43rd Annual Red Brick Run The sun is beginning to shine, the birds are chirping, and it’s time to get outside and enjoy the weather. What better way to enjoy the great outdoors than by participating in the Red Brick Run on April 24! You can run, walk, or jog. It doesn’t matter. The only thing that matters is that you come out and show support. The race will begin at 10:30am at Millett Hall. The entry fee is $20 before April 21 and $25 after. The royalties go towards the Amber Volk Foundation Scholarship. Mark your calendars and let’s get outside! Click here to register.

The ABC's of Summer Events

ABCs, as easy as 123...well, while they may not be all that easy, we are carefully planning a summer of service to a large group of guests, relying on all Campus Service and PFD employees to prepare a great experience for each. Some of the highlighted groups include:

B: Buckeye Boys State - the American Legion civil service week-long conference.

C: Commencement Weekend - housing for those here to celebrate with their graduates.

D: Debate Camp - doubled in size from their first year with us!

F: Fun! Serving a variety of guests throughout the summer months.

National Carrot Day! Shake off the dirt and wear your best orange on this International Carrot Day, on April 4! Whether they’re brightening our winter soups or complimenting the cream cheese icing in our cakes, carrots are always a welcome guest on any plate.

Stovetop Tzimmes

Tzimmes are a traditional Ashkenazi Jewish side dish made with sweet root vegetables. Preparations often include carrots, sweet potatoes, yams, and dried fruits.

Ingredients • 1 1/2 lbs orange yams, peeled and cut into 1-2 inch pieces (2 potatoes) • 1 1/2 lbs white sweet potatoes, peeled and cut into 1-2 inch pieces (2 potatoes) • 1 lb carrots peeled and cut into 1-inch rounds (8 carrots) • 6 oz dried apples (1 1/2 cups) • 6 oz dried cranberries (1 1/4 cups) • 2 cups orange juice • 1/2 cup honey • 1/2 cup brown sugar • 2 teaspoon cinnamon • 1 teaspoon salt • 1/2 teaspoon black pepper • 1 1/2 cups chicken broth (you may substitute "no chicken" broth) • 12 oz pitted prunes (3 cups)

Directions 1. Place cut yams, sweet potatoes, and carrots on the bottom of a large heavy pot.

2. Pour dried apples and cranberries on top.

3. In a medium bowl, whisk together orange juice, honey, brown sugar, cinnamon, salt, and black pepper. Pour mixture over the fruits and vegetables in the pot.

4. Add chicken broth or "no chicken" broth to the pot, covering the vegetables halfway. Heat pot over medium high until it begins to simmer. Stir the ingredients once gently.

Reduce heat to a gentle but constant simmer. Cover the pot.

5. After 45 minutes, open the pot and gently stir again. Place pitted prunes on top of the simmering ingredients.

6. Cover pot. Continue to cook on lowest heat for another 15 minutes, until potato pieces are tender and prunes have warmed and softened. Don't cook too long, or the prunes will dissolve — it will make a nice sauce for the tzimmes, but it won't look so pretty on the table.

Miami Vegan Carrot Cake

Make the delicious Carrot Cake recipe served at all Dining Commons!

Ingredients • 8 oz shredded carrots • 3/4 cup brown sugar • 1/4 cup raisins • 3/4 cup of applesauce • 1/2 cup of canola oil • 1 cup white flour • 1 teaspoon baking powder • 1 teaspoon baking soda • 1/4 teaspoon salt • 1/2 teaspoon cinnamon • 1/4 teaspoon ground ginger • 1/2 cup of buttercream icing

Directions 1. Beat together sugar and oil.

2. Add applesauce, carrots, and raisins.

3. In a separate bowl, combine flour, baking powder, baking soda, salt, and spices.

4.Add dry ingredients to wet ingredients.

5. Pour into 9 inch cake pan. Bake at 350 degrees until toothpick inserted comes out clean. Cool and ice cake with a dollop of buttercream icing.

2022 Myaamiaki Conference

As part of the 50th anniversary celebration of the relationship between the Miami Tribe of Oklahoma and Miami University, we are inviting you to the biennial Myaamiaki Conference on April 9 from 9am - 4pm at Armstrong Student Center. During this event, you will learn about tribe related initiatives and research projects from Myaamia Center leaders. The focus of the 50th celebration is the commitment to neepwaantiinki, the Myaamia word for “learning from each other.” The conference is free and open to the public through a hybrid in-person and virtual format.

Partnership with Aramark

In March, Dr. Creamer had a chance to visit with the Campus Services departments to discuss a new partnership with Aramark. As we move through the process of getting Aramark acquainted with our operations please continue to email Brent Mason or Robin Jackson with any questions or concerns that you may have. Thank you.

Miami PUZ Z L E Skate Into the Ice Show

Goggin Ice Center proudly presents the annual 2022 Ice Show. Performances are Friday, April 29 at 7pm and Saturday, April 30 at 3pm. This year's show, "On the Edge of Time," features skaters of all ages ranging from the Learn to Skate group lesson program, local Miami Skating Academy figure and synchronized skaters, as well as the Miami Ice Skating Club's Figure Skating and Synchronized 610 S. Oak St. Oxford, OH 45056 513-529-9800 Skating teams. “On thegoggininfo@MiamiOH.edu Edge of Time” will feature music and MiamiOH.edu/ICE performances that transcend various time periods. Tickets are on sale now for $10 at the Pro Shop. Children the ages of five and under are free. We look forward to seeing you at the Goggin Ice Center!
