Art Dubai, one of the region’s biggest art fairs, returns to Madinat Jumeirah for its 14th edition from March 25 to 28

CANVAS_ART DUBAI.indd 27

The past decade has seen Art Dubai cement its position as one of the most sought-after and prestigious art fairs in the world. A local initiative with global reach, it has served as a platform for upcoming and established artists from the Middle East, North Africa, Southeast Asia, Latin America and Australasia. Close to home, it has helped expand cultural horizons and provide exposure to up-and-coming talent, ensuring a fresh flow of new ideas in the field. And while rising up the ranks on the international scene, the event has been instrumental in broadening the conversation about art among diverse geographies that are often not exposed to the global creative landscape. Art Dubai’s first incarnation was the DIFC Gulf Art Fair in 2007 before being rebranded the following year to take on the now renowned title. From the outset, the fair was held under the patronage of HH Sheikh Mohammed bin Rashid Al Maktoum, Vice-President and Prime Minister of UAE and Ruler of Dubai, who was keen to promote arts and culture in the city.

Explore the galleries The upcoming edition of Art Dubai will be presented across four gallery sections: CONTEMPORARY: The section showcases galleries from around the world, ranging from emerging to established centres, presenting solo or group shows and offering new global perspectives to help cultivate a culture of discovery. MODERN: Influential works by modern masters of the 20th century are showcased alongside the Contemporary section, with an aim to contextualise the historical narrative being played out across the booths. BAWWABA: Meaning gateway in Arabic, Bawwaba serves as a portal to discover works by solo artists created in the past year or specifically for the fair, offering visitors a curated reading of current artistic developments. RESIDENTS: The section showcases solo presentations created by artists who take part in a six-week residency in the UAE, encouraging them to immerse themselves in the local art scene.

Now in its 14th year, Art Dubai returns for yet another edition with an incredible line-up highlighting works of art from over 90 galleries from more than 38 countries. Taking place from March 25 to 28, visitors will have the chance to discover creations by 500 international artists. Artistic director, Pablo del Val, says: “As the UAE’s leading international art fair, Art Dubai offers a unique selection of both commercial and non-commercial cross-disciplinary platforms through its commitment to creating a culture of discovery, education and thought leadership. It is a unique platform in that it aims to provide a distinct reading on what is happening in the art world on a global scale.” The fair is structured around four gallery sections – Contemporary, Modern, Bawwaba and Residents. Interconnected gallery halls at the sprawling venue in Madinat Jumeirah shine a light on everything from artist and curator residencies and educational initiatives to commissioned projects and multimedia works. While creations are presented across an array of themes, it all comes together as a nod to the region’s rich cultural heritage and contemporary art practices. Val says: “Art Dubai 2020 offers something unique for everyone, whether you’re interested in experiencing art, culture, music or dialogue. It’s a call to discover art in all its forms, curated by creatives who bring fresh and divergent approaches and perspectives. “Visitors can engage in meaningful dialogue at the Residents section, which unveils works by six dynamic artists from Ethiopia, Ghana, Kenya, Nigeria and Zimbabwe, created during their residencies here in Dubai.

