A facility to connect the old with the new Kelms build 10-row freestall barn with robots

FARIBAULT, Minn. – At the Kelm family’s dairy, each building ows right into the next, including the tiestall barn and the freestall barn with robots. The old facility is connected to the new one with a ramp for cows and people alike to easily walk back and forth with a roof overhead. While this ramp literally connects the old with the new, it also signies the bridging of two generations in order to continue the family’s farm.

a part of the dairy along with their children, Ava, 3, Payton, 1, Colton, 5 months. They work together with Josh’s parents, Jerry and Colleen, on their 140-cow dairy near Faribault, Minn. Last December and January, the family started milking their herd with four robotic milkers to accompany the new 10-row freestall barn that is bedded with manure solids.

The Kelms rst started using two robots on half of their barn Dec. 27, 2015 and then added 20 more cows and red up the other two robots nearly three weeks later.

is the information that comes with them, Josh said. However, he also mentioned it can be a challenge sometimes.

There’s so much to look at.

It’s always fun to look up production. But sometimes there’s so much [information] that you don’t know what to do with or what you need to look at,” he said. “Instead of seeing it with your own eyes you have to rely more on the computer.”

Another benet has also been the ease of milking heifers.

“It was always a challenge to train heifers no matter what system you have them in, but it was denitely a hassle in the tiestall,” Josh said. “They adapt to the robots so fast.”

Josh said he thinks heifers adapt quickly because of his training method.

“I sometimes push them four times a day and never keep the same schedule. It’s sporadic. Then I drop down to three, then to two milkings.

I’m just all over the place to the point they can’t gure me out. Then when I drop down to two I’ll see them stand by the robot waiting for me. Then they usually gure out they can do it without help,” he said.

Yoreks improve to sustain multiple families on 675cow operation

SOBIESKI, Minn. – The Yorek family is accustomed to making modications on their farm.

“We always want to keep improving,” Tim Yorek said.

Tim, his brother, Matthew, his cousins, Adam and Job, his father, Frank, and his uncle, Jerry, have continued doing that after a large expansion in 2006. The Yoreks milk 675 cows on their farm near Sobieski, Minn.

“We’ve made a lot of changes since then,” Job said.

Another reason the Yoreks saw a decrease in bedding costs was because they recycle their sand, reclaiming 85 to 90 percent, which they started doing in 2010 after switching to sand in their other 425-stall freestall barn.

“Being able to reclaim the sand was one reason we switched to sand in the rst place,” Adam said.

However, it took time to adjust to sand after managing sawdust and ag lime for many years.

Eventually, the Yoreks gured it out.

They pile the recycled sand for a while to drain before putting it back in the stalls.

Winter is a challenging time for draining sand piles.

“It freezes and doesn’t dry well. We typically buy fresh sand in the winter and mix it with our wetter sand,” Matthew said. “It’s a long process, but it works.”

The year 2012 continued to be one of change. That’s when, the Yoreks stopped breeding cows themselves and brought in an AI technician.

“The technician just did a better job for us,” Tim said.

They also did more timed breedings using ovsynch.

“It still is 50-50 with timed breedings and watching for standing heats,” Tim said.

To assist catching cows in heat, Tim and his family started using activity collars on the cows.

“It gives me a notication on my computer or phone who is in heat,” Tim said. “Once the cows are conrmed pregnant, the collars come off. It’s been a real helpful tool.”

The Yoreks also switched nutritionists that year and in 2014, they removed alfalfa from their ration.

“We weren’t getting consistent quality haylage or dry hay,” Job said. “Once the haylage was gone from storage, we were done with it.”

As a replacement for the alfalfa in the diet, the Yoreks added straw and shredlage processed corn silage.

With the additional acres not in alfalfa, they also started planting BMR corn on a few of their elds.

This year, they planted half of their corn acres in BMR corn and are hoping to plant three-quarters of their land in BMR corn this next year, if not all of it.

“The BMR corn worked well for us, and the cows are doing well on it,” Adam said.

Since implementing a higher corn silage based diet, the Yoreks had to make room for piles of corn silage.

“We got more tonnage per acre by doing this,” Matthew said. “We had to double the size of our feed center.”

Along with phasing alfalfa out of the crop rotation, the Yoreks also transitioned from chisel plowing and ripping to strip tilling in 2014.

“It improved our soil quality and saved time picking rock,” Adam said. “It used to take three people just as long to pick rocks as it did to plant corn.”

In 2014, the Yoreks built an addition to the recently converted freestall barn for their dry cows, which consisted of sand-bedded freestalls, maternity pens and some individual pens for the newborn calves.

“The dry cows were on a bedded pack before,” Job said. “This made a big difference.”

The cows calved in with less metritis, lower somatic cell counts and better body condition scores than they did before.

“They held their weight so much better after calving,” Matthew said. “It made a big difference in our fresh cow health.”

When it comes to the calves, the Yoreks made one adjustment in 2007 – feeding pasteurized milk instead of milk replacer.

“We’re not throwing away our waste milk now, and it’s been better for the calves,” Matthew said.

Prior to all of these changes, Jerry and Frank expanded from milking 120 cows in a tiestall barn during the 1990s to 425 cows milked twice daily in a double-12 parallel parlor. The parlor and 425-stall freestall barn were built in 2001, and they built the compost barn in 2006 to allow each of their sons to return to the farm.

“We laid the foundation for them,”

Frank said.

Seeing each of their sons return to the dairy and make the changes was something Jerry and Frank were happy to see.

“It felt good to see them come back,”

Jerry said.

Frank agreed.

“It was all them,” Frank said. “It’s been interesting to watch the changes.”

Although much has changed over the last 10 years, Matthew is still in charge of the cattle from when they are born until post freshening, and works with Frank and Jerry feeding calves and breeding heifers.

Matt also takes care of the dry cows with Tim, who is in charge of the lactating herd.

Job and Adam still work together on nutrition and agronomy.

“We all have our niche,” Job said.

Even after so many changes, the Yoreks have more improvements planned for the future.

“We’ve ne tuned things over the years, and we want to continue doing that,” Tim said.

Those continual improvements will help the Yoreks sustain their family’s dairy into the future.

