Of course it can be done, but it definitely isn’t easy and requires prep and patience. I think the better bet is to throw some clams and shrimp into tin foil with shallots, parsley, and white wine and cook it on the grill until the clams open and the shrimp is opaque. You can serve it right in the foil, and it feels just as beachy as a clambake.

How did you found Camilla?

My acting days were the platform for the Camilla you see today. I would make caftans to lounge around in between scenes. I designed and sewed my first pieces in my parents’ home in Sydney’s Watsons Bay, with the assistance of my very patient aunty and mum! From there, I opened the Bondi Beach House, the first Camilla store. It’s been one big party ever since. The brand has evolved into a lifestyle brand, which encompasses women’s, men’s, kids’, and home collections.

Your caftans are inspired by global wanderings. Hamptons aside, where will you be wandering to this summer? This summer, I have Russia and Siberia on my mind.

Take cues from Joey Gonzalez, CEO of Barry’s Bootcamp, who still finds time between teaching classes at his East End outposts—including a new location in Southampton— to unwind, eat well, and stay fit. What does a typical summer day look like for you? I usually teach, but first I go to Jack’s Stir Brew for coffee on the way to class. I’m a very simple black coffee dude. Usually, I teach at Barry’s in Amagansett and then take the class after mine. Afterward, I go to Mary’s Marvelous for lunch. They have really great protein shakes, ground turkey bowls, and healthy, clean food. I also love La Don Spa in Wainscott. My guy has just started a new facial called face exercise. I haven’t done it yet, but it’s supposed to be great. What’s next on the itinerary? We have dinner at one of our favorite healthy spots. We go to Moby’s a lot, where I usually get the chicken or the fish. And I love going to the movie theater in East Hampton. It’s so small town…they only have a few movies, so after a week you’ve seen everything! With the opening of the Southampton location, does this summer look different? I’m teaching a bunch in Southampton, so my day is a little different. I love the Hampton Coffee Company,

which is a stone’s throw from our Southampton Barry’s. That’s where I start my morning. Then I’ll do exactly the same routine, but a little farther west. I’ll float among all the Barry’s locations: Amagansett, Wainscott, Southampton. What are your other go-to places to eat? There’s a sushi place called Zakura in Amagansett, where I get a big sashimi platter. And at Bobby Van’s, I’ll go for the crab, lobster, or seafood salad. How do you indulge without sabotaging your diet? I’m not a big drinker, but once a week I’ll go out and have a vodka soda or a Moscow Mule if I’m feeling like a cheat. But I won’t drink wine or beer lounging at the house. My favorite cheat meal is a mound of chicken nachos, or movie theater popcorn, which fits with my East Hampton trip. How do you like to relax? I have a baby now, so I’m seeing the Hamptons through a new lens. But we have fun traditions, like dinner at Sunset Beach and fro-yo at Yummilicious in Sag Harbor. Outside of Barry’s, how do you stay in shape? I don’t do a lot of running outside because it’s tough in the Hamptons. I’ll do yoga sometimes, and I take my dog on walks to the beach...our house is right off Wainscott Beach. Every now and then I go to the beach and swim. How is the Barry’s summer crowd different from the rest of the year? People are more results-oriented. While a lot of businesses see a downturn, Barry’s gets really busy. I tell my customers that they should be going to Barry’s three or four times a week, but it’s no secret that it’s not an easy workout. If you are going that often, you should be doing some kind of stretching, whether that’s yoga, Pilates, or using a roller or ball. Why did you choose to open the new location in Southampton? One complaint came from our Southampton residents, about the 45- to 60-minute drive to our Wainscott location. And we noticed that those clients were only coming once or twice a week but were vocalizing a desire to go more. I’ve been looking for over a year and finally found the perfect spot. What appealed to you about the space? It’s a cool industrial building. The bones are perfect for our aesthetic: high ceilings in a freestanding building, so there’s no one on the sides that we’ll drive nuts with our noise and traffic. In terms of location, it’s right when you hit Montauk Highway, so it’s our most visible studio in the Hamptons. It’s also the biggest, at more than 5,000 square feet. Why do you think Barry’s still works? With some workouts you stop seeing progress, because your muscles get familiar. The one thing that experts agree on is that you have to keep switching it up. At Barry’s, you can never do the same class more than once. One day it’ll be a 30-minute run, then you’re down on the floor and lifting for 30 minutes. The next class you take, an instructor could do fiveminute intervals, so sprinting for five, then pushups, and repeating it. The workout was built on the idea that you should shock and challenge your body to see change. That’s what sets us apart. What keeps people coming back? It’s about knowing your core audience, and ours is super type-A people who understand that nothing comes easy. There are plenty of exercise options out East, but how do you look after you do them regularly is the question. It’s different strokes for different folks, but our people are results-oriented. The real Barry’s customers, the regulars, are educated and have seen the results. They’re like, I can’t go back to how I was before! That’s who we appeal to. ß

In April, former fashion executive Jordana Blitz launched Little Gem, a full-service catering company with food by chef toyla ashe (right) that also focuses on weekly meal delivery.

