ROLLINGSTONE, Minn. – On Oct. 8, one incident changed the course of the Gibbs family.

That day Nate and Bridget Gibbs’ oldest daughter, Cora, was involved in a side-byside utility vehicle accident on their 150-cow dairy near Rollingstone, Minn. After a 14week stay in the hospital, the 15-year-old returned home Jan. 12 to be with her family, which along with her parents includes sisters, Jamie, 13, and Lindsey, 9.

However, the road ahead for the Gibbs family will be a long one with Cora’s continued recovery and need for future long-term in-home care.

They milk 1,000 cows on two farm sites, with one being near Goodhue, Minn. more cows followed by building a barn with calving facilities. “We just kept remodeling barns to make it work or building new if we could,” Ann said.

In 2005, the Bucks made a major change in the way they breed their cows. Since then, they have focused on crossbreeding, using a few

different breeds – Holstein, Montbelierde, Swedish Red and Brown Swiss. Over the years, they have also used a little bit of Fleckvieh and Ayrshire, among other breeds.

ConƟnued from BUCKS | Page 4 returned to the farm full-time in 2011 after a career in teaching.

DJ made his full-time return in 2013, after working several years at a local radio station and farming on the side. Always having an interest in the crop and machinery aspect of farming, DJ started a custom manure pumping and chopping enterprise called Buck Custom Services. The business has a consistent stream of work from April to December, pumping around 40 million gallons of manure and chopping 1,200 acres of corn for other farmers, along with all the eldwork for the Bucks’ farm. Although the custom business and dairy are two separate entities, they work uidly together with all employees who work for the family being versed in all aspects of the farm – whether onsite or in the eld doing custom work.

To accommodate two of their kids being on the farm full time, the Bucks bought a dairy of over 400 cows near Lonsdale, Minn.

“It was a way for us to expand without building,” Chris said.

On two farm sites, the Bucks now have a total of 1,000 cows.

Throughout all the changes on the dairy, the Bucks have always had family involved.

on their dairy and are happy to have an ever-growing family present. Their children and their families include: Chris and his wife, Christi, and their kids, Alyssa, Jack and Joe; Shannon and her husband, Chuck, and their children, Hudson, Zoe, Avery and Harper; Amanda and her husband, Matt, and their children, Cameron, Belle, Brooke, Lucas and Larson; Brian and his wife, Lindsey, and their children, Macy and Wyatt, and another due to arrive in March; DJ and his wife, Leah; and Taylor.

All their children did chores while also being involved in 4-H along with extra curricular activities at school.

Although taking time off could sometimes be a challenge for Dave and Ann because of their dairying career, they found ways to make every day of farm living fun. One way was to turn an open grass area, a portion of a hay eld and a small ditch into a baseball eld.

“It was our own ‘Field of Dreams,’” Ann said. “We all liked baseball and softball a lot.”

At night after chores or during a free afternoon, the Bucks would go to the eld and play a pick up game of ball. Now that the family has expanded, the grandkids enjoy the eld just as much.

A few other favorite memories on the farm include when Chris and DJ held their wedding receptions there and when the family hosted the Goodhue County breakfast on the farm this past summer.

Both DJ and Chris said their family’s farm has reached this point because of their parents.

“Them being progressive over the past 20 years is the reason we can hopefully keep going for a long

time,” DJ said. “They’ve been open to change and they do a good job of listening to us. They’re always open to discussion.”

Chris agreed.

“We’re fortunate we can be the next generation. There are a lot of people who don’t have that opportunity,” he said.

Overall, the Bucks are happy to spend their time working and playing on the farm together as a family.

Scherpings talk about benets of grazing Couple speaks at organic conference

ST. CLOUD, Minn. – Travis and Angela Scherping, of Freeport, have learned how to have a productive 62cow dairy herd by utilizing rotational grazing.

“The cows are happier, less stressed and they move more frequently in the heat of a hot summer day,” Travis said.

“They also produces better quality, organic milk for us.”

The Scherpings presented their life on the farm at the Minnesota Organic Conference Jan. 11 at the River’s Edge Convention Center in St. Cloud.

“We are here to talk about what we do on our farm, but it’s all about what works for you and what works for [your cows],” Angela said.

Travis is the third generation in his family to farm after taking over the farming operation in 2008. The farm became certied organic in 1999.

Over the past 10 years, Travis and Angela have experimented with various production styles before settling on their current operation. When their farm was conventional, the cows were only out for a couple hours per day to get exercise.

That was a way to push for prot, but the overall herd health declined.

The Scherping farm then went to

three milkings a day, which improved the herd health, but left the farm dependent on labor. When permanent paddocks were put in, the herd health improved even more while the cows were dropped down to being milked twice per day.

They’ve also changed their grazing tactics over time, too, moving from the permanent paddocks to intensive grazing.

“There are a lot of things to consider when thinking about intensive grazing,” Travis said. “It’s all about management, from each stage of the growing season to having exibility while keeping the health of the cattle and the land in mind.”

During the winter, cows are outside in the yard, but protected by windbreaks and straw packs. Only calves under 2 months old remain inside all day. The cows get silage after each milking, along with having free choice hay.

During the summertime, however, the cows are only in the barn for milking and have 24-hour access to the outdoors and all calves are outside at least during the daytime. The milking cows get three to ve pounds of a silage and haylage mix each day during the grazing season, as well as a mineral supplement.

“We try to have a crop of 70 percent alfalfa and 30 percent other legumes – with timothy, rye and clover in the mix,” Travis said.

All of the other feed comes from free choice hay and crops in the elds.

They rotate crops with two years of corn, one year of barley cover crop, alfalfa and legumes, two- and three-year harvest hay crop and a four- and veyear graze cycle.

“It takes a couple years for the process to cycle, so we are always cautious of what the grazing crops look like,” Travis said.

While the cows are out grazing, they have a 1,200-gallon water tank available, which is moved every 12 hours.

“It’s nice to have those big tanks available for the cows,” Travis said.

“One of those tanks will last 24 hours on a hot summer day. But, we switch them out every 12 hours.”

When the cows are out, the Scherpings use a fully-automated irrigation system, which keeps the crops growing and helps control the area where the cows graze.

“We have improvised it over the years, converting it to solar power as well as having the ability for the system to be fully automated with the option of programming it manually,” Travis said.

“It’s nice having the option of both.

When it’s automated, I just program it to how far I want it to move, but if the crops are too wet or too dry, I can program it manually for how I want it.

At the rst part of the season, it moves eight to 10 times in a day, but it has as little as two or three moves at the end part of the season.”

