Welcome to 2018! It’s been nearly a year since I last wrote an Editor’s note, and I have to say I’m slightly nervous! Rachael our Managing Editor has taken over the responsibilities of the role this past year, while I have been busy working in the background across our three publications. Rachael is away on a well-deserved holiday with her family and her beautiful little boy Reef, to celebrate his first Christmas and the festive season in the UK, so I am filling in for her to bring you this issue. 2018, brings with it a lot of milestones for me, including my 10-year wedding anniversary, my 40th birthday and this year also brings about Core Life Magazine’s 7th year in production! Always as a new year begins we look at what was, what is and what are goals for the next 12 months, and if you are like me that list is long and usually unrealistic! So this year I am changing it up. Throwing out the lists, letting go of those unrealistic expectations and the pressure to do more and be more. What about you?

With beachfront bungalows to capture a famous sunrise over the Southern Whitsunday islands, Illawong Beach Resort in Mackay has long been a favoured destination for those seeking the serenity of the sea. Office Manager, Eliza Bordin, is particularly fond of the waterfront setting, with a keen love of fishing and finding the best fishing holes in the region. Originally from New South Wales, she moved to Mackay four years ago for the laid-back lifestyle, tropical weather and good friends. As Illawong Beach Resort’s Office Manager, Eliza has a hand in the dayto-day running of most of what makes the resort tick, but also has a love of book keeping. What are you passionate about outside of work? “Give me a river or the ocean and I’m happy. I love trying to find the best swimming holes in the region. I enjoy fishing, spending time with my partner, walking the dogs or just relaxing with good wine and some chocolate. Time with friends and family is important too.” What is something about you most people wouldn’t know? “I’m pretty good at puzzles!” Favourite quote? “I smile because you’re my sister, I laugh because there is nothing you can do about it.”
Favourite Holiday Destination: Tahiti / French Polynesia / Caribbean Waving farewell to blizzards and hello to sunshine, Kenny Duff left the cold of Scotland for a toastier new latitude on the far side of the world. Landing in Australia at the turn of the Millennium, he was bartending in Brisbane before a conversation with a couple from Cairns steered the direction of his future. “I had never heard of Airlie Beach before, but the couple suggested that the Whitsundays may fulfil my desires for sunshine, sailing, oysters and beer. I tossed out my anchor in June 2000 and have been spending my money foolishly here ever since,” Kenny said. Kenny is responsible for the day-to-day running of Cellarbrations Bottleshop at the Whitsunday Plaza. As no good evening starts with a salad, many local’s evenings are made after a visit to Kenny. “Navigating the number of options in the liquor world can be somewhat daunting for many customers so I have the unique position of being able to influence and guide customers in their choices, such as steering them from Passion Pop and delivering Grant Burge. What is something about you that not many people know? “I once had a job travelling the West Coast and Isles of Scotland painting the iconic Red Post boxes.” What are your hobbies or passions? “Hacking away on the Guitar, Ukulele or Mandolin. I also love a good rum or a well-made Margarita.” Any last words? “Your only hand-held device, should be the one with ice cubes in it.”

Favourite Holiday Destination: My first and only time overseas was to Ireland to see my husband’s family. It’s beautiful and I would love to go back and take in some more of Europe. Like many locals who now call the Whitsundays home, Lisa Maher came here for a holiday 11 years ago, but never went home! She grew up in the coastal town of Victor Harbor, an hour south of Adelaide, when a break drew her across the other side of the country to Airlie Beach. Finding the love of her life, Jamie, cemented the deal and now the couple have three children; Lily (8), Abiageal (6) and Owen (3). Lisa is the Senior Communications Officer for the Whitsunday Regional Council, a position which she says allows her to spread her creative wings. “I love to be creative which I thankfully get to do at work a lot. I’ve spent the last year learning how to create and edit short videos and I’m learning graphic design. There is so much to learn in this space and it’s really fun and rewarding,” she said.