Art Dubai aims to provide a distinct reading on what is happening in the art world “The Commissions programme, woven throughout the venue, features site-specific works by four artists, while the Performances programme explores healing as an art form. This year’s fair also introduces Gulf Now, a selection of artist-run platforms from around the Arabian Gulf, curated by the UAE-based Munira Al Sayegh. “The Sheikha Manal Little Artists programme, led by the creative duo at Studio Sain, invites children to collectively imagine and build a utopian society. Then, the 14th edition of Global Art Forum focuses on the theme Do You Story?, which explores storytelling as a natural human experience seen in every culture and also discusses how different narratives shape our reality.” In its role as a talent incubator, Art Dubai has been a launchpad and development platform for several artists, curators and art professionals. Yet its significance extends beyond the four-day fair. Thirty minutes before his performance, Sir Simon Keenlyside is on set. While warming up his vocal cords, the orchestra around him is already in place, fine-tuning their instruments and checking awkward musical corners with the conductor. “The last-minute preparations are all rather boring, I’m afraid,” says the award-winning British baritone. But it’s those final moments spent calming the nerves in the midst of the chaos behind the scenes and “ensuring that jackets, ties and shoes are not forgotten,” that set the scene for his performance. On March 31, Sir Simon will make his UAE debut in the capital as he opens the 16th season of the Abu Dhabi Festival. “I will be singing chunks of some of my favourite operas. I have chosen pieces that are little musical dramas in themselves and represent a complete character in the play. And I’ll have one of the world’s greatest ensembles – The Cleveland Orchestra – accompanying me on opening night.” Noted for their musical excellence, The Cleveland Orchestra is hailed internationally as one of the world’s finest musical entities. The 102-year-old ensemble regularly plays at their home in Severance Hall, Cleveland, Ohio, and occasionally embarks on world tours, taking their creative genius to fans around the globe.

Franz Welser-Möst has served as the orchestra’s music director since 2002. Under his leadership, the ensemble has gone from strength to strength, with praise never ceasing to pour in for their artistic presentations. Members of The Cleveland Orchestra are no strangers to the global stage. Before arriving in the capital this month, the team will fulfil a packed agenda on the European leg of their world tour, which sees them performing in Vienna, Paris and Linz. “Abu Dhabi is new ground for us,” says Welser-Möst. “It’s wonderful that an institution like the Abu Dhabi Festival wants to feature us as part of their programming. The festival has growing influence and importance within the classical music scene and we are proud to bring our performances of symphonic repertoire and collaborations of opera and ballet to the show.” After their performance on opening night, The Cleveland Orchestra will return to the stage on April 1, featuring a special appearance by renowned cellist, Yo-Yo Ma. Previous festival headliner, Ma is one of the world’s most celebrated musicians with more than 90 albums and 18 Grammy Awards. Also on the agenda this season is the American Ballet Theatre’s rendition of Romeo and Juliet, with music by The Cleveland Orchestra.“This is the first time in our history that we are travelling for an international performance with a ballet company,” says Welser-Möst. Under his masterful music direction and choreography by the legendary Sir Kenneth MacMillan, the two groups will bring Shakespeare’s romantic tale of the star-crossed lovers to life on April 3 and 4.

Every year, the Abu Dhabi Festival hosts more than 500 international artists from over 17 countries for the region’s largest cultural extravaganza. As always with this event, which has been running annually since 2004, the programme features a diverse mix of genres and styles to encompass the varied interests of audiences in the cosmopolitan emirate. High-profile performances by world-renowned artists run alongside a packed schedule of events showcasing young stars from the region and further afield. “From the very beginning, the Abu Dhabi Festival has always sought to make the arts accessible and relevant to people of all backgrounds and ages,” says Her Excellency Huda Alkhamis-Kanoo, Founder of Abu Dhabi Music & Arts Foundation and Artistic Director of Abu Dhabi Festival. The 2020 line-up has been chosen to reflect the festival’s central theme, which is inspired by the UAE’s adopted vision for the year – 2020: Towards the Next 50. As the nation approaches 50 years of achievement, the festival joins with the country to celebrate their shared values of respect, tolerance and mutual understanding. In alignment with the UAE’s mission to invest in the country’s youth for a more successful and joyful nation, Ms Alkhamis-Kanoo emphasises the festival’s commitment to bringing “the very finest world-class artists to these shores, inspiring our youth to explore their own talents and abilities.” Set to become an annual highlight, this year’s event will raise the curtain on a brand-new series of performances titled Abu Dhabi Festival Youth Orchestra.

