Salute to summer!

Welcome to the summer 2018 edition of Friends and Family.

We had a busy spring! Our annual support of the MS Society Walks happened in Victoria and Duncan on May 27 and we’re looking forward to hearing the amount raised!

We also participated in many parades in May and June, including Esquimalt Buccaneer Days, Nanaimo Heritage Days, The Island Farms Victoria Day Parade, Lake Days and Honeymoon Bay Days.

Thanks to the PETER CAVIN, DIRECTOR, team and our COUNTRY GROCER amazing float designer David Gray for all their hard work!

We also started some renovations in our Esquimalt and Royal Oak stores and completed one in our Chase River store. We hope you like the changes!

This July also marks our fifth annual cross promotion with the Cycle of Life Tour to benefit hospices on the Island. We have five team members riding this year: Dave from our warehouse, Jeff from Royal Oak, Beth from Human Resources, Serena from Cobble Hill, and Karen from Chase River, who is riding with her husband and brother-in-law (read more about them on page 12).

If you want to help out, look for participating products in-store from July 6 to 19. Partial proceeds from each product sold will go directly to the Cycle of Life Tour. Thank you to our many suppliers who are donating funds. And a big thanks to Chef Michael Williams for making the riders a delicious dinner on Salt Spring after the first day!

Caroline’s Cart makes shopping easier for families When a family has a child with special needs or mobility difficulties, simple tasks like grocery shopping can be overwhelming.

It’s an experience Country Grocer Cobble Hill baker Serena Leblond knows and understands.

Serena’s sons have rare chromosome disorders, and in connecting with other families in similar situations, she learned about Caroline’s Cart, an innovative shopping cart that makes a big difference.

“A seemingly small task, like grocery shopping, can be a big, difficult production if you have a less-than-mobile loved one,” Serena explains. “Caroline’s Cart is well-known in the special needs community and a godsend to families. With a 250-pound weight limit, Caroline’s Cart also works for adults who can no longer shop on their own, but enjoy getting out to the store with a friend, loved one or caregiver, Serena says.

“This cart will have a huge impact on people who really need it, and I can’t wait to see our local special needs families come out and enjoy their shopping experience,” Serena says.

Lighten up the grill with these go-to options from the seafood case

JENNIFER BLYTH While steaks and burgers tend to take centre stage during summer barbecue season, from health benefits to flavour profile, there are a lot of reasons to show seafood a little love.

And who better to give us his grill gotos than Country Grocer’s new seafood expert, Al Blackford.

Al, who joined Country Grocer earlier this spring, has spent his 40-year career in seafood, as a fisherman on both coasts, then behind the scenes working in wholesale and commodities, and building fish plants on the coast.

“I came out to B.C. for a holiday and never left,” he says with a laugh.

For busy summer nights, seafood offers not only a healthy choice, but also a protein that’s quick and simple to prepare. Simply add a garden-fresh salad and dinner’s on your plate in minutes!

With its solid, meaty texture, halibut is always a good choice for the grill, says Al, who prefers to keep the cooking simple: leave the skin on, then place skin-side down on the grill, and top with lemon, salt and pepper, and a sprinkle of dry dill.

Because halibut isn’t as fatty as some other fish, it’s important not to over cook. Al recommends removing it from the heat when it flakes, but still looks a little wet inside. As you let the halibut rest, it will continue to cook.

Pink salmon is another summer favourite, whose milder flavour is nice stuffed with shrimp, crab and onion, or topped with mayonnaise or Greek yogurt to help retain moisture.

As a rule of thumb, grill for about 7 to 10 minutes for a fillet. And by not turning the fish, when it’s done you can remove the meat but the skin should stay on the grill!

“When you take the fish off the grill, the skin stays behind,” Al says.

While local spot prawns are wonderful in season, that season is short, so for summer, Al likes grilling up Argentinian prawns for a treat. Leave them in the shell and skewer them, grilling until the meat turns opaque. Serve with a little garlic butter.

With clams and mussels, before cooking, discard any that don’t close when you tap the shells. Steam in a little white wine or chicken broth, then serve with the sauce. Discard any that don’t open after cooking.

