Just 15 minutes after sending the email, Nowobielski received a phone call from Revolution Plastics. After answering a few questions about his farm, Nowobielski was enrolled and set to pick up his free dumpster in late September.

Striving to leave a legacy Kuballs named Rice County Farm Family of the Year

WATERVILLE, Minn.

– Nate and Shannon Kuball strive to do more than produce milk on their farm.

“We want to leave a legacy for our family, our community and our employees,” Shannon said. “If we were doing this for the money, we would have stopped a long time ago. It’s more than that.”

It’s this attitude that helped them receive this year’s Rice County Farm

Family of the Year award.

Nate and Shannon, along with their children; Kelsey, 14, Emma, 12, and Keegan, 10, milk 200 cows on their dairy near Waterville, Minn. “[This award] is voted on from other people in the county. It was neat for others to recognize our farm and what we do,” Nate said. “We try to do a good job and try to treat employees, cows and land well.”

However, receiving the award this year in particular was more meaningful to the Kuball family.

“I think the timing [of receiving the award] was signicant with Nate’s dad passing away in January,” Shannon said.

Nate’s parents, Bob and Debbie, until Bob’s passing.

They couldn’t think of a career more tting for Bob. “He loved farming. It’s because he loved taking care of the land and animals,” Shannon said. “He left that for us. He was a huge supporter of agriculture.”

was important to Bob and still is to Nate and Shannon.

“He was a big community supporter. He always wanted to host events and bring kids to the farm,” Nate said.

Once lled with plastic, the dumpsters are picked up in one of two ways: farmers can get on a scheduled pickup or simply call the number on the dumpster to schedule a pick up. Once scheduled, dumpsters are picked up within a three-day window of time.

Plastic is then baled up and sent to a factory in Arkansas where it is washed and turned into post-consumer resin.

The resin is then made into garbage liners that are used by hotels, restaurants, schools and businesses nationwide.

Nowobielski said it is a service farmers need.

“We’ve got to do something,” Nowobielski said. “So many people try to burn plastic, which is illegal. This is the answer to our problems.”

While the dumpsters accept plastic materials such as silage bags, bunker covers and baleage wrap, it is not a receptacle for all plastics. Plastic jugs, barrels, buckets and net wrap are several items that are prohibited in the dumpsters. A complete list of excluded items are available on the Revolution Plastics website and are labeled on the dumpsters themselves.

Murphy said the program benets everyone involved.

“This is a way to save money and time; it is a win for everyone,” Murphy said. “It is better for the environment and the farm, turning waste into something good rather than lling up a landll.”

Nowobielski agreed, encouraging farmers to sign up sooner rather than later.

“This is a free service that I cannot say enough good things about,” Nowobielski said. “It’s as easy as it can be to get one; we all should be doing this.”

“Our dumpster would get overlled, so we would burn the excess,” Nowobielski said. “We needed this in this area; this is the solution to a growing problem.”

To sign up for the program, farmers simply need to visit RevolutionPlastics. com or call a representative toll free at (844) 490-7873. While signing up, farmers are asked a series of questions to determine the scope of their operation and the amount of recyclable plastic they generate each year.

Originally, the program was limited to farms producing 4,000 to 5,000 pounds of plastic per year. After the program was launched however, Murphy said it was evident limitations were not necessary.

“Not every farm could realistically gure out how much plastic they were using,” Murphy said. “If farms can ll the dumpsters a few times a year to make up for our expenses, it’s worth it.

If there are 20 to 30 farms in an area that we are servicing, it doesn’t hurt us at all.”

The biggest responsibility farmers have is picking up and hauling the dumpster to their farm. Semi-loads of dumpsters are sent to pickup locations after several farmers in an area sign up, at which time Murphy said he contacts farmers to retrieve the dumpsters.

“When we are going to be in their area, a customer service representative will contact the farmer to pick up the dumpster,” Murphy said. “From then on, we handle the disposal and pickup

Hendrickx balances managing organic farm, herdsman job

BLUFFTON, Minn. – When an opportunity presents itself, Mike Hendrickx does not shy away from it.

“I have a problem not taking one when it’s tossed my way,” Mike said. “I would rather take it than let it pass me by.”

Mike used that mentality when he was offered to rent the land, facilities and equipment to start his own organic dairy farm this fall at Mark and Carol Rohr’s farm near Bluffton, Minn. Now, Mike and his wife, Alida, and their children, Gus, 2, and Sadie, 1, have taken over that organic dairy farm where they milk 50 cows. But that’s not his only job. Mike also works as a herdsman for a 170-cow organic dairy near New York Mills, Minn.

“It was an opportunity that was too good to pass up,” Mike said about taking over the organic dairy.

It all started at the end of February this year.

Mark and Carol Rohr, who sold their cows four years ago, were looking for someone to take over the farm.

“They wanted it to continue as an operating organic dairy farm,” Mike said. “They didn’t want to sell it to a crop farmer or have it go back into conventional.”

The Rohrs thought of people who could potentially ll that need. Mike and Alida Hendrickx were at the top of their list.

“We know them through church, and I knew both of their families,” Mark Rohr said. “They’re both hard working, honest dairy farmers.”

Additionally, Mike had worked on an organic dairy farm as a herdsman since 2010 and owned 25 of his own organic cows.

“We kind of fell into it,” Mike said. “I’ve always wanted to do this, organically. I’d given up on the dream though, and thought I was going to be a herdsman for the rest of my life.”

Although it was his dream, knowing the uncertainties of starting his own farm made Mike cautious.

“It was a tough decision,” Mike said. “I was a little nervous, but I would rather try and have it not work than not try at all.”

Throughout the summer, Mike and Alida worked with the Rohrs to create a written agreement.

“We negotiated a at fee for rent, had everything else drawn up, and signed,” Alida said. “Mark also agreed to help us out with a few things, especially eldwork. He’s done a lot for us.”

After the agreement was nalized, the Hendrickxes purchased 30 more cows and moved their 25 cows to the Rohrs farm on Sept. 6.

The cows are housed in a bedded pack barn, but have access to 39 acres of pasture.

Although the pastures were established, Mike notilled in orchard grass, meadow fescue, rye grass and fescue.

“I’ve had exceptionally good luck with meadow fescue, especially in the low lying areas, and I wanted rye grass so there was a lot for the cows to graze on,” Mike said.

The cows are kept on half-acre paddocks and are moved twice a day.

Beginning grazing in the fall, the Hendrickx family hopes to make it until the rst weekend in November on their pastures.

“If we make it to then, we’re doing well,” Mike said.