The debut concert will see the Emirates Youth Symphony Orchestra taking the stage to perform classics such as Ravel’s Boléro and Beethoven’s Violin Concerto in D major. Closing the show this year is two-time Grammy Award-winning Gregory Porter with his incredible jazz stylings. Known for his warm baritone vocals, Porter’s brand of jazz, soul and gospel has turned him into one of the world’s most in-demand artists. Each year, the Abu Dhabi Festival recognises a chosen nation as the “country of honour” with an aim to commemorate its culture and highlight its close diplomatic ties with the UAE, Nations such as Korea, India, Saudi Arabia, France, Italy, USA, Spain, UK, Belgium, Poland, Lebanon and Egypt have all been honoured in the past. This year, the event will celebrate all the countries that have collaborated with Abu Dhabi Festival over the last 17 years.

The move is in keeping with the values of tolerance, openness and humanity that the Emirati people hold most dear. Throughout the year, the festival supports the celebration of regional talent through its Arab Artists Abroad programme. As part of the initiative, Palestinian-Jordanian pianist, Karim Said, made his regional debut in October 2018 and Syrian clarinettist and composer, Kinan Azmeh, performed in Berlin in May 2019. Palestinian singer, Omar Kamal, embarked on a world tour last year, supported by the Abu Dhabi Festival, with performances in USA, Canada, UK, France, Germany and Oman. He will continue his international tour this season with two upcoming shows – one at the Lincoln Centre in New York on March 21 and the second at the Santiago Opera House in Chile in June. In the last two decades, the Abu Dhabi Festival has played a strategic role in establishing the emirate as the capital for arts and culture in a rapidly evolving region. Ms Alkhamis-Kanoo says: “We are all proud of its status as one of the leading, most prominent cultural and arts festivals in the region and the world.” André Gremillet, president and CEO of The Cleveland Orchestra, adds: “We are truly honoured to be the first orchestra from the United States to play at the Abu Dhabi Festival. It only goes to show that music truly is a universal language that transcends cultures and connects us all.” Franz Welser-Möst

On March 28, more than 60,000 spectators will gather at Meydan Racecourse for the world’s richest day in horse racing. It’s the culmination of yet another season of the Dubai World Cup Carnival, which runs across 10 weeks from early January to the last Saturday in March and ends with Dubai World Cup. The season’s final series of races will see top-calibre horses from around the globe compete for a staggering prize fund of US$35 million (AED128 million). First held 25 years ago, Dubai World Cup has transformed into a major international event, not only attracting the finest thoroughbreds and equestrian enthusiasts, but also a stylish trackside crowd, who are eager to revel in the electrifying atmosphere. A-list performers, who entertain the audiences with a spectacular after-race concert, are also in attendance.

Throughout the day, there are nine group races, but it is the final sprint that has become the most prestigious. Carrying a prize purse of US$12 million (AED44 million), Group 1 Dubai World Cup holds the title of the richest horse race in the world. The legendary American racehorse, Cigar, won the very first edition of Dubai World Cup back in 1996, ridden by Hall of Fame jockey Jerry Bailey. Since its inaugural running, the race had become so competitive that no horse had ever triumphed on more than one occasion in the history of the hotly-contested sport – that is, until last year. Irish-bred Thunder Snow made history in 2019 as the only two-time winner of Dubai World Cup. The thoroughbred is owned by Godolphin Racing, the stables of His Highness Sheikh Mohammed bin Rashid Al Maktoum, Vice President of the UAE and Ruler of Dubai. Clearly, the expectations have skyrocketed and all eyes are set on the thoroughbred this year to see if it bags yet another victory for the third time in a row.

While the Dubai World Cup culminates in its namesake race, throughout the meet, there is an exciting schedule of competitions, including the Dubai Gold Cup, UAE Derby and the Dubai Sheema Classic, which has a sizeable prize fund of US$6 million (AED22 million) up for grabs. Aside from the action on the track, there is also an incredible hospitality offering within Meydan Racecourse’s impressive mile-long grandstand. An array of venues promise unbeatable trackside views and guests can savour gourmet meals and beverages in five-star luxury. The First Class Lounge and Falcon Suite offer panoramic views of the track, while the Premium area in the grandstand is perfectly positioned opposite the finish line and boasts a variety of food and beverage kiosks.

