Talking their way to the top

UW-River Falls takes national collegiate judging title

MADISON, Wis. – The University of Wisconsin-River Falls dairy judging team landed at the top of the pack when the scores were tabulated at the National Intercollegiate Dairy Judging Contest Oct. 1 at the World Dairy Expo in Madison, Wis. The successful campaign

made by the UW-River Falls team brought the national title back to the school for the rst time in 23 years. The team beat out Virginia Tech by a mere three points. They also claimed the top honors in the oral reasons division, as well, nishing four points ahead of Virginia Tech.

The Falcon team did not lead a breed until the last one announced in alphabetical order, the Red and White Holstein class. There, they blew away the competition, outpacing all other teams by 13 points.

“It wasn’t really until Kaila was announced as having

placed it the top 10 that we thought we might still have a chance,” Kelm said. “Kaila hadn’t even placed individually in any of the breeds. She always just missed the top 10.”

“I thought the contest was very well run, and I liked using the new iPad scoring system,” Kramer said. “I thought that worked out well, and I found I preferred it over turning in cards for each class.”

Irrthum and Helmer agreed the contest owed well, but they each expressed a preference for turning in cards over using the new system.

“I like the fact that there is something concrete that I’m turning in,” Irrthum said. “I guess I’m oldfashioned that way.”

Kelm expressed an admiration for the way the members of his team think alike and feed off of each other’s success and ideas.

“I told them last night that I had no idea which of the four of them would be the best today,” Kelm said. “They are all so equally talented, and each contest they have taken turns to one-up the others.”

position in West Springeld, Mass., and at the AllAmerican Dairy Show in Harrisburg, Pa, last month.

In Harrisburg, they placed second in reasons and won the Holstein breed while placing second in the Jersey breed. Last fall, they claimed top oral reasons honors and placed second overall at the North American International Livestock Exposition in Louisville, Ky. The team has gathered memories that will stay with them throughout their lives, with their win at Expo being the cherry on top.

“I don’t think I’ve ever laughed as much as I have traveling with this team,” Kelm said. “It’s a shame they are all seniors, all nished with their collegiate judging careers, but they will go on to do great things.”

One memory that made the group laugh was retelling the story of the squirrel that ran up Kramer’s leg during the contest at The Eastern States Exposition.

“These three really have become my best friends,” Wussow-Tauchen said. “I’ve enjoyed the friendship and closeness that we have developed.”

Helmer concurred, adding she values the connections they have made with students in other schools they compete with, as well.

Helmer and Kramer each said they felt they had learned from their teammates and picked up techniques for dealing with problem cows in contests.

“When I get to a cow I’m struggling with, I can think about how my teammates would deal with her and where they would put her,” Kramer said.

“Learning those types of things from each other is how we’ve built up consistency.”

In the days before Expo, the UW-River Falls team met and worked with students from the Aeres University of Applied Sciences from the Netherlands, which works in partnership with River Falls as a sister school. The school competed in the postsecondary contest and placed 12th of 19 teams, with two individuals landing in the top 35.

Working with the Dutch students was a highlight for Kramer.

“They actually coached the Dutch students on oral reasons…,” Kelm said. “Those students had to give reasons in English, so it was quite an experience for our team to help instruct them.”

The four teammates possess a long resume of experience in evaluating dairy cattle, as they all began their careers in 4-H. They all credit their 4-H coaches with giving them a solid foundation on which they could build their judging careers. All four team members have competed nationally through the 4-H program before beginning their collegiate judging careers.

“All of our 4-H coaches played a huge role in us to this point in time,” Wussow-Tauchen said. “They all earned a piece of this along with us.”

Keep on keeping on Dwyer Trucking celebrates 30 years hauling milk

TOMAH, Wis. – Paul Dwyer celebrated 30 years of his milk hauling business, Dwyer Trucking, in September. He has served dairy farmers in western Wisconsin in the same fashion he would want to be served himself.

“We were farming up on Middle Ridge, and the price of milk dropped from $12.80 per hundredweight to $8.45,” Dwyer said. “I made a decision we weren’t going to stay farming, and we’d sell the cows and machinery. I got a part-time job hauling milk, which turned into a full-time job.”

Dwyer spent seven years working as a driver for another hauler, but yearned for the independence of being his own boss.

