In 2021, a newly built wedding venue will be opening in Hamilton, Ohio just south of Oxford, on US 27 South. Miami Catering will be one of the preferred caterers. Catering and CS Marketing Team are working together to create a Miami catering brochure for the Hanover venue.

// F&B E MPLOYEE SPOTLI G H T Rachel West takes service with a smile to a whole new level. As a cashier, customer service is a huge part of her day-to-day job. She consistently puts guests first, works hard to elevate the customer experience, and adapts to any changes that arise. Rachel always ensures she greets customers, caters to their needs, and keeps the dining commons clean and safe for all. By putting forth a friendly smile every day, Rachel proves herself to be not only a stellar employee, but a good-natured team member. She aims to make her fellow team members feel welcomed and uplifted all while creating the best environment as possible at work.

While not at work, Rachel enjoys painting - specifically impressionism and abstract styles. Her favorite painting subjects are plants, faces, and anything that is organic and free-flowing. In addition to painting, Rachel cares for her 11 pets. She has four ball pythons, a boa, a corn snake, two leopard geckos, an agama, a bearded dragon, and a tarantula.

RedHawks Football: Fueled to Fly High // CAT ERI NG UPDATE Just like everything else, the football season looks a little bit different this year! This unique season finds Miami Catering’s dedicated event and delivery managers doing the important work of serving our football team and coaching staff their pregame meals as they follow all COVID protocol. Team Catering has been hard at work preparing different meals for the game day eve, game day, and a pregame dinner prior to kick-off.

Meals are served at the Gross Student Development Center with socially distanced staff-served buffet stations.

Dinner on game day eve is especially fun with a Chef

manning the grill to prepare their steaks fresh on site!

On game day, the grab-and-go meals are packed in disposable to-go containers to move them efficiently through the line. The entire process is simple, convenient, and keeps everyone safe.

Since COVID restrictions prevent fans in the stands, there are no hot dogs and popcorn in the stands either. Miami Concessions, unfortunately, are all closed this season. But you can still follow the action of the game virtually: https://miamiredhawks.com/sports/football

Eggnog Ice Cream // F& B UPDATE Love it or hate it, it’s everywhere this time of year. If you are a member of the pro-eggnog camp, you might want to try whipping up some eggnog ice cream. I know, eggnog is just a wallop of fat and sugar with the optional spike of spirits and warm spices. But, I can’t really find anything wrong with that.

Myaamia Heritage Collection Partnership // RE TAI L UPDAT E Brick & Ivy is very proud of the partnership it has with Myaamia and has shown this pride through the Myaamia heritage collection. Brick & Ivy has grown the collection this year with new styles for the apparel line, as well as Myaamia Publications sold in conjunction with the Miami Tribe Relations Office. This collection was created by Myaamia members working closely with Brick & Ivy vendors to ensure all of these designs held true to Myaamia and their culture. This new collection is available online and in-store. You can learn more about the collection and the Myaamia Tribe by visiting the Brick & Ivy website or the Tribe Relations website. There is also a short video showing what the Myaamia collection means to Myaamia students linked here.

We hope that everyone will check out the collection and take a minute to learn more about the partnership between Myaamia and Brick & Ivy.

If you’re feeling extra ambitious, Alton Brown has a solid homemade eggnog recipe on the Food Network website. And, if you’re feeling extra festive, you can add a few splashes of dark rum, brandy, or bourbon to this recipe.

Eggnog Ice Cream Yield: 5 cups - 2 cups eggnog - 2 cups heavy cream - 1 (10 ounce) can sweetened condensed milk - 1 teaspoon vanilla extract, or to taste

Mix eggnog, heavy cream, condensed milk, and vanilla in a large bowl. Pour the mixture into an ice cream maker and freeze according to manufacturer’s directions until it reaches “soft-serve” consistency. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.
