“Carve your name on hearts, not tombstones. A legacy is etched into the minds of others and the stories they share about you.” ~ Shannon L. Alder It’s this quote that springs to mind as I chat to leading hair stylist Bianca Rizzo ahead of this issue’s cover shoot. Bianca knows all about the importance of ‘legacy’, in fact she’s pretty much living proof of what it can achieve.

After all, in the wake of her hairdresser father Alfie’s passing in 1998, she would have been forgiven for never wanting to set foot in a salon again. But, in truth, she wanted the exact opposite, and found solace in the idea of carrying on what her father had started. Fourteen years later she is an example of what determination can achieve, and she shares her story on page 11.

Also building their own legacies are the members of the Style ‘Fash Pack’. This issue we were eager to shed light on the talents of so many of the people involved in Malta’s developing fashion scene.

From bloggers to designers and photographers to stylists, they are the individuals steadfastly doing their bit to craft our fashion niche. At last, it’s working, and in ways that many of us previously thought to be impossible. They share their inspiration, advice and tips on page 18.

Of course, this issue is also bursting with so many other favourites – including our striking fashion shoot on page 33, our must-have makeup look of the season on page 57, and our fantastic recipes on page 77.

Now I don’t know about you, but I’m looking forward to cooler days and cuddled-up evenings, so bring on winter. I hope it’s full of plenty of time for reading, relaxing, fun and frolics. Enjoy!

Living a

Legacy Charismatic Bianca Rizzo is known for her dynamic and handson approach to everything in her life, including her role as a leading hair stylist. Here she chats to Jo Caruana about her passions and plans, as well as her determination to keep honouring the legacy of her late father Alfie.

“I guess my path was always going to lead towards hairdressing, even though I didn’t necessarily think it would – when I was little I was hellbent on becoming a vet or marine biologist!

“Unsurprisingly it was my dad, Alfie, who put the idea into my head. I began helping out at the salon on weekends, which is where my love of hairdressing first started. Back then, when I was in my teens and my older sister, Francesca, had just returned from London as a qualified aesthetician, dad thought it would be fantastic for us to all be in business together. He would be the hairstylist at Alfie’s, the salon he had built from scratch, Francesca would handle beauty, while I would be a trichologist, specialising in a branch of dermatology that deals with the scientific study of the health of hair and scalp.

“That wasn’t meant to be, but I was destined to a life in the salon. It wasn’t long after my dad passed away in 1998 that I really started getting into the idea of working there.

“Contrary to what some people might imagine, I loved being in the salon – it gave me a sense of belonging. I knew how hard my dad had worked to build the business in the first place and I was compelled to keep his memory alive, as was Francesca.

Building relationships with clients made me happy and I loved the idea of meeting the same people week on week. I knew I had big shoes to fill, especially as he had always been my number one idol, but that’s exactly what gave me the drive to succeed.

“It also helped to have such a strong family around me. My mother has always been so supportive. When I was younger I used to think of her as weaker than my dad, but she turned out to be such a rock. My sister, meanwhile, has been my guardian angel, while my younger brother is our ‘baby’ and we’re all very close. I feel very lucky to have them.

“They definitely fuelled my decision to move to London for a while to study, following on from my time at the School of Hairdressing here in Malta. Based on my dad’s love of education, my mum suggested a move abroad and I was thrilled by the idea.

So I packed up and moved to the UK to study with Vidal Sassoon, who I have always

looked up to as a true industry leader.

“London was a breath of fresh air.

I enjoyed being someone that no one knew. It was very intense, but also incredibly insightful. It taught me that it isn’t about who you know or how old you are, but how determined you are to succeed. I learnt so much about the industry. I was able to be as creative as I wanted, to experiment and to learn as much as I could about the dynamic world of hairdressing. And I was thrilled to be awarded three out of the four prizes given at the end of my diploma.

“London also evolved my fashion sense; it became cooler and more experimental, and I was even more adventurous with my hair! Over the years, though, I’ve found myself following a more classical style, and I know what suits me now.

“I have been blessed to find my partner Joe, and we have so many shared interests, such as travelling, adventurous cuisine, socialising and a love of family.

