The velvet voice of Boombastic A zest for life, velvety smooth voice and the ability to talk relentlessly has been a recipe for success for local radio personality, Larry Dixon. Known lovingly by listeners as ‘The Velvet Fog,’ Larry is a BayFM Presenter on Wednesdays and Thursdays, co-hosting the popular morning show, Boombastic. The show features discussions on topical and current affairs, as well as interesting trivia and plenty to make you laugh as well as a cool mix of new and classic music to help drag you out of bed in the morning.

“You couldn’t shut me up as a kid and I’ve obviously not grown out of it! I love radio, I’d broadcast 24 hours a day if they’d let me!”

Larry grew up in a small country town in Western Australia and spent his life living in a multitude of places, but after discovering Byron Bay, he says that it’s hard to ever choose somewhere else to be. Most recently, he married the love of his life, Frances, on South Golden Beach by Jacqui ‘The Champagne Celebrant.’

We chat to Larry about life, love and being a larrikin.

WHERE DID THE NICK-NAME, ‘THE VELVET FOG’ COME FROM? “My sidekick Max started calling me that due to my ‘deep soothing voice.’ Max comes up with nicknames for everyone he knows. It’s an affliction! Even when I was very young people told me I had a voice for radio. I tell everyone that Max has a face for radio and a voice for mime. He loves that.”

WHAT CAN LISTENERS EXPECT WHEN THEY TUNE INTO BOOMBASTIC ON BAYFM? “Boombastic is on Wednesdays and Thursdays from 6am to 9am. I co-host with Max ‘The Cane Snake’ Manton on Thursdays and Ben ‘Benny the Ball’ on Wednesdays.

It is a light-hearted look at humanity and its absurdities. Some of the regular segments on the show are Real or Steal and the Music Subgenre. So far I’ve covered over 200 subgenres; it is always entertaining to read the guesses sent in on the BayFM Textline.”

WHAT ARE SOME OF YOUR MOST MEMORABLE ON-AIR MOMENTS? “One of my personas on air is the Mayor of Mullumbimby and this character always has ‘brilliant’ ideas that the Byron Shire Mayor won’t take on. Simon accepts that I’m the ‘popular mayor’ out of the two of us. He knows that it’s all in good fun. One idea I had was to turn the rail corridor into a bounce way.

Basically, a long trampoline from Mullum to Byron…who knows why it didn’t get approved? Simon is so picky.”

“For years we have discussed the idea of a vegan strip club based in the industrial estate. This year we discovered our tongue-in-cheek idea is a reality in Portland, Oregon. As they say, sometimes the truth is stranger than fiction.”

WHO HAS BEEN YOUR FAVOURITE GUEST TO HOST OF ALL TIME? “Boombastic has had many entertaining celebrities like Akmal, Steve Bisley, Tim Ross and Wil Anderson on the show, but some of my favourites are the locals who come and chat about their business or charity. There’s a lot of passion in the area and community radio gives people the chance to discuss their views and promote their ideas.

“Locals like Allie and Ben from the New Brighton/Mullumbimby Farmers Markets are always wonderful to have on the show. Alison Campbell from Love Byron Bay always brings in amazing chocolate prizes and special treats for the presenters. Brookfarm has sponsored the show since it went to the breakfast slot about four years ago and I always love chatting to Pam and Martin about their amazing products. Doing a live broadcast from the Brookfarm Bakehouse was a lot of fun.”

SO, WHAT IS PANTS-OFF THURSDAY? “It’s simple. You must have your pants off when listening to the show.

It’s all about chillin’ in the shire.”

WHAT DO YOU BELIEVE MAKES BYRON BAY A MAGICAL PLACE TO LIVE AND WORK? “The majestic beauty of the beaches and hinterland, blended with excellent places to eat, drink and be merry, make the Byron Bay bubble magical for me. And, it is quirky and very left of centre. This is not your typical ‘small country town’ type of place. There are many different ideologies and ways of seeing the world here. It is typically a very accepting and supportive environment and there are so many interesting and talented people living here. I wouldn’t live anywhere else in the world.”

WHAT IS SOMETHING THAT MOST PEOPLE DON’T KNOW ABOUT YOU? “Many people don’t know that I play six instruments and used to write music for television. I was also in a band that toured Australia in the 90’s. I have always been passionate about music. If you see me around I might tell you some details about the drama of playing piano for a wellknown property mogul and his guests at a new hotel when I was 15.”

Meet Ian Browne

The river of equality runs deep “I can’t explain the love I have for the people of the north; their language, their connection to land. It is rich and dynamic, and I grew up as a child in Cronulla with a close connection to country myself. I felt part of all this too. All my family lineage is white fella, in fact I am related to most of the kings of England, and they themselves escaped the guillotine in France.”

His love for our first Australians runs deep and his commitment to exposing both environmental and political corruption as well as foreign exploitation has seen his work as the inspirational core of activism groups across the world. He exposes the truth through his lens and injustice through his pen all the while keeping us entertained and informed through his many media connections.

Journalist, photographer, radio personality, eco-warrior and Indigenous educator, we are fortunate to have the insight of Ian Browne as a regular contributor here at Byron Life Magazine.

He loves the surf at Belongil Beach and chilling at the Tree Tops Café.

He does his interviews at The Other Joint Café in Mullum; usually accompanied by a very colourful, big-hatted Shanti. His own story is as complex and fascinating as they come, so if you see him out and about, sit for a while and enjoy a yarn.

Having worked with more than 70 tribal groups between the Shire and our country’s top end, Ian’s passion for Indigenous education and rights runs deep. He stresses that he doesn’t talk ‘for’ indigenous people, but does share what they have taught him. He completed his Environmental Science Degree in Darwin but also studied topics relating to TSI and Aboriginal ‘identity.’ His focus shifted from environmental rehabilitation to indigenous education after developing a bond with indigenous students.

“I was head of Indigenous education at school with 300 Aboriginal students, half the school’s population. At the time I was offered a pHd contract to study mine site eco-rehabilitation, but as I had written a scathing article on the mine which was the study site; a mine who had corrupted the ancestral land of one of my student’s during ‘sorry business’(mourning); there was no way I could, or should.

“Darwin is so special, so multicultural. I was able to incorporate my students’ culture into all aspects of the curriculum. I completed a ‘spoken word’ bush tucker project for the Botanic Gardens with all the boys in my program. We mustered cattle in the tropical savannas around Katherine, grew gardens, and raised barra and yabbies at Charles Darwin Uni. I also held cultural workshops for visiting international schools.

“Leaving my students to move back to NSW was heartbreaking. From as many as 50 tribes, they cared for each other and me honourably.

I trained them up to qualify in trades and welfare, yet they return home to low community infrastructure and limited employment prospects; outside of the mines, Ian said.

