Thank You, John McCain, for Your Special Gift Sadly, we lost another great American statesman this summer when U.S. Sen. John McCain of Arizona passed away after fighting a courageous battle with brain cancer. His legacy as a true war hero and as a political maverick who never backed down in the Senate or on the campaign trail will never be forgotten. So too will be a very special gift that he once gave to my family 10 years ago when he was running for president in New Hampshire. I was working as a reporter for Foster’s Daily Democrat in Dover when I was assigned to cover McCain’s campaign appearance at the Rochester Opera House. In addition to the rally, I also scored an interview with the candidate aboard his Straight Talk Express bus. It was August, and McCain trailed in the polls to Barack Obama. He had not yet chosen Sarah Palin as his running mate. McCain was very cordial and laid back when we sat down as his bus rambled on to his next campaign stop in Exeter. Our newspaper interview lasted about an hour and we covered many of the important topics of the day: the economy, the war in Iraq and Afghanistan, Social Security, Medicare, etc. At the end of our interview, we had a few minutes to just talk, and I told McCain how much I admired his courage when he was shot down over North Vietnam and held as a prisoner of war for nearly six years. Even when his captors gave him the opportunity to go home because his father was a U.S. Navy admiral, McCain refused and chose to be with his comrades. He endured the same torture and hardships as the other men in captivity.

When my father opened this present a few months later, he was deeply moved and almost shed a tear. No one had ever thanked him the way McCain did when we came back from the war, and like many other Vietnam War veterans, he bore those scars but never stopped loving his country.

In May 2011, my brother, Steven, and I accompanied my father to a military reunion where he saw many of the men who served under him in Vietnam for the first time in more than 40 years. Many of them called my dad, “Top,” because he was the First Sergeant of their company. When I showed them a photo of McCain’s note to my dad, they were also moved. McCain’s special gift still hangs in my father’s dining room at his home in Peabody, Mass. My father passed away in June 2016, but McCain’s gesture continues to be much appreciated by our family. When I learned that the senator had passed away at the end of August, I immediately shared a shorter version of this tale on the magazine’s Facebook page. When McCain took the time to write a note to my dad while he was in the thick of presidential campaign, it was a small gesture. But I will always treasure it as a special gift that brought some healing and joy to another true patriot. May God bless you, John McCain, and may you rest in peace.

McCain simply said, “You do what you have to do.” Then I shared with him that my father, Robert L. Cook, was a proud Vietnam War veteran who also admired the senator. McCain then grabbed my notebook and flipped to a blank page. “What’s his name?” He then wrote, “Robert L. Cook, thanks for serving our nation,” and signed it. My wife, Mary, and I decided to create a surprise Christmas gift for my dad. She used her scrapbooking skills to put together a framed photo collage of my dad when he served in Vietnam with the 1st Air Cavalry from 1966 to 1967 and from 1969 to 1970 as an Army combat photographer. We included McCain’s note in the lower left corner.

DOWNEASTER WILL BRING ECO-TOURISM TO KENNEBUNKS

for the seasonal train stop. In addition, the Maine Department of Transportation appropriated $800,000 for the project. This combined total of $1.1 million provided the momentum to continue the process and start construction. Believing the train stop could increase visitors to the area and have a positive impact on local businesses, the town’s Economic Development Committee decided to make the stop a major priority. Robert Georgitus, vice president of Kasprzak Homes, Inc. and current chairman of the EDC, says, “The committee’s mission is to support current businesses and attract new ones to Kennebunk. All of our committee members believe the train stop will be good for existing retail, restaurant and lodging businesses. In order to make an appropriate decision about how to proceed, committee members researched train travel at our neighboring town. We obtained information from Wells, Saco, Old Orchard Beach, Portland, Falmouth and Brunswick. While each town has a different characteristic, we used the data to establish a positive outlook for the train stop. We presented our finding to the Board of Selectmen for their endorsement.” Laura Dolce, executive director of the Kennebunk, Kennebunkport, Arundel Chamber of Commerce, says, "The train stop will allow both new and returning visitors to enjoy the Kennebunks. New day-trippers will be able to come up from Boston and discover Kennebunk, enjoying the seasons. It will also continue a national trend of greener tourism eco-tourism - where tourists can leave the car behind and explore our rivers, shoreline and park lands, either on foot or via some kind of shared transportation. We have an opportunity to market all this, plus special events such as LAUNCH, Harvestfest, Prelude and more - with the new stop. It's a great opportunity to infuse some more money into the local economy.” Indeed. Seasonal train service could provide a boost to downtown Kennebunk and its restaurants and shops along and give Kennebunkport one more way to appeal to the all important Greater Boston market. Currently, the Downeaster will travel at speeds as high as 72 miles per hour as it passes through Kennebunk and Arundel makes it way from the Wells station to the Saco station. Residents and visitors who wish to travel by train often utilize the Wells station and would surely utilize the Kennebunk station when it becomes available.

