Paul Struss is the farm’s herdsperson; Nemesio Garcia Vasquez is the milker; and international student, Patrick Ssebugenyi of Uganda, is a calf care trainee and is learning about all phases of the dairy. Local farmer Brian Neid has been the farm’s feed manager for 20 years.

The Port-Haven herd is milked twice a day in a

swing-12 parlor at 1 a.m. and 1 p.m.

“We did go 3X for two years, back in the 1990s,” Mark said. “People still think we do, but we went away from it. During the winter months, we didn’t know if we were coming or going.

All we did was milk. We didn’t get any sleep.”

The milking herd is housed in three barns with the largest compost barn

having room for 120 cows and a maternity pen for eight. Another compost barn has room for 70 cows and a maternity pen for eight. The third barn, attached to the parlor, is split in half. Up to 40 close-to-drying off cows are housed in one half and 15 to 30 dry cows in the other half on a straw bedding pack.

How to create a message for farming Jamison gives insight about marketing against agricultural opposition

RED WING, Minn. – With only a small percentage of the U.S. population growing food for the rest of the people in the country, there is a reality that fewer and fewer people know how their meals get to their table. This reality, along with having to deal with animal rights activists, can make promoting agriculture a challenge.

On Nov. 29, Wes Jamison presented “Got Message? Relating to a Public who doesn’t Relate to You” during the Minnesota Milk Dairy Conference and Expo in Red Wing, Minn.

“I am always humbled to speak to an agricultural audience … because without you, our society as we know it collapses,” Jamison said.

Along with being an associate professor of communication at Palm Beach Atlantic University, Jamison has been studying for the past 30 years how opponents of agriculture, specically the Humane Society of the United States (HSUS) inuence consumers and persuade them to follow their call to action.

“I want to help you briey understand why your opponents are so successful and why we in agriculture are not, and then try to help you think through solutions moving forward on how to help consumers understand what you do,” Jamison said.

Jamison rst gave the basics about creating a media campaign. Campaigns should use the three As. “The audience needs to be aware, they have to accept it, and they have to take ac-

tion,” Jamison said.

Messages should also have salience, resonance and validity along with being simple, relevant and repetitious.

While listening to messages, people categorize a message into one of three zones – they either accept it, are non-committal or they reject it outright, Jamison said.

“The width of the [non committal] zone depends on your emotional connection,” Jamison said. “If you’re going to persuade them, your message has to fall either in that zone where they’ll listen to the message or at least evaluate it.”

However, Jamison said there is an issue when campaigning to others about agriculture.

“Consumers do not look at animals the same way you do. They look at them differently. Modern consumers view farm animals through the frame of reference of pets. They don’t think [farm animals] are pets, but they think they should be treated the same as pets,” Jamison said.

For example, Jamison showed a picture of a dog in a pig costume. He said people take their dogs trick-or-treating and dress them up for Halloween.

“If you’re the national pork producers council, and you have people understanding pork production from the frame of reference of their pet wearing a pig outt, you’ve got problems,” Jamison said.

Organizations opposed to agriculture use this to their advantage, often using imagery of only pets and not farm animals in their marketing campaigns.

While traveling, Jamison has also seen the number of emotional support ani-

mals increasing. He has seen a parrot, turkey, duck and a pony in addition to dogs and cats in the cabin of planes as emotional support animals.

“We want some animals in our society as companions and the others as cuisine.

Some we want on our plates and some on our hearts. See the hypocrisy?” Jamison said.

Agriculture opposition plays up this hypocrisy.

“They make you feel guilty for what you’re doing. … People have high emotional connections to pets that’s why they have images of pets and not farm animals. That’s why in their acceptance zone, they’ve got to talk about the emotional link to animals to get them to understand,” Jamison said.

Within his classroom, Jamison and his students have done various campaigns to show agriculture’s side. He shared about how “foodies” sometimes want to reduce food options and make people feel bad for their choices, for example, the proposed soda ban in New York City a few years ago.

“Our message: You can eat meat and cheese, and drink milk without shame.

We just have to give them permission, “Jamison said.

On the college campus, they handed out shirts that said, “I love meat” and “I love dead animal.” There were also shirts with a picture of a dog and a cow with the unequal sign in between them.

“They just need a reminder that a dog is not a cow, a cat is not a cow. We just need to remind them to give them permission [to eat animal products],” Jamison said.

Students in Jamison’s class also handed out stickers to show incisors, which are used to eat meat, and came up with the slogan, “Get your values off my plate.”

Two events – the BAE-con and a free

breakfast at a music festival that used processed meats – were geared towards iGeners, the generation after Millennials who are also the rst generation to completely understand reality through the screen of a smartphone, Jamison said.

The BAE-con, a play on the term “before anything else,” was a campaign that used the statistic that 92 percent of vegetarians return to meat eating because of one product – bacon, Jamison said.

“There was a table with all the free bacon you could eat with fans wafting the smell. We had lines of people at our table.

We were able to communicate the facts about agriculture in a way that was edgy and Avant guard, and the change of the opinion of agriculture was very effective.

People would talk about it on social media,” Jamison said.

The biggest message that needs to be promoted is that people need permission to eat animal products.

After the seminar, two questions came about. One asked if members of the agricultural community taking part in county fairs is part of the problem of consumers relating pets to farm animals.

“Yes, agriculture marketing has aided in embedding it,” Jamison said. “Talking cows that are happy, that parachute into football stadiums although they sell lots of chicken, don’t do you any assistance in the long run. Those animals are raised solely for the purpose of human benet and we’ve forgotten that.”

The other question asked about the best way to spread agriculture’s message.

“Mass media is a waste of money. iGeners, Gen X-ers and Millennials don’t pay attention to it anyway,” Jamison said.

He said the best way to reach the younger generation is through sophisticated social media and guerrilla campaigns that are edgy and humorous.

Those three items cost more because they were approved for organic production. As part of a double whammy, the Swiggums were being paid closer to the conventional price for their milk.

To help ease the nancial pain during the transition, Westby Co-op Creamery paid the Swiggums an extra $2 per hundredweight above the price of conventional milk.

That yielded a price of about $18.

“That did help for sure,” Erik said. “But things were still pretty tight.”

The registered Holsteins are working hard, too. Erik said the cows are each averaging about 75 pounds of milk a day for a rolling average of roughly 22,875 pounds on twice-a-day milking. The fat test is at 3.8 percent and the protein is 3 percent with the SCC ranging between 125,000 and 150,000.

The Swiggum herd is milked with a pipeline in a 1950s-era tiestall barn that’s bedded with sand.

Erik said the switch to organic production lowered

the herd average. It fell from 25,000 pounds to its current level. By contrast, the components are as good or better than before.

His father gets much of the credit for the herd’s production.

“Dad always had good cows,” Erik said, adding that all the heifers and cows have been bred A.I. for at least 45 years.

As Erik ne-tuned his grazing management, milk production rose. He also feeds a total mixed ration (TMR), and started with that 10 years ago.

“It’s helped production, and we have fewer fresh-cow problems,” Erik said.

“It honestly hasn’t been an issue,” Erik said. “Mastitis doesn’t seem to come up very much. Cow health has been great since we switched to organic.”