Having an intensive grazing operation includes accurate records. The Scherpings document what eld, what crop and what strips the cows were on in any given day, as well as if the cattle were off the eld for a particular reason or if the entire eld was grazed.

“Records are important for us as we move forward year to year,” Travis said.

The Scherping farm is located on 350 acres of land. This coming summer, the cows will be grazing on the furthest pasture, which is about 1.25 miles from the milking barn.

“It will probably take us 45 minutes to get the cows in from the pasture this summer,” Travis said.

As the warm weather approaches, the Scherpings plan to continue their operation in the same way they have in previous years.

“Rotational grazing in this manner has increased the herd health and the cows really enjoy going out to the pasture and having free reign of the area we’ve given them for the day,” Travis said. “We don’t have any reason to change anything because it’s working well for us. The cows are healthy, and they are happier and less stressed being out in the pasture grazing.”

Silva stresses mechanical tools, cover cropping for organic production

ST. CLOUD, Minn. – When it comes to organic weed management in a row cropping enterprise, diversity of cover crops as well as correct use of mechanical equipment is key to soil health and optimal crop production.

Dr. Erin Silva, PhD, an assistant professor at the University of Wisconsin-Madison and principle investigator for UW Organic and Sustainable Agriculture Research and Extension, spoke on her presentation, “Mechanical Tools for Ecological Weed Control,” during the Minnesota Organic Conference held Jan. 1112 in St. Cloud, Minn., at the St. Cloud River’s Edge Conference Center.

“With organic, it is not about the input, but rather it is about the system and optimizing the different pieces of the entire system,” Dr. Erin Silva, PhD Silva said. “If you are going UW-Madison in to organic and are only focusing on one element, it is going to be a lot more challenging for you.”

Successful weed management can only be obtained by using a variety of control methods.

Of those, Silva said sustaining a long, creative and diverse rotation for cover cropping is key.

“You have to be innovative and a good marketer to make these (rotations) work,” she said. “Diverse rotations allow you to do weed management at different times of the season and break up weed cycles.”

Multiple-year rotations also allow a producer to break the disease and pest cycles, providing for healthier, more competitive crops. For rotation schedules, looking seven years ahead is not out of the question.

“Farmers who have long, diverse rotations are more successful,” Silva said. “Try to get yearround vegetation, and not necessarily just cover crops, even a winter killed crop offers benets for soil health.”

Cover crops also mitigate soil compaction by increasing crop vigor and curtaining small seeded weeds. Silva also noted the importance of never working wet soil.

“Tilth matters,” she said. “Tilth matters so much.”

There are ways producers can optimize crop growth.

“In organic, you need to have the crop be taller than the weed,” Silva said. “If the weed gets taller than your crop, there’s not a heck of a lot we can do.”

Pay attention to the variety of plant you choose and plant one with a strong early vigor, bushy type structure, one with leaness and a fast canopy closure. Delay eld work until the soil is warm, bump up the plant population and consider experimenting with starter fertilizer or biologicals.

Silva stressed the importance of delaying spring tillage until the soil temperatures are 55 to 60 degrees F. Moldboard plows can play a key role in helping prepare a weed-free seed bed.

“We always want to concentrate on feeding that soil biology, especially in the rst six inches or so,” Silva said. “By ipping the soil, your inverting the weed seeds, and you’re burying them. There’s a real art to the moldboard plow.”

When preparing the seed bed, it is best to till the soil early. Doing so, tills under weeds and

brings up any new weed seeds, encouraging an early weed ush.

“If we can get as many of those weeds to germinate at once, the rest kind of go dormant,” Silva said. “If you do that early management you can knock out some of those weeds … and you may not see so much of it later.”

Then, a producer should delay cropping until the main ush of weeds are eliminated by using a shallow tillage, 1/4- to 1/2-inch, and plant the crop a few days later.

“Again, it’s all about having your crop be taller than your weeds,” Silva said. “You need a seed bed that can allow for an even plant.”

In order to have a successful planting, proper attention needs to be given to the planter.

“If we’re trying to cultivate and trying to get everything lined up and planted nice and close, this is a good time of year to service your planter and make sure everything is correct,” Silva said.

Pre-emerge tillage needs to occur two to three days after planting and before the crop has emerged while the weeds are still in the white root stage.

“You need to get out there soon,” Silva said.

“Don’t wait until you see weeds in the eld because then your weeds will be taller than your crop.”

The pre-emerge tillage should only penetrate 1 to 1.5 inches, paying close attention to not disrupt your planted crops. Tillage should ideally be conducted during a hot, dry day to dry out the top inch of soil to kill many of the small weeds.

Silva spoke on the pros and cons of tine weeders, noting they work for some and not for others, depending on the soil quality and make up.

Tine weeders, however, are useful for breaking a soil crust when following a rotary hoe.

“Tine weeders have a different action than a rotary hoe,” Silva said. “It not only scrapes the soil, but it jiggles to break up the soil. Take the time to adjust your equipment, see how it is working on your eld, and make sure you have it correct.”

When conducting post-emerge tillage, correct speed, proper adjustment, good maintenance, operator skill and good weather all make a vast difference in the weed control success.

cultivate on sunny, windy, hot afternoons because weeds will be more apt to die. The weed root can be severed from the shoot, killing the weed, and can also be buried.

For corn, the cultivator should be set at 8-10 inches, while soybeans should be set for the rst trifoliate. Two passes should be made; the rst is the most important and driving in two directions can be benecial.

The second Global Dairy Trade (GDT) auction of 2018 added to the encouragement of the ďƒžrst, showing a 4.9 percent gain in the weighted average of all products offered. That followed the 2.2 percent gain on Jan. 2. The quantity sold however slipped to 51.4 million pounds, lowest since June 2017.

Butter led the gains, up 8.8 percent, following a 0.6 percent advance Jan. 2. Skim milk powder was next, up 6.5 percent after rising 1.6 percent last time. Cheddar cheese was up 5.2 percent, after falling 2.1 percent.

Whole milk powder followed, up 5.1 percent, after it was up 4.2 percent, and anhydrous milkfat was up 2.2 percent, after slipping 0.2 percent last time.

FC Stone equated the GDT 80 percent butterfat butter price to $2.1669 per pound U.S. CME butter closed Friday at $2.12. GDT Cheddar cheese equated to $1.5814 per pound U.S. and compares to Friday’s CME blocks at $1.5650. GDT skim milk powder averaged 82.46 cents per pound and whole milk powder averaged $1.3651. CME Grade A nonfat dry milk price closed Friday at 70 3/4-cents per pound. FC Stone adds: “The ďƒžrming price action followed a Fonterra Jan. 16 news release that said December milk receipts fell by 5.5 percent.â€?