“I wanted to stay in the ag business somehow, and hauling milk got me back on the farms talking to the farmers,” Dwyer said. “It was just a natural t for me, and I’ve really enjoyed it.”

When he established his own business, Dwyer began with one truck running two routes and picking milk up at farms every other day.

Dwyer Trucking has grown to seven trucks, with six running full time and

sometimes running the seventh truck.

All of his trucks are quad-axle milk trucks.

About 80 percent of the milk he picks up is organic, while two drivers haul conventional routes. All of the dairies are smaller farms, with the largest shipping about 16,000 pounds of milk every other day.

Dwyer is contracted to haul for the Westby Co-op Creamery.

“They sell some of their organic milk to other processors, so we haul milk throughout Wisconsin to Black Creek near Green Bay, Cascade Cheese in Cascade, Baker Cheese in St. Cloud, Saputo up by Almena and Agropur near Weyauwega,” Dwyer said.

Dwyer has seen changes in the dairy industry and the milk hauling industry, particularly in regards to state regulations put in place by the Wisconsin Department of Transportation and the Wisconsin Department of Agriculture, Trade and Consumer Protection.

“Back in August, we got a letter from DATCP saying that we can’t pick up milk from overow containers,” Dwyer said. “That forces producers to go to every day pick-up.”

In order to help alleviate the potential hardship, Dwyer was proactive in helping the farmers on his routes.

“I went out and started nding larger bulk tanks,” Dwyer said. “I’d go buy them and sell them to farmers for whatever I’d paid for them. We’d go take out the tanks and haul them to wherever they were needed. Then,

The weight limit for trucks have not changed over the course of Dwyer’s career. The weight limit is 73,000 pounds, and the state has granted a 2,000-pound overage, allowing trucks to weigh up to 75,000

pounds.

“You can sometimes order out the trucks to make them lighter, allowing you to haul more product,” Dwyer said. “But with the lighter trucks, you sacrice longevity.”

On average, Dwyer keeps trucks in his eet for four to ve years, running 350- to 500-mile routes every day.

Besides state regulations, Dwyer also has to battle the weather, working to reach his farms.

“We try to be on time,” Dwyer said. “In all the years we’ve been in business, I’ve only been late picking up milk one day. … Ice is the worst.

We can buck a lot of snow.”

Dwyer has a great deal of respect for the county and township road crews, and appreciates the job they do to keep his drivers safe.

“Hats off to all the road crew guys,” Dwyer said. “They’ve got the toughest job in the world when it’s blowing and snowing.”

Dwyer also appreciates the cooperation he gets from the farmers on his routes, helping to get the trucks in and out by getting their farmyards opened up.

“Every year, we send out a letter to all the producers asking for their help in opening up driveways,” Dwyer said. “We attach a card that has the phone number for each truck, so the farmers can call the drivers to let them know of any problems or issues.

It’s imperative that we all work together to get the milk off the farms.”

Dwyer’s goal was to help farmers increase their holding capacity so in the event of a natural disaster farmers would have room for three days of milk if the trucks were unable to reach the farm.

Dwyer said there is an on-going balance regarding weight restrictions set by the Wisconsin DOT. “The newer trucks that have the new DEF emissions systems on them … weigh about 1,500 pounds, which is that much less milk those trucks can carry to stay within the weight regulations,” he said. “That decreases our efciency, and it makes it harder to prot. It may not sound like a lot, but

The long anticipated new cattle buying station at Long Prairie Packing and American Foods Group opened Oct. 4 in Long Prairie, Minn.

The cattle will unload and walk through a series of gates, one of which is a scale, to speed the payment process along. “The ability to do it ďƒžve days a week, get your check and go home is the other thing,â€? Giess. “It’s as competitive of anywhere you can go with your cattle. We’re very fortunate to have this facility close to home where we can do this ďƒžve days a week.â€?

