Ingredients • 3 slices PC Free From Pro sciutto Dry-Cured Ham • 1 pkg (300 g) frozen PC As paragus Spears NEW • 1 tbsp (15 mL) olive oil • 1/4 tsp (1 mL) each salt an d black pepper • 1/4 cup (50 mL) PC Me mories Of Eggs Benedic t Hollandaise Sauce Instructions 1. Preheat oven to 425°F (220°C). 2. Arrange prosciutto on paper towel-lined large microwave-safe plate, overl apping slightly if necessary. Cover with separate sheet of paper towel. Microwave until crispy, about 2 minutes . Let cool. Set aside. 3. Toss together frozen asp aragus, oil, salt and pepper on baking sheet. Arrange in sin asparagus once, until tende gle layer. We take pleasure in answering thus prominently the communication below, expressing at the same time our great gratification that its faithful author is numbered among the friends of The Sun: “Dear Editor, I am 8 years old. “Some of my little friends say there is no Santa Claus. They have been affected by the skepticism of a skeptical age. They do not believe except they see. They think that nothing can be which is not comprehensible by their little minds. All minds, Virginia, whether they be men’s or children’s are little. In this great universe of ours man is a mere insect, an ant, in his intellect, as compared with the boundless world about him, as measured by the intelligence capable of grasping the whole of truth and knowledge. Yes, Virginia, there is a Santa Claus. He exists as certainly as love and generosity
and devotion exist, and you know that they abound and give to your life its highest beauty and joy. Alas! how dreary would be the world if there were no Santa Claus! It would be as dreary as if there were no Virginias. There would be no child-like faith then, no poetry, no romance to make tolerable this existence. We should have no enjoyment, except in sense and sight. The eternal light with which childhood fills the world would be extinguished. Not believe in Santa Claus! You might as well not believe in fairies! You might get your papa to hire men to watch in all the chimneys on Christmas eve to catch Santa Claus, but even if you did not see Santa Claus coming down, what would that prove? Nobody sees Santa Claus, but that is no sign that there is no Santa Claus. The most real things in the world are those that neither children nor men can see. Did you ever see fairies dancing on the lawn? Of course not, but that’s no proof that they are not there. Nobody can conceive or imagine all the wonders there are unseen and unseeable in the world. You tear apart the baby’s rattle and see what makes the noise inside, but there is a veil covering the unseen world which not the strongest man, nor even the united strength of all the strongest men that ever lived, could tear apart. Only faith, fancy, poetry, love, romance, can push aside that curtain and view and picture the supernal
beauty and glory beyond. Is it all real? Ah, Virginia, in all this world there is nothing else real and abiding. No Santa Claus! Thank God! he lives, and he lives forever. A thousand years from now, Virginia, nay, ten times ten thousand years from now, he will continue to make glad the heart of childhood.

Charcuterie Pretzel Bites Makes: 12 pieces Ready in: 20 minutes Difficulty Level: Easy We’ve taken some charcuterie board favourites – salami, pickles and Dijon mustard – and piled them onto salty pretzel sticks for perfectly portable (and totally retro) party appetizers. Serve any extra sauce in a bowl on the side for dipping or drizzling. Ingredients • 2 tbsp (25 mL) PC Mayonnaise • 1 tbsp (15 mL) chopped fresh chives • 1 tbsp (15 mL) Dijon mustard • 1 tbsp (15 mL) honey • 12 slices PC Naturally Smoked Salami Trio (4 slices of each variety) NEW • 12 pretzel sticks • 2 PC Baby Dill Pickles with Garlic, each diagonally sliced crosswise into 6 equal lengths (12 pieces total) Instructions 1. Stir together mayonnaise, chives, mustard and honey in small bowl. Set aside. 2. Fold 1 salami slice into quarters; poke hole all the way through centre of folded slice using small paring knife or tine of fork. Thread folded slice one-third of the way down 1 pretzel stick. Repeat with remaining salami and pretzel sticks. 