“We want to stay competitive in the industry,” Matthew said. “That’s how it’s always been, and that’s how it’ll always be.”

a day with a few maxing out at six times daily. The herd’s average times of milkings per day is 3.5.

“But we’re not anywhere near capacity,” Josh said.

Only 95 cows use the robots. Maximum capacity is 250. About 40 of the other cows still in the herd are milked in the tiestall barn by Josh’s dad.

In addition to those cows not adapting to the robots, milking in the tiestall barn is a way for Josh’s parents to slowly phase out of the dairy.

The Kelms expect to have the barn full in three years.

“It will be nice to grow that slow. That way we have time to learn. If I make a mistake I can shut down a robot for a few hours and slowly work at it and not have a mad line behind the robot,” Josh said.

The 10-row barn is split into two pens each with ve rows and a feed alley to divide the two. Heifers are kept on one side while older lactating animals are kept on the other.

The limited amount of space for a building is a main reason for the barn’s size.

“We gave the builders the layout of the land we had available and told them they had to get 250 cows and four robots in that area. We ended up in an extremely wide barn in order to achieve it,” Josh said.

The barn is t in between the road, their existing barns,

a slurry store and the property line.

Like their two tiestall barns and heifer facilities, they wanted this barn connected to all the rest so animals and people could walk from one to another without going outside.

“It’s not the same temperature in the barns, but you don’t have to be outside in the elements,” Josh said.

The Kelms also added a manure solid separator to generate bedding for the stalls. The manure is rst pumped into two 7,000-gallon pits before being put through the separator. While the solids are used for bedding, liquid is pumped to the existing 1.4 million gallon slurry store.

“We wanted the benets of sand but we didn’t want the problems. Being that our slurry wasn’t big enough we needed to decide how we were going to handle our manure. [Manure solids] became the most logical option. Plus, we had [the slurry store] there, it’s paid for and we didn’t want to have to change that system,” Josh said.

Before the robots, the Kelms were milking their cows in two connected tiestall barns with a total of 126 stalls.

They expanded from one barn with 75 stalls to two when Josh graduated from high school in 2004.

The decision for a new facility came quickly in March

“We came to the conclusion that we needed the change.

Tiestalls were just too much for myself to be doing alone,” Josh said.

Jerry and Colleen wanted a way to ease out of the operation without leaving Josh with a large amount of work for him to handle alone. “[Milking in a tiestall barn] was getting to be a bit too much for me, especially with our growing family,” Josh said.

Although Brittney occasionally helps with the dairy, she is busy handling their onfarm diagnostic lab business and taking care of their three kids.

It made robots the easy choice for the new facility.

“Labor was the biggest issue. We had some high school kids working here and there.

After four farm tours and talking about it for two weeks, the Kelms made the decision and made phone calls to start breaking ground.

Josh and Brittney admit the rst few weeks were rough.

“We spent a lot of hours down here when we rst started using the robots - eating every meal even taking naps,” Brittney said.

Josh agreed.

“If the kids wanted to see me this is where they had to come,” he said referring to the new barn.

They offered advice to others looking at the system.

lems – sometimes more often than you would like. Sometimes it’s a quick x, sometimes it’s a couple hours. Be patient,” Brittney said.

But so far, the Kelms have liked the robots.

“We’re able to have a little bit of a life. We’re not so tied to the farm,” Brittney said. “We get to spend more time out for the holidays in the afternoon without having to rush back.”

Josh agreed that having a exible schedule has made it easier to enjoy time with his family.

“The most fun is not having to be on time,” Josh said.

“If the cows don’t like that I’m late they can go through the robot. Not everything’s set on schedule all the time.”

And the robots are his way to continue dairy farming like several generations before him.

RICE LAKE, Wis. – “If you only rinsed your pipeline, imagine how dirty it would be.”

That sentence, said by Dr. Ryan Leiterman, D.V.M., encouraged people to think about the cleanliness of their calf facilities during a calf protability seminar on Dec. 1 in Rice Lake, Wis. “Dairy farmers don’t just rinse their pipelines with warm water to clean everything. They use rinse, alkaline detergent and sanitizer cycles. Why shouldn’t calf equipment sanitation be the same way?” Leiterman said.

Leiterman, along with dairy nutritionist Teresa Marker, focused the seminar on raising dairy replacements to become protable dairy cows from the moment they are born.

Fifty-six percent of preweaning mortalities in calves are caused by scours, with cryptosporidium and coccidiosis followed by salmonella and E. coli as the leading culprits, and pneumonia making up most of the difference in calf deaths before weaning.

Biolm, or the sticky protein byproduct released by pathogens as a defense mechanism, received special attention because it is often overlooked.

Leiterman said there is a difference between what is visibly clean and what is biologically clean.

“Just because those buckets and bottles look clean doesn’t mean they are,” Leiterman said. “Biolm doesn’t take long to form if surfaces are not biologically clean.”

Leiterman rst recommended rinsing buckets and bottles with warm water to begin the cleaning process. While any temperature can be used, warm water is more effective at breaking up and dissolving biolm.

“Next, wash feeding equipment with hot, soapy water and alkaline detergent,” Leiterman said.

After washing, Leiterman suggested using chlorine dioxide to sanitize bottles and buckets because of its ability to kill hardier pathogens, such as cryptosporidium and coccidiosis, and its unique chemical properties compared to other cleaning agents.

“Because chlorine dioxide is a gas, it is suspended in water molecules. If stored correctly in an airtight container in a dark and cool location, it can last for months,” Leiterman said.

Before a second round of sanitizing, buckets and bottles should be air dried separately and not stacked as to prevent trapping moisture between surfaces, allowing bacteria to grow.

“When you mix chlorine dioxide and water, whether in liquid or tablet form, it should be mixed in a well-ventilated area to avoid temporary lung and eye irritation,” Leiterman said.

Calf deaths before weaning, particularly in the rst month of life, can often be traced to infections they picked up from their dams at birth, depending on the pathogen. E. coli takes 48 hours to incubate within the calf, while cryptosporidium takes up to a week to set up shop in the intestine.

Therefore, cows shed pathogens heavily during calving and this shedding in the maternity pen is the most common source of infection in young calves,” Leiterman said.

