boost to the cost of school lunches might be a quick, easy, short-term solution to getting healthier ingredients into our children’s midday meal. But that extra quarter won’t satisfy appetites of students who are starved for lunches designed to build healthy bodies and nourish healthy minds. Working with a $5 million budget to prepare more than 15,000 meals per day, Amy Anderson, a registered dietician and director of food and nutrition services for Carmel Clay Schools, is constantly challenged by insufficient funding, federal red tape and a lack of community and corporate support for healthy eating habits. “Labor and food are the largest parts of that budget.” Anderson said. “We pay the people who work in the cafeteria and we pay the aides to work in the lunch room.” In addition, Carmel’s food services budget must cover expenses such as training employees, maintenance, repairs, equipment, retirement benefits, Social Security, unemployment and workman’s compensation. The department operates like a small business within the school corporation, relying on revenue from school lunches and government reimbursements to fund its operating costs and, according to federal law, cannot make a profit. As a participant in the National School Lunch Program (NSLP), menu planners are required to offer well-balanced meals over the course of a week and to meet government nutrition standards. But some experts claim the system needs an overhaul. According to the San Francisco Chronicle, the U.S. Department of Agriculture purchases hundreds of millions of pounds of excess beef, pork, milk and other high-fat dairy products to bolster prices. It then turns around and dumps those raw commodities into the NSLP, which creates a shopping list from which

While progress has been made toward improving school lunches, according to an Associated Press story published in July, scientific studies show that parental support and involvement is crucial to the success of school nutrition programs. Healthline.com found many parents don’t mind giving their children as much as $5 to spend at fast-food restaurants, but they complain about spending $2.75 on well-prepared nutritious school lunches. “Parents need to serve healthier foods,” Debra Shaffer, said. “The reality is kids are getting a steady diet of chicken nuggets and french fries at home so that’s what they want at school.” “We all want to blame each other,” Anderson said. “We can push the vendors to come up with healthier products, but as long as parents continue to hit the drive-throughs and bring home pizzas, nothing is going to change.” Correspondent Stephanie Carlson Curtis is a Carmel resident and a freelance writer/photographer. PHILANTHROPICALLY SPEAKING ... It is our position that we are blessed to have yet another family among us willing to share the benefit of their considerable life’s work to enhance and improve the community in which we live. To wit, the venerable philanthropically minded Simon family announced this week a significant contribution to build Simon Tower at The Riley Hospital for Children’s downtown Indianapolis campus. This institution, affiliated with our own Clarian North Medical Center, is a jewel of research and an oasis of home for families across the nation.

Jesse Cox, Paul Estridge, and scores of others all have chosen to make use of their substantial successes to the benefit of our fine town. And, they are to be lauded. But, it remains the countless unidentified smaller gifts that support the ongoing efforts of our communities. This holiday season will see $20 bills dropped in Salvation Army buckets by elderly couples barely able to keep the heat on. We are a generous bunch. So big or small, rich or poor, we laud the instinct to give. It is a character in many of us that separates man from beast. Thanks.

REFLECTING on THE CENTER OF ATTENTION Let’s put it this way: It was quite a debut. Reflections, the Carmel Arts Council’s gala on Nov. 10, was a thing of beauty in many respects. More than 200 arts patrons congregated, at $150 a clip, to support CAC’s drive to help fund the interior upgrades of the coming Performing Arts Center at City Center Drive and Third Avenue SW. Corporations stepped up big time in support of the evening — which honored now four-term mayor Jim Brainard, a noted and READ ANKER ONLINE!