What’s the story behind your home? My husband and I bought this house two years ago. My parents and his parents both have homes here, so I’ve been coming out my whole life. When we had our first baby, we wanted to find our own house. I love old, and my husband likes new and modern, so we were looking for something that we could make into our own. When we found this house, it was like a dark dungeon, so we painted it all white and mixed in antiques and furniture that we’ve accumulated over the past two years. It’s a really fun, relaxed, and amazing beach-housemeets-farmhouse. Do you entertain often? We have house guests almost every weekend— mostly our close friends and their children, so there are always kids running up and down the stairs, through the halls, and outside. We usually host a nice lunch for 10 or 12 people on the weekends. Sometimes, we organize dinners that are more of a to-do. We’re constantly entertaining—the more, the merrier!

What was the concept for this particular lunch? I recently threw a fairy-themed party for my daughter’s third birthday—we had about 150 people here—and that inspired me to extend the theme to a lunch. I threw this party on the longest weekend of summer, during the solstice. One of my Swedish friends told me about the Midsummer Night Festival, a tradition that’s held there around this time every year. We love anything beautiful and feminine, especially when it involves white, lace, and flower crowns, so this is my interpretation of a Midsummer Night Festival as a nice lunch. We did a version of a maypole in white tulle and lace, and we also brought out our white lace tepee, which we have at a lot of parties. How did the décor embody your brand? Many pieces in our summer collection are white, and the interior of our house is nearly all white as well, so we decided to make it a white party. My whole world is relaxed—nothing too formal or fussy—but I’m really into aesthetics, whether it’s lighting or the tables and chairs. I pay attention to the details; everything embodies Love Shack Fancy and the mix of old and new.

Jordana, what inspired the transition from fashion to food? Food was always a large focus of the fashion events that I produced. I was looking for the next challenge and opportunity, and was intrigued about life in the back of the house as opposed to the front. Catering felt like a natural extension of my experience, yet would also provide exciting new ones. How did you meet Tolya Ashe? We were introduced by writer Marshall Heyman, a mutual friend and industry colleague. Tolya studied at the International Culinary Center and quickly gained a following of loyal clients, ranging from young families to celebrities. His cooking combines a focus on freshness and wellness with the skills acquired working in private homes and restaurants. What kinds of events do you cater? Our events range from in-home cocktail parties, brunches, and dinners to fashion press presentations, political fund-raisers, charity events, photo shoot lunches, and product launches. We’ve worked with Amazon Fashion, Late Night With Seth Meyers, Saturday Night Live, Kenneth Cole, Lacoste, Valentino, and others. What was the inspiration for Rebecca’s lunch? The Love Shack Fancy garden lunch was inspired by the Swedish midsummer solstice. We aimed to incorporate seasonal Hamptons ingredients into a classic Scandinavian menu. Summer Quinoa INGREDIENTS 1 cup red quinoa 2 cups low-sodium chicken broth 1 TB extra-virgin olive oil 1½ cups garbanzo beans, rinsed (if dried, soak overnight) 1½ cups sun-dried tomatoes, chopped 1 handful fresh flat-leaf parsley 1 lemon, zested Combine quinoa, broth, and pinch of salt in a saucepan over medium heat. Bring mixture to a boil, then reduce heat to a simmer, cover and cook for 12 minutes. Meanwhile, in a sauté pan over high heat, add olive oil, garbanzo beans, and pinch of salt. Cook for two minutes. Add sun-dried tomatoes and cook until the garbanzo beans are golden. Remove quinoa from the heat, stir in garbanzo beans and sun-dried tomatoes, cover pot with a clean kitchen towel, place lid on top, and let steam for 10 minutes. Garnish with parsley and lemon zest. Serves four.