A little pedal power can make a big difference.

The two-day Cycle of Life is an annual fundraiser for Island hospice care. Not only is Country Grocer a sponsor, but it has a team participating every year.

Founded by Victoria’s Graham Robertson and now hosted by the Victoria Hospice on behalf of local hospices on Vancouver Island, the 200-kilometre route tours through the beautiful Saanich Inlet, Cowichan Valley and Salt Spring Island. Since 2011, Cycle of Life has raised over $497,000 for Island hospice care.

Karen and Brian first rode in the event in 2015 – the “coldest July ever,” with rain, wind and cold – but despite that, would have returned sooner if schedules

The two avid cyclists return to the event this year with their new co-fundraiser along for the ride.

“It’s a great event, we love to bike ride and we know that Hospice has an amazing program,” Karen says.

“It’s such a great cause that if we had been able to ride those other years, we would have!”

After the first day of cycling, riders camp overnight on Salt Spring Island where Chef Michael Williams cooks up a delicious dinner for all. A speaker will often inspire the participants and volunteers with the impact of their efforts.

“It’s the camaraderie of it – you feel that – and when someone shares their story it hits close to home. It makes your heart swell,” Karen reflects.

For the Hartleys, a recent New Zealand vacation allowed for some extra training over winter, “and we try to get in a few longer rides before the event,” Karen says, noting their biggest focus now is on the fundraising.

Coming up is a bike spin and barbecue at the Chase River Country Grocer June 15, with hot dogs by donation.

Yam Latkes Servings: 2 Preparation Time: 20 minutes Cooking Time: 10 minutes This is a variation on a Jewish classic.

Using the yams instead of potatoes makes for a beautiful presentation and it tastes amazing as well. Give it try and see for yourself!

Ingredients: 2 eggs 2 tablespoons white flour ½ of a regular sized yam ¼ of an onion 3 or 4 cloves garlic Salt, fresh ground pepper and cumin seed Garnish: Green onion, sliced thin Plain Greek yogurt Bacon Method: 1. Whisk the eggs and flour together in a mixing bowl.

2. Grab the cheese grater and shred the yam and onion on the large holes. Now for an important step…squeeze the liquid out of the shredded veggies using your hands.

3. Once you have sufficiently squeezed, add the shredded yam and onion to the mixing bowl along with the garlic, salt, pepper and cumin seed.

4. Stir very well until incorporated.

5. Preheat a large cast iron or stainless steel pan on medium heat. Drizzle a bit of oil and a knob of butter into the pan and then place a spoonful of the latke mix into the pan and flatten and shape into a small thin disc. Repeat to fill the pan.

6. Cook for 4 to 5 minutes and then flip and fry for another 4 to 5 minutes. You want them browned nicely on both sides.

7. Serve right away and if you want to turn it into a nice dish, garnish with a dollop of plain yogurt, bacon and green onion.

Variations: • Turn it back into the classic latke by substituting the yam with russet potatoes and otherwise follow the recipe step by step.

The Ultimate Breakfast Sandwich Servings: 1 Preparation Time: 20 minutes Cooking Time: 10 minutes After tasting this creation, I wondered why anyone would want to go out for breakfast if they knew how to make this sandwich. It’s awesome and a perfect Sunday brunch kind of go-to.

Ingredients: Country Grocer breakfast scone, bacon cheddar Avocado, sliced Tomato, sliced thin Red onion, sliced very thin Tannadice Farms bacon, cooked crispy Cage-free egg, fried over-easy Little Qualicum Raclette Mayo Hot sauce Method: 1. Cut the scone in half horizontally so that it can begin receiving all these amazing ingredients.

2. Next, I like to apply the avocado and red onion on the bottom half of the scone.

3. Heat a medium or large fry pan on medium heat. Add the bacon and cook on both sides until it’s just how you like it.

4. If there’s enough room in the pan you can cook your eggs at the same time, otherwise you can wait until the bacon is cooked. Make sure the pan is clean enough for your eggs, giving it a quick clean if necessary. You can reserve the bacon fat to cook your eggs in though! I really like over-easy eggs for my breakfast sandwiches – they are messy, but delicious – but cook the egg how you like it.