CAC President Cherie Piebes, Executive Director Doreen Squire Ficara and their fellow board members worked selflessly, until moments before guests strode up the red carpet at the Ritz Charles. One thing you need to know about these two remarkable women and their charges: Don’t dare attempt to deny them. You won’t win. And so a night played on, with mingling,

Editor: Can the city of Carmel really stop trucks from traveling North on Keystone Avenue north of 96th Street and should they try? No. 1: Isn’t letting some semis, moving vans, buses, etc. travel north on Keystone Avenue and not others discriminatory? No. 2: Wouldn’t this ban be interfering with interstate commerce? No. 3: Wouldn’t this ban be unconstitutional? I think the mayor and City Council should think long and hard about this decision and seek some good legal advice before passing such an ordinance. Larry Verrill 46280 Editor: Your paper has been very welcomed in my home. I think you have some very interesting columnists that make for good reading. But I have had it with “potty mouth” Danielle

Steve Greenberg & Brian Kelly munching and music to beat the band. What the CAC has done is fire up an initiative to heighten the quality of the core of the $80 million center. There will be subsequent Reflections events, and Brainard will continue to shop the naming rights and bring on those who will become the corporate cornerstones of the edifice. As with the aforementioned remarkable women, Piebes and Squire Ficara, don’t doubt Brainard’s ability to get it done. (In Squire Ficara’s words, “Here’s another commercial.”) If you and/or your company wish to be cemented in what will be the heart of the Carmel arts legacy, please call Brainard at 571.2401.) The PAC will be a lasting monument to a time when Carmel was fast-forwarding to the future. We’re looking forward to Reflections II, and we would like to encourage supporters to work to double the crowd. That alone would be a whale of an artful commitment.

A ‘VOICE OF REASON’

Dear Ms. Wilson: First time I have written a columnist, but I was very appreciative of your article, “Last Time I Checked, This Was a Free Country.” (Current In Carmel, 11/13) You spoke very directly and eloquently about the issues raised by the book and film “The Golden Compass.” As you touched on religion, freedom, tolerance and acceptance, I found I was nodding my head in agreement. I hope everyone around Carmel reads your column; regardless of religious affiliation (or lack thereof ). Thank you for a voice of reason in what is too often a world of intolerance and fear. school districts will be at or below their student capacity. My point is, we’re dealing with a short-term problem. Why take such drastic measures if we only need to deal with overcrowding for a couple of years? I’d much rather have four extra children in my son’s classroom than have him change schools. I’d even support the use of portable classrooms in the parking lot if it meant we didn’t have to get to know a new principal, cafeteria routine, and bus route. It breaks my heart to imagine my kids having to give up their friends, teachers, and a school they love just because the numbers have to work out. How can redistricting possibly be in the best interest of the child? Because that’s really what the bottom line is, or should be. Tonight at 7 p.m. at the Education Services Center is a chance for all of us to share our concerns. It doesn’t matter to me anymore whether or not my neighborhood will move; Carmel Clay’s ongoing redistricting is wrong and I plan to fight it every chance I get. I hope you’ll join me. Peace out. the landscape like Republicans at an anti-Hillary rally. The three neighborhoods slated to be moved are the only ones financially “keepin’ it real” at Smoky Row. Move us and the school’s incomeper-family ratio will skyrocket. Meridian Street will become the dividing line between the “rich” schools and “poor” schools. More important, though, and I’ll quote another mom here, “our children are not cattle to be herded, nor numbers on a piece of paper.” They are young kids who grow best when they have stability. It’s scary meeting new people and trying to make friends and learning your way around a big building. Moving them to new schools is and will be a traumatic experience for them, even with supportive parents. Let’s be honest, redistricting for 2008 won’t be the end of it. By 2010, the westside schools will have too many available seats and we’ll all be moved back again Seriously, how could we have allowed something like this to happen? Why isn’t there a policy in place that grandfathers fourth and fifth graders and ensures that no child is moved more than once? Why are the kids the ones suffering? I feel for the redistricting committee, I really do. No family wants to change schools, and yet something must be done about the overcrowding. But how does redistricting solve the problem? A demographic study done several years back clearly shows where the population is growing most. But it also says that by 2010, population growth will be on the decline and by 2016 all the current elementary