As well as campaigning for the right of indigenous here in Australia, Ian also captured atrocities and exploitation through his lens during trips through Asia. His journeys have been the basis of a television series, have placed his life in imminent danger and have led to an invitation to Buckingham Palace.

“Sarawak-Borneo was a holiday initially, but along with an actor from Home & Away, we got caught up in the underground movement to protect indigenous folk and their jungles from the exploitation dealt by the palm oil industry.

I used the media platforms I had available at the time, and the world’s university press, to publish the atrocities occurring there in Borneo. I was invited to Buckingham Palace to attend a speech by Prince Charles on conservation. I remain friends with the ex-prime minister of Britain, Gordon Brown’s sister-n-law, Clare Rewcastle.

She is a journo who also runs the Sarawak Project. My journey down the Mekong was the basis of a British TV series in relation to my subject: the damming of the Mekong. All of this is explained in my coming book ‘What the Monsoon Knows’.

“In Belfast years ago, and in Kolkata last year, being in the wrong place with my camera led to guns being pointed at me by soldiers and police. I have taken chances in my journeys across Asia, but peoples’ lives matter, and the exploitation of land and souls must be given airtime,” Ian said.

Ian’s book ‘What the Monsoon Knows’ is a description the people and places of the countries he has travelled through as an activistjourno. It’s currently in its draft stage as Ian continues to work on many other projects throughout the Northern Rivers, but with his sense of humour contrasting the illumination of evil across Asia Pacific, it will be well worth a read.

“You will probably enjoy my profound bewilderment when being chased by bearded-pigs in the jungles of Sarawak; splitting scalp on cabin roofs when alighting boats on the Mekong, and my love and care of the poor of India. In the Northern Rivers section, you will get to know gorgeous Miss Renee Simone a little better, and talented Indigenous artist Leanne Hamilton; along with my pal Shanti, all of whom willingly share their passions.”

Brianna, Avryl, Kerrie and John The high peaks of the Canadian Rockies are a far cry from the Northern Coast’s famously sunny beaches, but for the Hart family, it’s a transition they love. For Kerrie, it was more of a homecoming back to Australia, being from Victoria originally, but for John and their daughters, Avryl and Brianna, the move from Vancouver in Canada to Australia was a whole new experience.

“We had talked for years about living near the beach and the timing seemed right. With the age of our girls we thought ‘now or never,’” Kerrie said.

WHAT DO YOU AND YOUR FAMILY ENJOY MOST ABOUT BEING MEMBERS OF THE BYRON BAY SURF LIFE SAVING CLUB? “The skills we are learning and the inspiration to keep getting fitter. The social side of being part of the club has been a bonus, we have become part of a great community!”

WHY DID YOUR FAMILY CHOOSE TO BECOME A PART OF THE BYRON BAY SURF LIFE SAVING CLUB? “We chose to become part of the Byron Bay Surf Life Saving Club because we wanted our daughters to be safe in the ocean, to learn about sweeps and rips.

In Canada they had spent time in rivers and lakes, but not in big surf. John had worked for the Canadian Coast Guard in summers when he was in Uni, and had taught swimming and had been a lifeguard, so he loved the idea of doing this again. Having the skills to potentially save a life when at an un-patrolled beach if someone got into trouble was a motivating factor too.”

WHAT IS THE BEST SKILL YOU HAVE ACQUIRED FROM BEING MEMBERS OF THE BYRON BAY SURF LIFE SAVING CLUB? “Learning how to perform a board rescue in the ocean.”

WHAT ADVICE DO YOU HAVE FOR ANYONE ELSE WANTING TO JOIN THE BYRON BAY SURF LIFE SAVING CLUB? “Come along and try it out, we would love to meet you. It is a great place for the whole family to be involved together. It didn’t matter that our daughters hadn’t started nippers at a young age; they were made to feel very welcome and given great instruction.”

The Safraneks Jan, Helen, Miloš, Jack and Finley

From the bitterly cold coastline of the Atlantic Sea to the warm sunny sands of Byron Bay, Jan Safranek and his wife Helen were only too eager to make the move from England’s Cornwall to the Byron Shire. Their children, Miloš, Jack and Finley, were all born in Australia and grew up going to the beach, so joining the local Surf Life Saving Club seemed like a natural progression. Jan is a patrol member with Bronze Medallion and Nippers Water Safety, Helen is a parent helper at Nippers while Miloš, Jack and Finley are all Nippers in the U13s, U11s and U8s respectively.

“We love the beautiful beaches and relaxed way of life. We have great access to pristine National Parks and campsites that would simply not be available in the UK,” Jan said.

WHY DID YOUR FAMILY CHOOSE TO BECOME A PART OF THE BYRON BAY SURF LIFE SAVING CLUB?

WHAT IS THE BEST SKILL YOU HAVE ACQUIRED FROM BEING MEMBERS OF THE BYRON BAY SURF LIFE SAVING CLUB?

“We joined the club three years ago. We all love the ocean and swimming.

Safety is very important and the boys are learning valuable water safety skills whilst getting exercise in a beautiful environment. The people in the surf club are like-minded and have good community spirit with many people volunteering a lot of their time to make sure the club runs smoothly for patrols, Nippers and carnivals.”

“I’ve done my Bronze Medallion and have been involved in surf rescues whilst on patrol and also helping rescue a man whilst out surfing when he got dragged out in a rip.”

WHAT DO YOU AND YOUR FAMILY ENJOY MOST ABOUT BEING MEMBERS OF THE BYRON BAY SURF LIFE SAVING CLUB? “Sunday mornings at Nippers with everyone enjoying themselves on the beach and off course the coffee and sausage sandwich afterwards.”

WHAT ADVICE DO YOU HAVE FOR ANYONE ELSE WANTING TO JOIN THE BYRON BAY SURF LIFE SAVING CLUB? “Having children is what got us into the surf club. I would always advise anyone to join Nippers and give it a go. You might surprise yourself. It’s definitely something you have to commit some time and effort to, but the rewards are big. The commitment gets you out of bed and into the fresh air on a Sunday morning. It can leave you with valuable skills which could save somebody’s life and is lots of fun along the way.”

Originally from Caracas in Venezuela, Michael Berti moved to Barcelona in Spain in 2001 to race motorcycles. He spent 15 years involved in the high-speed thrill of motorsports before coming to Byron Bay in 2015 with his daughter, Daniela, for a holiday. They simply never returned to Spain and now call Byron Bay home.

