Children’s educational opportunities abound inside, out

School is out and summer is in full swing, and children are getting restless.

Luckily, Colorado Springs offers a multitude of in and outdoor activities for children of all ages, including the younger ones.

Old Colorado City is home to unique shops and restaurants, as well as a branch of the Pikes Peak Library District.

Karin Swengel, children’s associate from the Old Colorado City Library, said the facility offers a variety of children’s activities over the summer and leading up to the beginning of the school year.

“It’s a blast to see the kids learn and have fun at the same time,” she said.

Every Tuesday during the summer from 9:30-10 a.m. the library presents Music and Movement time for children ages 2-3 years old to learn and read a story.

Every Wednesday during the summer from 9:30-10 a.m. children ages 1-2 years old (accompanied by an adult) have the opportunity to learn rhymes, rhythms and stories.

Swengel said the library is hosting a “Pop-in After School Hangout: Mini Worlds” for children ages 8-12 beginning Aug. 1 from 4:15-5:15 p.m. to help kick off the start of the school year.

These once-a-week get-togethers are an opportunity for children to meet other kids, unwind from the school day and maybe even get some studying in.

From 4-5 p.m. Aug. 9 the library will host a Glow Paintings event for tweens to create glowin-the-dark artwork to take home.

Swengel said the libraries’ children’s activities are a great opportunity for children of all ages to come and have fun while learning.

“It’s a great way for kids to express themselves and spark their imaginations,” she said.

Bear Creek Nature Center offers monthly pre-school-aged programs, including offering a “Little Wonders” series, for children ages 2-3 years old( accompanied by an adult), and a “Nature Explorers” series for ages 4-5 years old, with an adult.

“These programs are for the young children and their parents or their caregiver,” said Mary Jo Lewis, Bear Creek Nature Center supervisor.

Beyond Home Schooling Mountain Vista Home School Academy is dedicated to providing enriching academic and social opportunities for home schooled students in a dynamic learning environment.

Lewis said the monthly programs are a huge success and, as such, the center has recently added afternoon sessions because of their popularity.

“We just hate turning people away,” she added. “It gives us a healthy ratio to give each child attention.”

Lewis said the center is hosting a Little Wonders creek exploration Aug. 28-29.

“We’ll be going to the stream, splashing around and searching for things that live in there,” she said. “It will obviously be really fun and they’ll also be learning the importance of our water, its importance to us and to other wildlife.”

Lewis explained the activity includes simple experiments to help the children understand whether their creek is healthy or not.

For the 4- to 5-year-olds, the Nature Explorers series is hosting a “Sun Power” event August 21-22, where children will learn the importance of the sun.

“All our activities include both an indoor and outdoor portion,” Lewis said. “The out-

door portion is really the main reason for these. That’s why we’re here, to get out and get our hand in the dirt.”

Lewis’ favorite part about helping out with these activities is their excitement about everything.

“Knowing you’re helping them have a really positive, enjoyable experience in the natural world that will hopefully stay with them for life,” she said. “As they grow older, their love for nature will hopefully turn into them being stewards because they have that basic and deep love for spending time outside and connecting with it.”

Lewis said it helps her appreciate the little details of the outdoors as well.

“These programs are a great introduction to the Bear Creek Nature Center,” she said.

Although the special programs do cost money, Lewis said the center is open to the public as part of El Paso County, and guests are able to spend as much time as they would like wandering around and interacting with the exhibits.

“The center belongs to our community and our citizens, so we really hope people come and utilize this great resource,” she said.

Soldiers turn educators via new program

Thanks to some innovative work from a pair of Troops to Teachers consultants, local transitioning service members now have a new option for gaining their Colorado teacher certification and landing a job at a local school district.

“We’ve expanded the Troops to Teachers program here with the introduction of the Aspire to Teach education track,” said Korey Brown, Troops to Teachers Colorado consultant. “Aspire to Teach will be administered by the Fort Carson Career Skills Program, with its first cohort starting in August. It will be the first education track of its kind in the nation.”

Brown and John Scheuer, his fellow Troops to Teachers consultant, created the new education track out of pure necessity, following a ruling last year by the Colorado Department of Education.