had a lovely little column on birthday parties all lined up for this issue, but then I caught wind of a nasty rumor that my neighborhood is slated to be redistricted next year to another elementary school. Redistricting has been going on for a while, mainly to accommodate the housing boom on the west side of Carmel. The increase in population merited the opening of two new elementary schools just last year, College Wood and West Clay, in addition to a third middle school, Creekside. I’ll admit I never gave it much attention because I couldn’t fathom how redistricting would affect me. I live in an established neighborhood adjacent to two Danielle others, and all the Wilson new development is about 2 miles west of us. Smoky Row has been our school since it opened in 1992 and is exactly two minutes away by car, door to door. So when a neighbor said she’d heard we were to be redistricted to Carmel Elementary to accommodate overcrowding at West Clay, I thought it was absurd. Why on earth would they move our kids to a school 7 minutes away and across U.S. 31? I immediately e-mailed the head honcho, Steve Dillon, asking for verification. Of course he couldn’t comment, so naturally I assume it’s all true. I started looking into the redistricting issue myself and realized how messed up this whole thing is. For starters, a shift in the socio-economic balance will occur with this specific redistricting plan. We all know that on Carmel’s west side, million-dollar homes dot

Current in Carmel

Current Publishing, LLC, a privately held company whose properties include Current in Carmel and the Carmel Business Leader, will expand into rapidly growing Westfield on Jan. 29, 2008, with the debut of Current in Westfield, company founders announced. The decision to expand a second time in just more than a year since the Carmel edition was launched was made by Brian Kelly, chief executive officer, and Steve Greenberg, executive vice president, after key advertising partners expressed wishes for the model to also be deployed elsewhere. “We’re thrilled to be a part of Westfield’s significant history-making period,” Kelly said.

“On Jan. 1, it becomes a city, and Andy Cook will become its first mayor. Four weeks later, it will have its first truly hometown newspaper. We’re very much looking forward to becoming good corporate citizens in Westfield as we have in Carmel, and the community soon will learn our doors are always open.” Greenberg said the opportunity to introduce the Current concept to another market was readily welcomed. “We believe we have a unique model for weekly community journalism. We combine the incredible efficiencies of 100-percent market penetration by U.S. Mail with content ‘demanded’ by the citizenry. We’ll put that model up against any company’s. It has served us exceedingly well.”

O

BEING A LEADER MEANS TAKING CHANCES

nline media is disruptive. The Internet and related technologies have disrupted the workplace and our homes. It has changed our behavior, the way we connect and build relationships, and how we solve problems. Our communications are becoming more and more digital or electronic and online. Our business communications are no longer just limited to an 8 to 5 workday. Our digital footprint has become ever-lasting – it’s always out there. And it’s all disruptive. If online media is disruptive, then what type of business would focus their David Cain marketing efforts on On Marketing online strategies? It’s usually a business that is willing to take chances to find a different result – a business with desires to break away from the status quo. Products and services generally fit two categories: either they provide the solution to a problem or they help you reach your potential. Online media is not so much the solution to a business problem but an answer to how to achieve a desire. Using online media as a

marketing platform usually requires organizational disruption and is often founded on one of the following reasons. 1. Audacious goal – An organization with an audacious goal is a candidate for online strategies. With a big goal, these companies are always looking for new ways to meet their goal and are willing to take risks with new methods. A company that wants to achieve the same result as the previous year won’t do anything different. 2. Competitor pressure – When a competitor starts using online platforms, companies often respond in kind. Many businesses start experimenting online because they think they should or because others in their industry are doing it.

Despite all the research that points to consumers spending massive amounts of time online, it still takes a little bravado to make the decision to commit marketing dollars to an online strategy. When it comes time to make any changes in your life, think about why you are doing it. Is it because someone else is doing it? Or is it because you want something different? In business, leading the way instead of following the leader is usually more productive and always more fun. David Cain is president of MediaSauce, a digital media and online marketing company in Carmel. David welcomes your comments at David.Cain@ MediaSauce.com.