Although the cows have access to the pasture most of the day, they are also fed TMR, consisting of corn silage and a little grain, twice a day in the feed lane.

Most of the feed is produced on the 180 acres of land they rent from the Rohrs, which they use for their hay, small grains and corn.

“We feed some of our grain in the parlor,” Mike said.

The cows are milked twice a day in the double-3 bypass parlor on the farm.

“It’s an old style parlor,” Mike said. “But it works well for us.”

Despite having his own farm, Mike continued working as a herdsman.

“I didn’t want to leave it on my employer,” Mike said. “Plus, it allows me to have a little extra money to pay my bills and cover all the uncertainties of starting up a dairy farm.”

They experienced some of those uncertainties right away.

“We had a tough time nding a creamery that would take our milk initially,” Mike said.

Thankfully, Scenic Central Milk Producers Co-op bought their milk. But, they did not receive organic milk prices until their certicate for organic went through.

“That was the hardest part,” Alida said. “We had to sell our milk at conventional prices even though Turn to HENDRICKXES | Page 7

we were already certied.”

Fortunately, that only lasted two weeks.

“That paperwork process can take months,” Mike said. “We didn’t have to wait that long. The certier and the co-op worked to speed up the process for us.”

With only a month under their belt, the Hendrickxes have a set schedule to balance both Mike’s herdsman job and managing their own dairy.

Every morning, the family is up at 3:45 and drives to their farm 11 miles away.

“We try to start milking at 5 a.m.,” Mike said.

Mike and Alida milk the cows, and feed the cows and calves before 7:30 a.m.

“I do as much as I can before I drive 15 miles to the dairy I work at,” Mike said.

Once he arrives at his herdsman job, Mike brings the 170 cows up from pasture, and milks them with a few other employees in the swing-12 parallel parlor.

“After that, I do typical herdsman things, like

breeding the cows, dealing with mastitis and feeding cows,” Mike said.

By 1 p.m., Mike is home to eat lunch, take care of the pigs and play with his children before starting chores at their farm in Bluffton.

“It all depends on what’s going on,” Mike said.

“Right now, I do eldwork before I start chores again at night.”

Most of the week, Mike works as a herdsman once a day, but on Saturday evenings, he has to work a second shift.

“It’s tough getting in so late on Saturday nights, having to get up early on Sunday mornings and nish chores in time to make it to church,” Mike said. “But we make it work.”

Although the Hendrickxes are renting everything but the cows, they and the Rohrs are hoping to take the next step.

“They want to sell the farm to us and they want

to see us succeed without too much nancial responsibilities right away,” Mike said. “The plan is to eventually purchase the farm, pay off our bills and retire from my herdsman job.”

And Mark is excited to help this young family get to that point.

“I’m very happy to have them here,” he said.

“When I started, I bought cows from a guy I knew and didn’t pay them for 19 to 20 days after. I thought, someone had helped me, I gured I should do the same.”

And the Hendrickxes are glad to have the opportunity to follow their dream as a family.

“I’m glad I’m able to practice my own ideas, see if they work or not and do what I can so they do work,” Mike said. “But the best part is working with my wife and having my children on the farm with me.

That’s the best. Everything else comes second.”

farm in the spring. Recently, they started having classes from the Waterville school district also tour their farm.

In the past, they have hosted the Rice County Day on the Farm, and the couple is currently the chairs of the Rice County American Dairy Association board.

They have also hosted tours for the University of Minnesota Extension and had university classes use their farm as a learning experience about how to manage a dairy.

Nate said the students aren’t the only ones to benet.

“I like to take input from any source I can get,” Nate said. “I’m always looking for different ways to learn. I like change.”

Shannon agreed.

“It comes from an atti-

tude that we know we’re not the best and we’re not perfect, so it’s OK if someone comes in and says we need to work on something,” Shannon said.

The farm has been constantly trying to improve since its beginning in 1902 as a diversied farm. In the 1960s, Nate’s grandpa changed the focus to cows, and sold all the pigs and chickens on the farm. At that time, the family added about 50 stalls onto the stanchion barn.

In 1974, Bob joined the farm full-time. Again, they added onto the barn to milk 80 cows.

After Nate attended the University of WisconsinRiver Falls, he returned to the farm in 1998, the same year

Milk production forecasted to rise in 2017

America will have plenty of milk. The Agriculture Department again raised its milk production forecasts for 2016 and 2017 in its latest World Agricultural Supply and Demand Estimates report from a month ago “as the cow inventory has grown more rapidly than previously expected. The higher cow inventories appear to reect growth in herds supplying expanding dairy product facilities.”

2016 production and marketings were projected at 212.7 and 211.7 billion pounds respectively, up 500 million pounds on production and 400 million on marketings. If realized, 2016 production would be up 4.1 billion pounds or 1.97 percent from 2015.

2017 production and marketings were projected at 217.3 and 216.4 billion pounds respectively, up 1.2 billion pounds on production and 1.3 billion pounds on marketings from last month. If realized, 2017 production would be up 4.6 billion pounds or 2.2 percent from 2016.

Import forecasts for 2016 and 2017 were raised on higher expected imports of butter and several other dairy products. Exports were forecast higher as increases in Oceania prices and relatively low U.S. prices are expected to make the U.S. more competitive in world markets.

Ending stocks were reduced as lower prices encourage increased demand from both export and domestic markets. Cheese and butter price forecasts for 2016 and 2017 were lowered due to higher expected milk supplies. However, nonfat dry milk (NDM) and whey will likely benet from increased competitiveness in export markets, and stronger exports will help support prices of those products. Thus, price forecasts for NDM and whey were raised from last month.

Class III and Class IV milk prices were lowered from last month as lower cheese prices more than offset the higher whey price in the Class III calculation and the lower butter price outweighs the NDM price increase in the Class IV price.

Look for the 2016 Class III price to average around $14.35 per hundredweight (cwt.), down 50 cents from last month’s projection, and compares to $15.80 in 2015 and $22.34 in 2014. The 2017 average is expected around $14.65, down 80 cents from what was projected a month ago.

The Class 2016 IV price is anticipated around $13.70, down a dime from last month’s projection, and compares to $14.35 in 2015 and $22.09 in 2014.

The Class IV should average $14.20 in 2017, down 15 cents from last month.

Beef Magazine’s Nevil Spear writes an interesting perspective in his October 10 website post: “The U.S. dairy industry will likely produce in excess of 210 billion pounds of milk this year with only 9.3 million head. In other words, in just a little over 15 years, the dairy industry has ramped up production by in excess of 25 percent with nearly the same number of cows.”

