Iowa couple adopts four siblings

GUTTENBERG, Iowa – Christmas for Nick and Jessie Westhoff will be extra-special this year. The Clayton County farm couple has completed its adoptions and will have the whole brood snug at home, gathered around the tree and wearing the Westhoff name.

Last Christmas made its own batch of memories for Nick and Jessie. Their trio of daughters – Rashell, 6, Anna, 4, and Lilly, 3 – was formally and ofcially part of the family. Since then, Cole, a 20-month-old boy, has entered the Westhoffs’ lives.

Jessie and Nick learned several years ago that they could not have children on their own. Nevertheless, Jessie, 31, and Nick, 30, longed to be called Mom and Dad. So, they looked into adoption, rst through a private agency. That did not work out, because of Nick’s battle with brain cancer.

“They don’t want to place children in homes where they might lose a family member,” Jessie said.

Nick’s cancer surgery is ve years in the rear-view mirror. His checkups continue, but all is going well.

After being initially turned down as adoptive parents, Jessie and Nick, though discouraged, decided to try another avenue: foster parenting. They attended a three-hour class every week for 10 weeks.

The goal of the classes was teaching parenting techniques and how to cope.

“Just basically how to handle children that have been through a lot,” Jessie said.

After the Westhoffs earned their foster care license, they waited to be called upon to actually be foster parents. Guttenberg, in northeastern Iowa, is a rather small community, so their telephone did not ring off the hook with foster parent proposals, Jessie said.

But, in time, Nick and Jessie did care for a couple boys for a week, as a respite for their real foster parents.

And, a teenage girl became their foster daughter for a while.

Nick and Jessie wanted to adopt her, to start lling the empty spot in

their hearts, but it was not to be.

“She just kind of decided that farm life wasn’t for her,” Jessie said.

Although their dream of building a family that included children’s laughter and bedtime stories met its share of roadblocks, 2014 brought renewed hope and four children.

Rashell, Anna and Lilly began living with Nick and Jessie on weekends.

Then, two days after Christmas, they ofcially became the Westhoffs’ foster children. Nearly a year later, in August 2015, their adoptions became nal.

Meanwhile, Cole came to the Westhoff farm, rst as a 5-month-old foster child, in July 2015. A year later, his adoption was nalized.

“We’re very grateful that we got all our kids,” Jessie said. “All of them are biological siblings, which is nice. We could keep the family together.”

Today, it’s virtually impossible to tell the quartet of Westhoff kids are adopted. Instead, they t in with their mom and dad the way countless children on countless farms do.

While Cole and Lilly help their parents much of each day, the older girls attend kindergarten and preschool at St.

Besides Nick and Jessie, relatives have pitched in to help make the four youngsters feel like and become part of the family. Nick’s parents, Gary and Barb Westhoff, live across the road, while Jessie’s parents, Tony and Mona Adams, live 10 minutes away. Jessie’s sisters and Nick’s brothers round out the crew that’s available and happy to baby-sit or lend a hand around the 130acre, 78-cow farm.

Nick and Jessie have included the children’s biological grandparents and great-grandparents in the circle of family.

“We think it’s important they keep those relationships,” Jessie said.

Now for the obvious question: How have things gone for Nick, Jessie and their new family?

“The kids have adjusted really well,” Jessie said. “It

seems like so long ago, but I remember working with them on calling us Mom and Dad. When they rst came here, we were Nick and Jessie.”

The four little Westhoffs have also taken to the rural lifestyle like cows to clover.

animals,” Jessie said. “It’s almost like they were supposed to live on a farm.”

Most of the children have a few, simple chores. “[The girls] scrape poop every night. If they make bad choices, they have to push up a little feed,” Jessie said.

Cole, although only knee high to a barn scraper, also likes to join in the manuremoving fun.

“He will grab a scraper and scrape poop,” Jessie said.

“If you take the scraper away, he gets upset. Or if he’s just standing around, doing nothing, he’ll grab a scraper and go to work.”

The children also try their hands at milking.

“We let them help us strip the cows out and help us wipe,” Jessie said.

Come milking time, especially in the evening, the barn is the center of activity. Nick and Jessie have cows and chores to tend to. The kids stay busy by helping out as best they can, or by visiting the toy pen that’s past the rows of Holsteins.

Nick said he suspects they have at least one future farmer among the youngsters.

“It’d be cool if one of them wants to come back to the farm,” Nick said. “But that’s completely up to them.”

Along the way to that happening, he and Jessica plan to savor all the growing-up events their children will go through: 4-H and FFA activities, showing calves and cows, learning

Nick and Jessie hope 2017 will be quiet and uneventful, compared to 2015 and 2016.

The red tape of trying to adopt four children is nally unraveled.

“It was an emotional day when we adopted the girls,” Jessie said. “When we adopted Cole, it was just pure joy. Our family was complete. We could celebrate.”

ST. CLOUD, Minn. – January provides a time for organic producers to come together and learn.

The Minnesota Department of Agriculture is hosting the annual Minnesota Organic Conference Jan. 12-13 at the River’s Edge Convention Center

in St. Cloud, Minn.

“It’s denitely a producer-based conference,” said Cassie Dahl with the Minnesota Department of Agriculture.

“Last year, we had over 600 attendees – the most we’ve ever had.”

There will also be 80 businesses featured in the trade show, which Dahl said sells out every year.

The 35 seminars throughout the conference will cover a variety of subjects. Four of the six livestock sessions will focus on dairy with topics including vaccination, y and parasite control, holistic animal health and transitioning livestock to organic cer-

Fernholz shares tips for organic farmers

ROCHESTER, Minn. – Weeds can be a big topic of conversation for organic farmers.

“You’re never going to control weeds, but you can manage them,” Carmen Fernholz said.

Fernholz presented “Managing Weed Pressure in Organic Cropping Systems” during a day-long workshop about transitioning to organic farming hosted by the University of Minnesota Extension, Dec. 7, in Rochester, Minn.

Fernholz knows about managing weeds from experience.

He and his wife, Sally, operate 425 certied organic acres near Madison, Minn. He started farming in the early 1970s and started farming organically in 1975.

“I’ve been fortunate to watch the organic movement evolve,” he said.

Making a conscious effort to farm organically, a farmer needs to start with the right attitude, Fernholz said.

“If you’re going to be worried about the neighbors, or whatever, it won’t work,” he said. “Don’t farm according to the neighbor, farm how you need to on your farm.”

Over the years, he’s learned a large amount of information.

