to Honor Barbara Bush A day after we all learned that former First Lady Barbara Bush had passed away at age 92, I was driving through Boston on the I-93 expressway when I saw a digital billboard that paid tribute to Mrs. Bush: “Believe in something larger than yourself.”

Barbara Bush made this statement during a commencement address she delivered at Wellsley College in 1990 to inspire the graduates to get involved in the big ideas of their time and make the world a better place. This is exactly what she did throughout her life before, during and well after her time in the White House by her husband President George H.W. Bush’s side.

Soon, President Bush and his family will return to Walker’s Point to spend another summer here in a place that Mrs. Bush truly loved. As more summer visitors and residents arrive, they will undoubtedly place more flowers and heartfelt wishes at the makeshift memorial that was created overlooking Walker’s Point to pay tribute to a woman who truly believed that we all have a role to play to help others and make the world a better place for our children and our grandchildren.

To understand the gravity of the sense of loss and sorrow that so many Kennebunkport area residents are feeling after Mrs. Bush’s passing, Steve Hrehovcik gathered some of their fondest memories of Mrs. Bush and the Bush family here in the Kennebunks. Their stories and remembrances show just how much she touched their lives and the lives of all the people she graciously visited with when she was just shopping in The Port, walking her dogs on Gooch’s Beach or attending celebrated events in the community with her husband and other members of her family.

Steve’s cover story and feature about a special exhibit at The Columns that will celebrate the Bush family’s philanthropy are also brilliantly illustrated by the photos of Robert Dennis, who spent a great deal of time photographing the Bush family.

As hard as it may be for some to accept that they will no longer see Barbara Bush around town, it is also important to remember all of the causes that she held dear and do what we can to help others and make our community and our state a better place for everyone. This is the best way that we can honor Barbara Bush’s legacy and this is what she would have wanted: carry on.

Each time we choose to make a donation to a group like the Animal Welfare Society in West Kennebunk, volunteer our time to read to elementary school children or make a donation to the Barbara Bush Children’s Hospital at Maine Medical Center in Portland, we are carrying on the work she so loved.

Her legacy is also one of great compassion and empathy for those who have the greatest need. Any time we can reach out and offer those things to one another, we are honoring Barbara Bush’s legacy. Any time we choose to support organizations like the Kennebunkport Conservation Trust or the Kennebunk Land Trust that strive to preserve the beauty and natural wonder of the place we call home, we are also honoring Barbara Bush’s legacy.

Whenever we strive to give of ourselves to our communities and the people who make up our communities, we, like Barbara, are choosing to “believe in something larger than ourselves.” When we do this we can all make a difference and achieve great things.

Steve Adams, a lifelong resident of Kennebunk, witnessed the spirited side of Barbara Bush. The Secret Service granted Adams security clearance so he could serve as a local driver for President George H.W. Bush. The clearance gave Adams access to Walker’s Point. Adams remembers a family gathering with their grandchildren. One youngster came to the president and whispered to him. A moment later, the president went to the dock and jumped into the water.

“After the President climbed back onto the dock, Mrs. Bush stormed up to him in a rage. She said, ‘What do you think you were doing, jumping into the water?’ The president smiled and said, ‘One of the children bet me a quarter I wouldn’t jump in.’ Mrs. Bush was not amused,” Adams recalls. “In a loud voice she scolded the president, saying, ‘Did you see the Navy Seal jump in after you in his battle dress uniform and combat boots? You apologize and tell him you’ll pay for cleaning his uniform and boots.’"

Realizing Mrs. Bush was right, the president apologized to the Navy Seal.

“The incident showed the human side of two very influential people,” Adams says.

Arundel Barn Playhouse from the time she opened it in 1998 until it closed in 2015. Grant says, “President and Barbara Bush were quite wonderful with their support of the playhouse and attended productions with family members often.

It became a tradition for the cast and crew to take souvenir photos with the first lady and president. Demonstrating her thoughtfulness, Mrs. Bush would take pictures of the youngsters in return.”