“Next stop, Kennebunk.” This could become the conductor’s call if the former train station on Depot Street in Kennebunk becomes a new stop for the Amtrak Downeaster. Town officials and committees have worked with several state, federal and train organizations on the project for several years. Now there appears to be an engine light at the end of the tunnel. If all goes as planned, Kennebunk will be the Downeaster’s newest seasonal train stop beginning in the spring of 2019. Like Old Orchard Beach, passenger rail service would be provided from Memorial Day Weekend through Columbus Day Weekend in October with some additional service during Kennebunkport’s Christmas Prelude celebration in December. The return of passenger rail service in Kennebunk would bring this effort full circle. The Boston & Maine Railroad built the original building in 1872. It remained in operation until 1965 when train service between Boston and Portland ended. One of the reasons train usage decreased came from the growing popularity of automobiles. The Maine Turnpike opened in 1947 which made visits to Maine more convenient for car travelers. After the building closed as a rail stop, the historic structure served as the location for a variety of businesses. Among them were an arts and craft shop, the headquarters for Tom’s of Maine and the River Tree Arts Center. Tim Dietz, owner of Dietz Associates, a full-service marketing, design and advertising firm, bought the building in 2004. 4

While the building will not be used for train services, the train stop will have a 300-foot platform on the railroad property adjacent to the track for passengers boarding and departing. The stop would have ramps for wheelchair use, bathroom facilities and a parking area. Tickets could be purchased at a kiosk, on the train or on line. Arrangements with the Shoreline Explorer Trolley and Shuttle Service would provide transportation to Kennebunk Beach, downtown shops, restaurants, inns and other popular locations.

Sally Bates, former executive director of the Seashore Trolley Museum, says, “The availability of convenient public transit systems expands people’s choices about where they will live and work, and contributes to both quality of life and a robust economy. Millennials often prefer to spend their resources on experiences rather than owning personal automobiles. We want them and those coming of age after them to have mobility and access that public transit provides. Curbing global warming also depends on expanding public transit.” At one point the EDC considered an alternative location for the stop across Summer Street at the property known as the Grain Station owned by David Gould. But the committee determined the original historic train station property on Depot Street was preferred by town residents.

Dietz expressed his support for using the property as a train stop. Dietz says, “If the town wants a train stop here, we’re happy to help reach that goal.” If the plan becomes a reality, the town will enter a long-term lease of a portion of the Dietz property upon approval of all the funding agencies. According to Sharon Staz, former General Manager of the Kennebunk Light and Power District, and an active supporter of Kennebunk’s Energy Efficiency Committee, the idea for a train stop received a strong endorsement in 2006. Staz says, “The committee approached the town’s Selectmen with the recommendation that a train stop would encourage mass transit travel.”

Patricia Quinn, executive director of NNEPRA, says, “We’re excited for the potential of passenger regional service to Kennebunk. The next step is for the town to present the NNEPRA board of directors their plan for final approval.” As part of the approval process, Kennebunk Town Manager Michael Pardue sent a letter to the Maine Department of Transportation describing the scope of the project, along with preliminary target dates for major milestones. If all the reviews pass, construction of the platform and support elements would likely allow for construction to begin in 2019. Pardue says, “We are in the middle of negotiating with all the parties involved.” While restoring train service to Kennebunk has received considerable support, there has also been vocal opposition to the idea. One of the key participants in the decision process is the Northern New England Passenger Rail Authority (NNEPRA.) The Maine State Legislature created NNEPRA to reestablish passenger rail service between Maine and Boston.