What do you get up to when you’re not at work? “When I’m not spending time with my kids, I enjoy walking with my dog, she’s a boxer named Rosie. I also enjoy yoga, watching football with my husband and going out with my friends.” What are you most passionate about? “My family is number one and it’s great to watch my kids growing into little people. We spend a lot of time together going to the lagoon or the park.” What are your future dreams and aspirations? “A combination of home-improvement and travel is on the cards. We like to spend time in the garden and are slowly renovating our house. LOOKING AT AN INVESTMENT PROPERTY IN BRISBANE?
CURRENTLY, THE POLLS SAY THAT LABOR WILL BE OUR NEXT FEDERAL GOVERNMENT. If Labor does return to government what effect will it have on residential property investors? Until Labor’s final policy announcement, we are in the dark. They have made clear their intention to deter residential property investors. Their misguided belief is that an absence of property investors will make more homes available for first homebuyers. Why misguided? The main consequence of having fewer investors is less housing available for rent. This results in an increase in rental prices making it harder for renters to save for the deposit on their first home. My basis for this claim In the mid-1980’s Paul Keating's Labor government abolished negative gearing. Within 12 months, rents in Sydney increased by 60%! They had not appreciated the amount of rental housing provided by the private sector. It pushed the waiting list for public housing out so far that it has still not recovered. What did they do then to address the problem they had created and save face? To get investors back into the residential market, the government allowed investors to depreciate the cost of a new building at 4% for 25 years.

This worked to a limited extent. Investors said, “Paul, we like this 4% depreciation but we still want negative gearing before we come back into the market.” And did Paul Keating listen? Yes. In less than 2 years, he re-introduced negative gearing but dropped the 4% building depreciation from 4% to 2.5%.
IN BRISBANE?
After all this, the investors ended up better off with negative gearing returned, plus the 2.5% new building depreciation.
There was no effect on investors who had negatively geared properties before 1985 and the same applies now. You would think that Labor had learned a lesson.

How long does it take to set up the teepee?
Fantastically! Our teepee combines traditional Scandinavian principals with modern materials. The structure is intrinsically strong and the canvas is very durable, waterproof and fire resistant. The sides of the teepee can be dropped if required and the teepee has withstood many storms as a number of our happy couples can attest to, the weather didn’t dampen their big day.”
Can you provide furniture and lighting? Yes, absolutely. Our furniture is custom-made to complement the teepee and with added lighting packages it creates an enchanting ambience for any event.

Riana Adrian Wronski THE BEST FAIRYTALES HAPPEN WHEN A LITTLE BIT OF LUCK AND A SPRINKLE OF MAGIC IS THROWN IN THE MIX In the love story of local couple, Riana and Adrian Wronski, lady luck played her part when Riana and Adrian won a dream wedding overlooking the very same marina they originally met. The couple won a Whitsunday wedding reception package valued at $24,000 through a competition held by Lure at Abell Point Marina. The package included a waterfront wedding reception at Lure with food and beverage from D’vine Catering, plus styling from The Event Company and event management from The Wedding Planners Whitsundays as well as other treats including two nights of accommodation. Summer Rain Photography capture their special day perfectly. Core Magazine caught up with Riana and Adrian to find out if their whimsical Whitsunday wedding was everything they had hoped it would be. TELL US ABOUT THE CEREMONY. “It had been a rainy day, so we chose to hold the ceremony overlooking Abell Point Marina in front of Lure. The rain held off for the rest of the ceremony and it was just perfect,” Riana said. She commented, “Once I started to walk down the aisle my heart felt so full of love. There is no way to describe the feeling other than pure joy!” Adrian said, “My first thought when I saw Riana was, wow, I am the luckiest man in the world. She looked so beautiful. A bit of emotion kicked in, I had a tear of joy at that moment of realisation knowing she’s the only one for me.”
WHAT DID YOU ENJOY MOST ABOUT THE RECEPTION AT LURE? “We love living in the Whitsundays and are incredibly thankful that we had this opportunity to have our wedding where our friends and family could celebrate with us. The large balcony which overlooks the stunning blue water out toward the islands, most of our guests sat outside to soak in the view,” Riana said. “We couldn’t stop smiling the entire night, especially seeing our friends and family having so much fun. The food was incredible, we chose cocktail-style catering with eight canapes, which were elegantly presented and tasted phenomenal. The guests really loved having chill out areas, there was so much room for everyone. We couldn’t have been happier,” Adrian said. WHAT WERE YOUR MOST MEMORABLE MOMENTS FROM THE DAY? “There are so many, from the first kiss as husband and wife to our first dance, signing the wedding certificate and celebrating with everyone. We created so many amazing memories with everyone and we will treasure them forever,” Riana said. WOULD YOU RECOMMEND LURE AS A WEDDING VENUE? “We would highly recommend Lure to anyone searching for the perfect wedding venue. Everything was perfect and organised so well. Hair I'm noticing that bridal beauty is skewing toward minimalism and subtle romance with soft and natural hair styles. One hairstyle in particular dominating this year's top wedding styles is a simple and polished updo. Also, finally, no more braids! Braids have been a ruling element in bridal style throughout recent years but of late they have seem to have taken a back seat to more simple, polished and 'roganic' (romantic/organic) styles. After a thorough consultation with Elise I knew I wanted to emphasise her beautiful face and stunning eyes. So, in turn I decided a roganic style pulled softly back off Elise's face would achieve that. To achieve this look, I pre-curled Elise's hair with a heat iron. Through the top, I curled the hair directly on base to promote root volume and texture in one. Keeping the texture and volume, I loosely pulled Elise's long hair back and pinned through the back in series of twists and twirls.