“This year we spent some time in Thailand, which was an amazing experience; we got to discover an incredible culture together. Being there taught me a lot; I was bowled over by the people, who are so happy with so little, and so kind. It was quite lifechanging. Here we’re caught in the trap of constantly wanting a nicer car, bigger home and new handbags. To them, family is important and they live in the moment. I do think the experience changed me, and I came back feeling that I have so much to be grateful for.

“Now, when I look around the salon, I feel very grateful too. It’s as though my dad’s legacy is in full bloom; and people know me for me now, and not just as Alfie’s daughter. I’m excited by what is to come, both at work and in my personal life. In many ways this is yet another new chapter and I’m determined to make the most of it.”

BIANCA’S My favourite designers include Dolce & Gabbana and Roberto Cavalli. D&G promise such exceptional tailoring, while Cavalli is so alive with exotic prints and vibrant colours. Together they produce a style that is classic with a modern twist, which I’d like to think is very ‘me’.

My favourite shopping destination would have to be Italy. I go to Tuscany quite a lot and I love to while away a few hours popping in and out of the beautiful boutiques in Florence. London is another staple. When I lived there I worked on Bond Street and was surrounded by high-end fashion every day. It made me want to try all sorts of different styles and looks, and I found it very inspirational.

Accessories very much punctuate my style – mostly handbags and sunglasses because they can quickly transform an outfit. I have about six pairs of sunglasses in different shapes and colours, so they work with every outfit and mood. My mood very much plays a part!

Now that it’s nearly winter I’m looking forward to a switch in our social life, as I quite enjoy spending time at home. I love meeting friends, going for lunch and curling up to watch a series. Time on the sofa with something good on the telly is definitely a guilty pleasure!

When it comes to the things I’m passionate about, it may sound cheesy but I am just driven by life itself. Making people happy gives me such satisfaction, and I enjoy the fact that my job enables me to do that. I have lovely clients and the salon is a place I get to express my creativity.

Travel is a passion Joe and I share, so we’re always on the lookout for our next destination.

My love of travel is very broad – I adore the buzz of a European city, as well as the relaxing atmosphere of an exotic beach.

When it comes to my character I think of myself as an open book. I’m very loyal and would jump through hoops for the people I care about. I also think I’m a good listener, and that’s vital in the work I do. o

The Maltese fashion scene is finding its feet.

It’s not long ago that even talk of a local ‘industry’ would induce guffaws. But now, just a few years later, it employs a full range of professionals – from photographers to stylists, and designers to creatives.

Some would argue that the Malta Fashion Awards sit at the very centre of that progression.

Launched in 1999, they successfully sought to highlight the emerging talents that the islands were producing and to shine a light on the potential that existed. Fourteen years later (and with Malta Fashion Week now established internationally) many of the people we interviewed for this feature argue that it is the award’s founder, Adrian Mizzi, who has moved the scene forward more than anyone else.

Looking to the future of artistic creations and exciting collaborations, Style on Sunday celebrates Malta’s budding fashion scene by meeting with many of the talented individuals who are passionately driving it forward bit by bit.

photographers Brian Grech is one of Malta’s most commercially-successful photographers and his distinctive style never fails to turn heads.

Kurt Paris is a top Maltese fashion photographer and renowned for his creative shoots and artsy edge.

Inspiration: When I started out, Mario Testino was my inspiration, but nowadays I can’t think of one person or object that inspires me. It comes down to a combination of elements that range from art to interiors, and all objects around me.

Inspiration: I am inherently conservative so I like things that are understated but special in some wonderful way. I also love colours, and my favourite is orange.

Contribution: I think I brought a sense of refined style to Maltese photography, achieved through better use of lighting, art direction and postproduction. This elevated the mundane that many people had been accustomed to, and creating polished images has become my ‘trademark’.

Brian’s Top Tip: If you want to become a professional photographer you need to try hard at it every day.

However, just because someone can cook doesn’t necessarily make them a chef.

Contribution: Most photographers process and light their photos in their own style but I try new things all the time. I would say the only things that make a photo a ‘Kurt Paris’ are its contrast and colour!

Kurt’s Top Tip: Anyone wanting to take amazing photos has to remember to never shoot in bright sunlight but rather in the shade, and to always contrast the colours of whatever you’re shooting with the colours of its surroundings.

Kris Micallef was one of the first Maltese photographers to work internationally.

His art has been exhibited in Holland, France and the Ukraine.

