Growing for the future Winding Meadows Dairy continues tradition of growth, improvement

ROCK VALLEY, Iowa – Winding Meadows Dairy is aptly named. The farm is perched atop a hill overlooking meadows that meander through the rich, black Iowa soil.

Terry Van Maanen and his wife, Sue, own and operate Winding Meadows Dairy.

The Van Maanens have three grown children, Trey, Quinn and Myles.

The Van Maanens’ story is one of continuous growth. Indeed, their latest expansion has just been completed.

After graduating from South Dakota State University in 1983, Terry Van Maanen returned home and joined his father, John, on the family’s dairy farm. At that time, they were milking 45 cows in a stanchion barn.

Van Maanen bought out his father in 1987. He built a freestall barn and a double-6 milking parlor and began milking about 100 head three times a day.

Van Maanen had been bed-

ding his freestalls with straw, but a visit from Dr. Leo Timms of Iowa State University convinced him to switch to sand.

“Dr. Timms dug into one of our freestalls and showed me all of the wet material that was at the rear part of the stall,” Van Maanen said. “So, I took a pickaxe and began to remove the packed clay from the stalls one at a time and replace the clay with sand. Sand is the best bedding material. It’s dry and porous and is comfortable for the cows.”

Winding Meadows Dairy gradually grew to 360 head.

In 2013, the Van Maanens decided to undergo a major expansion. They built additional facilities that enabled their operation to accommodate 1,200 head and installed a double-20 parallel milking parlor.

All of the freestall barns at Winding Meadows Dairy are tunnel ventilated.

“I really like tunnel ventilation,” Van Maanen said.

“The improved y control was a huge factor. I couldn’t stand seeing my cows bunch up during hot weather. And, the barns

We have always been able to remove our manure with a tire scraper. I liked tunnel ventilation so much that I switched all of our older barns to tunnel ventilation in 2015.”

A new sand separation sys-

tem was a big part of a 2013 expansion.

“We installed a closed loop system that recycles the water that washes the sand out of the manure,” Van Maanen said. “We did this because we don’t have a lot of space here

for a sand lane or an extra lagoon. And, we can empty our lagoons in the fall without needing to hold back 5 million gallons of water for washing sand.”

Dairy farmer-owned cooperative marks milestone

On this date in 1969, Midwest dairy farmers came together to form Associated Milk Producers Inc. (AMPI). Over the years, dairy farmers from more than 75 local creameries united with one common goal: add value to dairy farmers’ milk.

The dairy farmers established a farm-to-table cooperative focused on making dairy products consumers crave. This business model is built on satised customers, a multi-plant manufacturing network and dedicated dairy farmer-owners.

Today, AMPI members annually market about 5.7 billion pounds of milk, generating $1.7 billion in sales. Together, they own 10 Midwest-based manufacturing plants where 10 percent of the nation’s American-type cheese, processed cheese slices and butter is produced. Most recently, AMPI cheese, butter and powdered whey were recognized with rst-place nishes in the 2019 World Dairy Expo Championship Dairy Product Contest.

In addition to manufacturing, AMPI has long been engaged in the dairy policy arena, understanding the impact federal policies have on members’ farm and co-op

business. AMPI remains an active and respected voice through grassroots efforts, dairy policy groups and the AMPI Political Action Committee.

“It costs us something to heat the sand separator building in the wintertime, but it’s really nice to have a heated building if we need to work on the equipment,” Van Maanen said. “Plus, the sand dries out faster and doesn’t freeze when it’s stored in a heated building.”

Strict parlor protocols are followed during milking. As part of milking prep, the cows’ udders are dried with soft cloth towels. The towels are washed after each milking and are usually discarded after a month’s worth of use.

Van Maanen’s attention to cow comfort and cleanliness has paid off. The herd’s somatic cell count never rises above 150,000. The 1,200 Holsteins have a rolling herd average of more than 28,000 pounds with 3.8% butterfat and 3.2% protein.

“We sell our milk to Land O’Lakes,” he said. “Our milk goes to Sioux Falls, (S.D.,) where it’s bottled for uid consumption. But, Land O’Lakes also supplies milk to Agropur, who just completed a large new cheese plant in Lake Norden, S.D. This represents another opportunity to sell my milk. You have to ask yourself, ‘When will another new cheese plant be built in this region?’”

Despite the endless hours that it takes to operate a modern dairy, Van Maanen continues to nd deep satisfaction in his work.

“This dairy farm is a puzzle,” he said. “And, I enjoy trying to gure it out and make it protable.”

Heifer calves are sent to a calf raiser in Kansas. The heifers return to the farm when they are approximately seven months pregnant.

