much

as 400 inches on the mountains near the Sea of Japan and measure near 70 inches on the Pacic Coast.

Because of the area’s plentiful snowfall, the area is a popular destination for snow sports. The area has several winter festivals and ski resorts. In addition, because Hokkaido is Japan’s coldest region and is less humid in the summertime than other parts of Japan, tourism is a beaming industry.

Dendo said their herd is fed a diet based around grass silage which they produce on their land. They also feed purchased potato pulp and various grains. He said common crops grown in the area are soybean, potato, wheat, corn and beets. A common feature to many farms in Japan are terraced elds.

Rice paddies are also characteristic to the nation as rice is Japan’s leading crop.

While the dairy industry in Japan will no doubt continue to face challenges, from limited farm land to a diminishing population of active dairy farmers to trade and much in between, Dendo said he is happy to reap the benets of a life spent on his little island dairy farm.

DODGEVILLE, Wis. – For grassbased dairy farmer Scott Mericka, grazing is the ideal way to farm. Mericka keeps his 200 cows on pasture yearround, letting them graze 250 days a year starting mid- to late-April on a cereal rye cover crop until early or midDecember eating stockpiled pasture as well as oat, pea, forage, kale and swedes on his dairy near Dodgeville.

“Grazing is an enjoyable and profitable way of farming that rewards you with a high quality of life and less stress,” Mericka said. “If your goal is to have a business that is environmentally and economically sustainable, and you’d like to bring your kids into it someday, then grazing is the way to go.”

Wanting to share what he has learned, Mericka joined Grassland 2.0, a new project seeking to foster the growth of grassland agriculture in the upper Midwest.

Funded by a United States Department of Agriculture grant, Grassland 2.0 is based at the University of Wisconsin-Madison and is also partnering

with the University of Minnesota, the Savannah Institute, Green Lands Blue Waters, Michael Fields Agricultural Institute, the Land Institute, GrassWorks Inc., the Croatan Institute and the Pasture Project.

“If we want to have a sustainable agriculture system by the year 2050, what would that look like and how do we get there?” said Laura Paine, outreach coordinator for Grassland 2.0 and vice president of GrassWorks. “Grassland 2.0 looks at managed grazing from the 30,000-foot level to help answer those questions. We also want to reach out and engage the farming public, including those farmers not interested or opposed to grazing. We need to know what their barriers and objections are.”

After graduating from college, Mericka’s dream was to milk cows and run a dairy.

“I moved to California and ran an organic farm but found myself sitting in a payloader or driving tractor, and that wasn’t why I enjoyed farming,” said Mericka, a New Mexico native. “I always enjoyed grazing – that was my sweetheart.”

This rst-generation farmer found what he was looking for in Wisconsin.

In 2010, Mericka became a herdsman on a grass-based dairy near Dodgeville.

ConƟnued from GRASSLAND | Page 16 and Mericka and his business partner, Andy Hatch, bought the farm in 2014. Mericka milks 200 Kiwi crossbreds – a small, easy-to-manage grazing cow that is a mix of New Zealand Friesian and New Zealand Jersey.

“Grazing is a lifestyle and matches what I want to do,” Mericka said. “It involves less tillage, herbicide, fertilizer, tractor driving and diesel, and offers better excretion of manure naturally.”

Mericka and Hatch own two businesses – Grass Dairy LLC and Upland’s Cheese LLC. Hatch is a cheesemaker and handles that side of the business while Mericka manages the dairy.

“We make cheese with a little over half of our milk and sell the other half through Rolling Hills Dairy Cooperative’s Cows First program,” Mericka said. “The co-op pays a premium for pasture access, which is an incentive for famers to get cows outside if they can. It’s not a lot of money, but it helps.”

Cows on Mericka’s farm are given two 2.5-acre paddocks daily. Mericka uses break wires to refresh paddocks if needed throughout the day. Of the 600 acres Mericka farms, 35 acres are devoted to corn silage while the rest is in pasture or hay.

“Farmers can cut production costs signicantly using a grass-based farming model – a fact proven by years of data,” Paine said. “Grazing usually leads to a reduction in production per cow, but the decrease in production costs outweighs the decline in milk.

The cost per pound of milk produced is signicantly lower. At the end of the year, you have more money in your pocket.”

Grassland 2.0 is helping pave the way for growing grassland agriculture and putting more livestock on grass. Formed by farmers and researchers to create more opportunities for managed grazing and other types of perennial grassland farming, Grassland 2.0 wants to help nd the answers to saving rural America and the small family farm.

“The 100-cow to 300-cow dairy is an endangered species in the state, and fewer, larger farms on the landscape create economic challenges for communities,” Paine said. “Grassland 2.0 brings together a network of farmers, researchers, agency and extension staff, food industry reps, cheesemakers and citizen groups seeking transformative solutions to the growing number of threats facing Midwest food and farming systems.”

Converting livestock production to grazing-based systems helps protect water quality, soil health, biodiversity and wildlife habitats while creating economically sound and protable farms, Paine said. In a wellmanaged grazing system, capital costs and production costs can be minimized, resulting in increased protability while delivering signicant ecosystem services.

Grassland 2.0 will also examine policy, supply chains and premiums for high-quality, grass-based dairy and beef products. The project aims to develop grass-fed supply chains that can benet many partners.

“We’d like to build supply chains that will allow farmers raising cattle on pasture to receive a premium for their milk while building consumer demand for grass-fed milk and dairy products,” Paine said.

Paine said the milk from such farms has qualities that make it valuable for creating specialty cheese and other value-add products.

“Scott’s and Andy’s award-winning Pleasant Ridge Reserve cheese is a testament to that,” she said.