HE FRESH, FUNKY VIBE OF MULLUMBIMBY ORIGINATED FROM ITS 1970 HIPPY BEGINNINGS WHERE IT EMBRACED THE CULTURE THAT WAS SWEEPING THE LOCAL AREA. Byron Bay and Nimbin shot to fame and are now a highlight of the tourist track. Mullumbimby, however, (or ‘Mullum’ as the locals know it) is off the tourist track. As a result the town is a much more earthy, authentic slice of alternative Northern Rivers life.

With a population of just 3500, there is a calm, lazy feel to the town and no-one is in a rush. The Bundjalung people originally occupied Mullumbimby until the1850’s when European settlers established a campsite at the junction of two arms of the Brunswick River. This grew to become a village and later the township of Mullumbimby.

Mullumbimby was originally a centre for the timber industry. Great quantities of Red Cedar was collected from around the area and floated down the tidal Brunswick River to the coast where it was then transported around the country and overseas.

Geography

The main geographical feature of Mullumbimy is Mount Chincogan which watches over the town and can be seen sitting prominently on the horizon as you drive through the hinterland towards the town.

Mullumbimby is a ten-minute drive north of Byron Bay.

Bella, Johnny & Grace Johnny is originally from the U.K and Bella is originally from the Sunshine Coast.

They met each other and fell in love whilst living in Melbourne. it wasn’t too long ago that they decided to make the move up to the Mullum area to make a beautiful life for their growing family. The star of the family at present is their beautiful daughter and soon to be older sister, Grace. Both Bella and Johnny were really drawn in to the Mullum life by the ever present relaxed atmosphere and respectable lack of traffic.

I happened to catch the family in town today preying on baguettes as part of Bella’s birthday outing in Mullum. In between the birthday shenanigans I caught Johnny putting up posters offering his skills to those living local who would like to learn guitar or better their already existing guitar skills. Johnny is a renowned tutor and qualified music teacher, or as Bella likes to put it, ‘musical genius’. A huge happy birthday to you Bella from all of us here at Byron Life!!!

Nathalie Nathalie is originally from France and spent a large amount of time in Adelaide before making the Byron Shire home many moons ago.

Today in town Nathalie was working at her lovely Baby influenced store, Buds in the main street of Mullum.

Like all good businesses Nathalie had a seriously funny series of events that led her to setting up and running the store. Be sure to pop your head in and say bonjour.

Wendy We ran into Wendy whilst volunteering her time working in one of the Mullum Op Shops.

Having been in the Mullum vicinity since the early 80s, be assured that Wendy has seen some remarkable changes in the past few decades, some good and some not so good. Wendy is one of the true characters that contribute to making Mullum the iconic and desirable place it is. It can be a confusing stand point sometimes to live in such a fast-growing area, but Wendy really summed it up quite poetically.

“People can truly be themselves and really emphasise their true individuality without feeling the need to conform. And this is thanks to the very accepting nature in the area that enables humans to express themselves in their own ways.”

Suzy, Mirai & Harvey We caught Suzy and her beautiful son Mirai being taken for a walk by the hugely characteristic and town legend, Harvey the dog whilst on their daily fruit hunt. Whilst talking with Suzy, Mirai was two fists deep with apples showing us that eating two apples at once is better than one.

After asking Suzy what some of their favourite elements of Mullum were Suzy began to explain how Mirai and Harvey are regular celebrities at the evening Drumming Circle. With Mirai dominating the dance floor and putting meaning into dance fever. Whilst Harvey on the other hand seems to know more people then Suzy in town due to his ever polite fetish for feet and the art of sitting on them.

Billy

Billy What a legend!! Meet Billy. This guy was fist deep into a mango when he caught my eye with complete and utter jealousy. What more could you ask for on a stinking hot day? Enjoying an epic mango, sharing chocolate and making friends with the overly friendly local crew for me equals, a happy man. Billy had just arrived from spending some time in India and was here to catch up and meet some friends who live in Mullum. Although Billy is not in the area for a long time due to heading back to his home turf of NZ to meet his bros new born, it is more then safe to say he felt very at home here in Mullum

Mike:

Jack As we were passing the Middle Pub in the centre of town we were lucky enough to meet larger than life, Jack. Feeling a little rattled having just made his way back home into town from an eventful road trip back from Port Douglas. Jack drove day and night to ensure he made it back for a special appointment and had barely slept.

With having migrated to Mullum a few years ago after living in several other areas within the Shire for the better part of his life, Jack reflected on how many of his mates are finding themselves now proudly calling Mullum their local these days.

I don’t think we could have found a better picture to help capture the colourful town of Mullum. This legend, that goes by the name of Mike, had one of the best answers I had received in a while after asking someone where they are from.

Mike replied with, ‘well that’s a good question’....

And that is exactly the type of answer you would expect from such an interesting cat.

Originally from Tassie, Mike had good reason to find it quite difficult to pinpoint an exact answer and sense of home. Having lived in 15 odd countries since his childhood days in Tasmania you can only imagine the amazing stories Mike can share with you from his past. Now calling Mullum home after spending the majority of the past 5 years in the region Mike advised us that he was in town today trading Crypto Currencies.

Why does Mike love Mullum so much??

It’s simple, the combination of freedom of expression and the nature that is very hard to beat. Going hand in hand with each other, Mike noted that there is not many places in the world where Urban and Rural meet in a likeminded manner and approach. www.byronlifemag.com 21

his is a sad reality about our fast-paced modern life. We also live in a country where most people would rather buy packaged manufactured products than learn how to buy local produce from sustainable growers.

Byron Life Magazine sat down with Joel Orchard from Future Feeders who is the leading force behind a local movement dedicated to sustainable farming and engaging young farmers in the industry. He has strong, well-informed views on the subject.

“Most of our conventionally grown food is fossil fuel dependent. It has a huge carbon footprint and in many cases leaves a toxic legacy that is killing our bees and our soil. Much of our food is shipped all over the planet and in Australia most of our food system is dominated by the supermarket duopoly. We have some serious systemic issues to tackle,” said Joel.

Joel grew up in Warrnambool, South West Victoria and moved here after completing a degree in Melbourne. He has always been interested in the subsidence lifestyle and studied urban culture and guerilla gardening before coming to the Northern Rivers.

He is now passionate about creating awareness for local organic food systems and finding ways to engage young farmers, creating platforms for them to interact and share skills.

“Farmers over the age of 65 now outweigh farmers under the age of 35 by a ratio of 6:1. This has become a critical social sustainability problem” With this type of statistic it is clear that farming needs to move into a new future. A future that embraces our youngsters and actively engages

With this in mind he has also helped establish the Northern Rivers Young Farmers Alliance as a place for young farmers to share their stories and communicate.

On a ground level, Joel is based at the Mullumbimby Community Gardens where he can be found most days. He welcomes anyone who wishes to come and say hi and help pull up a few weeds! And if you are thinking of ways you can help, he simply suggests we all buy local food.