“We service our higher potential cows with sexed semen twice then go to a beef bull. We have found that beef bulls have a higher conception rate than sexed semen.”

“Part of the reason for this expansion was that our milking parlor was being underutilized,” Van Maanen said. “The additional cows will help make our operation more efcient.”

Another major factor driving this recent expansion has to do with the dry cows.

“The new barn will enable us to house all of our dry cows on this farmstead,” Van Maanen said. “We had been keeping our dry cows on the place across the road. It was a bother to always be loading up cows and moving them back and forth. The new barn

Maximizing silage value Signicant losses happen every year in silage bunkers and piles across the United States. Losses of 15 percent or more of the harvested dry matter commonly occur, representing signicant nancial costs. Storage losses also affect the feeding value of the remaining silage. Feeding even low levels of spoiled silage results in reduced intake, lowered digestibility and poor cattle performance.

“Optimizing silage value starts by harvesting at the right moisture content,” said SDSU Extension Beef Feedlot Management Associate Warren Rusche.

Harvest should start at no wetter than 70 percent moisture with the goal of being completed before the crop is drier than 58 to 60 percent moisture.

The length of cut should be between one-half to three-fourth inches. Dull knives tend to tear rather than cut cleanly, making it more difcult to pack.

“Relying on how the crop ‘looks’ to determine when to start chopping silage can often be deceiving. Drought-stressed corn is often wetter than it looks from the road. Modern corn hybrids are bred to stay green longer under good conditions, so corn not under stress tends to be drier than one might think just by looking,” said.

“Failure to exclude oxygen from the silage pack leads to a number of fermentation issues and dry matter losses. When it comes to silage fermentation, the good bacteria require anaerobic conditions. These microbes produce lactic acid resulting in a rapid drop in pH and maximum dry matter preservation. If oxygen is present, undesirable microbes such as yeast and molds feed on the most digestible nutrients, reducing the amount of recoverable dry matter and the energy content of the silage,” Rusche said.

Using inoculants can help increase the number of desirable bacteria, resulting in a faster pH drop and increased dry matter recovery. Inoculants can also improve aerobic stability when the silage is fed. Inoculant strains are living organisms, so avoid exposing them to excessively high temperatures.

Packing the pile well is an essential step to exclude oxygen. Keep the layers uniform and less than six inches in depth. Packing should be continuous throughout the lling process.

“Covering a silage pile is arguably the least desirable job on a farm, but vitally important to preserve feed value. An uncovered pile can lose 60 percent of the dry matter in the original top three feet. An oxygen-barrier lm combined with a white-on-black plastic cover, results in less loss compared to a layer of plastic alone. Cover the pile as soon as possible after harvest is completed; waiting as long as 12-24 hours after harvest signicantly increases storage losses,” Rusche said.

Finally, keep safety in mind. Slopes should be no steeper than one foot to three feet (one foot of rise for three feet of horizontal) to reduce the chances of rollover. The pile shouldn’t be higher than the unloading equipment can reach in order to reduce the risk of catastrophic, even life-threatening avalanches.

MADISON, Wis. – As the largest single cost on a dairy farm, feed and its impact on milk production are at the forefront of dairy producers’ minds.

Bill Weiss, of Ohio State University, presented research on which feeds are best to be invested in a dairy cow’s diet, what the payoff is for the investment in protein versus high quality forages, and how to best manage that for every farm and budget.

Weiss has been studying the cost effectiveness of feeds since 1988.

“There’s no such thing as a free lunch,” Weiss said. “You’re buying your milk production whether you realize it or not.”

Feed cost is positively correlated to milk production. On average, herds with higher production tend to have higher feed costs per hundredweight of milk.

“Signicant variation exists and higher production tends to have higher feed cost per cwt. of milk,” Weiss said.

ent costs, forage production costs, cow grouping strategies, feed efciency and use of additives.

Homegrown corn silage is usually a cheap source of nutrients, and generally as one increases yield the cost of nutrients provided by the forage decreases.

“Based on average costs in Ohio in August, a 1-ton-per-acre decrease in yield of corn silage (35% dry matter) could increase annual feed costs by almost $20 per cow,” Weiss said. “Production practices that reduce yield of corn silage needs to be evaluated carefully.”

For example, high cutting corn silage can result in greater milk yields, but

it is guaranteed to reduce silage yields.

“We are faced with the dilemma of a potential greater milk yield covering the higher silage production cost,” Weiss said. “Based on Ohio prices, high cut corn prices will increase feed costs about 14 cents per cow per day which means cows fed the silage will need to average about 1.5 pounds per day more milk to cover the cost of reduced yield.”