If a cow does come down with udder infections, Erik sells her. He said he has plenty of replacement heifers, due partly to his use of sexed semen.

When it comes to raising calves, the Swiggums switched from using milk replacer to feeding whole milk.

Erik said he chooses a cow that’s producing the amount that the calves need.

“The calves gain better on whole milk,” he said. “There’s far less scours and the calves just seem to be hardier.

Ground was broken for the facility in October, and the rst manure went into the pit on Dec. 14, 2014.

“I’d never have been able to afford this otherwise,” he said.

Overall, Erik is pleased with the progress the farm has made, and he’s glad he chose the organic way.

“I just thought organic was a good niche we could t into,” he said. “I don’t want to get any bigger. I like 40 cows and a tiestall barn. It’s a size I can handle myself. If we hadn’t gotten on the organic truck when we did, I couldn’t guarantee you there’d be cows in the barn today.”

holds up to 50 bred heifers or dry cows. Another facility there holds 48 calves in six pens of eight.

Most heifers are in another straw bedded pack on the main farm. Calves are raised in 41 calf hutches on the same farm.

“We’re full in the summer, weaning calves as new ones are born. … We calve most in March through October, then things slow down,” Tom said.

All heifers and a few bulls are raised, with the Portners genomic testing some. Some bulls are kept and some sold to other breeders.

Tom and Mary handle the bookkeeping, with Mary doing payroll and Tom running the budget and nances.

Since Tom and Mary’s kids are older, they have been more involved with the dairy, but Mark and Lisa’s children are getting to the age where they’ll soon be pitching in, too.

Tom and Mary have ve daughters, Boston, Sabrina, Isabella, Crystal and Sophia – one has graduated college, two are in college and two are in high school.

“It’s all kind of a transition, with the girls now being involved in college activities and internships,” Tom said.

Mark and Lisa have four children – Rachel, 11, Jared, 8, Dustin, 6, and Blake, 1.5. They attend Sleepy Eye St. Mary’s elementary school.

Tom and Mary’s girls have been active in 4-H at the county, state and national level in Knowledge Bowl and dairy judging. All ve have placed in the 4-H Dairy Showcase at the state fair.

Boston was not in FFA, but the other girls have, being involved at the school, regional and state levels. Sabrina and Isabella have been national dairy entrepreneurship prociency winners.

Isabella also made it to nationals in milk quality and products.

The girls have been active in dairy promotion, being county dairy ambassadors and princesses.

With Mark and Lisa’s kids being younger, they’re just getting started in 4-H. They’ll soon be making their mark in the show ring.

In addition to keeping up with their kids, the Portners are involved in a variety of organizations.

Both families are involved at Sleepy Eye St. Mary’s Catholic Church. Tom is lector and he and Mary have been presenters for Marriage Encounter for 20 years. Mary is on the church administrative council.

2017 production expected to be up 1.6 percent from 2016

The Agriculture Department lowered its 2017 and 2018 milk production forecasts in its latest World Agricultural Supply and Demand Estimates report, due to slower growth in milk per cow. That slower growth is expected to carry into 2018 and, combined with an expected slower rate of growth in cow numbers, the 2018 milk production forecast was also lowered.

2017 production and marketings were projected at a record 215.7 and 214.7 billion pounds, respectively, down 100 million pounds from last month. If realized, 2017 production would still be up 3.3 billion pounds or 1.6 percent from 2016.

2018 production and marketings were projected at 219.3 and 218.3 billion pounds, respectively, down 400 million pounds from last month. If realized, 2018 production would be up 3.6 billion pounds or 1.7 percent from 2017.

Price forecasts for cheese, butter and nonfat dry milk were lowered for 2017 on current price weakness and slower demand. The 2017 whey price forecast was unchanged at the midpoint. All dairy product price forecasts were reduced for 2018 on pressure from large stocks and slower expected demand.

The 2017 Class III milk price forecast was unchanged from last month, ranging $16.15-$16.25 per hundredweight (cwt.), up from $14.87 in 2016 and $15.80 in 2015. The 2018 average is projected at $15.30-$16.10, down 20-30 cents from last month’s estimate.

The Class IV milk price forecast was reduced a nickel from the previous month, with the 2017 average projected at $15.05-15.25, and compares to $13.77 in 2016 and $14.35 in 2015. The 2018 average is estimated at $13.90-$14.80, down 25-35 cents from last month’s projection.

Turning to the crop/feed side of the report, this month’s 2017-2018 U.S. corn outlook is for increased corn used to produce ethanol and reduced ending stocks.

Corn used to produce ethanol was raised 50 million bushels to 5.525 billion. Ending stocks are down 50 million bushels from last month. The projected seasonaverage farm price was unchanged at a midpoint of $3.20 per bushel, but the range was narrowed 5 cents on each end to $2.85 to $3.55 per bushel.

Total U.S. oilseed production for 2017-2018 was projected at 132.2 million tons, up slightly due to a small increase in cottonseed. Soybean exports were reduced 25 million bushels to 2.225 million on stronger-than-expected competition from Argentina and Brazil during the rst quarter of the marketing year.

Soybean ending stocks for 2017-2018 were projected

at 445 million bushels, up 20 million from last month and still the highest since 2006/07.

Following the Dec. 5 afrmative determination by the U.S. International Trade Commission regarding countervailing duties on biodiesel imports from Argentina and Indonesia, soybean oil used for domestic production of methyl ester was raised 500 million pounds to 7.5 billion, the report stated. Reduced soybean oil exports and non-ester domestic use are offsetting, leaving projected ending stocks unchanged at 1.62 billion pounds. The U.S. season-average soybean price range for 2017-2018 was narrowed to $8.60 to $10 per bushel. Soybean meal and soybean oil price ranges were unchanged at $295 to $335 per short ton and 32.5 to 36.5 cents per pound, respectively.

This month’s 2017-2018 U.S. cotton forecasts include higher exports, slightly higher production, and lower ending stocks. Production was raised 63,000 bales as increases in the Southwest were largely offset by decreases in other regions. Domestic mill use was unchanged, but exports were raised 300,000 bales due to reduced production in other countries. Ending stocks are now projected at 5.8 million bales, 200,000 lower than forecast in November, but more than double the 201-2017 level. The forecast range for the marketing year average price received by producers was raised 3 cents at each end, to a midpoint of 66 cents.

It was a record breaking week in the cash dairy markets. CME block Cheddar fell to $1.4450 on Dec. 12, lowest price since March 29, but then rallied and closed that Friday at $1.53 per pound, up 5 1/2-cents on the week and reversed six weeks of decline, but 27 cents below a year ago. The barrels closed at $1.66, down a penny, 4 cents below a year ago, and 13 cents above the blocks after setting a record inverted spread of 22 1/2-cents on Tuesday. They also set a record single day volume of 36 cars sold on Dec. 11, the highest since daily trading started Sept. 1, 1998, and eclipsed the previous high of 35 loads set June 18, 2010, according to FC Stone. A total of 97 cars were sold on the week at the CME and 7 of block.

