They spray the helmets down beforehand and have a cover to put over your head for further sanitation reasons. They are keeping things clean and safe for everyone. We only raced on the downstairs track because we are beginners and still had a wonderful time.

Moments like skiing through fresh snow and reliving those memories as a family at the end of the day, lift our spirits and create unity. That is what the Operation Rise and Conquer program at the Adaptive Sports Center (ASC) strives to create for the families of veterans and military members with a disability.

Located in Crested Butte Colorado, this program offers an opportunity for a vacation that is welcoming to the entire family. Darol Kubacz, who was injured in a training accident in the army and is paralyzed from the chest down, visited with his wife Cheryl. “Coming here for a week of skiing is more than just a fun ski vacation. It’s about us being able to experience freedom,” said Darol. “Being able to do this with my wife Cheryl is so much more important than ever being able to do it on my own.”

The ASC instructors are experienced working with military with disabilities ranging from spinal cord injuries and traumatic brain injuries to visual impairments and neurological conditions. Over a hundred military and their families participate in Operations Rise and Conquer annually. Through high-quality year-round adventure activities participants learn new skills, push their limits and build confidence. “We feel it is important to create experiences that bring the entire family together, with the support they need,” said Program Director Chris Read.

“Sometimes couples are limited if one of them has a disability. We like to travel together, but we need help,” Cheryl Kubacz says. “Getting that support at the Adaptive Sports Center helps bring unity between the two of us. It enables us to spend more quality time together and do things that are out of the normal day-to-day grind. It helps lift our spirits and reignites inspiration.”

Bringing Public Health services to southern El Paso County

Impacting youth substance use prevention In 2017, El Paso County Public Health spearheaded a coalition, Fountain Valley Communities That Care (FV-CTC) to prevent youth substance use by providing resources, education, and opportunities.

FV-CTC developed several strategies to accomplish its goals: 1. Build public support for safe community spaces for youth. Work with local organizations and youth to make community spaces safer and more appealing to young people.

2. Build public support for quality child care early in life. Work with parents, child care providers, and organizations to increase child care availability in the region.

3. Make community resources more accessible to eligible families. Connect residents of the Fountain Valley to resources that are available in the region, and work with providers to improve their resources.

4. Target marijuana and prescription drug use through activities such as strengthening communication skills between parents and children, campaigns on risks of driving while under the influence of marijuana and organizing drug take back days.

5. Promote evidence-based programs in the region, such as KidPower and the Boys and Girls Club.

FV-CTC is always accepting new community members to advance community improvement efforts.

They have several opportunities that match a variety of skills and interests, including: A Key Leader Board is made up of community leaders who are committed to supporting healthy youth development in the Fountain Valley, promoting the Communities That

Care process and securing resources for implementing the community’s chosen strategies. Terrie Blackwell feels, “By re-establishing partnerships in the area and regaining trust from stakeholders, a unified community will come together to support, build up and meet the needs of our youth.”

A Community Board, which includes citizens, parents, youth and 30 community partners, leads and participates in decision-making, promotes the Communities That Care process by informing others about this evidenced-based work and ensures the Community Action Plan is carried out.

A Teen Action Board was established to engage youth with the program. Youth are treated like experts, and they create their own guidelines and expectations. Ben Carino said, “One of the reasons I think Teen Action Board and Communities That Care are good for our community is it helps youth keep away from substances and helps give youth a voice.”

Community member Taheim Davis sums it up, “I’m happy Communities That Care is in Fountain Valley. It’s bringing a bunch of energy back to this area.”

Program offers nutritional and educational benefits to military families Women, Infants & Children (WIC) is a federally funded nutrition program that provides financial assistance and education about healthy food and eating habits for families, both military and civilian. It also provides health coaching and referrals for health care for pregnant women, new parents and young children.

Pregnant and postpartum women, up to six months to one year after delivery; infants; and children up to age 5 are eligible. WIC welcomes all caregivers of a child under 5. For more information on eligibility and to see if you qualify, visit elpasocountyhealth.org.

Trisha’s Story Trisha, a military spouse, first learned about the WIC program while she was living in Kansas. Her first pregnancy was unexpected. She went to the WIC office, where she learned about the program, how to apply, and other benefits that might be available to her, like the Supplemental Nutrition Assistance Program. She was happy that after transferring to Fort Carson, the family was able to continue with the program through El Paso County Public Health.

After enrolling in the program, she learned there were more than just monetary benefits, such as educational and nutritional counseling. WIC offers breastfeeding classes, lactation consultation and breast pumps. Trisha says, “That was a huge thing, and it’s what got me interested to learn more about breastfeeding and being able to do that with my baby.

“Prior to the pandemic, I would go into the office for my appointments every two to three months where they took height and weight of the babies. We do everything over the phone now, but it works out. They are very supportive and always ask how the kids are doing, how is their overall health?

