A Cut Above As a barber at Bellagio, Johnnie Williams gives much more than haircuts.

hen Johnnie Williams gave his first haircut, he was 17 years old and needed to make some quick cash. So he invited friends and family to his house, and for $4 he’d cut their hair in the kitchen, the front porch or anywhere else there was room.

Nearly 20 years later, those $4 haircuts are long gone. Williams, a barber at Bellagio, also runs his own Las Vegas barbershop: Presidential Shave Shop. And after two decades of shaves and cuts, he still loves his job.

It’s in his genes, after all. Williams’ role model has always been his grandfather, who was a barber in Mississippi. He says that’s where he learned the true value of his job.

“My grandfather used to say that being a barber is like being a doctor, a lawyer, a Williams has been fortunate in his career and that has enabled him to psychiatrist and a counselor all rolled into one.” give back. The Rise of Fall Vegas’ Celebrity Chefs Turn Up the Heat on Fall Flavors

or some people, the best way to battle that autumnal chill in the air is to get cozy and then get lost in a hearty dish with savory flavors and stick-to-your-ribs presence. For others, it’s stepping into a warm kitchen and making that dish. And the famous names in fine dining are doing just that. ¶ As the temperature drops, familiar ingredients such as roasted chestnut, apple and squash

will be ladled into dishes at restaurants all over town; but famed chefs have a reputation to uphold and excellence to deliver. This is why they are taking fall flavors, both beloved and barely known, and adding their own stamp, creating dishes that not only warm us to our soul but also rise above the rest. And what can Vegas’ celebrity chefs bring to the table that no one else can? Signature style. ¶ “Most of the restaurants in Las Vegas are chef-driven, so the dishes you get are really an expression of the chef,” said restaurateur Wolfgang Puck of Wolfgang Puck Pizzeria & Cucina at Crystals, Wolfgang Puck Bar & Grill at MGM Grand and Lupo by Wolfgang Puck at Mandalay Bay. “We have our own style of presentation, which lets the Opposite Page, Clockwise from Top Left: 1. We Asked: What is your favorite midnight snack?

These chefs are in the business of creating happiness for others through food. But what brings them happiness? There is no better barometer than what flavors they crave when no one’s around.

hile Wolfgang Puck looks forward to incorporating earthy flavors, Chef Michael Mina – the master behind AMERICAN FISH at ARIA, MICHAEL MINA at Bellagio, SEABLUE and NOBHILL TAVERN both at MGM Grand and STRIPSTEAK at Mandalay Bay – eagerly awaits something a little more bitter. “There are always great ingredients coming out of the markets,” said Mina. “But I would have to say I cannot wait for chicories, which are bitter greens like radicchio. I always have a lot of fun working with chicory; you can use it cold in a salad, or braise it to add a nice bitter flavor to a rich dish.”

For Chef Charlie Palmer of Charlie Palmer Steak at Four Seasons, Las Vegas and Aureole at Mandalay Bay, ingredients including late summer tomatoes and hard squashes such as butternut and acorn are standard. But the highly regarded chef has other favorites too. “One ingredient that gets me

Executive Chef Robert Moore of Jean Georges Steakhouse at ARIA heralds the arrival of fall with the hearty green among other favorite ingredients. “You know fall is coming when we start playing with Brussels sprouts, squash, apples and pears.”

While Chef Moonen explores the marriage of spice and earth-bound animals during autumn, he has gained fame for his seafood dishes and passion for sustainable fishing practices.

This fall, rm seafood will be the first restaurant in Las Vegas to serve sustainably farmed local shrimp from Blue Oasis. Quite fittingly, the chef is developing new shrimp dishes featuring fall flavors in celebration of this addition to his menu.

Chef Susan Feniger, another “Top Chef Masters” contestant and co-owner of Border Grill at Mandalay Bay, elaborated on what fall cuisine is like within the parameters of Mexican

fare. “In the fall, our dishes become more substantial like most restaurants, but at Border Grill that means paella, soups and stews such as fideo and posole and chilaquiles.” The hip cantina is the place to go for upscale Mexican food with a gourmet twist.

