Double Vision: Sustainable Bite in Tillamook mixes good food with environmental sustainability for successful recipe

C

hris and Alexa Coulombe opened Sustainable Bite in Tillamook with a double passion for the environment and food and a love for cooking and making people happy.

The combination is working for the Coulombes.

Since opening in the spring, business has exceeded their expectations.

“Our model has changed some since opening,” Alexa said.

“We first wanted to do a food truck, then we found this place and decided to go for it.”

The new restaurant, located on third street in the old Muddy Waters building, is open for lunch and will soon open for breakfast, with an emphasis on sourcing as much of their offerings as locally as possible, according to the owners.

“When we opened in this location, we expected to get more take-out business,” Chris said. “But people love to sit in the corner and relax and look out the window.”

Sustainable Bite is really the combined ideas of Chris and Alexa.

Chris loves to cook and Alexa is passionate about the environment. And they both agree about the importance of sustainability.

opening on what Chris calls, “Secret Saturday” for the locals. “We will keep our closed sign up but we will be secretly open for the locals to pop in and grab a breakfast sandwich or wrap,” Chris said. “We’re not going to be advertising Saturday’s but we will be here working on stocking and prepping for the next week so we will feed our customers if they come in.”

“Everybody loves to eat,” Alex added. “Business has been good so far, this has morphed into a much busier venture than we expected, which is good, it’s not what we expected, but it’s been great.”

“We have our daily customers, a lot of mine are gone now and I miss them so much,” Karen said. “I met

so many people having this cafe, so many good people.”

Now that the girls have had the restaurant almost 10 years. They are busy every morning, cranking out plate size pancakes, made to order bacon, fresh eggs, baked goods until after the lunch crowd dies down.

“My girls have it all set up,” Karen said. “The staff as been with us for years — Raul Camacho and Shelly Green handle the cooking and Ragan Bradish has been our waitress for a long time. “Everyone is cross trained to do whatever job is needed. Raul is constantly getting recruited by other restaurant owners, but he has been with us for a long time and we love Raul, and Shelly is the friendly tornado, she goes 100 miles per hour — we have a great staff.”

Karen admits that it was the groundwork her mother Hazel laid over the years as the biggest reason the cafe is still successful today.

“We had a business built up by my mom and I did not change a thing,” Jen said. “Good homemade old fashioned comfort food, but we will make anything for our customers, if they want a burger at 6 a.m. we make it for them — everything on our menu is served all day long, breakfast or lunch.”

Jen admitted that having her mom stop in is nice, she said she usually puts her to work.

she likes to chit-chat so sometimes we have to crack the whip on her... not really,” Jen said.

But early on, Jen and Joni almost passed on the business venture.

Jen says that if it were not for her Grandfather, Charles, they might not have taken over the business.

“We didn’t want to do this at all, but my grandfather told us we couldn’t let it go,” Jen said. “He told us it would always feed your family, so we decided to do it, I’m glad we did and I’m glad we did it together.”

And as long as Jen and Joni follow Hazel’s business plan for the place and Karen’s work ethic and drive, it should be around for many more years.

“We don’t do a lot of advertising, it’s word of mouth,” Jen said. “We don’t see the ups and downs this place has always been supported by the locals and our steady customers.

It gets a little slower in the winter, but not that much.”

The cafe is open seven days per week for breakfast and lunch, rain or shine all year long from 6:30 a.m. to 3 p.m.

“We have served neighbors during power outages,” Jen said. “When they could not cook, we fired up the grill and cooked for them, we are all family here.”

Gladson has been a glassblower since 1990.

His biggest challenge has been meeting the demand with a growing group of visitors who stop by his shop to take a lesson.

It is something he admits he really enjoys doing, performing for the visitors.

“What is really flying here is the classes.

I have many different things you can blow.

You can make the float with a hook so you can hang it, you can do it with a flat bottom and set it on a mantle, or you can make it into a nitelight,” he said. “You can do a paperweight egg. You can do a vase or

a bowl,” he added, noting just some of the choices his students have.