Living up to the generosity that became a legacy of Mrs. Bush, the playhouse company received invitations to parties at the Bush compound on Walker’s Point.

“It might be a relaxing Texas-style barbeque or traditional Maine lobster bake,” Grant recalls. “At times, Mrs. Bush guided people to the pool or President Bush took others for a spin on his boat.”

It has been about a month since the hearts of so many people here in the Kennebunks, across the nation and around the world were broken by the news that former First Lady Barbara Bush passed away at 92. As the Bush family and former President George H.W. Bush prepare to return to Walker’s Point this summer, so many here who fondly remember Barbara Bush will share their feelings of loss and sorrow.

Thankfully, many residents will be buoyed by the wonderful memories they have of their interactions with Barbara Bush whenever she shopped in The Port, took her dogs for walks on Gooch’s Beach or made sure she and her husband attended so many Memorial Day and Fourth of July parades over the years.

What follows is our special tribute, featuring just some of those memories for a wonderful woman who devoted her life to helping others in need here in Maine and around the world.

We love you, Barbara.

One of the Bush family’s favorite restaurants

was Mabel’s Lobster Claw on Ocean Avenue, a short distance from Walker’s Point. Owner Robert Fischer found that Mrs. Bush had a great sense of humor and said what was on her mind.

“Once she kidded me that since she came to Mabel’s so often, people thought she owned the restaurant,” Fischer says.

He remembers Mrs. Bush saying, “The last thing I want to do is own a restaurant.”

Fischer adds, “She also liked it when we sat families with youngsters near her table. She loved speaking with the children. Even though they may not have appreciated they were speaking to the wife of the president of the United States, they seemed to enjoy the conversations.”

John Downing

has been a prominent member of the Kennebunk community for many years. His ancestors settled in Kennebunk in the 1600s.

Downing became active in the Republican Party, and when George H.W. Bush first ran for the presidency, he and his wife Nancy hosted several fundraisers at their home. Barbara Bush attended these events with the President, and Downing recalls what a gentle and kind lady she was.

“Mrs. Bush always took the time to speak with people,” says Downing.

“She never rushed a meeting with them, and made them feel appreciated.

Once, at a national Republican convention, with so many thousands of people there, I felt honored that she recognized Nancy and me and she gave that wonderful Barbara greeting.

She was so natural and always smiling. When she spoke, she was understood and appreciated. I consider it a privilege to have been her friend.”

of Kennebunkport and Palm City, Florida, met Mrs. Bush before she became the first lady. On several occasions, Speers enjoyed playing tennis with Mrs. Bush at the River Club and on Walker’s Point. Speers always appreciated how friendly and courteous Mrs. Bush was, along with her ability to remember people’s names and incidents.

“Mrs. Bush knew my 10-year-old daughter, Whitney, would make a great babysitter for her grandchildren,” she recalls. “Whitney babysat several times one summer. But not the next summer. That year, George Bush was running for office. At a crowded fund-raising event on Walker’s Point, Mrs. Bush spotted me. She came over to apologize that she hadn’t called Whitney. She explained all the grandchildren’s parents brought their own babysitters. She had an amazing memory and was very generous with her time for so many worthy causes.”

Over the years Barbara

Bush had several dogs as pets. When visiting Maine, she used the services of Dr. Margaret Shively at the Kennebunk Veterinary Hospital. Dr. Shively cared for each of the four dogs Mrs. Bush owned – Millie and Sadie, both Springer spaniels, and most recently, Bibi and Mini-Me, a smaller mixedbreed of Maltese and poodle.

“During visits,” Dr. Shively says, “Mrs. Bush showed a deep concern for the dogs’ welfare. She always insisted on practical and reasonable treatment. Mrs. Bush was also eager to get into conversations on a variety of topics and often suggested books she thought I would find interesting.”

When she worked

“Mrs. Bush was very pleasant and down-to-earth,” Whitten says. “You couldn’t ask for a nicer person.”

Whitten also volunteered in the Kennebunk office of the Republican headquarters during the former president’s run for office in 1988. Whitten recalls how Barbara Bush would visit the office, shake hands with everyone and thank them for our work to help her husband get elected.