Which friends came? One of my best friends, Jordana Blitz, who just launched her catering company, Little Gem. My friend Nadejda [Savcova] who’s a model, Colleen [Crivello], who has the company Mini Mode, and her daughter, Alba, were there too. We also hosted my good friend Sari Sloane and her three daughters—she and her husband started Intermix. What’s the biggest challenge of hosting a kidfriendly party? I think we have it under control now. We had a whole situation set up for the kids: barbecue pizza, arts and crafts with a girl from Shine, a camp in Sagaponack, music, and an ice cream truck. They were in heaven. How did you come up with the name Love Shack Fancy? My mom was the creative director at Seventeen and then did lifestyle styling for a few other magazines. She collected vintage clothes, props, and furniture and was going to start a prop house company at our house in Bridgehampton called Love Shack Fancy. She never ended up launching the company, and years later, when I was starting my brand and tried coming up with the name, nothing felt right. But Love Shack Fancy did, and now it’s this world of its own that originated from my mom’s ultimate Love Shack Fancy house. When did you launch your brand? In 2013. Before that, I was a senior fashion editor at Cosmopolitan. I spent about seven and a half years there, and worked at like every other magazine FA S H I O N W E E K D A I L Y. C O M

before that. I worked in magazines for a long time— I’m not a trained designer. What made you think there was a market for these kinds of clothes? I never thought there was a market—it just happened organically. My wedding was in my mom’s backyard in Bridgehampton, and I designed the bridesmaid dresses to reflect the flowers in her garden. I worked with a patternmaker in the Garment District, and I loved the dresses so much I made them in different prints and colors, and then I added a few other easy, silk pieces. Because I was always traveling on photo shoots for work, I lived out of a suitcase, and those were the pieces I wore. It became an effortless, easy, and relaxed uniform. After a year of playing around, I left Cosmo. I was sitting on the beach with Lisa Marie Fernandez in St. Tropez, and she gave me the last push. That first summer in August, I was selling out of little trunk shows and in my car. I did a pop-up at a store called Wellness in Sag Harbor and then at Blue & Cream. I officially launched the next summer! What’s the feeling of your summer ’16 collection? There’s a lot of white and blue, and many of the pieces are inspired by vintage pieces from my closet. There’s a Victorian dress, cute miniskirts and crop tops, and off-the-shoulder dresses with crochet and lace trim—effortless, forever pieces that are timeless. One of my closets is entirely full of white clothes, and every time I look at it, I’m so happy. I love the purity! ß

Tuna Salad Nicoise Salad

1½ pounds fresh ahi tuna 3 hard-boiled eggs, quartered lengthwise 1 cup green beans 1 TB extra-virgin olive oil 1 head Boston or Bibb lettuce 1 cup mixed Castelvetrano and Kalamata olives 1 handful fresh flat-leaf parsley

Dressing ∑ cup lemon juice 1 TB Dijon mustard 6 TB extra virgin olive oil 1 clove garlic, crushed Season tuna steaks with salt and pepper and let stand at room temperature until ready to cook. Place eggs in large saucepan. Cover with cool water by an extra inch, and bring water to a boil over medium heat. When water has boiled, cover and remove from heat, and let eggs sit in water for 12 minutes. Blanch green beans in boiling water until bright green and softened. Heat olive oil in a skillet over medium-high heat. Gently place seasoned tuna in skillet and cook until desired doneness, about 1 minute each side. For dressing, combine ingredients and season with salt and pepper. Tear lettuce into bite-size pieces and arrange sliced tuna, eggs, green beans, and olives on top. Drizzle dressing over and garnish with parsley. Serves three.

THE NEW STAR ON THE BLOCK Meet Sophie Beem, the 17-year-old New York City native, regular Hamptonite, and Beyoncé protégé who is poised for pop domination. BY SYDNEY SADICK

When did you know you wanted to pursue music? My entire life! Even in preschool or at summer camp, people knew I loved to sing. It got more serious when I went onto The X Factor in 2012. How did the show change things for you? I went from singing in my room and for my mom’s friends to auditioning in front of Simon Cowell, L.A. Reid, Demi Lovato, and Britney Spears. It made me realize that being onstage was like a home to me, and that I didn’t want to just cover songs anymore, but I wanted to write my own music. What’s your style of music? Rhythmic pop with an urban influence. Are you in school? I went to Hewitt, a girl’s school on the Upper East Side. I started 10th grade, but my schedule got crazy and I knew I’d miss too many days, so I moved to Fusion, a tutoring program where you meet with teachers one-on-one. When I went on tour, it got crazier, so I’m now taking online classes. How’d you get signed to Parkwood Entertainment? When I was 14, I was performing live at the Bitter End, and the former general manager of Parkwood came down to my show with her husband and really loved it. She asked me to come into the office and perform for the team. After that, I put together a package for Beyoncé with a personal letter about why I wanted to be an artist. Within two weeks, I got a call from Beyoncé saying she wanted to sign me. How often do you interact with Beyoncé? We’ll have meetings when she’s available, but right now she’s on tour. She acts as creative director for my