“It has been just phenomenal how busy I have been just doing the classes,” he said.

There also has been a very positive response left online by the students, with some posting comments and others posting videos.

“People are really happy with the experience. I am very thorough – and a live wire,” he said, adding a smile.

At times, it may get a little crowded in the repurposed gas station that Gladson calls home. “I have had as many as 14 at one time in a class.

“First thing I do after they decide the color, I run them through safety. I tell them what not to touch.”

Sometimes, Gladson admits he likes to show off a little bit for the students. He proceeded to demonstrate rolling the molten glass behind his back or using his legs.

“It is really demanding. You can’t stop and take a break. When you start a piece, you have got to finish the piece. You have got to have a certain timing because of the temperatures. If it gets too cold, it will crack.

“You have got to keep on top of it and maintain the temperature,” he explained.

“But once people get the rhythm, it is almost like a dance,” Gladson said.

The Ring of Fire is the sixth glass shop he has started over the years.

After learning the basics, he admits being self-taught when it comes to blowing glass. “It is mechanical thinking… It is just troubleshooting. It is heat versus gravity.

“You have got to keep it rotating and turning,” he explained.

When you watch John whip the rods of molten glass around his shop cooling and forming the pieces while adding layers of color and then adding more molten glass, it’s almost like watching a graceful dancer turn ninja from one motion to the next.

But every action he takes is a contrived step in the process.

“The art flows with my energy, everytime I do something it has a purpose,” he said. “I like the motion, I like to move.”

Gladson readily admits he enjoys instructing the people who stop by to take his classes. “I’m very thorough,” he added.

“We create memorable moments, and that’s what it’s all about.”

Gladson was a featured artist years ago when he had a shop in Mt. St. Helens. “I had designed a five-page catalogue, but it was work, work, work…”

Some things still haven’t changed. “I build my equipment. I maintain my equipment. There is a lot more to it than just blowing glass,” he added.

Although he has been living in Rockaway Beach for several years, he didn’t take over shop until July of 2015. “Up until then, I was just advising and helping. I had the opportunity to become owner then and make it work, so that’s what I did,” he explained. “That is what I am working hard at.”

The Ring of Fire Glassworks is located at 496 Highway 101 on the southern side of Rockaway Beach. It’s good to call before you show up, because his classes fill up quickly. But you will be able to bring home a piece of glass art after Gladson puts the final touches on them.

“Everything they make is at least worth the cost of the class,” he said. “The memories they make are priceless.”

Rockaway Beach is taking advantage of other TLT funds available for advertising the facility. He said the money spent is giving the city exposure in more densely populated areas while hitting the demographic they are trying to attract.

“Those funds have really paid off for us,” Gare said. “TLT has really gotten the communities working together to make sure the word gets out not only in Portland but through Social Media and the internet, the result is we are bringing events and venues to town and perpetuating the tax.”

It’s a good match according to Michel.

“People love to come and enjoy the beach and need a space for a meeting or event,” She said. “With our Civic Facility, this gives them the venue they need.”

The city purchased a professional 10-burner stove and added a stateof-the-art ventilation hood so your caterer can prepare food onsite.

Garibaldi Charters makes fishing a ‘family affair’

F

ishing is a family affair.

It has been for many decades at Garibaldi Charters.

And if Ty and Tamara Mautner have a say in it, it will stay that way for many years.

“Garibaldi Charters and D&D Charters used to be separate operations back in the 1970’s. They merged at some point, and my grandfather even ran the charter boat “D&D II” out of this port back then.

“Then it was my parents’ business for 13 years,” Tamara said.

“My husband and I bought the business from my parents three years ago.

This will be our fourth season coming up. We are getting ready to open for the season.”

There already has been some growth in the business, she added. “Since we got it (the business), we have added another boat. And this year we are getting ready to add a guide boat. So we will have three large charter boats and one six-pack guide boat.