Inspiration: I’m inspired by various photographers’ work, particularly Helmut Newton’s dramatic angles. I also like new designers rather than the established ones because they tend to be more experimental and fun.

Contribution: Exhibiting and shooting internationally has been fantastic, and it’s enabled me to meet and work with some incredible people.

Kris’s Top Tip: When posing for a photo, wear something that defines your personality and don’t try to be someone else. Lighting is also very important.

stylists Marisa Grima was one of Malta’s first stylists and the co-founder of Supernova Model, one of Malta’s top modelling agencies.

Carina Camilleri is the founder of Models.com.mt, and one of Malta’s most sought-after and influential stylists.

Inspiration: Life inspires me.

What I see, what I envisage and the people around me.

I’m a very visual person and I am inspired by all sorts of things. I love life and I believe in living it to the full.

Inspiration: I’m mostly inspired by the creativity and innovation of my friends Jamie and Joe, who have been in the industry for eons.

Contribution: When I first started out, so many people thought the foreign fashion scene would always be better than ours. But, by providing a platform for Maltese creatives to showcase their work, I believe I have contributed towards a shift in mentality.

Marisa’s Top Tip: When styling yourself keep your personality in mind and don’t become a fashion victim. And always look in the mirror before leaving the house!

Contribution: I like to be different and I’m always thinking ‘next season’; I think that comes across in my style. I love using a piece of clothing in a totally unconventional way – such as trousers as a jacket or a coat as a ball gown skirt.

Carina’s Top Tip: I think people need to stop trying to look like the models in magazines because that’s not reality. Look in the mirror and be honest with yourself – do you like what you’re wearing?

No? Then change!

Caroline Paris, winner of the 2013 Malta Fashion Award for Best Stylist, also styles for various TV programmes, for Miss Malta and, of course, for our very own Style. She also runs popular blog carolinefashionstyling.com.

Inspiration: I’m mostly inspired by film and television: I love how a character’s clothes can completely define them.

Contribution: I’m thrilled to be working with so many different media, and it’s great that our work is becoming more recognised. As for my blog, I like to focus on different body shapes because I believe that there’s definitely fashion to suit every figure.

Caroline’s Top Tip: When people are styling themselves they shouldn’t think in terms of rules, but should try on different things and figure out what flatters them; then, they should take some time to examine and understand why it does!

Charles & Ron

Sef Farrugia is among Malta's most talented upand-coming designers. Her work, which is neoMaltese in style, has been widely celebrated, including by the current US Ambassador to Malta, Gina Abercrombie-Winstanley.

Charles&Ron was Malta’s first luxury fashion brand and the duo behind it have worked together for decades, pushing the boundaries of Malta’s fashion scene long before it even existed.

Inspiration: I don’t search for inspiration, but rather get it from the people I meet and the stories they tell. They trigger something within me that helps me escape into creativity.

Inspiration: Travelling, Malta, meeting new people, the Mediterranean, old Hollywood, culture – these are all things that inspire us. Holland (which is where Ron is originally from) also plays its part and helps bring out our different sides.

Contribution: I think I’ve shown people that Maltese products can be of great quality. I also always try to use local products and manufacturers to help support the industry and the economy.

Sef’s Top Tips: Old-time glamour needs to be reinstated as part of people’s style. I think what goes well with great outfits are good manners and composure.

Contribution: As the first luxury brand on the Maltese fashion scene (even though there were designers before us), we brought a very feminine-yet-strong aesthetic to the fore for Maltese women to make use of.

Charles&Ron’s Top Tip: A Charles&Ron woman is outgoing, has a strong character and is not afraid to be seen or noticed – we believe everyone should embrace those values!

Saz Mifsud is a talked-about rising star on the local fashion scene, and all her items start with one key component: a great print.

Inspiration: Antique lace, furniture, the Far East – particularly Indian saris and jewellery – and nature.

Nature actually plays a big role in my designs, so much so that I named one of my designs Nature Abstract.

Contribution: My work is all about prints, and the shape of any garment is designed around them.

Everything I make comes from the idea that a painting can become a wearable item; so it’s not just a piece of clothing but art you can carry with you every day.

Saz’s Top Tip: People are often scared of wearing prints but shouldn’t be intimidated by them. They can show off your character – the trick is to make a print your own.

Bianca Darmanin is the mind and pen behind one of Malta’s most talkedabout blogs, The Fashion Carousel.