“The CDE determined that many of the out-of-state teacher certification programs we formerly used to help transitioning service members, didn’t meet Colorado quality standards, so we had to stop offering those,” Scheuer said. “And, we really didn’t have a replacement for those, so we ended up needing to develop a program of our own.

Ultimately, we tweaked an already existing program called ‘Aspire to Teach’ to allow our service members to start the program while they are still on active duty.”

In order to gain a Colorado teaching certificate, candidates must possess a bachelor’s degree to start, complete more than 200 hours of classroom instruction and accumulate considerable student teaching hours. To develop Aspire to Teach at Fort Carson, Brown and Scheuer collaborated with universities to provide the classroom instruction and local school districts to set up the student-teaching assignments.

“This program is open to all active-duty service members who are within 180 days of separating, not just Soldiers,” Brown said.

“It provides them with an opportunity to get into a classroom and begin their teaching residency while they are earning their teacher certification.”

If a candidates bachelor’s degree is not in one of the content areas of English, math,

science, physical education, elementary education or social studies, they must pass a state exam called the Praxis exam to meet content competency requirements. Once they meet competency requirements, candidates then go through a state background check and then are assigned to a local school district.

The school districts then declare that they intend to hire the candidate once the candi-

date completes the Career Skills Program.

The district provides a mentor to the candidate as well and then that candidate signs into the Aspire to Teach program, which is when they begin their teaching residency.

“While they are student teaching, the candidates also begin earning they’re Colorado Teaching Certificate through the University of Colorado at Denver.

Colorado Military Academy is a tuition-free public charter school located next to Peterson Air Force Base in Colorado Springs. CMA is currently enrolling grades K - 10 for the 2019 - 2020 school year, pursuing its plan to expand by a grade level each year until it reaches grade 12.

In its third year, the Academic Team at CMA continues its pursuit of academic excellence by augmenting its curriculum with Core Knowledge Sequence to guide reading, writing, social studies, and science. Integrity, excellence, and respect are taught to reinforce personal potential and model how to prosper individually and as a team. Students work together and separately to master activities that challenge and promote critical thinking and perseverance.

Because 50% of the students are from an active duty military family, CMA believes it is important to have a diverse Academic Team. CMA employs a highly qualified faculty largely consisting of retired military veterans and military spouses.

Additionally, the Department of Defense provides a Military Family Life Counselor (MFLC) at Colorado Military Academy. The school MFLC, a licensed clinician, provides solution-focused, non-medical counseling to active military, guard, reserves, recently retired/separated (within 6 months) and their families.

CMA prepares cadets for today’s colleges and tomorrow’s careers by engaging them in a rigorous and high-tech curriculum that provide students the knowledge and skills they need for the challenges of the 21st Century and beyond so that each may reach their full potential.

And, active duty candidates must be within 180 days of separation, anticipate fully honorable or under honorable conditions discharge, have no legal or flag actions pending and complete mandatory Transition Assistance Program requirements prior to the start of the cohort date.

“The Career Skills Program representatives then vet that information with the candidate’s chain of command,” Brown said. “The CSP candidate then must obtain approval from their chain of command to begin the program.”

Aspire To Teach at Fort Carson currently has 23 candidates who plan to start the program between now and 2020, with cohorts beginning intermittently between now and the end of the year.

“Colorado, like many states, is experiencing a shortage of teachers,” Brown said.

“The high needs areas, really throughout the nation, are world languages, science, math, special education and arts and drama. Since 1994 those are the areas that consistently needed teachers. And, the state’s universities are only producing about half the amount of teachers needed each year. So, more school districts are looking and relying on alternative programs like ours to fill those vacancies.”

“The great thing about this program is that transitioning service members can begin student teaching and earning their certification while they are still in that 180-day separation window,” Brown said.

“We researched programs, but the Aspire to Teach program is the most flexible and user friendly for transitioning service members while they are on active duty.

A lot of the flexibility comes with the rolling cohort. They can start a new teaching certification cohort every month.”

The program does require an investment, but service members can use GI Bill Assistance and participating school districts provide a direct investment as well. The Aspire to Teach cohort will be conducted at Fort Carson and off post.

