We are the change that we seek.” – Barack Obama Change is one of the very few inevitable parts of life. Some of us loathe it, others create and embrace it but, either way, we have to accept it.

The theme of change feels as though it is an integral part of this issue.

Chatting to our beautiful cover star, Kristen Buhagiar, it became clear that she has welcomed change in her life. From her success as a model to her career in pharmacy and her on-going studies in medicine, she is proud to have kept taking on challenge after challenge. You can read her interesting interview on page 11.

Also talking us through the changes in their lives are our interviewees on page 35. Each established in their respective fields, they have altered their paths in one way or another, whether by going back to school later in life, or shifting from one industry to another. Their inspiring stories will give you plenty of fodder if you, too, fancy trying something a little different.

Kristen Buhagiar is doubtlessly one of Malta’s most successful models. As one of design duo Charles&Ron’s muses, she has walked hundreds of catwalks for them and other top brands, both locally and overseas.

Kristen’s iconic look has made her memorable; her sharp green eyes are her trademark and she is constantly complimented on how stunning they are.

Combine this with her effortless elegance and stylish grace, and she exudes an other-worldly

aura that truly sets her apart.

But Kristen’s flair doesn’t stop at modelling; she is an accomplished pharmacist who is currently attending medical school, and who looks forward to graduating as a doctor within the next two years.

There’s no doubt about it: Kristen is a force to be reckoned with.

This, in her words, is her story.

“I will never forget my first fashion show; it was an amazing start in the industry. It was 1995 and I was 13, and I was asked to be the closing model on a big

show. Back then I had no idea that being the last model to walk the runway meant something special.

I had no idea how that walk was going to change my life. Within hours our home phone started to ring off the hook and I was quickly getting booked for other shows and fashion campaigns.

“It was a very thrilling time.

I was getting to know so many talented people, having fun, socialising and going home with a huge smile on my face. But my parents had mixed feelings

about my career as a fashion model and were worried my education would fall to the wayside. My whole family is involved in the medical industry, so they always hoped it would be my path too. I could sense the tension in the air when I told them I was off to a show or shoot.

“That said, they never stopped me and it worked out in the end because I’d never actually wanted to become a model full-time. I love academia, was very focused on my medical career and quickly started reading for my MSc in Pharmacy.

“Years later, I felt that I was at a crossroad in my life, so I took myself off on a trip to America on my own. It was an excuse to get away from it all for a while and it was there that I realised that, more than ever, I wanted to be a doctor.

Upon my return I enrolled on the medicine course and am now so

excited about, hopefully, graduating in a year-and-a-half and starting a whole new career as a doctor.

“And, yes, life is very busy…

But, if I was working on just one project or job, I know I would get very bored! I like having many things to deal with. When I was younger I felt so demotivated in

the summer months when I had nothing creative to do, so today I pack in as much as I can. I believe that leads to better results.

“But it isn’t just work and modelling that occupy my mind.

I am very passionate about women’s rights, women’s access to education around the world,

and equal opportunities for women.

I get inspired when I read of so many females getting into university and seeking education with prospects for a brilliant career. It’s motivating to see women looking radiant and confident, launching their businesses and juggling family with career and so much more.

“I believe style also feeds into that.

Looking and feeling good about yourself externally gives you a boost of confidence, so you feel good internally. A good external image makes you more approachable and generates opportunities and positivity.

“My own style is very important to me and it is dictated by my long days; I need to feel comfortable, neat, elegant and feminine. For everyday I opt for mid-heels and choose materials that are comfortable on my skin. I am past the phase of buying lots of clothes that never feel like enough. Now I go for few, good-quality items rather than stacking my wardrobe with poor-quality pieces that will only last one season, at best.

“There’s no doubt that my eyes have always been my most defining feature. I inherited them from both my grandmothers, while my mother is very beautiful with chiselled facial features; she could easily have been a supermodel when she was younger.

“My looks have confused people though! They often think I am foreign (although I am 100 per cent Maltese).