Cattle meant to be harvested will be walked to the adjacent plant. Animals that are brought to other locations will be walked through a simple elevated spiral walk and on to trailers. “LPP is a cow and bull harvesting facility,� Rentschler said. “In addition to lean cows and bulls, the buying station will receive fed cows and fed dairy steers that we can harvest at our Wisconsin and Nebraska facilities.�

LPP has the processing capacity to receive 2,000 head each day. “The process is going to be amazing and will expedite the time tremendously,� Giess said. “I think it offers the local dairy and beef producers the ability to get cattle in and out of here pretty quickly. Long Prairie Packing is going to see a big increase in the number of cows being offered to them locally.�

Glen Middendorf, 1964-2018 Glen Middendorf died Sept. 19, 2018 in an ATV accident on his farm near Long Prairie, Minn. Glen was born June 7, 1964 in Melrose, Minn. to Joseph and Liella (Leukam) Middendorf. He grew up in Melrose and Sauk Centre and graduated from Sauk Centre High School in 1983. After graduation he moved to Long Prairie and started dairy farming. He married Denise Berscheit on Oct. 26, 1985 at St. Joseph’s Catholic Church in Grey Eagle. Glen enjoyed farming with his three sons and spending time with his granddaughter, Zoey. Survivors include his wife Denise of Long Prairie; sons, Nathan (Samantha Massmann) of Long Prairie; Daniel (Felicia) of Long Prairie; Matthew of Long Prairie; granddaughter, Zoey, parents, Joseph and Luella of Sauk Centre; sisters, Barb (Mark) Massmann of Long Prairie; Lisa (Steve) Goerdt of Melrose; brothers, Ron (Cindy) of Melrose; Paul (Bonnie) of Long Prairie; Kurt (Amy) of Long Prairie; Keith (Jennifer) of Sauk Centre; Jeff of Sauk Centre; mother in law, Dorreen Berscheit of Long Prairie and many nieces and nephews. Dale Smith, 1963-2018 Dale Smith passed away on Sept. 10, 2018 at the age of 55. Dale Smith was born on May 30, 1963, in Brainerd, Minn., to Vernon and Irene (Landwehr) Smith. He attended Central High School in Norwood Young America, Minn. and graduated in 1981. Dale furthered his education by attending Hutchison Vo-Tech in Hutchinson, Minn., receiving a degree in Dairy Herd Management.

On Sept. 12, 1987, Dale was united in marriage to Lisa Menden in Shakopee, Minn. Dale and Lisa made their home in Hamburg, Minn. and had two sons. Dale was a lifelong dairy farmer and had a great passion for Jersey cattle. He was an active member of the Minnesota Jersey Cattle Association, where he served as the state president for many years. He valued his family and had a great love and appreciation for the outdoors. Dale is survived by his wife Lisa Smith of Hamburg; sons, Wyatt and Austin Smith; father, Vernon Smith of Norwood Young America; sister, Anna Marie Schoeppner (John) of Eden Prairie; sister-in-law, Mary Thielen (Rick) of Elburn, Ill.; brother-in-law, Mike Menden of Eden Prairie; nephews and niece, David, Jonathon and Katie Thielen, Ryan and Brent Alling. Scholarship recipients were chosen on the basis of their volunteer efforts before and during the recent Wood County Show, scholastic achievements, as well as school and community activities. Scholarship recipients must live in Wood County or an adjoining county.

Jenna Snortheim, currently a senior at Auburndale High School, will receive a $2,000 scholarship to attend University of Wisconsin – River Falls, where she intends to major in Agricultural Education.

USCMA conrmed but China trade war continues

This week’s Global Dairy Trade auction was overshadowed by the 11th hour announcement the last day of September that the U.S. and Canada reached an agreement, keeping the North American Free Trade Agreement (NAFTA) a three-country agreement. It will be referred to as the U.S. Mexico, Canada Agreement (USMCA). But, no end is in sight in the China trade war.

Mexico and the U.S. came to an agreement rst which pressured Canada’s Prime Minister Justin Trudeau and dairy issues were the main obstacles preventing that. Trudeau caught heat immediately from his dairy farmers but he has promised them compensation for their losses.

The new 16-year agreement mandates that the Canadian government eliminates its Class 7 milk pricing scheme in six months and American dairy producers will have an increased access (3.6 percent) to Canada’s dairy market.

The increased access comes through tariff rate quotas (TRQs) that phase in over the course of 19 years, explains FC Stone. For instance, it looks like the US will be able to ship 2,084 MT (45.9 million pounds) of cheese to Canada tariff free in the rst year the agreement is in force with half the cheese being for industrial use and half for retail. The Canadian government will oversee issuing import licenses to companies in Canada who wish to import US dairy products at the zero percent tariff rate, but FC Stone warns that It’s possible some of the import licenses will be allocated to entities in Canada who aren’t interested in importing product but will sit on their licenses to keep others from importing product.