Tom Bradbury, executive director of

the Kennebunkport Conservation Trust (KCT), and his wife Shirley got to know the Bush family even before they became a political dynasty.

When visiting Walker’s Point, family members would shop for food and sundries at Bradbury Brothers Market in Cape Porpoise, which the couple owned. The Bushes were also strong supporters of the KCT. A friendship grew through the years, and the Bradburys had opportunities to visit both Walker’s Point and the Bush’s Texas home on a number of occasions. They even received a special invitation to attend Barbara Bush’s funeral service. Tom Bradbury says Barbara Bush went out of her way to make visitors welcome.

of Cape Porpoise has known President and Barbara Bush for more than 20 years. With her love of dogs, Mrs. Bush was a supporter of Dennis’s two photo books “Gooch’s Pooches: The Dogs of Kennebunk Beach.”

She often walked her dogs in the early morning on Gooch’s Beach, which inspired the name for the book. Dennis also had photographs featured at the George H. W. Bush Presidential Library and Museum in College Station, Texas.

“Mrs. Bush sent me a very complimentary note about the photos,” Dennis says. “I felt honored to be recognized by Mrs. Bush.” at the counter at the former Paul’s Variety Store in Kennebunk, Carol Whitten had a surprise visitor. At first, Whitten didn’t recognize the woman who came in to buy a bottle of water. Then, Whitten noticed the two tall, husky men alongside the woman, who had an impressive white hairstyle. In a moment, Whitten realized the two men were bodyguards and the woman was the first lady.

Named one of the “Top 10 Maine Summer Events of 2016” by Yankee Magazine in its first year, LAUNCH! is getting bigger and better in 2018. Perhaps my favorite part of the weekend is the River Lights Boat Parade Saturday night, where captains and crew decorate their boats in lights and festively parade up and down the Kennebunk River. It's a party both on water and land, as hundreds of folks gather along the jetty and river banks to cheer on the boats. Last year I rode aboard Ray Billings' lead boat, the Retriever, and it was a highlight of my year. As a warm early-summer sun set on the river, it was a gorgeous cruise up and down the river, and I thought to myself "Ahhh, I get to live here! Thousands of folks come to Maine looking for this experience, and it's right here. This is LAUNCH, this is life in the Kennebunks!"

We want everyone to experience their ah-ha moment, whether it be on the water or doing something else they love. LAUNCH offers something for everyone to enjoy. LAUNCH! is an “all hands on deck” weekend with area hotels featuring nautically-themed packages, restaurants preparing their finest seafood delights and themed cocktails, and local shops showcasing unique and creative crafts and gifts.

White Columns to Celebrate Bush Family's Philanthropy this Summer

To Fill the Summer Air at Vinegar Hill Music Theatre

As Vinegar Hill Music Theatre rolls out it shows for its third season in the former Arundel Barn Playhouse, excitement is already building for the myriad top acts on the bill.

Kevin Nealon, a former Saturday Night Live player who served as the anchor of Weekend Update, brings his brand of comedy to the stage on May 31, while The Drifters — of “Under the Boardwalk” fame — officially open the 2018 season with their sweet harmony on June 15.

Kirsten Camp serves as the executive director of the Kennebunkport Historical Society. The society’s premier property is White Columns, the 1853 Greek Revival-style building located on North Street, which houses the First Families Museum.

“When news came of Mrs. Bush’s final days,” Camp says, “we provided a Condolence Book for admirers of Mrs. Bush to sign and leave a message of sympathy. We will present the book to the family when they return to Walker’s Point in the summer.”

Since 2013, the museum has featured exhibits honoring the political and personal legacy of the Bush family. Camp says, “With the passing of the former first lady, this year we honor her memory in an exhibit called Barbara Bush and Her Family. Last year, we featured photos, displays, memorabilia and literature highlighting the philanthropic generosity of President and Barbara Bush.”

The following organizations will be featured.