There’s good news on the feed front. USDA’s Crop Production report forecasts corn production at 15.1 billion bushels, up 11 percent from last year but down slightly from the September forecast. Based on October 1 conditions, yields are expected to average 173.4 bushels per acre, down 1 bushel from the September forecast but up 5 from 2015. Soybean production is forecast at a record 4.27 billion bushels, up 2 percent from September and up 9 percent from last year. Based on October 1 conditions, yields are expected to average a record 51.4 bushels per acre, up 0.8 bushel from last month and up 3.4 bushels from last year.

Cotton production is forecast at 16.0 million 480-pound bales, down less than 1 percent from September but up 24 percent from last year. Yield is expected to average 797 pounds per harvested acre, up 31 pounds from last year.

Penn sates, James Dunn writes in his latest Dairy Outlook that “Corn and soybean meal prices are up 9.9 percent and down 3.2 percent respectively in the past month, with soybean prices also down 1.2 percent. The U.S. corn crop, while still high, may be a bit lower than early expectations and the soybean crop will be a record. Exports of corn and beans are lagging estimates, undoubtedly reecting the strong dollar, and in the case of beans, lower Chinese imports.”

“Income over Feed Costs (IOFC) Penn State’s measure of income over feed costs rose by 15 percent in September from its August value, as high milk prices combined with somewhat lower feed prices” Dunn states. “September’s income over feed cost is the highest since November 2014. Income over feed cost reects daily gross milk income less feed costs for an average cow producing 65 pounds of milk per day. The milk margin is the estimated amount of the Pennsylvania all milk price that remains after the feed costs per hundredweight of milk production are paid. Like income over feed cost, this measure shows that the September PA milk margin was 15 percent higher than in August. For both measures the estimated September price may be overly optimistic, but in any case the protability of Pennsylvania dairy production is improving,” he says.

Dairy prices continued sliding the second week of October. Cash block Cheddar sunk to $1.5175 per pound but regained 3 1/4-cents Friday, closing at $1.55, unchanged on the week but 11 1/2-cents below a year ago. The barrels dipped to $1.4475 but inched back a penny and a quarter Friday, to $1.46, 5 cents lower on the week, 18 cents below a year ago, and a larger than normal 9 cents below the blocks. Three cars of block traded hands on the week and 19 of barrel.

Midwest cheese makers report milk is readily available, according to Dairy Market News (DMN).

Some say it has hit the low point for the year and is starting to come back up. Components are also increasing. Inventories are long, but not a major concern as holiday demand approaches and exports improve.

August American cheese demand was “super strong,” according to FC Stone’s Friday Early Morning Update. Quoting USDA data. “American cheese demand increased 7.6 percent above year ago levels and 7 percent above July. The price of block cheese averaged $1.7826 in August, so we know demand was strong then. Demand for the ‘other’ cheese category increased 3.2 percent from 2015 and was 1.4 percent higher than month-earlier levels. Total cheese use was up 4.9 percent from a year ago and was 3.5 percent above the previous month. Year to date, American cheese use is 0.9 percent higher, and other than American cheese is up 3.5 percent, which puts total cheese use up 2.5 percent.”

erage, according to Stone, but total and American cheese imports fell in August. Perhaps the sharp increase in demand was the result of end-users pulling forward holiday purchases earlier this year, which could make a case for a lethargic holiday season. On the other hand, US cheese prices are increasingly attractive on the world stage.”

Spot Grade A nonfat dry milk nished the week at 87 cents per pound, down 4 1/2-cents, and 11 cents below a year ago, with ve cars sold on the week.

Cash butter fell to $1.77 Thursday but regained a penny and a half Friday to close at $1.7850 per pound, down 6 1/2-cents on the week, 66 1/2-cents below a year ago, and the lowest spot since April 2015. Eight cars were sold on the week.

Butter demand dropped 17.95 percent from August 2015, while imports dropped 18.5 percent.

Commercial disappearance of butter was up 0.9 percent from July, with year-to-date butter use thru August up just 0.1 percent, according to USDA. Cream supplies continue increasing in the Central region, says DMN, and readily available for churning. Many processors are gearing up to meet the upcoming year-end holiday needs. Inventories are heavy but some processors anticipate being short in Fourth Quarter. Retail demand is strong Western butter makers also report strong retail demand in advance of the holiday season. Cream is also readily available. Lower prices are generating interest. USDA’s Foreign Agricultural Service reported that the Japanese government will offer a tender for an additional 4,000 metric tons of butter this month. American butter processors hope the narrowed gap between U.S. butter prices and world market prices will make U.S. butter more attractive.

Dairy and Food Market Analyst (DFMA) editors Jerry Dryer and Matt Gould wrote in their October 7 issue that “an uptick in exports is necessary to balance the butter market.” But, they had good news on the export front. The DFMA stated US dairy exports surged in August to the highest level since April 15.

“USA exporters sold about 15.7 percent of the milk supply to international markets in August, up substantially from the 14.2 percent level in July, in our analysis.”

They add that; “While USA milk production increased 1.9 percent during August, the vast majority of that increase was sold overseas (79 percent to be exact). For additional perspective: At its peak in March 14, 17.4 percent of the USA milk supply was exported. In January 15, when exports bottomed, just 11 percent of the milk supply was sold to international markets. Over the previous 12 months, exports averaged 13.3 percent of the milk supply.”

“Dry whey exports led the gains during August and were up 48 percent year over year (YoY). Nonfat dry milk/skim milk powder exports also increased dramatically; plus 39 percent. Cheese exports, up 0.2 percent YoY, reversed an almost two-year-long trend of declines.”

Butter exports however, at 1.7 million pounds, “did not show life and were down 65 percent from one year ago,” according to the DFMA, “bearish news to an oversupplied market.” August marked the 28th consecutive month with international butter sales below year-ago levels, the DFMA reports.

public this week, commissioned by the Consortium for Common Food Names (CCFN), an international alliance of companies and organizations dedicated to preserving the right to use common food terms.

The CCFN and the three major U.S. dairy trade associations, the National Milk Producers Federation (NMPF), the U.S. Dairy Export Council (USDEC), and the International Dairy Foods Association (IDFA) issued a joint press release stating that “Surrendering to a European Union (EU) seizure of common food names would cost the U.S. dairy industry billions of dollars, slash domestic cheese consumption and increase prices for consumers.”

The analysis, by Informa Economics warns that “The European farm policy agenda, which is focused on using geographical indications (GIs) to unfairly grant European food producers a huge commercial advantage, would force farmers and food producers outside of Europe to rebrand familiar foods with unfamiliar names,” according to the analysis. “The resulting confusion in the U.S. domestic marketplace could shutter family farms, eliminate thousands of rural jobs and hurt the overall U.S. economy.”