Elise was super fun and relaxed to work with on her special day. Her amazing attitude and trust within me as a wedding stylist made for a super fun and smooth wedding morning filled with smiles!

Make Up In order to create Elise’s glowing Bridal look I first prepped her skin using the Rejuvenating Barrier by Nucerity this is a water based product, which helps the foundation last longer and leaves no oily residue. I used Element 2 and airbrushed her foundation and contouring to give her a flawless and defined complexion . Elise’s stunning blue eyes are further enhanced by using a complimentary colour. I chose “Jewel” from Tarte Cosmetics Rainforest of the Sea Palette. Placing individual lashes by Ardell along her lash line gave her lashes both length and fullness, while still appearing natural. To give Elise that dewy glow I used both the Youngblood Illuminate and Contour palettes. I added some blush from the Tarte Cosmetics Amazonian palette in a blush pink tone. I used the Youngblood blonde brow powder to fill in and define her eyebrows. On her lips I used a Youngblood Lipstick in a matte pink called “Secret”. To complete her look I used Youngblood Hi-Definition powder.

Illumination is all around, but it takes a skilled photographer to master the magic of natural light. Mackay photographer, Naomi Luzon, believes that any location can be transformed into a breathtaking panorama, you just need to look beyond the lens to find the light. She has been passionate about photography since her teenage years, and a hobbyist for 14 years before becoming a professional. Her inspiration to turn a passion into a profession came from the birth of her first child, 8 years ago. “I made the decision 8 years ago after giving birth to my Bilateral Cleft Palate son. Being a baker was too time-consuming when I knew I needed more time with my son. He’s had to endure cleft surgeries during his little life, and then we had two more children, so the decision to become a photographer was the best I made for my family,” Naomi said. Naomi is well-known as a compassionate photographer who loves what she does. Her natural light-based work captures timeless beauty and she isn’t afraid to step outside of the box to push the boundaries, having worked with real smoke for effect. Where has been your favourite location to capture a wedding? “I have so many! But my best one so far is Cape Gloucester. It has the best sunset for that epic scenery.” What has been your most memorable wedding photography moment? “When I helped a Bride to find her wedding band after the ceremony, as she dropped it outside the wedding car at Botanical Gardens.” Do you have a bucket-list of locations you would like to photograph?
“A camera didn’t make a great pic ture any mo re than a type writer wrote a great novel. ”
“Yes there are a number of places I would love to capture a wedding at; Stoney Creek, Paxtons, Woodlands on Jenner in Sarina and Queens Park.” How far would you travel to photograph a wedding? Any distance is negotiable! But I do regularly travel Queensland-wide for weddings.