To avoid such a transmission from mother to calf, maternity pens or other areas used for calving should be bedded daily and sprayed with the chlorine dioxide solution Leiterman suggested for cleaning calf bottles and buckets.

After calves are born and moved to their new home until weaning, they need lots of clean air. While Leiterman is a veterinarian, his undergraduate degree was in agricultural engineering.

He designs ventilation systems in addition to his veterinary practice.

“Hutches are regarded as the gold standard when it comes to ventilation and calf health, but more producers are switching to calf barns. Too often, calf barn ventilation is based on the size of the barn and not the size of the animals in the barn,” Leiterman said.

Younger calves need less frequent air exchanges, but as they grow their requirements do, too. Leiterman also recommended fans and ventilation tubes be centered directly over the calves to take more advantage of the air blowing directly into their pens.

“During the summer, the hottest days also tend to have the least amount of natural wind,” Leiterman said. “Fan speeds should be set anywhere from two to ve miles per hour for heat abatement.”

However, during the winter months, fan speed should be reduced to avoid drafts.

“The University of Wisconsin denes a draft as air moving faster than 60 feet per second, while the University of Minnesota denes it as anything over 100 feet per second,” Leiterman said.

Leiterman, from his years of practice, prefers to use the gure of 50 feet or greater per second to err on the side of caution.

“In 10 years, I see the future of ventilation focusing less on air volume and more on air speed,” Leiterman said.

“It’s not so much the speed of the fan as the size of the hole that air is being pushed through that determines the velocity of air reaching the calf.”

Marker, whose work as a nutritionist focuses on calves and heifers, spoke about maximizing calf growth through early rumen development and stabilizing the intestine to reduce scour events.

Cheese production active for holiday season The Agriculture Department announced the November Federal order benchmark Class III milk price at $16.76 per hundredweight (cwt.), up $1.94 from October, $1.46 above November 2015, and equates to about $1.44 per gallon, up from $1.27 in October and $1.32 a year ago.

The 11-month Class III average stands at $14.64, down from $15.92 a year ago and down from $22.75 in 2014.

Class III futures, as of late Friday morning, portend a December Class III at $17.11; January at $16.94; February, at $17.02; and March at $16.89.

The November Class IV price is $13.76, up a dime from October but $3.13 below a year ago. The Class IV average is at $13.66, down from $14.24 a year ago and compares to $22.58 in 2014. It’s the lowest November Class IV price since 2009.

California’s comparable 4b cheese milk price is $17.45 per cwt., up $3.02 from October, $3.02 above a year ago, and the highest 4b since November 2014.

It’s also 69 cents above the FO Class III price, rst time the 4b has topped the Class III since December 2009. The 4b has trailed the Class III by as little as 39 cents in October, to as much as $1.39 in May, despite the temporary State mandated change in the 4b pricing formula with respect to whey. The gap in 2015 ranged from a low of 53 cents in August to a high of $2.43 in January.

The 2016 4b average stands at $14.06, down from $14.61 a year ago and $20.40 in 2014.

The November 4a butter-powder milk price is $13.69 per cwt., up 58 cents from October but $2.88 below a year ago. The 4a average is at $13.29, down from $14.06 a year ago and $22.49 in 2014.

In other pricing news; a lower All-Milk price slid the latest milk feed price ratio lower, reversing four months of gain. The October ratio is 2.37, down from 2.47 in September but compares to 2.30 in October 2015, according to USDA’s latest Ag Prices report.

The index is based on the current milk price in relationship to feed prices for a dairy ration of 51 percent corn, 8 percent soybeans and 41 percent alfalfa hay; in other words, one pound of milk today purchases 2.37 pounds of dairy feed containing that blend.

The October U.S. average All-Milk price was $16.60 per cwt., down 70 cents from September and $1.10 below October 2015.

California’s All Milk average of $15.34, was down 40 cents from September, 79 cents below a year ago, and $1.66 below Wisconsin’s. The Wisconsin average, at $17.00, was down 90 cents from September and 90 cents below a year ago.

October corn averaged $3.29 per bushel, up 7 cents from September but 38 cents per bushel below October 2015. Soybeans averaged $9.30 per bushel, down 13 cents from September, but 49 cents per bushel above October 2015. Alfalfa hay averaged $135 per ton, down $2 from September, and $20 per ton below a year ago.

Looking at the cow side; the report shows the October cull price for beef and dairy combined averaged $65.40 per cwt., down $9.10 from September, $24.10 per cwt. below October 2015, and $6.20 below the 2011 base average of $71.60.

Cash cheese prices start December mixed. Block Cheddar dipped to $1.76 per pound Wednesday, but rallied and closed Friday at $1.81, still a nickel lower on the week but 29 1/4-cents above a year ago. The barrels closed at $1.6150, down 7 1/2-cents on the week, 13 cents above a year ago, and 19 1/2-cents below the blocks. Eleven cars of block were sold on the week and 25 of barrel.

as many manufacturers resumed regular processing schedules, according to Dairy Market News (DMN).

“Manufacturers indicate that, although there is a good supply of milk available, low-cost spot loads of milk are a little harder to nd again. Cheese production is very active. Processors are racing to meet committed holiday shipment deadlines. Retail cheese orders are strong and food service demand is steady. Inventories of barrels and cheese used for processing remain long.”

Western cheese makers also report solid demand from retail and food service. “Some buyers are making their nal orders and restocking shelves ahead of the winter holidays. Milk is readily available and cheese production is active. In many cases, the vat is the top choice for milk not going into the bottle. Barrels and cheese used in processing are long.”

Cash butter jumped 5 1/4-cents Monday and did a 13-cent pole vault Wednesday only to give some back Thursday and Friday. It closed at $2.1850 per pound, up 13 3/4-cents on the week but still 71 3/4-cents below a year ago when it was at $2.9025. It plunged 70 1/4-cents the following week and 14 cents the week after that. Fourteen cars exchanged hands the week of November 28 at the CME. DMN says Central region butter output was very active Thanksgiving weekend. “Butter production remains strong in order to cover anticipated robust seasonal demand, driven by the year-end holiday.