Once the formal agreement is approved by Canada’s Prime Minister and Mexico’s President (likely in the next two months), it will have to undergo a 60day review process by Congress and would likely be enacted sometime in 2019.

The latest development will likely put pressure on China to resolve its differences with the Trump Administration, according to HighGround Dairy’s Lucas Fuess in the Oct. 8 Dairy Radio Now interview. But Fuess tempered the good news of the agreement when considering the time element of its implementation.

When asked what he sees ahead in 2019, Fuess warned that the U.S. milk supply continues to exceed expectations and as long as we have a fair amount of milk and a steady supply of product the upside is a bit limited and I think we’re range bound for the time being.

Meanwhile; the National Milk Producers Fed-

eration, the U.S. Dairy Export Council, and the International Dairy Foods Association praised Trump Administration negotiators in a joint press release for ghting hard against Canada’s trade-distorting practices. The groups stated that they look forward to reviewing the text of the USMCA, in particular the dairy provisions, to better understand the benets to U.S. agriculture and dairy.

The September Federal order benchmark milk price, announced Oct. 3 by the USDA, jumped $1.14, to $16.09 per hundredweight (cwt.), 27 cents below September 2017, but the highest Class III price since November 2017. It equates to $1.38 per gallon, up from $1.29 in August but down from $1.41 a year ago.

Late Friday morning Class III futures portended an October price at $15.81, November at $16.03, and December at $15.95 per cwt.

The nine month Class III average stands at $14.62, down from $16.12 a year ago and compares to $14.38 in 2016.

The September Class IV price is $14.81, up 18 cents from August but $1.05 below a year ago. Its nine month average hit $13.95, down from $15.51 a year ago and compares to $13.65 in 2016.

California’s 4b cheese milk price is $15.62 per cwt., up 56 cents from August, 55 cents below September 2017 and 47 cents below the Federal order Class III price, but is the highest 4b price since October 2017.

It is also the second to the last 4b and 4b prices that will be announced by the California Department of Food and Agriculture as the newly approved Federal order begins with the November price and will be announced by the USDA. The nine month 4b price average stands at $14.34, down from $15.24 at this time a year ago and compares to $13.64 in 2016.

The 4a butter-powder milk price is $14.09, up 4 cents from August but $1.60 below a year ago. Its nine month average is at $13.57, down from $15.32 a year ago and compares to $13.26 in 2016.

The Oct. 2 Global Dairy Trade auction (GDT) took the new trade agreement in stride but the GDT’s weighted average of products offered dropped 1.9 percent, after slipping 1.3 percent September 18 and 0.7 percent on September 4. Product was abundant as sellers brought 92.6 million pounds to the sale, up from 86.3 million in the last event and the highest total this year.

The declines were led by butter, down 5.9 percent, after it inched 0.1 percent lower in the last event.

a 0.6 percent loss last time.

GDT Cheddar was down 1.2 percent, following a 3.5 percent plunge, and skim milk power was off 0.3 percent, following a 1.1 percent decline.

Buttermilk powder was up 3.6 percent. It did not trade last time, and rennet casein was up 3.0 percent, following a 1.7 percent uptick. Lactose inched up 0.6, after it slipped 0.3 percent last time.

FC Stone equates the GDT 80 percent butterfat butter price to $1.7772 per pound U.S. CME butter closed Friday at $2.29. GDT Cheddar cheese equated to $1.5732 per pound and compares to Friday’s CME block Cheddar at $1.65. GDT skim milk powder averaged 89.88 cents per pound and whole milk powder averaged $1.2489. CME Grade A nonfat dry milk closed Friday at 86 cents per pound.

You’ll recall that August 50-State milk production hit 18.3 billion pounds, up a more than expected 1.4 percent from August 2017. USDA’s latest Dairy Products report, while generally not a market mover, shows where the milk went.

August cheese output totaled 1.08 billion pounds, down 0.7 percent from July but 2.8 percent above August 2017. Year-to-date (YTD) output now stands at 8.57 billion pounds, up 2.4 percent from this time a year ago. August was the 65th consecutive month that cheese output exceeded that of a year ago.