There are also some great options for those seeking a closer look at the runners and riders ahead of the races. The Breakfast with the Stars package is staged on Meydan Racecourse’s Apron Views during morning track-work and features a lavish breakfast buffet, live commentary and interviews with trainers and jockeys. Similarly, the Winner’s Circle Restaurant provides guests access to the Parade Ring Lawns, allowing them to get a close-up view of the horses that have emerged victorious. Of course, like all great meets around the world, the revelry off the track is as much of a draw as the races themselves. At Dubai World Cup, the fashion stakes are high with the annual Jaguar Style Stakes competition awarding prizes to the trendiest racegoers, including Best Dressed Couple and Most Creative Hat. A prime opportunity for ladies to don extraordinary frocks and dapper gents to turn heads in their best suits, there is always plenty of sartorial flair on show both trackside and in the grandstands. With some of the finest thoroughbreds in the world competing for millions of dollars in front of an ultra-stylish crowd, the eyes of the racing world will be firmly set on Dubai World Cup. So on March 28, with equestrian history once again set to be made, Meydan Racecourse is the place to be and be seen. Courtesy Mathea Kelley

25 years of horse racing

Discover how Dubai World Cup has evolved over the years

Horse racing, as a sport, made its way to Dubai in 1981. Back then, races were held on a dusty camel track. In 1992, the Dubai Racing Club launched and within a year since its opening, the Dubai International Jockeys’ Challenge was organised. The event inspired the creation of a horse racing competition for enthusiasts of the sport. Dubai World Cup was then instated and the first race was held in 1996, which saw American super horse, Cigar, crowned as the winner. Today, Dubai World Cup holds the title of the world’s richest horse race. It started with a US$4 million (AED14 million) prize purse in 1996 and has eventually grown to a series of races worth US$35 million (AED128 million) topped by the final race of the day, which sees the winning thoroughbred and jockey walk away with US$12 million (AED44 million). E N T E R TA I N M E N T G UA R A N T E E D While the action on the track has always been an entertaining spectacle for horse racing fans, Dubai World Cup decided to dial up the action back in 2012 by introducing an after-race concert. Starting with US singer Toni Braxton, the line-up over the years has seen the likes of Jennifer Lopez, Kylie Minogue, Janet Jackson, Sia and Gwen Stefani draw the event to a close. R AISING THE BAR It’s not just the horses that go head to head on race day. When it comes to off-track fashion, the competition is known to be just as fierce. From ladies donning extraordinary hats and fabulous frocks, to dapper gents turning up in their best suits, each year the city’s style set comes together to battle it out for the crown of best dressed at the Jaguar Style Stakes. GOURMET DELIGHTS While all eyes remain fixed on the horses throughout each race, there’s plenty of gourmet treats on offer as racegoers wait for the next heat. From private terraces with unbeatable views of the track to premium lounges, where guests can enjoy meals and beverages, there is ample opportunity for those looking to enjoy the event in five-star luxury.  dubairacingclub.com

What makes the experience even more exciting is cutting down on the long road and ferry commute, and arriving at your destination in style. And en route, you can take in spectacular aerial views of the country’s natural and man-made icons from the skies.

Sir Bani Yas Island

A stunning combination of rugged landscapes, mangrove forests and coastal waters, the charming Sir Bani Yas Island can be accessed over a five-hour road and ferry journey. But a seaplane flight promises the quickest (and most scenic) commute. On the island, embark on a safari through the Arabian Wildlife Park, home to more than 13,000 free-roaming animals, including indigenous species like the Arabian oryx and sand gazelle. Even the waters surrounding Sir Bani Yas Island are teeming with dolphins, sea turtles and other exotic marine species. For history buffs, the destination boasts one of the region’s oldest archaeological sites with the most significant discovery being the ruins of an ancient Christian monastery that dates back to the late sixth century AD. While a day trip is a great option, those looking to make the most of their visit can extend their time on the island with a stay at a trio of plush Anantara resorts.