Dairy Market News reports that milk remains readily available to Midwestern cheese plants, with spot loads ranging $1 to $4.50 under Class III. Some cheese producers warned that only heavily discounted milk offers will be considered for the remainder of 2017.

Cheese production is moderately active and cheese sales are steady to slow. The large and inverted CME price gap has resulted in an unsteady cheese market tone, says DMN. Western cheese output is ongoing as milk is also plentiful and more of it is moving to the vat. DMN says some processors are hesitant to take on additional loads

of milk due to the current weakness of cheese prices and the ample supplies. Some report that block cheese purchases have decreased a little, but barrel cheese sales are picking up but they are not comprehending the reason behind buyers’ sudden interest in barrel cheese. Other participants suggest that holiday orders are steady to up and, as the U.S. competition with the EU for market share increases, more pressure is put on prices.

The Dec. 14 Daily Dairy Report (DDR) provided some interesting market data, reporting that the CME’s new electronic trading has resulted in soaring cheese volumes in the rst six months of implementation. It states that with just two weeks left in 2017, 2,246 loads of CME spot Cheddar cheese traded, compared to 1,055 loads for full-year 2016. In fact, this year’s CME spot trade has eclipsed trading volumes for every year back to 2011.

This year, barrels represented 75 percent of total trades, according to the DDR. Between 2011 and 2014, barrel cheese represented only 47 percent of the volume, a gure very similar to the proportion of barrels reported in the National Dairy Products Sales Report during that time. Barrel activity increased in 2015 and 2016 to 65 percent of total trades. But this year’s high mark for barrel trading was new territory, and it’s staggering that the quantity of barrels traded this year rivals the total volume traded from 2014 to 2016.

Cash butter slipped to $2.19 per pound Monday, then reversed gears and slowly climbed to $2.26 Thursday, but saw a Friday close at $2.2450, up 2 1/2-cents on the week and 5 1/2-cents above a year ago when it jumped 12 1/2-cents. Forty cars traded hands on the week at the CME. Central region butter producers report that orders are back in line with expectations following a slow start to the month, according to DMN, while some report that buyers’ interest levels are ahead of expectations following the holiday rush. Cream remains abundant for churning but the butter market tone remains resilient. Contacts suggest that the ebbs and ows of CME prices have benetted buyers and sellers and the overall market tone is somewhat bullish.

Western butter makers are working to ll remaining holiday orders and report that demand is following typical seasonal patterns. Manufacturers say there are currently no big surprises in the butter market.

Inventories have been drawn down, but processors are nding themselves in a transition period. Cream is becoming less expensive and readily available. Contacts are watching global butter prices closely. Prices have faltered in Europe and Oceania, narrowing or even reversing the gap between American and foreign butter prices. Some see this convergence of world butter prices as a hint that more imported butter or milk fat may be coming to the U.S. butter market.

Eleven cars found new homes on the week at the CME. The California Department of Food and Agriculture announced its January 2018 Class I milk prices at $16.07 per cwt. for the north and $16.35 for the south. Both are down $1.88 from December 2017, $2.70 below January 2017, and the lowest Class I since July 2016.

Speaking of uid milk, sales continue to lose ground. USDA’s latest data shows October packaged uid sales totaled 4.1 billion pounds, down 1.0 percent from October 2016. Conventional product sales totaled 3.9 billion pounds, down 1.1 percent from a year ago; organic products, at 218 million pounds, were up 0.4 percent. Organic represented about 5.3 percent of total sales for the month.

Milk drinkers are returning to whole milk. Sales totaled 1.2 billion pounds, up 2.7 percent from a year ago, up 2.4 percent year to date, and made up 29.9 percent of total uid sales in the month. Skim milk sales, at 342 million pounds, were down 10.9 percent from a year ago and down 12 percent, year to date.

Total packaged uid milk sales in the nine-month period totaled 39.8 billion pounds, down 2.1 percent from the same period a year ago.

Year-to-date sales of conventional products, at 37.7 billion pounds, were down 2.2 percent; organic products, at 2.1 billion pounds, were up 0.2 percent.

Organic represented about 5.4 percent of total uid milk sales so far in 2017.

Cooperatives Working Together (CWT) accepted 22 requests for export assistance the week of Dec. 11 from Dairy Farmers of America, Foremost Farms, Northwest Dairy Association (Darigold) and Tillamook County Creamery Association. These cooperatives have contracts to sell 2.954 million pounds of Cheddar and Monterey Jack cheese, and 440,925 pounds of butter to customers in Asia, Central America, the Middle East, North Africa and Oceania. The product has been contracted for delivery through March 2018 and puts CWT’s 2017 export sales to 70.27 million pounds of American-type cheeses, and 5.25 million pounds of butter (82 percent milkfat) to 21 countries on ve continents.

In other global news; New Zealand based Fonterra lowered their latest milk price forecast, just as USDA has reduced some of its projections. Jerry Dryer, editor and analyst of the Dairy and Food Market Analyst newsletter, said in the Dec. 18 Dairy Radio Now interview that he has also lowered his forecasts, saying the futures market keep catching up to my forecasts by slipping lower.

The other side of the coin, he said, is that milk production is also backing off, citing USDA’s latest estimates, and he said that there are early warning signs in New Zealand of drought conditions, as weather has been quite dry in various parts of the country; up to a month without rain, which is earlier than usual.

Dryer has lowered his predictions for global and U.S. milk output, but he warned of a period of low and declining prices near term; however, supply could tighten up enough to be very supportive of prices in the second half of next year.

When asked how low he sees the Class III price going, he said it could get to $12.50 in the Second Quarter of 2018 but supply tightening, turns it around.

In politics; Congress is working to overhaul the federal tax code. The House and Senate have passed their respective tax reform bills and are now reconciling the two versions to send a nal bill to President Trump.

National Milk says it is working with lawmakers to shape the massive, complicated legislation so that it delivers a positive outcome for dairy farmers and their cooperatives, according to NMPF’s News for Dairy Coops.

NMPF is working with others in agriculture to

preserve the benets that farmers and cooperatives enjoy from the Domestic Production Activities Deduction (DPAD), also known as Section 199. NMPF has long supported this deduction, which cooperatives claim on the proceeds from sales of agricultural products like milk. Cooperatives pass through a majority of the benet, nearly $2 billion nationwide, directly to their farmer owners, and reinvest the remaining proceeds in infrastructure improvements to help both the farmer and the cooperative.

While the House and Senate bills both repeal DPAD, the Senate legislation allows cooperative members to claim a new 23-percent deduction on their taxable income for qualied cooperative dividends, which refers to patronage dividends, per-unit retain allocations, qualied written notices of allocations, and similar amounts. Cooperatives could also claim the 23-percent deduction on taxable income, but it would be limited to 50 percent of their wages. NMPF is attempting to improve these provisions to ensure that

the nal tax reform legislation continues to recognize the unique nature of how cooperatives are taxed, NMPF says.

Meanwhile; Arden Tewksbury, Manager of the Progressive Agriculture Organization (Pro-Ag), testied at a milk hearing conducted by the Pennsylvania Milk Marketing Board on Dec. 6.

