A WEST TENNESSEE TRADITION

West Tennessee OUTDOORS with Ray Jones

While cruising through the country last week I noticed a hog hanging in the air. It had been properly slaughtered, butchered and was being prepared for the next phase.

Send photos to: numberonecoach@hotmail.com or 731-694-8614

My curiosity is got the best of me and I circled around for a better gander. You might say I was being a bit nosy if you will.

However, turns out that was a wise move because later I was eating some of the best homemade sausage you have ever tasted.

Store bought sausage can never come close to the flavor of good old fashion homemade sausage. Not only was there sausage but also pork chops, neck bones, liver and other parts I won’t mention.

Nevertheless, the freshness of that pork was a Southern tradition that has been going on for centuries. The ultimate thing with fresh hog butchering is the making of skins, better known as cracklings. If you have never been around a big black pot with cracklings being cooked over an open wood fire you have missed out on one of the greatest West Tennessee traditions.

Dating back as far as sharecropping days Blacks have always taken the hog and made it into a tasty treat that used every part of it including the pig feet and tails.

If you’ve never tried BBQ pig tails at the Brownsville Blues Festival you better get on down here next year.

Eating pork has always been a West Tennessee tradition and it has gone from a necessity of life to a pleasure of life.

HOLIDAY BLESSINGS

While I was ringing the Salvation Army bell this afternoon at Kroger, I said, “Merry Christmas!” and complimented a lady on the lavender hat she had. It was the same lavender as my coat! She smiled and said that she knits hats and she was looking for someone who liked that hat. She said she wanted me to have it and gave it to me. I was stunned by the kindness of this woman who I just met. Thank you so much, Elaine Jones! That was so sweet. #kindnessatthedropofahat - Wendy Isom Mercer

Henderson, Tennessee — (Dec. 13, 2022) — Freed-Hardeman University Dining Services welcomed three new leadership team members to continue the school’s commitment to provide a food service program that innovates and offers new menu options including made-to-order fresh foods and action stations.

FHU President David R. Shannon met with the food service team to share his appreciation for their leadership at the start of the academic year. “What you do is so important and vital,” Shannon said to the team members. “A strong team will always outperform a strong individual, and I’m excited about what has already happened this semester.”

The new team members include Tim Tenon, executive director of hospitality; Michele Little, general manager and Melissa Rivers, assistant manager of residential dining. Tenon has 35 years of experience in food service and has worked for higher education institutions and private clubs. His primary focus will be guest satisfaction, retail and services. “Students’ palates are very sophisticated, and they have more knowledge about nutritional value, international cuisines and allergens. We’ll make sure we’re responsive to their feedback.”