The Barbara Bush Children’s Hospital – Named for First Lady Barbara Bush in honor of her ongoing support of the Children’s Hospital located at Maine Medical Center in Portland, and founded in 1995, the children’s hospital provides care for 100,000 children each year. The hospital has 116 beds and furnishes services that range from routine check-ups and immunizations to treatment of serious life-threatening injuries and illnesses.

Susan Doliner, vice president of philanthropy at Maine Medical Center, says, “The impact of the Bush family, most notably, Barbara Bush, who graciously lent us her name for The Barbara Bush Children’s Hospital, has been far-reaching and impossible to replicate. Every day, we strive to follow her remarkable example and ensure that all children have the chance to grow up happy and healthy.”

MD Anderson Cancer Center – President and Barbara Bush were great supporters of The University of Texas MD Anderson Cancer Center. The center released a statement, noting, “We join the nation in mourning the

loss of First Lady Barbara Bush, who has made an immeasurable impact on the lives of so many, including cancer patients at MD Anderson and beyond. We will never forget her generosity and her passionate support of our mission to end cancer. Their continued support of multiple fundraising events helped raise almost $90 million for the institution’s mission areas.”

Barbara Bush Foundation For Family Literacy – First Lady Barbara Bush established her national family literacy movement in 1989. The foundation provides educational reading programs for preschool children and adult literacy for parents and has reached children and parents in all 50 states.

Points of Light – In his inaugural address in 1989, President George H.W. Bush said, “I have spoken of a thousand points of light, of all the community organizations that are spread like stars throughout the nation, doing good …” From this beginning, the Points of Light organization has more than 62 million volunteers working in a variety of local and international groups to help others.

Diane Quest, chief marketing and communications officer for Points of Light, says, “There can be no doubt that President Bush’s leadership during his time in office and the 20-plus years since has forever changed volunteering and citizen-led problem-solving in communities everywhere.”

Bush/Clinton Fund – Presidents George H.W. Bush and William J. Clinton teamed up to raise funds for victims of natural disasters. They provided relief from devastation caused by Hurricane Katrina on the Gulf Coast as well as the tsunami in Asia and earthquake in Haiti. Years after the destruction caused by these life-changing events, volunteers and organizations continue to work on recovery, bringing food, water, medical supplies and rebuilding homes and businesses.

There will be no shortage of variety in this season, with everything from Well-Strung on June 16 — a quartet of classical musicians who also sing playing music by such varied artists as Mozart, Madonna and U2 — to Broadway star and Drama Desk Award-winner Linda Eder on July 12.

Other shows include The Belmonts, The Gatlin Brothers, Martin Sexton, Livingston Tayler and George Winston, just to name a few. As the reputation of this intimate venue grows, Sarah Dearing, its managing director, says it makes her job to book the best available acts easier.

“Shows are chosen based on a lot of factors,” Dearing explains. “Some of it is science; some of it is industry relationships, and some of it is being in the perfect spot at the perfect time.”

With a long resume of performance-related vocations — including booking acts at the Comedy Connection and managing Maine’s main comedian Bob Marley through years of performances, including his record-breaking 40-hour set that raised $22,000 for the Barbara Bush Children’s Foundation — Dearing, who came all the way from California to return to the home of her own roots, knows the industry and the community well and combines her professional proclivities and personal passions to bring the best to her venue.

When asked what drives her choices, Dearing replies that it is always what her patrons want. “I try to give potential patrons a wide variety of music genres and other variety to choose from,” she says, “and most of all, to try to bring shows in that you would traditionally see on a much larger stage.”

Dearing also notes that many of the artists who have come to Vinegar Hill are already asking to come back. “We are very lucky to get some of the shows we have,” Dearing observes.

White Columns is also known as the Nott House after Elizabeth Nott, who inherited the building and then donated it to the Kennebunkport Historical Society in 1981.

Dearing also explains the venue is always looking for ways to improve the experience for its patrons. One example is the return of the Garden Bar that opens 90 minutes prior to each show, weather permitting. On Sundays from July 15 to August 26 from 3 to 6 pm, guests can enjoy Vinegar Hill’s Chill at the Hill Garden Series, which includes live acoustic music, drink specials and popular local food trucks with a 6:30 pm ticketed performance.