Tewksbury said it appears whenever there are problems within the dairy industry, that dairy farmers are the rst ones to suffer. Furthermore, the dairy farmers have no method available to them to correct their pricing inequities.

European milk production was strong in October. At 27.8 billion pounds, the 28-member countries of the European Union (EU) increased year- over-year (YOY) production by 5% over last year’s policy-induced lower output.

In an attempt to stem milk production growth in the Ànal months of 2016 and into the Àrst two months of 2017, EU dairy producers received governmentfunded, and in some cases cooperativedriven, Ànancial incentives to reduce output. And they complied. During Q4 2016, the EU-28 reduced production by 3.4%, or 2.75 billion pounds, which is equivalent to slightly more than Wisconsin’s monthly milk production.

In 2017, spurred by the highest milk prices since 2014, EU milk producers have more than compensated for last year’s lower output.

The global glut of skim of milk powder (SMP) has not yet sent a signal to the world’s dairy producers to slow milk production. On-farm Ànances are strong enough that producers in the world’s largest dairy-exporting regions will add 3.3 million metric tons (MT) of milk next year, according to USDA’s Foreign Agricultural Service’s latest Dairy: World Markets and Trade Report. The expected increase in 2018 comes on the heels of an anticipated 2.2 million MT gain in 2017. Strong milk production in all of the world’s major dairy-exporting regions will intensify export competition this coming year, but likely not enough to eliminate the estimated 542,000 MT of SMP and nonfat dry milk (NDM) held in Europe (376,000 MT in Intervention and 6,000 MT in Private Storage Aid) and the United States (160,000 MT) at the start of 2018. The majority of 2018’s growth in milk production will come from the Americas. USDA’s latest estimate calls for a 2%, or 1.7 million MT, increase in year-over-year production in the United States, the largest increase of any of the major dairy-producing regions.

The day started with the Global Dairy Trade (GDT) auction declining 3.9%.

Cheddar cheese suffered the largest declines. USDA released November’s milk production estimate at 17.3 billion pounds this afternoon. That puts U.S. milk output 1.0% higher than a year ago. While year-over-year gaps remain, the spread is starting to close. The U.S. milking herd was unchanged at 9.4 million head, suggesting that 47% of last month’s output increases came from production per cow and 53% from new cows. As of last month, output in more states is moving into the down 1% to up 1% range. Currently, nine states fall into that category, with most of them from either the East or West Coast. California losses persist with ouput down 1.1% compared to last year. At the other end of the spectrum, Texas produced considerably more milk than in November 2016, up 54 million pounds or 5.9% more than a year ago. But with Àrst-quarter CME Class III 2018 futures falling to the $13/cwt. level today, dairy producers’ appetite for growth could stall. .

Farming with consumer trends Corneliuses focus on animal welfare, organic production

BUTJADINGEN, Wesermarsch, Germany – At the heart of the European dairy industry is a market inuenced by consumer trends that hold livestock production to the highest standards.

In order to compete in the marketplace, many dairy

farmers have found themselves altering their farming practices to meet the demands of their customer base.

Immo Cornelius’ farm is no exception.

“Farming in Europe is supposed to become more environmentally friendly in the future,” Cornelius said. “The industry is becoming more regulated and animal husbandry standards are getting

Cornelius is a 28-year-old studying organic agriculture, traveling the U.S. and learning about different organic farming practices. His father, Bernd, operates the family’s 55-cow dairy, Urrelhausen, in the northern region of Germany in Butjadingen, Wesermarsch.

On Sept. 1, 2017, the 145acre farm became certied organic.

“A lot of consumers in Germany care about how farmers keep their animals, and organic farming benets from that,” Cornelius said.

The Cornelius family be-

gins their day at 6:30 a.m., when they milk the herd in a double-5 herringbone parlor.

Currently, the Holstein Friesian herd averages 22,487 pounds per cow per year – a 600-pound decrease since transitioning to organic production. However, Cornelius expects the herd’s per cow production to continue dropping as the animals adjust to the new management practices.

After milking is complete, Cornelius’ dad or a part-time employee will prepare milk for the young calves.

replacer anymore,” Cornelius said. “We feed the calves with milk from our cows right after milking when the milk is still warm.”

The Cornelius family raises all of their heifer calves and sells the bull calves at 2 weeks old.

Chores continue throughout the day, and evening milking begins around 5.

Cornelius’ way of life is similar to that of other dairy farmers in northern Germany.

Located in Lower Saxony, Butjadingen is an area well known for its dairy inuence.

“Because there are almost only dairy farms in my area, the infrastructure for dairy equipment is very good.

When something is broken, you can get it xed right away,” said Cornelius, referring to the vast number of dealerships, such as GEA, DeLaval and Lely, located nearby.

“We don’t grow corn on our elds anymore because it is very difcult in our region to grow organic [grains].

We are not allowed to use treated seed,” Cornelius said. “Also, we would have a lot of problems with birds picking the seed out of the ground and spoiled seed.”

In the northern region of Germany, the climate is temperate with rainfall reaching 30 inches per year. Because of this and very low elevation, most of the land is pasture-based.

Currently, organic farmers are receiving $21.34 per hundredweight (cwt.); conventional farmers are receiving $16.50 per cwt. “The last two years, the price of conventional milk has been very low and a lot of farms had to give up production or lost a lot of money,� Cornelius said. “But also, the conventional industry tries to serve the market and now sells pasture-raised conventional milk and non-GMO milk.�

In addition to milking cows, the Cornelius family is co-partners in a renewable energy contract, where they capture energy from solar panels on the barn roof and a wind turbine in the ďƒželd. This additional income helps support the family when milk prices are weak.

The Cornelius family sells their milk to Ammerland Dairy, a cooperative in Northern Germany that has nearly 2,000 patrons. Most of the Corneliuses’ milk is made into cheese and infant formula.

As Cornelius learns more about organic dairy production in the U.S., he is anxious to return home and implement practices that will further his family’s dairy, which has been operating since 1848. In the future, he wants to continue focusing on milk yield, reproduction and longevity – all of which will help maintain the herd’s place in the dairy industry and cater to the standards of German consumers. “The past has shown that the milk market is volatile, and I don’t think that is going to change. We have to

cope with that and higher costs in production due to regulations,� Cornelius said.

The young dairyman, and his fellow farmers, are putting a greater emphasis on animal welfare with larger barns and more space per cow. “We already do a pretty good job when it comes to animal welfare and the use of antibiotics,� Cornelius said. “Unlike other industries where consumer trust is lost, we have a rather good reputation among consumers.�

Using his education and experiences, Cornelius will strengthen the trust between his livelihood and that of consumers in order to carry on the family farm.

Farm accident not taking Byer down High school senior continues wrestling, chores after arm caught in baler

FRAZEE, Minn. – From the Frazee-Vergas High School wrestling mat to his family’s 100-cow Holstein dairy, Landon Byer continues wrestling and farming following a round baler accident this fall.

Every morning begins at 4:30 for Byer, 18, who milks cows with his dad, Marvin, in a double-8 parallel parlor on their dairy near Frazee, Minn. Byer returns for the afternoon milking except during the wrestling season. Those days he is at practice until 6 p.m.