“Every [organic] operation must have a dual purpose – fertility and weed management.

They go hand in hand,” Fernholz said. “Fertile soil will enhance the crops and make them compete better with the weeds.”

There are three main aspects for weed management.

The rst is to limit the amount of damage weeds do to a crop because of competition. The second is to minimize the size of the future weed population.

“Keep the weeds from going to seed,” Fernholz said.

The nal aspect is to prevent the introduction of new, more problematic weed species.

“Weeds can survive and persist, so try to stay on top of it,” Fernholz said.

To manage weeds, farmers must rst learn more about them, Fernholz said.

“You start to understand the nature of the weeds and the fear of managing them will start to go away,” he said. “I’m still learning.”

Reading, attending workshops and seminars, and talking to other farmers are all good sources of information.

“But adapt information instead of adopting it,” Fernholz

said, mentioning that not all techniques work for each farm.

“One size doesn’t t all.”

All elds are different, so farmers need to practice patience, but also timeliness.

Once farmers learn more about the weeds and are ready to be patient and timely, they can use several techniques to help manage them.

“Mother Nature is in charge always. The best thing to do is try to work with her,” Fernholz said.

Biological options include crop rotation, cover crops, weed seed predation, compaction and planting dates. Mechanical options are split tillage, tine weeding, rotary hoeing, cultivating and hand weeding.

What types of crops within a rotation depends on a farm’s purpose and its location.

“I look at rotations as a work in progress,” Fernholz said.

He is always reevaluating how long to keep a crop before it should be rotated. On his farm, Fernholz has found value in adding alfalfa to his rotation, and has been doing so for nearly 20 years.

Although Fernholz said cover crops can be somewhat limiting for row crops, he said they help keep weeds at bay.

Soil compaction increases weed pressure.

“Tread lightly,” Fernholz said. “Weeds love soil compac-

tion. It can impact yields up to 55 percent.”

Because of this, Fernholz suggests to not operate machinery when moisture levels are at or near eld capacity.

isn’t necessarily good. This is where patience comes into play.

“If I get out there too early the weeds take over,” Fernholz said.

Too late, and the crop won’t mature quickly enough within the season.

“You have to pick the most opportune time to do the most damage to the weeds,” Fernholz said.

Another way to help keep weeds out is to establish weed seed predation.

“Birds, eld crickets, ground beetles and eld mice all eat a lot of weed seed. You have to create an environment for them,” Fernholz said.

Mechanically, there are several pieces of equipment to help keep weeds out of elds.

When in doubt, Fernholz said to tine weed or rotary hoe.

Fernholz also mentioned split tillage as a method to keep weeds low. The idea is to till early in the season – late April or early May. “I want to trick the weeds into growing,” Fernholz said.

“Do that as early as possible to get the weeds growing. Then work the ground a few weeks later to take the weeds out and put the crop in.”

Regardless of the method used, Fernholz said it’s important to document everything.

Take pictures of what types of weeds are found and where, and keep track of the types of crops, rotation and tillage work.

“Take any notes you can think of,” Fernholz said. “They may not seem important at the time, but it is.”

Over the course of its 15 years, Dahl said the conference has grown. In the ve years she’s been involved, Dahl has seen farmers of all ages.

“And there have been more and more people who aren’t organic, but are interested in maybe taking the step to transition,” she said. “I’ll see new people each year and then notice they stick around.”

Despite its growth, the conference is still a comfortable size.

“Because it’s not too large, it gives an intimate feel and opens up a lot of time for discussion and sharing between farmers, and with people at our trade show,” Dahl said.

That’s one aspect of the conference Dahl enjoys best.

“I like the social aspect and the networking. I think that part is really fun,” she said.

From 4:30-7 p.m. on the rst day of the conference, there will be a reception and social in the trade show area.

After the conference ends, Dahl hopes producers leave feeling refreshed and lled with new ideas to take home.

“We hope their knowledge has grown and they’ve been able to gure out a solution to a problem they have on their farm or discover a better way to do things – either from our sessions or from networking with each other,” she said. “We’re looking forward to the conference.”

Gambling with milk price

Ledman considers ve wildcards for 2017

ST. CLOUD, Minn. – Building on more than three decades of experience in the dairy industry, Mary Keough Ledman of the Daily Dairy Report addressed “Five Wildcards for 2017” on Nov. 30 at the Minnesota Milk Dairy Conference and Expo in St. Cloud, Minn.

Ledman grew up on a 160-acre, 50cow dairy in southern Wisconsin and has worked on farms in Germany, Japan and New Zealand. It was during those foreign experiences that she developed an interest in agriculture policy – an interest she’s pursued throughout her career.

After earning a degree in agricultural journalism and a master’s degree in agricultural economics from Texas A&M University, Ledman worked with USDA, Kraft and Stella Foods. She founded Keough Ledman Associates, a dairy economic consulting rm that provides monthly dairy product and milk price forecasting.

In 2012, Ledman acquired the Daily Dairy Report from the Chicago Mercantile Exchange.

With her background, Ledman was well prepared to look at the 2017 wildcards – helping producers connect the dots of the international data points and explaining what it means to producers’ milk checks.

First, the global dairy sector.

Global milk production and dairy product demand are dominated by a few players. Europe, the United States and India continue to be global milk production leaders.

While the European Union has reduced production in year-over-year production, the United States continues to

Reduced production in Europe and New Zealand has beneted the United States The countries that are increasing milk production at the highest rates tend to consume that gain domestically or in the region – they have not become major, consistent exporters.

India leads the world in butter production, consuming nearly all of it. The European Union and the United States lead in cheese production.

There’s a domino or ripple effect in dairy. Although China is the largest or second largest producer of whole milk powder, it also imports huge amounts. When it was unable to get it from traditional manufacturers, it turned to Europe. That shorted skim milk powder and raised prices, also

affecting the price in the United States.

The perfect storm for high prices occurs when milk output in Europe, the United States and New Zealand is lower than the historical growth rate. The opposite scenario is also true.

“The rst half of this year was extremely painful due to increased production around the world, but things look better for 2017,” Ledman said.

Next is the changing landscape of U.S. milk production.

While year-to-date change in milk production for October showed the majority of dairy states continuing to increase production, three states – Utah, Florida and Virginia – showed a decline in production in October 2016. California showed its rst year-over-year gain in almost two years as things have stabilized with lower feed and energy costs.

U.S. milk per cow and total dairy cow numbers continue to run above previous years. The U.S. dairy herd is the highest since 2008.

