1) Pre-heat the oven to 180oC. 2) Season the lamb with salt and pepper.

3) Brush with oil and place on a baking tray.

4) Make incisions in the lamb with a small paring knife, approximately 10cm apart; insert cloves of peeled garlic and rosemary sprigs into the incisions.

5) Place in the pre-heated oven for 1hr 20mins or until the core temperature has reached 72oC. 6) Remove from the oven and leave to rest for a minimum of 30 minutes. This will allow the meat to relax meaning that it will tenderise.

HOW TO COOK A PERFECT ROAST LEG OF LAMB

This leg of lamb has had the aitch bone removed to allow for easy carving.

• Reduce the cooking times to cook to a core temperature of 60oC for the lamb to be served pink.

• This is a consistent product all year round with a fantastic price point.

METHOD 1) Place the lamb in a baking tray, set the oven to 120oC. 2) Cook for 2 ½ to 3 ½ hours, until it’s falling off the bone.

3) Pick through the lamb removing any fat and sinew and shred the meat into fine strands.

4) Add to the meat ground cumin, smoked paprika and ground coriander. Set aside and reserve.

6) Pre-heat a saucepan over a medium heat, add the finely sliced red onions and fry off with the lamb until they’re golden in colour. Allow 80g of lamb per pitta.

7) Now season with salt, pepper and add a squeeze of lemon juice. Add in fresh chopped coriander at the last minute.

8) Finally, toast the pitta; place the lamb inside with some chopped iceberg lettuce, red onions and tomato.

• Serve with healthy kale coleslaw or sweet chilli dip instead of the yoghurt dip.