Luminous legacy —— Italian luxury watchmaker, Panerai, has unveiled the latest update to the classic Luminor Marina. Concierge takes a deep dive into the history of this iconic timepiece

The early 20th century was a critical point in time with the second industrial revolution well underway and war on the horizon. Although challenging, these decades saw rapid advances in technology. Warring nations invested much of their time and resources in developing their military operations, especially naval command units, given their position of prominence on the frontlines. In Italy, this led to the creation of a highly exclusive frogmen programme, which saw the bravest naval officers tasked with perilous underwater missions. Harsh marine conditions made extremely reliable equipment a basic necessity for these ocean-faring commandos. Naturally, the development of precision instruments, including depth gauges and compasses, became a primary focus. As a result, dive technology underwent a major transformation. At the turn of the century, one name leading the way as a supplier of precision tools to the Royal Italian Navy was Panerai. Although the equipment provided to these valiant frogmen was not invented (only developed) by the Italian maison, the luminous material found on the dials of their wristwatches was a Panerai discovery. The Panerai Radiomir has the distinction of being the brand’s f irst dive timepiece that was manufactured exclusively for the Italian First Submarine Group to enhance underwater legibility during WWII. Invented in 1916 by Guido Panerai, the grandson of founder Giovanni, the timepiece used a radium-based powder, from which the Radiomir derived its name. Its development revolutionised the underwater world, giving the frogmen a fighting chance in the depths of the sea. Timing was obviously a matter of life and death, and they relied heavily on these novel luminous devices created by Panerai as it allowed them to read the dial in murky water, or during night-time operations. On the wrists of these brave men, Panerai watches illuminated the darkest corners of the ocean.

Panerai calibre

In the years that followed, the Radiomir continued to evolve to better fit the Royal Italian Navy’s requirements. Several features were altered to implement the functions of the prototype. But one of the biggest updates came in 1949, after the radium-based powder proved to be radioactive. It was replaced with a new, self-luminous substance, which rechristened the Radiomir to the Luminor. Also called luminor, the new tritium-based compound was not only safer than the radium-based powder, but also brighter. It was patented in January 1949 and by the early 1950s, the transition from Radiomir to Luminor was complete. At this point, even the Egyptian navy was using the technology. But all of the company’s models continued to remain classified even after the war. It was only in the early ‘90s that Panerai decided to change course and start producing civilian timepieces. After spending years focusing on post-war dive tools, the brand made three limited-edition models available to the public. The Luminor, Luminor Marina and the Mare Nostrum became the first watches to go on sale. It was a historic moment, which paid tribute to the brand’s seafaring past, while also paving the way for a bright future.

The Luminor is one of Panerai’s most important watches of all time

Panerai watches illuminate the darkest corners of the ocean

High-tech materials for extreme performance Panerai stays at the top of their game with the use of several lesser-known, yet incredibly innovative materials in its timepieces, which are enhanced every year through the work carried out by the maison’s Laboratorio di Idee at the Neuchâtel manufacture in Switzerland. CARBOTECH™ A composite material based on carbon fibre, Carbotech™ was introduced to the world of watchmaking by Panerai. Known for its exceptional technical performance, the material has an uneven, matt black appearance, which varies according to the cut, giving every timepiece a unique aesthetic. To form Carbotech™, thin sheets of carbon fibre are compressed at a controlled temperature under high pressure together with a high-end polymer, PEEK (Polyether Ether Ketone). This binds the composite material, making it lighter, stronger, more durable and resistant compared to other materials used to manufacture watches. BMG-TECH™ The element of wonder lies not in the sleek appearance of BMG-Tech™ but in its core. The material is bulk metallic glass with a disordered atomic structure that makes it extremely light, incredibly robust and resistant to corrosion, shock, scratches and magnetic fields. It’s also reliable underwater and never loses its sheen. Essentially a metal alloy with the amorphous properties of glass, Panerai became the first manufacture to use the compound in watchmaking. It is formed as a result of