5. Place the cooked egg on top of the avocado and onion. Top with the cooked bacon, cheese and tomato.

6. Spread a generous portion of mayo on the top of the scone and then apply as much hot sauce as desired.

7. Time to get messy and enjoy!

Tandoori Chicken Wrap Servings: 2 Preparation Time: 25 minutes Cooking Time: 25 minutes Sometimes just one amazing product is all it takes to create a delicious meal. Well, this wrap has two! The Salt Spring Tandoori Chutney and the Little Qualicum raclette make this wrap amazing with very little effort!

Ingredients: 1 chicken breast, salt, pepper, turmeric and paprika 12-inch whole wheat tortillas Little Qualicum raclette cheese, sliced For the slaw: ½ head green cabbage, sliced thin ½ head red cabbage, sliced thin 2 large carrots, shredded ¼ cup toasted pumpkin seeds ½ cup mayonnaise ¼ cup Salt Spring tandoori chutney Juice and zest of 1 lime Salt and pepper to taste Method: 1. Drizzle the chicken breast with a little oil and then liberally season with salt, pepper, turmeric and paprika. Bake in a 420°F oven until cooked through, about 18 to 25 minutes.

2. Cool the chicken breast and then slice very thin against the grain. Set aside.

3. Mix all of the ingredients for the slaw in a mixing bowl and stir to combine.

4. Now let’s build the wraps. Lay out as many wraps as you’re going to make on a clean work surface.

5. Add sliced cheese first, then layer the chicken on top and finally add a liberal amount of slaw.

6. Carefully fold over the ends and then roll the wrap from bottom up to the top. Make sure to get it as tight as you can without tearing the tortilla.

7. Now preheat a large fry pan on medium high heat. Add a little oil and a pad of butter. Once the butter is melted place the wraps, folded side down into the pan and brown on all sides.

8. Serve warm and enjoy.

Variations: • This wrap would still be good without the tandoori chutney, but not nearly as amazing…so you could save some money if you had to.

What does 5 years of healthy eating look like?

(Hint: Eat your veggies!)

Five years now we have been producing our quarterly magazine and I have covered a good many ideas and concepts in my articles. In honour of the fifth anniversary, I’ve been asked to reflect on some of the ideas I have touched on over the past years, and in going through my articles I am feeling a bit of pride.

I have shared the importance of filling your freezer and how that can have a profound impact on how successful you will be at maintaining a healthy food intake. There are many times when life is simply too busy to cook every meal from scratch, so when you barely have time to breathe you can still find a tasty and nutritious home-cooked meal from your stock in the freezer.

I also wrote about campsite cooking.

The key to success there is having lots of prep done ahead of time – chopped veggies, pre-made salads and slaws, hummus or other dips and veggies – not to mention having some homemade soups or stews ready to go in the cooler and bringing them frozen to help keep the cooler cool until they’re defrosted and ready to eat.

Another good one for me was packing healthy and nutritious lunches when you’re out for the day. Things like skipping the pop and juice, including healthy nuts and seeds, incorporating lots of fruit and veggies, making sure to incorporate

a serving of protein and utilizing leftover dinners for quick lunches.

One of my favourites was the article I wrote on oatmeal and how instant oats are not doing as much for you as you think. Instead I shared how and why you may want to switch to steel-cut or at least large-flake oats if you want to get the most nutrition out of your porridge.

Something I have hit on again and again in my career is boosting your veggie intake. Because most of us can do a better job of getting more veggies in our diets, I have written several articles using creative ways to help you achieve this. I strive to have at least 50 per cent of my plate filled with veggies and to a lesser extent, fruit. Some of the things I have done over the years in an effort to coax more veggies into your meals include sharing ideas for freezer meals like veggie-loaded soups and stews, and sneaking veggies into pasta-heavy dishes.