I get stopped by people who speak to me in Russian. When they do, I just smile and say I don’t speak Russian but I can speak Maltese, English, Italian, French, some Spanish and am practicing my Arabic too!

“My eyes get attention too. They’ve been called everything from ‘haunting’ to ‘scary’, and random people have even come up close to look at them. A few years ago, at an art exhibition, a man I didn’t know looked into my eyes and started making up poetry on the spot! It was embarrassing, but also very amusing.

“But despite the (sometimes

My favourite designers are Charles&Ron because, aside from the fact that I love their style, I think they know me well and they know what suits me, so I always like what they ask me to model.

I have a great relationship with them and I believe they do a lot for Malta’s fashion industry.

I don’t really have a favourite shopping destination. When I travel, I don’t travel to shop; in fact, I get bored after a couple of hours of shopping. Having said that, I am always on the hunt for interesting pieces by local designers.

I would describe my character as very easy-going, and while I’m very driven, I think that I’m also quite a happy person. I enjoy being sociable and I enjoy talking about many different things. All in all, I’d say that I’m very comfortable with myself.

“I am now so excited about, hopefully, graduating in a year-and-a-half and starting a whole new career as a doctor.”

“Now modelling is still a part of my life, but there is so much going on. Medicine will

never be an easy path; it is a career fraught with late nights, difficult shifts and heartbreak.

But it has challenged me to the core and made me realise my mental capabilities. I am excited by the innovative ideas that I have, and the healthcare and

Even though I’ve only been once, my favourite travel destination is New York. I absolutely fell in love with it. Sicily is also cool, particularly because there’s always something new to discover and it’s so close by. Nevertheless, I like going to far away places I’ve never been to, too.

The bond between a dog and its human is often an inspirational tale of friendship and unconditional love. Here, STYLE ON SUNDAY asks four couples about their relationship with their four-legged family members.

“Harry became part of the family straight away – even the cat loves him!”

Born in July 2013, HARRY was still a puppy when STEVE & GRETA CASALETTO took him home, but thanks to his gentle nature, he became an instant hit with the parents, the kids and even the cat.

Steve: “Before we got Harry we researched what the best dog for kids and cats would be. We also had to take into consideration the fact that Greta’s allergic to some dogs. Our first choices were either a shih-tsu or a Yorkie – but we couldn’t agree on which one to get. We also tried various animal sanctuaries – which is where we got all our cats – but they only had big ones. Then, Greta’s friend got a Cavalier King Charles Spaniel and told us his brother still hadn’t found a home; so we decided to give him one.

“Needless to say, he became part of the family straight away. Our children, Bianca and Seth, love him and he gets along with Toby, our cat, too.

We think that, because Harry was a puppy when we brought him home, Toby could still assert his strong character, so it’s worked out well!”

Greta: “Whenever we can, we always take Harry out with us, even when we taxi the kids around. Cats are obviously more independent and dogs a bit more demanding, but it’s okay. We trained him from day one, and he’s very good with boundaries; that’s why we don’t understand why some cafés or people don’t let us take him into the establishment or their homes.

We want to have him with us all the time!”

Found hungry and alone, FRITZ was taken in by JOSEPH FORMOSA RANDON & ROGER CAMILLERI, a couple whose love and attention gave him the chance of a happy life.

“Jeremy took us to Gozo for a ‘surprise’ and part of it turned out to be Pippa!”

Although JEREMY & CATHERINE BORG GRECH couldn’t agree on whether to get a dog or not, all that changed the minute they met PIPPA, a precious, miniature long-haired dachshund.

Catherine: “Jeremy announced that he was taking me to Gozo for a surprise one day, so off we went. I had no idea that part of the surprise would turn out to be Pippa! We went to see her at the breeder’s, instantly fell in love with her and decided to adopt her. She’s a very quiet dog and she rarely barks, which worries us sometimes, because we never know if she may be hungry or if she needs anything.

“Since we got her our house is full of fluff, but apart from that she’s just been a wonderful addition to our lives. She’s very adaptable and so are we, so it’s great. In fact, we’re now looking at getting her a companion.