48

ADVERT_PANERAI.indd 48

a high-pressure injection process at a high temperature, followed by a cooling process lasting only for a few seconds so that the atoms do not have enough time to become arranged in an ordered, regular structure. ECOTITANIUM™ Panerai made headlines at SIHH 2019 by introducing the world’s first luxury timepiece made entirely of recycled titanium. Dedicated to the renowned world explorer and environmentalist, Mike Horn, the Submersible Mike Horn Edition symbolises Panerai’s commitment to protecting the planet by reducing waste. Every part of the timepiece’s complex case structure is rendered in EcoTitanium™. The material is aviation-grade recycled titanium, sourced directly from the scrapyards of major aircraft manufacturers. The strap is also ecologically sourced, made out of recycled plastic. CERAMICA A synthetic ceramic based on zirconium oxide powder, the ceramica used by Panerai is both aesthetically appealing and incredibly functional. With an even matte finish, the material is extremely robust, up to five times harder than stainless steel. COMPOSITE Used in the brand’s more sporty timepieces, the Panerai Composite is a synthetic ceramic material obtained by an electrochemical ceramization process of aluminium, which makes it resistant to wear and tear and extremely light.

Timepieces to watch

Discover a fine blend of creativity and avant-garde materials in these iconic timepieces crafted by luxury watchmaker Panerai LUMINOR MARINA CARBOTECH™ – 44 MM – PAM01661 The latest timepiece to join the newly relaunched Luminor Marina collection, this striking new model boasts a Carbotech™ case and the brand’s iconic Sandwich™ dial with blue Super-LumiNova™ markings. The timepiece features Panerai’s well-known P.9010 calibre with a power reserve of three days. It’s fitted with the function for rapidly setting the hour hand, a process which simultaneously adjusts the date. Tough yet surprisingly light, it weighs only 96 grams and is water-resistant to a depth of 300 metres. The timepiece pays tribute to the rich heritage of the iconic Luminor Marina which was first launched 70 years ago. SUBMERSIBLE BRONZO – 47MM – PAM00968 One of the brand’s most iconic pieces, Panerai surprised the world when it introduced this new diving watch with a case made entirely of bronze. A fascinating choice of material, bronze matures with the passage of time and acquires a patina which gives it a unique character. Weighing 161 grams, this automatic, mechanical timepiece features the P.9010 calibre with a threeday power reserve. Luminous hour and date markers make the dial legible in extreme conditions, even 300 metres below the water’s surface. SUBMERSIBLE BMG-TECH™ – 47MM – PAM00799 Featuring two of the most innovative Panerai materials in one watch – a BMG-Tech™ case with a Carbotech™ bezel – this timepiece boasts extreme strength, scratch resistance and lightness. The uneven, matt black appearance of the Carbotech™ makes this piece aesthetically appealing. An incredibly functional diving watch, the unidirectional rotating bezel enables the times of immersion to be accurately calculated. Legibility in the dark is ensured by the Super-LumiNova® coating applied to the markers and the large skeletal hands.

Today, the Luminor’s historical roots remain obvious. Military heritage will always be in the DNA of the brand, but its luxury appeal is undeniable. The watches now use smaller, in-house movements but their defining style has been maintained and celebrated through several new iterations of the original, which continue to evolve and retain their value. In 2014, a vintage Panerai set a record at a Sotheby’s auction of ‘Important Watches’, in Geneva. An extremely rare stainless steel Luminor from 1955 was acquired for a record sum of AED1.6 million. The unique Luminor featured a rotating polycarbonate bezel with small luminescent markers. The removable bezel, a fixture never seen before with Panerai, suggests this was probably a prototype that never went into production. The Luminor, with its fascinating history, will be forever recognised as one of the brand’s most important watches of all time, continuing to inspire future timepieces. Earlier this year, Panerai released the Luminor Marina Carbotech™ – 44 mm (PAM01661), a smaller, simpler version of the original. The slickest model yet? Possibly. Amazonico, DIFC