“The EU advocates extending GI protections beyond a small number of specialty foods to cover many food names that have little to no geographic identity and have long been commonly used by food producers around the world,” the press release stated. “At today’s prices, the decline in U.S. cheese consumption due to the loss of common food names could amount to $2.3 billion in lost sales in three years, and $5.2 billion in 10 years. It could push dairy farm balance sheets below the break-even point for six out of 10 future years, costing farmers a cumulative $59 billion in revenue and forcing several thousand family dairy farms out of business, the analysis added. Several members of Congress and Agriculture Secretary Tom Vilsack also reacted to the analysis.

Meanwhile, NMPF and the USDEC is taking Russia and China to task with the U.S. Trade Representative (USTR) over WTO compliance. NMPF charged that “Russia has violated its trade commitments by maintaining its ban on U.S., EU and Australian dairy products, which has had a negative effect on global markets. Russia has stated, however, that the U.S. government is not sufciently prepared for a future point at which Russia might lift the ban.

NMPF called on USTR, USDA and FDA to work together to initiate the lengthy process of preparation to ensure that the U.S. is not caught at-footed should the market reopen.”

The next Global Dairy Trade auction is October 18. HighGround dairy reports that Fonterra has lowered GDT volume forecasts, blaming a very wet spring. It adds that some farms in the Waikato region are recording production down 10 percent from last season and well below last year’s peak production.

USDA again offered to purchase up to $20 million of cheese this week to “provide assistance to U.S. dairy farmers.” This is in addition to the $20 million announced in August but FC Stone’s Dave Kurzawski says details have yet to be ironed out.

He says “The larger question will be what the spec of that cheese will be. During the previous round of government buying back in September, the Commodity Credit Corporation only spent $7 million of the proposed $20 million. Part of that had to do with the spec of cheese as the call was for ‘consumer ready’ cheese, which presented some challenges to would-be sellers. The announcement this week simply said “cheddar cheese” and that leaves a lot to be discussed when the solicitation is ofcially sent out in the coming weeks.”

Lastly; the California Department of Food and Agriculture announced its November Class I milk prices at $16.13 per cwt. for the north and $16.40 for the south. Both are down $1.64 from October and $1.55 below a year ago. They are the lowest Class I prices since July, 2016.

The Class I 2016 average for the north now stands at $16.00, down from $17.63 at this time a year ago and $24.86 in 2014. The southern average, at $16.27, is down from $17.90 a year ago and $25.13 in 2014. The November Federal order Class I base milk price is announced by the USDA on October 19.

The organic industry is also weathering the same seasonal challenges the conventional dairy industry faces. Demand for organic cheese, butter, and yogurt is growing, but there are fewer opportunities to market milk powder, casein, and lactose at premium prices.

Today’s Global Dairy Trade event 174 ended with the overall index recouping 1.4% from the previous biweekly auction.

Today’s modest gain was driven by higher prices for whole milk powder (WMP), butter, and anhydrous milkfat (AMF).

Perhaps most disappointing was the GDT Cheddar cheese market. All contract months settled lower than the previous auction. The average Cheddar cheese price was nearly the same for the November 2016 and March 2017 contacts at $3,465/ MT. However, December through Febru-

Rising demand and periods of short supply have helped the organic milk market stave off some of the weakness that has plagued conventional milk prices over the past year. For the Àrst time, USDA has published regional mailbox milk prices for organic dairy producers. In most regions, organic pay prices were higher in June 2016 than the year before.

However, in the Northeast and Pacific Northwest, organic dairy producers’ milk checks fell by more than $1/cwt. from June 2015 to 2016, while conventional producers reported even greater declines.

In June 2016, organic dairy producers in the Upper Midwest received $33.45/cwt. for their milk, a dime more than the previous June. Conventional dairy producers in the region saw their mailbox milk price drop $3.16 over the same period to $13.46 conventional producers. But even these higher prices might not be enough to cover the steep cost of organic milk production.

Many organic dairy producers contract with processors to lock in prices for longer periods. This can provide stability, but it is troublesome when the cost of organic feed rises even higher than usual. Oct. 19 - EU Exports to Other Markets Offset Russian Ban

European cheese exports continue to sail.

EU-28 manufacturers exported 150.5 million pounds, of cheese in August, up 19% from the prior year and 7.7% more than in July. Year-to-date EU cheese exports of 1.15 billion pounds are 13.4% higher compared to the same period in 2015. In fact, year-to-date European cheese exports through August are 0.6% ahead of the same period in 2013, conÀrming that banned EU export volumes to Russia have been completely offset. The United States, Japan, South Korea, and Algeria are all helping to lift year-over-year volumes. Year-to-date, EU butter and butterfat exports are running 31.5% ahead of 2015’s pace. That said, EU butter prices, which are now at a signiÀcant premium to U.S. and New Zealand spot prices, could become a drag on export volumes in the Ànal quarter of the year.

Despite dairy crisis, Australian family continues farming

OB FLAT, S.A., Australia – Since April 2016, Australian dairy producers have undergone a national dairy crisis due to plummeting milk prices paid to farmers, resulting in a stiff operating loss for dairy farm businesses.

“The milk price is terribly concerning,” Michele Hamilton said. “We, as a family, and as a wider industry, are paying for consumers to have dairy

products on the shop shelves every single day of the year.”

Despite the market catastrophe, Hamilton and her husband, Graeme, remain in the dairy industry with no plans of exiting.

“Graeme’s family has been farming in South Australia since 1860, soon after their emigration from Scotland,” Hamilton said.

The South Australian couple and their 26-year-old son, Craig, manage a 500-cow dairy, Hamilton’s Run, in the village of OB Flat, S.A., Aus-

tralia; Graeme’s mother, Pat, also spends time on the farm in a semi-retired fashion.

“She is the consummate dairy woman,” Hamilton said, “having many skills which she passes on to employees.”

Days begin at 4 a.m. as one of ve employees fetches the milking herd from pastures.

Twice a day, cows are milked in a 25-swing parlor – the farm’s lone housing facility for the milking herd.

“Our cows are grazed outdoors all year round, so we don’t have a barn in the typical sense that North Americans would be accustomed to,” Hamilton said.

Similar to the 100 other dairies in the south east region of South Australia, Hamilton’s Run raises their herd on ryegrass and clover pastures – routinely rotating paddocks based on growth rates of the forage and weather conditions.