Every wedding has a soundtrack of its own and music is a powerful way to evoke feelings and set the mood; that’s why choosing the perfect entertainment is so important! The Venue You need to make sure that your entertainment suits the venue you’ve chosen. Find out if there are noise restrictions before you book and check to see if the venue has any curfews.
The Musician When choosing a musician it’s always best to see what you’re getting. Most professional musicians will have content you can view such as: • A video • Professional photos • A song list • A biography • Testimonials The best way to decide is to see them perform first hand. Ask your booking agent where they’re performing and go along to see them play.
The Ceremony The ceremony music plays a huge role in getting the day off to a great start. The musical moments in your ceremony to consider are: • Pre-Ceremony of about 20 mins as guests arrive and mingle • Processional song
The Reception The party really starts at the reception so you may want to consider a larger act. Total Entertainment offer all-inclusive packages incorporating solo musicians, a duo or band and a DJ for later. They cover all elements from the beginning of the ceremony to the end of the night. It’s a great way to make an impression while keeping your overall costs down. Is your child ready for school? Stationery? Check! Lunchbox and water bottle? Check! Hearing check? Check!?!?? We are very lucky in Australia that we have access to a free universal hearing test upon the birth of our children. Diagnosing hearing loss early is important to ensure natural development progress and a happy and healthy baby. What most people don’t realise is how quickly hearing can change in a child and that by the time they are ready to go to school they may be suffering from some form of hearing loss. In 2016 a report showed that, after a trial testing of 1600 children, almost a quarter of Queensland school aged children are likely to suffer from some form of hearing issue. So while the early healthy hearing test might have showed normal hearing, a lot can happen between then
and the time kids start school. And if kids can’t hear properly, their learning and progress can suffer. In older children you may notice some of the following: • Inattention • Difficulty concentrating
• At school entry for all children • At least once at ages 6, 8, and 10 • On entry to high school • At least once during high school • For any student entering a new school system without evidence of a previous hearing screening
• Frequent requests for repetition.
Central Auditory Processing Disorder (CAPD) is one of the more common hearing disorders affecting school children. CAPD is essentially the brain having difficulty understanding what is being said when the child is in certain environments.
Unlike vaccinations there is no set schedule in Australia for hearing or vision checks but the American Academy of Pediatrics recommends that hearing screenings should be conducted regularly. The schedule recommended would be the following for Australia:
Testing for CAPD must wait until the child is 7 years old as it is not until then that the auditory processing system has developed to an advanced enough stage to allow us to test it. Things to look out for in school aged children in grades 2-3 and onwards include:
• Poor performance at school • Difficulty following instructions • Sitting close or turning the TV up louder

Lee and Kimberley Renshaw Distance is just a test to see how far love can travel. Childhood sweethearts, Lee and Kimberley Renshaw, went to school together in England and have been together since they were 14 year-olds. When she turned 16, Kimberley moved to Australia but Lee stayed in England to finish his electrical trade. He made the move to Australia when he turned 21 and the couple have been together ever since, marrying two years ago and welcoming their first child, Keira, seven months ago.

Keira was a big motivator in Lee establishing F45 Training in Mackay. As a former electrician working in the mines, Lee was searching for a way to be closer to home, especially when he discovered he was about to become a father.
Lee, not only lives and breathes this style of training, but he has also achieved personal results. He represented Australia in 2015 taking part in the Fitness America weekend in Las Vegas. He took out 4th place in the world in the muscle model category up against some great competition.
“Kim flew to Sydney to complete an intense week of F45 training when she was 36 weeks pregnant, we just kept our fingers crossed that she didn’t give birth on the plane! We don’t have any strategy for balancing a baby and a business, we just take it day by day.