Inspiration: Other bloggers inspire me, such as Chiara Ferragni from the Blonde Salad. I also love Kate Moss’ rock-and-grunge-but-still-chic look.

Contribution: The Fashion Carousel is quite new but so far I think it’s given women inspiration as to what they can wear and how they can wear it. In the future I’d like it to go international, and hopefully to design my own line.

Bianca’s Top Tip: I think blogging is really helpful and the fact that people follow us means that they might be motivated to try out the things we suggest; so if you love something, blog about it!

Claire Galea

Mariel Sacco has injected a bit of reality into the Maltese fashion scene through her blog Confessions of a Former Size 6. Her blog has also become something of an overnight sensation.

Inspiration: It’s people rather than brands for me. Mostly divas, like Sophia Lauren, Lana del Rey, old-style and vintage things.

Contribution: I think I’m the only blogger to give fashion a reality check, in the sense that I’m short, constantly on a diet, and always in between sizes. The trials and tribulations of a real person trying to make it: that’s my selling point.

Mariel’s Top Tip: Internationally, bloggers are now collaborating with big designers and becoming celebrities themselves. So if you have something to say, say it, as bloggers definitely have a place on the fashion scene these days.

The Clouded Revolution is made up of Sandro Rizzo and Claire Galea (as well as Nicole Farrugia, who was away on the day of our shoot) – Malta’s first blogging trio. They have one of the fastest-growing followings.

Inspiration: We love seeing others do well because that motivates us to do well too. We’re also inspired by music and adore David Bowie’s style – he always looks sharp.

Contribution: We brought the element of a trio to the local blogging scene – we have different views on aesthetics but we think it’s worked well as it’s attracted different people.

The Clouded Revolution’s Top Tip: Blogging gives a certain grounding to fashion and inspires people to try new things out.

We’ve seen a great response to our blog posts, with people choosing to wear the brands we’ve endorsed. Clearly people are listening and getting inspired by bloggers, so why not try it out?

Chris Galea, from Michael & Guy, is one of Malta’s most prominent hair stylists, particularly thanks to his alternative take on hairdressing and theatrical style.

Inspiration: Vidal Sassoon is my biggest inspiration, but I also love the alternative hair shows that take place in England and America. Inspiration, however, tends to change depending on what I’m working on at the time.

Krista Paris

Contribution: Throughout my career I’ve worked on headdresses in the shape of unicorns and even big wigs that moved and grew on stage. I think we need more creativity injected into hairdressing; there’s a major art to it.

Chris’s Top Tip: I believe that people should always go to a hairdresser they trust and make sure they use good products.

Over-processing hair is a terrible mistake people often make.

Make-up artist Krista Paris has been involved in countless shoots and catwalks, and nominated in the Malta Fashion Awards. Her work has also taken her to two of the world’s fashion capitals: London and Milan.

Inspiration: I usually look to the runway for inspiration because the trends there are often more outrageous. I find bags and shoes pretty inspirational too!

Contribution: Since I was an artist first I took to make-up in a different way than most other make-up artists. I came to it with a very creative outlook and I consider each face to be a canvas.

Krista’s Top Tip: Always be yourself but do try to experiment.

Don’t get caught in a rut because trying new things can make you feel amazing. o

Here Style on Sunday meets three veritable power couples to discuss their individual achievements, shared goals and common passions. photography by alan carville Francesca: “Reuben and I met when I was still at university the first time around – I remember him helping me with one technical issue or another as he’s fantastic with that sort of thing, and we quickly became friends. I don’t think law was ever really our common interest, we just moved in the same circles and everything worked out quite organically.

I definitely couldn’t have gone back to university and started my career from scratch if it weren’t for Reuben. We understand each other when it comes to our individual passion for what we do – he has always been so eager to revive the law profession through the Chamber, while I have completely immersed myself in art and everything related to it. I don’t think of us as ambitious per se, but we are in love with what we do. Sure we’re like ships passing in the night sometimes, but we’re equally as strong individually as we are together, and both facets of our lives are important.”

Having completed her first degree in law, Francesca Balzan decided to follow her heart towards a career in art history. Today she is renowned for her books and exhibitions on the subject, including curating the recent Fondazzjoni Patrimonju Malti event Vanity, Profanity & Worship: Jewellery from the Maltese Islands, and is also the curator for Palazzo Falson in Mdina. Meanwhile, her husband Reuben is equally successful, both as a partner within a law firm, and as President of the Chamber of Advocates.

