Shōwa Dinner A Japanese Steakhouse Experience Shō means “shining” or “bright.” Wa means “peace.” This April, Shōwa shines once again! By overwhelming popular demand, The Cornell Club – New York is proud to announce the next installment of our exclusive tasting menu series, an unforgettable Japanese Steakhouse inspired tasting experience centered around the incomparable richness of Akaushi beef. Even more exciting, The Cornell Club – New York welcomes back two of our most requested guests; Jordan Beeman, President of HeartBrand Beef and Lee Seelig, President of Main Street Meats. This is not simply another tasting menu, it is a rare reunion. A one-night-only experience reserved exclusively for our Members.
Often compared to Wagyu, Akaushi is a rare Japanese cattle breed selected for its refinement and balance. Every cut of certified Akaushi beef meets the equivalent of USDA Prime Standard and undergoes rigorous quality testing to ensure unmatched consistency and excellence. Our culinary team, led by Executive Chef, Joe Boko has designed an immersive, multi-course tasting menu inspired by the Japanese Steakhouse tradition where precision and technique meet prime ingredients. Each course builds upon the last, highlighting the depth, texture, and brilliance of Akaushi in ways both refined and unexpected.
Meet the Men Behind the Marbling The Cornell Club – New York is honored to once again welcome Jordan Beeman, President of HeartBrand Beef, a fifth generation Texas cattle rancher. Raised in the ranching tradition and now leading one of the most respected Akaushi programs in the country, Jordan brings authenticity to every cut. A true cowboy in boots and business alike, Jordan brings a rancher’s firsthand knowledge of the cattle he raises and will be here in person to share the story behind every bite. This is your rare opportunity to meet the man who helped bring Akaushi from the ranchlands of Texas to the tables of some of America’s finest restaurants and private clubs. Joining him is Lee Seelig, third generation owner of Main Street Meats in Farmingdale, New York. For well over a decade, Lee and his team have supplied The Cornell Club – New York with exceptional meats and have worked closely with our culinary staff to curate programs that elevate our Members dining experience. As the Northeast’s largest distributor of Akaushi beef, Main Street plays a vital role in ensuring the integrity and quality of every cut we serve. Together, Jordan and Lee offer our Membership something Tasting Only: $150 plus tax and service charge per person Tasting and Wine Pairing: $250 plus tax and service charge per person RSVP: P.Faty@cornellclubnyc.com | 212.692.1387

We respectfully ask that Members arrive promptly in order to preserve the exclusivity of the tasting format and to allow for meaningful interaction with Jordan and Lee throughout the evening. This is your chance to: Experience a carefully crafted Akaushi tasting menu. Engage directly with the leaders behind one of the most prized beef programs in the country. Deepen your understanding of what sets Akaushi apart from its competition. Enjoy a Members only culinary event that will not be replicated anywhere else. Our first Shōwa dinner sold out quickly.