The certification is an online program and whichever district invests in a candidate will require the candidate be in class two to three times per week at the start of the program.

“This also is a program that’s gained traction nationally,” Brown said. “Nine of the 10 (Troops to Teachers) grant states involved the Troops to Teachers program are trying to mirror the Aspire to Teach program that John and I developed here.

So, we’ve been working to provide them with the foundational information that we’ve put together.”

This program has been approved by the Department of Defense and the Defense Activity for Non Traditional Education Support office.

Students throughout D11 may access the Career Pathways program, as the courses are designed to fit within each of the four main high schools’ students’ schedules. Transportation is provided to and from each of the four high schools throughout the day, so that students may easily access the Career Pathways programs. Students are taught by certified educators who instruct in the subject in the fields of their expertise. The Career Pathways program prepares young adults to be occupationally effective, socially responsible, and functionally independent. In addition to teaching students specific occupational skills, our programs provide access to a real work environment, where students can apply those skills. Career Pathways offers on-the-job training, jobshadow internships (paid and unpaid), and field trips to the workplace. Each program is articulated with a local college or university, which allows students to receive college credit (with a B or better in their class) while still in high school—at NO COST to families. It is possible for students to earn numerous occupational certifications by the time they graduate from high school.

Summer’s almost gone, but that doesn’t mean it’s time for teenagers to migrate indoors and prepare for winter hibernation. The Springs holds a wide variety of exercise and educational programs, of which we’ve selected a few to feature below. Check out also a few last-minute summer camp opportunities for tweens and teens who still need something to do before school starts.

CityROCK’s educators focus on technique over strength, making every climb as much a puzzle as a workout. CityROCK offers a variety of programs for kids and teenagers to learn how to climb with confidence. For ages 6 and up, CityROCK offers half- and full-day options for its week-long summer climbing camps. Participants learn the basics of rock climbing, with time on walls and in the spot’s artificial cave. Camp days run from 9 a.m.-noon, noon-3:30 p.m., or 9 a.m.3:30 p.m., all Monday through Friday. Costs run $61 for individual half-days, $84 for full days, $285 for a week of half-day sessions, or $385 for a week of full-day sessions. The after-school climbing club for ages 9 and up, open Monday through Thursday, costs $129 per month for weekly participation or $149 per month for twice-weekly participation.

Club membership also includes a CityROCK membership, allowing passionate young climbers to explore and expand their interests for a reduced cost. Kids between 6 and 18 years old with physical, emotional, social and/or cognitive challenges can be a part of the gym’s Adaptive Climbing Team, receiving one-on-one coaching from volunteers, all of whom are trained by the team director. about food safety, basic kitchen equipment, seasoning profiles and how to cook a variety of foods. It’s run by CSCE founder Chuck Frazier, who previously studied at the Napa Valley Cooking School and worked as an apprentice sushi chef at Till Restaurant & Mercantile.

The seven-week course covers Italian cuisine, Japanese cuisine, healthy cooking, pastry and more. Each class runs 90 minutes on Thursday afternoons starting August 8. The full course series costs $405, and fees include all facilities, equipment and food.

The RAD Program, Real Alternatives to Drugs and Drinking, is a series of Friday night events by high school students, for high school students. Planned events range from basketball and soccer to s’mores making to Mario Kart tournaments. Looking less for camaraderie and more for leadership training? Freshmen and sophomores take the leadership development program, training them in the basics of leadership and teamwork, allowing them to take on more responsibilities as volunteers. He focused on finance and portfolio management, which led to a growing relationship with now Chancellor Venkat Reddy, who taught many of Craig’s classes leading up to graduation.

Reddy recommended Craig for a three-year program as an investment analyst with the El Pomar Foundation; Craig earned his Chartered Financial Analyst credential, one of the most respected and recognized investment designations in the world.

“I was lucky to be accepted. It influenced me a lot,” Craig said, noting it exposed him to all the good the El Pomar Foundation does in the community.

It prepared him when expanding HomeAdvisor, which serves millions of people nationwide who are seeking reliable home improvement help. He joined in 2000, and it’s grown exponentially ever since.