I grew up in the Blue Mountains west of Sydney What brought you here?

I came here about 14 years ago cause my brother was up here having babies and I’ve been here ever since. I love the Greenhouse of Byron.

What makes Mullum such as special place to live?

The community feeling, people around here care about each other and often do positive things for the community. They have a smile on their face which puts a smile on my face.

What are you making at the moment?

I’m making my own pickled chillies, pickled cucumber and sauerkraut. I’ve got a smokehouse doing slow-cooked beef brisket and smoked chicken pizzas. We’re also making coffee from local roasters.

Tell us something most people don’t know about you: I love the cold, which is quite unusual considering the place we call home.

Prue was raised in the wine making Adelaide Hills region with her older brother, Will. As soon as the last school bell rang she started chasing the snow, living in the Australian and Canadian ski-fields.

It is no surprise then that her hobbies include skiing and travelling.

Six years ago Prue moved to Ballina Coast and Hinterland to be close to her boyfriend. This was obviously a good decision because he is now her husband!

Fortunately, Prue fell in love with our beautiful region too and is proud to call Lennox Head home.

As Acting Coordinator for Visitor Services and Community Facilities at Ballina Shire Council Prue understands how vital Tourism is to our local economy. She is dedicated to destination marketing, enticing visitors to visit the area and encouraging them to stay longer.

Ballina Shire Council also operates five community spaces ranging from small interview rooms to a spacious event venue seating 480 people. The spaces are perfect for events, weddings, functions, meetings and classes. All of them are available for hire to businesses, organisations, community groups and the local community.

Returning to Tasmania, Jess opened her own Physiotherapy and Pilates practice called Flex. It was at this time she discovered an interest in mindfulness and a desire to develop these skills through further education.

“My passion is to help people cultivate daily mindfulness and meditation practices to ease their stress and suffering and bring a sense of present moment awareness and well-being to their lives.”

To pursue this way of life Jess closed her physio practice in Tasmania in April 2017 and took a worldwide study trip learning more about neuroscience and mindfulness from the most well-renowned teachers and researchers in the field.

“I travelled firstly through Asia and the USA. Here I began my Mindfulness Meditation Teacher Training Certification Program in Scotts Valley, California with Tara Brach and Jack Kornfield. They are two renowned meditation teachers, psychologists and authors, influential in bringing eastern meditation practices to the western world.”

“I was fortunate to learn about self-compassion from its original researcher, Dr Kristen Neff. I also studied mindful movement and neuroscience with psychotherapist and yoga therapist Bo Forbes in London.

WANT TO BREAK THE GLASS CEILING? START SWINGING THE PROVERBIAL GLASS CEILING. YOU’VE PROBABLY HEARD OF IT BEFORE. YOU MAY KNOW IT HAS SOMETHING TO DO WITH A WOMAN’S CHALLENGING PATH TO SUCCESS, YOU MAY HAVE EVEN THROWN THE SAYING IN A SENTENCE OR TWO, BUT DO YOU REALLY KNOW WHAT IT MEANS?

I

t’s ok if you don’t, not many of us do. So we wanted to take the time to share some thoughts on the issue and ponder how we can reduce the need for this idiom before our daughter’s and granddaughter’s face the same challenges.

It seems so backward, so last-century, but the fact remains that there are still gender equality issues which run rife in our society.

The glass ceiling describes a seemingly invisible yet very real barrier to a woman’s ascent, usually referred to in terms of business or government. It means that our hard-working lady executive, who may be as knowledgeable, as determined and as skilled as her male counterparts, finds it difficult to progress into the top tier of management. As she peers upward through the glass ceiling, she can see the legs of the executives above her, but has difficulty breaking through for equal opportunity and equal pay. Although this notion is illegal, such practices are prevalent.

The bigger problem is, if the ceiling really was made of glass, once it was broken, other women could easily follow in the footsteps of those who had gone before her. Unfortunately, it’s not that simple. Each new generation of women has had to smash the same glass ceiling for decades, making it more like a self-healing membrane. Our only glimmer of hope, is that each time that membrane seals, it becomes a little bit thinner, so the next determined woman can burst that bubble faster. Not that the bubble should exist in the first place.

We can agree that many more women hold positions of power than ever before, but that glass ceiling is still very real.

Ladies, swing those hammers and don’t stop swinging until that ceiling shatters so much that it can’t ever be put back together. There are enough atrocities in this world to make life difficult without old-fashioned misogyny being one of them.

Over the following pages, we celebrate local women in business who are making their mark on society in their own unique way. Personal trainers, hairdressers, volunteers, finance gurus and revolutionary retail moguls. These are the people who make up our community, those who aren’t afraid to swing their hammer a little wider, to show girls of the future that they really can achieve what the mind believes.

T

he same by name but different by nature, Nehara and Karni Shai are the essence of admirable business women, exhibiting determination, strength and perseverance needed to succeed in today’s world. These sisters are forging ahead in differing industries but use their unshakable bond to bounce ideas and strategy off one another.

Nehara is the owner of Byron Beauty Bar, a one-stop glam shop she established from scratch, while Karni is the creator of OSushi, a brand developed here in Byron with her late best friend, Dan, which has since expanded to include two more locations in Coolangatta and Broadbeach. Karni is the sole owner of the Byron location and co-owns the Coolangatta and Broadbeach restaurants with business partners.

Despite the differences in business, the sisters are inspired by each other’s success.

“Karni has been running her business for years and is as passionate now as ever about delivering an amazing product. She has gone through a lot in her business and overcomes challenges with grace and strength. I’m inspired by her attitude, her resilience, and the way she lives her life,” Nehara said.

Karni commented, “We share lots of insight and support each other on a daily basis. We hope to collaborate and put our skills into action on a mutual venture in the future. I rely on my intuition; I am all about that. Nehara is a logical person, she need to see the facts. Together we make a good team.”

Byron Beauty Bar is Nehara’s first foray into the hair and beauty industry. She wanted to develop a new concept for Byron, a one-stop beauty destination. One that uses the best products, attracts the best staff and delivers the best service.

“As a business we are passionate about creating a unique and delightful experience for our Byron Beauty Bar clients. We have an amazing team of specialists who come together to create a onestop glam shop. With hair colour services, cuts, styles and extension along with nails, brows, lashes and makeup, we have hair and beauty covered,” she said.

Karni developed Byron Bay’s OSushi 14 years ago, a joint venture with her best friend, Dan, who sadly is no longer on this Earth. With a strong background in hospitality blended with her love of Japanese culture, its aesthetics and great clean food, it was natural for her to follow this path.