music, so whenever I need something, I’ll go to her and she’ll respond within like a second. She came to my show in L.A. when I opened for Charlie Puth and sent me notes right after. She’s really involved, and it’s so special that she actually cares to give me critiques. You recently released an EP. It’s a five-song EP called Sophie Beem. Beyoncé and I narrowed down the songs. I’m working on my [full-length] album now. How did you end up in the April issue of Elle? Beyoncé was on the cover, so she brought in three of her artists to feature wearing her Ivy Park line. How long have you been coming to the Hamptons? My family had a house for 10 years in Sagaponack. We spent a lot of holidays here, so I have amazing memories. Even before it was a hot spot, it was my home away from home. My parents sold the house, so now I stay at my aunt’s or at a hotel. How do you stay in shape? I’m usually in rehearsal, so dancing is a big part of my workout. It’s so fun to have choreography and learn, and get a workout out of it. But I also like boxing at Gotham Gym downtown or running on the treadmill. What’s your favorite song of the summer so far? I really like “Nothing Is Promised.” It’s a new song from Rihanna and Mike Will Made-It. “One Dance” by Drake is dope. And “Girls Will Be Girls” from my EP! Any interesting summer plans? A lot! I’m performing at my cousin’s sleepaway camp and the Made in America Festival in Philadelphia. And I’ll also be performing at Kids’ Day at the U.S. Open! ß

volunteer, get involved, and give kids more choices. How long have you been working in tennis? This is my fourth summer owning Hampton Racquet and my 35th year in the business. Before tennis, I had restaurants and worked in tech and at a hedge fund. But no matter what I did, I always volunteered and taught kids. Fortuitously, this club came into play. The original owner, who had the club for 25 years, wanted me to come work here—I said only if I could buy it! And my sister, who’s my angel, funded the whole thing. How many kids come to your camp? About 120 each week. I have two campuses—Hampton Racquet on Buckskill Road as well as the Jewish Center of the Hamptons, where we have a pool and a field and do games for our youngest campers. Over at Hampton Racquet, we have a high-skill performing tennis camp for kids ages 9 to 14. In the winter, I run after-school programs.

Who else plays here? We have tons of families who take private lessons. Because we’re not a membership club, I get everybody from Hollywood actors, Broadway actors, doctors, the famous, and the not-so-famous. How much tennis do you play yourself? I’m on the court teaching 40 hours a week. We’re really trying to bring outdoor fitness back. When I lived in the city, I always worked inside, and I’ve discovered the joy of working outside—I think it’s crazy to work out in air-conditioned boot camps when you can be outside getting better workouts. We’re doing cardio tennis now more for the adults, as well as strength training. Where do you find your pros? We have 13 pros on staff. I find a lot of them through referrals—most of them come through college coaches. What’s your favorite moment in tennis history? tHE 411 on THE CUSHNIE ET OCHS COLLECTION Bandier tapped designers Carly Cushnie and Michelle Ochs to design an activewear collection, and the result—a 10-piece line of all-black, laser-cut pieces made of eight-way stretch—is a runaway hit. So, ladies…

In two short years, music-turnedfitness entrepreneur Jennifer Bandier has emerged as one of the buzziest retailers in the biz. At her home in Southampton, she explains! BY SYDNEY SADICK Photography by ryAN LIU

When did you start coming to the Hamptons? My parents first rented a house in Sagaponack in the ’60s, and ever since then, we’ve had a house out here. My parents are now divorced—my mom lives in East Hampton, and my dad and stepmom live in Southampton. There are two houses on their property, so my husband, Neil, and I live next to them. How did you get into retail? I broke my foot a few years ago and could only wear stretchy clothing over my cast. When I got back into working out, I wasn’t satisfied with what I could get in New York, so I was buying a lot online. People would ask, “Where did you get that? I love it!” So I turned to my husband one day and said, “I really think I should open a multibrand activewear store.” That night, I decided to open my first one in the Hamptons. How many stores do you have now? Five stores [in the U.S.] and e-commerce, which really acts like another store. We’ll probably open two more this year in California. How often are you in the store? When I’m out here, every day. A couple weeks ago I stayed in my pajamas all day because I had been at work the day before. It gives me the direct connection to the customer, and I feel like I can get their feedback. How athletic are you? Well, I used to be a lot more athletic, but I had surgery on my knee around a month ago. FA S H I O N W E E K D A I L Y. C O M