“I have been wrestling since I was 3,” Byer said. “My brothers (Ethan and Byron) went to practice and I went along with. It’s a big thing in our school, and my dad wrestled, too. I like the thrill of it.”

Amidst school and practice, Byer also mixes the dairy cows’ TMR comprised of haylage, baleage, corn silage, a protein mix and molasses, as well as tending to the 30 black and red Angus feeder cattle, bedding the dairy cows and watering calves.

His schedule was uprooted the eve-

ning of Sept. 4, 2017.

“There was hay on the roller [of the baler] and I was unplugging it when the power take off (PTO) started and sucked my shirt in and then sucked my left arm in,” Byer said.

For ve minutes, Byer was unable to release himself to safety while his arm was entangled at his bicep. The moving belts of the baler burned Byer’s skin.

“I was worrying and bracing my other arm so I wouldn’t get sucked in,” Byer said. “My collar wouldn’t rip so it kept bringing my head closer and closer and pulling me in.”

With the tractor running, Byer said his cries for help were unheard. His dog, Colby, however, heard him and began barking.

“My dad heard the dog, and he came running and turned the tractor off and cut the belts to get my arm out.”

With his arm free, but severely burned and damaged, his dad and mom, Tammy, rushed Byer to the emergency room in Detroit Lakes, Minn., a halfhour drive.

“I thought my arm was broken, and I would lose it,” Byer said. “I was in a lot of pain.”

At the hospital, Byer was given units of blood while his arm was numbed to control the pain. The next day, Byer was taken to the hospital in Park Rapids, Minn., where he underwent two surgeries – one to debride his injury site and

Byer said.

Byer returned home Sept. 16, the day before his birthday. “They let me out for my birthday,� he said. “I didn’t really celebrate. I sat around and couldn’t walk very well.�

Byer completed therapy for one week to regain strength and motion in his arm. “The doctor told me I would never again be able to wrestle,� Byer said. “I was upset thinking it wouldn’t be a good senior year not being able to wrestle, being ranked high in the state.�

But as the week progressed, Byer was given the go ahead. He would be able to wrestle once again. “I was really excited to get back in the wrestling room and get started,� he said.

The season opened Nov. 20 and Byer was there the ďƒžrst day of practice. Despite being healed, Byer faces his share of difďƒžculties on the mat. “I don’t have much feeling in my arm. All my nerves are dead. My left arm isn’t that strong anymore and ‌ feels like I am getting poked by needles,â€? he

Iâ&#x20AC;&#x2122;m getting worried about [my arm]. I donâ&#x20AC;&#x2122;t want it to tear anymore. But, I donâ&#x20AC;&#x2122;t think it has changed the way I wrestle.â&#x20AC;?

Last year, Byer placed sixth in the 106-weight class as an individual while the team placed third. And, his record stood at 38-5.

Despite his injury, Byerâ&#x20AC;&#x2122;s record stands at 12-2 this year in the 113-weight class, and he hopes to place in the top three as an individual during the Minnesota state wrestling meet in February.

Next, Byer plans to attend Ridgewater College in Willmar, Minn., to major in dairy management and to one day take over the family farm. â&#x20AC;&#x153;I am grateful to have my arm and people looking out for me. Thank God my dog was there. I am looking forward to going to college and ď&#x192;&#x17E;nishing and coming back to take over the farm,â&#x20AC;? he said.

Producers gather for PDPW Food and Policy Summit Vincent shares focus of Wisconsin Milk Marketing Board

MADISON, Wis. – The Professional Dairy Producers of Wisconsin (PDPW) held their Food and Policy Summit Dec. 6 at the Sheraton in Madison, Wis. Producers and other members of the industry gathered to learn about issues that are shaping the future of the dairy industry.

Wisconsin Milk Marketing Board (WMMB) CEO Chad Vincent spoke at the summit about the direction the WMMB is making to promote and increase awareness of Wisconsin dairy products throughout the nation as well as globally.

Vincent is wrapping up his rst year at the helm of the WMMB and is condent the path the WMMB is using to bring Wisconsin dairy products to the forefront both nationally and globally is working. WMMB employs around 60 associates committed to the growth of the Wisconsin dairy industry, providing decades of consumer product marketing and sales experience.

“To many folks, the WMMB is a well-kept secret, what we do, how we do it and why,” Vincent said. “Even more so, people know even less about DMI (Dairy Management Inc.).”

The WMMB works with other state and regional milk marketing groups, the United Dairy Industry Association (UDIA) and the National Dairy Research and Promotion board to help fund DMI. “The DMI creates national promotional programs for the states to use and join in on,” Vincent said. “We work together so the states don’t have to create 17 different programs.”

The overall job of the WMMB is to work to drive sales and trust, building branding and doing education so people have a much stronger understanding

of the importance of dairy, both nutritionally and economically.

“The sales part is really interesting because we don’t make any product,” Vincent said. “We are the marketing group. We work with a lot of the processors and co-ops to help them drive their marketing programs.”

Vincent said 10 years ago more money was spent on advertising, but said the returns were diminishing. Today, instead of advertising, the DMI is working to create partnerships with major corporations across the country, a strategy which Vincent said is working.

Examples of successful partnerships include embedding a scientist in the Kroger grocery chain, which is the No. 2 grocery chain in the country with nearly 2,800 stores nation-wide. New products have been created that integrate dairy, creating more usage for milk moving through their system.

“When people see what is happening at Kroger, they tend to imitate it,” Vincent said. “So we are seeing this thing cascade throughout the system.”

Another success story is the increased usage of cheese in food served by the Taco Bell franchise.

“Five years ago, cheese was an afterthought, something they sprinkled on top,” Vincent said.

“Now, cheese is the center of the plate.”

There are more success stories. One is working with McDonald’s to encourage butter usage instead of margarine, creating an additional consumption of 700 million pounds of milk each year.

Domino’s has added two additional ounces of cheese to each pizza increasing cheese usage over 40 percent, which means an additional 250 million pounds of milk used annually.

A new industry-wide campaign called Undeniably Dairy was created by DMI. Undeniably Dairy is a platform with thoughts, ideas and creative content for processors to use in their advertising.

Today, over 175 companies in the state are using this program in their advertising and marketing.

“Using Undeniably Dairy, without any farmer-funding what so ever, there are millions of dollars being spent by processors towards telling the dairy story,” Vincent said.

Using tools provided by the DMI, the WMMB works to be the marketing and promotion group to help drive demand specically for Wisconsin dairy products.

“We work with processors daily, hourly, to help build their brands and businesses,” Vincent said. “The more cheese, dairy and yogurt that are sold out of Wisconsin, the more demand there is for your milk, and the better it is for all.”

In Wisconsin, 90 percent of milk is made into cheese, and 90 percent of that milk is sold outside of the state of Wisconsin.

“One question I always get asked is what happened to the local marketing I used to hear about from the WMMB,” Vincent said.

“My answer is that it is still there, it’s just somewhere else. The marketing issues we have are not in Wisconsin, they are elsewhere.

There is an issue with the nation understanding that Wisconsin makes some of the best cheese in the world. We are redirecting our funding to get it in front of people that will make a difference.”