Meanwhile, the Agriculture Department lowered its 2017 and 2018 milk production forecasts in its latest World Agricultural Supply and Demand Estimates report. The 2017 estimate was reduced, based on the most recent data and the 2018 projection was reduced due to slower anticipated growth in the dairy cow herd combined with continued slow growth in milk per cow.

2017 production and marketings were projected at 215.5 and 214.5 billion pounds respectively, down 200 million pounds from last month. If realized, 2017 production would still be up 3.1 billion pounds or 1.5 percent from 2016.

2018 production and marketings were projected at 218.8 and 217.8 billion pounds respectively, down 500 million pounds from last month. If realized, 2018 production would be up 3.3 billion pounds or just 1.5 percent from 2017.

The 2018 dairy product price projections were reduced due to slowing domestic demand and global competition. The 2018 Class III and Class IV milk price forecasts were reduced, based on the lower product prices.

The 2017 Class III milk price averaged $16.17 per cwt., up from $14.87 in 2016 and $15.80 in 2015.

The 2018 average is projected to range $14.25-$15.05, which is $1.05 per cwt. below what was expected a month ago.

The 2017 Class IV price averaged $15.16, up from $13.77 in 2016 and $14.35 in 2015. The 2018 average is projected at $13.55-$14.45, down 35 cents per cwt. from last month’s estimate.

Fat basis imports for 2017 were reduced on slower butter imports, but exports were raised on solid global demand for U.S. butter and other dairy products. Skimsolids basis imports were reduced modestly while exports were raised on strong demand for skim milk powder and several other products.

The 2018 fat basis import forecast was reduced on slowing demand for butter products, while the export forecast was raised on expected robust foreign demand for U.S. fat-containing products. On a skim-solids basis, the 2018 import forecast was reduced on weak demand for U.S. milk protein concentrates. The 2018 skim-solids basis export forecast was raised reďƒ&#x;ecting stronger demand for a number of products.

Looking at the crop side of the report, the latest Margin Watch (MW) from Chicago-based Commodity & Ingredient Hedging LLC., reports that “USDA made minimal changes to their corn and soybean balance sheets, with slight increases in ending stocks noted for both crops. Corn production increased 26 million bushels from the December estimate as lower harvested acreage was more than offset by a higher yield, now projected at a record 176.6 bushels per acre. Lower projected feed and residual usage by 25 million bushels was partially offset by a 10-million-bushel increase in food, seed, and industrial demand. Soybean ending stocks increased as lower production was more than offset by a reduced export forecast,â€? according to the MW. The MW also pointed out that “Dairy margins were mixed over the ďƒžrst half of January, weakening in nearby marketing periods due to lower milk prices, while holding steady in deferred slots through the second half of 2018. Margins remain negative and well below average from a historical perspective in both First and Second Quarter,â€? the MW states, “while above breakeven but still below average in Third and Fourth Quarters.â€? The MW warned that “Milk prices continue to struggle from the large overhang of dairy product stocks in the global market.â€?

Penn State’s January Dairy Outlook echoed the current situation in the dairy economy but offered some advice. “The only way to face the year with optimism is to be sure dairy producers really understand their cost of production.� They point out that many dairy producers do not know their cost of production per cwt. and have done very little to benchmark costs to industry recommendations.�

“Penn State Extension, the Center for Dairy Excellence, and many lenders are skilled in helping producers determine their cost of production,â€? the Outlook states. “After a producer knows their numbers, then extension educators, private consultants, and dairy proďƒžt teams can work with producers to control costs to meet cost of production goals and examine opportunities to improve income. This is the only way to have optimism for the future,â€? the Outlook concludes.

Even as the road to forming a Federal milk market order in California is progressing, the bleak outlook has prompted Western United Dairymen (WUD) and California Dairy Campaign to petition the California Department of Food and Agriculture (CDFA) for an emergency hearing to consider increases to Class 1, 2, 3, 4a and 4b milk prices for 12 months.

The requested increase would add approximately 35 cents per cwt. to the overbase price, according to a WUD press release which argued; “California dairy families have suffered severe economic hardship in the past three years. Many have gone out of business or acquired massive debt on top of eroded equity. The signiďƒžcant negative margins witnessed every quarter since January 2015 have placed many producers in a dire ďƒžnancial situation. 2017 displayed a modest recovery in the markets but the improvements were short lived and not signiďƒžcant enough to allow for positive margins.

According to CDFA’s cost of production data, the smallest loss recorded these past three years was 23 cents per cwt. of milk produced during the ďƒžrst quarter of 2017.â€?

Cheese and powder prices strengthened in the Martin Luther King Day holiday shortened week, buoyed in part by the GDT. The Cheddar blocks closed that Friday at $1.5650 per pound, up 11 cents on the week but 13 1/4-cents below a year ago. The barrels ďƒžnished at $1.3450, up 12 3/4-cents on the week, 19 cents below a year ago, but an unsustainable 22 cents below the blocks. Only two cars of block traded hands on the week at the CME and 45 of barrel.

Cheese production is mixed in the Central region, according to Dairy Market News, and some plants reduced output to manage growing supplies. Cheese sales were also mixed and Midwestern barrel contacts were “fretful, as prices dropped and buyers waited out continuing price slips or are simply hesitant to take on extra at this time.� Block sales are generally solid and beating some expectations but pizza cheese makers are concerned regarding inclement winter weather affecting the Northeast, where Super Bowl retail sales are typically strong for many Midwestern mozzarella and provolone manufacturers. Milk prices have tightened again. As many cheesemakers are opting out of the spot milk market, there were reports that milk offers have begun to wane as well. Reported spot prices ranged $3 under to 75 cents over Class III, says DMN. Western cheese output is active due to plentiful milk supplies. Disruptions at several processing facilities released more milk into the market. Manufacturers report the pizza season has generated solid sales for mozzarella, but retail demand is still tepid for most cheese types. Cheese purveyors would like to see much stronger demand to help reduce heavy inventories but recent lower prices are helping interest in the export market.

Spot butter closed at $2.12 per pound, 4 cents lower on the week and 13 cents below a year ago, with 10 cars trading places.

DMN says cream remains readily available throughout the Central region and butter sales are generally on par with seasonal expectations. Butter markets are mixed. Some participants expect butter to remain above the $2.00 threshold, while others are starting to question its steadfastness, says DMN. Western butter sales are quiet, but retailers continue to restock their shelves. A few processors report being surprised by how soon retailer re-orders came back postholidays. Although current butter supplies are ample, abundant cream at lower prices is a big contributing factor to increased butter production but “Butter sales will have to increase substantially for a large reduction in inventory.”