Sorry to hear it! I love dance cardio. When I’m in the Hamptons I’ll go spinning at Flywheel or SoulCycle or take a class at SLT. But mostly, I run outside. It’s so beautiful, especially the lighting in the morning. You make it fun with the clothes and the music. Tell us about your music background. My dad worked for Sony for a while, and before that, he was at EMI, so I grew up around music. I worked in the marketing department of a London-based record company called HMV for many years, and then I worked with the band TLC in management with my ex-husband. He still does that, but it’s a hard life. Really? How so? Yeah—being on the road and in the studio nonstop. I lived in Atlanta for a while and was sort of all over the place. I wanted to try something new and launched a customized pet product on QVC. They were pet beds and bags that you could put photos in. What are your songs of the summer? “Panda,” “Work,” and “One Dance.” Anything Drake—I named one of my dogs after him. When I work out I have to listen to great music. It can totally change my mood. I also listen to a lot of classic rock and dance music for the ’80s, and always TLC—love “Waterfalls” and “No Scrubs.” Do you keep in touch with the artists? Yes, I still speak to Tionne [Watkins]. She sent me a picture of one of my dogs for Mother’s Day. Why did you tap Cushnie et Ochs for a collaboration? Both Carly [Cushnie] and Michelle [Ochs] lead such active lives; this is really an extension of their line, which is why it’s been so successful. How many pairs of leggings do you own? What sparked this collaboration with Bandier? Michelle Ochs: Bandier is a one-stop-shop for all the best in athleisure and activewear. It has such a fantastic curation and really brings together the best in fitness, fashion, and music. Was this your first time designing athletic-wear? Carly Cushnie: Yes! We felt that this was really the right time for us to offer a new category for our customer. What was your inspiration for the collection? Michelle: We really wanted to create the little black dress version of activewear—essential pieces that highlighted the body that a wearer could easily mix and match. Our muse has always been the body, so the peaks of skin, the lines, and the cuts were the key details in the collection. What are your favorite workouts these days? Michelle: I’ve recently discovered Pilates, and I really love it. Carly: I love to mix it up, from a spin class to dance cardio and yoga, but my favorite is SLT. Carly, congrats on your engagement! Carly: Thank you! It was an incredibly emotional and magical moment that I will never forget. When it happened, I had come straight off a red-eye flight and was dressed in yoga pants. Any travel plans this summer? Michelle: I’m finally taking my honeymoon! It’s both our honeymoon and one-year anniversary, actually. We’re heading to Tanzania for two weeks. I can’t wait! Carly: I will be doing some wedding recon in Mexico, but otherwise, staying local.

“The timing for this trip is perfect,” says Anastasia while playing ping-pong in the garden. “Last week, I was on a five-day job that took so much energy. I was shooting for 11 hours and came home exhausted. We didn’t have any time to hang out, and I like to connect. It’s important to connect every once in a while!”

“We had a delicious breakfast at the hotel," Anastasia says. “Fresh bread, croissants, and jam. Tonight we’re going to have dinner at The Living Room and see Finding Dory in town.”

TREY’S East End ESSENTIALS DINNER DESTINATION We usually go to friends’ houses or have people over, but when we do venture out it’s usually to Tutto il Giorno in Southampton for the best fritto misto and pasta. It’s also really fun to eat at the bar at the new Wölffer Kitchen in Sag Harbor, and Almond in Bridgehampton is our local go-to fave. We walk over from home, and Eric Lemonides makes everyone feel welcome! DESSERT FIX BuddhaBerry frozen yogurt in Sag Harbor is my guilty pleasure, and I’ve been known to pick up an old-fashioned dip cone or two every summer from John’s in Montauk. COCKTAIL OF CHOICE My wife, Jenny, swears by our party bartender Lucky’s margarita! You switch out the triple sec for agave, and the rest is history.

DÉCOR RESOURCE Bloom in Sag Harbor is so inspiring! Mona Nerenberg, the owner, is a good friend, and she has a perfect eye. FAVE HOUSE My own—although Reed Krakoff’s place on Further Lane is not so bad either. SOCIAL SCENE I always enjoy the Watermill Center benefit in August. Robert Wilson always has interesting young artists from all over the world doing experimental performance art pieces. Someone is usually naked in the forest! FARMER’S MARKET Jim Pike’s on Sagg Main Street in Sagaponack has the best tomatoes and corn. Country Garden in Bridgehampton has the best homemade salsa, and Round Swamp Farm has the best everything! CULTURE FIX I love the tiny Dan Flavin Institute in Bridgehampton. It’s part of the Dia Art Foundation, and it’s truly a little jewel.