Co-owner and fellow former “Top Chef Masters” contestant Chef Mary Sue Milliken said, “We also have a great Negra Modelo Braised Short Ribs dish with rich, malty beer and a spicy, sweet barbecue sauce of habanero chilies and molasses, served with a three-corn polenta as well as manchego cheese and roasted poblano chilies.” Chef Milliken added, “This time of year is wonderful in the kitchen because it’s all about the earthy, complex flavors of mushrooms, squashes and root vegetables. And slow cooking!”

Tom Colicchio of “Top Chef” agreed, saying, “For me fall cooking isn’t characterized by ingredients so much as a method of cooking. The cool weather calls for rich, deep braises and roasts… perfect for a steakhouse.”

That’s not to say that ingredients don’t inspire his dishes. The chef – who has become a household name thanks to his role as lead judge on Bravo’s hit show – said he gets his ideas at New York’s Greenmarket, the largest and most diverse outdoor urban farmers market in the country.

Guests can sample these dishes at Tom Colicchio’s Craftsteak at MGM Grand. The steakhouse, helmed by the James Beard Award-winning chef, celebrates natural flavors and ingredients from small family farms, artisan producers and day-boat fishermen. They also offer an award-winning wine list with a vast selection of California varietals as well as more than 200 bourbon and scotch labels.

Chef Hubert Keller, of Fleur and Burger Bar fame, finds inspiration for his fall dishes within. “Every new dish starts in my mind, and usually very late at night. When it comes to method and ingredients, Chef de Cuisine Richard Camarota of Sage at ARIA Resort & Casino said, “This is the time to bring back warmth. I find myself gravitating to richer braised items. I also bring in some sweetness with vinegars and different sugars. Brussels sprouts and squash appear on the menu as well as different types of mushrooms.”

On its highly anticipated jaunt across North America, Michael Jackson – THE IMMORTAL World Tour, an all-new electrifying production by Cirque du Soleil that unfolds inside the creative mind of Michael Jackson, will perform for an extended run at the Mandalay Bay Events Center in Las Vegas, December 3 - 27, 2011.

I

f Michael Jackson was one of the most widely beloved entertainers and profoundly influential artists of all time, he also was, undeniably, an innovator. He was always looking for the new thing: to bring a dance move or a technique to the next level. In the early 1980s, he defined the art form of the music video with such groundbreaking videos as “Billie Jean,” “Beat It” and the epic “Thriller.” Michael’s sound, style and dance moves inspired subsequent generations of pop, soul, R&B and hip-hop artists. Additionally, he was a diehard fan of Cirque du Soleil; he saw most of the shows many times and, in 2004, he visited the company’s international headquarters and creation studios in Montreal.

The idea of Cirque du Soleil fusing Michael’s world with its own iconic style of live entertainment is only befitting. By constantly pushing creative boundaries, Cirque has created a theatrical wizardry that has transformed the very concept of live performance. The company teamed up with The Estate of Michael Jackson to develop not only this touring show, but a series of “Michael Jackson projects,” many of which will take place at Mandalay Bay. For all intents and purposes, Mandalay Bay is to become the new home of the King of Pop.

To write and direct this pop rock extravaganza, the partners chose Jamie King, a director Variety called one of the most influential “movers and shakers” in the music industry. And it’s no leap to see him at the helm of this Michael-meets-Cirque spectacle. Greatly influenced by his early years working for both Prince and Michael Jackson, King has choreographed some of the most popular music videos and directed some of the most successful concert tours of all time. He has served as Madonna’s creative director for the past 12 years and has worked with an array of superstars including Rihanna, Britney Spears, Céline Dion, Christina Aguilera, Sir Elton John and Diana Ross.

“When Guy Laliberté (the founder of Cirque du Soleil) approached me with this project with a desire to bring Michael’s spirit and energy to the stage, I was wildly overwhelmed,” King recalled. “I danced with Michael and it’s largely because of my experience with him that I can direct these wild, crazy, spectacular music shows.

In my early 20s, he taught me that you have to deliver your utmost best to the fans, to give until you drop. That experience has defined my career, my approach and how I design and direct shows.”