Wisconsin cheese output slipped to 283.1 million pounds, down 0.6 percent from July but 0.5 percent above a year ago. California contributed 209.4 million pounds, down 0.8 percent from July but 0.3 percent above a year ago. Idaho provided 76.8 million pounds, down 10.4 percent from July but 6.7 percent above a year ago. Minnesota, with 60.1 million pounds, was down 1.4 percent from July but 2.3 percent above a year ago. New Mexico produced 75.3 million pounds, down 0.2 from July but a whopping 28.4 percent above a year ago.

Italian cheese totaled 454 million pounds, down 2.1 percent from July but 3.9 percent above a year ago. YTD Italian is at 3.7 billion pounds, up 2.6 percent from a year ago. Mozzarella, at 356.2 million pounds, was up 6.1 percent from a year ago, with YTD at 2.85 billion pounds, up 3.3 percent.

American type cheese totaled 425.4 million pounds, down 3.5 percent from July but 2.7 percent above a year ago, with YTD at 3.46 billion pounds, up 2.3 percent. Cheddar, the cheese traded at the CME, totaled 304.4 million pounds, down 22 million pounds or 6.7 percent from July but 2.0 percent above a year ago, with YTD output at 2.5 billion pounds, up 0.7 percent from 2017.

U.S. churns produced 133.9 million pounds of butter, down 0.5 percent from July but 2.1 percent above a year ago. YTD is at 1.29 billion pounds, up 3.3 percent.

California butter totaled 41.5 million pounds, down 3.0 percent from July but 7.2 percent above a year ago. Pennsylvania output, at 5.5 million pounds, was down 19.9 percent from July and 28.7 percent below a year ago.

Yogurt output, at 395.2 million pounds, was off 0.3 percent from a year ago, with YTD output hitting 2.98 billion pounds, down 2.0 percent.

Dry whey totaled 79.7 million pounds, down 15.4 percent, with YTD at 701.4 million pounds, up 0.6 percent. Dry whey for human consumption totaled 78.2 million pounds, down 13.4 percent from July and down 16 percent from a year ago. Dry whey stocks totaled 70.7 million pounds, down 5.8 percent from July and a whopping 27.9 percent below those a year ago.

YTD output stands at 1.2 billion pounds, down 1.2 percent. Stocks fell to 275.4 million pounds, down 42.1 million pounds or 13.3 percent from July and 37.5 million pounds or 12.0 percent below 2017.

Skim milk powder production totaled 47.6 million pounds, up 0.3 percent from July and 6.3 percent above a year ago. YTD skim is at 379.3 million pounds, down 1.0 percent from a year ago.

Cash dairy prices started October strong, then reversed. The block Cheddar climbed to $1.7475 per pound Monday, highest CME price since November 1, 2017, but closed the rst Friday of the month at $1.65, down 4 cents on the week and 11 cents below a year ago. The barrels nished at $1.3675, down 1 1/2-cents on the week, 37 3/4-cents below a year ago, and 28 1/4-cents below the blocks. There were 21 cars of block traded on the week and 36 of barrel.

American style cheese production is or has already increased, as heavier Fourth Quarter orders are beginning to come, according to Dairy Market News, and inventories are reportedly tight. Some pizza cheesemakers continue to see steady demand. Milk handlers are swamped with calls from cheesemakers.

Spot milk prices ranged from Class III to $1.50 over.

But the cheese market tone is puzzled, says DMN. News from cheese producers is generally positive but many are perplexed regarding current prices, particularly the large block to barrel price gap and how inextricable that chasm is with bearish market sentiment.

Western cheese demand has remains strong. Intakes from retail stores and restaurants have increased and contributed to higher block prices. Mozzarella demand by pizza manufacturers is very active and stocks are starting to tighten. Market players are still concerned with export sales, despite the trade news.

Export demand is mixed and some reports suggest that several global customers are looking for alternative buying opportunities. As cheese prices remain steady to declining in Europe, competition between the EU and the U.S. for market shares increase, according to DMN. Cheese production is generally steady to increasing due to many plants running at or close to full capacity. Cheese stocks are sufcient to meet customer need however, some industry players state that their inventories are fully committed for the rest of 2018.