He’s going to be named Gigi, which would have been Pippa’s name had she not been a girl.”

Jeremy: “Pippa’s also become the face for Catherine’s jewellery shop, ZsaZsa, and the collar she’s wearing today is actually a bracelet she’s remodelled for her. She’s quite the celebrity at the shop, and often goes to work with Cath. She also comes to the office with me from time to time.

“Our only problem is that Catherine’s mum wants to keep her every time she dog-sits – she’s really won everyone over and she’s a super pampered pooch.”

Roger: “The story of how we got Fritz is quite heartbreaking.

Joseph was in the middle of nowhere, somewhere between Mgarr and Bidnija, working with a Swedish film crew, when he saw what looked like a little deer behind a bush. It turned out to be a puppy. He gave him some water – which is all he had at the time – and had to continue on as he was on location scouting with a film crew. As soon as he was done, he went back and brought him home.

“When he first arrived, Fritz was infested with ticks and was really weak. We called Carina Camilleri (a close friend and animal lover) for advice and, over the next few months, he needed blood transfusions and many other

procedures, but he never seemed to get better. Then, one day, we spoke to our vet and decided that the most humane thing to do was to put him down. But it’s like he sensed what was going to happen and, suddenly, he started getting better! Today he’s a powerhouse with a strong character to match.”

Joseph: “Having said that, he’s still terrified of the wind and the rain.

He’s also afraid of fireworks; and he often goes through the garden to my mother’s house, as you can’t hear them as much from there.

“We also had another dog at the time Fritz came into our lives. Milly passed away this time last year and we miss her dearly. To us, our dogs are like children; we certainly love them as much, that’s for sure.”

JONATHAN & LARA SHAW have trained their miniature schnauzer to a T, but it’s JACK BLACK’s cool and calm composure that wins them over every time.

Lara: “We had been thinking about getting a dog for a while and, when a miniature schnauzer was available, we thought that, maybe, this one’s the one!

“Jonathan actually posed the question about whether we could get a dog while my kids were listening, so there was no way I could say no. We decided on Jack Black because of his size and the breed’s characteristics, but we did look for a dog in various sanctuaries, as that was where we had got one of our cats from.

“Jack Black is very well trained, and

we never had any problems with him whatsoever. We chose to never shout at him, and we researched a lot and found various ways to train him. We took a tough-love approach for the first three months – like going into the house and ignoring him for the first five minutes to stop him from getting over excited and peeing everywhere – but it was temporary and it worked.”

Jonathan: “Lara didn’t believe in this strategy at first, and once told her friends that he had been ‘born that way’. Training a puppy requires time and patience, but more important love and affection. Besides being a great and well-

behaved dog, he also tends to mimic police or ambulance sirens when he hears them. It can get very embarrassing when going out for a walk!

“Having a pet is a commitment but we love him unconditionally and he’s definitely a part of our family. We both get upset when we hear of other dogs, or animals, being mistreated. It’s very important that all pets are given the chance to live a good and healthy life and if someone can’t provide that, then they should not get a pet at all.” £

Changing Lanes Change, in all aspects of life, can be daunting; especially in those aspects we’ve invested so much time and effort in, such as our careers. But it can also be a thrill, and these three champions of change are testimony that taking risks can pay off.

extensive research on the publishing business from both managerial and legal angles.”

Ilja says he was well aware an element of risk was involved in changing career, but that risks are not meant to stop you from fulfilling dreams, and the unwavering support and encouragement that he received – particularly from his wife – only proved to encourage him further. “I work on my writing career without another backup career plan. I find such overprotective safety nets to be counterproductive.”

After signing a two-book deal in 2012, Ilja published his first novel in June 2014. “My dream has literally come true,” he says, “and it still feels weird and exhilarating at the same time. The second book will be released this autumn, and I am currently finishing the preparatory work for books three and four.”

Malta-based Ilja Albrecht, 47, enjoyed a long and extensive career in the marketing industry back in his native Germany, before changing course to pursue a lifelong dream of novel writing. His big break came when a literary agent in Hamburg offered to represent him, and within a few months, they negotiated a contract with the German subsidiary of Random House.