“We are also hoping to expand this summer into doing some bay tours and some crabbing trips. We are trying to make it a little more available

for families – and especially families with younger kids,” she explained.

“We want to get them out there and just experience the water a little bit.”

The charter business also offers whale watching trips several times during the year – in March during Spring Break. “We also have several eco-tours spread out throughout the summer. That is pretty much it for people with kids.”

That is one area she said she’d like to see the business grow in the near future.

“We want to give options to people who may not be quite ready to spend six hours out on the water.

“I think we’d have a lot of interest in it, we’d like to include that this year.”

“I have my captain’s license, so I would like to take some of those family trips myself, but mostly I am here in the office with my kids” said Tamara. In the past, she has worked as a guide boat captain in Alaska, a dive boat captain in Florida, as well as a charter boat captain in Oregon.

Although Mautner and her husband focus on running the office and keeping the boats and gear in top shape, the business is still a family affair, she said. “My dad runs (and owns) one of the boats. He may be selling that one to us in a few years,” she added. “My sister works for us here in the office. Ty handles the gear, boat, and engine maintenance. We like to keep it in the family. We all work really well together.”

The business offers both halfday and full day fishing trips.

“We have two of the fastest high volume charter boats in Garibaldi,” she added, with pride. The business can take groups up to 20 on fishing trips.

Manzanita counselor mixes physical with emotional

ometimes, it may be just a chance to talk.

Other times, it may mean breaking out the yoga mat to help her clients.

Either way, Holly Evans Smith is building her business Rolling Wave Silver Services in Manzanita with an effort to make people feel better.

The licensed marriage and family therapist also is a registered yoga teacher. She has found a use for both the training and skill sets since she began working in Tillamook County’s northernmost city.

On Thursday, she spends about 90 minutes at the Center for Contemplative Arts in Manzanita where she instructs the Silver Services yoga class.

“It incorporates the community,” she said, stressing her focus on the entire person. “It is not a drop-in where I don’t know how many people are coming. People check-in.

History may be anchored at Garibaldi Museum Former Troller owner wants to keep local flavor

By Brad Mosher bmosher@countrymedia.net A former farm girl from Mt. Angel in the Willamette Valley is trying to make sure decades of local history will be anchored to the Garibaldi Maritime Museum.

Lorraine Vandecouvering has been living in Tillamook County for most of her life.

But she and her family have left their biggest mark in Garibaldi.

She has been an owner or partner in businesses along the town’s marina and waterfront area for many years.

The family was also involved with much of Garibaldi’s recent history, including the creation of the museum to highlight the community’s nautical history all the way back to when Captain Robert Gray discovered Tillamook Bay in 1788. It was the voyages by Gray that helped establish the American claim to the Pacific Northwest states of Oregon, Washington, Idaho, Montana and part of Wyoming. He would continue across the Pacific Ocean and back to the Atlantic to become the first American to circumnavigate the globe in 1790. He was also credited with opening trade along the Pacific Rim. The Vandecouvering family has owned or shared the ownership in a small fleet of fishing or charter boats along with local restaurants and a charter business in Garibaldi for decades.

One of the biggest things Lorraine recalls doing in Garibaldi is working with people to get the Garibaldi Maritime Museum located and built many years ago.

It was just one of the many fingerprints she has left on the community.

Along the way, she managed to hold onto hundreds of old papers, documents and photos. Among them are letters written to Charles Parkin, the executive director to the Garibaldi Museum during its formative years.

But she feels one of the biggest marks she is leaving on the community is the large “G” on the hillside above the town.

She was one of the community leaders who worked to have the mountain named for the first American sailor to visit Tillamook Bay. “It came to my attention the mountain overlooking the harbor was nameless. It already had the big ‘G’ – for Garibaldi High School and the grade school,” she said. The high school closed in 1954 with the opening of Neah-KahNie High School in Rockaway Beach.