Cash Grade A nonfat dry milk climbed to 71 1/2-cents per pound Thursday, highest price since Nov. 20, 2017, but it closed Friday at 70 3/4-cents per pound, up 4 cents on the week but 29 3/4-cents below a year ago, with a whopping 33 cars exchanging hands on the week at the CME. The European Commission announced that it will begin to limit the volume of skim milk powder (SMP) it purchases in its intervention program. There is plenty in storage, plus U.S. stocks are high, which is keeping pressure on prices.

FC Stone reported that provisional information shows that the EU Commission sold about 1,864 tons of SMP out of Intervention in the tender that closed Jan. 16. It is reported that the lowest price accepted was 1,190 euros per ton. The total volume available was 101,020 tons. The last time the Commission sold any volume out of intervention was the tender that closed Nov. 21.

The February Federal order Class I base milk price was announced by USDA at $14.25 per cwt., down $1.19 from January, $2.48 below February 2017, and the lowest Class I since July 2016. It equates to $1.23 per gallon, down from $1.33 in January and compares to $1.44 a year ago.

Fluid sales continue to lag year ago numbers.

USDA’s latest data shows November packaged uid sales at 4.1 billion pounds, down 1.1 percent from November 2016.

Conventional product sales totaled 3.9 billion pounds, down 1.2 percent from a year ago; organic products, at 222 million pounds, were off 0.1 percent.

Organic represented about 5.4 percent of total sales for the month.

Whole milk sales totaled 1.27 billion pounds, up 3.2 percent from a year ago, up 2.5 percent year to date, and made up 30.6 percent of total uid sales in the month. Skim milk sales, at 335 million pounds, were down 10.2 percent from a year ago and down 11.9 percent, year to date.

Total packaged uid milk sales in the nine-month period totaled 43.9 billion pounds, down 2 percent from the same period a year ago.

Year-to-date sales of conventional products, at 41.6 billion pounds, were down 2.1 percent; organic products, at 2.4 billion pounds, were up 0.2 percent.

Organic represented about 5.4 percent of total uid milk sales so far in 2017.

On a brighter note; the U.S. Dairy Export Council (USDEC) reported that November U.S. dairy exports were the highest in more than a year, yet 2018 Class

III milk futures prices portend very weak prices ahead.

Matt Gould, analyst and editor of the Dairy and Food Market Analyst newsletter, said in the Jan. 15 Dairy Radio now broadcast that, leading up to November, U.S. dairy product prices were below those in Europe and New Zealand so the U.S. gained market share. He said that sales were particularly strong to Mexico in milk powders and cheese and we exported a lot of butter to the Middle East.

“That dynamic has shifted, which is part of the reason why prices are looking so glum in this new year,” Gould explained. “That was our big surge in exports that lots of people had been waiting for, which was supposed to carry prices higher. Now we’re going head to head with the rest of the world where U.S. prices are no longer at a big discount to the rest of the world so, what looked like opportunity in November certainly doesn’t look nearly as opportunistic going forward into 2018.”

When asked about the U.S. dropping out of the NAFTA and how signicant that would be for dairy, Gould pointed out that Mexico is our No. 1 customer, but added “Pulling the plug on NAFTA is a complicated process.” He said there would be a six month timeline

if President Trump opts out, and in that timeline, there would be a fair bit of negotiating that can be done before the whole agreement is ripped up. It’s certainly a point of high contention and important to markets,” he concluded, “but it still has a lot of runway left to play out.”

And, speaking of exports; Cooperatives Working Together (CWT) accepted its rst export assistance requests of 2018, 21, to be exact from Dairy Farmers of America, Northwest Dairy Association (Darigold), Tillamook County Creamery Association and United Dairymen of Arizona to sell 2.652 million pounds of Cheddar and Monterey Jack cheese and 688,945 pounds of butter to customers in Asia, the Middle East, North Africa and Oceania. The product has been contracted for delivery through April.

In politics; the ght between the Administration and Congressional Democrats over DACA and border security threatened a so-called government “shut down” as I write. We’re told that “essential services” will continue but next week’s December Milk Production and Cold Storage reports may not fall into that category and may therefore be delayed.

On December 22, 2017, Congress passed a new tax bill ofÀcially known as the Tax Cuts and Jobs Act of 2017. While the country waits for the Internal Revenue Service (IRS) to publish detailed regulatory guidance, one provision is generating a great deal of discussion in the agricultural community.

Prior to the latest tax overhaul, Section 199A of the Internal Revenue Code existed, but December’s modiÀcations to Section 199A seem to provide a tax break to non-corporate business tax Àlers similar to those provided to corporations. This includes, among others, those Àling a federal tax return with a Schedule F (Profit and Loss from Farming). While well meaning, the new language may have created unintended consequences, which are roiling those in agriculture.Under the new tax bill, a farm operation Àling a Schedule F and delivering milk to a non-cooperative processor with sales of $100,000 and business expenses of $60,000 in 2018 would have net farm taxable income of $40,000. Section 199A would allow a deduction of up to 20% of this net income, or $8,000. There are some restrictions; for single tax Àlers with taxable household income above $157,500 and married tax Àlers above $315,000, this deduction is phased out. However, if that same

farm operation were a cooperative member with identical sales and expenses in 2018, the Section 199A deduction could be as high as 20% of gross sales, or $20,000. That potential $12,000 difference in allowable deductions could provide a procurement advantage to cooperatives over other processors. And unlike a producer selling to a non-cooperative entity, a co-op member is not subject to the income limitation described above. The IRS has yet to issue detailed regulatory guidance regarding Section 199A deductions, and members of Congress have already indicated it was not their intention to create different tax treatment for farm sales based on whether those sales were to a co-op or non-cooperative entity.

Thus, Congress could modify Section 199A before 2018 taxes are due. Before making business changes, it would be appropriate to speak with a qualiÀed tax professional.