“This year kicks off with Johnny & Scotty’s Quiet Riot Act in the garden,” Dearing says, adding Mainely Burgers and El Rodeo will be on hand providing food and that the evening show features former Stray Cat Lee Rocker.

Other additions this year include a new flex-pass program that allows patrons to purchase a block of 10 tickets to be used at certain performances.

Since Vinegar Hill Music Theatre opened in June 2016, the venue continues to enjoy an amazing journey.

“Adrienne Grant purchased the farm from the Smith Family, opening the Arundel Barn Playhouse in 1998,” explains Dearing, and Grant presented theater for nearly 20 years with a resident company before retiring in the fall of 2015, at which time the property was purchased by Tim Harrington and Debbie Lennon. “They thoughtfully renovated it with the intention to become a music theatre,” Dearing adds.

In addition to music and comedy, the historic barn also hosts weddings and other special family and corporate events on its beautiful grounds.

Dearing said Vinegar Hill also wants to give back to the community and support the performing arts for future generations. “We are also revitalizing Vinegar Hill Youth Theatre,” Dearing notes, and the nonprofit organization will raise money to help area children further their performance education. he says. “I don’t want to be a hotel restaurant. I want to be a restaurant that happens to have a hotel attached to it.”

What about those meals that are making 95 Ocean just such a destination?

“Almost everything on the menu is gluten free by default,” he says. “Balance is really important.

For me, the important part is being realistic. I have people coming to Nonantum who have been coming for 25 years and want that boiled lobster dinner. So yes, we’ll have that, but we’ll have a menu filled with nuances that make other dishes exceptional.”

In the midst of planning the menu for the 2018 season, Sicinski says there will be something for everyone — and thanks to a gifted pastry chef on staff and with a nod to his family’s heritage, he adds, “We are all about pierogis right now.

And while 95 Ocean is already known for its extensive vegan and gluten-free offerings, Sicinski wants to do even better. “We are using the best things we can locally all the time,” he says. “I want people to assume it’s the best product we can get at the time. It’s important to be transparent.”

Over the course of one conversation, it’s clear that integrity is very important to Sicinski. “We are not reinventing food – you either do it well, or you don’t do it well. We are always putting our best foot forward and treating every customer — at every price point — to the best of our abilities,” he says. “I want no credit. I want my people to

shine. Having people who care as I care is really what makes the difference for me. Seeing my vision emulated as best as they can do it, well, I can’t ask for more than that.”

Growing up in Connecticut, Sicinski’s entry into the culinary world began while making pizza at a restaurant when he was 17 and progressed with his attendance at Le Cordon Bleu College of Culinary Arts in Dover, New Hampshire, where he received classical French training. But it was during his seven years in Sedona, Arizona — his first full-time job out of school — that he began to marry the artistry and hard work of his profession in earnest.

At Mii amo, he focused on nutrition.“I got a chance to take over the spa at a very young age,” he says.

“It taught me a lot – taking care of celebrities who wanted delicious food without all the calories to go with it. Today, we balance all these things in our repertoire.”

He even became an author during his time there, co-authoring the spa’s cookbook, which sold about 30,000 copies.

“Mii amo was the number one destination spa in the world for three of the years I was there,” 10

Sicinski recalls. “It is a pretty amazing place still and a real highlight at an early time of my career.”

The road back to New England — and to The Nonantum in 2016 — was all about family. Sicinski had been in Arizona for about 10 years, but he and his wife Angela still had family back in Connecticut and wanted to be within driving distance to those roots. As is often the case in the working world, it was all about who he knew, and connecting with former colleagues.

Sicinski found work in his field in Stowe, Vermont, at the Topnotch Resort and Spa as well as an independent bistro and brewery where the focus was on local dairy and comfort foods. However, the Sicinksis felt the pull of the ocean and four years later the couple and their young son, Brett, moved to Maine, where the next stop for him was the Inn by the Sea in Cape Elizabeth where he was the executive chef.

