FILSON WINTER FOUL JACKET

Vintage military tents needed to be tough as they were often the only shelter the soldiers had. Filson's Shelter Cloth is inspired by the fabric used to make them and features in this Foul Weather Jacket. The tightly woven outer fabric is fully saturated with liquefied wax from British Millerain for water resistance and is lined with dry finish Cover Cloth lining as an added barrier. These savory turkey and lamb meatballs combine the flavors of two delicious meats to create a mouthwatering dish that's perfect for a special meal or any day of the week. These meatballs are juicy, flavorful, and incredibly versatile. Serve them with pasta, in sandwiches, or as appetizers at your next gathering.

INGREDIENTS:

• ½ pound ground turkey

• ½ pound ground lamb

• ½ cup breadcrumbs (panko or regular)

• ¼ cup grated Parmesan cheese (add cubed mozzarella if you’re feeling cheesy)

• ¼ cup finely chopped fresh parsley

• ¼ cup finely chopped onion

• 2 cloves garlic, minced

• 1 egg

• 1 teaspoon dried oregano

• ½ teaspoon salt

• ¼ teaspoon black pepper

• ¼ teaspoon red pepper flakes (optional for a bit of heat)

• Olive oil for frying

For the Sauce (optional):

• 1 can (14 ounces) crushed tomatoes

• 2 cloves garlic, minced

• 1/2 teaspoon dried basil

• Salt and pepper to taste

INSTRUCTIONS:

1 | Prepare the Meatball Mixture: In a large mixing bowl, combine the ground turkey, ground lamb, breadcrumbs, grated Parmesan cheese, chopped parsley, chopped onion, minced garlic, egg, dried oregano, salt, black pepper, and red pepper flakes (if using). Mix everything together gently but thoroughly. Be careful not to overmix, as it can make the meatballs tough. 2 | Shape the Meatballs: Wet your hands with a little water to prevent sticking. Take small portions of the mixture and roll it into meatballs, roughly 1 to 1.5 inches in diameter. Place the meatballs on a plate or tray as you go.

3 | Cook the Meatballs: Heat a large skillet over medium-high heat and add enough olive oil to coat the bottom. Once the oil is hot, add the meatballs in batches, being careful not to overcrowd the pan. Cook them for about 4-5 minutes per side or until they are browned and cooked through. The internal temperature should reach 165°F (74°C) for our Canadian readers. 4 | Make the Sauce (Optional): In a separate saucepan, heat a little olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant. Pour in the crushed tomatoes and add dried basil, salt, and pepper to taste. Simmer for about 10 minutes, stirring occasionally. 5 | Serve: Once the meatballs are cooked, transfer them to a serving platter. You can either serve them plain or pour the tomato sauce over them for extra flavor. Garnish with additional chopped parsley or grated Parmesan cheese if desired.