Ilja Albrecht’s career in marketing spans a whopping 18 years – 25 years if you account for the work he did during his studies.

Among his endeavours in this field, he was part of an international new media project group within EU-framework consortiums in Germany, and travelled all over Europe for work, which is how he landed in Malta.

However, the tides turned for Ilja in 2011 – “I saw the work of an entire year go down the drain due to a change of direction in executive management. That was when I decided to

stop working in classic employment, to accept short-term projects and to dedicate at least half of my professional time to my personal project, which was writing novels.”

And so Ilja’s journey as a novel writer began. He says he always enjoyed reading, especially crime stories, and did lots of creative writing in his job, which is why the idea of writing his very own novel seemed like a pretty rational one. “It started as a hobby some 10 years ago; working on ideas, stories, settings and characters. Six years later, once all the prep work was done, I launched it as a real and personal start-up project – milestones and deadlines included.

“As a hobby-musician I know a lot about artistic creativity and production, and, just like playing my style of music, I wanted to write that crime novel I always wanted to read,” he explains. “To get there, however, one has to literally go back to school. I trained myself on creative writing techniques and did

For many years, Adam Demanuele, 34, worked his way to the top of the successful restaurant Dolce Vita, where he relished the position of chef patron for four years. Now he is trying his hand at something entirely different – he’s opened his very own fish and gourmet shop.

Adam recalls hanging around his mother in the kitchen from a very young age, and so it seemed only natural for him to attend a Food Preparation and Production course at ITS after finishing school. “I started working at Dolce Vita at the age of 15, and I had made it my goal to own it one day.

That day came when I was 26 years old,” says Adam, who admits it felt as good as he’d hoped it would. “Most of the dishes I served were my own signature dishes, and I enjoyed the blind trust of my clients.”

His experience in catering spans over 16 years, with the last four as chef patron at Dolce Vita, where he had the pleasure of serving a number of local and foreign VIP clients, including actress Rachel Weisz and football manager Sir Alex Ferguson.

After running into problems with his Sicilian partner at Dolce Vita, however, Adam felt the time was ripe to start afresh with a restaurant of his own, until he was offered the

opportunity to open a fish shop at a supermarket.

“At first, I wasn’t the least bit enticed by the idea, but after months of thinking about it, I started to realise that it would be nice to have a day job to spend more time with my family, and the thought of blending my culinary skills with that of a fishmonger was making sense – I wanted to spread my knowledge and serve clients raw food along with the adequate cooking instructions.”

Adam says he thoroughly enjoyed the experience, which paved the way for the transition of opening his own shop, Adam’s Fish Shop, independently. “I would be lying if I said I never miss the adrenaline rush of serving a full restaurant, but I am also thrilled by clients’ appreciation of my work.”

He explains that the new shop in Mosta is much more than just a fish shop: “I don’t consider myself to be a fishmonger. Every day I put on my chef attire and, when customers ask me for a type of fish, the first question I ask them is how they intend to cook it, often changing their plans in the process. Apart from selling fish, I also offer customers a wide range of freshly prepared gourmet food.”

Adam has also realised his long-standing ambition of producing easy meals for people to cook at home with his range of canned paella, the concept that enables people to make a nutritious and genuine meal within 15 minutes. Adam says he is motivated by his clients’ enthusiasm to try his most recently prepared food or innovative flavouring of his own cured or smoked salmon. “When you put your heart and soul into your work, the reward is not the monetary aspect, but the contentment of returning customers. Sport had long played a secondary role in the life of Marie Therese Cuschieri, and it finally took centre stage when she decided to pursue a PhD in Sport Management in her 50s. Of course the experience was far from easy but, she believes, it was certainly worthwhile.

Marie Therese, 60, began her professional life in her family’s business at the age of 23. She later shifted into a role at her then-husband’s family business too, before changing path again to raise their two sons, as was customary at the time.