“Being in the hospitality industry can be to some extent like being in the army,” he says. But with a young son, Sicinski was cognizant of making big moves and the effect that would have on his family. When he learned about an opening nearby at The Nonantum, he was immediately

interested. “It’s a different place,” he says, and after meeting with the owners, he knew this was where he wanted to be. “They are seasoned in the resort business. It’s not a corporation. It was refreshing. It was successful; it was profitable, so I knew I could easily add my touches and grow it.”

“It’s awesome,” he responds without hesitation.

“The culture and the way employees are treated are just incredible. We really are the gold standard.

I have an incredible core staff.”

At the end of a major event or a busy night in the restaurant, Sicinski loves the moment when the team comes together to reflect. “It all worked, but we’re going to come back again and do it all tomorrow,” he says. “Sharing that satisfaction is my biggest teaching tool.”

Mike Corsie Turned a College Summer Job into a Thriving Landscape Business

BY ROBERT COOK Since 2000, Mike Corsie has steadily built Terrapin Landscapes into one of the Kennebunkport area’s premier companies when it comes to giving his clients their dream outdoor hardscapes and beautifully maintained lawns. His pickup trucks and company vehicles that bear his company’s colorful turtle logo are a common sight around town.

Corsie’s love of live outdoor concerts and the Grateful Dead album “Terrapin Station” is what inspired his company’s name. What began as college summer job 18 years ago turned into a profitable business supported by his family and his dedicated employees.

“It’s what we like doing because you get to be more creative,” Corsie said. “You get to make somebody’s idea in their head come to life.”

Sometimes it is not an easy process, but Corsie said that he and members of his staff help guide that process by giving clients visual examples of similar projects they have either done for other clients or have seen to help them.

Corsie said the company captured six awards at the recent Maine Flower and Garden Show held at Portland’s Thompson’s Point in March.

They took home top honors for the Design Task with a garden exhibit that best exemplified the show’s theme of “rooted in Maine,” Maine grown plants, woody ornamental, the pollinators award and natural stone award. Some 20,000 people attended the show and Terrapin’s exhibit received a great response.

In late April, Corsie said he and his staff just finished a dry-stone wall project at a home on Goose Rocks Beach that was a retaining wall that was overgrown and in need of an upgrade.

They followed the client’s wishes and reused much of the stone because it was part of their family’s property.

“We actually rebuilt it during the winter which was challenging because of the snow,” Corsie said.

Corsie said he has 15 employees, six of whom work year-round. During the spring, summer and fall, the company undertakes several projects with two install teams and fine gardening teams. Terrapin also does a few commercial projects, he said.

On average, Terrapin will do about two- to three projects in the winter and as many as 30- to 40 projects during the landscaping season.

“I started doing it while in college working for somebody else,” Corsie recalled. “I was at UNE as an environmental science major and started doing landscaping as a summer job as a reason to not have to go back to New York.”

Corsie was also a freshman when he met his wife, Stacey, at the University of New England just up the road in Biddeford Pool. While still in school, Corsie realized that landscaping and hardscaping is what he wanted to do.

The projects can range from an outdoor patio and fire pit to much more extensive projects, he explained.

“We did one project last year at this time that took four months to complete,” he said. The Kennebunkport project involved everything from plantings, lighting, stone work, a driveway and all new turf lawn and irrigation system.

“I really liked it and I eventually changed my major and changed schools to Southern Maine Technical College,” Corsie said.

Regardless of the scope of any given project, Terrapin prides itself on its ability to do any project from A to Z. Corsie said the company also works with highly skilled and experienced sub-contractors when necessary.

In just a few years, Corsie recognized that many Kennebunkport area summer residents wanted to add stunning outdoor living spaces to their

He also takes great pride in the fact that he, Stacey and their two boys, Joey, 8, and Ben, 5, make their home in Kennebunkport. “I live in the community I work in. I take what I do very seriously. I want people to talk highly of me and my company.”