“We’ll be self-regulating on milk production. Things look a lot better for the second half,” Ledman said.

Ledman said continual strong yearover-year growth in milk production from the Dakotas and looking east will continue to put downward price pressure on the traditional premium structure.

The lack of processing capacity, particularly in Michigan, will result in more milk traveling west to nd a processing home. And, recovery in Texas milk output is expected to ow into the southeast and compete with supplemental milk supplies from the North. More processing capacity is needed in the Mideast to Midwest.

The third wild card is ample stocks of butter and cheese.

Cheese, butter and nonfat dry milk stocks are seasonally declining, but remain ample. The global nonfat dry milk

market has been plagued by large European stocks. Despite record cheese stocks, cash cheese markets remain robust. Recent large monthly draw downs in butter stocks are likely to buoy the market in early 2017.

Large bakeries were offered forward contracts that they accepted for piece of mind.

“Butter prices jumped 13 cents today,” Ledman said. “American cheese production is at with a year ago. Stocks are higher year-over-year. Imports are keeping U.S. prices higher. Now that prices have converged, not as much is coming in.”

And, another wild card for 2017 is price convergence.

“There are consequences to misaligned prices,” Ledman said. “The pace of exports falls when prices aren’t competitive. Exports increase when they converge.”

When German cheese prices were low because of weaker European markets, U.S. cheese exports were close to a 10-year low. In August, cheese prices converged between the U.S. and the rest of the world, reducing imports. The butter market is now on par with Europe. A year ago, the U.S. imported because our prices were high.

The nal wild card – weather.

While California is still dry and drought is growing in dairy areas of the southeast that depend on pastures and grazing, Ledman described the Midwest as God’s country.

In turning her thoughts to price outlooks, Ledman said, “I’m not too excited about the second half of 2017 for cheese, but butter is the opposite. It’s holding at about the $2 price level; I feel it will hold.”

For Class III milk, Ledman’s outlook is for prices to reach $17 in January, then riding closer to $16 before rising slowly from July to October to $18. Her forecast for Class IV dips to $14 in January, then slowly rises to over $18 by October.

A clean parlor will help manage environmental pathogens and help keep cows and milkers healthy.

A quiet, calm parlor will help stimulate milk letdown and reduce potential teat damage of milking machines pumping when little milk is coming out.

Loud music or milkers yelling may cause adrenaline release in the cows, which prohibits milk letdown. Lighting in a parlor is often overlooked, but shouldn’t be underestimated. A well-lit parlor benets the cows, as they like to clearly see where they are going and what’s going on. It also benets employees, as they are able to see the udder well and ensure its cleanliness. Good lighting can also aid in the visual examination of milk when stripping the udder during prep.

Next, think about the management of the parlor.

How are cows brought in? How are they prepped for milking? How long does it all take? The ow of your parlor matters, from the moment that pump turns on to the moment it turns off. Cows should be brought in efciently, while still allowing them to move at a comfortable pace. Consider grouping cows by milking speed, or, at the very least, keep your slowest milkers until the end. While prepping cows, are all of the milkers (if there are multiple) doing the same thing? Is the prep pattern always the same? Is it a timely? A quick review of important milking preparation times: • The teat skin surface requires 10-20 seconds of stimulation for optimum milk letdown • Teat dip should be on the teats for 30 seconds to effectively kill bacteria on the teat surface • Prep-lag time, or the time it takes from initial stimulation to attachment of the milking machine should be 60-120 seconds.

Preparation of cows in a timely manner that allows for proper stimulation and contact time is crucial to a well-run parlor. It also has a direct impact on parlor throughput, which is especially important in herds that run the parlor nearly 24 hours a day.

The environment and management of your parlor play critical roles in ensuring it is efcient, productive, and in the end, protable.

2017 production predicted to see 2.6 percent increase

The Agriculture Department again lowered its milk production forecasts for 2016 and 2017 from a month ago in its latest World Agricultural Supply and Demand Estimates (WASDE) report, “as slower growth in cow numbers more than offset slightly higher growth in milk per cow.�

2016 production and marketings were projected at 212.4 and 211.5 billion pounds respectively, down 100 million pounds from last month’s report on production. If realized, 2016 production would be up 3.8 billion pounds or 1.8 percent from 2015.

2017 production and marketings were projected at 216.8 and 215.9 billion pounds respectively, down 200 million pounds on production and down 100 million pounds on marketings from last month. If realized, 2017 production would be up 4.4 billion pounds or 2.1 percent from 2016. “Fat basis exports were raised for 2016 on higher butter exports, and skim-solids basis exports were increased on stronger sales of lactose. Fat basis exports for 2017 were reduced on expected increased competition in cheese markets, but strength in lactose and nonfat dry milk (NDM) exports are expected to support higher skim-solids basis exports.� “Import forecasts were lowered from last month for both fat and skim-solids bases. Fat basis ending stock forecasts for 2016 and 2017 were raised on higher expected cheese stocks. Although the skimsolids basis ending stock forecast for 2016 was raised on higher-than-expected cheese and NDM stocks, the forecast for 2017 was unchanged as robust NDM exports are expected to draw down stocks during the year.� “Price forecasts for cheese and butter were raised for 2016 on current price strength, but forecasts for NDM and whey prices were unchanged. Product prices were forecast higher for 2017 as domestic demand strength is expected to carry into next year and higher export demand is expected to support NDM and whey prices.�

As a result of the higher cheese and butter price forecasts, Class III and Class IV milk price forecasts were raised for 2016 and 2017. Look for the 2016 Class III to average $14.75-$14.85 per cwt., up a nickel from last month’s report, and compares to $15.80 in 2015 and $22.34 in 2014. The 2017 Class III average was raised to $15.85-$16.65 per cwt., up 45-55 cents from a month ago.

The Class IV milk price is now forecast at $13.65$13.85 per cwt., up a dime from last month’s projection and compares to $14.35 in 2015 and $22.09 in 2014. Look for a 2017 average of $14.20-$15.10, up 55-65 cents from a month ago.

As it always does, USDA’s monthly Livestock, Dairy, and Poultry Outlook, issued Thursday, echoed projections contained in the WASDE report. The Outlook reports that “Based on recent data, the fourth quarter forecast for number of milk cows is 9.335 million head, 10,000 fewer than last month’s forecast. Milk per cow in the fourth quarter was forecast 5 pounds higher, at 5,620 pounds per head.� “Small changes have been made in feed price forecasts from last month. The corn price forecast for 2016/17 is $3.05-$3.65 per bushel, an increase of a nickel on both ends of the range. The soybean meal forecast was unchanged at $305-$345 per short ton.