Michael’s voice – The driving force behind THE IMMORTAL World Tour Hard-wired into Michael Jackson’s inspirational music and lyrics, the production conjures up the extraordinary power and emotional intensity of Jackson’s unforgettable concert performances.

“It starts with the music,” said King. “Michael’s voice is what drives the show. I have the opportunity to carry on Michael’s legacy, to take all that energy – all that he was and was going to be – and build it into this production.”

To weave together the all-important musical components of the show, King called upon two of Michael Jackson’s collaborators: Musical Designer Kevin Antunes and Musical Director Greg Phillinganes, who had worked with Michael for more than 25 years, providing an unparalleled depth of knowledge of his M life | 69

music and live performances. “I told Kevin that our goal is not to simply cover Michael, but to take his music to a whole new level,” King explained. “I wanted to get as many songs into this 90-minute show as possible, so this meant mash-ups, remixes and new arrangements. It also meant moving them forward emotionally, weaving songs together in new ways so that the music feels new and fresh all the while respecting Michael’s essence and his voice.”

Antunes, who calls THE IMMORTAL World Tour “the project of a lifetime,” had unprecedented access to the master recordings. “What I’ve done musically is taken the multi-track master recordings and ornamented them in surround sound,” he said. “Some of the sound feels like it surrounds you or comes from above or behind you. We’ve given it a spatial dimension.

Some of the sound virtually appears in front of your very eyes.”

To say Michael’s voice drives the show is somewhat of an understatement. “In some of his songs,” Antunes added, “Michael would let the grooves breathe and he would tuck his voice underneath the music. In this show, the world is going to hear Michael’s voice like they’ve never heard it before.”

To showcase Michael’s voice and support the huge cast, Phillinganes rounded up a stellar group of musicians, including Jonathan “Sugarfoot” Moffett, who played drums for Michael for 30 years. “I wanted to handpick everybody in the band,” he explained. “I knew exactly who I wanted. We have a full band, including horns and an electric cello. I wanted to have as many players as possible with a direct, personal history with Michael. We are all doing this because of the love we have in our hearts for Michael. His spirit will live in this show.”

A high-energy, cutting-edge dancing machine The high-powered, international cast of 65 performers, including 24 dancers, was assembled following an intensive casting process that turned up some real gems.

“We looked for variety as well as individual and group energy,” King explained. “Each performer needed to be spectacular in their own right. The performers are the embodiment of Michael; they are vessels channeling his energy and spirit on stage.”

To bring complexity and depth to the choreography, a creative force of 10 cutting-edge choreographers, many of whom were collaborators with Michael Jackson, worked with King and the performers to bring Michael’s music to life.

Choreographer Travis Payne, who worked with Michael since 1991 and originally co-choreographed pieces like “They Don’t Care About Us” and “Dangerous” with the King of Pop, added: “My goal has been to preserve the essence of the original choreography, which is perfect. We have added additional layers to these classic pieces and evolved them. Michael would always say: ‘If it ain’t broke, don’t fix it!’ But by re-imagining these choreographies, we are celebrating Michael’s work and his innovative approach. To move these choreographies forward and pick up where we left off is a tremendous honor.”

Meshing the worlds of rock and dance, the world of Cirque du Soleil, and the energy and spirit of Michael Jackson has been a compelling experience. The fact that almost half of the creators have worked with Michael has fueled the production and made it all the more real and raw.

Michael’s songs and his world have taken on a life of their own through an acrobatic language only Cirque could create. A mind-bending contortionist comes out of a giant book and turns the pages with her legs; a group of 13 acrobats climb on a tree and hurl themselves from branch to branch, freefalling or spiralling onto the stage; two other acrobats, appearing as a black and a white swan, emerge from a huge flower to perform a graceful straps duo; five Japanese martial arts specialists execute a nail-biting synchronized tumbling act at full-

THE IMMORTAL World Tour invites the audience inside an imaginary world inspired by Michael Jackson’s Neverland Ranch. Once inside the gilded gates, we discover the Giving Tree, a representation of the great oak tree Michael would climb to seek inspiration and write his songs and poems.