Reuben: “Francesca and I have always had a great relationship and we look forward to our time together, whether it’s socialising with friends or a dinner date just the two of us.

We schedule it though, and I often send her a ‘calendar request’ to ensure we put that time aside; if it’s in my calendar then it’s set in stone!

Our downtime is usually spent travelling, and we both enjoy photography too. Sometimes we’ll head off for a walk in the countryside, snapping shots as we go; it’s the perfect hobby for us as it blends my techie side with her artistic one. I think our differences bring us together and we often discuss the varying aspects of our lives to get the other’s input, although we rarely actually get involved. Our mantra is very much carpe diem – we enjoy what we do and we enjoy each other, and I think that’s what makes it work.”

Businessman and owner of RBG Ltd Ray Bugeja recently contested the leadership of the Nationalist Party and has just headed a Commission which reviewed the party’s finances. Besides being President and CEO at Engel & Völkers Sara Grech Malta, Sara Grech is the Consul General for the Philippines & CEO to RBG LTD. They have been together for nearly two years.

Ray: “I spent almost 40 years away from the island, living in the UK, Buenos Aires, Rio, Paris, Hong Kong and Milan, working in finance. I returned to Malta to live at a more human pace after working endlessly and travelling from one country to another.

In the past, I had also done quite a bit of philanthropic work myself, so I decided to call Sara as I knew she was heading the Guide Dog Foundation, which I was interested in

getting involved in. We had dinner one evening and it rapidly went beyond the dogs… that was two years ago now!

In terms of being a power couple, Sara has her drivers and I have mine. There are times when I am the mind and she is the heart, and there are times when it’s the other way around. We are very much two individuals, but it is no longer an individual ambition and dream, it is now a joint venture in life.

Sara is the field person for my businesses, and I do her finances and mine. That way, it is of benefit to both. We communicate all day and in the evening meet and discuss over a glass of wine. We can have evenings when we don’t talk business at all, and others when we talk business exclusively. We enjoy being busy together. Life is about keeping yourself stimulated.”

Sara: “I left Malta for boarding school in the UK when I was 13 and moved on to obtain my higher education in New Orleans and at University in San Francisco. I studied hospitality management and, upon returning to Malta for a year after university, ended up getting involved in real estate. I opened my own business a year later.

Ray is the hand and I am the glove in our relationship. If I didn’t have a partner who was forward-looking and ambitious, I would get bored quickly. Juggling schedules is easy for us, as we are both used to being very busy.

As the businesses are run by us we are able to spend time working together. On the other hand, when it comes to relaxation, we spend most of our downtime overseas, although we also like boating, dining and concerts. We also enjoy doing charity work together and recently launched a new foundation to help people with disabilities. We believe that every one of us has the ability to improve the life of someone else.

Having so much in common helps Ray and I so much, and I believe compatibility is so important. We both keep ourselves busy, which keeps us focused on what we want and where we’re both going. My advice to other couples would be to never give up on your passions, as there’s no better time than now to make progress on them. Achieving success (whatever that may be) comes from having the courage to start working towards it in the first place.”

Dr Joanna Delia runs her own cosmetic dermatology clinic while her partner Henry Petersen, originally from the Faroe Islands, works as a recruitment consultant for the IT and iGaming industry. Their son, Peppi, is a year and three months old, and his sister is due very soon.

Joanna: “I hate the word ambitious, but I do believe I’m motivated to a fault. We complement each other a lot – I wouldn’t be able to do what I do if he weren’t so supportive, or if both of us were too driven, we would forget about living. Travelling is our way of getting away from everything. We also love to cook, though we fight like mad in the kitchen!

In terms of juggling our schedules, I’m lucky because I can work around Henry.

There are times when I am very busy though

– as most of my clients are working women, I often end up having to fit in 30 to 40 clients after noon. But I like to have a busy schedule; I’m not the type of person to stay at home all day.”

Henry: “We met four years ago and have barely been able to spend an hour apart since. It was sort of like The Jukebox Queen of Malta by Nicholas Rinaldi, which is about an American soldier that went to Strait Street. We met at the same place during a 50s themed party, while I was in Malta for my studies.