The alfalfa hay price decreased from $137 to $135 per short ton from September to October. Based on recent data, the milk cow estimate for the year has been reduced to 9.36 million head, 10,000 less than

HGD reports that “The massive uptick in butter exports were shipped to Canada, 2,275 metric tons (MT), up 797 percent year over year, and hint toward the Canadian Dairy Commission underestimating demand into Fourth Quarter and creating a domestic shortage.�

HGD adds that, “Not only were butter sales sharply higher but cream exports took enough product away from the churn to drive U.S. butter prices higher into the holidays. In addition, nonfat dry milk (NFDM), whey protein, and lactose exports continue outperforming versus the prior year as Asia has picked back up their interest for U.S. product with their primary dairy trade partners, New Zealand & Australia, ďƒžnding themselves short of milk.â€? “Skim milk powder exports sales reached fresh highs for 2016 and were the highest since May 2015 due to demand from Southeast Asia and Mexico,â€? according to HGD. “Export volumes improved across the U.S. dairy sector from ingredients to butterfat. The only area of concern remains Cheddar cheese as competition from Oceania and the EU continue to grow.â€? “Oceania Cheddar accounted for 58 percent of Japan’s imports so far this year while the U.S. market share dropped to 11 percent versus 18 percent in 2015 and 27 percent in 2014. South Korea’s Cheddar imports have halved from the U.S., down 54 percent year-to-date, January to October, while imports from Oceania were up 19 percent year-to-date,â€? HGD reports. “The outlook for U.S. exports in the coming months looks bright as the rest of the world struggles to produce incremental milk,â€? HGD concludes. “If domestic and Mexican demand for dairy products remain ďƒžrm, it could provide serious price support in 2017.â€?

In other global news, HGD reports that the European Commission announced results of their ďƒžrst Skimmed Milk Powder tender. “Of the 22,150 MT that the Intervention program had offered, they will release just 40 MT, or about 88,184 pounds at a price level of â‚Ź2,150 per MT, or about $2,244 per MT, ($1.02 per pound at the current 1.0437 Euro per U.S. dollar exchange rate).â€?

FC Stone reports that “There were two bids accepted, the ďƒžrst at â‚Ź2200 for 20 tons and the second at â‚Ź2151, also for 20 tons. The accepted bids for product from the UK and Germany, 20 tons from each.

Looking at the age proďƒžle of the UK and German SMP available in the tender, the UK SMP is from July-August 2015 and the German SMP is from AugustOctober 2015. In total there was bidding interest for just less than 20,000 tons of the 22,150 tons available, with bids for just under 300 tons between â‚Ź19002100, just over 5700 tons between â‚Ź1800-1900 and just under 11500 tons between â‚Ź1700 and 1800. The next tender date has been scheduled for Tuesday January 3, 2017.â€? “We don’t believe this new information changes the ‘non-event’ reception of this ďƒžrst tender,â€? FC Stone concluded. “Buyers appear to be feeling out the market in a smart way, whereas the EU commission is exercising their policy of primum non nocere, ďƒžrst, do no harm.â€?

forecast last month. Milk per cow for the ďƒžrst quarter is forecast 10 pounds higher but is unchanged for the remainder of 2017.â€?

Price strength returned to the CME the second week of December despite plenty of product making its way to Chicago. The Cheddar blocks, after three weeks of decline, closed the week at $1.80 per pound, up 9 cents on the week and 36 cents above a year ago.

The barrels closed Friday at $1.70, up 12 1/4-cents on the week, 25 cents above a year ago, but an unsustainable 10 cents below the blocks. Twenty three cars of block traded hands on the week and 30 of barrel.

Midwestern cheese makers report orders are still strong, according to Dairy Market News (DMN).

Some manufacturers say they are slightly behind on orders or have been able to draw down on stocks. Inventories for barrels remain a little long. Some barrel manufacturers suggest they have sold a few loads of milk to bottling operations in lieu of making more barrel cheese. These manufacturers are hopeful that the spread between barrel and block prices will narrow and improve the economics. Milk supplies are generally well balanced right now and extra spot loads are not widely offered, according to DMN. Western cheese makers continue to ďƒžll holiday orders and some additional block demand. Domestic retail demand is solid. Cheese production is active with good volumes of milk ďƒ&#x;owing into the vats.

Block manufacturing is in good balance with demand.

Inventories are steady but barrel cheese is a little long, with some processors selling barrels at sizeable discounts to published prices Spot butter, after dropping 12 cents the previous week, closed Friday at $2.19 per pound, up 12 1/2-cents on the week and 13 cents above a year ago, with six cars sold on the week. The market jumped 9 1/2 cents Friday morning alone.

Most of holiday butter production has been ďƒžnished in the Central Region, according to DMN. Cream availability for churning is higher as cream loads moving into Class II are waning. However, churners are not eager to buy spot loads, as internal cream supplies are adequate. Inventories are starting to build into cold storage. Requests from retailers are lower, but are generally steady from food service.

Western butter output is steady. Cream is more readily available as Class II manufacturers wind down ahead of the holiday season. Domestic butter demand is solid. Although manufacturers expect it to ease back a bit over the winter holidays, some suggest demand may stay seasonally strong for some time. There has also been relatively good international demand for butter. Many contacts are eager to see how much inventories have changed in the last month when cold storage numbers are reported on December 23.

Cash Grade A nonfat dry milk ďƒžnished the week at $1.02 per pound, 4 3/4-cents above the previous week and 24 cents above a year ago, with 28 cars sold.

California Class I milk prices start 2017 on a down note. The California Department of Food and Agriculture announced the January Class I price at $18.77 per hundredweight (cwt.) for the north and $19.04 for the south. Both are down 45 cents from December but are 89 cents above January 2015.

October U.S. export data had some encouragement. HighGround Dairy’s (HGD) analysis reported that “China’s appetite for whey products continues to aid U.S. exports with both whey protein concentrate categories at record levels.�

that “Corn and soybean meal prices are essentially the same as last month, with corn up 0.6 percent and meal up 4.5 percent respectively in the past month, with soybean prices up 6.75 percent.”

“The U.S. corn crop and soybean crop will have record yields and production,” Dunn states, and “Exports of corn and beans are large despite the strong dollar.”