DECREASING WRINKLES: Researchers have found that amino acids called hexapeptides can block the nerve signals that cause muscles to contract. When applied around the eyes, these ingredients subtly inhibit muscle movements to soften wrinkles and prevent new ones from forming. In a recent study, researchers found that the depth of participants’ eye wrinkles decreased by 30 percent after one month. you spend two hours preparing dinner, you’ve already burned 295 calories; jogging burns 372 calories for half an hour if you weigh 160 pounds. Swimming will burn 309 calories, cycling, 219, and walking, 261. Taking a walk with the grandkids and dog will certainly strengthen family bonds and create warm and fuzzy memories.

SHOT IN SMOKERS’ ARMS: A shot that robs smokers of the nicotine buzz from cigarettes showed promise in midstage testing. In a recent study, more than twice as many people given five shots of NicVAX, a vaccine made by Nabi Biopharmaceuticals of Boca Raton, Fla., stopped smoking than those given fewer or phony shots — about 15 percent versus 6 percent after one year. NicVAX could be an important new tool for people who have failed to quit on other methods. — Msnbc.msn.com

DEFEND YOUR HEART: Toss pecans onto your salad or into your oatmeal. Loma Linda University researchers had 24 people replace 20 percent of their daily calories with pecans for a month, and found the nuts lowered levels of lipid oxidation (the process that turns cholesterol into plaque) by 7 percent, enough to help ward off arterial damage. “Pecans are rich in gamma-tocopherol, a form of vitamin E that isn’t in supplements,” says lead author Ella Haddad. HEALTH WATCH HARNESS YOUR ENGERY: Qigong (pronounced chee-gong, which means “energy work”) is a form of active meditation, made up of flowing repetitive movements designed to harness your body’s energy. It Stretch has been shown to enhance nervous system activity and lower stress hormone levels so you sleep better, feel more focused, and have fewer cravings. A recent UCLA study found that healthy adults reported feeling 10 percent more energetic throughout the day after practicing tai chi, a more complex form of qigong. A Swedish study also showed that qigong helped women in their 40s with fast-paced computer-based jobs to naturally slow their heart rate and blood pressure all day long. — prevention.com STRUGGLING TO LOSE WEIGHT? Here are two mistakes that many people make. You eat fat-free foods. On

average, low-fat foods contain 59 percent less fat, but only 15 percent fewer calories than full-fat products. Go ahead and eat full-fat foods — for instance, cheese, sour cream, and a nice, marbled steak. They have slightly more calories than their lower-fat counterparts, but they’ll help you feel full longer. And that’ll reduce the number of calories you eat. You (Still) Don’t Eat Breakfast. Sure you’ve heard this before, but it’s important. Researchers at the University of Massachusetts found that people who don’t eat breakfast are nearly five times more likely to be obese than those who make it an everyday habit. That’s because if you sleep for 6 to 8 hours, and then skip breakfast, your body is running on fumes by the time you get to work. And that sends you desperately seeking sugar, which happens to be easy to find. — Men’s Health

If you click on the video and it takes you to a new page, make sure you look very closely at the actual address (http://www....) of the new page, as the scammers can create a page that looks exactly like a YouTube page. You should not be asked to install anything to view the video, especially if you have played YouTube videos in the past, so that is another red flag. This also speaks to the importance of trusted sources on the Internet. If you are familiar with the resource and trust it (CNN. com, DataDoctors.com, for example) you can trust the videos. If you are not sure about the host site, but you really want to see the video, you can always go to YouTube.com yourself and search for the video manually (search using the description on the posting). If you can’t find it by searching for it at YouTube.com, it’s likely a scam video.