Neverland Ranch was also the venue chosen to hold the first meeting of the show’s creative team. “I remember going to Neverland with the creative team and meeting the grounds people who have remained faithful to Michael,” King reminisced. “I recall seeing

the Giving Tree where he would write a lot of his songs and poems, including most of the ‘Dangerous’ tour that I danced on, and I truly felt that I was at the right place creating this show.” The Giving Tree was chosen early on as the main scenic element to anchor the project.

“The tree I designed is not a facsimile of the original tree; it has many personalities,” explained Set Designer Mark Fisher who has earned an international reputation for his spectacular set designs for productions such as Pink Floyd’s “The Wall” and “Division Bell,” the Rolling Stones’ “Steel Wheels” and “Bridges to Babylon,” U2’s “Popmart” and Cirque du Soleil’s epic KÀ. “The tree undergoes various transformations during the show; it is articulated and can break apart depending on the scene.

It turns into a root system for the “Thriller” scene and becomes a high-tech object toward the end of the show. A metaphor as well as a centralizing piece, the Giving Tree creates a symbolic world for Michael’s memory to occupy.”

World-renowned Props and Scenic Designer Michael Curry, who was one of the designers on the “THIS IS IT” concert tour, has developed storytelling devices that are nothing short of stunning, including two dancing elephants as well as a book of tales and an upside down tree used as acrobatic devices. Michael’s famed glove, hat and shoes become giant props inhabited by nimble acrobats. Curry’s goal was to tap into and trigger fans’ memories of Michael and to focus attention on the performance. Many of the puppetmaster’s devices are subtext for the songs or support the narrative.

The projections in THE IMMORTAL World Tour also act as storytelling devices. Projection Designer Olivier Goulet has integrated breathtaking images, including footage of Michael’s performances, real-time projections of the performances on stage and a largerthan-life evocation of Michael himself in the form of a video sculpture.

KÀ takes Comic-Con to New Heights

What started as a ragtag troupe of street performers in Montreal has evolved into the world’s most influential and renowned entertainment company. Their spectacular productions are known for incorporating complex choreography, gravity-defying acrobatics,

Cirque du Soleil’s immensely popular spectacular KÀ can usually be found in only one place: MGM Grand Las Vegas. But this year, the epic about two twins separated from an early age traveled to San Diego for Comic-Con. “While the marriage between the cinematic live adventure and the comic book/pop culture convention better known for playing host to Spider-Man or The Green Lantern may not make sense at first glance, the two were perfectly compatible,” said Keith Wright, KÀ’s operation ©Cirque du Soleil Inc. / Photography by Kevin Winter production manager. “In both cases, the audiences tend to be interested in heroics, technology, martial arts and amazing ‘Superhero’ - like stunts that we are able to achieve at KÀ. KÀ is kind of CGI (computer-generated imagery) in real life.”

KÀ’s field trip to the West Coast marked the first time Cirque du Soleil replicated a show with such rigorous technological demands outside of one of its theaters. Since its 2004 debut, KÀ has delighted and entranced audiences with its mystical blend of graceful acrobatics and fierce Asian combat. The use of martial arts makes it unique among Cirque du Soleil’s slate of programs, as does its linear storyline, said KÀ artistic director Marie-Hélène Gagnon.

With more than 2,000 in attendance, the Comic-Con presentation opened with a large-scale video projection to set the stage, explaining the story of twins avenging their parents’ death during the final battle scene. It gave way to a breathtaking recreation of the final fight scene featuring two of KÀ’s gravity-defying acrobats magically soaring and spinning their way into what must surely be the most elegant war ever waged, as evidenced by the crowd’s awe-struck reaction.

Mounting the six-minute production on a vertical wall at San Diego’s PETCO Park took 14 months of intricate planning involving five companies and the challenge of turning the San Diego Padres’ baseball stadium’s facade into a 3-D performance space. Cirque du Soleil worked closely with mixed-media company AD X Media to integrate the exhilarating 3-D and live action. “We felt that Comic-Con would be a relevant venue to show off a blending between live performers and large scale-projections,” Wright said. “We hoped to, and did, achieve a successful merger of live action and filmed stunts put to a powerful soundtrack in a venue that was not specifically designed for the performance.”