“Income over Feed Costs (IOFC) Penn State’s measure of income over feed costs rose by 7.5 percent in November from its October value, as higher milk prices combined with stable feed prices. November’s income over feed cost is 56 cents lower than last November, and the lowest November in several years.

Income over feed cost reects daily gross milk income less feed costs for an average cow producing 65 pounds of milk per day.”

“The milk margin is the estimated amount of the Pennsylvania all milk price that remains after the feed costs per hundredweight of milk production are paid.

Like income over feed cost, this measure shows that the September Pennsylvania milk margin was 0.6 percent higher than in August. The Pennsylvania drought is easing,” Dunn concludes, “although any change now will have little effect on 2016 production.”

Looking at the demand side; the October Consumer Price Index (CPI) for all food was 248.1, down 0.4 percent from a year ago. The dairy products index is 218.2, down 1.7 percent. Fresh whole milk was down 1.8 percent; cheese was down 1.8 percent; and butter was down 6.0 percent.

Fluid milk consumption lost some ground after two months of small gains. October packaged uid milk sales totaled 4.18 billion pounds, down 3.5 percent from September 2015, according to DMN. Conventional product sales totaled 3.96 billion pounds, down 4.0 percent from a year ago; organic products, at 217 million pounds, were up 6.3 percent.

Organic represented about 5.2 percent of total sales for the month.

Whole milk sales totaled 1.2 billion pounds, up 1.4 percent from a year ago, with year to date running 4.6 percent above a year ago and making up 28.9 percent of total uid sales. Skim milk sales were down 13.8 percent from a year ago and down 11.3 percent year to date.

Total packaged uid milk sales for the ten months of 2016 totaled 40.65 billion pounds, down 0.8 percent from the same period a year ago. Year-to-date sales of conventional products, at 38.5 billion pounds, were down 1.1 percent; organic products, at 2.1 billion pounds, were up 5.6 percent. Organic represented about 5.3 percent of total uid milk sales so far in 2016.

Cooperatives Working Together (CWT) accepted 13 requests for export assistance this week from cooperative members to sell 2.52 million pounds of Cheddar and Monterey Jack cheese, and 440,925 pounds of butter to customers in Asia, the Middle East, North Africa and Oceania. The product has been contracted for delivery through March 2017 and put CWT’s 2016 sales at 51.4 million pounds of American-type cheeses, 12.4 million pounds of butter (82 percent milkfat) and 21.32 million pounds of whole milk powder to 23 countries.

cheese. The rising U.S. dollar (or falling euro) could boost the premium to 26 cents if the dollar and euro reach parity—something that has not happened since 2002.

Less European milk production has translated into fewer butter and cheese exports.

European butter exports were extremely strong in the Àrst half of 2016, exceeding all years since 2007. Year-over-year gains have slowed since April’s peak and remained positive until October. In 2016, the United States has been Europe’s second largest butter market, following Saudi Arabia.

Through October 2016, EU trade with the United States reached 15,408 MT, up 3% from 2015 and 117% higher than 2014. ...unlike in Europe and Oceania, U.S. milk production continues to increase compared to the prior year, resulting in more dairy product production. As a result, it is unlikely that the U.S. butter market will maintain the current premium level. European cheese exports fell 7.7% on a daily average basis in October from the prior month to 69,553 MT, or 153.3 million pounds, but still exceeded last year’s level by 7%. The United States is Europe’s largest market, accounting for 18% (117,130 MT) of EU cheese exports in 2016, up 1% from last year. In addition, the European Union posted strong year-to-date percentage gains in trade to key U.S. cheese export markets: Mexico up 47%; South Korea, up 31%; and Japan, up 14%. Dec. 20 - U.S. Output Unsinkable as GDT Prices Falter

U.S. milk production in November of 17.1 billion pounds was consistent with output gains logged in September and October, according to the latest USDA Milk Production report released this afternoon. Stronger milk prices likely drove November production improvements, with most of the 23 states posting a better performance relative to November 2015. USDA estimates that the U.S. milking herd of 9.339 million head is slightly higher than October’s 9.335 million and 17,000 more cows than the previous year. Central states remain the engine behind U.S. milk production. Given current forecasts provided by milk futures markets, stronger output and expansion is expected to continue into 2017.

Dec. 21- U.S. Milk Output Continues to Expand

U.S. milk production totaled 17.1 billion pounds in November 2016, up a slight 0.6% compared to October on a daily average basis and 2.4% more than November 2015.

An above-trend 2.2% increase in milk production per cow and a 17,000-head increase in the U.S. dairy herd compared to last year were the primary drivers behind greater year-over-year (YOY) milk output. Five states accounted for 70% of the 396-millionpound YOY increase in milk output. Texas led the gainers with a YOY increase of 94 million pounds, followed by Wisconsin, up 52 million pounds; New York, up 50 million pounds; Michigan, up 45 million pounds; and Idaho with a 41-million-pound increase.

California posted its second YOY increase in milk output since December 2014. At 3.212 billion pounds, milk output in the largest milkproducing state rose 0.2% above last year, due entirely to greater output per cow that offset the 11,000-cow YOY drop in California’s dairy herd. Granted California’s YOY milk production increase in November pales in comparison to October’s 2% YOY gain. U.S. milk production is expected to continue to post strong YOY gains going forward. USDA indicates the U.S. dairy herd expanded by 4,000 head in November to 9.339 million cows, but the herd is still 2,000 head shy of August’s 9.341-millionhead peak. Across much of the United States, dairy operations faced harsh winter weather conditions in December, which could temper output per cow in upcoming months. National Dairy Product Sales Report Prices for the week ending Dec. 17 were mixed. The dry whey price topped 40 cents for the Àrst time since July 2015.

A lot of dairying yet to come Thesings keep goal of passing on love for farming to future generations

WINONA, Minn. – Just as important as the goals they have to increase production or maximize efciency for their dairy, is the hope that the Thesings will one day have their kids completely take over.

“Our goal is that if our two sons and their families want to continue farming, we are there to support them,” Cindy Thesing said.

Her husband, Doug, echoed her sentiments.

“Our dream has always been that we have something

we can pass,” he said.

Their dream seems to be on track. The Thesings, who milk 200 cows near Winona, Minn., now farm together with their son and daughter-in-law, Aaron and Amanda, along with their son, Eli, 5 months. Doug and Cindy’s other son and daughter-in-law, Brandon and Abby, work off the farm in the dairy industry, but help on the farm where they can and have invested in machinery.