Corsie credits his employees with fueling the company’s continued success. He said they are all very professional and passionate about what they do. “Without people like that I would not be able to succeed or grow my business.”

When recycled, water content is reclaimed and the remaining solids are processed to be used in fuel blending to create industrial oil for blast furnaces, steel mills or making asphalt. Green Circle Salons has partnered with Alouette Correctional Centre for Women in Maple Ridge, British Columbia to create an opportunity for rehabilitation and reintroduction to the work force by creating hair booms made from recycled hair clippings. These hair booms filled with recycled hair are then placed in the ocean to assist with cleanup in the event of an oil spill. These are just two examples of how Uptown Curl is becoming a part of the change.

One of my favorite tools in the kitchen is my wok, and one of my favorite things to cook is stir-fry. And if doing dishes isn't your favorite thing, then you sure will enjoy this one-dish recipe I call Chef’s Stir-Fry.

Place them in the wok, and pour the cup of noodle water you retained over the top. This marries the noodles to the sauteed mixture. Gently toss until they are mixed well with the vegetables and meat mixture.

This is a hearty recipe that can be whipped up in minutes. I prefer to use thin egg noodles in my stir-fry. They tend to absorb the liquid and become more flavorful because of their texture. This particular stir-fry is made with an Italian kielbasa, but you can use chicken, beef, shrimp or any type of seafood you like. I keep this recipe real simple with just the egg noodles the kielbasa, the mushrooms, a can of diced tomatoes, red and yellow bell peppers as well as onion and garlic tossed together in a wok with a basil pesto.

Cook until heated completely through.

Serve in shallow bowls, making sure to spoon some extra delicious sauce from the bottom of the wok over your plated dishes, and finish off with some fresh grated Parmesan cheese and fresh shredded basil leaves.

Whether you serve this by itself or alongside a side salad with garlic bread, this is a quick, healthy meal to please all ages!

This recipe serves four.

INGREDIENTS: 4 handfuls of a thin egg noodles

3 TBSP fresh basil, chopped

1 can of diced tomatoes

1/4 cup olive oil

1 yellow pepper

1 large Italian kielbasa

1 orange pepper

1 lime

1 red onion

1/2 cup of grated Parmesan cheese

3 cloves of garlic 1 can of button mushrooms

DEB’S TIPS: 1.

When cooking pasta always retain a cup or so of the pasta water before straining this allows the pasta and the sauce to come together as one.

Always wait to salt your water after the water is boiling if you do it before it boils it will sink to the bottom and score your pot.

METHOD: Prepare your noodles as directed, cooking only to al dente. They will finish cooking in the wok.

While boiling the noodles, chop your peppers and onions and two cloves of garlic and the sliced kielbasa and saute with a little olive oil in the preheated wok. Season with salt and pepper. Remember to bring out all flavors season with salt and pepper every step.

While they are sauteing prepare your pesto in a small bowl by combing the remaining olive oil, the chopped basil, some Parmesan cheese and the reamining clove of garlic and a squeeze of lime. Season with salt and pepper. I use a mortar and pestle, but the back of a spoon will do the trick if you don't have one.

A Melting Pot of Flavors:

From Comfort Food to Asian Cuisine, Biddeford and Saco Have It All

BY MATT ROBINSON As a commercial center of York County, Biddeford attracts people and organizations from all over Maine and New England as well as from across the country and beyond. It is no wonder, then, that it has one of the most diverse dining scenes in the area. From Indian and Mexican to Thai and Vietnamese, Biddeford has long been known as a melting pot for cooks and chefs.

In recent years, however, the scene has grown and developed beyond an internationally diverse menu to one that varies in terms of offerings and urbaneness as well.

Biddeford and its twin city of Saco can boast more than 40,000 residents. And with a median age of 35, perhaps so many chefs find a home

here because, with all the young professionals and families, there is almost always someone hungry for more!

“It is a perfect place in which to invest,” Mayor Alan Casavant observes, “as residents are eager to dine and shop locally.”

Among the most popular morning spots is Biscuits & Company (B&C). From biscuit-based breakfast sandwiches to lunchtime creations piled on house-made bread, from soups and salads to Sunday brunch, B&C has been filling a hole in the community while filling people up since 2015.