Jan. 24 - Plans to Eliminate Higher Of Move Forward

After several rounds of negotiations, the International Dairy Foods Association (IDFA) and the National Milk Producers Federation (NMPF) have agreed to use the next farm bill as a vehicle to fundamentally change the way beverage milk is priced. Historically, using the “higher-of” in Áuid milk pricing has made it difÀcult for those in the beverage milk supply chain to manage risk due to the uncertainty of which class price would drive the Class I value. The proposal would eliminate the higher-of and instead change the beverage

milk price to the average of the Class III and IV plus 74¢ per hundredweight. This proposal would provide an opportunity for those in the Áuid milk supply chain—including farmers, cooperatives, bottling plants, retailers, and restaurants—to manage beverage milk price risk up to 24 months in advance using the CME Group futures and options contracts. At IDFA’s 2018 Dairy Forum, American Farm Bureau Federation’s John Newton presented a preliminary analysis indicating that had the proposal been in place from January 2000 to September 2017, an additional $51 million would have been contributed to Federal Milk Marketing Order (FMMO) pools. The volume of milk in the FMMO pools during this time was 2.2 trillion pounds, so the impact of this proposal would have increased producers’ regulated minimum prices by an average of 0.2¢ per hundredweight (cwt). On an orderby-order basis, the impact on the regulated minimum milk price is greater in orders with higher Class I utilization. For example, in all Southeast FMMOs and Arizona, the uniform price would have been more than $0.004/lb. higher had this proposal been in place. While the current proposal is designed to be included in the next farm bill, should negotiations drag out, this proposal could go through the FMMO hearing process given the unanimous support by processors and dairy cooperatives. In either event, that these dairy trade organizations can proactively work together demonstrates how the American dairy industry can collaboratively address challenges and shape the future.

Brockton Farm operates amid nature’s beauty Tasmania dairy prots from climate, abundant feed

MONTANA, Tasmania, Australia – On an island best known for its expansive national parks and wilderness, rich history and agricultural diversity, Brockton Farm is reaping the benets of the land’s temperate climate and abundant rainfall.

“The unique aspect of dairying in Australia is our ability to feed cows all year round on pasture,” Nigel Brock said.

Brock, a third-generation dairyman, manages Brockton Farm with his wife, Rachael,

and his family – son, Mathew, and step sons, Tyson, Reece and Anson. The family also manages a small sheep operation.

The farm is situated in Montana, a large valley in northern Tasmania, which is a small island state south of Australia’s mainland.

Accompanying the family are ve full-time staff members who help manage the 830-cow dairy and nearly 2,000 acres of land – of which 1,600 is arable acreage used for silage, hay and fodder (cover) crops.

“The only feed we purchase is grain to supplement the diet when homegrown feeds are short in supply, although we

The Holstein-Friesian and Jersey crossbred milking herd is divided in two groups of 415 cows based on age. Each day, the groups are fetched from pasture to be milked in the 50unit DeLaval rotary parlor.

Two people take care of the 4-hour morning milking while a third collects the second herd and monitors the pasture land.

Breakfast is taken after the morning milking and feeding has been completed. A 4-hour afternoon milking is conducted in the same manner.

“Family time is around meal times,” Brock said.

Other daily chores include machinery maintenance, fodder conservation, feeding and watering the dairy’s youngstock, irrigation, animal husbandry, calf rearing, feed allocation, supplementary feed ordering and calibration, and safety checks.

“[There are] a multitude of other tasks involved with running a large property,” Brock said. … “In our spare time, we often have sheep work to deal with, which often reminds us why we went down the path of dairy cows.”

Warm tropical air is brought from Australia’s mainland, providing Brockton Farm with a mild climate and ample rain in the shadow of the Great Western Tiers, an extensive mountain range.

“The temperate climate allows us to have cows outdoors all year, which in turn creates a very low cost of production model,” Brock said.

At 3,200 feet above sea level, the farm receives an average annual rainfall of 47 inches – a considerably higher amount than that of eastern Tasmania.

“The only unfortunate part in all this is that most of the rain falls over the three months of winter (June, July and August),” Brock said. “The summer months of December through March often receive very little rainfall and as such we need to use irrigation throughout these months.”

Brock said many farms in the region construct their own dams to collect winter rains or water is purchased from large irrigation schemes owned and operated by both farmers and the government.

“Large irrigation schemes developed over the last 10 years has allowed huge growth in the agricultural sector and has brought with it a new entrepreneurial group of young farmers and even more diversity,” Brock said.

Traditional crops found in the region are green peas, wheat, barley, oats, potatoes, opium poppies, canola and hemp. Fodder crops for stock feed are common with turnips and maize being the two most popular. High value crops such as trufes, grapes for wine and berry fruits are emerging and eucalyptus plantations were also an important crop.

Besides Tasmania’s family farms, the island is home to the world’s rst fully robotic rotary dairy, Brock said.

The industry spans from the old to the new, with multi-million dollar hi-tech dairies becoming commonplace.

There are 30-40 other dairies in the Montana area, with herds ranging from 50 to 1,000. All of the dairies rely on pasture as the chief feed source. The average herd size in all of Australia is 300 cows, Brock said.

Brockton Farm’s focuses solely on commercial milk production. Their milk is sold to a large milk processor, Fonterra, and the bulk of it is dried and shipped globally as a commodity milk powder. Some of the milk is used to

The Brock family’s dairy herd is housed on pasture year-round, and pasture is the herd’s main feed source. make butter and cheese for both the domestic and export market. And, a small amount of their milk is purchased by other processors within the state to provide liquid milk.

In Tasmania, producers are paid for the milk solids (MS) component of their milk, not the volume like that of the United States. Brock said his cows produce 1 kg (2.20 lbs.) of milk solids for every 1 kg of bodyweight. The herd produces 8,000 L of milk annually (18,176 pounds).

The current milk price is $5.40 per kg of milk solids which equates to 42 cents per L MS, Brock said.

“Our dairy operation is quite capable of supporting our way of life and also developing the farm further,” Brock said. “Our cost of production is around 31 cents per L of milk.”

Brock said while herd sizes are expanding, there is an increasing lack of staff for growing farms.

“Unfortunately, to operate a dairy requires some long hours and often an upfront capital burden, and I believe that these two things alone deter many young people from entering the industry,” Brock said. … “Our smart young dairy folk go off to university and get degrees and eventually return to the industry as service providers instead of farmers. This has seen a massive aging of our dairy farmer population, and in turn, we are now seeing many foreign owned or investment groups buying up farms.”

Brock also voiced his concern for

animal welfare issues, both good and bad, coming to light with the uptick in social media use across the nation.

“We as dairy farmers have to be professional in our approach to farming and how we treat our animals,” he said.

Biosecurity concerns have also increased.

“Issues such as Mycoplasma, Salmonella and Johne’s Disease are on the increase due to the shifting nature of dairy cattle across regions and the country,” Brock said.

Concerns across the region’s dairy industry aren’t deterring Brock from looking to the future. With plans to increase the farm’s irrigation potential, Brock aims to use pasture land more during the summer months

instead of feeding supplements to their youngstock.

“Pasture is our number one cheapest feed source and protability is about lowering cost of production,” Brock said. “We aim to be both economically and environmentally sustainable so as our future farmers can enjoy the experience of dairy.”