The high volume of orders from retailers is shrinking stock levels at some plants. Inventories are balanced in others. Some Class II manufacturers are pulling heavy cream intakes. As a result, a few churners are seeking additional cream.

Cream made available over the Thanksgiving holiday kept western churns busy, says DMN. “Much of the focus is on print butter for the winter holidays.

Western production remains active as processors work to ll end of year commitments. Because domestic butter shoppers note everything is better with butter, retail butter demand is strong. Inventories continue to decrease but are still larger than last year at this time.”

CME Grade A nonfat dry milk closed the week $1.0075 per pound, up 10 1/4-cents, 20 3/4-cents above a year ago, and the highest since October 7, 2015. Twenty cars exchanged hands on the week. The strength comes despite the possibility of the EU selling some of its Intervention stock back onto the market.

One of the big stories this week was OPEC’s decision to cut production to boost revenues, rst cut in eight years. Oil prices responded and, of course, one of the repercussions is rising gasoline prices at the pump.

Another big story involved the U.S. Marshals Service. Under order by the U.S. Food and Drug Administration, more than 4 million pounds of product produced by Valley Milk Products LLC of Strasburg, Virginia was seized. The company is owned by the Maryland and Virginia Milk Producers Cooperative Association in Reston, Virginia. The seized products included dry nonfat milk powder and buttermilk powder packaged in 40 and 50-pound bags for further manufacturing, worth nearly $4 million, according to an FDA press release.

“The U.S. Department of Justice led the complaint, on behalf of the FDA, in the U.S. District Court for the Virginia Western District, alleging that the seized products are adulterated under the Federal Food, Drug, and Cosmetic Act. During an FDA inspection of Valley Milk from July to September, FDA investigators observed poor sanitary practices and reviewed company records, which showed positive results for Salmonella in the plant’s internal environmental and nished product samples. FDA in-

vestigators observed residues on internal parts of the processing equipment after it had been cleaned by the company and water dripping from the ceiling onto food manufacturing equipment.”

“The FDA urged Valley Milk to conduct a voluntary recall of the implicated products,” said Melinda K. Plaisier, FDA associate commissioner for regulatory affairs. “The rm refused to recall and, as a result, we have had to intervene and seize this adulterated food to prevent it from reaching consumers who could be exposed to Salmonella from these products.”

Valley Milk Products responded, stating in a press release that they are “working with the FDA to resolve any concerns related to milk powder recently placed under hold by the government. Multiple tests conducted by third parties on the milk powder have been negative for the presence of Salmonella. There are no reported illnesses related to this issue, and consumers and customers are not being asked to take any additional action. Out of an abundance of caution, we have not produced any dry milk powder at Valley Milk since the FDA initiated its inspection in late July.”

In politics; National Milk President and CEO Jim Mulhern, in his latest “CEO Corner,” addressed the election of Donald Trump. He stated that “It’s already clear that the Trump Administration will usher in a new approach in Washington to some of the issues of interest to dairy farmers,” and listed some of the Federation’s priorities for 2017, including the strengthening of the safety net for dairy farmers, by identifying changes that will “make the Margin Protection Program more reliable and effective.”

“We are also discussing with key Congressional leaders our desire to adopt changes in the near term, instead of waiting for the current farm bill to expire in 2018. Rural areas delivered many votes for the new president, and it’s clear that a sense of economic unease and uncertainty was a driver of that voter turnout.”

Immigration is another issue, Mulhern discussed, stating; “We are now reaching out to the Trump team to discuss dairy’s unique labor challenges. Specically, dairy farm employers need the certainty of access to their current workforce, as well as to a future supply of farm workers on a year-round basis.”

Trade is an important issue as well, according to Mulhern, who wrote; “While momentum behind the Trans-Pacic Partnership and the TransAtlantic Trade and Investment Partnership has stalled for the time being, the need for U.S. dairy access to foreign markets has not. NMPF will continue to highlight how dairy exports are economically important to farmers and dairy processors, as well as to thousands of other workers in rural America.”

Updating a story from last week, DMN reports that “The series of recent earthquakes reaching a 7.5 magnitude in the important dairy areas of New Zealand, has been followed by heavy rains nationally. The earthquakes damaged a number of dairy sheds and knocked out electricity near the affected area. Milk from a number of farms was not able to be collected on schedule due to road and bridge damage. It is uncertain what happened or will happen with the milk, as communications are also disrupted. However, expectations are that the impact will not deter the ability to meet production targets of large dairy processors.

Meanwhile, a 6.4 magnitude earthquake hit Argentina on November 20. DMN says “There have been no reported damages to the country’s dairy industry.”

Using a Brix refractometer to measure the grams of immunoglobulin in a quart of colostrum (IgG/qt.) is a fast and accurate way to check the wholesomeness of colostrum. Levels over 23 percent Brix, or 55.4 IgG/qt., are considered good to excellent.

Unless calves are switched to whole milk after receiving the proper amount of colostrum, they need to receive a milk replacer that will meet their nutritional and caloric demands as they grow in weight and frame.

While the science behind milk replacers have come a long way in the past few decades, more research is being done to make something great even better.

“Cold process milk replacers have been shown to increase protein and fat bioavailability,” Marker said.

Other ingredients, such as sodium butyrate and wheat isolate, have also been shown to stimulate rumen development and papillae growth.

“Be careful with milk replacers that list soy-based ingredients, because soy can irritate the gut in young calves,” Marker said. “Research shows that the more milk they’re fed as calves, the more milk they’ll produce as lactating cows,” Marker said.

After grain is introduced into a calf’s diet, the rumen will develop even more and continue to evolve into the sophisticated organ it was designed to be.

Texturized calf starter is recommended.

Both Leiterman and Marker stressed the signicance of consistency when raising calves to set them up for a bright future as milking cows.

“Always keep feeding times, amounts and temperature consistent,” Marker said.

Leiterman agreed in regards to sanitation and ventilation.

“Routine is key,” Leiterman said.

Dec. 7- Domestic Demand Soars in October

CME spot butter markets continue to ease after last week’s meteoric rise above $2.20/lb. Today, sellers walked markets down 0.25¢ at a time.