SAVE OR ELSE: Japan has a new weapon to scare people into saving for their retirement — an exploding piggy bank. The “Savings Bomb,” which goes on sale in Japan next week, “explodes” and scatters coins if users fail to save for a long time, toy manufacturer TOMY Co. Ltd. said. The batterypowered toy lights up, makes a noise, shakes violently and scatters coins if it is not topped up for a long time. “Users must pick up and collect the scattered coins and reflect on their laziness,” the Japanese company said. Japan has the world’s oldest population and one of the lowest birthrates, raising fears of a future demographic crisis with a smaller pool of workers financially supporting a growing number of elderly. — yahoo.com

company called Zango Cash. Zango Cash, oddly enough, just agreed to pay a $3 million Federal Trade Commission fine for deceptive and unfair adware installations, so we already know that this company does not play by the rules. The lessons to be learned by the latest attempts to infiltrate your computer are that the incredible popularity of social networking sites like MySpace have made them the latest target of those who have malicious intent and that you must make absolutely sure that you are working with an actual YouTube video when you click it. YouTube videos can be embedded into any Web site (a very common practice) that will allow you to view the video without leaving the host site. An embedded YouTube video and a scam YouTube video will look the same (with the logo, the play button, for example) so the big tip off will be what happens when you click on the link (remember, as of this writing, simply clicking on the video poses no danger; it’s what happens after you click on the link). Most legit links will simply play the video within that same space, while others will take

As long as the link is actually pulling the video from YouTube, you would be safe, but a recent scam illuminates how attentive you must be when clicking on what appears to be a YouTube video. “Candlelight. Whatever the style of a home, that natural, flickering amber flame softens all the hard edges. I use candles sparingly, but there’s nothing wrong with having in one room a candelabra with tapers, some votives, and some hurricanes with pillars, all in some shade of white or ivory. I love scented candles. My major extravagance is that I always have a Diptyque candle burning in my office.” — JONATHAN ROSEN “One special Louis XVI desk or chair looks elegant, no matter what the style of the interior. I recently did a design job in a very contemporary house. In the entry, I put a beautiful Louis XVI table gilded in 22karat gold, with a marble top. It was the only traditional thing in the whole house and it stood out like a piece of jewelry. It was just so noticeable, floating on this marble space with lots of light.” — NANCY CORZINE

“Beautifully made hand-pleated lampshades of voile, silk, gauze or linen. The quality of light is so much lovelier and has this wonderful translucency, due to the pleated fabric on the face and the lining fabric underneath. Handmade traditional shades are becoming to any kind of lamp, whether it is a startlingly contemporary one or an 18th-century Chinese vase.” — RICHARD KEITH LANGHAM “Well-proportioned moldings — baseboard, crown, and door casings. They should never be skimpy, overscale, or left out entirely. Having them be perfect is like BEFORE looking at a woman in a well-tailored dress. It’s deeply pleasing, even if you’re not sure AFTER why. And how do you determine correct proportions? It’s visual. You go back to Vitruvius.” — DAVID KLEINBERG from lifestyle.msn.com

WHAT IS A MICROBEAD? Microbeads are everywhere. But what are they really? The name alone sounded vaguely scientific and all business, and we enjoyed the thought of tiny bioengineered pellets digging deep into our pores. Then we decided to talk to some doctors. The microbead phenomenon, it seems, is nothing short of pure — and brilliant — marketing. A microbead doesn’t refer to a specific kind of particle; it can be anything. Vitamin E is a popular choice because of its softening qualities, but any abrasive particle could qualify as one. Sand. Flaxseed. Even walnut shells, which, when ground up, are surprisingly effective. — esquire.com