“The mentorship I received at UCCS was so important. In the years after I graduated, I was able to reach back out to professors with questions, and they gave great guidance,” said Craig, who received a Bachelor of Science in Business Administration.

The feedback was especially helpful when HomeAdvisor faced many hurdles, including well-funded competitors, the financial crisis of 2008 and more. The company

began as ServiceMagic with just 20 employees.

“The largest hurdle we had to jump came in 2011 and 2012 when we rebranded from ServiceMagic to HomeAdvisor. We were by far the largest internet company to have rebranded at the time,” Craig said. “It was scary. For seven days, it was like our company didn’t exist.”

But after a campaign to spread awareness, and a refocusing of the company’s goals, Craig said the business bounced back — all the way to a merger with Angie’s List, the second leading brand in the field.

“I spent a lot of time listening to our customers, our employees. That engagement and feedback is important in so many ways. You’re able to piece it together and it congeals into strategy that helps drive business forward,” Craig said.

His UCCS experience was critical in developing his strengths as a leader, the biggest being his ability to listen.

“I’m an expert on very, very little. I’m rarely the smartest person in the room. But I’m able to bring lots of ideas together, and help in any situation,” Craig said. “The grit and resiliency that UCCS instils in its students makes its graduates really unique.”

That’s why he hopes to hire UCCS alumni to join HomeAdvisor’s Colorado Springs office.

“Maybe a student at UCCS has to work harder to prove themselves over a Stanford degree, but the quality of education is equal,” Craig said.

Reflecting on the changes both at HomeAdvisor, and at UCCS, Craig said he feels immense pride, both in the quality of both entities, as well as the retention of identity.

“UCCS still has this close-knit community feel to it. You don’t feel the class sizes are too large. The classes, the dorms, the buildings and the athletic teams are all a source of pride. It feels good to be a graduate.”

Teachers learn how to mix fun with STEM subjects

A hundred teachers squealed and ducked as Eddie Goldstein pulled a trigger and showered them with a thousand ping pong balls.

“Well, I didn’t want to spray them with water,” said Goldstein, director of curriculum and large group programs at the National Space Science & Technology Institute.

Goldstein was the keynote speaker at UCCS’ STEM Days of Summer, an event held last month that provided best practices, new techniques, networking and fun for science, technology, engineering and math teachers.

Goldstein draws upon a background as a professional magician, actor and science educator to create entertaining presentations so that teachers can learn new tools for spreading the joy of science.

At his keynote demonstration in UCCS’ Centennial Hall auditorium, Goldstein showcased his presentation about watersheds.

To understand the concept of a watershed, “I wanted to have the folks in the audience be a part of that watershed,” he said. “I divided the group into three different watersheds and sprayed a thousand ping pong balls into the air.”

To simulate how a watershed works, the teachers caught the balls and passed them down.

“We measured how many ping pong balls fell on each area and discussed why some watersheds get more rain than others,” Goldstein said.

The presentation was a journey through the cycle in which water starts in clouds, falls to earth as rain, ultimately evaporates and goes back into clouds. Goldstein finished by creating a giant cloud using water and liquid nitrogen, which cools water below its dew point.

Most teachers can’t shoot off 1,000 ping pong balls in their classrooms, but later in the day, Goldstein’s partner Dimitri Klebe, founder and president of the National Space Science & Technology Institute, demonstrated how to design and construct water filtration systems, a project they could take back to their schools. The institute is a Colorado Springsbased nonprofit that develops innovative science education programs in the Pikes Peak region.

“The overall message was that using theatrical techniques, you can present things to students that are highly educational and highly entertaining at the same time,” Goldstein said.

STEM TEACHER SHORTAGE

All of the school districts in the Pikes Peak region have shortages of STEM teachers, said Dr. Robert Block, associate dean of the UCCS College of Business. It’s tough to get a pipeline going to produce STEM teachers because students know they can get more lucrative jobs in industry.

A program called UCCSTeach, a collaboration between the College of Education and the College of Letters, Arts and Sciences, aims to remedy that.