Cash butter climbed to $2.3350 per pound Tuesday, highest since Aug. 15, 2018, but closed Friday at $2.29, down 3 cents on the week and 5 cents below a year ago, with a hefty 50 cars trading hands on the week at the CME. Butter producers are still going lighter on the churns, says DMN, as cream availability is slighter than some expected this time of year. Milkfat is reportedly slight, along with other components. Salted butter loads are moving, while unsalted inquiries have quietened. Butter markets continue on a steady path and some contacts suggest that butter prices could reach 2018 highs this fall.

Western butter production is brisk in preparation for the fall season. Cream supplies are sufcient. Butter manufacturers report food service orders have remained strong and retail orders are building.

pound Monday but closed Friday at 86 cents, down 1 1/2-cents but 3 1/2-cents above a year ago on 6 sales The spot dry whey market continued to reach new highs and closed Friday at 56 1/4-cents per pound, up 1 1/4-cents on the week.

The dairy market has been fairly steady the past two weeks, according to the latest Margin Watch (MW) from Chicago-based Commodity & Ingredient Hedging LLC., as the fundamentals have been throwing around some mixed signals.

Milk production in August was stronger than expected, estimated to be 18.3 billion pounds, a 1.4 percent gain over last year. Production was 1.2 percent higher in California, even though the herd size dropped by 12,000 head. Nationally, however the number of milk cows on farm dropped by 4,000 head.

Cold Storage gures for butter and cheese indicated monthly draws, but were higher on a yearly comparison by 3.8 percent and 1.9 percent respectively.

Record inventories of cheese dissipated on a monthly basis by 3.8 percent, nearly doubling the average July through August draw of 2 percent over the past 10

years. Butter supplies were lower by 8.6 percent, not quite meeting the average July through August pace of 10.5 percent over the same period.

The corn harvest is 26 percent complete, ahead of the ve-year average of 17 percent, but pesky rains throughout the belt will slow progress as elds dry out. The Quarterly Grain Stocks report revealed 2.14 billion bushels of corn as of September 1, above expectations by 138 million bushels, but did represent a drawdown of 7 percent from last year’s levels on greater disappearance.

Cooperatives Working Together (CWT) member cooperatives accepted three offers of export assistance to help sell 612,885 pounds of Cheddar cheese.

The product has been contracted for delivery in Asia, North Africa and Central America through January 2019. CWT’s 2018 export sales, after adjusting for cancellations, now total 47.56 million pounds of American-type cheeses, 12.962 million pounds of butter (82 percent milkfat) and 52.056 million pounds of whole milk powder to 35 countries.

CME Group milk futures continue to languish in a disappointing price range for those desiring higher prices.

International markets remain under pressure due to expectations of 5-7% higher NZ milk production for the upcoming peak season.

The U.S. barrel cheese market has struggled for most of the year. Barrel prices typically trade 3 cents below blocks due to make allowances in the formulas. After seeing the price of barrels firm in the block/barrel spread in late August to a positive 3 cents, the spread has steadily declined to the recent 30 cent discount. This discount is negatively impacting producer milk checks by over $1.50/cwt, and creating financial implications for plants making barrels.

Global Dairy Trade cheese prices continue to weaken from the $1.90 May high to the $1.57 average in the latest auction. Seasonally, it is normal to see the weakest NZ milk prices during the winter months as this is their peak production period. From a U.S. market perspective, this lower price adjustment minimizes the opportunity to export more product due to our non-competitive price, and

puts a lower price ceiling on world markets. In a nutshell don’t look for a dramatic price recovery any time soon.

The new Dairy RP product will be available October 9. Initial price quotes look reasonably affordable. For producers that manage milk price risk in their business this will be another tool to select from. In our client group it will be used to diversify trading risk delta.

Grain futures are finding support from the unrelenting wet weather. A continuation of this trend could add more price premium into the grain markets as harvest delays become a more serious issue.

Most years a wet fall could send CME grain futures sharply higher. This year most traders are finding It difficult to get overly concerned about harvest delays with traders staring at a possible 1 billion bushel carryout in soybeans and 2 billion in corn.

YELLOW SPRINGS, Ohio – Young’s Jersey Dairy is much more than a dairy farm. This familyfriendly destination in Yellow Springs, Ohio, allows visitors to get up close and personal with its Jersey cows and calves while savoring dairy products made fresh from the farm’s milk. But, that is only the beginning of this agricultural experience.