With alfalfa, quality is more important than yield, although yield cannot be ignored. A study from California states equal milk production was obtained when cows were fed alfalfa hay with 40% to 46% NDF; however, much more concentrate was required with the higher NDF alfalfa.

“Factoring the increased level of concentrate and higher production cost of the higher quality alfalfa, over the 14-week feeding trial, feed costs for the high-quality alfalfa diet was about $50 less per cow,” Weiss said.

High byproduct, low forage diets are often cheaper than forage-based diets because of lower feed efciency and less milk fat.

“Wise purchasing decisions for concentrates can reduce costs, but you cannot make the decision based solely on ingredient price and composition,” Weiss said. “You need to consider effects on milk production.”

For example, feeding canola meal in a well-balanced diet will cost more than feeding cottonseed meal, but based on research the canola diet could net as much as $0.30 more per cow per day.

Group by production and balancing diets is another way to save money.

“Perhaps the biggest bang for your buck is a fresh cow group – less than three weeks in milk,” Weiss said.

This diet can be very expensive, but because the diet should increase peak milk which will carry over the entire lactation, the higher costs will likely more than pay off.

Feed additives add costs but several additives are known to increase milk production.

“Choose additives that have been proven effective in several studies and ideally have been tested in diets similar to what is being fed on your farm,” Weiss said. “Pay attention to the type of cow used in the experiment.”

An additive that is protable when fed to fresh cows will not necessarily be protable when incorporated into a onegroup TMR system.

“Do not base use of additive on its costs but rather on its net return and how likely it will work,” Weiss said.

We still haven’t chopped any corn silage as our soils remain too wet.

On Oct. 7, we started chopping corn. At first we were leaving so much mud on the road, we had to have one fulltime guy in the Bobcat scraping it off after the trucks left the fields. But the wind really RAINFALL helped dry out the fields, and TOTALS we did not have to do that afLast 2 ter the first day. After Oct. 9 Weeks we are about 30% done with chopping. We have a neighbor custom chop our corn, and we drive our trucks and pack the bunker. The moisture is at 64-66% so it is right on target. This is our earlier planted corn so by the time we get done with Since April 14 this, the later planted corn 46.3” will probably be at the right moisture, too. The yield is about average. We do not have beans, but our neighbors who do are harvesting them.

We started corn silage yesterday (Oct. 8). The corn looks great, the ears are nice, maybe a little green for upright RAINFALL silos. Most of the TOTALS dairies in our area Last 2 are done chopping Weeks or close to it. Fields are wet in our area, but ours were fine.

Some guys are taking more hay off with the 4.5” nice weather this past week. My fifth crop looks very tempting, Since April 14 but I’m not going to 26.1” cut again. I do have some fall oats, but will give them more time; they are not looking too great.

I cut some hay that is going in to corn next year, and just finished tedding it. It’s grass hay, so it should be ready to bale Thursday. We haven’t RAINFALL done any corn silage yet. I TOTALS just talked to the guy who Last 2 chops for us and it sounds Weeks like the end of next week.

We just ran out of corn silage yesterday (Oct. 7), so I’ll be fresh chopping some starting today. Pretty much everyone around here is getting started on their corn silage. The corn is starting to dry down Since April 14 pretty fast now. The corn 28.9” is starting to get ripe and I’m guessing we will be able to do high moisture corn the end of the month. Some people around here area starting their beans, too.

We are long done with our own chopping, but have some custom jobs 3” we are doing. We RAINFALL started our high TOTALS moisture corn Last 2 yesterday; that is Weeks coming off between 28% and 32% and yielding really well.

We had 5.5 inches of rain Oct. 1-2., and then another 1.5 inches Oct. 5. The Lancaster Ag Research station said they had 24 inches for the month of September and already 5 inches in Oct. We should RAINFALL hopefully finish up chopping TOTALS our corn around 10 p.m.

Last 2 tonight (Oct. 8). There are Weeks a handful of corn fields that we might be able to get in when it freezes, but we are being more selective than we ever have about what we are chopping because of how wet it is. We’ve never been ones to leave corn in the fields, but this year we might. We are also Since April 14 drag-lining and injecting 51” manure today. A couple of guys around here have tried to get in and start beans, but it doesn’t seem to really be happening for them.

We are custom chopping corn and then we should be done chopping for the year. We custom chopped 300 acres. The fields weren’t too bad. RAINFALL There are a lot of soy- TOTALS beans being taken out.