The program offers undergraduates the opportunity to earn both a bachelor’s degree in mathematics or science and a secondary teaching license in four years. It also provides post-baccalaureate students with an undergraduate STEMrelated degree a chance to seek teacher licensure.

“It is the only program in Colorado that focuses on producing good STEM teachers,” Block said. “We’ve partnered with the National Science Foundation, which provides grant funding for STEM majors to become STEM teachers. They get plenty of teacher training and can go teach in high-needs districts. We’re starting the second year of awarding scholarships, and we’ve doubled the number this year.”

“It was very successful, and there was feedback that you need to do this again,” McGuire said.

This year, sponsorship by the Rocky Mountain chapter of the Armed Services Communications & Electronics Association enabled the university to scale up the program and create the inaugural STEM Days event.

Besides immersing themselves in the water cycle during Goldstein’s entertaining presentation, the STEM teachers attended breakout sessions led by teachers and UCCS faculty members.

They learned about a virtual reality platform that allows students to engage in activities that can’t be done in a classroom, makerspace tools, STEM projects on a shoestring, planning and organization, team teaching strategies, grant writing, gamification, and converging STEM and career and technical education pathways. McGuire said the plan is to do STEM Days every year.

“We had really great highlighted speakers, but also events where teachers could network,” Block said. “We think it’s very important for teachers to talk to other teachers about how they do this.”

TEACHER PREP Many of the jobs of the future will depend on STEM, McGuire said. “If teachers are not trained, they can’t be filled.”

But it isn’t just training teachers that’s needed; STEM teachers also need to be retained.

“A lot of STEM teachers tend to leave within the first five years,” he said.

Many school districts offer support services, such as mentors for STEM teachers during their first two or three years, and require continuing education. That’s where universities come in, McGuire said.

“Over the last few years, several faculty who work in STEM teacher preparation have done some outreach, often with individual teachers,” he said. “Part of our goal [for STEM Days] was to bring people together. There’s nothing else like this around town. We thought this was a good strategic decision for the school to do.”

The UCCSTeach program focuses on the secondary level, but the elementary-level program also includes a lot of classes that focus on STEM, McGuire said.

“Even at the elementary level, I think our university is doing a good job of preparing elementary teachers to teach science, technology and math,” he said. “We also have an alternative licensure program that’s basically for people who are career changers, for instance, engineers working in the business field, or former military who come back and decide they want to become a teacher. That’s a slightly different model, and we’ll have a handful of students each year that get certification in STEM as well.”

Local school districts may see Goldstein popping up more frequently as a result of his appearance at STEM Days.

As part of the Mobile Earth and Space Observatory project through the National Space Science & Technology Institute, Goldstein, Klebe and others travel around the state presenting at assemblies and in classes, putting together science centers and hosting sun- and star-gazing parties.

They bring in a “science center on wheels,” a vehicle with a top that retracts to reveal research-grade telescopes and scientific instrumentation.

It was open at lunchtime for solar viewing, and even though cloudy weather put a damper on a planned star party, “the responses from the teachers were overwhelming,” Goldstein said. “We got requests to come to quite a number of school systems.”

Culinary arts programs feed local restaurants

The demand for well-trained culinary workers at local restaurants, catering companies, hospitals, senior living communities and other facilities is strong. And culinary careers are increasingly popular as salaries become more competitive and the number of restaurants are on the rise.

Two culinary arts institutions in Colorado Springs are striving to keep up.

More than 450 students were enrolled last academic year in the culinary arts program at PPCC. Of those who graduate, an estimated 95 percent will get jobs immediately.

“The majority stick around here,” said Chef Michael Paradiso, co-chair of the culinary arts department.

Paragon Culinary School enrolls about 50 students and turns out only about a dozen graduates a year, but virtually all find immediate employment and about 90 percent stay in the area, founder and owner Chef Victor Matthews said.

High levels of first-job underemployment have many soon-to-be college graduates worried. Forbes defines underemployed individuals as those having bachelor’s degrees but who are working in a position that does not require any degree. Students in some fields of study are seeing underemployment rise to 50%, and that is for those who are at least finding work after graduation. Even students receiving degrees in computer science or engineering are seeing underemployment levels as high as 30%. The scary thing is that the majority of these underemployed graduates will still be underemployed after five years in the job market.

