På MS Oslofjord ble underholdningskonseptet Fjordsprell møtt med stor entusiasme våren 2015. En rekke gode tilbakemeldinger og innspill førte til at vi nå har tatt konseptet ut på alle våre skip og linjer som opererer i høst- og vintersesongen.

På MS Bergensfjord og MS Stavangerfjord har vi trykket de reisendes matønsker til vårt hjerte. Resultatet er Grieg Steakhouse, en restaurant som serverer kanadisk oksekjøtt i verdensklasse.

On the MS Oslofjord, the entertainment concept FjordFrolic was greeted with great enthusiasm in the spring of 2015. The positive feedback and suggestions we received led us to expand the concept to all of our ships and routes operating this fall and winter. On the MS Bergensfjord and MS Stavangerfjord, we took our guests’ food preferences to heart, resulting in Grieg Steakhouse, a restaurant focused on serving world class Canadian steaks.

Gøteborgs skattkammer JAKTER DU PÅ NOE INTIMT OG EKTE I EN STOR BY, ER HAGA MIDT I BLINKEN. Tebutikk med over 200 sorter å velge mellom, såpebutikk som har produksjon på bakrommet, en av Sveriges eldste marsipan- og sjokoladeforretninger og vintage mote. Langs meter på meter med brostein ligger over 80 butikker, kafeer og restauranter pakket inn i hvite, røde, gule og brune fasader. Noen i tre. Noen i mur. Flere fra 1800-tallet. Haga er Gøteborgs eldste forstad og kanskje mest sjarmerende bydel.

Hunting for something personal and genuine in the city?

Head for Haga.

A tea shop with over 200 varieties to choose from, a soap store that makes its own products on site, one of Sweden’s oldest marzipan and chocolate establishments, and plenty of vintage fashion. Lining the cobblestoned streets are more than 80 shops, cafés and restaurants, all tucked in behind white, red, yellow and brown facades – some in wood, others in masonry, and many from the 1800s. Haga is Gothenburg’s oldest satellite district, and perhaps its most charming neighborhood of all.

Hos Stiernglans finnes hatter fra verdens eldste hattemerke, hos Trätoffelfabrik och Lädderaffär kan du kjøpe gode gammeldagse treklogger, hos Bräutigams kan du smake lokalprodusert marsipanis, hos Kawaii venter japansk mote og accessories, mens Sjöbaren frister med lekre sjømatsretter.

En del husker kanskje også den svenske fjernsynsserien Albert og Herbert, som handlet om en gammel skrothandler og sønnen hans i et gammelt trehus i nettopp Haga. Serien gikk sin seiersgang på 1970- og 1980-tallet. Et stykke ned i Nygata kan nostalgien innta deg på Café Hebbe Lelle.

Når handleposene er fulle og bena begynner å bli trøtte, ligger det ærverdige Hagabadet for dine føtter. I et bygg fra 1876 med flotte utsmykninger på innsiden kan du slappe av i basseng og kurbad, eller få profesjonell massasje og ansiktsbehandling.

Haga ligger et lite hakk utenfor de mest vanlige turistløypene og huser noe for alle og enhver!

At Stiernglans you’ll find hats from the world’s oldest hatter, at Trätoffelfabrik and Lädderaffär you’ll try on good old-fashioned wooden clogs, at Bräutigams you’ll taste locally produced marzipan ice cream and at Kawaii you’ll admire the latest Japanese fashions and accessories. At Sjöbaren, the delectable seafood dishes are the temptation.

Some of us may remember the Swedish television series Albert & Herbert, about an old junk dealer and his son in an old wooden house in Haga. The series was a hit in the 1970s and 1980s.

Let nostalgia take hold of you at Café Hebbe Lelle, a short way down Nygata.

Søgaards Bryghus - Claus S

I

2004 åpnet Søgaards Bryghus midt i Ålborg sentrum.

– Jeg hadde vært i hotellbransjen i mange år og ønsket en forandring.

Samtidig var jeg veldig interessert i øl, sier eier Claus Søgaard, som hentet inspirasjon under en tur til USA og mikrobryggerier i Portland.

I begynnelsen brygget han selv. Nå er det så travelt at han ikke har tid lenger.

250 000 liter øl strømmer gjennom tankene i produksjonslokalene hvert år.

Bryggerens arbeid kan betraktes gjennom et glassvindu.

– Det er en spennende prosess som vi gjerne vil dele med våre besøkende, sier ølkunstneren.