With towering mountains in the distance and a lush valley of pasture land rolling ahead of him, there is no place Brock would rather be.

“I get to experience some of the best displays of Mother Nature at her best,” he said. “The most spectacular sunrises and sunsets, the white snowcapped mountains, and the warm sun on a frosty morning are the little things in life that make it all worthwhile.”

Consistency is key to avoid HBS Schefers talks about gut health during seminar

– Although gut problems were the slated topics for the presentation Dr. Jeremy Schefers planned, he said he wanted to focus on one area.

“It’s a complicated topic and it’s an effort to not directly talk about HBS (hemorrhagic bowel syndrome),” said Schefers, who works at the University of Minnesota Veterinary Diagnostic Lab. “A lot of veterinarians groan when they hear HBS because we don’t know a lot about it.”

Schefers talked about HBS in his seminar, “Dairy Cows and their Gut Problems,” on Jan. 19 during the FormA-Feed Professional Dairy Conference in Red Wing, Minn.

When a cow experiences HBS, her gut lls with blood and the blood clots, plugging the gut and the passage to the small intestine.

“It’s the plugged gut that causes the cow to die,” Schefers said.

It is hard to reverse HBS,

which means a large number of cows that have it die, Schefers said.

But the dairy community still doesn’t know much about the syndrome. What they do know is it starts with how much feed cows eat.

“It appears to be getting more difcult to send an increased amount of dry matter through the small intestine of the modern dairy cow,” Schefers said. “If you look at the pile of feed we give them and the size of the small intestine, it surprises me they can get that through them every day.”

On average, dairy cows eat 4 percent of their body weight, which measures to about 60 pounds of dry matter each day. That’s higher than many other animal in comparison, Schefers said.

Beef cows eat 2.5 percent of their body weight while calves eat 3 percent.

That dry matter must pass through the cow’s 120-foot long small intestine that is the diameter of a golf ball.

“Every day, that big pile of feed has to go through that small space. I’m surprised it

doesn’t get plugged every day, so I’m not terribly surprised they plug occasionally,” Schefers said.

Although HBS has been reported since 1966, data shows that HBS cases have grown signicantly since the mid 1990s. It also appears to be more prevalent in higher producing herds with more dry matter intake, Schefers said.

One contributing factor might be the inability for the rumen to keep up with the amount of feed intake. The rumen, the largest stomach compartment, is the reducer, where proteins and bers are broken down and starch is used to fuel the rst stomach compartment. Cud chewing also helps reduce the particle size in order to pass it along to get through the small intestine.

“The small intestine can’t handle non-reduced things, like starch,” Schefers said.

If there is too much feed and the rumen can’t keep up with the feed intake, the cow will pass along larger particles to the small intestine. The small intestine cannot handle large particles, causing the gut to plug, resulting in HBS. Personally, Schefers sees most HBS cases in March.

While mold, mycotoxins, clostridium and other bacteria along with poor management practices, could be contributing factors to HBS, Schefers said the excessive ash of dirt, soil, gravel, sand and rocks that cows eat is another big reason.

“A handful of dirt is acceptable. A cow can handle that. A cow cannot handle a pail full of dirt. That would be

a problem,” he said.

One example of a way that much ash gets into the feed is using a skidloader to get feed out of a silage bag that is on top of class ve gravel. The skidloader will pick up the gravel along with the feed.

This excess ash might also cause teeth damage, which affects cud chewing and the physical break down of feed.

HBS cows will only live if the obstruction is corrected.

“You need to cut out the affected intestine. … It’s like trying to sew together wet toilet paper,” Schefers said.

So, what should farmers do if they come across a cow with HBS? Move her to green grass or a pasture.

Schefers said the grass along with the cow moving, rolling and kicking up her heels acts as a laxative to move the blockage through the digestive system.

If it’s winter or pasture is not an option, Schefers suggests oral uids, including mineral oil and psyllium, which is a laxative. He said do not IV glucose because she already has a high amount in her blood stream due to shock. Instead, try hypertonic saline.

If the cow dies, Schefers suggested to post the cow to document the problem, and look at sand and gravel accumulation.

Schefers mentioned a few ways to try to prevent HBS. The rst is to decrease ash content if possible.

“Top soil is more forgiving, but not sand and gravel,” Schefers said.

To help with this issue, Schefers said to clean the area close to the feed alley.

“You would be amazed at what you nd in the middle of the barn.

Before pushing up feed, push the edge of the feed pile and dirt from tires to the center of the barn for disposal,” he said. “It’s not a lot of money, it’s just a few more minutes of the day.”

Another way to prevent HBS is to increase weigh back refusals.

“Let cows sort undesirable feed and get rid of it,” he said.

And, make feed available after milking because cows are hungry.

“If nothing is there, she’ll eat what she can nd – sand, recycled manure solids, whatever,” Schefers said.

Other ideas include increasing NDF from forage to stabilize the rumen and to act as a net so large particles do not plug the intestine; increasing soluable protein (RDP) so manure is looser and moves more quickly, and considering a direct-fed microbial (DFM) when switching forages.

When it comes down to it, Schefers said consistency is key to being able to continue feeding the dairy cow a large amount of feed without inducing HBS.

Managing reduced-lignin forages

Combs, Shaver discuss reduced lignin alfalfa, BMR corn in PDPW webinar

Having the correct levels of neutral detergent ber (NDF) and ber digestibility from forages in a dairy ration, whether they be alfalfa or corn silage, are critical to maximizing a dairy cow’s production potential.

“A 20-unit change in ber digestibility can swing a cow’s milk production eight to 10 pounds in either direction,” said Dave Combs of the University of Wisconsin. “A 1999 study from Michigan State showed that for every 1 percent change in NDF, digestibility was correlated with a 0.4-pound increase in dry matter intake (DMI) and a half-pound increase in 4 percent energy-corrected milk yield.”

One of the hottest new trends in dairy forage genetics shows plant breeders selecting – or in one case, genetically modifying – alfalfa and silage corn hybrids that naturally produce less lignin. Combs, with co-presenter and UW colleague Randy Shaver, presented a webinar,

“Lignin provides strength to the plant, a lot like rebar in concrete. You

can’t eliminate it,” said Combs. “It also allows water to transport through the plant vacuoles and sequesters atmospheric carbon into vegetation.”

While Combs was quick to explain that lignin isn’t a bad thing in forages, too much of it can be. Lignin builds up in the cell wall of the alfalfa plant as it becomes more mature, crosslinks with hemicellulose, a sugar polymer, and drives down ber digestibility as ber content increases.

“Digestibility is the bigger concern, but plant breeders are looking at lignin as a marker,” Combs said. “As the plant matures, quantity increases while quality decreases.”