We live in a complex world. A student can work hard, get good grades, and still end up with less than they hoped for in their career.

There truly are no guarantees. If the return on investment of a good and rigorous education is supposed to be merely career success, then many college graduates will find themselves disappointed.

years. Students in that program concentrate on allergen-free cooking using ingredients such as gluten-free flour and specialty diets such as low-fat or vegetarian, and are qualified to work in hospitals or senior living communities.

Those who are interested in working the front of the house can take the food service management track.

All students begin their culinary journey by learning the basics, said Chef Richard Carpenter, co-chair of the department with Paradiso. They first study safety and sanitary procedures, and are required to pass an exam in order to get into the kitchen.

Then they start honing knife skills and other fundamentals.

Students are urged to get jobs working in the industry while they’re going to school. The college works with about 60 restaurants, bakeries and hotels to place student interns.

“They’re required to do 180 hours in one semester working at local restaurants, hotels, catering, front of the house — it depends on what they’re going for,” Paradiso said.

High school students like Buckner can begin their studies through the Career Start program.

“They can complete eight to 10 classes out of their degree, and the high schools pay for it,” Paradiso said, adding some are able to graduate from high school and college at the same time, and go on to immediate employment.

The college’s culinary arts program started 20 years ago with about 110 students.

Within 10 years the program had grown to 550 students.

Last year’s faculty included four full-time instructors and nine adjuncts. Enrollment was down a bit, “because the economy is so wild,” Paradiso said. “Now we have the issue of too many jobs and not enough students. They’re always calling us.”

have found employment all over the country and abroad, but most remain here, at least immediately after graduation.

“Because many of our students are from here and because there is a growing need in our city for chefs and other trained kitchen workers, it would be safe to say 80 percent of our students stay within the community,” said Rob Hudson, PPCC’s dean of the Division of Business, Public Service and Social Sciences.

Paradiso said opportunities for culinary arts graduates are much better than they used to be.

“There have been a lot of restaurants that have opened in the last couple of years,” he said. “Hospitals want students in management positions; we just interviewed at Penrose Hospital.”

Students also find jobs in breweries, hotels, country clubs and conference centers.

Some eventually open their own restaurants or food trucks.

Last academic year Paragon offered nine classes, ranging from foundations to advanced restaurant management, which students traditionally complete in three years, but they may also carry a heavier load and finish in a year and a half to two years. The school also offers advanced and postgraduate specialty classes. Instructors are professional chefs and sommeliers.

A unique feature of the Paragon curriculum is a written exam, similar to the bar exam, and a 24-hour practical test students take at the end of their course work.

“It’s the only culinary school in the world that does stuff like that,” Matthews said.

“They literally do breakfast, lunch and dinner and different styles. They have random ingredients and techniques that pop up on them, and they have to do it all in the budget.”

Matthews, who came to the Pikes Peak region in 1999, is a World Master Chef, which means he has more than 25 years of experience in four- and five-star facilities.

He ran the Black Bear, a four-star restaurant, for 15 years and now runs the Black Bear Distillery in Green Mountain Falls.

Matthews opened Paragon in 2004 to fill the need for high-level culinary training.

Matthews said Paragon graduates are working in restaurants from New York to Paris, but they’re also found everywhere in the Pikes Peak region.

“There’s almost no restaurant that a Paragon grad is not in,” he said.

Paragon Culinary School is a much smaller, elite private school that focuses on culinary training, Matthews said.

“We’re more like a Juilliard or something like that,” he said. “Our goal is to have really intensive training. What we’re trying to do is train people to have their own places or be great master chefs. Primarily they’re executive chefs or they’re running their own restaurants.”

There are opportunities “all over the place” for good culinary students, said Chef Matthew Richardson, executive chef at Cheyenne Mountain Country Club and president of the American Culinary Federation, Pikes Peak Chapter.

The demand has been steady for the last decade, he said.

“Everybody’s looking for help. In the summertime, there’s even more demand,”

he said.

Entry-level jobs are the most plentiful, with restaurants, health care facilities and hotels looking for dependable workers.