I 2013 tok Claus Søgaard bronse i et europeisk mesterskap i ølbrygging. Han har alltid 24 forskjellige øltyper på kranene, alt fra lette klassiske pilstyper til fyldige ales og sterkere sorter.

En smak av håndarbeid En liten halvtime med bil nord for Ålborg holder et annet mikrobryggeri til i Hjørring. Et bryggeri hvis tradisjoner er enda noen år nyere enn Sødgaards.

I produksjonen treffer vi bryggerimester Nga Phan. Han kan fortelle at Bryghuset Vendia har fem faste ølsorter i sortimentet sitt, pluss en rekke sesongbaserte øltyper, blant annet en egen juleøl.

Delightful Danish brews

There are close to 100 different microbreweries in Denmark.

In and around Aalborg, you will find brewers with different specialties.

In 2004, Søgaards Bryghus opened right in the center of Aalborg.

“I had been in the hotel industry for many years and wanted a change. And I was very interested in beer,” says owner Claus Søgaard, who was inspired by a trip to the United States and microbreweries in the city of Portland, Oregon.

At first he did all his own brewing. Now it’s so busy he doesn’t have the time. Each year, 250,000 liters of beer flow through his production tanks.

The brewing process can be viewed through a glass window.

“It is an exciting process that we like sharing with our visitors,” says the beer craftsman.

In 2013 Søgaard got bronze medal in a European beer championship.

He always has 24 different beers on tap ranging from classic light pilsner types to rich ales and even stronger varieties.

The artisanal touch A half-hour’s drive north of Aalborg, in Hjørring, is another microbrewery: Bryghuset Vendia. Its traditions are even newer than those of Sødgaard. In the production area, we meet master brewer Nga Phan. He says Vendia has a fixed repertoire of five beer varieties while producing a number of seasonal beers as well, including a special one for Christmas.

“As far as possible we avoid using machines,” says Phan, who was born in Vietnam. “The beer’s flavor should reflect the fact that it is handcrafted. It should have a homemade touch.”

Tours of the production facility are offered to groups of 10 or more.

Anyone is welcome to buy beer and take it home, or to enjoy a meal at Vendia’s renowned gourmet restaurant. You can even design your own bottle labels.

– Vi unngår i størst mulig grad å bruke maskiner. Ølsmaken skal bære preg av at den er håndlaget. Den skal ha en hjemmelaget touch, sier den vietnamfødte bryggeren.

Grupper på ti eller flere kan få omvisning i bryggeriet. Hvem som helst kan komme innom og kjøpe med seg øl og samtidig nyte et måltid i Vendias kjente gourmetrestaurant. Du kan også designe din egen etikett på ølflasken.

Familiebrygg i Nibe Et lite stykke sørvest for Ålborg ligger den lille byen Nibe, kjent som et hyggelig sted å handle. I havneområdet langs Limfjorden har Nibe Bryghus fått rotfeste. I familiebedriften står sønnen og svigersønnen til eieren i spissen for den daglige driften.

– Starboard er desidert den mest populære ølsorten vi har. Det er en litt søtere pils, sier Benno Bonde, styreformann og sønn av eier Verner Bonde. Bryggeriets signaturlinje omfatter seks ølsorter.

Mikrobryggeriet i Nibe byr på ølsmaking og gruppeomvisning, og kan i likhet med Vendia tilby flasker med skreddersydde etiketter.

– Dette er veldig populært, men det krever litt kommunikasjon og tid. Det er ikke noe problem å sende flaskene til Norge eller Sverige etterpå, sier Bonde og legger til at de også tilbyr ølsmaking og omvisning for grupper.

Satsingen på spesialøl og kvalitetsdrikke ser ut til å fortsette å stige. Det ventes dermed at enda flere mikrobryggerier vil dukke opp over de neste årene. Dersom du ønsker å legge ut på en større nordjysk ølsafari, kan turen også inkludere Læsø Bryghus, Løkken Bryghus, Skagen Bryghus, Restaurant Bryggen i Thisted og Thisted Bryghus, og for eksempel Ølleriet Håndgjow i Heltborg.

A family brew, in Nibe Slightly south-west of Aalborg is Nibe, known for its charming old trading center. In the town’s port area along the Limfjord, Nibe Bryghus has become a fixture – a family business, owned by a father whose son and son-in-law run the daily operations.

“Our most popular beer is definitely ‘Starboard’. It is a somewhat sweeter pilsner,” says Benno Bonde, son of owner Verner Bonde.

Their signature line includes six different beers.