“We are really stepping into our next step of redevelopment,” adds Biddeford Planning and Development Director Mathew Eddy, noting that the City Council recently approved the first parking structure and is ready to begin redeveloping mill properties that constitute almost one million square feet and another 200,000 square feet in an abutting parcel.

When asked what attracted her to Biddeford, Cooper cites the area’s potential and what was already a growing downtown area.

“We’re thrilled to be a part of this vibrant and creative community,” she says. “In the time we've been here, we've seen tremendous activity in Biddeford, and we're thrilled to see new businesses opening, new residents moving in and a sense of optimism about the future of our downtown.”

In addition to providing food for her neighbors, Cooper also strives to offer a community meeting space where “everyone feels comfortable and welcome, and we are proud to say that we've achieved that!” the self-taught cook and caterer says.

Biddeford is not just working to incentivize newcomers with local contests but also is piggybacking on statewide initiatives.

“The state has changed a law that would enable restaurants to expand into the streets or public space, should they choose to,” explains Eddy, the planning and development director, noting Main Street owners also have a façade-improvement program available so they can make their establishments more appealing inside and out.

Another result of the expansion has been increased diversification of the types of food available. Take Mulligan’s Irish Pub, Coletti’s Pizza and Yeto’s.

“Our focus has been and always will be our guests,” says Liam Gibbons, general manager of Mulligan’s, “and providing the best value for your dollar that you can get anywhere in the state and beyond.”

Though Mulligan’s was once part of a set of four venues, Gibbons says that he is confident his 23-year-old establishment will stay around and looks forward to serving the Biddeford area — and beyond — for many years to come.

“We hope to host generations of families,” Gibbons says, noting the expansion of the live music program and the potential addition of video games and other attractions.

Francesco Coletti came to Maine in the 1990s, bringing all of his native recipes and traditions with him.

“I now have started the real healthy pizza like it was always … in Naples,” he explains, touting preservative-free, all-natural recipes that include long-fermented dough that he says is very digestible and delicious.

Though they do have a pasta night, Yeto’s also offers more contemporary fare that is proving popular in the region. Opened this past Valentine’s Day after a years-long search by cofounders Bryan Casale and Jackie Hardin, Yeto’s is clearly part of the new youth movement that is taking shape in the area.

“The community in Biddeford is ready for new flavors and approaches to food,” Hardin says, noting the community’s “sense of openness has been great for us, as people have been really willing to give some of our unique and weird flavors and fusions a chance.”

“The community itself is very inviting,” Casale adds, “and there isn't a cutthroat competitiveness between restaurants in the area. Instead, there is a very welcoming and friendly attitude between the proprietors, and the community as a whole really wants to work to see everyone succeed and for Biddeford itself to succeed.”

“Biddeford's restaurant and dining options are expanding as more and more chefs and entrepreneurs learn that not only does this city possess a dynamic university, sandy beaches and a vibrant seasonal coastal community, an architecturally significant downtown and rapidly expanding mill residences and shops,” Mayor Casavant says, “but also possesses the affordability of space that is not available in crowded markets like Portland.”

“We want to see Biddeford grow and really believe in the community, so we hope to aid in the revitalization by working hard to make a successful business in the area,” Hardin says, adding, “We love the people, the history and the atmosphere of the city. I don't think we could picture opening anywhere else!”

Comment, share, pingworthy, agree etc. The more interactions you have the more you will increase interest in people becoming your citizens. The more citizens, the more exposure for you and your brand.

4. Invite people to Myopolis.

The more people you invite from other social media sites, or people who are new to social media, the larger your base. Remember, people don’t need to leave their current social media communities (although once they experience Myopolis they may make that choice).

At first, it’s harder to take someone away than it is to get them to add Myopolis.

5. Build your own communities that matter.

Get four or five close friends, colleagues or clients to use Myopolis as their primary means of connecting. Even small groups begin to carry heavy influence and motivate people to remain active.