Young’s Jersey Dairy is family owned and operated, and employs 320 people.

The farm was founded in 1869.

Stuart Young, of Young’s Jersey Dairy in Yellow Springs, Ohio, tells World Dairy Expo aƩendees about his farm’s involvemenr in agritourism and value-added dairy products during a virtual farm tour on Oct. 4 at World Dairy Expo in Madison, Wis.

In addition to all of the on-farm attractions, the Youngs also host community events like Easter egg hunts, charity bike rides, vintage truck shows and more. People can even hold their company picnic or fam-

“We’re only closed on Christmas,” Young said. … “We used to be a typical dairy farm. We liked having good cows, and we still do. It’s just that we do things differently now.

We’ve created an entertainment venue, giving families all sorts of fun things to do together on the farm.”

“Ice cream is where we’ve made our money,” Stuart said. “It’s an easy food, a happy food. No one ever complains about ice cream. We make a high-quality, 15 percent butterfat product, and we’re one of the last places to still sell a true half gallon.”

We got our earlage done Sept. 28 and we also cut our third crop of Sedan grass, then we refilled the silo Sept. 29. Less than 20 RAINFALL percent of the soybeans TOTALS are done. We got done with our hay and finished chopping RAINFALL corn silage a TOTALS couple of weeks Last 3 ago. Right now we Weeks are just waiting for it to dry out so 7.1” we can combine corn and beans.

Simple treasures

As soggy, cold weather settles in central Minnesota, the harvest comes to a halt, and it is time to take shelter in the kitchen. The cold temperatures push me to turn on the furnace, but I resist and turn on the oven instead.

Nothing warms you up faster than the smell of supper ready to eat when you walk in the door at night or fresh baked goodies. When I married Mark, I knew I was marrying the cows too when I said I do. What I did not realize was that I was also saying I do to cooking.

Over 30 years, I have collected recipes from newspapers, magazines and now the internet. I have had the dentist receptionist copy off recipes I found while waiting for appointments and did not have anything to jot it down on. I have a whole cupboard ďƒžlled with cookbooks, clippings and back issues of magazines. Some women throw open the doors to their closets and wonder what they will wear today.

I pull open the cupboard and wonder what I will cook today. I have more options in my cooking cupboard than I do in my closet. Here are a few recipes I discovered digging through my options that I think I will be whipping up over the next few days. Enjoy.

Ravioli and sausage lasagna, Woman’s Day 12 ounces Italian sausages 7 ounces roasted red peppers, drained and coarsely chopped 1 Tbsp. chopped fresh basil or 1 tsp. dried 26 ounces marinara sauce 30 ounces frozen large square cheese ravioli, thawed

Food columnist, Natalie Schmitt 4 ounces shredded mozzarella cheese 2 Tbsp. grated Parmesan cheese Heat oven to 375 degrees. You will need a shallow 2-quart baking dish. In a skillet over medium high heat, cook sausage breaking up chunks with a spoon, about ďƒžve minutes or until no longer pink. Remove from heat; stir in roasted red peppers and basil. Spread 1 cup pasta sauce in baking dish. Top with a layer of 12 ravioli, the sausage mixture, then the mozzarella cheese.

Top with 1 cup sauce, remaining ravioli and remaining sauce. Cover with foil.

Bake for one hour or until ravioli are tender when pierced. Uncover, sprinkle with Parmesan cheese and bake ďƒžve

minutes longer until cheese is barely golden. Let stand 15 minutes before serving. You may want to put an old cookie sheet on a lower rack when baking to catch any drips.

Root beer BBQ pulled pork, The Comfort of Cooking 2 pounds pork tenderloin (pork shoulder or butt can also be used) 12 ounces root beer 18 ounces barbecue sauce Place pork in a slow cooker and pour root beer over meat. Cover and cook on low for 4-6 hours or until pork shreds easily with a fork. Once cooked, drain and discard liquid. Shred pork and place back into the slow cooker.

Toss with barbecue sauce and serve immediately or keep warm in slow cooker until ready to serve. Makes eight servings.

Butterscotch banana cake, Country Kitchen Melt 1 cup butterscotch chips in microwave.