Better yet, make veggie “noodles” and skip the pasta all together! Having big batches of coleslaw or mixed but undressed green salads in the fridge at the ready is another great strategy.

I have also connected eating more veggies to another article I wrote on going gluten-free. I suggested that I often try to eat gluten-free, not because it’s fashionable or because I have an allergy, but

in an effort to boost my veggie intake.

When you can take processed foods and replace them with whole foods and veggies, you’re doing yourself and your body a favour.

I also wrote an article on “Winter Salads.” Guess what my intention was there…to get you to eat more vegetables!

Oh wait, wasn’t there an entire article on squash and how to cook it? What is squash again? Is it a vegetable? Yes, I think it is.

All in all, I have been working to be the healthiest and best me I can be and I have shared some of my strategies that I found helpful in hopes that it may help you.

PROBIOTICS AND PREBIOTICS:

LOVE YOUR GUT! Probiotic supplements play a key role in rebalancing gut flora.

By maintaining a healthy gut flora, we support the immune system, mood and wellfunctioning digestive system. Probiotics can increase digestive regularity, relieve diarrhea, alleviate symptoms of IBS such as gas and bloating, and promote digestive health especially after taking antibiotics.

In addition to the good work they do in your gut, probiotics work to support the skin barrier.

Skin issues including eczema, acne, dry skin, dull skin and premature aging can be reduced with the support of a good probiotic supplement.

Probiotics generally fall into one of two groups: Lactobacillus, which populates the small intestine, and Bifidobacterium, which populates the large intestine.

Although live cultures die over time, probiotic supplements are tested to ensure they maintain potency beyond their expiration date, regardless if they’re shelf-stable or meant to be refrigerated. In other words, a probiotic billed as containing 50 billion CFU (colony-forming units) might leave

the laboratory with 200 billion CFUs, some of which are expected to die off over time. So, while refrigeration slows down the loss of live cultures, shelf-stable probiotics have enough cultures to stay alive until well past the expiration date. These products also offer the convenience for travel and those of us who tend to forget about supplements stored in the fridge!

Fermented foods like yogurt, kefir, sauerkraut, and kimchi contain lots of probiotics, but it’s hard to know exactly how much. If a person needs a therapeutic strength of probiotic to achieve their desired outcome, taking a supplement allows for a more standardized and reliable way to get the right amount.

While eating probiotic-rich foods is a beneficial way to get an extra boost of good gut bacteria, picking the right probiotic supplement – a clinically-tested proven formula including multiple strains – ensures you’re getting the maximum benefits.

Prebiotics are a type of indigestible dietary fibre that promotes the growth of healthy microorganisms.

Many probiotic supplements include prebiotic fructoligosaccharides (FOS)

to support the longevity of the encapsulated probiotic strains. Food sources of prebiotics include inulin from chicory root, bananas, asparagus, onion, garlic, artichokes and legumes. A diet rich in plant-based foods, resistant starches and both soluble and insoluble fibers will provide most of the prebiotics a person would need.

When a food source contains both prebiotics and probiotics, the combination is called a synbiotic. Foods that are synbiotic include cheese, kefir, and certain types of yogurt.

While probiotics are generally safe to consume, be aware that some have some uncomfortable side effects as the body adjusts.

Depending on the state of your gut, you may experience temporary gas and bloating during the period of adjustment while the probiotics are recolonizing your gut.

Pork on the grill: What you need to know!

Thick-cut pork cuts can be a tasty addition to your summer grilling line-up. From pork tenderloin – always delicious! – to hearty sausages and chops, you’ll find a wide variety of barbecueworthy choices in your Country Grocer meat case.

To ensure you’re getting the best from your go-to grills, the folks at verifiedcanadianpork. com offer the following guidelines: Thick-cut chops and steaks (3/4” to 1” thick) should be grilled on medium-high heat for 11 to 12 minutes, turning once, to an internal temperature of 160°F or 71°C. For a whole pork tenderloin (1.5 to 2lb/680 to 900g) grill for about 25 to 30 minutes over medium heat. For sausage (about 100g each), turn the heat down to low and allow about 20 to 25 minutes.