Last 2 The corn around here is Weeks going to range from 160210 bushels an acre. One guy was taking out earlage and another, shelled corn. I checked some fields and they were 3142% moisture. I like to do high moisture corn in the Since April 14 low 30’s, then we grind it 28.4” up and put it in a bunker.

We finished our sorghum last Monday. We had 150 acres and put it on a pile.

2019 Class III prices on track for $16.56 average

Agriculture Secretary Sonny Purdue kicked off World Dairy Expo in Madison this week, telling dairy farmers they will have to adapt to survive. He said “It’s very difcult in the economy of scale, capital needs, all of the environmental regulations and everything else to survive milking 40, 50, 60 or even 100 cows.”

HighGround Dairy’s Lucas Fuess reported in the Oct. 7 Dairy Radio Now broadcast that it was difcult to hear that sentiment but it is reality and “a wakeup call to make sure farmers are doing everything they can to keep costs down and continue to be competitive.”

He said the sentiment was better at Expo this year, due to the rise in milk prices, and says HighGround has a good outlook the next few months which “hopefully will save some of the struggling dairies.” He said it was interesting to compare the Secretary’s comments to some of the programs contained in the Farm Bill as HighGround believes smaller dairies can benet greatly from some of them such as the Dairy Revenue Protection and newly named Margin Insurance programs.

Fuess sees continued tariff challenges on the horizon such as the latest battle with the EU and with China, even as trade ofcials meet Oct. 10 in Washington. “Hopefully some tariff resolution will come soon,” he concluded, “And be able to increase U.S. dairy exports, push that milk price a little higher, and stop some of the struggles that these small dairy farms are seeing.”

Fuess’ EU reference regarded a ruling by the World Trade Organization which allows the U.S. to implement tariffs on $7.5 billion of imports from the EU in response to its subsidies of Airbus. The U.S. Trade Representative stated that a 10% tariff will be levied on European aircraft and 25% on agricultural goods including butter and cheese, as well as industrial products and other imports.

Meanwhile, the weighted average of products offered in Tuesday’s Global Dairy Trade auction (GDT) inched 0.2% higher, following the 2.0% jump on Sept.

17. Sellers brought 85.4 million pounds of product to the market, up from 82.3 million in the last event.

Buttermilk powder led the charge, up 6.7%. It was not traded in the last event. Skim milk powder followed, up 2.7%, after a 3.4% gain last time. Lactose was up 1.8%, after jumping 5.6%, and rennet casein was up 0.7%, after slipping 0.1%.

Unfortunately, GDT Cheddar cheese led the losses, down 3.4%, following a 0.4% gain last time.

Whole milk powder was off 0.2%, after gaining 1.9% last time. Butter was also down 0.2%, after a 2.7% gain, and anhydrous milkfat was unchanged after inching 0.6% higher last time.

FC Stone equated the GDT 80 percent butterfat butter price to $1.8253 per pound U.S. CME butter closed Friday at $2.1850. GDT Cheddar equated to $1.6860 per pound, down 5.9 cents and compares to Friday’s CME block Cheddar at $1.9925. GDT skim milk powder averaged $1.2130 per pound and compares to $1.1791 last time. Whole milk powder averaged $1.4248. CME Grade A nonfat dry milk closed Friday at $1.1450 per pound.

Speaking of higher milk prices, the Agriculture Department announced the September Federal order Class III benchmark at $18.31 per hundredweight, up 71 cents from August, $2.22 above September 2018, and the highest it has been since November 2014. It compares to California’s September 2018 4b cheese milk price of $15.62 and equates to $1.51 per gallon, up from $1.38 a year ago. The nine month Class III average stands at $16.11, up from $14.62 at this time a year ago and compares to $16.12 in 2017.

Late Friday morning Class III futures portended an October price at $18.32; November, $18.01; and December at $17.37, which would result in a 2019 average of $16.56, up from $14.61 in 2018 and $16.17 in 2017. The peak in 2020 was $17.47 in September.

The September Class IV price is $16.35, down 39 cents from August and the lowest since May, but is $1.54 above a year ago. Its 2019 average stands at $16.21, up from $13.95 a year ago and $15.51 in 2017.

You’ll recall that preliminary data showed August 50-State milk output at 18.3 billion pounds, up just 0.2% from August 2018. The August Dairy Products report shows that more milk went to the cheese vat.

Total cheese output hit 1.11 billion pounds, up 1.6% from July and 2.2% above August 2018. Year-to-date output is at 8.68 billion pounds, up just 0.9% from a year ago.