Trey Laird’s Hamptons How-To As the founder and head of fashion advertising powerhouse Laird + Partners, Trey Laird turns to his Bridgehampton abode on the weekends to unwind. I’ve loved it ever since. WHY DID YOU DECIDE TO BUY A PLACE? For a few years when our kids were little, we rented a very charming house on Lumber Lane right in Bridgehampton Village. About 15 years ago, a classic village farmhouse that we had our eye on became available around the corner. We immediately snatched it up! WHAT DO YOU LOVE MOST ABOUT THE AREA? The light is truly like no other place, and the pure natural beauty makes me immediately feel at peace. The East End has an incredible mix of beach and country life. There’s a sense of farmland simplicity with all the fresh food, but with a cultural sophistication as well. It really is like no other place in the world. WHAT ARE YOUR FAVE THINGS TO DO OUT HERE? For me, Bridgehampton is all about family. Relaxing and spending time with my family and friends is priceless. It is a true retreat for us— a private place to unwind. WHAT WILL THE HAMPTONS LOOK LIKE IN 20 YEARS? Hopefully, not much different. If they would just stop building cookiecutter McMansion shingle houses on the remaining farmland, that would stop a lot of the problems! WHAT’S YOUR TRICK TO AVOID TRAFFIC? The seaplane rules! It’s sort of a Da Vinci Code–style thriller. NECESSARY LUXURY It’s not a Hamptons summer without the perfect lobster salad from Loaves & Fishes. Worth every penny! ROAD LESS TRAVELED I love driving from Bridgehampton to East Hampton along the beautiful lanes like Bridge Lane and Hedges, taking in the open farmland and ocean views. SUNNY REFUGE My backyard. But what if your arm flab is tricep-dip-resistant? “The Titan laser decreases arm circumference in just two treatments,” says Beverly Hills dermatologist Peter Kopelson, M.D. “You can do it day-of for immediate tightening.” To really combat jiggly loose skin, Beverly Hills plastic surgeon Randal Haworth, M.D., recommends a brachioplasty, a surgical arm lift. “With a small incision in the armpit, you can take in the skin all the way to the elbow,” he says. Another option is spot liposuction. “Aggressive exercise will help, but not in two weeks. Lipo will do it in two hours,” Dr. Haworth adds. ANY LESS DRASTIC OPTIONS? Sure. “Use lotion with glycolic acid to improve elasticity and texture," Dr. Kopelson says.

THE (NEW) NEW BREAST UPGRADES Much more discreet than back in the busty days of yore, the new lift and enhancement possibilities are small miracles—and great options for reconstruction patients, too. The “ideal implant” is a one-size-up saline-filled (read: safer) one that feels like silicone, says New York’s Sherrell Aston, M.D. Another faster, easier option: fat transfer to the breasts. “What’s amazing is, it doesn’t require general anesthesia, scars, or cutting,” says Beverly Hills plastic surgeon Lawrence Koplin, M.D., one of the first to embrace the method. “You can go up an entire size with one session.” EARLY ADOPTERS Doctors can’t name names, and nobody cops to this kind of purposefully discreet work—but

rumors are that Rihanna, Kate Hudson, and even Nicole Kidman have had small tweaks. HOW LONG YOU’LL BE “ON VACATION” With the new implants, says Dr. Aston, “a woman can be in a bikini and on the beach within two or three days. In 21 days, she can play tennis and swim.” And for fat injections, says Dr. Koplin, “there is no downtime.” THE DOWNSIDE For the fat graft lift/ injections, Dr. Koplin says: “The only problem with a lot of girls in L.A. and Malibu, the Hamptons, and New York is…they don’t have enough fat to take out and put back in!”

WAIT, WHAT? WHERE ELSE CAN I GRAFT MY FAT? So many places! Work in gentle circular, upward motions, then longer, smoother strokes, beginning at the ankles and moving upward toward the heart.”

Japanese hair refining has gotten even more refined with the celebrity-adored TwoStep Treatment Plarmia Hairserum by Milbon. The protein treatment age-proofs hair, adding shine and softness (nice during hot-tool-abuse season). Kazumi Morton of Salon Kazumi in Beverly Hills (or catch her in NYC every two months at Privé Salon), uses the technique, which includes a special twisting of the hair, on her celebrity clients (Zooey Deschanel, Kristen Stewart, Christina Applegate). “This is the best treatment money can buy to bring hair back to life,” she says. I Fled the Hamptons Sad but true: the East End isn’t for everyone. Meet one anonymous Manhattanite who spent more than a decade out East before tiring of the traffic, the scene, and the monde, and eventually finding solace in the Catskills. Does this seasoned fashion exec have any regrets? Read on!