During the summer months – January and February – and late winter and early spring – in August through October – the Hamiltons follow an eight-week calving period in response to the environmental conditions the herd faces.

To provide additional nutrients, the herd receives a ration of grain in the milking parlor, and also supplemental forage when needed.

“We have enough land to produce our own silage and occasionally some hay,” Hamilton said of the family’s 1,045 acres. “When grass growth slows down, someone will have to load up the silage into the feed wagon and drive out to the paddock where the cows are grazing.”

Additional chores include equipment maintenance and cleaning, feeding replacement heifers, moving temporary electric fences, on-farm improvements, breeding programs, and monitoring close-up cows, making for a full day of work for the Hamiltons.

A manager oversees the separate calf unit on the dairy, which includes an automatic feeding system.

“Time with family is not as generous as we’d like,” Hamilton said. “We try to keep chores on Sundays to a minimum and take some time to enjoy a cheese platter while watching TV or meeting up with friends.”

Nestled within a Mediterranean climate, seven miles off the coast of the Southern Ocean, the Hamiltons have warm, dry summers and cool, wet winters – receiving upwards of 30 inches of annual rainfall.

“Being on the south coast, we get surprisingly brisk south winds coming up from Antarctica,” Hamilton said.

“We think we’re dying if the winter daytime temperatures drop below 50 degrees (Fahrenheit).”

To grasp the greatest potential the dairy industry can offer given the climate and farming conditions, Hamilton and her family milk Aussie Reds – a breed comprised of Scandinavian Reds – although Holstein is the dominant breed in Australia.

“We’re focused on having good working cows, who typically have a higher body condition score than U.S. breeds,” Hamilton said. “We call them invisible cows, as you never notice them. They just quietly sidle in to be milked, conceive their next calf without a fuss, deliver the calf without a fuss, and earn their keep in the milk vat.”

This year, Hamilton hopes her family’s herd of Aussie Reds will produce nearly 9 million pounds of milk, with butterfat and protein values of 3.6 and 3.45 percent, respectively.

The national average of milk produced per cow per lactation is 12,606 pounds, according to Dairy Australia.

“We aim for 19,800 pounds per cow per lactation,” Hamilton said.

With the current dairy markets, increased milk production and controlling costs is the only way dairies, such as Hamilton’s Run, are able to remain operable.

Through their milk cooperative, Murray Goulburn, the Hamiltons receive $11.57 per hundredweight (cwt.) or $1.70 per pound of milk solids, which is the more common form of payment.

Depending on the farm management practices, cost of production may range from $1.90 to $2.07 per pound of milk solids.

“The low milk price is causing enormous strain across much of the industry,” Hamilton said. “We have increased land area and herd size so that we don’t need to work off the farm.”

Once with the cooperative, the Hamiltons’ milk is processed into butter or a variety of milk powders – both infant formulas and powders for older children; other sections of the cooperative produce fresh milk, UHT milk and yogurt. Due to the protein content of the milk, sometimes, the product is sold directly to processing facilities in Melbourne, Australia for specialized products.

Hamilton and her family value Australia’s dairy infrastructure – having the opportunity to work with businesses commonly found in the United States and Europe to maximize their herd’s potential – but are wary of the future.

“Milk price is the subject of an upcoming federal government inquiry into the dairy industry as a whole,” Hamilton said. “We believe that the industry must extract a greater share of the retail price of dairy products if farmers are to receive sustainable incomes.”

At one point, the family had hopes of creating a feed bunk for cows as they depart from the dairy to incorporate a partial mixed ration into the herd’s diet.

However, with the current dairy situation, all plans are on hold as the Hamiltons weather the crisis, awaiting better times.

“Graeme loves the big picture planning of running our dairy farm, always assessing how to intensify the business and develop it further,” Hamilton said.

“For now, increasing efciency and total production is our only weapon against decreasing nancial margins.”

A day in the life of the Herzog family

Harvest, football pushes chores earlier on Oct. 14

FREEPORT, Minn. – As Allen Herzog swiftly moved between the tiestalls, carrying a milking unit with him, his son, Nick, lled a wheelbarrow to the brim with corn. Across the street, Allen’s wife, Diane, and other son, Matt, were busy nishing up morning chores in a second tiestall barn.

The sun had yet to rise.

Oct. 14 was a big day for the Herzogs. In addition to combining soybeans and preparing the equipment for corn harvest, they had a Friday night high school football game to attend.

“We usually start chores a

little earlier on game nights,” Diane said.

Allen agreed.

“We’re going to make the game,” he said.

The Herzog family milks 105 cows on two farm sites near Freeport, Minn. – 65 at the home farm and 40 across the road.

While Allen and Diane’s eldest children – Brent, 24, Tracy, 22, and Sara, 19 – live off the farm, their youngest – Matt, 16, and Nick, 14 – help with daily responsibilities and also attend Upsala Area High School.

“Kids at school think I’m crazy,” Nick said. “I go to a little school and none of my friends live on a farm.”

Friday morning chores began at 4:30.

“I’m used to it,” Matt said about getting up early. “It’s better to start the day before the sun shines.”

In typical fashion, the Herzog family woke and parted ways to milk the two herds and feed the cattle. Diane and Matt took the four-wheeler across the street to tend to the 40-cow herd, while Allen and Nick fetched the 65 milking cows from pasture and brought them into the tiestall barn at home.

“Both farms are busy, but we all know what to do,” Allen said.

Allen grew up on the dairy farm, continually expanding the herd since his return in 1989.

“This is my home place,” Allen said. “I worked in St. Martin for a little bit, but then came home when no one else was around.”

Several years ago, the

Herzogs intended to build a freestall barn and redesign their milking protocol to accommodate a larger herd. At the same time, their neighbors were interested in selling their herd.

The Herzogs approached Herb and Sharon Wielenberg to see if they would consider renting out the facilities, which included a manure pit and silo in operable condition.

ily purchased 11 cows from the neighbor and began renting out the tiestall facility across the street.

“We’ve only ever bought those 11 cows in 2007,” Allen said. “We’ve increased our herd all on our own. I’ve never had trouble getting heifer calves.”

While both herds are milked in tiestall barns, the 65cow herd is brought into the barn for milking and feeding twice a day; they spend the remainder of the day on pasture.

As the morning carried on, Diane and Matt nished chores at the neighboring farm – feeding the milking herd, bringing a newborn calf into the barn, and talking about the day’s plans.

“It’s fun to have Matt here with me every morning,” Diane said. “I don’t get to see him otherwise.”

Likewise, Matt enjoys his time in the barn before school.