Wisconsin produced 290.5 million pounds of the total, up 2.9% percent from July and 2.0% above a year ago. California output fell to 199.6 million pounds, down 5.2% from July and 5.7% below a year ago. Idaho contributed 88.1 million pounds, up 1.1% from July and 14.8% above a year ago. Minnesota output slipped to 59.8 million pounds, down 1.1% from July and 2.3% below a year ago. New Mexico, at 90.5 million, was up 18% from July and 20.2% above a year ago.

down 1.8% from July but 0.8% above a year ago, and brought year to date output to 3.75 billion pounds, up 2.2% American type totaled 457.7 million pounds, up 4.7% from July and 5.1% above a year ago, rst gain all year says FC Stone, and a record high for any one month of production in almost 100 years. Cheddar, the cheese traded at the CME, totaled 322.3 million pounds, up 14.4 million pounds or 4.7% from July and 10.3 million pounds or 3.3% above a year ago. YTD Cheddar is at 2.5 billion pounds, down 2.3%.

Butter output fell to 136.4 million pounds, down 6.1 million pounds or 4.3% from July but was 2.8 million pounds or 2.1% above a year ago. YTD butter is at 1.28 billion pounds, down 0.8% from 2018.

Yogurt output, at 362.6 million pounds, was down 8.5% from a year ago, with YTD at 2.9 billion pounds, down 3.1%.

Dry whey totaled 84.5 million pounds, down 1.9% from July but 7.2% above a year ago, with YTD at 637.4 million pounds, down 8.8%. Stocks totaled 72.4 million pounds, up 7.1% from July but 1.8% below those a year ago.

Nonfat dry milk output totaled 132.2 million pounds, down 21.4% from July but 2.8% above a year ago. YTD powder is at 1.3 billion pounds, up 1.7% from 2018. Stocks fell to 269.8 million pounds, down 18.9 million or 6.5% from July and were 10.7 million pounds or 3.8% below the 2018 level.

Skim milk powder climbed to 51.4 million pounds, up 14.7 million or 40.0% from July and was 3.8 million or 7.9% above a year ago. YTD skim hit 324.7 million pounds, down 14.2% from a year ago.

After dropping 9 1/2-cents the previous week, the CME Cheddar blocks climbed back to $2.02 per pound Thursday but closed the rst Friday of October at $1.9925, 3 3/4-cents higher on the week and 34 1/4-cents above a year ago. The barrels nished at $1.79, up 13 1/2-cents and 42 1/4-cents above a year ago. The spread fell to 20 1/4-cents. 11 cars of block and 23 of barrel were sold.

Milk offers are few and far between in the Midwest, according to Dairy Market News, and spot milk prices ranged from Class to $1.50 over. Cheese demand reports were more positive and some expect demand to remain strong the rest of the year and into 2020. Cheese production is slower due to scanter milk supplies.

Western contacts report that current price trends are taking U.S. cheese out of the loop when it comes to international sales. Others suggest that export demand has improved. Block cheese inventories were reported as well-adjusted, whereas barrel cheese supplies are substantial.

Butter closed the week at $2.1850 per pound, up 3 3/4-cents but 10 1/2-cents below a year ago, with 15 trades occurring.

Central butter manufacturing is steady, says DMN. Cream remains available and in a comfortable price range for butter plants. Inventories are reportedly in balance and will meet the increase in ordering expected near term. But, contacts do not expect cream to remain at current availability for long. Cream cheese production is expected to dip into the cream pool. Butter markets are steady, edging on bearish, but some contacts foresee continued price drops. Recent storage and market reports did not dampen the market tone as much as some expected, according to DMN. Western contacts suggest the butter market has a “downside feel.” “Even now, when market activity is

Cooperatives Working Together (CWT) helped members capture sales of 354,944 pounds Cheddar and Monterey Jack cheese, 149,914 pounds of cream cheese, and 3.3 million pounds of whole milk powder.

The product is going to customers in Asia and South America through January and brings CWT’s 2019 exports to 42.6 million pounds of American-type and Swiss cheeses, 277,782 pounds of anhydrous milkfat, 4.5 million pounds of butter (82% milkfat), 5.0 million pounds of cream cheese and 42 million pounds of whole milk powder. They represent the equivalent of 848.2 million pounds of milk on a milkfat basis.

The national average corn price averaged $3.93 per bushel, down 23 cents from July but 57 cents per bushel higher than August 2018. Soybeans averaged $8.22 per bushel, down 16 cents from July and 37 cents below a year ago. Alfalfa hay averaged $179 per ton, down $4 from July but $2 per ton above a year ago.

Looking at the cow side of the ledger; the August cull price for beef and dairy combined averaged $68.30 per cwt., up $1.30 from July, $5.30 above August 2018, but $3.30 below the 2011 base average of $71.60 per cwt.

