MACARONI RECIPES HOME-MADE MACARONI Four full cups of flour, add one beaten egg, and enough water to make a rollable dough. Roll out thin on a breadboard and cut into pieces. Dry. The best arrangement for this purpose is a wooden frame to which the cheesecloth box has been securely attached.

MACARONI WITH CREAM SAUCE Cook the macaroni and serve with a creamy sauce prepared by heating a small amount of condensed milk to a boil, in a double boiler. When it boils, add a tablespoon of flour, brush with a little milk and a quarter teaspoon of salt.

MACARONI WITH TOMATO SAUCE Put a cup of macaroni in the milk and boiling water, let it cook until it is completely soft. Meanwhile, prepare the sauce by rubbing a pint of boiled or canned tomatoes through a coloner to remove all seeds and debris. Heat to a boil, thicken with a little flour; a tablespoon for half a liter will be the required proportion.

MACARONI BAKED WITH GRANOLA Cook a cup of macaroni until tender in the milk and boiling water. When done, drain and place a layer of macaroni on the bottom of the pudding plate, and sprinkle some granola on top. Add a second and third layer and sprinkle each with granola; then turn over the entire custard sauce prepared by mixing one quart of milk, two beaten egg yolks or one whole egg, and a quarter teaspoon of salt.
