Doing what they can with what they have

Value-added products making a difference for Daniels family

WISCONSIN DELLS, Wis. – Shrinking or non-existent prot margins have made many small dairy farmers think outside of the box when it comes to nding ways to increase their viability. Justin and Darci Daniels did just that when they decided to begin marketing value-added products on their Garden Valley Farmstead in Hixton, Wis. Darci Daniels shared with those in attendance at the Compeer Financial Resilient Farms Conference Dec. 11 in Wisconsin Dells, Wis., how they were using farmstead products to increase protability on their 50-cow, 120-acre dairy farm.

“We knew that if we wanted to stay a small, family-operated dairy farm, this was the avenue we would need to go,” Daniels said.

In May, the Daniels family opened their own store right on the farm, selling their own cheese, butter, beef and eggs.

They also sell locally produced foods, such as pork and honey.

“The whole idea of doing something with our own milk

and products from our farm had been stirring for some time,” Daniels said. “We went into this with the motto of ‘Progress, not perfection.’ It was just what can we do to get started, to get our feet wet in it, and keep our investment and risk as low as possible.”

Daniels and Justin are rstgeneration on their farm and are both under 35 years old, and are lacking a large equity base for borrowing money.

“This is a great place to start for anyone who is considering direct-marketing their own products,” Daniels said. “Everyone has their own unique story and how they got to where they are in agriculture. People want to know those stories, and they want to connect with you.”

According to Daniels, sharing your past careers and experiences with your customers is what will help create momentum and build sales in a small-scale more intimate farmstead business.

“Our passion is taking care of the cows and working on the farm every day,” Daniels said. “That’s where we want to spend a lot of our time.”

With that focus in mind, the Daniels family made the

They process approximately 6 percent of the milk produced on their farm and market the rest to a commercial creamery.

“We also focus on a second motto: ‘Do what you can, where you are, with what you have,’” Daniels said.

on-line store and their on-farm retail store to market their products, but started testing the waters over a year ago by employing their second motto.

“We’re located about two miles from an established apple and blueberry orchard, but it’s two miles in the wrong direction for most of the trafc,” Daniels said. “With my background, I knew that orchards and cheese in Wisconsin are a big touristy thing and tie together well. In the idea of

doing what you can, we had a pop-up tent as a roadside stand and put up signs. The orchard let us give out samples while people waited in line to pay.

We did that for three Saturdays, and we sold 650 pounds of cheese curds from our creamery. It was a small drop in the bucket, but it gave us a little condence to get started.”

Daniels said they gained a lot of insight into what consumers are looking for while selling from the roadside stand.

“Almost every single person that stopped asked if the cheese curds came from our cows,” Daniels said. “They wanted them to be from our cows. We could denitely tell there was going to be an advantage having a product that was made just from our milk.”

After experimenting with farmstead sales, the Daniels family went back to the drawing board to begin looking at how to begin marketing farmstead products from their farm in earnest.

“We sent the rst load of milk without having a store, without having anything but this idea that we were going to try it,” Daniels said. “I thought if nothing else, we’d just have 500 pounds of cheese we’d need to eat eventually.”

Managing a dairy farm requires a unique skill set to keep up with a complex business as well as changing technologies and management practices; managing the nances of a dairy farm is no different. A new program designed specically for dairy producers will provide tools today’s farmers need in a format that meets their busy schedules.

The PDPW Financial Literacy for Dairy® program presented by Professional Dairy Producers© is the dairy industry’s rst nancial curriculum designed for dairy producers.

The program was authored by renowned dairy economist and instructor Dr. David Kohl and vetted during a pilot program with 36 dairy producers in 2017-18. Two levels of training will be offered, based on online assessment prior to the course.

Program trainers will include: – Gary Sipiorski, Dairy Development Manager with Vita Plus, will facilitate both Level 1 and Level 2 sessions. Sipiorski brings a wealth of experience from roles in the feed industry, as a community banker, and instructor and advisory board of the University of WisconsinRiver Falls. He has served on a number of agricultural boards and leadership programs and was a member of the PDPW Financial Literacy taskforce.

– Steve Schwoerer, Senior Dairy Lending Specialist with Compeer Financial, will train Level 1 sessions. Schwoerer is the account ofcer for the organization’s large dairy portfolio, covering eight counties surrounding Fond du Lac, Wis. – David Olsen, President of AgriFamily Consulting, will facilitate Level 2 sessions.

Olsen works with families to professionalize their business and adoption of accrual and managerial accounting practices. His strength is working with multiple entity operations and thinking strategically about how an operation works for long term transition and estate planning.

The program was developed based on requests from dairy farmers and is designed to teach skills, then give participants the opportunity to put them to work on their farm before coming back to the next session. The course condenses college-level coursework into a few

training days to make the most of participant’s time and resources. The course will focus on the principles of nancial reports to understand the numbers that drive protability as well as benchmarking to measure progress and setting nancial goals.

The Effective Leadership Workshop is a part of the communications and leadership training curriculum, Dairy’s Visible Voice®, presented by PDPW. The nal program for the 2018-19 program year will be the Social Media Strategy training held Feb. 7 in Madison, Wis. What dairy or ag-related extracurricular activities are you involved in? I am the president of the Albany FFA Chapter, and I am in agriculture mechanics as my career development event.

Why are you involved in these activities/organizations and what is your favorite? I enjoy the people and places I get to see. Every time I go to an FFA event, I get to meet new people, do new things and see new places. FFA is also lled with people that have common interests and experiences in agriculture.

Tell us your best experience during your time in these activities/organizations. My best experience in FFA is when me and a few other individuals from my chapter went on a trip to Indianapolis for the National FFA Convention. Nationals was ve days full of meeting new people from all around the country, doing fun stuff such as going to a Garth Brooks concert or a rodeo, and the convention itself.

What’s your favorite social media? For the little bit that I am on social media, I usually go on Snapchat because it’s the most widely accepted social media application, so I just stick with where I can contact people easiest.