AS TOLD TO EDDIE ROCHE What made you leave? I absolutely loved it there. I spent year after year having the time of my life, and then the invasion began, which changed everything. Let’s go back in time: When I was in my late twenties, the Hamptons was the coolest place. It was so authentic. Jerry Della Femina used to own East Hampton Point, and I went there a lot. It was magnificent. Then it gradually became invaded by boom boxes. Boom boxes? Music! There was a party in every house. The shares made things so gross. There were too many people. Every time you’d go somewhere, it was an effort. Try having lunch these days! In the past, you’d go into a place, sit down, and have a sandwich. Now, there are long lines everywhere, even at a taco stand! What were some other pain points? The effort of having to get there. From the moment you turn onto Montauk Highway, it’s an infuriating nightmare. Another alternative is a train on the LIRR, where you are not guaranteed a seat and risk having to sit in the dirty aisle next to 20-year-old PR assistants. No, thanks! The compromises that people make! I don’t want to be exploited anymore. I also hated that nothing in the Hamptons is spontaneous. To me, the definition of a vacation is not planning anything. Otherwise, I might as well stay home. We imagine you have some thoughts about the LIE. It’s horrible. There is no winning. The only light at the end of the tunnel is the HOV lane. The horror to get there… Even getting out of Manhattan is terrible. I don’t know how people who commute put themselves through that hell every day. It doesn’t even matter when you go. You can leave at 7 a.m. and it’s horrible, you can leave at 8 a.m. and it’s horrible, you can leave at 6:30 a.m. and it’s horrible, you can leave at 10 p.m. and it’s horrible. What is it with this LIE? It’s the ugliest drive. Who wants to pass a cemetery? Did the Hamptons make you feel poor? Not really. More exploited and used. I’m a big believer in free market and enterprise, but I don’t want to pay $58 for a lobster roll. The prices are astounding, and that’s just what everybody accepts and expects. Also, I have no idea how people have $22 million extra laying around for a vacation home. Why have you settled in the Catskills? Upstate is heaven to me. There’s complete silence, and the air is fresh. You can get there faster. When we used to drive out East, I’d have arguments with my wife about which shortcut to take, and I thought we were going to get a divorce. Now, she doesn’t have to worry about putting on makeup and heels to run an errand, because we never run into a soul.

What were the other nails in the coffin? Every time I’d go out there, I’d start getting sick—horrible headaches, a low-grade fever. I never catch a cold in the summer! My doctor said, “Oh, yeah. That’s because all the beachfront houses have mold. You’d be better off with a place in the woods!” So here I was, spending tens of thousands on rent to get sick! Another thing that bothered me were the lack of bathrooms on the best beaches. What’s that about? Tell us about your final summer on the East End. It was about three years ago. We paid a fortune for a rental on the beach and the place was little more than an upscale shack. It didn’t have air-conditioning. There wasn’t even a TV! That’s not civilized. The owner didn’t believe in blinds, so I’d be woken up by blinding sun. The living room was minuscule. The neighbors were inches away. You could hear people coming and going all day and all night. My dog didn’t even like it. I’ll never forget the sadness in his eyes: He was looking at us like, “Why? Why do you do this? Why did we have to spend four hours in misery to get here?” We felt the same way. Anything that involves wanting to strangle someone next to you negates the point of a holiday. The only people who can truly enjoy the Hamptons are the wives of these men who work in finance and slave all day in the super hot city while the ladies work on their tan. What do you do upstate for fun? I enjoy my completely unobstructed view. We sit on the patio and we barbecue. We ride horses and go on long hikes. We occasionally go out to dinner and we never have to wait. How is the restaurant scene in the Catskills? It’s unbearable. I don’t even know how these places can open their doors. There are some sophisticated people up here, so I really don’t know why we put up with it. We mostly cook at home. To be clear: The Catskills aren’t perfect? Not by a long shot. We really don’t have a lot in common with our neighbors. I don’t know if I’d want to go there by myself, for example. I would die of boredom. Is there any way you could be convinced to return to the Hamptons? When I retire, I will probably enjoy running into acquaintances and visiting friends, and I’ll have the time to make dinner reservations months in advance, so perhaps I’ll find myself in Southampton. Maybe. And don’t you miss the beach? I do. I’ll give you that. So maybe I’ll be back someday. There was a time when you could score an eight-room cottage for less than a mil, not every street was posh, and a trip to the beach was practically free in Southampton Village. That was decades ago, according to East End native Aaron Kaufman. You were raised in the East End. What made you stay? I went to pre-K in Southampton, where my dad was a doctor and my mom was a teacher, but I grew up mostly in Quogue and Westhampton. But when you’re out here full-time, everything is just around the corner. I moved to New York City and was selling commercial real estate, and when I got married I decided to move back out here. That’s when I thought, Why don’t I take what I learned in the city and bring it to my hometown? How has the Village transformed? About 30 years ago, the Village of Southampton was full of streets that you wouldn’t go down. Now those same streets have houses on a quarter acre that are $3 to $5 million. It’s nuts. I’m not talking about the Estate Section—that’s been there since the 1880s. There’s no real answer why this happened, but similar to in the city, people buy out here as an investment because they know it’s safe. It’s been here for hundreds of years and it isn’t going anywhere. The Hamptons have always been the playground of people who do well in the city. People like the mix of small village and upscale town mixed with high-end retail and restaurants, and sprinkled with the classic Southampton places that have been here forever, like Citarella, local stores like Hildreth’s, and restaurants like Sant Ambroeus. What bits of history will we find in the Village? There’s an historic district on South Main Street, and some of those houses were built in the 1700s. There might be one or two from the late 1600s. The people who came out here from the 1880s to the Depression era were building these cottages…and by cottages, I mean eight-bedroom houses. The guy who built the Sagaponack golf course built one; there’s one built by the Morton Salt family, one by the Du Ponts, and by the Fords, which was torn down. Most are still standing, and a majority have changed hands. Who are other notable residents, past and present? A lot of people don’t know that Michael Bloomberg lives out here. He bought one of the properties built in the early 1900s near the Estate Section and made it his own private compound—you can’t even get down