Wisconsin producers hold a 46 percent market share of the specialty cheese market in the U.S. “We are getting people to look less about the quantity of Wisconsin cheese produced and more about the quality of cheese produced,” Vincent said.

(DATCP) and PDPW. “Education is vital in promoting dairy, and we are reaching 35 to 40 thousand fourth graders each year,” Vincent said. “We are working to have dairy readily available in schools. It’s invaluable to get the product in the hands of the future consumers.”

Vincent outlined the WMMB’s objectives for the 2018 scal year, which include driving awareness and an afnity for Wisconsin dairy products; increasing distribution, trial and sales growth of Wisconsin cheeses and beginning to work on international capabilities; and enhancing the communication to farmers and increase the trust in farmers, ensuring that we don’t lose our right to farm.

“There are so many ways the WMMB makes a difference,” Vincent said. “Building trust to help make sure we defend the rights and the ability of farmers to do what they do, with their heads held high and to get the world to understand the amount of work and effort it takes to the feed the world is probably some of the most important stuff we are doing.”

Farm Bureau service a foundation of life Kling selected for state organizations’ distinguished award

TAYLOR, Wis. – Steve Kling has lived his life farming, and for over 50 years has been involved in the Jackson County Farm Bureau.

At the Wisconsin Farm Bureau Federation’s (WFBF) annual meeting Dec. 3 in Wisconsin Dells, Wis., the organization bestowed to Kling its highest honor, the Distinguished Service Award.

Kling and his wife, Pat, operate a 50-cow dairy farm near Taylor, Wis. “Steve is an advocate for Farm Bureau and has devoted countless hours during his years as Jackson County Farm Bureau president,” said WFBF President Jim Holte of Kling’s selection for the award.

“His leadership and experience are assets to our organization.”

Kling was nominated for the Distinguished Service Award by his fellow JCFB members, and the nal selection was made by the WFBF Board of Directors.

He is paving the way for generations to come.”

Kling has a very modest outlook on his recognition for this honor.

“I’ve just done what I thought was right over the years,” Kling said of his Farm Bureau involvement.

“I didn’t mind volunteering. I don’t feel like we did anything to deserve this, but we might have touched someone along the way that they thought I deserved to be recognized.”

Joining the Farm Bureau was logical for Kling, who joined in high school to get car insurance.

His parents were active members and his dad served on the board.

His grandfather was a founding member of the Jackson County Farm Bureau. The family tradition of service to the Farm Bureau is continuing, with Kling’s son, Nathan, joining his father on the board in Jackson County.

Kling began his leadership journey in the JCFB in 1976, just out of college.

“I was asked to serve as the Young Farmer Chairman,” Kling said. “I had just started to farm, right out of college. That position included a position on the board, and I started attending the meetings.”

That involvement grew over the years to take Kling to fullling duties on the state level, including working on dairy policy development committees.

Kling has been part of the Farm Bureau delegation that has traveled to Washington, D.C. to meet with area legislators, working to share the concerns of the dairy industry with elected representatives. He also regularly attends Ag Day at the state capitol in Madison.

them (legislators), we go as an organization of 40,000-plus farmers,” Kling said. “That makes them maybe listen better to us. We’re more effective than if we were a group of 10.”

Kling recalls meeting with U.S. Representative Ron Kind and U.S. Senators Herb Kohl and Russ Feingold, all of Wisconsin.

“I know they are very busy, but they all took 20 or 30 minutes to talk to us and discuss our concerns,” Kling said. “I don’t think it’s possible to get their ear like that if not for the size of our organization.”

Other fond memories for Kling include attending Young Farmers Conferences through Farm Bureau.

“The friendships you make there, those are great,” Kling said. “It has always been a way for my wife and me to talk with other farm families.

Those friendships have carried on throughout our career, and we might not have met those people if it hadn’t been for the Farm Bureau.”

Kling has enjoyed meeting a wide variety of farmers from throughout the U.S. while attending Farm Bureau activities.

“You get to know them, and you learn about their concerns, which might be similar to ours or could be different, but you can agree with them,” Kling said.

Kling said there have been several issues that seem to pit dairy farmer against dairy farmer.

“The Northeast Dairy Compact created animosity among dairy farmers,” Kling said. “It seems Midwestern farmers have always tended to look down on California dairy farmers, too, because they operate differently.”

But Kling knows dairy farmers need to stay united, especially after having the opportunity to meet with producers from across the country.

“It doesn’t matter if you milk 25 cows or thousands of cows, all dairy farmers have the same concerns at the end of the day,” Kling said.

Kling is a believer in the grass-roots foundation of the Farm Bureau.

“It all starts on the county level but we have connections all over,” Kling said. “The policies come from the local level and are fed up to the top. It’s not the top telling the local people what to do.”

Over the years, Kling has seen how Farm Bureau has evolved in order to meet the needs of its members.

“It’s important for people to sit down together and work on solving issues,” Kling said.

Board, representing Jackson, LaCrosse and Trempealeau counties. They have hosted the Jackson County Dairy Breakfast twice. The Klings have enjoyed sharing their story with a number of foreign exchange students hosted through 4-H and Dairy Farmers of America (DFA) programs.

Additionally, in 2016, the Klings were selected as the Jackson County Farm Family of the Year and in 2012 were the selected as the LaCrosse Farm Show Farm Family. In 2005, they were recognized as the Jackson County Land Conservation Department Watershed Farmer Award winners and were nalists for the 2012 Leopold Conservation Award.

Kling is grateful for the gift of life he was given through a lung transplant in 2015.

“It’s the greatest gift you can receive,” Kling said of his transplant, encouraging people to consider organ donation, and to discuss it with their families. “I’m saddened someone’s life ended for mine to improve. I will continue to give back to make a positive impact while I’m here in honor of that person.”

Farm Bureau is one way Kling gives his time to make the positive impact.

“I’ll continue to volunteer my time,” Kling said. “It’s difcult to get people to serve on these boards, but it’s very important. I’ll continue to serve and represent my peers as long as I can.”

Time for new methods of application calculation McGrath presents at UW Discovery Farms conference

WISCONSIN DELLS, Wis. – What may be best for your farm’s pocketbook may not be the best answer for the environment, and vice versa in some cases.

“Agronomically small nutrient losses are environmentally signicant,” said Josh McGrath, soil management specialist at the University of Kentucky. “There are signicant tradeoffs involved in managing for environmental protection. The most protable system will have signicant environmental impact.”

McGrath presented his talk, “Navigating Nutrients in a World of Competing Interests” at the sixth annual University of Wisconsin Discovery Farms conference, held Dec. 12 in Wisconsin Dells, Wis. First, he spoke about the 4R approach to nutrient application: applying the right source at the right rate at the right time in the right place.

“The 4R approach has been widely adopted by the fertilizer industry,” McGrath said. “Right is dened by the practice’s impact on performance objectives such as yield

or water quality.”

McGrath explained the complexity of nitrogen requirements, which can vary spatially and temporally from one corner of the eld to the next in terms of responsiveness, availability and potential yield. These factors vary independently of time and of each other, also.

“Soil type, climate and previous management vary as well,” McGrath said.