Coming from a family of 15 siblings, I believe family and success are related. Jo is two years older than me and has helped me through a lot of professional decisions, but I don’t believe you can be totally happy if you’re not happy at home. I wouldn’t be able

to be with her if she were totally career minded.

I see my partner as a friend and a companion, not just somebody to spend my evenings or split the bill with. We work around each other’s schedules and keep weekends as family time, putting away phones and emails to enjoy our time together. Without each other, I don’t think we would have been as successful as we are.”

Both: “Our advice to other couples, although it sounds cliché, is to communicate. We’re very open with each other and generally resolve problems quickly. We also have projects together, which we believe everyone should do. We decide on things together in different phases in our lives. When we decided to have a baby, we knew we couldn’t go out drinking anymore, so we entertain at home twice a week – it’s how we create our own social atmosphere.” o

Even though the Q3 is the smallest in the growing family of Audi’s stylish range of SUVs and crossovers, the sensation experienced whilst driving it is that this is a ‘full figured’ 4x4. The feeling is instant – indeed, upon settling into the driver’s seat, you feel safer, taller and perhaps stronger The Q3 is the ‘little brother’ of the larger Audi Q5 and Q7 – but you don’t get that sensation unless its ‘bigger brothers’ are parked next to it. In fact, whilst driving the Q3, you are likely to feel that you are actually at the wheel of one of the larger of Audi’s SUVs but on the other hand – and admittedly this might sound contradictory – the drive is so smooth and straightforward that you may wonder whether the Q3 appears larger to drive from the outside than it really is.

The interior of the Q3 is typical Audi – posh, stylish and elegant but also very functional. The seating position is sublime and most importantly it handles extremely well for a crossover.

Some people argue that SUVs, 4x4s and crossovers are not suitable for our tiny island, yet the Q3 might embody one of the strongest counter-arguments to date. The driving experience is extremely pleasant and effortless. You are driving a posh Audi SUV, yet it is relaxing driving. The road handling is extraordinary and the same verdict applies on bumpy patches… the ride is not too hard and the vehicle seems very at ease to take on surfaces that are not straight-forward.

As expected, the cabin is immaculate and standard features are extensive – ranging from the Audi Concert audio system to a very

Light and rain sensors – which are increasingly becoming a must for discerning drivers – and climate control air-conditioning with sun sensors are a few among the endless list of standard features that you will only get accustomed to by experiencing the subtle drive of the Q3. This ‘little’ SUV also impresses on space – inside there is a feeling of space and freedom. Space is equally abundant in the boot, which again makes the Q3 a win-win option, considering the fact that it is regarded as a relatively small vehicle in the luxury SUV market segment.

Style on Sunday test-drove the 2.0TDI 178bhp Automatic and the response we got from the maverick engine was superlative… this is a car that really impresses on the road and this is an engine that never fails to rise to the occasion – the acceleration, followed by a consistent momentum, is truly wonderful.

For those who struggle to apply restraint when driving such a strong and fast engine, the entry level 2.0TDI Manual might be a more suitable proposition for Malta’s roads – it still does a remarkable 143bhp that is both very efficient and economical (in terms of fuel consumption as well as road tax, which is fixed at €120 per annum).

Our workspaces are often as much a part of our lives as our homes, and they are equally reflective of our passions and personalities. Here Style on Sunday is invited into three very different workspaces to discover what each of them says about its ‘boss’ in residence!

Celia Borg Cardona Renowned artist and sculptor Celia has crafted a studio space that works perfectly for her – which is good, as it’s where she spends most of her time!

“The shelves in this room would once have been lined with cakes and pastizzi, but now they’re bursting with papers and other artsy stuff!”

Before it became my studio, this space was actually a little dolceria next door to our house. It was so convenient when it became available and I now get to it through our courtyard. I spend all my time here – sometimes from first thing in the morning till late at night. Being an artist doesn’t feel like work and never has. If it ever does, I’ll throw in the towel.

On the rare days when I'm not in the mood or when a painting is not progressing well, I just abandon everything and experiment with something different, such as a new medium or subject.

Music keeps me company and I always have it on. Coffee is another of my addictions… you’ll usually find me with a mug in one hand and a paintbrush in the other!

I go through loads of paintbrushes but can never throw any of them away; I always think there’s going to be a use for every bad brush. They’re among my favourite tools and I have ones associated with just about every medium, role and canvas size.

