In 1895, the word ‘brunch’ came about when Guy Beringer argued that the traditional British Sunday dinner should be replaced with something more relaxed and earlier in the day. “Instead of England’s early Sunday dinner, an ordeal of heavy meats and savoury pies, why not a new meal, served around noon, that starts with tea or coffee, marmalade and other breakfast fixtures before moving along to the heavier fare?” he said.

Since then, the concept of brunch has exploded worldwide. For New Yorkers, brunch often means a couple of drinks and a late meal to recover from the night before. While in the UK, brunch is closer to the original meaning of the word, a generous breakfast served around noon.

But like everything in the UAE, brunch here is bigger, bolder and better than anywhere else in the world.

From extravagant French bubbly to copious amounts of food, along with the likes of foie gras, truffle, lobster and more, brunch in the UAE is synonymous with tremendous amounts of the very best food and drink.

Roast beef glazed with homemade BBQ sauce

INGREDIENTS 4½ lbs rib roast of beef 4 lbs russet potatoes, peeled and quartered 1½ lbs small carrots, peeled and trimmed 1½ lbs onions, chopped 1½ lbs leeks, peeled and trimmed

FOR THE BBQ SAUCE 2 cups water 2 cups ketchup ¼ cup tomato paste ¼ cup brown sugar ½ cup vinegar 4 teaspoons mustard 2 teaspoons salt

• For the BBQ sauce, mix water, ketchup, tomato paste, brown sugar, vinegar, mustard and salt in a slow cooker • Stir slowly to dissolve brown sugar and salt • Cover the beef with BBQ sauce • Prepare the mixed vegetables to cook alongside the beef • Place the beef in the oven for 4 hours at 80°C • Before removing from the oven, lace the beef with BBQ sauce once more

Chef Profile: Chef Mohammad Ali Born in Jordan, Chef Mohammad Ali has been in the industry for over 15 years. He began his career in his hometown at the Marriott Hotel and Four Seasons, before expanding his experience overseas here in Dubai in 2008. Before taking up his position as Executive Sous Chef at DUKES Dubai, Chef Mohammad handled the pre-opening of five luxury hotels, including Atlantis The Palm and Ritz Carlton Abu Dhabi – and was involved in the opening of DUKES Dubai in late 2016. Chef Mohammad is now the brains behind six outlets at DUKES Dubai, including its open kitchen at Great British Restaurant - serving modern British cuisine with his own team of over 60 chefs and stewards.

Serves 4 INGREDIENTS 300g braised wagyu beef cheek and braising stock 4 hen eggs, poached

100g fresh full fat milk 2tsp baking powder 30g butter

FOR THE WAFFLE 100g all-purpose flour 4g egg yolk 200g smoked veal bacon

FOR THE TRUFFLE HOLLANDAISE 200g melted butter 4 white pepper corns 1tsp lemon juice

TRUFFLE HOLLANDAISE • Fill half of the sauce pan with water and bring it to boil. Fit a stable heatproof mixing bowl above the sauce pan.

• Place the egg yolks in a bowl with vinegar, lower the heat and start beating the eggs with a whisk, avoiding it to scramble.

• Keep whisking until the eggs are thick.

• Slowly add the melted butter into the eggs, until obtaining a smooth and creamy consistency.

• Season with salt, lemon juice, pepper and truffle oil.

WAFFLE • In a large bowl, mix together flour, salt and baking powder; set aside. Preheat waffle iron to desired temperature.

Truffle oil, to taste 1 shallot 2 egg yolks 2tsp white wine vinegar Pinch of salt and pepper

• In a separate bowl, beat the eggs. Stir in the milk and butter.

Pour the milk mixture into the flour mixture; beat until blended.

• Sautee the diced bacon, chill and add to the waffle mixture.

• Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

ASSEMBLE • Flake the braised meat and heat together with the braising stock, obtaining a moist texture, season.

• Place all ingredients to your own creativity, covering the egg with the hollandaise.

Chef Profile: Executive Chef Ansgar Werneke Newly appointed Executive Chef Ansgar Werneke was born in Germany and like many professional chefs he started working from the young age of 13. He started off in a small bakery in his home town Essen, Germany.

Here he was introduced to the culinary world from a far, in the beginning he started off cleaning trays, cutting the grass and cleaning cars! He then started to work in the kitchen making fresh bread and cakes. His passion for the

kitchen didn’t stop there as he decided to further develop his interest to become a chef straight after school.

Chef Ansgar always enjoyed making people happy through his culinary creations and started to gain experience across several Michelin starred restaurants in Europe and went on to be part of the Culinary German Junior National Team. He is specialized in contemporary fine dining and believes that anyone who cooks with love,

will produce happiness. With 25 years’ experience under his chef’s apron, he has spent 13 of those years building his career in Dubai working for some of the worlds most recognized brands and has even designed and written his own cook book.