Three loads of butter changed hands before the market closed at $2.095/ lb., down 2.5¢ on the day. Still, prices remain elevated compared to the end of November. With the Ànal push for retail butter sales coming this week, prices could be slow to subside, but next week marks a seasonal shift when cream Áows to churns start to increase and butter heads to the freezer for use in 2017. Based on the latest data from USDA, commercial disappearance of butter in October was nothing short of spectacular. Daily Dairy Report analysts estimate October domestic commercial disappearance of butter at 186 million pounds, up 14% from the prior year and the highest total for that month since 2012. With a shifting trade balance and astonishingly high commercial disappearance, 2017 could be interesting—to say the least—for U.S. butter prices.

NEWTON, N.J. – Living 60 miles from heavily populated New York City may seem like an obstacle to many, but for the Southways, it provides a unique market for their farm.

“With only 70 dairies left in the state and land values being high, artisanal farming – small farms producing a product sold locally – is very strong in our area,” Pete Southway said. “We had a demographic to tap into.”

Pete, his wife, Marilyn, and their children, Matthew, 32, Hannah, 21, Sadie, 19, Laina, 18, Neal, 14, and Mark, 13, have found a niche market by milking 51 cows and making their own cheese near Newton, N.J. Matthew, his wife, Trish, and their two boys farm in New York.

Like most of the dairy farms in the area, the Southways house and milk their cows twice a day in tiestall barns.

“There’s a few herds with 500 cows and freestall barns, but most have 75 to 100 cows in traditional tiestall barns,” Pete said.

The Southways’ two ties-

tall barns are next to each other with one pipeline and alleyway connecting the two.

“That’s how it was set up when we moved here,” Pete said.

On the backside of the barn next to the milkhouse is their cheese making room for the onfarm creamery, Springhouse Creamery, which Hannah manages.

The Southways use 80 percent of their milk to make cheese, including 10,000 pounds of milk they sell per week to another cheesemaker for a xed price with a substantial premium they negotiate each January.

The milk used in their creamery is pumped once or twice a week directly to the cheese vat, which sits 4 feet lower than the milkhouse.

“How often we make cheese depends on the week and time of year,” Pete said.

The Southways make three varieties of cheeses – a farmstead cheese in nine avors, several avored 60-day minimum aged cheeses and old fashioned Wisconsin cheddar curds.

Springhouse Creamery has a strong following of clients in a 40-mile radius with their product being sold at numerous local farmers’ markets, restaurants, wineries, and at feed and farm stores.

“It’s wonderful,” Marilyn said. “We have a lot of repeat business from our clients and

our sales are growing 15 to 20 percent each year.”

They are also thinking about supplying Whole Foods with their cheese.

“We’ve talked to them before, but we’re not sure we have enough product,” Pete said.

Although the market for their cheese is strong, the availability of dairy supplies is not.

“That’s a challenge for us,” Marilyn said. “There’s not many farm stores around that carry what we need.”

Because of that, the Southways travel 2.5 hours into Lancaster County in Pennsylvania.

“Thankfully, we have enough dairy farmers in our area to support a veterinarian, a dairy supply eld man and an A.I. breeding service,” Pete said.

“There are a lot of days we skipped a milk pick up depending on the amount of cheese we made each week,” Pete said. “We use the creamery to balance the milk we don’t turn into cheese.”

Since cheese is their main priority, the Southways have Jerseys with a few Brown Swiss, Guernseys and Holsteins.

“Jersey milk is higher in butterfat and protein, which works well for making cheese,” Pete said.

The cows are also put on pasture or put in a loose housing building during the day.

“They’re able to be out of the tiestall barn no matter what the weather is,” Pete said.

During the winter months, the Southways have average temperatures of 20 degrees and an average of 40 to 50 inches of snow.

“We’re not as cold for not nearly as long as what the Midwest sees,” Pete said. “Ten degrees is cold for us. It’s gotten to ve degrees below zero, but we don’t have the extremes. Temperatures below that are very rare.”

The summer months average 80 to 85 degrees and 46.2 inches of rain.

“We don’t irrigate, even this year when it was drier,” Pete said.

These conditions allow the Southways to grow 75 acres of corn, 40 acres of alfalfa and 125 acres of a variety of grasses like Italian rye grass, orchard grass, brome grass and clover.

“We plant ve to eight acres of sorghum to harvest as silage for the dry cows and heifers,” Pete said.

“We feed some dry hay in the summer, but we feed more in the winter to add more ber in the diet,” Pete said.

The Southways are well established on their farm, but ironically, Pete and Marilyn never grew up in the industry.

“I spent 25 years as a commercial banker,” Pete said.

But their interest in dairying started when Pete helped a friend on his dairy.

“It was my gym exercise from the bank,” Pete said. “It just took off from there.”

By the end of 2007, the Southways were making their own cheese.

“We had a unique opportunity with the local food market being so strong here,” Pete said. “We learned how to do it from the cheesemaker we sell our milk to.”

It is now a successful business with hopes of adding a yogurt product and a bakery soon.

“It’s pretty cool to see how the business has grown,” Hannah said.

They are even thinking about adding pasteurized, creamline bottled milk, which is milk that is not homogenized.

“It depends if our other children are interested in the farm,” Pete said.

“We’re going to explore different avenues as best we can.”

But right now, they are enjoying making cheese and dairy farming as a family.

“We’re glad to provide a product directly to the consumer,” Pete said.

“There’s lots of little niche markets here and we found ours.”

A day in the life of Andrew Primus

Dairyman balances chores, mechanic work on Dec. 6

MEIRE GROVE, Minn. – Dec. 6 began like any other for 28-year-old Andrew Primus; he was up before sunrise and did not return home until dark.

Primus milks 32 cows at his parents’, Raymond and Rosemary’s, dairy near Meire Grove, Minn., in Stearns County; 25 cows in the herd are owned by Primus.

He is also a mechanic at Greenwald Farm Center in Greenwald, Minn., and rounds out each day by feeding for a neighboring dairy farmer before coming home to feed his own herd one last time.

“Normally, I like to stay busy,” Primus said with a grin.

Last Monday was no different.

The day began at 5:30 as Primus entered the barn to start chores.

“First, I feed my cows silage and by 6 a.m., I can start milking,” he said.