In addition to the grand spectacle, there were minute details, imperceptible to the audience, which had to occur for the performance to take flight. “We had to come up with a way to mount winches, normally connected to the building structure of our theater, on a flat roof, outdoors, in a different city. The performers had to adjust to using slightly different equipment on a vastly different surface and deal with wind, obviously not a normal concern for us,” said Wright.

Cirque du Soleil continuously updates the show, making use of cutting-edge technology, so KÀ is ever evolving to remain fresh and scintillating for first timers and show veterans alike. “Some acts have been changed completely,” Gagnon said. “All choreographies and cues have been worked on in order to clarify the story and upgrade the acrobatics.” No matter the changes, what remains is the heart-stopping thrill of watching KÀ’s magnificent action. Everything has a reason and is rooted in Michael’s songs and his world.”

The production brims with astonishing costumes and outfits. Gangster types have surreal guns tucked in their pockets; when they pull the trigger built into their gloves, they shoot pyrotechnics. Frightening mummy characters don white, sparkly outfits; you can make out the fresh blood and organs behind the wrappings.

As well they might. A mere two years since Michael’s passing, the sheer thrill and excitement of having the opportunity to pay such a heartfelt tribute to one of the most beloved artists of all time would send a shiver through anyone’s spine.

“Throughout the creative process, Michael has been a guide and a beacon,” said Director of Creation Chantal Tremblay.

Offers Unique Through Private Selection

ebastien Vallet happily lives in a world of spirits. No, he’s not a ghost whisperer, but the expert responsible for creating tasty drinks at MGM Grand. Venturing beyond the bright lights of Vegas,

Vallet takes his seriously discriminating palate to the hills of Kentucky and Tennessee in search of the ideal bourbon and single barrel whiskey.

Those private selections will be bottled exclusively for MGM Grand.

“People are going back to basics,” observed Vallet. “Our guests want more artisan liquors and locally produced beer and wines. They want quality products made the correct way. Our blends are made from the best of the best barrels at the distillery.

When our guests discover that, they come back for more.”

During his recent trip east, Vallet visited the Woodford Reserve Distillery near Versailles, KY and the famed Jack Daniel’s Distillery in Lynchburg, TN. There he met with the master distillers to select spirits for MGM Grand guests to enjoy at one of the resort’s many fi ne restaurants and bars. Visitors may also purchase a bottle to take home. Each bottle displays a specially designed label signifying the whiskey was bottled exclusively for MGM Grand.

Brown-Forman, which owns both the Woodford Reserve and Jack Daniel’s distilleries, works closely with the experienced staff at MGM Grand. The resort was the fi rst to offer the barrel selection, making the program the benchmark.

And for Vallet there is always something to learn from master distillers Chris Morris at Woodford Reserve and Jeff Arnett at Jack Daniel’s about the nuances and complexity of spirits.

Vallet began his experience in Louisville, KY with a visit to the Brown-Forman cooperage where they make the barrels for Jack Daniel’s, Woodford Reserve, Early Times, Old Forester and other spirits. Brown-Forman is the only spirits company that makes its own barrels, manufacturing 2,200 oak barrels a day. Those barrels have considerable impact on the fl avor of whiskey that emerges after the maturation process.

It is the grain, type and age of wood that impart different characteristics.

“A lot goes into the making of the spirit. Flavors come from the quality of the raw products, attention to detail during fermentation, distillation techniques and the aging process as well,” said Vallet.

After visiting the cooperage, Vallet traveled to the Woodford Reserve Distillery, where he was welcomed by master distiller Chris Morris. A well-known authority in the spirit world, Morris serves as a judge at the International Wine & Spirit competition in London and is on the advisory council for the World Whiskey Conference.

Vallet began his experience at Woodford by sampling the exquisite bourbon balls offered in the welcome center before embarking on a tour of the distillery.

“Every bourbon whiskey shares the same five sources of fl avor,” explained Morris.

“It has a grain recipe, a water source, a fermentation process, distillation and, of course, a maturation process. We individualize each of those five sources to craft a truly unique bourbon whiskey.”