She said, “Japanese food has now established itself around the world as a firm favourite. OSushi can be a 10-minute quick sushi fix for one or a two-hour celebration with friends. I am very fussy with my food and a bit of a health freak.

Knowing that everything is sourced carefully and that we only use the best ingredients to create healthy and nutritious cuisine is my top priority.

“Most of our clientele are locals that have been with us since we opened 14 years ago. Seeing babies turn into teenagers is such a beautiful experience. I am always amazed by how much kids enjoy sushi, it’s like an epidemic of babies munching on sushi!”

“Between running a business and raising my little boy Isaac as a single parent, time is a little scarce. What I love most is spending time with Isaac, family and friends over coffee or a meal and enjoying our beautiful surroundings. Weekend walks and time at the beach with friends and kids are a bit of a ritual now and never fail to remind me how lucky I am to call this home.”

What is one of your favourite smells?

“My three children are my best friends and are closest to me in this world.

Any time spent with them is always full of fun, joy and laughter. I enjoy design of any kind, from home and garden to clothes. As a child, I would come home from school and find my mother had changed our bedroom, this happened at least half a dozen times per year! That is in my veins now.

And I can’t forget my passion for food, food and food! Did I say I loved food?”

“Hospitality is a complex industry with so many details to keep in mind. It’s like being a juggler, always 10 balls in the air at once, never stopping.”

“Just like everyone, I have my days. Some days I am very confident and full of joy, other days I feel like I am a total failure. I made a decision many years ago to follow my heart and my intuition, always!”

When business women support each other, not only do they strengthen that central core of business, but also uplift a community to grow a strong and sustainable economy.

Sourdough Business Women (SBW) is a recently developed entity of Sourdough Business Pathways (SBP). This not-for-profit initiative is striving to provide a strong future for the next generation of people in Northern Rivers by building strong businesses to generate prosperity and jobs for many. The group helps existing businesses to become more sustainable and overcome challenges, while also supporting entrepreneurs to turn their ideas into a successful business.

This comes from an authentic desire to share their skills and experience to help others succeed for the betterment of the region.

As a specialised group to support women in business, SBW’s vision is to support women to build successful businesses for themselves so that, in community, they can create a new and sustainable economy.

Largely volunteer led, SBW’s committee comprises five business savvy women, Fiona Sheridan, Susanna Carman, Ama Kalma, Margot Cairnes and Kate Ramsay, each dedicated to giving guidance and mentorship to women in business.

Friends can change as swiftly as the weather, but a sister remains in our heart forever.

I

n the late 70’s, when there were fewer people around; surfers, artists and hippies abounded from the ocean sands to the rolling hinterland. Growing organic vegetables and living a carefree lifestyle was what prompted sisters, Jacquie Myers and Lesley Dolling, to travel north from Sydney. Not only are these sister’s best friends, but also business partners, having owned a successful café in the heart of Byron Bay before taking over Don’t Tell Mama in Bangalow, a long-established business selling natural fibre clothing and giftware.

While Lesley and her boyfriend (now husband) went travelling to India, Jacquie found herself running a small business in Byron Bay with a friend called Suppertime Blues, a pumping little vegetarian café selling the most delicious range of wholesome and nourishing foods. The café boomed, and when Lesley returned she was soon roped in to join in the whirlwind.

“We loved being a part of Byron in the early 80’s. The town was smaller, intimate and everyone knew each other. It was one of the best times of our lives. We really got to know a lot of the long-term locals by owning the café, many who we still bump into today”.

The sisters sold the business in the mid 80’s, as they moved onto their next life phase of raising their families in Byron hinterland, owning farms a couple of kilometers apart for over 20 years. After years of dreaming about going into business, they eventually saw that “Don’t Tell Mama” was for sale. The long time established business had lots of potential and, so with shared vision and support of their families, the girls jumped at the opportunity to dive in together and embark on a new adventure.

As owner of Fish Mongers Byron Bay alongside her husband, Steve, you’d be forgiven for thinking that this mother and business owner was already one of the busiest ladies in town. But add into the mix a vast array of community engagements including managing her son’s soccer team, plus the fact she is owner and director of her own consulting business, B.R.E.E Business Consulting, and suddenly busy seems like an understatement.

Spresa founded B.R.E.E 18 years ago from the foundations of Bond, Redefine, Enable and Evoke change in business’ and transform individuals whilst scoping out their growth. For the past five years, the business has been specialising in “Engagement”, a tool which has helped many businesses move away from the traditional customer service focus toward engagement of staff and customers.

“Mongers is turning 19 this year, who would have thought that this little restaurant in Bay Lane would turn into a Byron institution. There’s a lot of love that goes into our food. The MEP (Member Engagement Program) has been in the market now for 4 years and is delivering incredible results for organisations and their staff. 2018 is a really exciting year for the MEP as it is launching into the UK market and then Asia,” Spresa said.

“My family (particularly my son) and friends (who are my family), our staff and the organisations I work with. Life’s too short, surround yourself with likeminded people and those who will not judge you and love you unconditionally.

I’m lucky to have a strong network around me and we ask very little of each other and really treasure ‘our precious time’ together.”

It was ultimately the culture of Fish Mongers that inspired Spresa to take the plunge and purchase the business with her husband, Steve.

WHAT ARE YOU MOST LOOKING FORWARD TO IN THE NEXT 10 YEARS?

“I asked to work in the business for a night to get a sense of what, if any, changes would need to take place. I walked out of that shift knowing the formula was strong, the produce was fresh and very little had to be changed.

The previous owners Heather and Dave Ferguson also became amazing friends. We often say we purchased a great business and got great friends to boot, a real sliding door moment.

he ran 31km per day, for 32 days, from Toowoomba to Mackay. Along some very long, straight, hot, seemingly never-ending highways through some very bleak, dry and dusty land. And she did it to raise awareness for suicide and mental illness.

“Facing my fears and doubts, wanting to give up but taking another step anyway, fearing I might not make it, that I might not be good enough to finish; this symbolised what living with depression has always felt like to me.

“There is a way through the blackness, there is no shame in being human, in being sensitive, in suffering; healing it isn’t an easy journey, but it is possible, and it is absolutely worth it. You are not alone,” Amanda said.

Amanda is the epitome of physical strength. She is a rare breed of individual; bringing together decades of high level sporting achievements, including numerous triathlon, cycling, canoeing championship titles, then challenging herself further as a master’s athlete, taking out the Crossfit Games World Championship Titles, twice!

HOW DID YOU ORIGINALLY DISCOVER CROSSFIT?

“Overcoming long-term suicidal depression and chronic alcoholism and releasing myself from the terrible fear, doubt and self-sabotage that underlies these issues, has been my greatest challenge,” Amanda said.

