Avacado Salsa
16 oz pkg frozen corn, thawed

1 can sliced black olives
1 red pepper, chopped
1 medium onion, chopped
5 cloves garlic, minced
1/3 cup olive oil
1/4 cup lemon juice
3 Tbsps. cider vinegar
1 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. black pepper
4 avocados
Combine all ingredients except avocados in a large bowl; cover and chill overnight. Peel and dice 4 avocados, stir into chilled mixture and serve with any style tortilla chips.
Fruit Salsa
2 cups (tart) chopped apples
2 cups chopped kiwi (approximately 6 kiwi)
1 package frozen strawberries, thawed and chopped
Juice of one orange plus rind
2 Tbsps. brown sugar
2 Tbsps. apply jelly

3 packages of largest sized tortillas
Cinnamon & sugar
Preheat oven to 400 degrees. Brush tortillas with water and sprinkle with cinnamon and sugar. Cut tortillas with pizza cutter into chip size and bake 7-10 minutes until crisp. Combine salsa ingredients and serve with cinnamon chips.
Hot Taco Dip
1 l b. hamburger
1 onion, diced
1 - 8 oz. can tomato sauce
1 - 8 oz. jar hot taco sauce
1 - 8 oz. package cream cheese
1 package taco seasoning
Tortilla chips
In a large skillet combine hamburger and onion; fry until meat is no longer pink; drain. Add tomato and taco sauce to hamburger; cook until hot. Add cream cheese and melt; add taco seasoning into mixture. Transfer dip into crock pot to keep warm. Serve with tortilla chips of your choice.
Crab Dip
1 cup Miracle Whip
1 - 8 oz. package cream cheese
1 cup diced celery
1/2 cup shredded cheese
1/2 cup finely diced onion
1/2 of 1.5 lb. pkg. frozen imitation crab thawed & chopped
Salt & pepper
Mix Miracle Whip and cream cheese until well blended. Add celery, cheese, onion and chopped crab meat to sauce mixture. Salt and pepper to taste. Chill for 1 hour. Serve with crackers or vegetables.
Raspberry-Lemon Fruit Dip
1/2 cup raspberry cream cheese spread – softened
1/2 cup marshmallow cream
1 - 6 oz container lemon yogurt
Assorted fresh fruit pieces or berries
Mix cream cheese and marshmallow cream in a medium bowl with wire whisk until smooth. Stir in yogurt. Serve with fruit

Development Finance Corporation awards grants in Consolidated’s service area !



Consolidated Telcom is a member of the Rural Development Finance Corporation (RDFC). As a result, communities in our service area were eligible to apply for a grant of up to $2,000 for community-based projects. RDFC is making these funds available in order that more people become aware of their larger loan program that funds community-based projects and nonprofit and with low interest loans.
RDFC has recently granted $1000 to the Hettinger School District. The grant funds will be put towards the Hettinger Community indoor swimming pool.

The Rural Development Finance Corporation (RDFC) is a nonprofit corporation that encourages economic diversification and community vitality through the generation of funding that supports sustainable asset building. Funding for RDFC programs comes from fee income generated by Dakotas America LLC, a community development entity providing New Market Tax Credits in economically distressed census tracks across the United States. The North Dakota Association of Rural Electric Cooperatives provides support to RDFC.