“I think there’s a much bigger market than we have right now, and we’d like to connect the dots between organizing pools of farmers and working with interested processors.”

Mericka is trying to build a year-round grazing plan that uses stockpiled annual crops and stockpiled perennial pastures containing a combination of forage sorghum, corn, sunower and grazing brassicas like kale, sugar beet and swedes as well as some rst-crop hay.

The farm is a seasonal dairy in which cows are dried off in January and calve during a 50-day window from mid-March through the rst week of May. Mericka outwinters his cows, feeding silage under a break wire and rolling out bales of hay when cows are dry.

“I’m really excited about Grassland 2.0,” Mericka said. “The group of people and the minds that are a part of this are phenomenal. My hope is we can nd farmers like myself to grow a new generation of graziers from different backgrounds and ethnicities.

They are usually also dealing with how the kids are handling it, facing new homeschooling challenges with COVID-19 and dealing with farm stress on top of it.â€?

COVID-19 has also implicated many changes in social interaction, which can alleviate some of the side effects of stress like loneliness.

“Too much acute stress, layered and piled up can affect the thought process of the brain,� Tranel said. “It makes thoughts harder to process, since your emotions are much more involved with the decision-making process.�

Tranel’s advice for when decisions are becoming harder to process is to write things down.

Too much stress over time will shorten nerve endings, literally frying our brains, Tranel said. By reinterpreting negative circumstances for positives (think: glass half full), we can use stress as a tool of progress and growth.

According to Paine, well-managed grazing is a friend to soil, helping control erosion and boosting soil health. If soil is covered with perennial grass that is green nine months of the year, then very little or no soil from those ďƒželds is lost. Protected under the sod, phosphorous attached to soil particles also stays intact. Managed grazing signiďƒžcantly reduces pesticide use and the need for fertilizer inputs, and water quality downstream is positively impacted as well. “If we can develop business plans to help farmers transition from their existing setup into a grazing system, it would reduce the learning curve,â€? Mericka said. “We need models and budgets that farmers could adopt to see that transition play out.â€?

Paine said managed grazing should be looked at as another tool in the farm-

er’s toolbox. “It’s a ďƒ&#x;exible system that every dairy farmer could consider for at least a portion of their animals,â€? Paine said. “Managed grazing is both an art and a science, and a lot of it can be learned best by learning from your peers. We want to build relationships for farmers who want to move in this direction by connecting those new to grazing with experienced graziers.â€?

Mericka, the father of two boys, Everett, 5, and Henry, 4, said grazing is family friendly and a good environment for raising kids. “I didn’t get into this to put a grassfed label on my product,� Mericka said. “It’s all about taking care of the environment and working with the landscape.

There is perennial sod on most of our land for much of the year. If we have heavy rains, we get less runoff, and if we have a drought, there is less dust.

Grazing is not perfect. We got a ways to go to make it a more viable farming system, but it’s pretty darn close.�

1 teaspoon oregano 1 teaspoon basil 1 package oven-ready lasagna noodles 45 ounces pasta sauce

Preheat oven to 350 degrees F. Brown the ground beef with the minced garlic and set aside. In a separate container, combine cottage cheese, egg, basil and parsley. In a 9-by-15 lasagna pan, start with 1 cup of sauce on the bottom, three lasagna noodles, ground beef, cottage cheese mixture and both cheeses. Put more sauce over the layer and keep repeating the process until ingredients are gone. Bake 1 ½ hours.

Chicken bacon ranch hotdish 3 1 2 1

large chicken breasts, diced pound bacon, diced and fried jars alfredo sauce cup whipping cream

½ bottle ranch salad dressing 2 bags Mozzarella cheese 2 12-ounce bags medium size egg noodles

Dice bacon and fry in large fry pan. Set aside on paper towel to drain. Do not remove grease from pan. Add diced chicken to frying pan. Cook until no longer pink. Add bacon back to chicken. While cooking meats, cook noodles until al dente. Drain noodles, place back in pot. Combine Alfredo sauce, whipping cream, salad dressing and one bag of Mozzarella cheese to noodles. Add meat mixture. Stir to combine. Dump mixture into baking dish, top with bag of Mozzarella cheese. Bake at 350 degrees for 40 minutes or until golden brown and heated through. Serve with a garlic bread.

NEXT SPECIAL FEEDER CATTLE & BRED BEEF COW AUCTION Tuesday January 5, 2021 at 11:00am Expecting 700-900 head!

Make ahead mashed potatoes 12 medium potatoes, boiled until soft 1 package cream cheese 1 cup sour cream

Salt, garlic powder and pepper, to taste ¼ cup butter, melted Paprika

Beat cooked potatoes in mixer on high. Once potatoes are mashed, turn mixer to low and add cream cheese, sour cream and seasonings to taste.

Beat on medium speed until smooth. Pour in a greased 9-by-13 pan. Pour melted butter on top and sprinkle with paprika. Bake at 350 degrees F for 1 hour, or cover and refrigerate until needed. You can also freeze.

Busy day meatloaf 1 egg, lightly beaten 1 cup beef broth or water 1/2 cup quick-cooking or old-fashioned oats 1 tablespoon dried minced onion 2 teaspoons dried parsley akes 1 teaspoon Mrs. Dash salt-free seasoning, any avor

2 pounds ground beef (or a mix of beef and sausage) Sauce 1 cup ketchup 1/2 cup packed brown sugar 1 teaspoon Worcestershire sauce

Combine in a large bowl all except the beef/sausage and sauce ingredients. Crumble beef/sausage over mixture and mix well. Pat into a 9-by-13 pan. Combine sauce ingredients, if using, and pour over meatloaf (can save some for serving). Bake, covered, at 350 degrees for 45-60 minutes or until a thermometer reads 165 degrees.