Those with culinary arts education are ahead of the game.

“I was a culinary student at one point in my life, so I appreciate the little extra professionalism you get out of a culinary school,” Richardson said.

“There is a ton of new restaurants all the time,” he said. “I don’t know if the market is saturated a little bit right now, but I know that inflation is going to start hitting us a little harder with the minimum wage going up. I do see it continuing to grow, and the better restaurants are going to stand out.”

Carpenter predicts that as the population of El Paso County increases, the demand for culinary workers will also continue to grow.

“I don’t think we’re oversaturated yet,” he said, adding that while more unique restaurants have opened in the past couple of years, especially in downtown Colorado Springs, “we’re still missing unique, upscale dining, except for The Broadmoor.”

Local wages are higher than the national average because of the competition for good employees, Carpenter said.

“The chefs we talk to say that if they don’t pay them more, they’ll get other offers,” he said.

The career outlook for culinary graduates is excellent, Carpenter said.

Salaries range from $12-$13 an hour for entry-level workers. Once they reach the supervisory level, they can make $15-$20 an hour, Carpenter said.

Assistant managers can earn $35,000$40,000 a year; sous chefs $50,000-$60,000; and executive chefs and pastry chefs, $80,000-$90,000 or more.

“If you’re really good, you move up quickly,” Carpenter said.

It was around 7 p.m. when I arrived in Denver from China.

I was standing outside the airport, with two big pieces of luggage, waiting for a shuttle to pick me up.

It started to rain, more and more heavily. The shuttle still didn’t arrive.

I went back inside the airport and felt uneasy. People were exiting and entering the airport, and the sky changed its color from bright orange to dark black.

Lost, afraid, confused and only 14 years old, I filled my mind with unsure thoughts. Finally, the shuttle came. I entered the van and looked out the window. It was dark outside, and I could not see the city clearly.

I felt it was unbelievable: “Am I really in America?”

Like foreign exchange students all around the world, my journey as an international student started here.

What would happen?

In the past five to 10 years, it has been a trend for some families, especially from Asia and Europe, to send their children to study abroad. I’m an only child, and was the first in my family to be an exchange student.

That first trip I took to America in 2016, when I was just 14, was the farthest away I had ever been from my family in Guiyang. I’m 18 now, but I can still vividly remember how hard it was to say goodbye to my parents in the airport: I tried to leave them with a big smile on my face, but I quickly turned around and walked to security with tears on my cheeks.

Although scared and feeling all alone, I was about to face the very same challenges that other foreign students encounter when they first move abroad.

“I still remember the first time I had macaroni and cheese for dinner... It was so terrible, but I could not spit it out.”

Language was absolutely the first hurdle. At my small, private school, the Colorado Springs School, I took World Literature in my first year. Sitting in the class, surrounded by American peers, I was nervous.

Why was the English teacher talking so fast? How did everybody else come up with answers so quickly?

I tried to get involved in class discussions, but I was so anxious about organizing the words in my brain

before getting up the courage to raise my hand to share my opinion. On top of that, it was frustrating when others always answered the question I was going to answer.

I made myself talk, even though I was afraid my answer was inappropriate since I was so far from home. I even counted how many times I talked in each class and tried to talk just one more time the next day.

At the beginning of my first year, when classmates talked with me, I was extra careful to pay attention because I was afraid of missing even a single word people said. Sometimes, I felt embarrassed when other students could not understand what I was talking about or when I could not respond to what others asked. However, I did not give up; instead, I encouraged myself to speak out one time, two times… until others understood.

Due to my bravery and hard work, I gradually felt more confident and comfortable talking in classes and communicating. Even though this took much self-motivation and time, I never gave up and improved step by step.

Also, like many foreign students, I took a while to get used to American cuisine. Even now, years later, I still remember the first time I had macaroni and cheese for dinner. It was sort of like Chinese rice noodles mixed with melted cheese. When I took the first bite, it felt slimy and squishy in my mouth and tasted like nothing I’d had before. It was so terrible, but I could not spit it out; instead, I kept drinking water while eating the food.