“It’s something I like to do,” Matt said of dairy farming. “Nothing is ever the same; you don’t have to worry about doing the same thing everyday.”

“Somehow I always get stuck with this job,” Nick said with a grin. “But farming has given me strength and teaches me responsibility.”

By 6:45 a.m., Matt and Diane returned to the home farm; Matt quickly fed 60 sows before cleaning up for school.

The variety of livestock allows for additional income when markets do not fare well, Allen said.

“It always seemed that when one price was good, the other was bad,” he said. “But now, it’s all hit rock bottom.”

Although a tough time for the industry, the Herzogs are proud to be dairying – carrying on a family tradition.

“It’s not as fun as it used to be; there are a lot of frustrations,” Allen said.

“It’s stressful when the cows don’t cooperate, but I really just like farming.”

Nick agreed.

“If Dad gets busy in the eld, I’ll take over the cows and milking,” he said. “I really like it all – maintenance, anything. Everything with driving, I’ll do it.”

It wasn’t long before the morning came to an end, and Matt and Nick headed off to school.

Throughout the afternoon, Allen and Diane hauled soybeans to Allen’s brother’s farm, combined the remaining 25 acres of soybeans, mowed the lawn and prepared the equipment for corn harvest.

“Without the boys around, it makes the days a lot longer,” Allen said. “The work never ends. You just have to keep moving quickly.”

By 3:30 p.m. harvest was done for the day and chores were underway, with Nick returning from school to help out.

“This has been a very good harvest,” Allen said. “It’s one of the best years ever.”

As dusk set in for the evening, the Herzogs arrived in Belgrade, Minn., for Matt’s football game, only missing four minutes of the rst quarter.

They cheered on the USA Patriots to a 42-0 win, with Matt playing center and defensive tackle.

“Farming has helped me in football because it gives me the right attitude,” Matt said. “I know I have to work hard to achieve my goals.”

With only a few hours left, the family headed home in anticipation for a busy weekend of combining corn. A hectic day was now in the books; but for the Herzogs, Oct. 14 was just another day.

Lauren wins Expo Grand Champion Guernsey again after ghting for her life

TONY, Wis. – When Flambeau Manor RO Lauren-ET won the top honors a Guernsey cow could get at World Dairy Expo in 2014, the Van Doorn family of Tony, Wis., could not have predicted that she would win a second time in Madison, Wis. The Van Doorns – Gary, Diane, and their son, Steve – also could not have predicted the struggles coming Lauren’s way before she could recapture her crown, winning the grand champion Guernsey title at World Dairy Expo this year.

“A week before we took her to Expo last year, she [presented] with Klebsiella mastitis,” Steve said.

It was not the rst time Lauren had contracted that particular strain of mastitis. In fact, it was the fourth. The golden Guernsey had been ghting with mastitis ares since injuring one of her teats 50

days into her second lactation.

“When Lauren started milking, we had her in a regular stall, and she just wasn’t doing well even though she had loads of potential. Jim Hammerand, a Guernsey classier, was here scoring some cows and he gave me some pointers, one of which was to get her in a box stall,” Steve said.

Moving her into a bigger stall away from the other cows allowed Lauren to get the special attention she needed, and in turn, blossom. She scored 91 points as a 3-year-old in 2013. That next year, she won grand champion of the Guernsey show at World Dairy Expo.

While Lauren managed to come out on top in the 5-year-old class despite being sick, she was named honorable mention grand champion of the Guernsey show in 2015.

“I was disappointed but understanding. She wasn’t on the money given how sick she was, and I was disgusted with myself,” Steve said.

Even though Lauren managed to do very well at the show given her illness, her biggest battle had only just begun.

“On opening morning of deer season on Nov. 21, Lauren went down,” Steve said.

ConƟnued from VAN DOORNS | Page 20 The cow Steve knew and loved became a shadow of her former self in the drop of a hat. Lauren was so ill that she had lost any condition she was carrying.

She was so weak that Steve and his parents could only get her standing up in her box stall long enough to prepare her for milking and get the milking unit attached before she would collapse under the burden of her own weight.

“This continued for another eight or nine days,” Steve said. “She was only giving three to ve pounds of milk a day.”

At that point, any thought of taking Lauren down to Expo that next year went up in smoke as Steve pulled out all the stops to keep his beloved cow alive.

“By Thanksgiving night, she aborted the calf she had been carrying. I wasn’t even thinking about Expo. I was just trying to keep her alive,” Steve said.

Miraculously, after many sleepless nights, Lauren began to recover.

“Just when I’m ready to give up, she doesn’t. She pulled through,” Steve said.

Slowly but surely, Lauren regained her strength and her milk production climbed from a measly three to ve pounds per day to sixty pounds per day over the course of several weeks. Under Steve’s watch, she started putting on all the weight she had lost during her illness.

“I had her on an all hay diet until she got sick, and then I switched her to a high-energy diet to put some condition back on her along with some probiotics,” Steve said.

By December, it was classifying season again and Lauren was back in ghting shape. Lauren, who is currently scored Excellent-94, was nominated by the classier for 95 points. While the committee denied the request to bump up her score, it got Steve thinking about taking her to Expo again.

Lauren came down with severe mastitis on Dec. 17 of last year, marking her last are for nearly nine months. In that time, she regained all the strength and weight she had lost. While Lauren’s classication score did not go up, the excitement surrounding her began to grow as World Dairy Expo drew closer and closer.

Then, the unthinkable happened.

“One week before Expo this year, something just wasn’t right. We switch cows, and she is the last to be milked. When she’s outside on pasture, she’s either eating, drinking or walking around. That night, she was just standing there,” Steve said.

After sending Gary down to a lab in Menomonie, Wis., to test a milk sample, it was discovered that Lauren had come down with E. Coli mastitis. Again, as with her many ghts with Klebsiella, this was Lauren’s sixth round with E. Coli.

“I didn’t sleep for 36 hours,” Steve said. “I think we caught it early enough, though.”

Once Lauren was cured of her latest battle with mastitis, she was on a trailer headed south to Madison for the International Guernsey Show at World Dairy Expo.

“I was more nervous this time around because I knew what to expect, compared to my rst time showing her at Expo,” Steve said.

Like she had so many times before, Lauren pulled through for her farmer. With his friend, Tracy Mitchell, on the halter, Flambeau Manor RO Lauren-ET was named the grand champion Guernsey at the 2016 World Dairy Expo.

When Lauren was chosen as grand champion, Steve was on the sidelines watching. He jumped for joy and threw his arms around his longtime friend, Andrew Hetke, who was standing ringside with the Van Doorns.