Edward Karytko has challenged the need for train service. “While I love trains and ride trains, my biggest concern is the cost to the town. I’m not sure why there is such a push for the stop in Kennebunk. I have done some personal research and contacted the operators of stations in Wells, Brunswick, Freeport and Old Orchard Beach. No one could point to any economic advantage. When I go to Boston, it’s easy enough to board the Downeaster at the Wells station.”

Karytko says he has been contacted by town citizens who share his sentiments about not needing the Kennebunk stop. But the EDC, Energy Committee and citizen supporters have kept the momentum building for the seasonal train stop in Kennebunk with a full head of steam. In all likelihood, area residents and visitors will once again be able to board and get off the Downeaster in time for next summer’s tourism season.

Habitat for Humanity of York County Restore in Kennebunk raffled off a brand new Compass Skiff this past Labor Day Weekend and the lucky winner is Adeel Shaikh of Wells, who also owns the Tallwood Motel in that community. He celebrated the moment with his children, Adam, 10, Mohammed, 8, and Marianne, 4.

Compass Project of Biddeford students enrolled in the Proactive Education Program at Biddeford Middle School constructed the skiff in April. According to the Compass Project, every piece of the boat was built from scratch using plans professionally designed by Chase Small Craft of Saco. According to a press release from the Compass Project, “the boat seats are made from a giant oak tree that had fallen in Kennebunk. Jon Speight of Wells milled the lumber and donated it in honor of the students’ great accomplishment and to preserve part of the beautiful local tree.” The raffle proceeds directly benefitted Habitat for Humanity York County and the Compass Project. Raffle tickets were sold for $2 each or six tickets for $10. Robert Haskell, the general manager of Restore, said the drawing was held at Restore on Saturday, Sept. 1. The Compass Skiff raffle was also being held to mark Restore’s 5th anniversary.

Don't be Foiled It's delicious! by this Shrimp Boil: As we ease into the colder months in our beautiful state of Maine, we enjoy the vibrant colors popping from the trees and the gifts from the harvest of the gardens. It truly is my favorite time of year. My cooking roots — so to speak — have always come from the heart. The memories of my grandmother showing me the little hints and tips to be passed on from generation to generation flood my mind this time of year. She taught me that there were no rules to cooking, that cooking was an expression of love and there are no boundaries. So today we are going to step out of the box and create a shrimp boil in a foil! The months of September and October are the primetime for corn. It is at its peak of sweetness, and although the shrimp is the star in this recipe, the corn certainly is a prominent ingredient to this dish. As my grandmother always said, simplicity is sometimes the best: This four-ingredient recipe with some basic seasoning is sure to be a hit in your home anytime of the year! YIELD: THREE SERVINGS

12 Argentine shrimp Found at all our local seafood centers, these shrimp are very sweet and easy to peel, which is the main reason why I choose them, but any jumbo shrimp will do.

4 large red potatoes

4 ears of corn

1 kielbasa

4 cloves of garlic

1 stick of butter

2 lemons

2 Tbsp fresh dill

2 Tbsp of thyme

1/4 cup of old bay seasoning

Salt and pepper

Drain and set aside to cool.

You are then going to slice up your kielbasa and dice up your dill and your thyme.

There really is no prep for the shrimp because your fishmonger would have done that for you with the Argentine shrimp, which is another reason why they're one of my favorites. Leave the shell on them to keep them nice and juicy.

Slice up the remaining lemon, and melt the other half of the butter stick. When the packets are done, garnish them with the remaining dill and thyme.

Serve equal amounts of butter alongside the shrimp boils for a dipping sauce.

DEB’S TIPS: 1.

You are not going to precook the shrimp or the kielbasa. These two ingredients will cook during the 15-minute grilling time.

Always roll your lemons out with the palm of your hand on the cupboard before slicing to bring the juice to the surface. If it is a very old lemon, you can reawaken it by placing it in the microwave for 30 seconds.

Place all the ingredients into a bowl; save half of the thyme and the dill to garnish at the end. Sprinkle the old bay seasoning and salt and pepper over the top, and mix them until they're all evenly coated.