“As the boys got older, I went back to work in a travel agency part-time and, although I was involved in sports administration

over the years, I had been away from the workplace for 14 years. It was a shock to return – computers had become the norm and I had no idea what to do, but I suppose if you are willing to learn you eventually do.”

In 1997, Marie Therese started a Diploma in Social Studies, Women and Development at the University of Malta.

“I tried to work and study at the same time, whilst managing a social basketball team and the National Women’s Basketball Team, but it was impossible. So, I decided to stop working and to study – and loved it.”

In 1999, she graduated with a dissertation on the History of Female Basketball in Malta, and, two years later, was elected to the Executive Board of the Maltese Olympic Committee (MOC), for which she volunteered for eight years, and was honoured to be Chef de Mission of the Maltese contingent at the 2004 Athens Olympic Games.

When she returned to work in Malta, her studying experience was far from over, and, in 2006, Marie Therese completed an Executive Masters in Sport Organisation Management, with a dissertation on Women in Leadership in Sport. However, the breakdown of her marriage in 2007 forced her to reconsider the course for the rest of her life. “I couldn’t just give up. I had always wanted to go to University, and was given the opportunity to read for a PhD in Sports Management on a topic I liked at Loughborough University. In October 2008, I packed my bags and moved to the UK. I was 54 years old, and it wasn’t easy,” she explains. “It was a lonely experience – I missed my sons and it took me five years to complete, but I really enjoyed the research and analysis of the topics at hand, so I managed.”

Following her doctorate graduation in July 2014, Marie Therese returned here with the hope of contributing to the development of sport in Malta. “Disappointingly, it was not to be. A chance social event, however, led me to my current job as an administrator for the Chamber of Advocates. It is very different work for me, but I realised I could adapt my skills and experience to administer this organisation which, similar to sports organisations in Malta, is also dependent on volunteers and membership fees.”

Marie Therese says she would like her journey to inspire others, especially women, to pursue their goals. “We are not always able to follow the path we would like to, and, although life gives us disappointments, it also gives us opportunities which we must be careful not to miss. Knowledge is a wonderful thing, and no matter how old we are, we can still treat our brains to new adventures and discoveries.” £

As the Radisson Blu Resort, St Julian’s, gets ready to reopen its doors on 30 March, IGGY FENECH chats to its general manager Adrian Attard to discover why this renovation project actually marks another milestone in Malta’s forward-thinking approach to attracting tourists to our island.

This is an exciting time for the team at the Radisson Blu Resort, St Julian’s. With just days to go until their refurbishment works are unveiled on 30 March, the finishing touches are being completed – and guests will begin streaming through the doors of this well-loved resort in a couple of weeks’ time.

At the helm of the project is the hotel’s charismatic general manager Adrian Attard. Overseeing the works with total dedication, it becomes clear that this is no ordinary job for Adrian.

“It’s been a true labour of love,” he smiles. “It’s long been my dream to see this property modernised so that we can continue to impress our guests.”

Adrian has actually dreamt of being a hotel general manager since childhood.

While growing up, he loved the time he spent in hotels with his family, and was drawn to the industry because he feels it is all about presenting a welcoming and friendly environment for people to enjoy.

“It’s all about creating special memories,” he says. “And what can be better than that?”

So, from the age of 17, Adrian worked his way up the hotel ladder – starting as a pool boy and eventually securing the post

of group director of revenue before, finally, being made the general manager of the Radisson Blu Resort, St Julian’s, three years ago. Then, last year, talks of a refurbishment were placed on the table and Adrian has helped to spearhead that ever since.

Of course, there was previously a full renovation planned for this hotel. But, with the announcement of the well-known Island Hotels Group/International Hotel Investments merger, came the news that the Radisson Blu’s major redevelopment would be put on-hold and that it would be given a major facelift instead.

“Our original plans came to a halt in September last year,” says Adrian. “On my 40th birthday to be exact! We immediately changed route and took on this new challenge instead. Although it’s not the complete transformation we were working towards, I think our guests and clients will be impressed by how much work has gone into renovating the hotel for this reopening.”