Going from strength to strength is the core test of what makes a great weightlifter, but the sport doesn’t solely rely on physicality. Multiple Master’s World Champion and Proserpine weightlifting coach, Leanne Knox, explains how the battle with the bar is as much mental as it is physical. “It doesn’t matter what you can lift in training, on competition day, there’s six lifts and that’s it. It takes a great deal of focus and composure, which often makes the difference between a good lifter and a great one. “The sport is very technical, it’s not just about strength. A technically good lifter will out-lift a strong one. Adding weight on the bar usually comes with perfecting the technique,” she said. What originally started as a new way to get fit, soon progressed into a sport she loves. “I discovered Crossfit, which is a combination of gym, cardio and weight lifting. After two training sessions on weight lifting I was hooked. I loved the technical aspect of it. I come from a background in gymnastics which is also a very technical sport.” Leanne founded the Whitsunday Weightlifting Club five years ago, when she was new to the sport herself. What started with only two people has since launched into one of the region’s most popular and successful sports, with more than 150 members this year. The club has produced multiple national champions, state record-breakers and masters world champions. Leanne is one of the club’s greatest success stories, having won a master’s world championship title three times as well as winning a world cup, and is grateful to the Whitsunday community for the support given to the club to grow.
“With a relatively small population compared with many of the larger regional or city clubs, our club punches well above its weight in terms of results. It’s taken a lot of work and dedication from many people, our coaches are all volunteers, but most of all it’s the support from the community through fundraising which has helped our club to become so successful,” Leanne said. One of the Whitsunday Weightlifting Club’s successful athletes is Jaspa Hope. Having been competing in the sport for less than two years, his achievements thus far are nothing short of remarkable. The teenager broke the Queensland clean and jerk record for his age and weight group twice in 2017 and was selected to represent Australia. Jaspa is coached by Leanne who commented that his dedication is one of the greatest factors in his success. “To reach the level he has in a very short amount of time is exciting, for Jaspa and for the sport. His determination and dedication for his age is his greatest attribute. He trains five days per week and never skips a training session. Even when the cyclone blew part of the roof off the gym, all Jaspa wanted to know was when he could get back in and train. He has a very bright future,” she said. Jaspa moves up an age category in 2018 and being one of the younger competitors in the Under 17 age-bracket will make results more challenging, but Jaspa is looking forward to the opportunity to push himself. He is working toward state championships and then the youth national titles in the second-half of the year, with the ultimate goal of being selected to represent Australia again at the Youth Olympics. With a natural hunger to chase and achieve goals, Leanne is setting her sights on a new challenge. “I feel as though I’ve climbed my mountain already in the sport of Olympic lifting, until I set my sights on a new goal I’ll continue to work on general strength and conditioning. “There will be new goals to chase in 2018,” she said. With the Whitsundays backing them, we have no doubt that Jaspa and Leanne will continue to raise the bar.

n and off the field, Mackay’s Jillaroo, Renae Kunst, tackles challenges head-on and stares down the face of adversity. As NRL's Regional Game Development Manager for North Queensland, she is fostering the future development of the sport and is especially proud of how far the game has come in supporting the roles of women in the game. “What an amazing time to be a woman in sport. The opportunities that are now present, not only in rugby league, but in sport for women as a whole, are wonderful to see. As a mother of a young girl, it’s exciting to see the opportunities now available to the future generations. “I grew up playing netball, but rugby league was ingrained throughout my family’s high involvement in the game. My brothers played and I had to play my first junior season with the boys as there weren’t the same opportunities for girls that exist now. In later years there were opportunities to play in a women’s team at high school, which I then went on to represent Queensland and Australia,” she said. Known as one of the most dedicated and determined players to ever put on the green and gold for the Jillaroos, Renae’s impressive on-field career finished on the highest note possible, when she captained her side to win the Rugby League World Cup at Suncorp Stadium last month. The victory against the Kiwi Ferns was all the sweeter in that the fierce Jillaroos defended their world cup crown, retaining the trophy for consecutive world cup campaigns. Renae was first selected as a Jillaroo in 2008 and was announced as captain of the squad in 2015. She played in three world cups as well as an impressive list of matches for Queensland and Australia. She has always been at the forefront of development for women in rugby league, with her off-field role with the NRL allowing her to pursue that passion further. “I am so proud to lead a team of 9 game development officers stationed throughout North Queensland and to contribute to growing participation in rugby league at all levels. Rugby League is part of the fabric of Queensland and our North Queensland team is highly committed to seeing the
success of the game continue to grow through education and fostering the spirit. Although I retired from the Jillaroos this year, I feel so fortunate to still be able to be a part of this great team, albeit in a different capacity, with far less bruises on my body! “Sport is a necessity and has made me the person I am today. The opportunities and growth that have been presented to me both on and off the field are something I will be forever grateful to this game I love.”