Both Doug and Cindy have dairy backgrounds. Cindy’s parents dairy farmed and Doug worked for neighboring dairies growing up after his parents

sold their herd when he was 5. Each had dreams to some day start a dairy. After their romance budded while on a trip to the National FFA Convention, the two planned to attend the University of MinnesotaWaseca together after graduating from high school in 1986 and before embarking on their farming career.

But, their opportunity to

start dairying came before that could happen. Cindy’s parents were going to sell their herd in the buyout unless Cindy and Doug came back to the farm.

“So we got married and started farming. We knew if we let the farm go, the opportunity to dairy farm would pass,” Cindy said. “It wasn’t what we were planning initially, but everything was meant to be I

guess because it’s all falling in place.”

The two farmed together with Cindy’s parents until they exited the partnership in 1992. In 1995, the Thesings built their rst freestall barn, and then installed a double-8 parallel parlor into their existing tiestall barn in 2000 before Turn to THESINGS | Page 15

From the beginning, they involved themselves in young producer programs, which often included a one- or two-night trip away from the farm. “That was our vacation,� Doug said. “We went on farm tours and looked for ideas. We always tried to be progressive and change things [on our farm] when we could.�

The time off the farm gave them a short break and rejuvenated their passion each time. “That really kept us going. It sounds silly, but it did,� Cindy said.

Doug’s work philosophy also kept them going. “I just love what I’m doing. I’ve always told the kids and everybody that you have to love what you’re doing every day or you have to do something different. If you get up and hate going to your job, then to me, don’t go. Find something different,� he said.

His philosophy shows in his daily attitude. “He’s a goofy go-getter every day,�

Aaron said.

This attitude helped foster a love of farming within their sons. During his childhood, Aaron learned to love the crop side of farming. To get his start, he rented 13 acres when he was a sophomore in high school. “It was just for fun. We called it Aaron’s ďƒželd,â€? Aaron said. “I used free seed and old fertilizer I got from the place I worked.â€?

He also helped a neighboring crop farmer with ďƒželdwork. “I learned a lot of things from him,â€?

Aaron said about his neighbor. “He took the best care of his equipment and was a good, true, kind-hearted guy. He had skills I wish I had today.�

But, his neighbor lost his life in a farming accident, and his farm was put up for sale. Although the circumstance was tragic, Aaron realized it was an opportunity for him to buy the farm and join his parents on their dairy. “We were lucky enough we were in a position where we could help them [buy the farm]. Then they also got a young producer loan,� Cindy said.

Aaron and Amanda, who also grew up on a dairy farm, ofďƒžcially joined Ridgeview Dairy on January 2015. “I never felt pressured to farm,â€?

Aaron said. “That’s why I went to Ridgewater [College] – so I got out and did something different. I’ve done other things in production agriculture – working at a co-op, selling seed. Those couple years brought me back to the farm. It’s where I’m meant to be.�

On the farm, Aaron is in charge of the crops and feeding while Amanda takes care of the youngstock and calves. Doug works with the cows, herd health and breeding while Cindy does the bookwork. The Thesings also have three non-family employees.

The Thesings also have ventures that keep them busy beyond the dairy.

Their 1,000 acres of land they run is both feed for the animals and cash crop.

And four years ago, Cindy opened a ďƒ&#x;ower shop in a town nearby. “That’s also a family business so everyone helps out when they can,â€?

Cindy said.

Although other challenges arise on the dairy, especially dealing with low milk prices, the Thesings push through it. “We’re pretty resilient,� Cindy said. “We pull up our boot straps and away we go.�

They like to focus on the good parts of farming. “I get to work with Aaron and I get to raise Eli on the farm,� Amanda said about her favorite aspect of being back on a dairy. “There’s nothing that compares to working with the animals and the land. I’ve worked other jobs, and I’ve never been as content as being on the farm.�

Now that Aaron and Amanda have a child of their own, they also want to keep the future of farming open for him. “Our goal is that Eli has a passion in farming if he so chooses and we’ll have that opportunity,� Aaron said.

A goal modeled after his parents. “It’s awesome they’re back,� Cindy said about having the next generation on their farm. “That was the goal.�

CACHOEIRA PAULISTA, São Paulo, Brazil – A Brazilian dairyman is the fourth generation to become a part of the family dairy. As he plans for the future, education is emphasized for growth.

“The industry has forgotten that high quality dairy products need high quality milk, and high quality milk is only achieved with high quality workers,” Sérgio Costa said.

With the support and guidance of his parents, Danilo de Andrade and Dulce Maria Valadão Cardoso, Costa has revitalized the farm through employee training, heightened breeding strategies and advanced technology – with hopes of doing the same throughout all of Brazil’s industry.

Many of São Bento Farm’s employees are in their early 20s, and take on much of the farm’s responsibilities.

Costa acts as the dairy’s CEO, while his cousin manages the farm.

“My father is retired, but my mother still helps with ofce work,” Costa said.

Following this particular style of management, Costa’s farm has increased production by 6,134 pounds per day within the last ve years; by 2025, Costa envisions reaching 13,632 pounds per day with a herd of 300 cows.

To obtain these goals, the Brazilian dairy operates unlike other dairies in the region – breeding, housing and feeding differently.

highlights productive life, fertility, udder, and feet and legs, Costa said.

“Udders are very important to us since it’s one of the three greatest reasons for culling cows,” Costa said. “The others are high economic traits that correlate with longevity, which is very important to us.”

In the coming years, Costa plans to incorporate Jerseys into his breeding strategy for their valuable components.

Unlike other dairies setup with freestall or compost barns, São Bento Farm grazes its entire herd from November until March and moves the cows to a feedlot feeding system during the remaining months of the year.

The installation of an irrigation system will allow Costa

to extend the grazing period through May. “We believe the best system for our region is a grazingbased milking system, with lower costs and cows with longer lifespans,” Costa said.

Living in São Paulo, producers may see annual rainfall reaching 60 inches and hot temperatures. This subtropical climate aids in producing palisade grass and Bermuda grass for grazing pastures.

To supplement the growing dairy herd, Costa produces sugarcane and corn for silage on owned and rented land. Additionally, he purchases concentrates, such as citrus pulp, whole cottonseed, soybean meal and ground corn for the ration.

Cows eat a TMR supplement during Ɵmes when pasture quality is low. from very far away because we cannot produce soybeans, cotton or corn for grain in our region,” Costa said. “To overcome this problem, we need to be a united industry. Yet, our culture lacks this philosophy; the processors are distant from the farmers and the farmers do not have a cooperative way of thinking.”