“I get so excited about this program, and I tell any pregnant or recent mom to see if they qualify. You get cereal, eggs, milk, cheese, pasta, fruits and vegetables. My son has food allergies, and we are able to replace peanut butter with more yogurt, cheese or beans. We wouldn’t be able to buy as much of these staples without WIC.” WIC has a new location at 6436 U.S. Highway 85-87 that is convenient for families living on base. Due to the pandemic, all appointments are currently being done by telephone. Family-friendly dining in the Springs

he logistics of bringing a family with kids out to eat can be daunting — and that’s before picking a restaurant. It’s tempting to stick to chains or hit the drive-thru, but a little local knowledge makes it easy to enjoy something new and unique without sacrificing kid-friendliness. That means menu space for kid-friendly food if not a dedicated kids’ menu, but it also means physical space, such as bigger tables and high chairs, and a certain level of noise without being as loud as an animatronics-filled birthday venue. A family-friendly restaurant should, on as many levels as possible, provide the space for families to connect with each other and enjoy a meal without worrying about cooking or doing the dishes, no more and no less.

Given that Colorado Springs is a patchwork of suburbs with a comparatively small urban center, finding the best family spots in town takes some looking. As such, the locations below represent the tip of an iceberg rather than anything authoritative. But all the same, for one reason or another, they’re well worth considering for a multi-generational meal out of the house

Some of the tables in the upstairs of the main dining area seat permanent mannequin guests for ambiance, and order numbers light up in mirrors around the dining room. Opinions vary on the pizza itself, but tiny pepperoni slices that crisp up into bowls are beyond reproach, and the crust comes out crisp. The big, comfortable hunting lodge atmosphere will give children something to look at when food isn’t at the table. There’s plenty of space and seating, and big tables means space for plates, utensils, drinks and all the accessories kids might bring with them. Moving onto the menu, it’s comfort food, so consider this a good option for kids who like their mashed potatoes or corn. Fluffy buttermilk biscuits can’t miss, either. The location at the far west end of Old Colorado City also makes it conveniently close to Manitou Springs, Red Rock Canyon Open Space and a variety of attractions along Highway 24 as it enters the mountains.

Hangry Ohana Multiple locations, hangryohana.com The Panda Express plate format works great for giving kids a little choice, and while there’s no dedicated kids menu, there should be a few easy selling options for kids at this Hawaiian barbecue joint with Texas inflections. Chicken katsu might sound unfamiliar to a child unfamiliar with Hawaiian or Japanese food, but extra-crispy chicken strips don’t take much work to sell picky eaters on, and the portions tend to be as sizable as they are delicious. The Fountain location in particular has a spacious seating situation, including plenty of booths and a partially divided dining space.

Colonel Mustard’s Sandwich Emporium 1412 S. 21st St., colmustardsandwich.com What kind of face will a child make when they try mustard ice cream for the first time? That question alone makes taking the family to Colonel Mustard’s all the more tempting. It’s such an interesting flavor, combining the tang of French’s yellow mustard with sweet ice cream, and it’s out-of-the-box enough for most kids that it’s going to get a reaction of some kind. Of course, priceless expressions aren’t the only family-friendly draw at this sandwich shop. The menu’s big and accessible enough that most kids should find something to enjoy, even if that’s a peanut butter, bacon and potato chip sandwich. At least it’s served on whole wheat bread.

Swirl 717 Manitou Ave, Manitou Sps, swirlismybar.com Locals know Swirl as a wine bar, which doesn’t sound like the top of anyone’s kid-friendly list, but when the owners regularly bring their own children in and invite others to do the same, it’s worth taking a look. Lo and behold, there’s a thorough kids menu and a list of the owners’ kids’ favorite regular menu items besides, and this menu goes more interesting places than typical bar fare.

While there are more complex dishes on the menu, there’s no age restriction on flatbread pizzas. The colorful, Manitou-weird decor will keep kids’ attention for some time — at least, if a flock of umbrellas suspended from the ceiling is diverting. Plus, it’s only a short walk from the Manitou Springs Penny Arcade, a time-honored family destination.

Proper nutrition starts with knowledge

T

he messages seem endless — try our bigger burgers, with mushrooms, fried onions and cheese sauce; new stuffed crust pizza or cheesy-melty double-tortilla tacos.

At most advertised places, one can add in some fried potatoes and a soft drink for just a couple dollars more.

All can satisfy hunger in lickety-split fashion, and their available just around the corner. Or up a block on the left.

Most come with delivery options too, so there’s no need to even leave the sofa.

In today’s economy, gut busting, high-caloric meals are easy to find and relatively cheap. But, dietitians and health professionals say they hold little nutritional value and simply satiate people for a short time.

Even the supposedly healthy-choice meals that line aisles at the grocery store come with loads of preservatives and chemicals. Though some may contain some kind of vegetable, they’re often high in fat content and sugar.

Eating healthy is a little more difficult.

It’s not real difficult, though, says Glen Williams, director at Fort Carson’s Army Wellness Center (AWC). A bit of self study, some planning and the right information can make a big difference for someone who wants to feel better, have more energy and live healthier. The problem is there’s a lot of information out there. So, where does one start? What’s a good starting point? And where does one go to obtain solid nutrition advice?