My host mother looked at me with a friendly smile and asked me if I liked it. I forced a smile, tried to be nice, and said, “It tastes good! I like your cooking.”

A similar experience happened with a tortilla. It was my first time trying tortillas, which looked similar to my favorite snack, potato chips. However, the actual taste was far different than I expected: It was dry like pieces of warm cardboard.

American food made me feel far from China. One weekend, my host family took me to a Chinese restaurant downtown. Looking at the menu and talking with the restaurant owner in Chinese gave me a sense of

safety and belonging. Eating familiar food and speaking my native tongue filled me with a sense of home.

Even though I felt comfortable for a moment, I was determined to learn the culture of my new host country. With this in mind, I started to eat more American food. Over time, I found out that our taste buds can change and with this change, feelings of comfort and familiarity can change, too. To my surprise, with more exposure to American food, I even started to like macaroni and cheese and tortillas!

I know from the news that the president of the United States has made some negative statements about China in recent years, and I have noticed that there has been a significant decline in Chinese students coming to the U.S. lately. I do not feel scared since my host family, school and community are always here for me and are extremely supportive.

At my school, where I’m a junior now, students all know each other, and the teachers have been supportive of me. Teachers here gave me the courage to step outside of my comfort zone, and my peers on campus have helped me in class discussions. The other students have been patient with me, and haven’t laughed at my accent or innocence about American culture.

Both of my host families have treated me well, and I have grown to love my two current host brothers, Noah, 7, and Liam, 4. And of course I still fly home to see my family every summer and winter break.

Growing from this secure and supportive environment, I have made connections with others and have established my unique identity as a Chinese international student. STEM the tide: Local students eyed as solution to global cybersecurity workforce gap

One of the world’s greatest government, military, financial and social challenges has been made even worse by a workforce shortage of global proportions. (ISC)2, an international cybersecurity association, found there are close to 3 million cybersecurity job openings worldwide. In the U.S., 350,000 cybersecurity jobs are unfilled.

The Springs-based National Cybersecurity Center works with students to fill that gap with a one-of-a-kind program that’s unique to the United States. Launched in 2018, the National Cybersecurity Center Student Alliance stands as the only Career and Technical Student Organization in the country solely dedicated to cybersecurity.

NCCSA operates as a school-based network of student-run chapters that provides learning, competitions, leadership and soft-skills development, networking, skill-building and social opportunities to help student members prepare for the vast array of career pathways in technology and cybersecurity.

Colorado Springs has 11 chapters, which should grow to 30 by the end of the year.

(ISC)2 also reported that North America has the secondlargest shortage of STEM cybersecurity workers across the world (after the Asia-Pacific region) at 498,000, which is why increasing and securing future talent in cybersecurity

fields must be a priority in today’s industrial and educational landscape. Depending on their responsibilities, cybersecurity professionals can earn $90,000 to $210,000 annually.

There are bright and brilliant minds that are overlooking cybersecurity simply because they haven’t been exposed to it in schools.

As a society, we are not engaging students early enough to pique their interest in a cybersecurity career. The NCCSA addresses that by drenching students in digital knowledge.

Studies show when we reach students at an early age, they are more likely to stick with it through college.

Just as important as growth: diversification. It’s a matter of introducing cybersecurity to students of every race, ethnicity, gender and socioeconomic level. There are bright and brilliant minds that are overlooking cybersecurity simply because they haven’t been exposed to it in schools. Students were able to dive deeper into cybersecurity through NCC programs in Colorado Springs this summer.

CyberCamp, co-hosted by the NCC and the Air Force Association, was designed to encourage youths to pursue STEM pathways and build a foundational technology skill set.

At the NCC, participants were immersed in experiential learning and connected with mentors from across the technology spectrum, including Civil Air Patrol Maj. Bill

Blatchley, a CyberPatriot national champion and national coach of the year.

September marks the inaugural Mayor’s Cyber Cup with support from Colorado Springs Mayor John Suthers. Teams of local high school and middle school students will create 30-second public service announcements to highlight cybersecurity safety and awareness. Winning videos will be showcased at the NCC’s 2019 Cyber Symposium Sept. 19 and 20 at The Broadmoor hotel.