What is something about you not many people know? “I am actually a hairdresser by trade which rugby league people still find hard to believe. I’m not your typical hairdresser, but this trade has certainly aided in leadership, teamwork and communication qualities that are greatly needed in a sporting environment and the work that I now do. I had a boss who had extremely high work ethics but was fair and forgiving. She was one of the first people who helped shape me into the person I am today and I will be forever grateful.”

PARALYSIS TICKS ARE HERE! The main tick of concern for pet owners is the Paralysis Tick (Ixodes holocyclus) as it can cause paralysis and death within 2-4 days of attachment. Whilst Paralysis Ticks occur naturally only in certain geographic areas (mainly along the coastal eastern seaboard of Australia) they can attach to pets who visit these areas during the warmer months, particularly if they are allowed to run through scrub. Ticks may also hitch a ride back with you or a neighbour in cars, rugs, towels or plants.This nasty little creature has been out on a rampage recently.

Know the Signs and Symptoms! If you notice a tick on a pet that is not displaying signs of tick paralysis, remove the tick straight away. HOW TO REMOVE A TICK:
LATER SIGNS OF TICK PARALYSIS INCLUDE:
Grasp the tick firmly where it attaches to your pet’s skin and give a quick sideways pull. It is better not to try and kill the tick first as the dying tick may inject more of its potent toxin into your pet. Paralysis ticks are hard to pull off and leave a crater in the skin and are often found around the head and shoulders, search thoroughly with fingertips and always look for more than one. If you are not confident removing the tick please call us immediately to make an appointment to have it removed. Once the tick is removed your pet should be kept cool and quiet whilst being closely monitored for 24 hours.

I’d change the way the world perceives fitness. Fitness is both mental and physical and should be a part of everyone’s life. Without taking care of your physical health, your mental health diminishes coincidentally. With suicide rates on the rise and heart disease still being the biggest killer in Australia, everyone needs to do their part to live their best lives. There’s no one way to train either, whether you walk the dog, go for a kayak or just chase the kids, do what you love because any exercise is better than none. And as for mental health, practicing meditation through a mindfulness app or even just writing down what you’re grateful for is an awesome start.

Café Manager, Samantha Camm, shares her insight into the secret life of a barista. What do you love most about being a barista at Betterbody Cafe? “Getting to know our regular customers and being able to share in a personal joke or conversation with them. They always leave happier with a coffee or smoothie in hand, it's great!” What’s your secret to the perfect coffee? “It's all about the temperature, but everyone's preference is different, that's the tricky part. We make every cup with love.” What is the funniest moment you have experienced as a barista? “It would have to be when one of my co-workers was typing in 'skinny milk' at the bottom of a customer’s order and the register’s auto-correct changed it to kinky milk!” What’s the best pick up line to use on a barista? “I don’t know if it’s the best and don’t quote me that it will even work! ‘Do you have any bigger cups? So you can jump in my coffee to sweeten it up.’” What are the best and worst comments you have received as a barista?

Definitely give the Bonnie and Clyde a go; a moisture-infused rack with gouda and caramelised onion coated with pistachio. Our Chicken Parmi is pretty awesome too.” What should a person look for when selecting a butcher? “Look for quality products and good customer service. If you receive great service, the meat has probably been handled with the same care and attention.”
“Customers do comment regularly on my ability to remember their names, I usually only ask once and will remember it.
What do you enjoy doing when you’re not at work?
“Would you believe the worst I heard was from someone who returned as a customer and now works with us in the café! They had complained that a coffee I made was too cold.”