Reduced lignin alfalfa matures more slowly than conventional lines of alfalfa, and in turn does not lose feed quality as quickly. Because the plant does not mature as fast, the potential is there for delayed cutting and larger windows to take hay off, Combs said.

“It appears that they’re increasing ber digestibility longer, so there is potential to harvest less frequently while capturing more quality. We can gain up to eight days in delayed cutting and still maintain quality,” Combs said. “We’re trying to nd that sweet spot with both yield and quality.”

Combs also referred to a 2016 study tracking three hybrids of reduced lignin alfalfa in six states, one of which was a genetically modied plant where breeders targeted lignin synthesis and effectively blocked that gene. The other two hybrids were a high-quality traditional variety and a high-yield traditional variety, respectively.

“We’ve got more data coming soon,” Combs said. “The transgenic hybrid had the lowest yield, but the best ber digestibility of the three hybrids.”

Switching gears to brown-midrib (BMR) corn, Combs said the lowlignin technology for such corn varieties are far from new and have been in existence since the 1980s.

Reduced lignin forages, such as alfalfa bred to contain less of the substance, and brown midrib silage corn are gaining interest as dairy farmers look to improve feed quality. Lignin, while essenƟal to plant strength and water transport, crosslinks with sugar polymers in the cell wall as the plant matures, thus driving ber content up and digesƟble ber content down.

“The GMO-reduced lignin alfalfa follows the same train of thought as BMR corn,” Combs said.

BMR is a natural mutant in lignin formation, with subsequent improvement in ber digestibility, and in a 2013 eld trial, digestibility was shown to be better with BMR corn than high-ber digestibility (HFD) and leafy hybrids.

“In that study, DMI and milk yield were greater with BMR and HFD corn than leafy and conventional silage corns,” Combs said. “BMR had the highest milk yield with 84.9 pounds per cow compared to 83.8 with HFD, 82.3 for leafy, and 81.8 pounds per cow with conventional. Milk components were relatively unaffected by high amounts of BMR, as well.”

Combs also added that in a 2016 trial, BMR corn was actually bested in the ber digestibility and DMI departments by treated corn silage that was processed with an inoculant during the harvesting process.

“The treated silage had the highest milk yield. There was no change in fat composition, but there was potential for protein reduction,” Combs said.

Pertaining to the two forages being fed in conjunction with one another, Shaver said it will take at least three years for farms to convert to both reduced lignin alfalfa and BMR corn.

“There is currently no research on feeding reduced lignin alfalfa with BMR,” Shaver said.

While reduced lignin forages may be the new kid on the block and gaining traction, Combs cautioned that environment and growing conditions are everything, as well as harvesting and storage of said forages to optimize quality.

From harvesting at the appropriate maturity and moisture levels, chopping at the proper particle size, packing and covering to squeeze out all oxygen during the ensiling process, and controlling shrink and contamination during feeding, there are many more moving parts in making dairy cattle forages than genetics.

“Packing and covering are absolutely critical,” Combs said.

“More than just plant genetics affect ber digestibility, and environment has the single largest impact.”

Making the truth about food relatable Center for Food Integrity study shows how to affect consumer opinion

MADISON, Wis. – Connecting with consumers has become a buzzword in agriculture. But what does it really mean and how do we do so? How can we relate our message effectively when there is so much misinformation swirling about? How can we make the public believe what we have to say?

At the PDPW Food and Policy Summit held Dec. 6 in Madison, Wis., Charlie Arnot, CEO of the Center for Food Integrity (CFI) posed those questions and shared some insights on how we can use certain consumer segments to help get our message across.

What makes food information credible?

“People’s assessment of what makes food information credible or not is shaped by their relationship to the truth,” Arnot said. “You might by asking yourself, what do you mean?

There is only one truth. If only that were the case. Each of us has a slightly different relationship to the truth. You think about truth differently. That doesn’t mean that my truth is any less relevant to me than your truth is to you.

We might look at it differently.”

The CFI conducted research using digital ethnography. Thousands of

consumers were observed using 80,000 different data points on many different social media channels. Their behaviors and beliefs, values, fears and unspoken motivations about food information were tracked and identied.

Using this information, insight has been gained about how and where to engage the right audiences to earn trust when relaying information about food production in what they call the “Truth Spectrum,” which is based on beliefs and is not to be confused with the political spectrum.

The far left of the truth spectrum is the Scientic person, who looks at the complexity of matters and searches for answers grounded in science.

“On the left-hand side of the truth spectrum are people who understand truth as objective, a knowable fact that can be observed through the scientic method. That tends to be a lot of people in agriculture,” Arnot said. “Science is the currency of credibility in food and agriculture. We rely on science.”

To the right of Scientic is the Philosopher who is concerned with ethical rationality as well as the facts.

They want to look at the rational arguments, looking at facts through an ethical lens. In the center of the truth spectrum is the Follower, who is often overwhelmed by the amount of information and seeks guidance from what they perceive as a trusted

Sparrgroves happy to continue dairy tradition Fifth generation waiting in the wings

CASTALIA, Iowa – They can enjoy milk and fresh-baked cookies on a January morning in the middle of the week. That’s part of why John and Peggy Sparrgrove, Castalia, Iowa, appreciate having their own dairy farm.

Besides liking to be their own bosses and set their own schedules, the Sparrgroves enjoy other aspects of farm life.

“I grew up on a dairy farm and I loved it,” Peggy said. “I became Winnishiek County Dairy Princess, and I really loved that, too.”

John also grew up in a dairy farming family.

“I like being with the cows and the responsibility of taking care of them,” John said.

Peggy and John are the third generation of Sparrgroves to milk cows.

Their son, Ryan, and his wife, Brianne, are the fourth generation. If one of their trio of children decides to become involved in the Fayette County farm, that would mark the fth generation.

Dillon, 13, the oldest of Ryan and Brianne’s youngsters, started helping milk in the double-9 parabone parlor.

Blake, 10, and Chloe, 6, will have to wait a few years before they begin milking.

John and Peggy have three children besides Ryan. Amanda is a registered nurse. Her daughter, Taylor, joins her cousins in showing cattle and participating in 4-H. Joshua teaches high school science and is the drama director and speech coach. Travis was born with an intellectual disability, but that didn’t stop him from participating in 4-H and FFA and showing cattle. He lives in a group home and works several part-time jobs. Travis, said his mom, always tries to be home at the farm for the week of the county fair.

A visitor to Irish Grove Farm might wonder where the grove of trees is that the farm is named for. But, Peggy said that the word is borrowed from Sparrgrove.