Despite Brazil’s increasing milk production and ranking fourth in milk production worldwide, Costa envisions the business crumbling unless the industry is able to work together.

“Only a few players con-

trol the dairy market,” Costa said. “If we depend on the chain as it is today, predictions and numbers show us that we would not survive in a longterm scenario.”

Currently, Costa sells his milk to Danubio, owned by the Vigor Company – where it is further processed into cheese and yogurt – and receives $16.72 per hundredweight.

To further his dairy without sacricing price or product through the cooperative, Costa is building an on-farm creamery where they will sell cheese, butter and bottled milk; an opening date is set in 2018.

“If the country had not been through one of its worst political and nancial crisis, this is the rst year since my six years on the farm that I will not have to nd work off the farm for additional income,” Costa said. “After our creamery is running, I believe I will be able to reinvest in the business with its own prots.”

The rst order of business will be for Costa to further invest in his employees – an attribute to the farm he greatly values.

When Costa is not busy on his family’s dairy, he travels across the country educating young adults about job opportunities within the industry and preparing them for the workforce with his unique training program.

The efforts at São Bento Farm and throughout Brazil, on behalf of Costa, have impacted the dairy industry, giving many young minds an opportunity for a prosperous future.

“I love to be challenged and dairy farming has challenged me,” Costa said. “I think many young men and women need an opportunity to experience dairy farming, because it teaches you not only about cows, but life, too.”

GREENWOOD, Wis. – Wayne and Lisa Artac have a lot to celebrate as they complete their 20th year as dairy farmers. The couple, along with their children Kaitlin, 19, Brittney, 17, Wyatt, 15, Alane, 13, and Jaylinn, 11, recently moved onto a new farm near Greenwood, Wis., that they, along with their 78 registered Jerseys, call home.

The Artacs’ dairying careers began in 1996, when Wayne and Lisa rst bought a herd of 20 cows. Lisa saw the opportunity to get involved in a career and lifestyle she had grown an interest in.

“My dad grew up in Wisconsin, but we moved several times growing up,” Lisa said. “When we moved back here when I was 16, my dad got into dairy farming. Once I graduated, we started renting a dairy farm in Stratford with grade Jersey heifers.”

The Artacs’ rst barn was a small freestall with a single-4 parlor they stayed in for a year before moving to their rst farm near Greenwood, Wis. The barn had 57 stalls and gave Wayne and Lisa more space for their growing herd.

In the spring of 2016, a farmer in the area approached Wayne and Lisa with the opportunity to rent his farm.

The location offered a 90-stall tiestall barn with an attached heifer barn, a calf barn and appropriate feed storage – just what the Artacs were hoping for.

“We knew we had to do something if we wanted to milk more than 50

cows,” Wayne said.

After agreeing to rent the barn, the Artacs got hard at work. Beginning in September, the entire family lent a hand cleaning the facilities, making repairs, installing new mats and getting the farm ready for the cows to arrive.

“We took care of a lot of odds and ends to get the barn ready for our Jerseys,” Lisa said.

Throughout the summer and into harvest season, Wayne began storing crops on the farm in preparation for the move. He said this proved helpful in the cows’ adjustment to the new barn in the coming months.

“In the weeks before we moved, I would mix feed from each of the farms together, so it would seem a little familiar to the cows once we got here,” Wayne said.

The move took place Nov. 5. After morning milking on the old farm, Wayne went to the new location to prepare for the cows to arrive. Lisa stayed on the old farm to help load out the animals.

They agreed that the move far exceeded their expectations.

“It went much smoother than we had anticipated,” Lisa said. “We had a lot of good help and the cows went right onto the trailers without any problems.”

By the time the cows were ready to move, the Artacs had increased their herd to 65 cows. In the days following the move, Wayne purchased 15 more cows, bringing their current herd size to 78.

ConƟnued from ARTAC | Page 20 had wanted to buy before we moved,” Wayne said. “We have 12 stalls left to ll in the barn, which we hope to do by mid-summer. From here on, we will be growing from within.”

Since beginning with a grade Jerseys in 1996, the Artacs have gone on to improve the genetics of their herd.

Wayne makes the breeding decisions on the farm.

“We have picked for improved udders, feet and legs over the years,” Wayne said. “It has been quite the journey.”

The family’s efforts in breeding led them to being honored as the American Jersey Cattle Association’s Young Jersey Breeders in 2011. The couple agreed it was the greatest accomplishment since they started dairy farming.

“Wayne grew up raising pigs, so seeing as neither of us grew up on a dairy, we got here on a hope, a prayer and a wish,” Lisa said. “But it reassured us that we were going in the right direction.”

Getting to this point has been no easy task, Lisa added.

“It’s not easy,” Lisa said. “There are going to be a long days but you have to be dedicated. The animals come rst, even on those nights when you’re freezing outside.”

Conservation keeps family rooted on dairy Kieffers win Dakota County award

HASTINGS, Minn. – It’s no accident that ve generations in the Kieffer family have been able to farm the land and continue their dairy, River City Dairy, near Hastings, Minn. They’ve made improvements over the years to ensure the next ones in line could take over if they wanted.

That’s why the Kieffers – Wayne and Bernie along with sons, daughter-in-law and grandchildren, Kevin, Tim, Molly, Tom, 4, and Claire, 4 – have been awarded the 2016 Dakota County Conservationist of the Year award. These fourth and fth generation farmers – and possibly sixth if Tom or Claire decide farming is their future – milk 320 cows three times a day.

Crop rotation has been a longstanding technique the Kieffers have used on their farm; however, more recently, Kevin and Tim have also adopted a no-till practice on a portion of their elds to conserve fuel and reduce compaction.

“It also helps keep cost down,” Wayne said.

This is also the third year they have planted cover crops on the 850 acres they own and rent. Along with corn, soybeans, alfalfa, canning peas and canning corn they grow during the regular season, the Kieffers plant winter rye.

“We stumbled upon it when all the hay froze out (in 2013),” Tim said. “It turns out it’s good feed.”

And Wayne said it’s good for the land.

“It gets the soil back to what the prairie was like – there was always a live plant on it. If you plant rye in the fall there will be another four months of having a live plant on the ground, and it increases the rate of water inltration,” he said.

The rst two years, the Kieffers planted 25 and 45 acres. This year, their cover crop total reaches 200 acres. “[Winter rye] has got extensive roots, which helps [prevent] compaction,” Kevin said.