Some canvases end up hanging around while in an unfinished state. I keep hoping inspiration will come, which does happen sometimes. If I keep looking at them often enough, I realise what’s missing and eventually fix them.

Once a piece is done it’s either sold or framed and hung in my mini gallery downstairs. I have lots of portraits hanging around, and it’s nice to have friendly faces on the wall. Some of the portraits are of friends of Debbie (Caruana Dingli) or Francesca (Balzan) who join me for a portrait session here every week.

FRANCO CAMILLERI As the managing director of camilleriparismode, Franco’s workspace oozes a chic sense of style. It is also dotted with historic treasures such as family heirlooms and stunning pieces of art.

When I planned this space I wanted it to have the semblance of an office, with a working desk and meeting space where matters can be discussed formally and informally. That’s important to me.

Sitting behind a desk while talking to someone reminds me too much of my school and all-too-frequent visits to the headmaster’s office!

My desk sits in a glass box facing the shop, as at the end of the day that is where business is made. Back when I came into the business in 1979, my first brief was given to me by my late Uncle Lewis, my mentor.

He instilled in me how important it was to have a great space to do business, and I’ve always remembered that.

When we planned our Rabat shop we kept it in mind every step of the way.

There’s lots of memorabilia here, from across the five generations that have contributed to the business since 1890.

Some of them signify our role as merchants,

such as these original cash registers.

One was found in the basement of our shop, and still had money in it! It must have been taken down during an air raid and forgotten.

Our large collection of books also takes pride of place – old ledgers and bankbooks dating back to the early 20s. Other favourites of mine include this old safe, as well as an icon of the Sacred Heart that was commissioned by my grandfather to remind us all of where our destiny lies.

A sketch of our Merchants Street shop was created by Perit England in the 50s. It reflects the vision of my grandfather’s generation, as they truly believed our shops should be avant-garde.

Of course this is a workspace but it is also home to one of the indulgences I love to share – really good whiskeys, and I have quite a collection. It is a passion that was handed down from my father. We conclude every day with a toast, no matter whether it has been a good day or a bad one.

ADRIAN DELIA Adrian’s office reflects both his life as a lawyer and his role as VicePresident of Birkirkara Football Club. He and his wife Nickie also have five young children, and their pictures and artwork take pride of place among his antiques and corporate paraphernalia.

I was much younger when I decorated this room and wanted to give it the classic ‘British-lawyer look’ that I had dreamed of ever since joining the profession. I love the way it’s turned out.

Most of the furniture was either bought at auction or inherited, while many of the picture frames were given to me by friends and family. I like it that way because it keeps my workspace balanced and reminds me of why I work so hard.

The thing I adore most in my office is the Birkirkara FC jersey above. It is signed by the first foreign football player I ever secured for the club, so it deserves pride of place. My chair, meanwhile, is an unsung necessity of the trade for someone who spends most of his time sitting at a desk. It has in-built lumbar support and is a vital tool for a good day’s work!

The photos of my family are my inspiration and they are all facing me. It gives me great comfort to know that they’re with me, and I’ve even framed and hung two of my children’s drawings, which I treasure.

Most lawyers nowadays will tell you that data is the best tool of the trade but I can’t be without books. Whenever I’m working on a case I spend hours pouring over them.

In my profession, the office is a very important and particular space. It has to be welcoming to clients who are passing through tumultuous times, be somewhat intimidating for when you’re hosting the counterparty, and also double as a lawyer’s second home.

This room was much older than me when I first put it together and now I feel like we’re in the same place. I love it here. At one point we thought it might be a good idea for me to move to an office on the fourth floor; the view was amazing but it was a traumatising thought!

Lobster Bisque, Pan-seared Lobster and Asparagus - Serves 4 Ingredients: 2 lobsters; 130g blanched asparagus; 50g onions; 200g carrots; 100g celery; 2 garlic cloves; 30ml cognac; 1 litre water; 3 tbsp tomato paste; 200ml fresh cream; 1 sprig thyme; 1 bay leaf; a handful of chives; 120g tomatoes

Chop the onions, carrots, garlic and celery, and put aside. Then cut the lobster shells into pieces, retaining the meat for the pan-seared lobster. Fry the onions, carrots, garlic, celery and lobster shells in a saucepan, and leave to brown. Add tomato paste and cognac, and reduce. Then add water, the bay leaf and some of the thyme, and allow to reduce by half. Pass through a conical strainer and bring to a boil once again, add cream and season with salt and pepper. In a separate pan, sear the lobster meat with some thyme. Dice the tomatoes and finely chop the chives. To assemble, pour some bisque into the plate, place the blanched asparagus on top, then the chopped tomatoes, add the lobster and sprinkle with chopped chives.