Nitrogen surpluses exist due to recommendations. McGrath pointed to the invisible hand of the market pushing farmers to apply just over the economic optimum to get one more bushel of grain. He used a study from Delaware as an example.

“The amount of nitrogen applied just to achieve one more bushel resulted in 17 pounds more nitrogen per acre,” McGrath said. “The economic optimum does not equal the environmental optimum.”

Phosphorus application can be just as tricky as nitrogen. With phosphorus, the hydrology of the eld overshadows the source of the nutrient.

“In a Delaware study, we used four different tillage, including no-till and conventional tillage, treatments in one eld. We needed a two-inch rain event to generate runoff,” McGrath said. “The no-till treatment had the highest runoff rates.”

McGrath suggested that while methods such as no-till and cover crops can be helpful, they aren’t quite a silver bullet, using phosphorus levels in Lake Erie as an example.

“No-till and cover crops are not always the best solution,” McGrath said. “Different sites require different solutions. The Lake Erie watershed

is dominated by low soil phosphorus, fertilizer application instead of manure, and notill, but the lake has too much phosphorus.”

McGrath also argued that recommendation methods were out of date, stating that many still rely on methods and models from the 1950s to calculate nutrient recommendations for their elds.

“On average, estimated values are right, but individual sites may vary,” McGrath said.

“There is a need for new methods for rate decisions.”

He also suggested a need for new research in new ways with new tools.

“One way forward would be adjusting rates for spatial and temporal variabil-

ity. Equipment manufacturers have made all these hammers [for variable rate technology] but we still don’t have a nail,” McGrath said. “Sensors can use models and early growing plant response to apply, but not all portions of elds respond equally. Sensors are probably the most written about technology in agriculture today, but there’s a disconnect between them being studied and actually being implemented.”

Moreover, the current industry status quo for nutrient application in terms of environmental health may not be sufcient for farmers going forward in years to come.

“Implementing current best management practices are not enough,” he said.

RED WING, Minn. – First developed during the farm crisis of the 1980s, the Minnesota Department of Agriculture Rural Finance Authority (RFA) has continued to provide nancial assistance to farmers across the state through a series of funding options.

“The rst program we started was a renance program to restructure farm operations and stretch farmers’ debt so they could make things cash ow,” said Ryan Roles, senior loan ofcer with RFA. “We created our rst lending program in 1986, and it’s grown over time.”

Roles presented “Starting a Farm, with Help,” at the Minnesota Milk Dairy Conference and Expo Nov. 29 in Red Wing, Minn., speaking of several funding opportunities beginning farmers can utilize when applying for loans through their local nancial institutions.

“Our goal is to help Minnesota

farmers and local banks,” Roles said.

“We give lower interest rates, share in the risks and can help when small banks have lending limits.”

New in 2018, RFA will further support the agriculture sector by offering the Beginning Farmer Tax Credit.

The program was signed into law

by Gov. Mark Dayton last spring and will become effective Jan. 1, 2018.

“It’s similar to Iowa and Nebraska’s tax credit, but also includes the sale of farm land,” said Roles, who mentioned the application is being created and will be available soon.

Essentially, the program provides a state tax credit to agriculture asset owners, such as landowners, who rent or sell their farmland or farming assets to beginning farmers.

The credit can come in three forms – up to 5 percent of the sale price of an asset up to $32,000; 10 percent of the gross rental income in the rst, second and third years of the agreement with a maximum of $7,000 each year; or 15 Turn to RFA | Page 28

“The purpose of this is hoping a landowner will nd a beginning farmer to help buffer their taxes. [Asset owners] can take 5 percent as a tax credit just by selling it to a beginning farmer,” Roles said. “It’s also a benet for beginning farmers.”

Currently, the program is set up to approve asset owners in 2018, and setting aside funds for 2019 and 2020. In years following the three-year benchmark, asset owners will have to reapply.

In the program’s rst year, funds have been capped at $5 million.

“It’s a rst come, rst serve tax credit,” Roles said. “We’ve had a lot of interest in the program, but we don’t know how much we’ll actually see once people can apply.”

The state legislature has already approved $6 million funding in years 2019-2023. While funds can be rolled over each year, once the money is distributed RFA will no longer accept ap-

“The applicants cannot be an LLC or a partnership if other individuals are not beginning farmers,” Roles said. “So, what’s going to happen is beginning farmers are going to have to make the rental agreement on their own in order to qualify for the tax credit.”

Once an application is accepted, beginning farmers must also participate in a nancial management program, which can be partially funded through an RFA tax credit or Farm Business Management scholarship.

Roles also presented a brief overview of other funding programs available through RFA, such as the Beginning Farmer Loan, Livestock Expansion Loan, Agricultural Improvement Loan, Livestock Equipment Loan, Restructure II Loan, Disaster Recovery Loan, Farm Opportunity Loan, as well as the Livestock Investment Grant.

“Our purpose is to help eligible Minnesota farmers nd nancing that they may not be able to receive through other options,” Roles said.

“About half of our portfolio is young farmers. We’ve done it all, though; if it’s ag production, you can look at using one of our programs.”

Selling bonds through the state or through a revolving fund – where farmers pay RFA back for the loan and then that money is redistributed to fund another loan – is what keeps the programs operational.

Since RFA’s inception, the organization has processed 3,000 loans totaling $228 million. In 2017, alone, the government awarded the organization with $35 million; to date, $23 million has been used for farmers across Minnesota.

“We’ve been very well backed by the government and our loan activity has been great,” Roles said.

While each program varies in stipulations, at the core, RFA works with a local lending service to cover a percentage of the loan.

“We think it’s important for farmers to work within their local community to build those relationships over the years,” Roles said.

“This could be dairy herds, grain rental sites, machinery and more,” Roles said. “It is wide reaching and covers pretty much everything in ag.”

However, the asset owner cannot be an equipment or livestock dealer.

For Minnesota beginning farmers, they must qualify as a beginning farmer per RFA’s standards – farming less than 10 years as veried by a Schedule F form, have a net worth of less than $800,000 and do a majority of the farm labor.

Weber appointed Cooperative Network Interim President and CEO Cooperative Network, the statewide trade association for cooperatives in Wisconsin and Minnesota, has named Gary Weber as the organization’s Interim President and CEO. In this role, Weber will direct all activities of the two-state operations, working closely with cooperative directors, managers and employees. Prior to joining Cooperative Network, Weber spent the majority of his career devoted to the success of cooperatives and their surrounding communities. In his most recent role, Weber was part of the governance team with Land O’ Lakes. Weber resides in Lino Lakes, Minn., with his wife of 41 years, Deb. Together, they have two children and four grandchildren.

David Cooper resigns as General Manager of FarmFirst Dairy Cooperative FarmFirst Dairy Cooperative announced the resignation of its general manager, David Cooper, from the organization to be effective Dec. 31, 2017. A true, dedicated professional to all dairy farmers and industry professionals, his resignation marks a new chapter to refocus on his family. David Cooper has been serving the cooperative and its members since 2006, originally as general manager of Family Dairies USA, then as assistant general manager for FarmFirst Dairy Cooperative during 2013, and nally the past four years as the general manager for FarmFirst Dairy Cooperative.