Like Vendia, Nibe offers bottles with customized labels.

“That is very popular, but it requires a little communication and time.

Sending the bottles to Norway or Sweden afterwards is no problem,” says Bonde, adding that beer tasting and group tours are also offered.

The investment surge in specialty beers and quality drinks seems to be continuing. Even more microbreweries are expected to appear in the next few years. If you feel like embarking on a major beer safari across the northern Jutland area of Denmark, you may also consider Læsø Bryghus, Løkken Bryghus, Nibe Bryghus, Restaurant Bryggen, Skagen Bryghus, Thisted Bryghus and for example Ølleriet Håndgjow in Heltborg.

Folks from around the world flock to Norway’s fantastic winter sports landscape to join the Norwegians at their own game: cross-country and alpine skiing.

And indeed, over half of Norwegians asked in a survey conducted by Norwegian outdoor magazine Friluftsliv said they would definitely go skiing this winter. Skiing is part of Norway’s identity and lifestyle, and many foreigners marvel at the urge Norwegians feel to strap on long, skinny planks and glide away on the year’s first snow.

Many experts believe skis were used in Norway more than 6,000 years ago, and that it all began with the Sami reindeer herders in the north before spreading to hunters, fishermen and eventually to explorers like Roald Amundsen, the Norwegian who conquered the South Pole on skis in 1911. Norwegians transformed skiing from a “means of transport” into a sport, and organized what is considered the first formal cross-country race, in the city of Tromsø in Northern Norway in 1843. Some 172 years later, skiing is Norway’s biggest sport and national pastime.

or første gang i historien har Michelin-guiden vendt blikket ut av den danske hovedstaden i sin stjerneutdeling.

I begynnelsen av 2015 kunne tre århusianske restauranter stolt skilte med hver sin første Michelin-stjerne.

– Jeg har jobbet mot dette i over 15 år. Da beskjeden kom, gikk endelig min største drøm i oppfyllelse, sier Wassim Hallal om øyeblikket da han fikk en stjerne til sin restaurant Frederikshøj i Århus.

Totalpakken som gjelder Det er onsdag formiddag i restauranten til Hallal. Flere av kokkene har allerede ankommet, og forberedelsene til kveldens inntog av gjester er i gang. På venstre bryst på den hvite kokkeskjorten er navnet til Wassim Hallal sydd på med sort tråd. At han har øye for detaljer, er det liten tvil om. Ingenting er overlatt til tilfeldighetene. Helt ned til valg av fat og bestikk. Hallal mener at kvaliteten ligger i totalpakken.

– Det handler ikke bare om maten. Utsikt, veggdekor, servitører og atmosfære er like viktig. Det ene kan ikke leve uten det andre. Alt henger sammen, sier den 35 år gamle kokken med en restaurant som er omkranset av en stor og flott hage.

Skryt fra prinsen Det er kanskje dette øyet for detaljer og perfeksjonering som har gitt Frederikshøj et renommé som tiltrekker seg gjester og kjendiser fra både nært og fjernt. Selv forteller Hallal at han aldri vil glemme den gangen danske prins Henrik kom med en personlig kompliment etter et av sine besøk.

– Han skrøt av desserten. En rekonstruert versjon av en blodappelsin.

Han sa at den var «magnificent», sier Hallal.

Ledig rom Over 1 000 reservasjoner ble registrert den første uken etter at Michelinstjernen var et faktum. Selv om restauranten er oppbestilt hver helg i lang tid fremover, er Hallal opptatt av at det ikke skal være umulig å få bord. På en hverdag er det som regel nok å legge inn reservasjon et par dager i forveien.

– Dessuten har vi av og til avbestillinger. Det er alltid verdt å sjekke med oss, sier han.

SMØRREBRØD-TIPS! Har du lyst på et stykke ekte danske smørrebrød, pakket med gode råvarer og unike smaker, anbefales en tur innom F. Høj. Den lille kafeen, som er eid av Wassim Hallal og er nevnt i Michelin-guiden, ligger i Grønnegade 2 i Århus.

or the first time in history, Michelin has awarded stars outside of the Danish capital. Three Aarhusian restaurants have proudly displayed their Michelin stars since the beginning of 2015.

“I have been working towards this for over 15 years. When the message came, my biggest dream finally came true,” says Wassim Hallal about the moment his restaurant Frederikshøj in Aarhus was awarded its star.