“We recommend that people visit a dietitian or their onbase wellness center,” said Capt. Stephanie Ticer, clinical chief, Nutrition Care Division, Evans Army Community Hospital. “There are a lot of websites, apps and publications out there that tout healthy regimens and diet plans, but we don’t know how reliable these resources are.”

Dietitians and wellness center professionals can not only assess a person’s health condition, but also help them with solid goal setting, habit changing, meal plans and grocery shopping.

“It’s a myth that service members can’t eat healthy if they live in the barracks and it’s a myth that people can’t eat healthy at their installation’s dining facility,” Williams said. “People who only have a microwave for cooking are

at a disadvantage, but that’s not a deal breaker, either.”

Ticer explains that people looking to improve their health can start by simply including vegetables with every meal.

“Most DOD installation dining facilities (DFAC) participate in some sort of ‘Go for Green’ program,” she said.

One step into a DFAC and people are likely hit with a lot of tempting aromas, stemming from the short-order grill line and the various daily mealspecial lines — anything from Mexican to Italian to meat-andpotatoes fare.

With ‘Go for Green,’ for example, dining facilities often hang large posters at multiple spots, with the different food types labeled in green for the healthiest options, yellow for less healthy and red for those options with the least nutritional value. Ticer says this is great place for people to start building awareness about their eating habits and what con— Glen Williams, stitutes healthier food.

“This is a relatively easy idea to follow and doesn’t require a lot of pre-meal planning,” she said. “Perhaps it’s not obvious, but we recommend that people consume more of the green food items and less of the yellows and reds.”

Outside of the dining facility, people often encounter the same problem when they visit their local grocery store.

They see an entire supermarket full of choices, but aren’t sure where to begin collecting the healthiest options or how to prepare the best tasting meals.

Williams explained this also is why it’s a good idea for people to talk with a dietitian or wellness-center pro.

“We’ve seen service members and their family members who tell us they eat out or have food delivered for every meal,” he said. “That’s when we pass on information about healthy cooking at home. We even have microwave cookbooks available for service members who live alone.”

Of course, there are more than a few folks who hold a

bit of fear about healthy food, meal cooking and preparation. They’re afraid of losing all of the fun and enjoyment that comes with eating the foods they like best and don’t want to resort to consuming just vegetables.

Danica Turner, health educator at Fort Carson’s AWC, advises service members and families to begin by searching for healthy recipes and keeping a stocked pantry, to include spices.

“Seventy five percent of recipe ingredients are directly from the pantry,” she said. “These are some items to have on hand, for example: low sodium chicken broth, canned foods, spices and freezer items like frozen vegetables and meats.

When you store these items and keep a list of recipes you can make from them, you will never be caught off guard. I consider a ‘stocked’ pantry something that is filled with opportunities for you to make several meals out of some basic core ingredients. If you menu-plan then you will already have a good idea of what you can make with your own ingredients. If you do not menu-plan, this is a good place to director, AWC start to discover what is important for you to have in your pantry.”

As for shopping, Ticer advises people to think about building a meal before they visit the store.

“I recommend picking a protein, picking a starch or carb, and then picking a vegetable, or maybe fruit,” she said. “If someone is not looking at a recipe they can go in and grab some protein, grab some grain/carbs/potatoes and grab a vegetable. That can be their meal, even with frozen foods and cooking with just a microwave. They can find frozen chicken breasts and frozen vegetable bags.

Markets even have frozen grains.”

Above all, Williams advises people to avoid boxed foods because of their high level of preservatives and processing.

“A lot of Americans are lacking fiber in their diet,” he said. “We want people to make sure they have a good protein source and a high-fiber source — and that fiber comes in fruits and vegetables. Simple diet changes (like these) can make a big impact on a person’s health.”

While school screenings are great at diagnosing issues with near sight and far sight, a basic screening can still miss overall health concerns in the eye. A study from the American Optometric Association finds that basic screenings can miss up to 75% of the vision problems that children are having.

What are some basic habits that I can teach my child for good oral care?

• Follow the 2 X 2 rule: Brush for two minutes, twice a day and visit your dentist for a cleaning and checkup twice a year.

• Floss early, floss often: Once a child’s teeth start to fit closely together, it’s time to teach them the habit of daily flossing. You’ll have to take the lead at first, then they’ll get the hang of it by the time they reach 8 or 10 years old.

• Tap is terrific: Water is the way to go! Encourage your kids to drink water when they’re thirsty instead of juice or soft drinks. Water washes away decaycausing bacteria, plus most U.S. tap water is enhanced with fluoride which helps build strong tooth enamel.

What are some signs I should look for that could indicate my child needs glasses?

There are several things parents can watch for. Frequent headaches, rubbing their eyes or squinting and holding screens or books close to their face can indicate a problem.

Also, clumsiness or frequently bumping into furniture can be a sign of vision problems.

My child spends a lot of time on screens and now that has extended to digital learning. Is there anything I can do to prevent problems?

Follow the 20-20-20 rule. Every 20 minutes, look up from the screen and focus on something 20 feet away for 20 seconds. This will give eyes a chance to rest. Holding devices an arm’s length away is also a good practice.