AUTHOR VISIT: The Mystery Company, 233 Second Ave. SW, welcomes writer Hank Phillippi Ryan at 7 p.m. Nov. 30 for a discussion and book signing. Looking through the lens of art, last week’s election was a win for Carmel, but a less-thanstellar outcome for Indianapolis. In Carmel, voters retained mayor Jim Brainard for another term, providing de facto endorsement of the city’s arts development initiatives. Art lovers in Indianapolis, where mayor-elect Greg Ballard has vowed to cut “non-essential” spending for cultural programming, are holding their collective breath. No one knows the full ramifications of Bart Peterson’s defeat, but it is likely to slow public funding for arts projects for the foreseeable future in Marion County. What will Carmel’s neighbor to the south do? What will this mean for residents of Carmel? First of all, more responsibility for arts funding in Indianapolis will probably fall to corporations, organizations and private donors. Private donors have stepped up before, of course. For example, a consortium of more than 35 private donors recently purchased three bronze sculptures by Tom Otterness now permanently installed at the Indiana Convention Center Plaza. The three works were selected from a group of 25 bronzes on view around Indianapolis in 2006. That show was so popular the Arts Council of Indianapolis extended the original exhibition to allow people to

enjoy the whimsical sculptures for six full months. Some arts supporters — including Carmel’s Drs. Mark and Ora Pescovitz and Michael L. Smith — were so sad to see the sculptures depart they raised money from private donors to bring back three of the sculptures permanently. Corporations have been generous, too. Companies such as Otterness Eli Lilly and Company and Clarian Health include indoor and outdoor sculptures on their campuses, visible for everyone’s enjoyment and enlightenment. Given the success of the Indianapolis’ public arts programs, the departure of Mayor Peterson won’t mean the end of major public arts in Indianapolis. However, opportunities to “preview” works as in the “Tom Otterness in Indianapolis” show will surely slow until new sources of funding can be found. Indianapolis’ situation is a shame, but the loss of public arts funding there creates an opportunity for Carmel to step up its program and move ahead of its southern “rival.” Now is the time for bold leadership and creative

BAKED SEA BASS WITH SOY SAUCE AND SESAME OIL

Josh Riner Sandwich maker at Earl of Sandwich

Where he eats: B.D.’s Mongolian Barbecue What he eats: Anything, really. I like it all.

Ingredients: • 2 tablespoons soy sauce • 1 tablespoon rice vinegar • 1 teaspoon sesame oil • 4 Chilean sea bass fillets (6 ounces each), each 1-inch thick • 1/8 teaspoon ground black pepper • 2 scallions, thinly sliced on bias

— menshealth.com

Instructions: Preheat the oven to 400

What he likes about B.D.’s: It’s more laid back than other places. The atmosphere is really good. All the food’s great. B.D.’s Mongolian Barbecue 2430 E. 146th St. Phone: 846.8700 Hours: 11 a.m. to 10:30 p.m. Sunday through Thursday, 11 a.m. to 11:30 p.m. Friday and Saturday

degrees. In a small bowl, combine the soy sauce, vinegar and oil. Arrange the fish in a baking dish that’s large enough to fit the fish comfortably in a single layer. Pour the soy sauce mixture over the fish and turn to coat. Sprinkle with the pepper. Cover and bake until opaque throughout, 18 to 20 minutes.

K.G.B. COCKTAIL Ingredients • 1 1/2 ounces gin • 1/2 ounce kummel • 1/4 tsp. apricot brandy • 1/4 tsp. lemon juice • 1 twist of lemon peel

Mixing instructions: Shake all ingredients (except lemon peel) with ice and strain into a cocktail glass. Add the twist of lemon peel and serve.

Honeybaked Ham and Cafe 3905 W. 96th St.

Phone: 872.2795 Hours: 11 a.m. to 3 p.m. Sunday, 10 a.m. to 6 p.m. Monday through Saturday The deli sandwiches may be similar to those at Subway, but the meat on Honeybaked Ham and Café’s sandwiches all comes from the hams and turkeys the restaurant/caterer sells, manager Alyssa Medsker said. Named after its most popular item, Honeybaked Ham is starting to get busier as people place their holiday catering orders, Medsker said. She said Honeybaked Ham’s fast and friendly service is what keeps its regulars coming back. “Regulars come in and we chat with them,” Medsker said. And besides the service, “of course the food” is what keeps Honeybaked popular. It has been open for at least 10 years, Medsker said.