Combine 1 box yellow cake mix 4 large eggs 2 medium mashed ripe bananas 1/2 cup vegetable oil 1/4 cup water 1/4 cup sugar Stir 1 cup of batter into melted chips. Spoon this batter/chip mix into a greased 10-cup bundt pan or round tube cake pan. Top with remaining cake mix batter. Bake for 45 minutes at 350 degrees until toothpick comes out clean. Cool in pan for 20 minutes.

Invert pan onto wire rack. Place 1/2 cup

butterscotch chips into a heavy-duty plastic bag. Microwave for 20 seconds.

Knead until smooth. May need to put in microwave for a few more seconds to ďƒžnish job. Cut tiny hole in corner of bag and squeeze to drizzle on cake.

Black forest brownies, Country Woman 1 1/3 cup ďƒ&#x;our 1 tsp. baking powder 1/2 tsp. salt 1 cup butter 1 cup baking cocoa 4 eggs, beaten 2 cup sugar 1 1/2 tsp. vanilla extract 1 tsp. almond extract 1 cup chopped maraschino cherries 1/2 cup chopped nuts Icing: 1/4 cup softened butter 1 tsp. vanilla extract 2 cup confectioners’ sugar 6 Tbsp. baking cocoa 1/4 cup milk 1/4 cup chopped nuts Combine ďƒ&#x;our, baking powder and salt; set aside. In a large saucepan, melt butter. Remove from heat and stir in cocoa until smooth. Blend in eggs, sugar and extracts. Stir in ďƒ&#x;our mixture, cherries and nuts. Pour into a greased 9- by 13-inch cake pan. Bake at 350 degrees for 35 minutes or until brownies test done. For icing: blend butter, vanilla, sugar, cocoa and milk until smooth, spread over hot brownies.

Sprinkle with nuts.

Ice cream cake Crush 2 cups of Oreos and place them on the bottom of a spring-foam pan.

Then, cut ice-cream sandwiches in 4 pieces and layer them around the side of the pan. Next, pick 2-3 of your favorite kinds of ice cream and layer the ice cream on top of the Oreos. After that, add whipped cream on top of the ice cream, and to add more flavor you can sprinkle some extra Oreos on top of the whipped cream. Finally, chill then serve!

1/2 tsp. vanilla extract 1/4 tsp. cinnamon 1/2 cup yogurt 3 Tbsp. maple syrup 3 cups mixed berries

Preheat oven to 350 degrees F. Arrange bread in a greased 9- by 13-inch baking dish. In mixing bowl beat egg and egg whites. In another mixing bowl dissolve the dry milk powder into milk. Mix thoroughly so there are no lumps.

Add the milk mixture into the eggs along with vanilla and cinnamon. Pour slowly over bread and bake for 25 min. or until bread is golden brown. Mix yogurt and syrup in small bowl. Spoon over individual servings of French toast.

Top with fresh berries.

Braided egg bake

1/2 cup milk 4 oz. cream cheese (softened) 8 eggs salt and pepper to taste

2 (8 oz) packages of crescent roll dough 4 oz. cooked ham (sliced) 1 cup shredded cheese

Preheat oven to 375 degrees F. Beat milk and cream cheese together until smooth. Mix in eggs, and season with salt and pepper. Heat a lightly oiled skillet over medium high heat and cook egg mixture until eggs are almost set.

Arrange the crescent rolls from one package into a rectangle shape on top of a lightly greased cookie sheet. Place rolls from remaining package along the edges of the two long sides of the rectangle, with the broad half of the rolls on top of the first layer of rolls, and the pointed ends extending over the sides of the pan. Arrange the ham in a layer down the center of the dough.

Spoon the cooked egg mixture on top of the ham and then sprinkle the cheddar cheese on top of the eggs. Bring the corners of the rolls together over the cheese to form a ‘braid’ shape. Bake in preheated oven for 25 to 30 minutes, until cheese is melted and rolls are golden brown.

Chicken Alfredo fettuccine Prepare fettuccine noodles and start cooking the broccoli. Just add to boiling water and cook for around 5-10 minutes. When the broccoli is finished, drain and chop. In a frying pan, add a little cooking oil. Lightly fry the chicken to warm it up. Then cut into smaller pieces. Pour Alfredo sauce over the cooked noodles. Add the chopped broccoli and chicken. Stir well.