“I discovered Crossfit by accident, I was trying to make the Olympic team for High Kneeling Canoeing and that lead me to exploring options for building my strength and high intensity fitness.”

Although discovering Crossfit by accident, it transformed her life, gifted her empowerment, a tribe to belong to and made her stronger physically, emotionally and mentally. As owner of CrossFit Byron Bay, she delivers a level of passion like no other.

“I am a haircutting specialist with an affinity for freehand dry cutting, creating effortless and easy to maintain hair. I have a strong following of people that embrace their natural texture and am the go to girl for all wavy to curly hair types.”

“If I had to pick my favourite famous person, Guy Pearce by far! He is one humble, down-to-earth, charismatic human.”

Flying free Living With Addiction Jessica Bowen From a young age, Jessica Bowen had always been fascinated with birds, but was only allowed to keep budgies and cockatiels. As she got older, her fascination grew to include the concept of freeflying.

Jess purchased her blue and gold Macaw, Django, from a breeder on the Gold Coast.

From the beginning, she was determined to free-fly her parrot, allowing him to have a free and fulfilling life.

“Django started his free flight training as soon as he started learning to fly at the breeders which is called fledging. This is done by making him fly to you by calling him and presenting him with a treat.

Ultimately it comes down to knowing your bird and trusting him,” Jess said.

Django’s first outdoor flight was a nervous experience for Jess.

“Macaws will generally have a 1km radius when they roam.

Unfortunately, there is always the risk of them being chased off by another bird, like an eagle, but this is a risk that you take. Django has forged a very strong bond with me and has always come home so far. His first flight outdoors was nerve-wracking but incredible. He did these big loops around me and then landed on my arm as soon as I called him back.”

Django came into Jess’s life during a tough time when she was battling alcohol addiction. A disease she says is still hard to combat in a society where drinking is a part of everyday life and something that needs to be worked on every day.

“Despite drinking being socially accepted, alcoholism carries a very real social stigma. In a society where drinking is so readily accepted staying sober is a huge challenge.

“I am incredibly grateful for the love and support I have received from my family and friends and the strong AA fellowship and community in this area,” she said.

Her journey to sobriety has opened her eyes to seeing what’s important in her world.

“Even though Django has been something really positive in my journey to sobriety, my main goal and focus has been to become the best version of myself that I can be for my children and family. To run my business as successfully as possible but also to re-learn how to see the beauty in small things, like Django flying past me at full speed and tapping me with his wing to show off. But nothing beats waking up to your children telling you how much they love you,” Jess said.

A successful business woman, mother and friend; Jess’s struggle with addiction is one that many people face in different forms. T AF HAIR Cut: Lily just had her second child and it’s been a while between haircuts. She had long hair and was after a fresh new look. We decided on a long bob and left the front soft and a little feathered. The new cut frames Lily’s face perfectly while allowing her to tie her hair back and still look fresh and sassy.

Colour: We decided to bring soft lightening effect around the face with a matt caramel and a clean blond using freehand foil balayage to give a sun kissed feel.

To blend the colour together we finished off with our favourite Cendre toner. The overall result, a fresh sun kissed look with a natural lift.

Style: We finished Lily off with a lovely blowdry and loose beachy waves at the front to frame her gorgeous face. To give a little volume we used Mr. Smith Mousse and finished off with our favourite Dry Shampoo by Mr. Smith to give a texture.

MAKEUP Base: We chose a luminous lightweight foundation to enhance Lilly’s amazing complexion.

Mixing Laura Mercier illuminating primer with Becca Aqua Luminous foundation in medium allowed us to perfectly match Lily’s skin.

Eyes: For Lily’s eyes we went for a smoked out lash line with long fluttery lashes. We chose individual lashes and warm brown eye shadow to achieved a natural summery look.

Most indoor plants will like a little holiday outside every now and then, especially if there’s some rain around.

Dust can settle on the leaves, and putting the plant out in the rain is a good way to clean it off. Just don’t leave them in the hot sun, or they’ll get sunburnt.

I like to leave my indoor plants in their plastic pots, and just sit that inside a nice ceramic pot or basket. That way, it’s easy to move them about, or re-pot them when the time comes. After all, it’s all about getting plants into your home to make you feel better, not to give you heaps of extra chores to do!

Building a Life Matt & Henna

IT’S A LIFESTYLE MANY DREAM OF BUT FEW FOLLOW THROUGH WITH. GIVING UP THE PROSPERITY AND PRESTIGE OF BIG-CITY LIVING FOR A LAIDBACK LIFESTYLE AMONG THE ROLLING HILLS. BUT THIS IS A MOVE MATT HADAD IS GRATEFUL TO HAVE MADE, FOR IT HAS LED TO HIS HANDS BEING BACK ON THE TOOLS AND HIS HEART BEING FILLED WITH GREATER HAPPINESS. Matt grew up in a small outback town and was raised surrounded by rugged red soil. His building career started when he was 17, influenced greatly by his father, who at the time owned the second-largest building company in Australia. Matt was trained in old-school carpentry where care and attention is taken to produce a quality rarely found nowadays. After this training, Matt followed in his father’s footsteps by obtaining advanced qualifications and diplomas in building to allow him to construct large apartment blocks, high rises and multi-million-dollar homes for celebrities and footy players. For some, this sounds like the dream of any builder, and for a time it was, but after achieving an impressive portfolio of projects, Matt craved what the city couldn’t give him.

Moving to the Byron area seven years ago allowed Matt to enjoy a peaceful lifestyle and scale back his projects where he felt back in control of quality and workmanship.

“When you oversee large-scale construction, you end up being more of a manager than a builder. Here in Byron, I’m back on the tools and on site for every part of the process. I was given a great gift with my old-school carpentry training and it allows me to put care and quality into every project. I feel that the concept of the builder who actually build themselves is a concept which is a bit lost nowadays, I enjoy bringing that back,” Matt said.

Matt’s ability with timber means he can work on both modern and traditional abodes, giving a sense of warmth to modern living and tackling projects that other builders may steer clear of.

“I enjoy a challenge and I’m willing to chat to a customer to get a sense of what they are looking for, without the expense of pre-existing architectural plans or engineering specs. Often a client will just talk to me about what they want, whether it’s adding in a deck, new builds, garage and shed conversions, fixing structural damage or just making improvements on the house in general. I can offer them my opinion and advice and get to work on the outcome they desire.

I only take on one project at a time, so I can be there from start to finish, handson during every level of construction,” Matt said.

A family business through and through, Matt’s fiancé, Henna, carries out the painting and staining of projects, giving the business a few days of her time per week, while additionally being a nurse and caregiver.

Danny Salfield Welcome to the frothiest pages of Byron Life, where we delve into the minds of some Byron's frothiest ocean loving artists, musicians and shredders.