“I was so proud of her for pulling it off, and she shouldn’t have been there because of everything she had been through,” Steve said. “Hetke was someone I called at 2 a.m. a couple of times when she was so sick, along with fellow farmers Jon Schmidt and Travis Ullom.”

Making this year’s trip to Expo even more special was the fact that Steve’s 9-year-old niece, Isabelle Van Doorn, was showing at Expo for the rst time with a Guernsey milking yearling. While she did not win her class, her proud uncle got to witness her being bit by the show bug.

“She was nervous and excited, but more than anything, she had fun and she wants to do it again,” he said.

As of right now, Lauren is pregnant and due to calve at the end of March. A trip to Expo in 2017 is already being planned for her at the Van Doorn house. Until then, the golden Guernsey is enjoying her pampered life under the care of a loving and dedicated owner.

“This year is one I’ll never forget,” Steve said. “I am just so proud of her.”

Eighty years of sheep research and outreach came to an end with the dispersal of the dairy sheep ďƒ&#x;ock at the Spooner Agricultural Research Station of the University of Wisconsin-Madison (UW-Madison) on Oct. 13, 2016. Strong buyer competition for the sheep indicated that the dairy sheep developed by the UW-Madison program are in demand by sheep dairies across the country. The successful online auction was conducted by Equity Cooperative Livestock Sales Association of Baraboo, Wis., allowing more than 70 potential buyers to participate from throughout the U.S. A total of 338 sheep were sold in 62 lots with a sale average of $517/head.

Buyers paid close attention to the available estimated breeding value for milk yield indexes for most of the sheep and that, in turn, helped boost auction bidding.

Eight select ram lambs averaged $1,522, and the highselling ram lamb went to Tom Clark, Old Chatham, N.Y., for $2,540. The two ďƒ&#x;ock rams were purchased by Daniel Borntreger of Bethany, Mo., and averaged $1,350 with the highselling ram of the pair bringing $1,460.

Buyers were interested in the production records and the estimated breeding values of the 2- to 7-year-old producing ewes in the sale, and the 183 mature ewes averaged $495/ head. The high-selling ewe lot was a pair of high-production full sisters that had produced some outstanding ewes and rams

in the ďƒ&#x;ock. They sold for $820/head to Jonathan Lightner, Jefferson, Wis. Other top selling production ewes were a lot of 8 ewes to Lewis Fox, Genoa, N.Y., for $680/head; a lot of 11 ewes to Suzanne Sankow, Lyme, Conn., for $640/head; and a lot of 10 ewes to Tom Clark, Old Chatham, N.Y., for $610/ head. The production ewes sold exposed to rams.

The 145 ewe lambs sold open and followed closely in price to the production ewes averaging $478/head. The highest estimated breeding-value ewe lambs sold as individuals, and the top prices were from John Wentz, Portage, Wis. (two ewe lambs at $720 and $580); Tom Clark, Old Chatham, N.Y. ($680); Barbara Stinson, Lodi, Wis. ($600); and Carolyn Olson, Friendship, Wis. ($560). The top prices paid for groups of ewe lambs were a lot of 9 head at $590/head and a lot of 10 head at $570/head, both to Tom Clark, Old Chatham, N.Y. Volume buyers were Lewis Fox, Genoa, N.Y., with 91 head; Tom Clark, Old Chatham, N.Y., with 63 head; Denise Leffel, Greensburg, Ind., with 45 head; Suzanne Sankow, Lyme, Conn., with 32 head; Marianna Marques de Almeida, Monroe, Wis., with 28 head; and Tom Robus, Marshďƒželd, Wis., with 22 head. Sheep sold into the 10 states of Arkansas, Connecticut, Iowa, Indiana, Kansas, Missouri, Montana, New York, Ohio, and Wisconsin; 257 head (76 percent) went to outof-state buyers, and 81 head (24 percent) stayed in Wisconsin.

The soybeans are done around here. I brought some oats to the feed bank so I have more room for the corn. We plowed the oats fields two weeks ago. The potatoes, sunflowers and kidney beans have been combined around here. The fields are about right.

112 cows, 1,000 acres I’m starting to combine corn today (Oct. 18). A lot of neighbors are going at it. The early maturity corn is at 17 percent moisture and later stuff is around 20 percent. I got done with soybeans on Saturday and they ran in the mid-50s, which is above average and close to last year. The fields are wet. We had to leave some in the field. We hauled and incorporated our liquid manure on 100 acres of soybeans. We plan to make corn stalks on Saturday.

It’s really wet yet. I started soybeans today (Oct. 18). It’s been cloudy and damp, which is not good combining weather. It’s awfully wet yet. We’re fighting mud. We finished soybeans on Sunday and had to leave about four acres. The soybeans ran 68 bushels an acre, which is the best we’ve ever had hands down. We just started to combine corn.

The appraiser had the corn running at 233 bushels an acre. The corn is maybe one-third done in this area. We took 21 inches of manure pit last Wednesday and Thursday to get by. In the last two weeks, we baled 100 soybean bales and 55 corn stalk bales.

I finished chopping corn this week. We are pretty much done with everything, just have to dig up the fields and leave it for the winter. People around me are starting to combine soybeans. The silage turned out OK – a little drier than we would like. The yield was pretty good for going through the rains we did. The weather conditions were pretty good for us to get in the fields and finish things up. We got an inch and a half of rain over the last couple days, which has made it really wet right now for people to get in the field.

100 cows, 400 acres I’m a little better than half done with corn. The tests have come with 212-229 bushels and 16-19 percent moisture. I would say half the corn is done around here. I am fixing my stalk chopper. There has been a lot of stalks made around here. There are guys working on soybeans yet.

We finished our last cutting of hay Oct. 8 when we had the frost. I round baled and wrapped it. That was the first time I took a fifth cutting. I got 12 big round bales off 200 acres.

I started and finished my high moisture corn. We did it over the course of two days for 30 acres.

Some of the fields yield better than others. The test on the high moisture was at 25.4 percent a week ago, so I’m thinking by now with the weather we have had it would be close to 20 for others. The stuff right around the farm was excellent, but overall I would say it yielded very well.

There are some people doing high moisture corn while others are shelling corn and beans in the area. Seems like the corn dried down a little faster than I expected. We haven’t gotten a lot of rain the last two weeks, but the fields are still fairly moist.

A week ago, we cut the last of the fourth crop hay. It is a constant race getting into the fall season when the days are so short and the sun is so limited. We have not started corn harvest yet but it’s probably down to 20 percent moisture.