Primus milks the herd of Brown Swiss, Red and White, and Black and White Holsteins in a 30-stall tiestall barn using three milking units. Before milking nished at 7:15 a.m., Primus’ father came out to the barn MISSY MUSSMAN/DAIRY STAR and to help feed the calves Andrew Primus (leŌ) milks 32 cows with his parents, Rosemary and Raymond, near Meire and heifers, which he does Grove, Minn. Andrew balanced chores on the farm, his job as a mechanic in Greenwald, Minn., every day. and mixing feed for a neighboring dairy farmer on Dec. 5.

As the sun rose, Primus was already onto his next task – being a full-time mechanic at the local dealership.

After graduating from Alexandria Technical and Community College in 2009 with a degree in diesel mechanics, Primus knew he wanted to build a career in mechanics.

we were getting equipment ready for eldwork,” Primus said. “I liked going through it and getting it greased.”

But his desire for working with machinery and xing farm equipment began

long ago, looking up to his grandfather as a mentor.

“My grandpa was a mechanic and he was always here; I watched him when I was younger,” Primus said.

Each day is different for

Primus when he is at the dealership. Depending on the time of year, the young man’s daily tasks might include changing tires to xing a tractor or any other piece of equipment.

On that Monday, though, Primus was busy replacing the tires on a tractor and preparing equipment for winter storage.

“I really like doing this.

It’s always nice when something breaks and then I can x it and get it going again,” Primus said. “Someday, I wouldn’t mind milking and having my own mechanic shop on the farm.”

As Primus continued on with his day at the dealership, his father cleaned the barn and fed haylage at noon.

Roles on the farm have reversed since Primus’ dad underwent multiple surgeries, including rotator cuff, back and knee, within the last two years.

“When he had surgery, then I got into milking more and Dad fed and bedded the cows,” Primus said.

As a child, Primus would feed and bed while his dad milked the cows.

“I like being with the animals and being out in the country seeing nature,” Primus said.

For ve years, Primus has made this farm stop a part of his day-today routine.

“I like seeing the different farm setups. One day I stopped by to see if Tony needed any help and he did so I started helping him daily,” Primus said. “At the time, there wasn’t enough work at home.”

During this time, Primus’ parents do evening chores and milk on the home farm.

By 9:30 at night, Primus was home and fed his herd of cattle one last time for the evening.

Hoffelts’ home, dairy barn remnants of logging town

BRUCE, Wis. – Before Wisconsin was known as America’s Dairyland, much of the state was a deeply forested lumberjack’s paradise with pine thickets covering the landscape for miles on end.

For Don and Jeanette Hoffelt of Bruce, Wis., their 50cow dairy serves as a quiet reminder of the heyday of the timber industry.

In fact, along the stretch of

the state highway their farm is located near, a village by the name of Atlanta, Wis., occupied a nearly half-mile stretch between nearby Devil’s Creek and the Chippewa River at the dawn of the 20th century.

However, by the time Don bought the farm in 1978, the village’s future had oated down the river just like the logs that built it.

“I grew up on the next farm to the north, and bought this farm because it was adjacent to ours. By then, it had been abandoned for seven

years after being repossessed,” Don said.

Jeanette, who married Don in 1982, agreed it was in bad shape.

In Atlanta’s glory days, the Hoffelt farm was the hub of the growing village.

“The Arpin brothers moved up here in the late 1800s and built a sawmill, damming up the creek to make a millpond,” Don said. “The Arpin Hardware and Lumber Company

was located on our farm.”

Jeanette said the barn housed the horses used for hauling lumber, as well as the dairy cows, livestock and machinery. Meanwhile, a man named Marvin Hoekstra oversaw operations of the farm and lived in the house.

“The Arpins paid their workers in scrip, which could only be used at the company store, and this farm provided all of the food for the store,”

Jeanette said. “The town even had a boardinghouse and railroad.”

By the 1910s, after the trees were gone and the sawmill burned down, the Arpin brothers left Atlanta for good and the village disappeared into the pages of Rusk County history.

until we got the barn ready,� Don said. “That was a two-year process.�

As their family grew to include six children, the house grew, too. “The basement became ďƒžnished, and a garage and two bedrooms were added. On a farm the house has to change with the family because we couldn’t move to a larger home,â€? Jeanette said.

The barn was solid timber from roof to ďƒ&#x;oor, with 10- by 10-feet slabs of hand-hewn virgin timber, which were sometimes upwards of 30 feet long. While the original framework is mostly still in place in the haymow, the barn was set on jacks so it could be dug out and ďƒžnished before any cows were housed. “The people farming here in the 1950s did put in some blockwork, but it wasn’t well done, so we had to redo

The wooden walls were covered with gold rib sheet metal. The barn, which was 40 feet wide, was designed with wide feed alleys to make the use of a powered feed cart feasible. A manure pit was dug and lined in late 1986 and early 1987, and the cows were brought to their newly renovated home in 1987.

The Hoffelts’ home and farm buildings aren’t the only reminder of north-

ern Wisconsin’s logging heritage. Don and Jeanette now farm the ďƒželds once submerged by the old millpond, and where logs used to ďƒ&#x;oat, crops grow in what Don refers to as the swamp. “I’m still plowing up pieces of sawblades and timber,â€? Don said.

History has a way of holding on, even after the buildings and people are long gone. No one knows that quite like Don and Jeanette Hoffelt do.

DeRosiers add solar panels to 100-cow dairy

OSCEOLA, Wis. – Even with the success achieved by the addition of an on-farm creamery, Troy DeRosier continues to seek avenues to make his family’s farm stand out even further.

DeRosier and his wife, Barbara, recently added 564 solar panels to the rooftops of four of their buildings on their 100-cow dairy, Crystal Ball Farms Organic Dairy, a few miles south of Osceola, Wis. “We’re certied organic, and we process all our milk in our on-farm creamery to distribute throughout Wisconsin and parts of Minnesota,” DeRosier said.

While the creamery has helped the DeRosiers take their operation to the next level, it also comes with a price.

“The creamery is also the biggest consumer of our electricity,” DeRosier said.