Adrian refers to the hotel as the ‘old lady of the strip’. “Although not the oldest hotel on the golden mile (the stretch of land around St George’s Bay, which features a number of fivestar hotels), she had aged to a certain extent.

So this refurbishment came at the right time.”

A lot of work has gone into refreshing the hotel, stripping back its classic style and making it more contemporary. The team has focused on the key guest areas and injected that ‘wow factor’ to make them more enticing.

“We started with the façade,” continues Adrian. “We’ve strayed from our traditional palette and chosen crisp white and grey hues to really make the front of the hotel stand out against the gorgeous blue sea behind it.”

Indoors the hotel’s public areas have also been given a new look. “It’s much brighter, much lighter and less cluttered.

Many of the facilities have also been given an overhaul, including the food and drink outlets.

The popular Kontiki restaurant feels modernised and new concepts have been introduced, such as the fresh and healthy Super Breakfast (which is being rolledout worldwide by Radisson Blu at the moment). “We’ve looked at everything from the food and décor, to the music, the table layout and the general ambience,” continues Adrian. “We’ve also really focused on our food presentation and created a deli-style showcase that we feel will be a little different. In general, we don’t like to be ‘cookie cutter’ around here; we try to be original in everything that we do.

“Aside from breakfast and dinner every day, Kontiki will be reopening for our popular Sunday lunch offering, and we hope that our guests will love it more than ever.”

The hotel’s lobby-side Bistro is also back with a bang. The team has kept the focus firmly on the food and crafted a concept that allows patrons to enjoy everything from light bites to a full-on meal. “Sometimes our diners just fancy a number of starters instead of something more hefty, so we have recreated the menu to enable them to do exactly that. Naturally, we have retained and improved on our main dishes too, including a delicious double smoky beef burger and divine slowcooked leg of pork stew,” Adrian says.

Next door, the picturesque Bridge Bar has been given a new lease of life – with the focus firmly placed on exciting drink combinations created by the hotel’s expert team of barmen, and with a scrumptious menu of snacks to match. The adjacent terrace, with its unobstructed views of the sea, is looking fresh and inviting, making it the ideal spot to enjoy the gorgeous view and spring weather.

But it isn’t just the hotel’s main areas that have been overhauled – the rooms have also been refreshed. “They have all been painted and redecorated, and we have new bathrooms across the entire property.

The suites have also been done up, and there’s even a jacuzzi in the Club suites

collection, overlooking the stunning view.

“Plus, we have extended our Wi-Fi network, which we know guests will appreciate. While it has always been a free facility, now it’s stronger than ever (and, yes, still complimentary!).”

Now, with the opening just days away, Adrian and the whole team are excited to unveil what the hotel has to offer.

“It’s been a challenging few months but what has impressed me most has been the dedication that everyone on the team has put into the project. Our staff have literally stopped at nothing to complete this refurbishment – our chefs have been helping with the construction, while members of the housekeeping and restaurant team have been helping with painting or other jobs.

This has been the best team-building exercise ever! I believe this shows how much we all love this property, and how eager we are to show it off to our guests once again.”

Asked about the hospitality sector at large, Adrian believes that Malta has come to a crossroads. “We’re no longer just a sun-and-sea island with little else to offer,” he says. “Malta is an incredible destination, but we still have a long way to go. I believe that our future is focused on the much talked about shift in our quality service levels; whether it’s a one-star hotel, a taxi ride, an excursion or a six-star resort, the focus has to be about delivering an exceptional experience to our visitors.

“I think we have an opportunity here at the Radisson Blu Resort, St Julian’s. This merger between Corinthia and Island Hotels gives us the opportunity to transform this peninsula and create magical experiences for our guests through the synergies that the two companies bring. After all, we are in the business of making people happy. We want them to feel special, pampered and invigorated, and to leave Malta saying that they had a fantastic time. We are all in the middle of a very exciting journey and I believe the next step starts with the reopening of this hotel.