Never refrigerate your corn on the cob. It is a starch vegetable and will turn to sugar, which will then cause loss of flavoring during the cooking process.

I have my own herb garden all year round because I prefer to use fresh herbs, but if you do not have fresh, just remember to roll the dry herbs in the palms of your hands before you add them into the recipe. This brings back the flavor of the herbs and wakes them up. Most dry herbs will last for years.

Take four 16-inch sheets of tinfoil to fold over into packets to seal the juices. Then you are going to start building your foil packets.

Spray a little cooking oil on the foil. Then start layering your potatoes, corn, kielbasa and shrimp. You are then going to melt half of the stick of butter and pour equal parts over the packets. You are then going to take one of the lemons and squeeze the juice equally over the packets salt and pepper again.

INGREDIENTS: •

First you are going to cube potatoes and cut your corn of the cob into four equal chunks. Then you are going to parboil the corn and the potatoes for 10 minutes.

Fold your packets to seal the juices in.

Place on the grill for 15 minutes or in the oven at 350 degrees on a cookie sheet for 20 minutes.

New this year, Southern Maine Health Care in conjunction with the fair will hold an open house at its walk-in clinic in the North Tower, which will feature all of its many and diverse practices. Former Celtics player and current broadcaster Brian Scalabrine will be present to sign autographs and pose for pictures. “It started as a joke. When Jennifer and I first started dating, we joked about wouldn’t it be nice to work and travel,” says Keith Belanger.

Show will take center stage at the Kennebunk Town Hall Auditorium from noon to 3pm.

Keith and his wife Jennifer now own Dream Vacations in Saco, a homebased travel agency. After some research into travel agency franchises, Keith found Cruise One, which recently rebranded as Dream Vacations. For four years, Keith and Jennifer have been helping people across southern Maine plan and book their dream vacations. During the process, Keith and Jennifer have developed great relationships with many travel representatives —including cruise lines and all-inclusive resorts, among many others.

Representatives from many of the world’s best travel suppliers will have booths, and there will be special breakout sessions where you can learn everything about a particular resort or cruise. Disney princesses will be making a visit for special meet-and-greets, so bring the kids. There will be exclusive travel show deals on everything from exotic ocean cruises to tropical excursions, and one lucky winner will win a $5,000 dream vacation.

With the popularity of online retailers and last-minute travel deals, many people don’t realize travel agents are still a thing. “We refer to ourselves as travel advisors now,” says Keith, “as travel advisors, we can save you up to four hours of planning and $452 on your vacation.”

A The major benefit of working with a travel advisor is the personal service: You don’t build a relationship with a website like you do with a travel advisor. As Keith puts it, “Booking travel online is price-oriented and not value-oriented.” Working with a travel advisor is easy and it doesn’t cost you anything. Travel advisors earn a commission from the vendor, which is built into the price of the vacation package.

After meeting with one travel rep in Portland, Keith learned how that rep always had to drive up to Portland from Boston to discuss travel as there was nothing in between. That was the day the Southern Maine Travel Show was born. On Saturday, Oct. 13, this year’s Southern Maine Travel

they wanted to go someplace warm,” recalls Keith. “We plan a lot of vacations to Florida and the Caribbean. Italy and Ireland are becoming quite popular, too.” When asked about his favorite travel destinations, Keith says, “To date, I would have to say Aruba and Costa Rica. We enjoy the people, and the climate is ideal. We love to go out and about and get to know the culture and the beaches. Of course, I haven’t been everywhere yet, so I reserve the right to change my mind.” Keith and Jennifer like to travel as much as they can each year. Last year it was a destination wedding in Saint Lucia. This year has been a little quieter, but next year they plan to vacation in Costa Rica and Alaska. What is Keith’s dream vacation? “Mediterranean cruise around Italy and Greece,” he says. “I’d love to rent a villa overlooking the cliffs of Santorini.” When planning a vacation, Keith recommends starting early, noting that while many think they’ll get the best deal if they wait until the last minute, the opposite is often true. “The earlier you are in the process of planning, the more options you’ll have,” he says. “Plus, we can keep an eye out for upcoming promotions and perks that you can take advantage of to save money.