the driveway. Other people are David Koch, James Tisch, Ian Schrager, Gerald Ford, and Calvin Klein. In terms of buying, what’s the barrier to entry? For a new house that’s ready for move-in, you’ll need $4 million. For a fixer-upper, probably $2 million—you’d get a small, original 1920s traditional Southampton home with maybe two or three bedrooms and one shared bathroom upstairs. You’d have to replace the bathroom and the kitchen, but it would be charming. Are many people investing in the fixer-uppers? That’s what a lot of people have done. A family friend bought a house that borders the Estate section, which is expanding. It was built in the 1970s track house by this guy who built ranches all over. It’s walking distance to the village and the ocean, and it has a pool. Most of the half-acre properties are teardowns, and people are offered $2 to $2.5 million just for the land. To rip down the house and build a new one, that would go for $5 million. These old houses are totally fine—there’s nothing wrong with them. Is there a lot of construction planned this summer? The Village currently has the most construction permits it’s ever had. Last summer it had about 400 building applications. What’s happening on the retail front? Year-round, retail is really down. There are a lot more pop-up shops than normal—some are staying, like Sunbarth—and some restaurants. There’s been a lot of turnover and empty storefronts. Probably 40 percent of the shops are pop-ups. But you have your year-round staples, like Hildreth’s, which is the oldest department store in the United States, the hardware store, and Golden Pear. What’s the summer crowd like today? It’s a mix of people who have been summering out here their whole life or summered out here as a kid. There’s a lot of new money coming in, whether it’s younger people who have done well or people who want to be seen. You mentioned that the borders of the Estate Section are shifting. What does it look like now? To the east it’s Wickapogue Road and Old Town.

Streets like Rosko Drive and Leos Lane are becoming part of the Estate Section. Basically, the Village’s west border is being expanded. On the northern non-beach side, people are buying homes for $5 million where they never did before, like McGee Street or North Bishops. These are the same streets that as a kid I wouldn’t walk down…there were gang fights! Are there any deals left, or has the area been picked over? The Village has a couple deals left, but it’s predominantly now upper tier. I just saw a teardown house on a quarter acre sell for $600K, but it was basically on Montauk Highway. Other instances are family homes that are inherited. But these are old houses. People are buying them for the land, and they’re going for at least $2 million. You’re a tennis and theater buff. What’s that scene like? There are a bunch of tennis clubs in Southampton, like the prestigious Meadow Club. It’s mostly people from the city who are starting to live out here fulltime, and they’re good tennis players! I take singing

classes and acting classes, and I do shows at the Southampton Cultural Center—last year I was in South Pacific. It also hosts galleries and art openings. About 25 years ago, my father was in all the local community theaters from Westhampton to East Hampton, like Guild Hall when Alec Baldwin was there, so I feel like I’m following in his footsteps. And the beach scene? It’s become important, socioeconomically, to say that you go to a Southampton Village beach as opposed to a Southampton town beach, even though it’s the same beach. There are certain parts that are only free if you’re a Southampton Village resident, whereas a sticker for a nonresident costs $350. You wouldn’t want to be seen at a Southampton town beach! Even though there’s nothing wrong with that… they’re beautiful! Can you reveal a hidden gem? There’s a French restaurant, Silver’s, that’s been here forever. It hasn’t been remodeled and it’s old school, but it has delicious food. It’s not the kind of place you would go if you’re not from the Hamptons…you’d walk by it. They have the best chicken soup. It’s been run by a family for generations, so it has all the recipes that go along with that. Any news on your radar? Density has become a big issue, and the town is setting limits with building regulations, like how high you can build, the style, and how much you can put on a property. These rules never used to be. Last summer, a pretty big builder out here decided to spray-paint his little house in the Village the colors of the American flag. His feelings are, as someone who believes in property rights, that he can do whatever he wants with his house. Now there are these beautiful white houses and then this American flag. He actually won his lawsuit [against the Southampton Village ARB]. Also, there’s a charming house called Laffalot in the Art Village that’s in peril, and the Landmarks & Historic Districts Board just received a demolition application. Other than that, a big sale that people are talking about is 28 Gin Lane, which went for $40 million to an unknown buyer.