3. Poke hole in centre of each pickle piece; thread onto pretzels over top of salami. New Year’s Goodies Chocolate Hazelnut Bûche de Noël Makes: 14 servings Ready in: 3 hours, 15 minutes Difficulty Level: Intermediate A classic bûche de Noël, or French yule log cake, is one of the most impressive holiday desserts you can make. The key to rolling the sponge cake without crumbling is to keep it moist, so be sure to cover it with a damp towel as directed once it comes out of the oven, and use the towel to guide the cake as you roll it. Jelly roll pans are smaller, taller versions of baking sheets and are perfect for making both rolled and slab cakes, as well as roasting smaller batches of vegetables and nuts. Ingredients • 1-1/4 cups (300 mL) chopped PC 70% Cocoa Solids Dark Chocolate (about 170 g) • 5 large eggs, yolks and whites separated • 1/2 cup (125 mL) granulated sugar • 1/2 tsp (2 mL) salt • 1 tbsp (15 mL) cocoa powder • 1 jar (375 g) PC Crunchy Chocolate Hazelnut Spread NEW • 2 cups (500 mL) mascarpone cheese, drained and at room temperature • Sugared Cranberries (see Chef’s Tip, below), optional • Fresh mint (optional) Instructions 1. Preheat oven to 400°F (200°C). Line 15 x 10-inch (38 x 25 cm) metal jelly roll pan with parchment paper; mist with cooking spray. Set aside. 2. Place chocolate in microwave-safe bowl. Microwave 20 seconds; stir and repeat until melted, 1 to 1-½ minutes total. Stir until smooth. Let cool slightly. 3. Beat together egg yolks, sugar and salt in large bowl using electric hand mixer until pale yellow. Beat in melted chocolate until smooth. Set aside. 4. Beat egg whites in separate large bowl using electric hand mixer until soft peaks form. Fold one-quarter of egg whites into chocolate mixture using rubber spatula; fold in remaining egg whites. Transfer to prepared pan, spreading evenly and smoothing top. 5. Bake until cake springs back when lightly touched in centre, about 10 minutes. Run paring knife around edges of cake to loosen. Cover cake with clean damp kitchen towel; let cool completely. 6. Arrange same damp towel on work surface with long side facing you; dust with cocoa powder. Carefully invert
cake onto towel with long side facing you; remove pan and gently peel off parchment. Trim edges of cake. Set aside. 7. Stir 1/2 cup hazelnut spread with mascarpone in separate large bowl until well combined. Spread over surface of cake. Beginning at long side closest to you and lifting and guiding cake with towel, roll up cake lengthwise. Arrange, seam side down, on work surface. 8. Diagonally slice 5-inch (13 cm) long piece off 1 end of cake. Arrange longer piece of cake on serving platter; place cut end of short piece adjacent to long piece to make Y shape. Spread remaining hazelnut spread all over cake. Refrigerate, uncovered, until hazelnut spread is set, about 1 hour or up to 24 hours. Let stand at room temperature 15 minutes. If using, top with Sugared Cranberries and mint. Chef’s Tip: To make Sugared Cranberries, bring 1/2 cup each granulated sugar and water to a boil in small saucepan; cook, stirring, until sugar dissolves. Add 1 cup frozen PC Cranberries; simmer 1 minute. Pour cranberries and liquid into bowl or liquid measure; refrigerate 1 hour. Strain cranberries; transfer to small baking dish or rimmed baking sheet. Sprinkle with 1/2 cup granulated sugar; toss to coat. Spread in single layer; let stand, uncovered, at room temperature 3 hours or up to 24 hours. Makes 14 servings. New Year’s Goodies Biscuits au chocolat et à la noix de coco bicolores Makes: about 5 dozen cookies Ready in: 4 hours Difficulty Level: Easy Le chocolat au lait parsemé de noix de coco et les deux étages de pâte au beurre, dont l’une a été rehaussée d’un peu de cacao, font de ces biscuits réfrigérateur un succès instantané pour les Fêtes. Cette recette donne une grande quantité de biscuits, mais vous n’êtes pas obligé de tous les faire cuire en même temps. Il suffit d’envelopper la moitié des pâtes superposées de pellicule de plastique et de les congeler jusqu’à trois semaines. Ingrédients • 250 ml (1 tasse) de Beurre de campagne baratté non salé PC, ramolli • 250 ml (1 tasse) de sucre • 1 gros œuf • 625 ml (2-1/2 tasses) de Farine tout usage non blanchie PC • 2 ml (1/2 c. à thé) de bicarbonate de soude • 1/2 barre (barre de 300 g) de Chocolat au lait avec noix de coco grillée PC, haché finement (environ 300 ml ou 1 1/4 tasse) NOUVEAU • 25 ml (2 c. à soupe) de cacao Instructions 1. Tapisser le fond d’un plat de cuisson carré en verre de 20 cm (8 po) de papier parchemin, en laissant 2,5 cm (1 po) dépasser sur 2 côtés opposés. Réserver. 2. Dans un grand bol, fouetter le beurre et le sucre au batteur électrique jusqu’à consistance moelleuse. Incorporer l’œuf en fouettant et en raclant les parois du bol. Réserver. 3. Fouetter la farine et le bicarbonate de soude dans un autre grand bol. Ajouter la moitié des ingrédients secs aux ingrédients humides et mélanger juste assez pour combiner. Ajouter le reste des ingrédients secs et le chocolat et mélanger juste assez pour combiner. Transférer la moitié de la pâte dans un autre grand bol. Incorporer la poudre de cacao. 4. Presser uniformément la pâte au cacao au fond du plat de cuisson préparé et presser uniformément la pâte blanche par-dessus. Réfrigérer pendant 15 minutes. En tirant sur le papier parchemin, sortir la pâte du plat de cuisson et la transférer sur une plaque de cuisson. Couper la pâte en deux. Inverser 1 morceau sur l’autre morceau pour que les deux étages de pâte blanche soient au centre (vous devriez alors avoir 2 étages minces de pâte au cacao et 1 étage épais de pâte blanche au