It’s an Irish name, with some of John’s ancestry linked to the Emerald Isle, and all of Peggy’s linked to it.

John and Peggy met while in college. Both were studying dairy herd management. Peggy said she was one of just two girls in that class, and John added that the whole ag department had six young women enrolled.

The couple, both intent on being dairy farmers, married in 1981 and worked for dairy farmers for a while. In 1989, they rented the farm next to her father’s near Decorah, Iowa, and bought the place six years later.

Buying their own farm was exciting, but scary, too.

Said John, “That was the rst time we really had to borrow money. There were a couple of sleepless nights.”

Twenty-three years later, John and Peggy and Ryan and Brianne have expanded the herd to 165 milking cows.

With the dry cows added, the herd is at 195.

Theirs is a colorful blend of breeds, with all the cattle registered. “[We chose to go the registered route] because of the quality of the cattle at the time. And we liked being able to trace the genetics,” Peggy said.

Most of the cows are Holsteins, John said, and there are some Red and White Holsteins, Jerseys and Guernseys.

Milking Shorthorns, Brown Swiss and Ayrshires could join the other breeds, Peggy said. It all depends on whether the grandchildren express an interest in showing them.

That’s basically how the Sparrgroves wound up with four breeds. They wanted something the children and grandkids could exhibit and have a chance of doing well.

The Sparrgrove grandchildren show cattle at half a dozen events each year, including the Iowa State Fair and the Iowa Holstein Show. Ryan placed among the top 20 in showmanship at the 1999 World Dairy Expo.

But it’s the amount of milk in the bulk tank that matters the most. Irish Grove’s cows carry a rolling average of approximately 25,000 pounds, with the fat test at 4.2 percent, the protein at 3.2 percent, and the somatic cell count at roughly 100,000.

“Our herd average has gone up about 1,500 to 1,600 pounds in the last year,” John said.

He attributed the increase to adding whey to the ration. The whey, from a cheese factory near Darlington, Wis., contains lactose and adds energy to the ration, John said.

A semi tanker of the whey costs $725, or about the equivalent of corn at $2.60 a bushel, John said. A 7,000-gallon load of whey lasts about two weeks.

The Sparrgroves store the whey in a 10,000-gallon plastic tank. John said the only precaution they take is to agitate the whey once in a while, to keep if from

freezing.

More than three decades of dairying are bound to produce memories. For John and Peggy, one such memory is a special cow named Razzle.

In 2015, at age 13, Razzle completed her lifetime lactation records. Razzle ended up with 308,700 pounds of milk, along with 11,950 pounds of butterfat and 9,800 pounds of protein. In addition, Razzle gave the Sparrgroves several heifer calves.

“She was an ornery old cow,” he said. “For a cow to make it to 13 years old, she’s got to have some kind of an attitude.”

Another memory was made in 2007.

Ryan had just returned to join the business as a partner, so they needed more room for the additional cows.

to come down, but not on the milking barn.

With part of the barn out of commission, the family was forced to milk 35 cows at a time, instead of 60. But after two months and a cleanup effort, the tiestall barn was repaired.

With a new year continuing to unfold, the Sparrgroves hope to improve their management and the farm’s production.

The 340 owned and rented acres grow alfalfa, corn for silage and fall rye.

One new project they might tackle is a shed for young heifers. As it is, they’re in portable hutches.

At the end of the day, John and Peggy and Ryan and Brianne are glad they decided to carry on their families’ dairying traditions.

“Every day is a little bit different,” Peggy said. “It’s exciting when we go outside and there’s a new heifer calf. …

It’s a wonderful way to raise a family. It’s a wonderful life.”

Gooey almond coffeecake 3/4 cup melted butter 1 1/2 cups sugar 2 eggs 1/2 tsp. vanilla

2 tsp. almond extract 1 1/2 cups flour Pinch of salt

Add sugar and mix. Add eggs and beat well. Add vanilla and almond extract; stir in flour and salt. Line an iron skillet with foil and pour batter into skillet.

Sprinkle sliced almonds over the top, then sprinkle with granulated sugar over all. Bake at 350 degrees for 35 minutes. Leave in pan to cool.

1 8-ounce package cream cheese, softened 1/2 cup ranch salad dressing 1 medium tomato, seeded and diced.

Save 1 Tbsp. for garnish 6 bacon slices, crisply cooked, drained and chopped

1/2 cup finely chopped celery 2 Tbsp. finely chopped onion 1 tsp. sugar Lettuce leaves 1 11-ounce tube refrigerated French bread dough

Place cream cheese in bowl and stir in dressing; mix well. Add tomato, bacon, celery, onion and sugar to cream cheese mixture; mix well. Cover and refrigerate for at least three hours. To serve, line your serving bowl with lettuce leaves and fill with dip. Garnish with reserved tomato. Make French bread according to the directions on the tube. Let cool completely and cut bread into 1/4 inch slices. Put the dip on the bread and arrange slices in a single layer.

Easy cheesy pork snacks 1 cup fresh ground pork 1 cup shredded sharp cheddar cheese

2 8-ounce packages crescent rolls Popcorn seasoning, nacho cheese flavor

Mix ground pork and cheddar cheese. Separate dough into triangles. Place a walnut-size piece of the ground pork mixture on the wide end of the triangle.

Roll up the dough to the narrow end. Tuck dough points under the seal. Sprinkle with the popcorn seasoning. Put on a cookie sheet about two inches apart.

Bake at 325 degrees for 25-30 minutes. These can be frozen, then bake for 35-40 minutes if not thawed.

1 cup all-purpose flour 1/2 cup milk 1/4 tsp. salt

2 eggs 1/2 cup water 2 Tbsp. butter, melted

In a large bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add salt and butter; beat until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately Âź cup for each crepe. Tilt the pan with a circular motion so the batter coats the surface evenly. Cook the crepe for about two minutes, until bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Banana cream pie 1(9-inch) pie crusts, baked 3 cups whole milk 3/4 cup white sugar 1/3 cup all-purpose flour 1/4 tsp. salt

egg yolks, slightly beaten Tbsp. butter tsp. vanilla bananas

Have baked 9-inch pie shell ready. In a large saucepan, scald the milk. In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk. Over medium heat, stirring constantly, cook until thickened.

Cover and, stirring occasionally, cook for two minutes longer. In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks. When thoroughly combined, stir yolks into hot mixture. Cook for one minute longer, stirring constantly. Remove from heat and blend in the butter and vanilla. Let sit until lukewarm. When ready to pour, slice bananas and scatter in pie shell; pour warm mixture over bananas. Bake at 350 degrees F for 12 to 15 minutes. Chill for an hour.