Meet the Chef ROD RAMSAY
The kitchen is the heart of every home and for Rod Ramsay, it’s where his culinary curiosity began. Coming from a large Scottish family, Rod is one of 8 children and his household task was to do the baking which began at age 10. His family moved from Scotland spending time in both New Zealand and Australia. His career began in the Sheraton in Perth before moving to the Whitsundays in 2010 with his wife and son. Rod commented, “As you come over the hill into Airlie Beach, it’s like a holiday and work all wrapped into a special package. We have some amazing places to see and to dine at here, why would you leave?” He recently became Head Chef at The Deck, a modern restaurant with picturesque water views of the Whitsundays. What do you recommend on the menu? You can’t go past the local seafood, it’s incredible. Our beef cheek entrée, fishcakes and arancini are also fantastic. We have a new menu coming in the New Year with some excitingly delicious food, come in and try it!” Who inspires you as a chef? “My customers, and myself. If you don’t have passion for this industry, then get out, you are wasting your life and the life of our industry. I remember going to Ramsay’s kitchen in London, the food didn’t impress me, but the service was second to none. This is what inspires me, exceptional service to our customers.” What is the secret to running a good kitchen? “With calmness. In the heat of the moment, stay calm and consistent. I don’t tolerate anyone in my kitchen losing their temper. My front of house team have a really hard job, they are the backbone of the restaurant. If you treat them with respect, your customers will leave The Deck having had their best dining experience.”

It goes without saying that there's more to a burger than meat and bread. Dedicated entirely to the craft of gourmet burgers and American street eats, Little Vegas Burger & Bar in Airlie demonstrate just how tantalising tasty a burger can be. Sous chef, Tim Hinschen, loves the satisfaction of seeing a Little Vegas firsttimer become a passionate regular, even those here on holiday. Growing up on a large rural property north of Airlie, Tim has lived in the area for most of his life. He learnt his trade through experience, picking up skills and tips from many great chefs he has worked with in local restaurants prior to joining the Little Vegas team. “In kitchens I developed a strong passion for cooking and a love of finding great food. At Little Vegas, I’m constantly inspired by our Head Chef, Paul, who has extensive knowledge and experience,” Tim said What do you love most about working at Little Vegas? “The satisfaction of customers enjoying their food and receiving professional thanks. Working here is like working with family, to have that in a workplace is perfect.” What do you recommend from the menu? “Our burgers are quite famous but our appetisers are delicious too. Try the cheeseburger spring rolls or our signature spicy fish tacos before devouring an epic burger.” What is your secret weapon in the kitchen? “At Little Vegas, it has to be our secret house seasoning for our shoestring fries. It’s a huge hit with customers.” Do you have a funny story from the kitchen to share? “Last year while experimenting to create our first batch of extra-hot chilli jam, our ghost chilis came out from roasting in the oven. We chat to Evelyn Cartlidge, the Whitsunday Franchise Operator of Zambrero Cannonvale, to find out what marvellous Mexican meals are available.
What kind of food can we find at Zambrero Cannonvale? “Our menu is a healthy, modern take on Mexican cuisine, which includes our famous burritos and bowls, nachos, quesadillas and tacos. We have a wide variety of delicious fillings and sauces, a kid’s menu for fussy little eaters and delicious take-home snacks.”
What do you recommend from the menu? “I would recommend a Burrito IQ, made with black rice, guacamole and Salsa IQ topped with Trezigo sauce.”
What do you enjoy most about running a Zambrero franchise? “I love sharing our creative menu with customers, particularly those who have dietary requirements or a fussy appetite and making them exactly what they’re after. Hearing them say they loved the food and service really makes my day. As a restaurant we have donated over 56,000 meals to people in need, a milestone only made possible by the support of the Whitsunday community.”
What inspired you to pursue food as a career? “I’ve always enjoyed eating and making good food. My mother encouraged cooking from a young age and I have enjoyed being in the kitchen since I was little.” Any funny stories you can share from within the kitchen? “When getting the seeds out of avocados we often get creative and try to fit several seeds up the blade. When you try to tap the next seed, the one/s already on the knife frequently drop back into an empty avo below!” The food at Zambrero does not disappoint.