The Conversion Factor Turning a house into a home is a lengthy transition that requires much more than hard work, dedication and finances. Here, STYLE ON SUNDAY meets two homeowners whose vision gave an old space a new lease of life.

South African businesswoman and former model SONETTE ABOUD takes us on a show-round of her mesmerisingly eclectic and cosmopolitan home in the heart of Hal Ghaxaq.

I moved to Malta two-and-a-half years ago, right after my husband and I came here on holiday. I still remember how, on the second day of our trip, I decided that I had had enough of English weather and started looking for somewhere nice on the island.

I saw about 15 different properties and, just as I was going to sign for a place, our estate agent said he had a house of character to show us. I didn’t want to see it as my heart was already set on the other place, but I decided to go anyway.

I couldn’t believe my eyes when I got here; it was the dream house I had always wanted!

Even so, it was in a terrible state, and although the conversion had already been done, a lot of things needed to be changed and fixed.

Since then, I’ve discovered quite a bit about the house’s history. Apparently, during World War II, people used to send letters via messenger pigeons from the rooms on the roof. Also, a man who once came to fill up the well told me that he had lived in the house some 64 years before.

The lounge, which, in the past, was the mill room, is my favourite spot, and it’s where my dog Tiffany and I spend most of our time. The upper rooms are part of the guesthouse I run called Casa Sonette.

As you can see, it has many different items brought together from many different countries, styles and periods.

Because the plaster in this and some of the other rooms was falling off, my sister – who is an interior decorator – and I, painted veins on the wall just where the cracks where. We also textured the paint on the walls to hide other defects and give it life. It works beautifully.

I also bought Blackbeard’s treasure chest (yes, the real one!) at auction from Sotheby’s. The treasure and ‘pieces of eight’ may be gone, but it’s got a new role – storing our collection of champagne!

All the stuff I have in this house was in storage for 11 years having been collected over years and years of travelling. I’ve been to 95 countries and have always picked things up along the way. But this is the only country I want to live in now. It’s so Semitic in its elements and it’s gorgeous. I’ve been to most of the places in the Middle East and this converted house is ideal for those visions.

I like ethnic stuff and every single thing here has got a story: where I got it from, why I bought it, who I was with, who owned it before, and so on.

I like giving old objects a new lease of life. For example, I have two beautiful linen cupboards that I bought at auction from a prison in Jakarta; they now house our silverware and other objects.

Actor and Helen ‘O Grady principal Alan Montanaro bought his Siggiewi home in 1994 – and has converted it twice since then. Today it is a treasure trove of art and items collected on his travels. Alan lives with his wife Gaby and daughter Rebecca.

When Gaby and I stumbled across this place it was a complete shambles; I remember not even daring to bring my parents to see it for fear of what they might think!

But I had clarity when I saw this dump and we knew what we wanted to achieve.

Lots of work and plenty of love have

It wasn’t just the house that got converted this time around; some of our furniture has been overhauled too. For instance, this burgundy centrepiece started life as a pine chest. We were about to chuck it out when, instead, we decided to rework it. We’re glad we did as it’s now become a conversation piece.

We’ve incorporated an Asian influence too. Through my work as president of the charity DO Cambodia, I have developed a real affinity for the region. Gaby and I will be going to Myanmar in Burma next – which ties in nicely as these black temple tables actually came from there.

The first step of the conversion process revolved around getting rid of all the stuff that had somehow settled here – including a loo in what is now the living room. Back in 1994, conversions of this kind were still relatively new and we went with the trends that existed.

Our art collection is a definite focus of this house. I love art because there’s only ever one of that piece in the entire world, and that makes it special. I’d like the collection to keep growing and plan to acquire at least one piece of art every year.

The only problem is I’ve run out of walls!

One of my favourites would have to be this painting of (fellow actor) Edward Mercieca and I by Debbie Caruana Dingli. In it, Ed and I are immortalised as Captain Hook and Smee, from the panto Peter Pan in the 90s. Along with Micko’s painting of Picasso, which sits next to it; they always get plenty of attention when we entertain.