This week’s Crop Progress report shows 43% of the U.S. corn crop was rated mature, as of the week ending September 29, down from 84% a year ago and 30% behind the ve year average. 11% has been harvested, down from 25% at this time a year ago and 8% behind the ve year average. 57% was rated good to excellent, down from 69% a year ago.

usually at its annual peak, demand is less than hoped for,” says DMN. Buyers have lled some of their required purchases, according to contacts, but can wait for deals to nish off fourth quarter needs. Cream is readily available and butter inventories, while being drawn down seasonally, are larger than preferred.

FC Stone warned in its October 1 Early Morning Update; “The likelihood of seeing sub-$2.00 butter prices by the end of fourth quarter is growing. Strong production and strong imports have resulted in larger than expected butter stocks that look like they are going to drag CME prices lower.”

Spot Grade A nonfat dry milk closed Friday at $1.1450 per pound, highest CME price since March 2, 2015, up 3 1/2-cents on the week and 28 1/2-cents above a year ago, with 11 cars exchanging hands for the week.

Weaker butter prices are being offset by rming nonfat dry milk prices, according to FC Stone, which are leaving Class IV prices in a holding pattern for now. “U.S. powder continues to nd underpinning support principally in global demand that seems to be improving by the week lately.”

CME dry whey closed Friday at 32 3/4-cents per pound, down 2 cents and 23 1/2-cents below a year ago, with a whopping 80 cars sold on the week.

The whey market is heavily inuenced by African swine fever which has devastated the world’s largest hog herd, namely China. The Daily Dairy Report’s Sarina Sharp wrote in the Sept. 27 Milk Producers Council newsletter that “Amidst sky-high pork prices producers are surely looking to boost production.

They are investing in piglet health which would likely boost whey purchases.”

She reports that “Chinese whey imports were just shy of 100 million pounds in August, highest volume since January and just 3.6% less than in August 2018.

However, there are still reasons to be concerned about global demand for feed whey. The Chinese pig herd is considerably smaller than it was a year ago, and the disease is spreading quickly through South Korea, Vietnam, and the rest of Southeast Asia.”

Back on the home front, the USDA will do another round of “trade mitigation purchases” and has issued a timeline for continued purchases into 2020.

Volumes were not listed, says FC Stone but “They are talking about buying print butter, string cheese, 1- and 2-pound Cheddar chunks, instant nonfat dry milk and gallons and half-gallons of milk. Since it is all consumer type package sizes, we assume all of this would be going to food shelves and pantries.”

Finances on U.S. dairy farms continue to improve. A higher All Milk price and lower feed prices nudged the August milk feed price ratio higher for the second month in a row. The latest Ag Prices report put the ratio at 2.26, up from 2.16 in July and compares to 2.06 in August 2018.

The U.S. All-Milk price averaged $18.90 per hundredweight (cwt.), up 20 cents from July and $2.80 above August 2018. California’s All Milk price was $18.70, up a dime from July and $2.85 above a year ago. Wisconsin’s, at $19.10, was up 30 cents from July and $2.80 above a year ago.

HELPING GOOD MANAGERS MAKE BETTER TRADING DECISIONS In the past month, CME spot block cheddar prices rallied to $2.20, retraced to $1.90, and rallied back to $2.02. Barrel cheddar prices saw similar volatility rallying to $1.92, declining to $1.61, and rebounding back to $1.79. This equates to a $3/cwt swing in Class III pay price value. The disappointing aspect of this volatility is deferred contracts are not seeing the front end market strength for hedging opportunities.

Whey cash and futures markets remain soft as strong cheese production in August left more product available to find a home. Manufacturers are also making the decision to produce more sweet whey vs. other high protein whey products. Although this is concerning to its impact on Class III prices, whey stocks data shows that inventories are being held at manageable levels. Any change in the China demand situation should allow whey prices to firm quickly.

In last week’s USDA’s Milk Product Production report, American cheese production was up 9.7% over prior year. The block barrel spread was trading closer to the normal 3 cent spread in the second quarter, but widened to as high as 39 cents in mid-September as barrel supplies remain high. This spread reflects an

efficient market trying to fix an imbalance between the block and barrel supply.

NZ is starting its production season with plenty of moisture. Soil moisture maps are borderline excessively wet in certain dairy production regions. Two significant fundamental factors that will dictate world dairy prices over the coming year will be Southern hemisphere production and China demand trends. Keep a close eye on both as what happens here may dictate which end of the cheese price volatility spectrum prices will trade in for 2020.