Cooper will remain as an employee through Dec. 31.

Fred Studer, 81, passes away Frederick (Fred) Ernest Studer, age 81, of Monroe, Wis., passed away Nov. 23, 2017, in his home surrounded by his family. He was born Aug. 6, 1936, at the Deaconess Hospital in Monroe, Wis., the son of Rosalie (Klassy) and Ernest Studer. He graduated from Monroe High School in 1954, where he was elected to attend Badger Boys State session at the University of Wisconsin-Madison. Fred was united in marriage to LettyJane Adams on March 2, 1957. Fred became a partner in Studer Super Service of Monroe in 1963 with his father and three brothers. He served our country in the Naval reserve honorably for nine years. Fred was director on the board of The First National Bank and served as a director and president of Wisconsin Power Equipment Retailers Association for many years. Fred was an avid motorcyclist; outdoorsman and enjoyed traveling the United States with his family and friends. He served the area farmers his entire life and embodied the name of his family business, Studer Super Service. Fred was a loving husband, caring father, loyal brother, kind grandfather, generous friend and hard worker. Survivors include his wife, LettyJane; three sons Ernest (Barbra), David, Greg (Jane) and two daughters Laurie (Dan) Crandall and Rose (Adam) Bauer, all of Monroe; 10 grandchildren; Katie Studer, Andrea (Craig) Nolan, Meghan Studer, Garret (Jana) Crandall, Alyssa Studer, Karissa Studer, Vanessa Studer, Ethan Studer, Roman Bauer and Lilah Bauer; three great-grandchildren Cleo, Karl and Lisl Nolan; two sisters Rosalie (Urban) Miller and Hedy (John) Anderegg; two brothers Gary (Judy) Studer and Louie (Phyllis) Studer; and many nieces and nephews. Fred was preceded in death by his parents and a brother, Nathan, and sister-in-law, Barb Studer.

Pasta sauce 1/2 cup butter 1 pint (2 cups) heavy whipping cream 4 ounces cream cheese 1/2 tsp. minced garlic

1 tsp. garlic powder 1 tsp. Italian seasoning 1/4 tsp. salt 1/4 tsp. pepper 1 cup grated Parmesan cheese

In a medium saucepan add butter, heavy whipping cream and cream cheese.

Cook over medium heat and whisk until melted. Add the minced garlic, garlic powder, Italian seasoning, salt and pepper. Continue to whisk until smooth.

Add the grated Parmesan cheese. Bring to a simmer and continue to cook for about 3-5 minutes or until it starts to thicken. Toss it with your favorite pasta.

Simple vanilla ice cream 1 cup whole milk 3/4 cup granulated sugar pinch of salt

2 cups heavy cream 1 tsp. pure vanilla extract

In a medium bowl, use a hand mixer on low speed, or whisk, to combine the milk, sugar and salt until the sugar is dissolved. Stir in the heavy cream and vanilla. Cover and refrigerate 1 to 2 hours or overnight. Pour mixture into frozen and prepared ice cream maker (have it turned on and moving) and let it mix until thickened, about 15 to 20 minutes. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer it to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.

Mix together all ingredients except butter and cornflakes, and put in a 9x13inch pan. Mix melted butter and crushed cornflakes. Sprinkle over potatoes.

Bake uncovered for 1 hour at 350 degrees.

HOOF TRIMMING

Homemade yogurt 4 cups (1 quart) milk 3 Tbsps. plain yogurt (purchased or homemade)* or powdered yogurt starter** Flavorings such as jam, honey, dulce de leche, molasses, fresh or dried fruit, garlic, herbs, etc. (optional)

Special equipment: Candy thermometer; yogurt maker or other incubator, such as a thermos; cheesecloth for straining (optional); Mason jars or other container for storage

Start by cleaning and sterilizing all your equipment and tools, as well as your work surface. Most utensils and storage containers can be sanitized in the dishwasher.

Alternatively, sterilize everything in boiling water. Prepare an ice bath, filling a large bowl or sink with ice. Attach a candy thermometer to a heavy, large pot and add the milk. Place the pot over moderate heat and heat the milk until it reaches at least 180°F or boils, stirring occasionally to prevent a skin from forming and making sure the milk doesn’t scald or boil over. Alternatively, place the milk in a large microwave-safe bowl or a large glass measuring cup with a spout (for easy pouring) and microwave it in 2- to 3-minute intervals, until it reaches 180° or boils. Remove the milk from the heat and allow it to cool to 110°F to 115°F. To speed the cooling process, place the pot in the prepared ice bath and stir the milk occasionally. (If the milk temperature drops too low, return it to the heat.)

If using yogurt as a starter culture: In a small bowl, combine about 1 cup warm milk with the yogurt and stir to combine. Add the yogurt-milk mixture to the remaining warm milk and stir until completely incorporated. Do not stir vigorously.

If using a powdered yogurt culture: Follow the manufacturer’s instructions and add the specified amount of powdered culture to the warm milk; whisk until completely incorporated. Do not stir vigorously.

Pour or ladle the mixture into the yogurt maker containers or another incubator (if using a thermos, first warm the inside with hot tap water) and incubate between 110°F and 115°F for 5 to 10 hours, depending on the desired flavor and consistency – longer incubation periods produces thicker, more tart yogurt. Do not disturb the yogurt during incubation. Cover the yogurt and refrigerate until cold, 2 to 3 hours. (If you used a thermos to incubate, transfer the finished yogurt to a non-insulated container for chilling so the temperature will drop.) Stir any flavorings into the yogurt just before serving. (For thicker, Greek-style yogurt, after incubation, spoon the yogurt into a cheesecloth-lined colander set over a bowl and let it drain, covered in the refrigerator, for at least 1 hour or overnight. Discard the whey that drains out of the yogurt or reserve it for another use.) Yogurt can be stored in the refrigerator, in covered glass, ceramic, or plastic containers, for up to two weeks, but the flavor will be the best during the first week. As yogurt ages, it becomes more tart. If more whey separates out of the yogurt, just stir it back in before serving.

Cook’s notes: Yogurt needs to incubate for at least 5 hours, but it can safely incubate for much longer, even overnight. If you’re using a yogurt maker with a timer and you set it for a shorter incubation (5 hours, for example), it’s fine to let it sit there for several more hours. The same is true for a thermos or other incubation method; just keep in mind that the longer the incubation period, the thicker and more tart the final yogurt. The whey that drains from the yogurt is full of vitamins and minerals and can be added to smoothies and lassis, used as a cooking liquid, or made into a simple drink with a bit of sugar or salt. As an alternative way to thicken yogurt, whisk in 3 or 4 tablespoons non-fat powdered dry milk when you add the starter.

This recipe may be doubled or tripled; increase the amount of starter and milk proportionately. *If using store-bought yogurt, choose a yogurt that tastes good to you. It’s important to select an unsweetened version that contains live cultures, but the fat content doesn’t matter. **Powdered starters can be found at some grocery and health food stores and from online sources, such as the New England Cheesemaking Supply Company.

Read the package instructions to determine how much starter to use for a batch of yogurt – many come in small envelopes or packets perfectly sized to make a single batch.