milieu). Presser délicatement pour faire adhérer. Emballer de pellicule de plastique et réfrigérer pendant 2 heures ou jusqu’à 24 heures. 5. Préchauffer le four à 325 °F (160 °C). Couper la pâte en deux sur la longueur pour obtenir deux longs rectangles de pâtes superposées de 5 cm (2 po) de largeur. Couper chaque long rectangle sur la largeur en tranches d’à peine 5 mm (¼ po) d’épaisseur. Placer les tranches, en les espaçant de 1 cm (½ po), sur des Plaques de cuisson texturées antiadhésives en acier au carbone PC ou des plaques de cuisson tapissées de papier parchemin. 6. Cuire au four, 1 plaque à la fois, de 12 à 14 minutes ou jusqu’à ce que les biscuits soient légèrement dorés et que le dessus ne soit plus lustré. Laisser refroidir complètement sur les plaques. Conseil du chef : Si la pâte s’émiette lorsque vous la tranchez, laissez-la reposer à la température ambiante de 5 à 10 minutes pour qu’elle ramollisse, puis réessayez de la trancher. Donne environ 5 douzaines de biscuits. Simple Christmas Crafts for Kids Footprint Salt Dough Keepsake What you need
• Salt Dough • 1 cup All Purpose Flour • 1/2 cup Salt • 1/4 cup Warm Water (you may need to add a bit more) Note* Dough should not be sticky • Craft paints • Wax paper • Cookie Sheets NOTE* The amount of dough you will need depends on the size of the feet you are imprinting
Instructions:
Makes a great gift!!
1. Roll your dough into a ball, cut a piece the size you need and flatten to about 1 inch thick on wax paper & cookie sheet. 2. Lightly flour the top of the dough to prevent sticking. 3. Firmly press each foot into the dough and carefully lift up off to create your print. 4. At this point you can use a toothpick or similar object to write on your print (ex. name, date etc.). 5. Bake on 300 for about 2 hours. Allow to cool, then paint as desired.
Mitten Ornament What you need
• Cardstock Paper (any colour you want your mitten to be) • Packaging Tape • a variety of Buttons • Glitter (optional)
Instructions:
1. Cut out a mitten shape on a piece of cardstock, then cut it. Then cut out the inside of the mitten, leaving approximately 1/4inch outline and a cuff. The cuff is necessary for attaching some trim and making a hole later. 2. Apply strips of packaging tape to the back of the mitten so that the sticky surface is exposed in the cut outs. 3. Collect buttons and beads in a bowl. 4. Attach them randomly to the sticky surface. 5. Using the glitter is optional, but we used it to cover the spots where there were no buttons. 6. Cut a white rectangle and glue it onto the cuff. Let it dry. 7. Use a hole punch to make a hole, then thread a ribbon through it.
Santa Stars What you need
• Red card or paper • pink card or paper • cotton wool • black pen • glue • scissors
Christmas Cupcake Liner Craft card What you need
• cupcake liner crafts in many colors • glue • green sheet of paper • gel pens, scrap paper • glitter or any other decorations • black marker
Instructions:
1. Have the kids glue on a cupcake liner or two onto a piece of paper (stick glue works out the best as it doesn’t wrinkle the paper). 2. Now either let them draw the black line with a marker or do that for them. 3. Now the super fun part begins! Decorating! Gel pens are great for older kids – especially if they are metallic or have glitter. Younger kids can use do a dot markers as these will make wonder ful decorations. Or stamps! Or just glue on pieces of scrap paper. Options are limitless!

Grandma Got Run Over By A Reindeer Grandma got run over by a reindeer Walking home from our house Christmas eve. You can say there’s no such thing as Santa, But as for me and Grandpa, we believe. She’d been drinkin’ too much egg nog, And we’d begged her not to go. But she’d left her medication, So she stumbled out the door into the snow. When they found her Christmas mornin’, At the scene of the attack. There were hoof prints on her forehead, And incriminatin’ Claus marks on her back.