Grain prices have found support from USDA reporting tighter stocks, cool/wet weather, and late development. As of October 1, 50% of the corn crop was not yet fully mature, and 45% of the soybean crop was not yet dropping leaves. The good Lord has blessed the late crop with a late frost. Although some production will be impacted by it, it appears that the majority of the crop got the time it needed to mature.

Ehlers Family Farm keeps going

Brothers build new herd, switch from Holstein to Jersey

THERESA, Wis. – Brothers Tim and Nick Ehlers did not let the barn on their family’s farm sit empty for long after their parents, Larry and Margarita Ehlers, sold the herd of Holsteins in 2003.

Tim, 34, and Nick, 30, are the second generation to farm at the Theresa, Wis., dairy which their parents purchased in 1988. Larry and Margarita own the farm; Tim and Nick own the cattle

and equipment and rent the buildings. The sons are set up to buy the farm in the future under a rent-to-own arrangement with their parents.

“As far back as I can remember, Tim has wanted to farm,” Larry said. “But, I still wanted to give my boys a choice. If we had held onto the cows longer, then they might not have felt like they had a choice.”

Although Tim was only a junior in high school when the cows left, by the following year he started milking again.

Tim purchased his parents’ remaining heifers and worked at a nearby farm throughout high school.

When his heifers freshened, Tim was forced to decide.

“I didn’t want to sell, and instead I bought more animals,” Tim said. “I literally started with just one cow milking for two weeks in late 2004 and began shipping milk in 2005 from about 10 head.”

The shift from Holsteins

to Jerseys began when Tim bought three Jerseys and found them to be a better t in the barn.

“They worked well in our smaller stalls,” Tim said.

“So, I thought, why change the buildings to accommodate a larger breed? Instead, we’ll change the breed.”

Holsteins were phased out as more Jerseys were purchased and the remaining Holsteins were bred to Jersey. In 2006, Tim bought a

herd of 40 registered Jerseys which was exactly the sort of boost he needed to take his herd to the next level.

Tim and Nick formed an LLC in 2009 and continued to steadily grow, building the herd to its present size of 160 cows.

“We don’t run much land,” Tim said. “So, we’re geared for buying feed. Jerseys are efcient at convertTurn to EHLERSES | Page 15

had stayed working at the neighboring farm, I probably would’ve become a herdsman, and I didn’t want that.”

Tim and Nick are some of the youngest men in the area who are farming on their own.

“I like the variety that comes with being your own boss,” Nick said. “Every day is different. Plus, the farm is a good place to raise kids.”

Tim and his wife, Crystal, who works at the post ofce, have a 3-year-old son, Easton, and are expecting their second child in November. Nick and his wife, Angela, a veterinary technician, have a 2-year-old daughter, Alexis.

The farm is set up so one person can do all the work if necessary, allowing each brother time off now and then.

Tim and Nick appreciate the higher components their Jersey herd produces.

“It adds onto the milk price,” Nick said. “We don’t feel lower prices as bad because the components carry us through.”

The Ehlers brothers started farming full time during a period when prices were anything but fair for dairy farmers.

“Milk was $9 to $10, and corn was $5 in 2009,” Tim said. “It was a bleak time when lots of farms were going out of business. But, we were fortunate to have good neighbors who were willing to work with us on buying feed and so forth. People were understanding; they wanted to

Don arrives by 7 a.m. and is in charge of feeding all the cattle on the farm.

All three brothers enjoy the freedom that farming offers and have learned to make concessions so everybody can work together.

“We all get along ne and all have our own areas and stay out of each other’s way for the most part,” Don said. “We listen to each other’s opinions, and I think that’s important.”

With all the rain delays around the farm these past few weeks, I have been in the kitchen trying to nish up the garden produce and clean out the freezer. One day when it was really chilly and I did not want to turn the furnace on, I dug down in the bottom of my freezer and found my last package of oxtail. Making beef broth is the best way to make a house feel warm and snuggly on a damp, dreary day. I will either use it right away or freeze it for another day to make soup or beef and noodles.

Nothing beats homemade broth. I use my pressure pan to make broth.

It saves a bunch of time. If you do not use a pressure pan, then use a large pot, add extra water and let simmer on low for 12-24 hours.

The longer the better.

The garden is on its last leg and so am I. I need to nish digging up my potatoes and pick the last of the tomatoes. I have tons of cherry tomatoes this year and found a neat recipe I cannot wait to try. Pickled cherry tomatoes sounds like a great way to store the last of summer in a jar. Of course, there are tomatoes that will never turn red, so my mom used to make fried green tomatoes.

It is an acquired taste, but how can anything dipped in crackers and fried in butter taste bad? Enjoy.