The total experience It is Wednesday morning in Hallal’s restaurant. Several of the cooks have already arrived, and preparations are under way to receive the evening’s guests. Hallal’s name is sewn in black thread on the upper left front of his chef’s shirt. There can be little doubt that he has an eye for detail. Nothing is left to chance – right down to the choice of dishes and cutlery. Hallal believes quality is a function of the total package.

“It is not just about the food. The view, the wall decor, the wait staff and the atmosphere are all equally important. They all need one another to live. Everything is connected,” says the 35-year-old chef whose restaurant is surrounded by a large and beautiful garden.

Praise from the prince That eye for detail and perfection may be what draws guests, including celebrities, to Frederikshøj from near and far. Hallal says he will never forget the time Denmark’s Prince Henrik personally complimented him after one of the royal’s visits.

“He had high praise for the dessert,” says Hallal. “A reconstructed version of a blood orange. He said that it was ‘magnificent.’”

A free table?

Over 1,000 reservations came in during the week after the Michelin star was bestowed. Although the restaurant is booked every weekend well into the future, Hallal wants to make sure getting a table is not impossible. For weekday dining, it’s generally sufficient to make a reservation a few days in advance.

“It is also the case that we sometimes get cancellations,” he says.

“It is always worth checking.”

Kok opp og la kraften trekke i cirka en time.

Krabbene svis hardt i en gryte med løk og flamberes med cognacen.

Fiskekraften helles gjennom en sikt over krabbene før det hele kokes med tomatkonsentrat i om lag to timer.

Deretter siktes suppen på nytt og tilsettesto liter fløte.

Reduser suppen ned til det halve og smak til med salt, pepper og presset sitron. Bland i smøret før servering.

Suppen kan brukes sammen med de fleste typer grillet fisk, hummer eller liknende. Server gjerne med grovt brød.

Soup 3 kg common shore crabs 3 onions 1/2 bottle good cognac 2 dl tomato paste 2 l organic cream 2 lemons About 200 g organic butter

Bring to boil and let simmer about 1 hour.

Singe crabs in a pot with onions, then flambé with the cognac.

Pour the stock through a strainer onto the crabs, simmer with tomato paste for about 2 hours.

Pass soup through the strainer again and add 2 l cream.

Reduce soup to half volume; add salt, pepper and squeezed lemon juice to taste. Mix in the butter before serving.

This soup may be served with most types of grilled fish, lobster and other seafood. Whole-grain bread makes a fine complement.

– Det lå egentlig ikke i planene våre å få en Michelin-stjerne. Vi skulle være en restaurant med lokal forankring, en som var til for alle århusianere, legger han til.

I verdensklasse Totalt er Århus hjem for over 260 restauranter, og byen rommer flere kjente spisesteder. De tre enstjerners Michelin-restaurantene – som hver byr på kjente retter med en personlig vri – løfter derimot gastronomibyens rykte opp i den internasjonale eliten.

A surprise Tables at the other two Michelin-starred restaurants in Aarhus have been in equally high demand. Gastromé and Substans both report busy days and full houses.

“We had not been open more than six days when the Michelin Guide’s representative came to visit,” says Gastromé’s owner and chef, Søren Jakobsen. “People barely knew who we were when the Michelin star was announced. So I would guess we were the biggest surprise among the three that were selected.”

“Our plans didn’t really include getting a Michelin star,” he adds.

“We were supposed to be a restaurant with local roots, for all Aarhusians.”

World class Aarhus is home to more than 260 restaurants in all, and more than a few of them are quite well known. However, the three one-star Michelin restaurants – each offering familiar dishes with a personal twist – lift this city of gastronomes into the international elite.

Hallal already has his sights set on Michelin star number two.

Det levende museet Den Gamle By i Århus viser hvordan dansk jul har blitt feiret fra 1600-tallet og frem til 1974. Museet byr på juleutstillinger, historiske butikker og julemarked.

A Christmastime visit to Copenhagen’s Tivoli Gardens is a firm tradition for many of the million-plus people who celebrated there last year. Ever since 1994 the amusement park has been lavishly decorated for the season – last year, with more than 25,000 Christmas balls and 2,800 meters of spruce garland.

Tivoli’s 50 gift stalls ensure successful shopping. Christmas at Tivoli is celebrated between November 14 and January 3.

The living, open-air museum of Aarhus’s Old Town presents Christmas as Danes celebrated it from the 1600s through 1974.

Christmas exhibitions, historic shops and of course a Christmas market all evoke that holiday feeling. The museum includes a special Christmas house, with a loft for the elves. Christmas in the Old Town is celebrated between November 14 and January 3.