Over the last two years, the Keiffers have also installed seven ponding basins in their elds. This helps when there is a large rainfall. The basins hold water and let it run off more slowly, putting less strain on elds and keeping soil in place.

“The general public needs to understand that a good share of farmers are doing these practices.”

Before installing the ponding basins, the Kieffers had washed out portions of their elds after a large rainfall.

“I used to have to ll in all those spots. We used to replant and spend a day or two in the eld lling in where the soil washed out,” Tim said. “Going forward, it will be nice not to worry about it.”

Each basin consists of two 200foot berms with tile that allows the rain to run off to a safe designated area. The basins are about one-half acre to one acre each.

“You can farm right over the top of it so we didn’t lose any ground by putting them in,” Wayne said.

Last year, the Kieffers reconstructed their pit into a two-stage passive separator to hold manure at River City Dairy. This has helped them store manure longer and apply it to the elds at the right �me.

Last year, when the Kieffers built another barn to expand their herd, they also reconstructed their pit. They have a two-stage passive separator, with the rst 1.8 million gallon pit holding most of the solids. Screens line the back of the rst pit to allow liquid to pass through to the second pit, which holds 1.5 million gallons. They also added a small waterway for rainwater or any other water that goes through the barn to

drain directly into the second pit.

The pit has helped them to store the right amount of manure and be able to apply it to elds at the right time.

Half of the barn holds milking cows and other half is for dry and close up cows. There are 156 freestalls along with a bedded pack.

In whatever they do, the Kieffers follow their philosophy to do their best, especially when it comes to tak-

ing care of their animals and land.

Although the Kieffers feel they do a good job preserving the land, they don’t feel they are alone.

“The general public needs to understand that a good share of farmers are doing these practices. It’s not just get everything out of the land that they can, they want to take care of it,” Wayne said. “It’s satisfying to see the farm carried on to the next generation. It means a lot.”

BARRON, Wis. – A typical day for Larry Hunt begins in the early hours of the morning.

Then again, for a man who has put several hundreds of thousands of miles on his truck while breeding cows, there’s no such thing as a typical day.

“I started breeding for NorthStar Cooperative 18 years ago, when my daughter was 3 months old,” Hunt said, who resides near Barron, Wis. Hunt was given the First Service Award in 2012 by the National Association of Animal Breeders for breeding an astounding 35,000 animals, and has continued to breed many more since.

In those nearly two decades of breeding cows, Hunt has also racked up a staggering number of miles on the odometer of his red Ford Ranger: 630,000 miles.

While he could have traded in the truck for something newer years ago, it has a more sentimental meaning for Hunt and his relationship with his 30 or so farmer-customers.

“I’m hoping to hit 650,000 miles before I have to nd something else to drive around,” Hunt said. “I just don’t want to drive a shiny new truck into a farmer’s driveway when the dairy economy is bad and have them thinking that’s where all their money is going.”

Hunt’s territory covers Barron County, but he serves farmers in neighboring counties as well.

“I go a little bit into Polk, Washburn, Dunn and Rusk counties and breed cows for those farmers,” he said.

With Hunt comes a wealth

Hunt’s desire to help anyone in any way extends beyond breeding cattle.

From relief milking as much as his psoriatic arthritis – and the chemotherapy he takes to keep that disease at bay – will allow, to teaching agriculture classes at local schools, to taking struggling families shopping for Christmas, he and his wife, Lynn, and their children, April, Seth and Austin, are generous with their time and hearts.

“I had a widowed farmer whose wife had passed away after 25 years of marriage, and I knew of a calf raiser who told me she was tired of being alone,” Hunt said. “I thought they might get along well, and even though the farmer didn’t want to get into dating after 27 years he asked for her number.

They’ll be celebrating a year of marriage this month.”

While Hunt’s commitment to his farmers hasn’t wavered over the years, he’s seen a lot of changes in the past 18 years of breeding.

“Not all of it is good change, and not all of it is bad,” Hunt said. “I’ve gone from having around 100 farms down to 30, but some of those herds have grown.”

Aside from the growing consolidation of farms and agribusinesses alike, the most drastic change Hunt has seen lies in the rapid evolution of genetics.

“It’s hard for me to keep up with,” he said. “There are a lot of great bulls in AI, but when they die they’ll be replaced by someone just as great or even greater. In the grand scheme of everything, they are just bulls.”

Despite the challenges and sometimes long, lonely drives at all hours of the day, there’s nothing else Hunt would rather do for one major reason.

“My favorite part about this job is the people,” Hunt said.

“They’re like family.”

1 1/4 cups sugar 3 Tbsp. all-purpose flour 1 cup canned pumpkin puree 2 Tbsp. pumpkin-pie spice 1 Tbsp. vanilla extract 1/2 tsp. salt 4 large eggs, room temperature

Preheat oven to 350 degrees, with rack in center. Assemble a 9-inch nonstick springform pan, with the raised side of the bottom part facing up.

Crust: In a medium bowl, mix cracker crumbs, sugar and butter until moistened. Press firmly into bottom of pan. Bake until golden around edges, 10 to 12 minutes.

Filling: With an electric mixer, beat cream cheese and sugar on low speed until smooth. Mix in flour (do not overmix). Add pumpkin puree, pie spice, vanilla and salt. Mix just until smooth. Add eggs one at a time, mixing until each is incorporated before adding the next. Place springform pan on a rimmed baking sheet. Pour filling into springform, and gently smooth top. Transfer to oven; reduce oven heat to 300 degrees. Bake 45 minutes without opening the oven. Turn off oven; to prevent the top from cracking, let cheesecake stay in oven two hours more (without opening).

In a large bowl, whisk together the cream cheese, yogurt, enchilada sauce, green chiles and spices. Fold in the shredded chicken, mozzarella and 1/4 cup of the Monterey jack cheese. Place all of the ingredients in the slow cooker and cook on low for two hours. Remove the dip from the slow cooker and put it in an oven safe dish. Top with the remaining cheese and place under the broiler until the cheese is lightly browned. Serve with chips, crackers or vegetables.

Preheat oven to 325 degrees F. Boil pasta with three pinches of salt. Melt butter in a large sauce pan, add flour to make a rue sauce, or paste. Add milk and whisk until dissolved, slowly add cheeses, pepper (salt, optional) and continue whisking until cheese is all melted. Spray 9x13 inch pan with nonstick spray, put noodles in, add cheese sauce and mix together until evenly distributed.

Sprinkle crushed croutons on top. Bake for 12 to 15 minutes.