Morris shared the recipe for Woodford Reserve with Vallet, which is 72% corn, 18% rye and 10% malted barley. All the corn is supplied by Langley Farms in nearby Shelbyville, KY. The limestone water comes from a well fed by Glenn’s Creek 95 feet below the surface. It is devoid of iron yet contains calcium, which the yeast needs for fermentation.

To begin the selection process to determine which barrels MGM Grand will bottle as its Private Selection, Morris led the group into Woodford’s historic buildings and walked them through the cooking, fermentation and distillation process and into the warehouse that holds the barrels of bourbon during the maturation process, which takes six to eight years.

Eyeing the barrels, Vallet said, “The barrels we choose from have been singled out by the master distiller, but one blend usually stands out from all others. We look for well-balanced products with bold fl avors and long fi nishes. The barrels that really excited us on this trip had notes of butterscotch, pecan and cedar.”

Morris selected eight barrels for Vallet to sample. Vallet took a deep breath, drawing in the aroma of the fi rst glass and as he sipped, marveled at the butterscotch and nutmeg fl avors with a burst of orange in the fi nish; Morris pronounced it “dry but not overly oaked.”

As the tasting continued, they shared thoughts on each sample and after tasting and making notes, they were asked to rate the selections. Morris kept score on a large board and determined, according to the scores received that barrels No. 1, 3, 4 and 7 would be tasted in the next round. He then combined the samples into different blends, mixing No. 1 and 3, then 1 and 4 and so on.

After trying the various blends, samples No. 3 and 4 combined to produce the well-balanced fl avor Vallet wanted to take back to MGM Grand guests, one with sweetness, complexity, a little spice and a subtle pecan fl avor.

Morris provided Vallet with bottles to take home and the rest were hand bottled, specially labeled and shipped to MGM Grand. Vallet is excited about the bourbon he’ll be offering. “Our guests are more curious and informed about spirits and are far more likely to try something new than in the past. Exclusive blends give mixologists so many more options, they get to play with a product that no one else will ever have access to and create unique cocktails.”

The next day, Vallet’s quest for refi ned single barrel whiskey took him to the famed Jack Daniel’s distillery. Founded by Jack Daniel in 1866, it is the oldest registered distillery in the U.S. During a tour of the distillery, visitors learn about Daniel’s life (he was never married and had no children) and see the limestone cave spring, the water source for the distillery. Another thing that makes Jack Daniel’s whiskey unique is the process of charcoal mellowing. Large quantities of sugar maple wood called “ricks” are stacked and burned to create a special charcoal. The whiskey flows through 10 feet of crushed charcoal before bottling.

Surprisingly, the Jack Daniel’s Distillery is located in a dry county where it is legal to make whiskey but illegal to sell or consume it. Visitors expecting to sample

fermentation, distillation techniques and the aging process as well.

Jack Daniel’s whiskey at the conclusion of the distillery tour are often surprised to fi nd a sample of lemonade awaits them instead of the famed Old No. 7 brand.

Vallet’s participation in the private selection program allows him to work with Jack Daniel’s master distiller Jeff Arnett, the seventh distiller in the company’s 144-year history. Not only does this afford him the opportunity to sit down with Arnett and pick his brain, he also gets to sample products in a super-premium category in order to fi nd the best of the best.

After sampling from the three barrels Arnett has selected, Vallet chose No. 38.

“For people who’ve had a lot of single barrel before, they’ll fi nd it nice,” Arnett said, “but for someone who has never tasted single barrel before, it’s very approachable as well. It has a great sweet-to-oak balance and a nice creamy center. People who are already whiskey drinkers are going to try this and say, ‘this is one of the best I’ve ever had.’ For people who are not long-term whiskey drinkers, they are going to say, ‘I wished they all tasted like that.’”

The Center Bar in the Center of It All raditionally, the basic requirements for a casino lounge have been access to adult beverages and enough seating to offer a temporary respite from the gaming action – enough just to refuel before rolling the dice again. But today’s ultramodern lounges have become destinations unto themselves.

One such locale is MGM Grand’s Centrifuge, a chic, circular lounge that pulls triple duty as a pre-, post- and mid-party destination. A variety of seating options – ranging from plush loveseats to high-back bar stools – accommodates large groups as well as singles.