Fried green tomatoes Green tomatoes, sliced 2 eggs, beaten Saltine crackers, crushed Butter Melt butter in frying pan over medium heat. Dip tomato slice in beaten eggs and then dip in crushed crackers to coat. Place in frying pan. Fry two to three minutes then ip over and fry other side.

Refrigerated pickled tomatoes 1 pound cherry or grape tomatoes 4 garlic cloves, crushed 1/2 cup dill, chopped 1 cup water 1 cup apple cider vinegar 1/4 cup sugar 2 Tbsp. Kosher salt 1 tsp. coriander seeds 1 tsp. mustard seeds 1 tsp. black peppercorns 1/4 tsp. red pepper akes Crush garlic and set aside.

Remove green tops from tomatoes and, with a toothpick, poke a hole in each tomato. Chop dill and place in bowl with the tomatoes.

In a medium saucepan, bring all other ingredients to a boil. Let cool slightly. Pour over tomatoes and let cool to room temperature. Pour into jars and refrigerate overnight for best avor.

Food columnist, Natalie Schmitt Oxtail beef broth 3 pounds oxtail 1 large onion, chopped 3 carrots, chopped in large chunks (do not need to peel, just wash) 3 celery stalks, chopped in large chunks (leaves and bottom go in too) 3 cloves garlic 3 Tbsp. cider vinegar 2 Tbsp. tomato paste 2 Tbsp. our 1 Tbsp. butter Water Salt and pepper

Season oxtail with salt and pepper then brown on all sides, about 10 minutes. Browning pulls out the meat avor. Remove meat from pan and set aside. Add onion to pan to sauté until tender. Add garlic for one minute. Add vinegar to pull up any beef drippings on bottom of pan. Add butter and our to make a quick roux. Reduce heat to medium and cook for about three minutes. Add tomato paste and 3 cups water. Stir. Return oxtail to pan. Add carrot and celery chunks.

Add any seasonings (bay leaves, thyme, rosemary). Add more water to pan to ll half way. Put pressure lid and weight on pan. Turn heat up to high until weight starts to jiggle.

Turn heat down and cook until the smells make you hungry, about one hour or a little longer. Shut off heat and let cool on stove top till pressure lock releases. Strain off juices. Discard veggies. Pull meat off bones and add to strained broth.

Cool and put in gallon storage bags to store in freezer for later use.

1 tsp. vanilla pinch of kosher salt 2 cups chopped Twix 1 prepared graham cracker crust 2 Tbsp. Melted chocolate, for drizzling

In a large bowl using a hand mixer, beat cream cheese, sugar, and caramel until light and fluffy, 2 minutes. Gradually add heavy cream and beat until stiff peaks form, then fold in vanilla, salt and half the chopped Twix. Pour pie filling into prepared crust and smooth top. Refrigerate until firm, at least six hours and up to overnight. Drizzle with caramel and melted chocolate. Sprinkle all over with remaining chopped Twix, then drizzle with more caramel.

Crispy roasted parmesan potatoes 1.5 lb baby potatoes, halved (about 1.75 inches, 20 - 24 potatoes) 2 Tbsp. olive oil, plus more for drizzling

1/2 tsp. paprika 1/4 tsp. salt (I use table salt, leave out to lower sodium) 1/2 tsp. black pepper

Parmesan Mixture: 1/2 cup grated parmesan (the sandlike type) 1/2 tsp. garlic powder (or sub with onion powder) 1/2 tsp. dried oregano or thyme

Dipping Sauce (Optional): 3/4 cup sour cream, or sub with plain yogurt, or a combination of both 1/4 cup finely chopped green onions/ scallions, plus more for garnish (or chives)

Preheat oven to 400 F. Mix Parmesan mixture in a bowl. Drizzle oil in 9 x 13 inch glass baking dish. Tilt pan to spread all over the base. Use a spoon to scatter the parmesan mixture over the base. Spread as evenly as you can.

Once sprinkled, do not touch – don’t try to spread it. Place potatoes cut side down, pressing firmly. Optional: drizzle top of potatoes with a touch of oil or spray with oil, then sprinkle with salt. Bake potatoes for 35-40 minutes or until they are soft and the parmesan crust is deep golden. (You can check through the glass.) Rest for 5 minutes. Then, use an egg flip to cut between every four or so potatoes (i.e. cutting through the parmesan crust which bonds between each potato), then scoop up four or so potatoes and flip them upside down so the cheese side is up on a serving platter. Serve with dipping sauce, if using, and sprinkle over extra green onions if desired. Serve as a side dish or as nibbles.