This instalment we catch up with local rock gods The Badlands, photographer Ming Nomchong, Salty sea dog Brett Munro and Mini waterman Seth Carter. Let me begin by elucidating you on my own personal froth levels, These two months as we draw close to the end of the high season summer crowds and begin sniffing the autumn southerlies in the air. Over summer we re-evaluate and adjust our surfing goals when car parks are at such a premium, going for a surf is more like buying a lottery ticket, where the prize is a slice of bitumen.

There are always alternatives though to playing musical chairs with QLD number-plated hatchbacks. Why not try walking to your nearest surf break, drive south or north of the bubble, or perhaps even construct a wave pool in your backyard (surely theres a D.I.Y clip up on Youtube?). Or as last resort why not kick back with the Froth and let this weeks guests do the frothing for you.

These guys are always frothing and never slothing. The hardest working rock band around and a bunch of fine surfers to boot. Lets find out what Byron Bay’s Badlands have been frothing on recently.

SO WHAT ARE YOU GUYS FROTHING ON RIGHT NOW? We are frothing on 2017. Last year was massive for The Badlands, we released our debut ep with a video clip and had the opportunity to tour it playing shows all over Australia. We are even more phyced for what 2018 will bring.

HOW LONG HAVE YOU GUYS BEEN PLAYING TOGETHER AND HOW DID YOU ALL FIRST MEET? We have been together for 5 years now. We met through friends and a mutual love for music and surfing.

WHAT HAS BEEN THE HIGHLIGHT OF YOUR MUSICAL JOURNEY THUS FAR? That time we did an encore in dresses to a packed out home show that was pretty classic. We played aneurysm from nirvana and Pauly crowd surfed the entire length of the Northern that was a highlight.

IF YOU WERE FORCED TO TURN FROM A ROCK BAND TO A BOY BAND SINGING CHEESY POP SONGS, WHAT WOULD BE YOUR BANDS NAME AND DRESS CODE? The highvislands. Dress code PPE (Personal Protection Equipment).

SO BRETT, HOW DID YOU GET INTO SURBOARD SHAPING? I was fortunate to have been offered an opportunity to learn the craft from a respected Australian shaper , Kingsley " Knackers " Kernouski , who was operating under the Natural Balance label in the small coastal town of Whangamata in New Zealand . The first board I made was a pig ,it made me appreciate all the good ones that had been made for me before I started .

WHO DO YOU REMEMBER AS BERING THE STAND OUT SURFERS IN BYRON BACK IN THE DAY?

WHAT IS YOUR ALL TIME FAVOURITE SURF SESSION BOTH LOCALLY AND OVERSEAS?

My days started here in 93 , there were many good surfers around here then older and younger crew all mixing it up on various equipment. It was hard to get your share of the good waves at the best spots on the primo days , nothing has changed

Best session I can remember was at Padang around 81, surfing by myself in perfect screaming barrels. For some reason nobody turned up that afternoon, it was too good to be true . As for around here , many great sessions over the years , there are so many good set ups around here, on their day .

IS THE ADVENT OF MACHINE SHAPED BOARDS THREATENING THE LIVELY HOOD OF THE SMALL BUSINESS SURFBOARD MANUFACTURERS? I don't think the use of the shaping machines has really any impact on a small operation like mine , they are just a tool and most shapers are using them now , savings in terms of time and sweat.

IF YOU COULD SUM UP THE PRINCIPALS OF SHAPING A GOOD BOARD IN ONE PARAGRAPH WHAT WOULD IT BE? I guess you just need to focus on the job at hand , spend the time on it .

I’ve been frothing on wakeboarding lately, our friends own Odyssey Wakeboarding at Woodburn and I’ve been having a blast with them on the river!

I want to go to Huntington Beach, California one day. I don’t just want to go for the surfing but to check out the whole lifestyle there. I’ve been lucky enough to travel to a few places in Indo and also Fiji to surf, but I’d really like to go to Pipeline as well

WITH YOUR MUM WORKING FOR A SURF SCHOOL, DID YOU GET SOME FREE SURF LESSONS OR DID YOU LEARN ON YOUR OWN?

ARE THERE LOTS OF OTHER SURFERS AT YOUR SCHOOL AND DO YOU FIND THE SURFERS STICK TOGETHER IN THE CLASSROOM?

I’ve been surfing since I was two. My dad taught me on a longboard. I don’t remember my first wave but we still have my tiny wetsuit. I do remember the first time I surfed on my own board though. I got it for Christmas and surfed all that day. Mum works for a surf school so we did the surfgroms program when it first started. It was good having other people teach you stuff.

I go to Byron High, so there’s heaps of surfers there. Half of my friends surf and the rest play other sports. My group’s all pretty active, it’s hard to sit still in the classroom when all you’re thinking about is what the waves are doing.

DO YOU PLAY ANY OTHER SPORTS AND WHAT DO YOU ENJOY DOING THE MOST?

I do nippers, I’ve played Union, League and AFL and did Little Athletics for ages, but my favourite is surfing.

Ming Nomchong, is an Australian based fashion and lifestyle photographer and total surf frother. Ming graduated with a degree in Fine Arts majoring in Photo-media from COFA UNSW in 2004 and she spent the following 3 years as a Photo-assistant in Sydney before moving to Byron Bay to start shooting for her own clients.

HI MING, SO TELL US WHERE ARE YOU FROM AND HOW DID YOU GET INTO PHOTOGRAPHY? I grew up in Sydney before leaving the big smoke behind in 2008 for greener pastures. Photography has always been apart of my life, it’s been a very natural progression into the space where I am now.

My mum was a photographer and that was a huge influence into sparking my interest into the creative world.

WHAT DO YOU PREFER SHOOTING MOST - SURFING AND THE OCEAN OR FASHION AND LIFESTYLE? They’re both so different and I enjoy them for the aspects they bring.

Fashion and lifestyle photography is great as I get to work creatively with a team to construct images that were figments of imaginations before they’re shot using specific (and thought out) lighting, composition and angles. It’s like making a movie, you get to create a visual story out of pictures with beautiful women in pretty clothes in amazing locations.

The surfing and ocean photography is so different from that for me, it’s an escape to the watery blue where I get to be the spectator and capture life as it happens. I love the rush you get once you capture a moment that you know is golden and won’t ever happen again. That’s pretty special.

HOW HARD IS IT TO MAKE A CAREER OUT OF PHOTOGRAPHY DOES THAT TAKE ANY OF THE FUN OUT OF IT? With the rise of social media and the technology that enables everyone to be a photographer, yes it is hard yaka making a career out of photography.

But if you love what you do, it’s not work and if you love doing something, sooner or later, you’re going to get good at it and someone will probably pay you for it. (Manifestation helps a lot too...)