The custom solar system provides all the electricity the farm uses at 151 kilowatts. The farm doesn’t have batteries to store the power generated from the panels, so the grid is used instead.

“I will have absolutely no maintenance costs until well after it is paid for, and even then it should be minimal,” he said.

The installation process proved to be relatively smooth. However, the headaches began after installation with incorrect billing.

“This is proving to be a very big issue,” DeRosier said. “We’re trying to gure it all out.”

DeRosier had a few words of advice for other farmers looking to install renewable energy systems on their own farms, no matter what the source is.

“No matter what the renewable is, if you need to work with the power

company, it is very important to discuss how ‘kilowatt demand’ charges will affect your project,” he said. “None of the solar companies that gave bids for our project included this in their bids, and it had a major impact on our numbers.”

While kilowatt charges really only affect businesses and not residential situations, DeRosier is focused on the nancial implications that can come from not discussing certain expenses.

“For me, it’s all about the numbers,” said DeRosier. “I want to be as environmentally friendly as possible, but my rst priority is to provide for my family, and that means staying in business.”

Krawczel digs deep into stocking density

ST. CLOUD, Minn. – A great deal of research has been done on the effects of stocking density of lactating cows, but Peter Krawczel of the University of Tennessee and his cohorts are taking the subject to new depths.

In addition to analyzing previous research conducted on existing facilities around the world, they are conducting studies that look deeper into the pros and cons.

On Nov. 30 Krawczel presented “Interaction of Stocking Density, Productivity and Cow Comfort: What to Consider on Your Farm,” during the Minnesota Milk Dairy Expo. Krawczel, an assistant professor in animal science, rst reviewed existing studies, then turned his attention to current research.

Krawczel pointed out the importance of rest to a lactating dairy cow, noting that a cow typically spends 10 to 14 hours a day lying and resting. Research has shown that rest is priority, with cows opting to decrease feeding and social behavior time in order to rest. In overstocked situations, cows demonstrate less time before lying down. They come back from milking, skip feeding and lie down as a way of competing for stalls.

“Cows value rest the most,” Krawczel said.

“They’ll give up meals to rest.”

As overstocking increases, lying time decreases.

Although overstocking can create an illusion of good stall comfort, it likely will result in decreased milk yield and may represent an increased risk of environmental mastitis.

“How much can we overstock? 120 percent is about the tipping point,” Krawczel said.

Increased competition at the feed bunk also causes negative effects, among them decreased feeding time, aggression, increased standing time and a shift in feeding times. Those effects are greater at post-and-rail bunks, versus headlocks, since dominant cows have less ability to chase submissive cows away. Overstocking also causes increases in feeding rate, as cows try to consume feed in limited time.

Increased stocking densities also resulted in decreased rumination in the stall, versus in the alley, as cows were unable to access a stall to rest.

Overstocking affects heifers more than mature cows as dominant cows display territoriality in the use of freestalls, preferring those nearest the feed alley.

Subordinate cows avoid stalls previously occupied by dominant cows. Research has shown that overcrowded conditions – from a subordinate perspective – may exist even at lower stocking densities.

In research that paired cows and heifers in one study, heifers suffered more milk loss than cows, due to reductions in resting and rumination activity.

Looking at preliminary evidence from on-going trials, Krawczel said four treatments were used in one study. A control group was stocked at 100 percent at both the feed bunk and stalls. A feed bunk group was at 160 percent stocking density at the feed bunk and 100 percent at the stalls. The freestall group was at

100 percent density at the feed bunk and 160 percent at the stalls. The both group was at 160 percent stocking density at both the feed bunk and stalls.

As expected, lying time decreased considerably for both the freestall and both groups (1.7 and 1.4 hours per day, respectively), and also decreased by a lesser amount (half-hour) for the feed bunk group which had to ght for feeding time.

“Is it better to provide stalls or feeding space?

We’re still working through the data, but overall access to freestalls appears to be the big thing,” Krawczel said. “But, we should probably consider the quality of rest, more than the hours.”

A non-invasive approach to assessing sleep in dairy cows – similar to sleep studies in humans – applied electrodes to various locations on the cow’s poll, head and neck. It studied eye and neck muscle movements to observe sleep patterns of cows in box stalls.

Sleep was divided into drowsing, non-REM sleep and REM sleep. Those categories, along with minutes of rumination per day, were studied as they related to stage of lactation.

When one cow in the study came down with E. coli mastitis, the patterns were analyzed, with rumination severely limited on day 1 and day 2, but bouncing back on day 3. Drowsing time increased while REM dropped considerably while the cow was sick.

Using a collaborative grant from the USDA, the study found that cows in conned spaces were subjected to either 24-hour sleep deprivation or 24-hour lying deprivation. In the sleep deprivation study, cows were nudged awake every time they tried to sleep. A grid was used to prevent cows from lying down in the second study.

Researchers are currently working through the data to determine the effect on milk production and recovery, and how it would apply to pens of cows.

As expected, lying time increased drastically for both treatments after the deprivation. Daily milk production decreased the day after lying deprivation, but stayed fairly steady for sleep deprivation.

Krawczel next addressed the effects of inadequate feeding environments, noting especially subclinical stresses of overstocking. While cows may be able to use reserves to handle overstocking as a single stressor, a combination of stocking density and dietary stressors can cause negative effects.

“It comes back to where cows are ruminating,” Krawczel said. “There’s a decrease in rumination in freestalls. They’re ruminating while standing. Saliva is on the barn oor, rather than being swallowed.”

Although not studied as much, Krawczel said the importance of behavioral and physiological responses of dry cows to stocking densities. A historic perspective on the effect of stocking density on DMI intake of dry cows indicated that stocking rates greater than 90 percent, with headlocks, results in decreased intake.

Stocking densities of 80 percent of stalls and headlocks result in lost milk for the rst 83 days in milk. For each 10 percent increase above 80 percent, there was a 1.6 pound/day milk decrease. Metabolic disorders – milk fever, ketosis, DA and RP – also increase in overstocked cows. As expected, heifers are most severely affected by overstocking as they have to ght to gain access to the feed bunk.

In conclusion, Krawczel said it’s important to recognize the relationship among management, stocking density and productivity – and that producers need to think about quality of lying time, not just total hours.