We like to be the last ones in the area to get it done, when the corn is at 15 or 16 percent. Our corn is combined, stored and fed to our cattle so if we can get it harvested and stored without a lot of drying, it is a better deal for us. DARLINGTON, Wis. – Among the herd of 600 cows that make up Redrock View Farms in Darlington, Wis., a group of 20 Jerseys are making Cora Carpenter’s dreams come true. After watching her herd grow for several years, Carpenter is celebrating after her 4-year-old cow, Red Rock View Cari, was named Grand Champion of the International Junior Jersey Show on Oct. 4 at World Dairy Expo in Madison, Wis. Carpenter’s interest in Jerseys is what introduced the breed to her family’s farm in the rst place. Her parents, Steve and Lisa Carpenter, purchased a Jersey calf from a neighbor that soon became the foundation for their daughter’s future success.

“When I was pretty little – too little to show, even – I kept telling my dad I wanted a Jersey,” Carpenter said. “He went out and brought a Jersey onto our farm; that cow is the granddam of Cari.”

Carpenter got her start in the showring as soon as she was able. From third grade on, the now 17-year-old has been showing at both her county and state fair every year. Last year, Carpenter and Cari made their debut on the colored shav-

ings, placing third junior in her class.

When 2016 rolled around, Carpenter’s only hope was to place higher in her class.

“I just wanted to do better than I did last year. When I was named rst junior in my class, I was so excited; going out with a blue ribbon at Expo was more than I could ever ask for,” Carpenter said.

The blue ribbon was just the beginning.

As Carpenter reentered the ring for the Grand Champion drive, she had no expectations for the outcome.

“I knew I had a nice cow, but as I was walking into the ring, I didn’t even have it in the back of my mind I would be walking out for Grand,” Carpenter said. “When the judge lined us up, I obviously had that hope that he would pull me.”

As the judge pulled out his top four and named Cari as his Grand Champion, Carpenter said she was elated.

“Right away, I was in pure disbelief; I was just so happy,” Carpenter said.

“We denitely saw something in Cari when she was a calf,” Carpenter said. “Personally, I have a special connection with her having shown her since she was a calf. Our whole family had a hand in making her the cow she is today.”

Being homebred and owned makes Cari’s big win all the sweeter for the whole Carpenter family. As a descendant of the rst Jersey to enter their herd, Carpenter said it is a testament to how hard her whole family has worked to reach this point.

“It means a lot not only to our farm, but to our local farmers in the area, too,” Carpenter said about Cari being bred and owned by her family. “It just goes to show that nice cows can come from anywhere; Cari’s a special cow for the whole family.”

Following being named grand champion, Carpenter exhibited Cari once again in the supreme champion lineup. Even though she did not leave with the title, Carpenter said it was an experience she will never forget.

“I have gone to Expo for a lot of years to see the supreme champion drive,” Carpenter said. “I never thought I could be a part of that. There were so many people watching and the spotlight was on me and my cow; it’s an experience I will not forget, that’s for sure.”

yet. Carpenter does, however, intend on continuing to show her and her offspring.

“This year at the county fair, I showed Cari’s calf, also bred and owned. I hope to keep getting great cows out of Cari and showing her daughters at shows in the future,” Carpenter said.

Upon her high school graduation in May 2017, Carpenter plans to attend a four-year college to pursue a degree in agricultural business. It is her hope that she can continue to be an active part of her family’s farm in any capacity she is able to be in the future.

“I think it would be really nice to come back to our home farm one day. If I do not work on the farm, I would at least like to work somewhere near Darlington so I would be able to come back to the farm when they need my help,” Carpenter said.

As their 2016 show season comes to a close, Carpenter is certain the Jersey breed is a permanent staple on her family’s farm. She is grateful to be able to live the farming lifestyle alongside her family.

“I really like that I am given this opportunity to work and live on a dairy farm and to show cows,” Carpenter said. “This is pretty special.”

1 egg 1 1/2 cups of milk 1/4 cup of maple syrup Salt and pepper to taste

Grease bottom and sides of one 13- by 9-inch pan For caramel: Place butter and brown sugar in a sauce pan and heat over medium heat stirring constantly. Bring just to a boil. Remove from heat, stir in vanilla ice cream until melted. Pour caramel mixture into the bottom of the pan.

For French toast: Slice French bread into approximate 12, 1-inch slices. In a mixing bowl, whisk egg, milk, maple syrup, and salt and pepper together. Dip bread slices in milk mixture and place in cake pan over caramel mixture. Pour remaining milk mixture over the bread in the pan. Cover cake pan and refrigerate over night.

To bake: pre-heat oven to 350 degrees. Uncover pan, place in heated oven and bake for approximately 20 minutes or until golden. Makes about a dozen slices of French toast.

2 Tbsp. cold milk 12 oz. Cool Whip, divided 3.9 oz. packages chocolate instant pudding.

3 1/4 cups cold milk 1 1/2 cups mini chocolate chips

Begin by crushing 36 Oreo cookies. I used my food processor for this, but you could also place them in a large Ziploc bag and crush them with a rolling pin. When the Oreos have turned into fine crumbs, you are finished.Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs. When the butter is distribute, transfer the mixture to a 9- by 13-inch baking dish. Press the crumbs into the bottom of the pan. Place the pan in the refrigerator while you work on the additional layers.Mix the cream cheese with a mixer until light and fluffy.

Add in 2 tablespoons of milk, and sugar, and mix well. Stir in 1 and 1/4 cups Cool Whip. Spread this mixture over the crust. In a bowl, combine chocolate instant pudding with 3 1/4 cups cold milk. Whisk for several minutes until the pudding starts to thicken. Use a spatula to spread the mixture over the previous cream cheese layer. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further. Spread the remaining Cool Whip over the top.

Sprinkle mini chocolate chips evenly over the top. Place in the freezer for one hour or the refrigerator for 4 hours before serving.

3 cups potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb 4 Tbsp. butter 4 Tbsp. flour 2 cups milk 1/2 tsp. salt 1/4 tsp. pepper 1/2 pound Velveeta cheese, diced 1/2 cup sharp cheddar cheese, shredded 1 pound skinless smoked sausage 1/8 tsp. paprika Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch half-moons. Cook in a frying pan for about 15 minutes, turning frequently to slightly brown. Meanwhile, put cooked diced potatoes in 2-quart casserole dish. Add cooked meat and give it a gentle toss. Mix all remaining ingredients (except for shredded cheddar cheese and the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly).

Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top. Bake in preheated 350°F oven for 35-45 minutes until golden brown on top. *You can substitute smoked sausage with ham.