Beef Steaks with Asparagus, Pumpkin And Thyme Jus - Serves 4

Ingredients: 800g beef fillet, cut from the centre; 100g asparagus; 120g pumpkin; 100g potatoes; 3 shallots; a handful of cherry tomatoes For the marinade: 500ml red wine; 1 tbsp fresh thyme; 2 shallots, finely chopped; ½ clove crushed garlic; ½ tbsp caster sugar For the Gorgonzola polenta: 1 litre water; 200g polenta; 60g grated Parmesan; 100g diced Gorgonzola cheese; 2 tbsp butter To make the marinade, put the wine, fresh thyme, shallots, garlic and sugar in a saucepan. Bring to the boil, then reduce heat to a simmer and cook briskly, uncovered, until reduced by two-thirds. Set aside to cool completely.

Trim the beef of any excess fat and sinew.

Using a pastry brush, brush the beef liberally with the cooled marinade. Wrap firmly in cling film, forming a large sausage shape. Marinate in the fridge for at least two hours. In the meantime prepare the polenta by bringing the water to the boil in a large saucepan. Add the polenta and cook, stirring constantly with a wooden spoon, until the polenta thickens.

Remove the polenta from the heat and add the Parmesan and Gorgonzola, mixing in well. Spoon the polenta into a greased roasting tray, spreading out to a 5cm thickness. Set aside to cool completely. Once cool, cut the polenta into 10cm circles, using a cutter.

Meanwhile, preheat a griddle until very hot. Unwrap the marinated beef and slice into four steaks. Cook the steaks on the griddle to your taste. Place the griddled steaks on a roasting tray and put in the oven to rest for 20 minutes.

Cut the pumpkin into 5cm rounds and roast at 180°C with brown sugar and butter on top for around 10 minutes or until tender. In another pan, sweat the shallots and the cherry tomatoes with the Parisienne potato until all is cooked.

While the steaks are resting, finish the polenta. Heat 2 tablespoons of vegetable oil in a large, heavy-based frying pan.

Add the polenta circles and fry until golden-brown on each side. Remove and keep warm. Place the fried polenta circles onto warmed serving plates, then place the cooked asparagus, the pumpkin and the other vegetables on top. Place the beef on the polenta and drizzle with some gravy. Garnish with some rocket leaves and asparagus tips.

Asparagus Wrapped in Filo Pastry, Stuffed Bell Peppers and Breaded Buffalo Mozzarella - Serves 4

Ingredients: 150g asparagus; 4 sheets filo pastry; 4 red bell peppers; 100g couscous; 50g shallots; 100g red bell peppers (for the couscous); 2 buffalo mozzarella balls; 150g polenta; 3 eggs; 100g flour; 150g balsamic vinegar; 50g sugar Peel the asparagus, then cut the filo pastry in four pieces. Brush the filo pastry with the beaten eggs and roll the asparagus up in it. Re-brush the pastry and sprinkle with black sesame seeds. Set aside. To make the stuffed peppers, start by washing, cutting and re-washing the peppers. Make the couscous by cutting the shallots, peppers and asparagus, and then dry-frying them for about five minutes. Boil the vegetable stock, add some olive oil to the couscous, and pour the boiling stock on top. Cover and set aside. When cooled, stuff the peppers with the mixture and roast in an oven for about 6 to 8 minutes. To make the breaded buffalo mozzarella, drain the mozzarella from its liquid and pass it through the flour, then again through the beaten eggs and the polenta. Repeat this process twice. Deep fry until the polenta starts taking colour.

For the balsamic reduction, pour the balsamic vinegar into a saucepan, add sugar and bring to the boil. Simmer for about 15 minutes. Fry the asparagus for around two minutes. Then, to assemble, place some salad leaves on a plate, put the roasted peppers and asparagus on top. Add the mozzarella, some fresh basil and drizzle with the balsamic reduction and olive oil.