Osorio joins SDSU Dairy & Food Science Department faculty Award-winning dairy researcher Johan Osorio recently joined the South Dakota State University (SDSU) Dairy & Food Science Department faculty.

Osorio brings more than eight years of experience in animal nutrition research, with emphasis in dairy calf nutrition, dairy cow physiology during the transition period and dairy cattle nutrigenomics.

Osorio will be teaching three classes; Dairy Farm Operations I and II and Laboratory Techniques in Dairy Science. His research/scholarship responsibilities will focus on the utilization of advanced molecular biology and sensor systems techniques to improve dairy cattle health and performance.

Osorio most recently served as a postdoctoral scholar at Oregon State University, Corvallis, Ore., where he taught a dairy production systems class.

Osorio has also conducted dairy research in Denmark and Honduras and has been successful in supporting his research with competitive grants. He is the co-author of 26 publications, many of them peer-reviewed.

In 2013, Osorio received the Midwest Young Dairy Scholar Award and the Innovation in Dairy Research Award from the American Dairy Science Association.

New Year treats After some quick backwards math, I have gured out that I will be hosting this year’s annual New Year’s Eve party.

For the past 30 years, four couples have gotten together to eat, drink, laugh, play games and of course welcome in the New Year. We have continued this tradition through new babies, snow storms and Y2K. There was only one year we postponed it one week due to a u bug traveling around the countryside. Our game of choice in the early years was the “Farming Game.” It’s a great Monopoly-style board game about dairy farming, picking rocks, cattle breaking down the neighbor’s fence and picking up a milk check as you make another round. Our only problem was that we wouldn’t start it until after midnight because we were so busy talking and catching up with one another. Which seems strange, considering two couples are dairy farmers, one is a DHIA tester and the other is a beef farmer when not working for the power company. Two of us would be heading back out to our barns in a few hours.

Regardless of the lack of sleep, there is never a lack of food on the counter. Over the years, we have all settled into the dishes we bring to the party. Rita brings the taco salad dip.

Ann always brings enough plates of homemade candies for everyone to take home. That leaves the two dairy farmers to bring whatever we have time to whip up before the party. Here are some of our favorite New Year’s party treats.

Ann’s Pepperoni Bread 1 loaf frozen bread dough, thawed 1 tbsp. olive oil 1 jar spaghetti sauce 1/2 tbsp. dried basil leaves

1/2 tbsp. dried minced onion 1/2 tbsp. dried oregano 1 (8 oz.) pkg. sliced pepperoni 1 (6 oz.) pkg. shredded mozzarella cheese 1 egg, lightly beaten Allow thawed bread to rise once according to package directions. On a lightly greased baking sheet, roll dough into a 12- by 18-inch rectangle. Brush dough lightly with olive oil. Spread a thin layer of sauce over the dough to within a half inch of edges. Sprinkle seasoning over sauce. Layer pepperoni.

Top with mozzarella cheese. Beginning with the longest edge, roll dough into a cylinder and seal seam. Glaze with egg. Bake in a preheated oven at 350 degrees for 35 minutes or until golden brown.

Rita’s Taco Salad Dip 8 oz. cream cheese, softened 16 oz. sour cream 1 pkg. taco seasoning mix lettuce, shredded 1 green bell pepper, chopped 3 tomatoes, chopped black olives, drained cheddar cheese, shredded In a bowl, mix together cream cheese, sour cream and seasoning mix. Spread over a large pan (we use a large pizza pan). Top with shredded lettuce, tomatoes, pepper, olives and cheese. Serve with taco chips.

Chocolate Pizza 8 oz. white chocolate, divided 8 oz. semisweet chocolate chips 1/2 c. each: salted peanuts, mini marshmallows, crispy rice cereal, coconut, red and greed candied cherries In a heavy sauce pan or in the microwave, melt 6 oz. of white chocolate and

peaches (dipped in lemon juice) strawberries, blueberries, or 1 can fruit cocktail, drained. Save the juice. Layer fruit over cream cheese layer.

Glaze: 2 tbsp. corn starch 1/2 tsp lemon juice 1/2 c. sugar 1 c. water, or reserved fruit cocktail juice Whisk cornstarch in water/juice. Cook until thickened and pour over fruit.

Food columnist, Natalie Schmitt all the chocolate chips. Stir in peanuts, marshmallows and cereal. Pour onto a greased 10-inch pizza pan or on a 10inch circle of cardboard covered with foil. Spread to even out top. Sprinkle with coconut. Top with cherries. Melt remaining white chocolate; drizzle over pizza. Chill.

Fruit Pizza Crust: 1/2 c. melted butter 1 c. our 1/4 c. powdered sugar.

Mix together. Pat into a pizza pan. Bake at 350 degrees for 15 minutes. Cool.

Second layer: 8 oz. cream cheese, softened 1 tsp vanilla 1/3 c. sugar Beat together. Spread over cool crust.

Pizza Crust 1 pkg. yeast 5 c. our 2 c. warm water, 105 degrees 1 c. corn meal 2 tbsp. brown sugar 2 tsp salt 1/4 c. oil Dissolve yeast in 1/4 c. warm water and sugar. Set aside. In mixing bowl, add rest of water, salt, extra brown sugar to taste, oil, corn meal and 2 c. our. Mix in yeast mixture. Beat well. Add enough our to make soft dough. Knead for 5-6 minutes. Cover. Rise for 30 minutes.

Punch down and divide in half. Bake at 400 degrees for 15-20 minutes. Yields two pizzas.

Natalie, Mark and his brother, Al, Schmitt farm together near Rice, Minn. They milk 100 registered Holsteins under the RALMA prex.

2 egg whites 2 Tbsp. sugar 1 tsp. vanilla extract 3/4 cup milk

In a small bowl beat egg whites until stiff. Add sugar and continue beating.

For the topping: Mix the flour, brown sugar, cinnamon, salt, and some nutmeg in a separate bowl. Add the butter and mix it all together until the mixture looks like pebbles. Preheat oven to 350 degrees. Remove casserole from the refrigerator and sprinkle the topping over the top. Bake for 45 minutes for a softer bread pudding texture or for 1 hour or more for a firmer, crisper texture.
