This decadent Christmas Day brunch is definitely one for seafood fans. Grégoire Berger, the chef de cuisine at Ossiano, was recently named the 10th best chef in the world, at the international Best Chef Awards and Seafood Speciality Chef of the Year at The Pro Chef Middle East Awards. Chef Gregoire’s eight course ‘Spherification’ festive menu will feature a range of dishes including Gillardeau oysters, foie gras “terrine”, lobster and black truffle along with the chef’s signature dish, the rainbow trout “Floating Island”. Salha and the Million Dollar Band will also provide live entertainment all evening long. The restaurant is perfect for an extra-special Christmas – it’s entirely underwater and has incredible views through to the Ambassador Lagoon. Gaucho Dubai, DIFC The popular Argentinian meat restaurant will be hosting an a la carte brunch on 25th December. Diners can pick from a delicious four-course festive set menu. Mains include rib-eye steak, a rack of lamb, sea break fillet – or of course – turkey. All mains are served with traditional festive trimmings, including Brussels sprouts, carrots, parsnips, beef bacon wrapped sausages, cranberry sauce and homemade Yorkshire pudding. On Christmas Day Park Hyatt Dubai will be serving up an incredible festive feast on the hotel’s beautiful piazza, with views over Dubai creek and the marina. Chef de Cuisine Bipul Chowdhury
Chef Bipul was born and raised in India. Unlike many professional chefs, it was not his childhood dream and aspiration to pursue a career in the culinary world. Only at the age of 16 did he first fall in love with the art of cooking, inspired by his uncle – a professional Chef and a master of the Indian biryani (which until now is Bipul’s favourite dish to cook). With almost 20 years of international experience in 5* restaurants, now he is

My philosophy when it comes to cooking is all about tradition and passion, it stems from my earliest childhood memories, cooking with my mother. She was my greatest inspiration and many of the recipes I cook today are hers. Our approach at St. Regis Abu Dhabi is to bring fresh, authentic ingredients to Abu Dhabi, flavours that are not found elsewhere in the capital. With these we produce traditional recipes and cater to a variety of guests’ palates with simple, honest Italian cuisine. The
Italian kitchen is made for so many people, vegetarians, meat lovers, those who love fresh pasta, rich desserts, coffee, in some places it is trendy to change dishes, and alter menus but we want to showcase truly authentic, seasonal dishes. I love the dishes to be seasonal and embrace events from home, we are preparing for the Christmas season – my favourite time of year! With more than 33 years of invaluable culinary experience, Executive Chef Olivier Chaleil has a wealth of expertise in the F&B and catering realm. Born as a French Canadian, Chef Olivier began his career with apprenticeships in various worldrenowned Michelin star restaurants in France, including the renowned Hôtel “L’Espérance” in St. Père-sous-Vézelay. Following an 8-year period as Restaurant Chef at the Le Meridien Hotel, Vancouver, Canada, Chef Olivier relocated to Taipei, Taiwan, from 1993 to 1997, where he was appointed Executive Chef of The Ritz Hotel, a member of the Leading Hotels of the World. In 1997, he
became the Executive Chef of the globally recognised The Oberoi in Bali, Indonesia.