Vandecouvering and her husband, Larry, first moved into the fishing industry locally after he had become the manager at the Tillamook Farmers Co-Op in the 1950s.

But, the call of the sea proved to be too strong for her husband.

Eventually, he bought a salmon troller. “He was drawn to the waterfront,” Lorraine said. “He off-loaded tons of chinook and silvers at Hayes in Bay City. The bay was deep enough then so the boats could run all the way into Tillamook.”

The waterfront in Garibaldi became the family home in many ways, with the family moving to Garibaldi in 1960.

Although Lorraine originally was crewing for her husband to help pay for the boat in one year, her ties moved ashore for most of their time in Garibaldi.

The Troller Café drew so much business that it to be razed and rebuilt.

“The little old Troller Cafe got so crowded that fishermen would take their Hangtown omelets out to eat in their pickups. Many a coffee mug made a one-way trip,” she said.

They ended up burning down the old Troller Café in the mid-1970s to be replaced by a larger Troller Restaurant and Charters. “I drew the perimeter precisely on the property line leased from the port,” she recalled wanting to make it as large as possible.

“It had to be functional to handle the crowds. We had the charter office right in the restaurant. I could look right outside and see all the boats right in the harbor. That was convenient.”

She remembers when the port at Garibaldi was really busy. She’d love to see it happen again.

The bay may have to be dredged to bring the fishing fleet back to Garibaldi, Vandecouvering added.

Buttercup owner has sweet recipe for success J

ulie Barker opened Buttercup Homemade Ice Creams & Chowders on April 3, last year at a space in the Nehalem Riverside Trading Company building located on Hwy 101 North going through Nehalem. You can’t miss it, it’s the big yellow building on the east side of the main drag.

Barker has been in business in North County for 29 years, so she knows very well the struggles mom and pop shops face each week. But her recipe for success comes from a mixture of knowing the market, experience in the restaurant business and hard work.

“I have been wanting to do this style of restaurant for five years,” she said. “I know everybody, I do cater to the locals, that’s my number one focus.”

After listening to her clientele over the years, she decided to open a restaurant that focused on handcrafted chowders and ice cream offerings.

“What I’m making here really is artisan chowders, that’s really what it is, handcrafted,” Barker said. “As far as the ice cream, no one is doing homemade ice cream and we are the only ones pairing their ice cream with it’s own flavored cones.”

Since selling Bread & Ocean in Manzanita in November of 2014, Barker has had very little idle time.

“I have to be working,” she commented. “I can get into trouble if I don’t have something to do.”

This will be the third business Barker has developed in North Tillamook County during that last 29 years, starting with the Blue Sky Café and then Bread & Ocean, now Buttercup.

“I’m always trying to find a niche that hasn’t been filled in our area, so I came up with the idea for a small batch, seasonal, homemade, to-go only, ice cream/ chowder shop,” Barker said “I will be making four different rotating seasonal chowders – a traditional Northwest clam chowder, maybe a spicy Thai-style seafood chowder, a non-dairy, coconut milk based sweet potato, black bean and corn or smoked chicken or smoked salmon or shrimp chowder; definitely a tomato-based Manhattan style or Cioppino, all made to order. No chowder sittin’ around.

“When I first started in Manzanita there was a tavern, a grocery store, a few motels and a haunted restaurant across the street and that’s about it,” Barker reminisced. “The quality of people and businesses that have developed here are top-notch. I’m so excited to bring the best chowder and ice cream to Nehalem.”

Her plans for the future are huge.

She said she wants to franchise along the coast and even sell her ice cream and chowders in grocery stores.

“Now that we’ve been open for a while, I’m working on franchising and marketing the business,” she

added. “Trying to make a living on the Oregon Coast is a struggle, but with passion, experience and vision, it can be done. I believe I have passion and vision.

I felt that anywhere I would be there would be a line out the door, let’s hope this is a success story, whether it will be well received — time will tell.”