Every piece on this wall has a story to tell. I particularly like the large silver mask, which was a present from the cast of Peter Panto.

This spot, in the master bedroom, is dominated by this painting by Oscarwinning artist Peter Howitt. You see, while Rebecca’s room has a lovely view of the Siggiewi church, ours doesn’t – and he thought that was a shame. So he painted us one! It is positioned opposite our bed so it’s the first thing we see every morning.

Our kitchen was redone in the most recent conversion. After having one of those stone kitchens for years, Gaby and I wanted something completely different and modern, which transformed it completely. We opted for a neutral palette, DuPont Corian from Shaker and reflective surfaces so as to maximise the light. It definitely makes the space look bigger. £

Soft Shell Crab Ingredients: 2 soft shell crabs; 50g flour; 50g corn flour; pinch of salt; white pepper; cayenne pepper; 1 egg white, whisked.

Method: Mix the flour, corn flour, salt and white and cayenne peppers together. Dip the crabs in the whisked egg white, then in the flour mix, and deep fry in hot oil. Serve with the amazu ponzu dressing (made earlier to accompany the oysters).

Szechuan PepperCrusted Beef Tataki Ingredients: 200g beef tenderloin; 2 tbsp vegetable oil; black peppercorns; Szechuan peppercorns; 1 tsp sesame oil; rock salt.

Method: Sear the beef tenderloin in a hot pan and roll in a mixture of the peppercorns and rock salt, then wrap in cling film and leave to rest at room temperature. Carve into thin slices and serve with asparagus spears.

Drizzle with sesame oil.

Oysters with Amazu Ponzu Dressing Ingredients: 2 oysters, shucked; 1 cucumber, peeled, cut into strips; 2 tbsp light soy sauce; 4 tbsp rice wine vinegar; 1 tbsp lemon juice; ½cm square of konbu; ½ tsp grated ginger.

Method: Mix the soy, rice wine vinegar, lemon juice, konbu and ginger together; leave overnight and strain. Lightly poach the oysters in their own juices, place the cucumber in the shell, top with the oyster and coat with the dressing. Serve additional dressing on the side.

Chicken Satay with Peanut Sauce Ingredients: 1 chicken breast, cut into strips; ½ tsp coriander; 1 shallot, finely diced; ½ garlic clove, crushed; ¼ tsp chilli powder; ¼ tsp turmeric; ½ tsp oyster sauce; 1 tsp light soy sauce; 1 tbsp cooking oil.

Method: Mix all the ingredients together and marinate the chicken breast overnight. Grill over a high flame till slightly charred.

Serve with satay sauce.

Lobster Ma Po Ingredients: 1 lobster (approx. 800g); 20g red chilli paste; 90ml chicken stock; 1 tbsp bean paste; ½ tsp light soy sauce; 1 garlic clove, chopped; 1 tsp fresh ginger, grated; ½ tsp sesame oil; pinch of ground Szechuan pepper; 50g tofu, cut into cubes; 1 tbsp vegetable oil; 2 spring onions, sliced; shimeji mushrooms, for decoration.

Method: Lightly fry the garlic and ginger in the vegetable oil and add the red chilli paste, bean paste, soy sauce, sesame oil, Szechuan pepper and stock. Cook until thickened. In a pot of boiling water, cook the lobster for five minutes and refresh in iced water. Drain and cut the lobster in half; crack the claw. Heat a pan and stir fry the lobster with the sauce. When ready to serve, add the spring onions and tofu.

Serve with stir fried noodles and sautéed shimeji mushrooms.

CUISINE 79 STYLE

Ube Ube Ube Ingredients: 1kg sweet purple yam, boiled and grated; 380g evaporated milk; 320g condensed milk; 100g butter; ½ tsp vanilla.

Method: Melt the butter in a pan and add the vanilla, and the evaporated and condensed milks, stir over a low heat so the liquid can start evaporating, add the grated sweet yam and continue to cook for half an hour.

Transfer to a mould and refrigerate overnight. Serve with berries, macaroons and ice cream.