WHAT PHOTO DO YOU REMEMBER TAKING AND FROTHING THE MOST OVER AND WHY? It’s the image of Lauren Hill and Crystal Fitzgerald in Tonga, swinging from a thatched hut over the water in Vava’u, from our Chasing The Sun Tonga trip. It went viral on the internet after Billabong posted it in 2015 and I’m still getting tagged in it today WHAT PHOTOGRAPHERS DO YOU MOST LOOK UP TO AND WHY? I’m obsessed with anything old or vintage so naturally I look at the photographers of yesteryear, David Hamilton, Helmut Newton, Slim Aaron, Herb Ritts.

I also really look up to the amazing women photographers around these days that are killing it, Zoe Grosmann, Olivia Malone, Emma Tempest and so many other talented creatives.

WHAT ARE YOUR GOALS FOR 2018?

Go on more tropical shooting adventures this year. And buy a house.

A Northern Rivers Food & Beverage Handbook

Amy Colli LAUNCHED LATE LAST YEAR, ‘BYRON REGION FOOD: A NORTHERN RIVERS FOOD & BEVERAGE HANDBOOK’ IS A FABULOUS CELEBRATION OF AGRICULTURAL PRODUCERS AND FOOD AND BEVERAGE MANUFACTURERS FROM ACROSS THE NORTHERN RIVERS. LAUNCHED BY BYRON SHIRE COUNCIL MAYOR, SIMON RICHARDSON, THE HANDBOOK INCLUDES OVER 100 PRODUCERS FROM THE SEVEN SHIRES, INCLUDING BYRON, BALLINA, CLARENCE VALLEY, KYOGLE, LISMORE, TWEED AND RICHMOND REGIONS. The launch event was hosted by Project Manager and Northern Rivers local, Amy Colli (Gastronomic Goodness), at the ever-fabulous Stone and Wood brewery in the Byron Industrial estate mid-December. The 80 producers and guests enjoyed a range of local produce, including food and drinks from Almond Road Bakery, Grilo Protein, Mumma Raw, Husk Distillery, Salumi Australia, Kitz Living Foods, Mongogarie Olives, Nimbin Valley Dairy, Byron Bay Crackers, Happy Belly Probiotics, Baraka Gourmet Foods, and Granny Frankfurter’s Wunderkraut. All of these producers have a listing in the handbook, which was art directed by the Federal local Gaby Borgardts (GeeBee Design).

Byron Shire Council was able to offer the free opportunity for producers to be involved in the Handbook thanks to a ‘Byron Food Advantage’ grant from the NSW Department of Industry. Mayor Simon Richardson praised the passion and integrity of the region’s food producers and leaders featured in the Handbook.

“We love our food and so do our visitors and this new handbook highlights how significant and important our food industry is – it’s an attraction in itself, alongside our beaches, hinterland and events. It’s a milestone for the region because it really shines a light on the breadth of exciting work going on in the food and beverage industry across the whole of the Northern Rivers.

“From our famous macadamias to honey, bread, bush foods, avacadoes, oils, muesli, beer, wine, sugar, tea, coffee and a whole range of truly unique food products, the creativity and innovation coming out of this industry is truly awesome.

“Whether you’re a cottage-industry start-up or an iconic Australian brand, food and beverage businesses make a significant contribution to local jobs and economic development in the region and this is something we are hugely supportive of,” Mayor Richardson said.

The handbook is a wonderful celebration of food, and also of the way we farm, and the way our region shops and supports our farmers’ markets, community markets and food festivals. Containing additional information such as each Shire’s farmers’ markets and community gardens, the handbook is a fabulous resource for both visitors and locals as well as our chefs and food community.

We heard from Tony, the owner of Lighthouse Organic Farm.

“The purpose of the stall is to sell fresh fruit and vegetables that are picked that morning. It is dependent on what is available that day and we always sell at reasonable prices to the local community.”

At the moment juicy mangoes are bountiful, so are limes and lychees. They also have a lot of wild flowers so this is a great time of year to buy your loved one a unique gift of freshly picked wild flowers.

Originally from Sydney, Steve is an electrician by trade. Although he has worked in the building industry since he was 15, Steve has always loved to cook and dreamed of owning a restaurant one day.

When he moved to Byron with his family nine years ago he was finally able to realise that dream when he and his wife, Spresa, bought Fish Mongers Byron Bay. The couple now strives to create a fresh twist on traditional fish and chips.

Yes, we’ve had a few through the door. Lovely Angus and Julia Stone are regulars, along with Michelle bridges and her hubby the Commander and celebrity chef, Shannon Bennet. I’m still waiting for Chris Hemsworth to walk through the door!

What’s the best chat-up line to use on a barista?

Barista : “Can I have your name for the order?”

Customer : “okay but can I have your number?”

Have you ever given anyone a free coffee and why?

I confess, I have! Someone looked like they were having a really bad day!

Getting something for free, with a smile will always cheer people up.

Belinda, or “Bells”, as her mates know her, is originally from Chichester in the UK. A desire to travel brought her to Byron Bay and she has now lived here for five and half years so is pretty much a local!

The Belogil is a charming beachside café known for serving one of Byron’s best brunches by day and hosting beautiful wedding receptions by night.

We meet their star Barista, Belinda, who loves working with the public and meeting interesting people. She’s found that, since making coffee at The Belongil, she’s developed good friendships with customers who she now also calls friends.

What is your biggest secret/inside tip as a barista?

I think it’s not to get stressed. As soon as you allow yourself to get flustered you’re guaranteed to spill a jug of milk all over yourself or start dropping things. Keeping your workspace tidy is also key for a good flow.

What advice would you give your customers for the best way to order their coffee? keep it short! Ha ha.

Most of our customers are regulars, so although I may not know all their names, I know their coffee orders.

What is the most challenging thing about being a barista?

I guess it’s dealing with the pressure. I can have 20 dockets in-front of me, each with 5 different coffees, milk types and strengths.

It was here that authenticity of Doña Cholita was born.

Joey explains who inspired the name.

“Doña Cholita is Jefte’s beloved grandmother. Doña is a respectful term for an older woman, Cholita is her nickname, her Christian name is Soledad. In México most Christian names have a ‘nickname’ that go with them.

“Jefte is from a big family, one of eight, so meal times we’re always an event, everyone around the dinner table. Jefte had always spent a lot of time in the kitchen, learning from both his mother, Mirna and grandmother, Cholita.”

Jefte commented, “When we named our business we really wanted something that was personal, this is our life, this is our journey here we are doing something we really love! It is a testament to our Mexican heritage, to our family who have shaped us into the people we are today. It’s personal. And it always will be,” he said.