Celebrity chef Sandro Silva tells us what’s in store at the newly opened Amazonico in DIFC, which promises a flavourful journey around Latin America

Hailing from the shores of sunny Spain, Amazonico has officially opened its doors in Dubai. The flagship rainforest-themed venue in Madrid has won acclaim for its cuisine and boasts a glamorous clientele that includes the Beckhams, Cristiano Ronaldo, Rita Ora as well as top European politicians and socialites. At the helm is chef Sandro Silva, who together with his wife, Marta Seco, brought the concept to life in Spain in 2016. Building on the brand’s success, the duo expanded into London last year and soon followed it up with a Dubai outpost, bringing a slice of South America to the emirate. Although the DIFC venue is only a few months old, acquiring a reservation is already proving challenging with waitlists stretching for several weeks. But when you finally get in, you’ll discover that the venue is definitely worth the buzz. Amazonico stands out as the only haunt in DIFC to offer a sprawling three-storey space comprising a ground-f loor lounge, a mid-level main dining area and a rooftop bar. The design is a visual feast with heavy tropical inf luences present throughout, including lush foliage hanging from the ceiling and exotic plants adorning the walls. It sets the tone for an

immersive dining experience that Dubai’s gourmands are sure to love. The menu explores the vibrant Latin American culinary landscape, with subtle hints of European and Asian flavours. We recently had the chance to go behind the scenes and talk to chef Silva about his latest venture, while sampling his signature creations, such as the marinated lamb kofta as well as the avocado and mango salad, which is the most requested item on the menu. You’ve added a third venue to the Amazonico portfolio within a span of three years. How different is the experience in Dubai, compared to Madrid and London? “Each Amazonico is unique, specif ic to their respective locations. The DIFC venue has been thoughtfully designed, keeping Dubai’s opulent dining scene in mind. We adapted the menu to suit local preferences. But at every location, Amazonico strives to provide a fine dining experience that far exceeds the region’s standards of Latin American cuisine, offering impeccable service and a transcendent atmosphere.”

globe and at various stages of my life. These people not only taught me how to cook, but they also showed me how to draw from various life experiences to make each dish truly unique and wonderful. I believe that travel is the key to learning more about various cuisines and cooking techniques first hand. And this philosophy holds true in our kitchens at Amazonico.” Chef Sandro Silva

“Expect a visual and gastronomical journey that explores the cultural diversity of Latin America” Amazonico, DIFC

Would you say that’s the Amazonico philosophy? “I’d say it is to create an atmosphere where the guests bring the energy into the restaurant as soon as they step in through the front door. The venue belongs to them; they create the vibe and liven it up. We’ve designed the whole concept as a bubble, one that allows every diner to truly disconnect from reality while enjoying the vibrant ambience and savouring the delectable cuisine.” What is the Amazonico experience all about? “It can be summed up as an ode to nature. Anyone who visits will instantly recognise that greenery is an integral part of the restaurant’s DNA. The concept is inspired by the foundations of South American culture, the cuisine, local eating rituals and the lush, natural environment. Through the intriguing décor and menu, visitors can expect a visual and gastronomical journey that explores the cultural diversity of Latin America. It’s an invitation to take a trip down the Amazon river to experience the heritage of Brazil, Colombia and Peru, with subtle inf luences from Japan, China and India. Farm-fresh, organic ingredients of the highest quality are used to craft the award-winning menu. And we rely on unique cooking techniques, inspired by our individual heritage, giving each dish a distinctive touch.” Tell us more about your background. What inspired your passion for cooking? “The list of people who’ve inspired me is endless, right from my mum and my uncle to Spanish-American chef José Andrés. It also includes the people I’ve met during my travels around the

What is your earliest memory in the kitchen? “That would be when I moved from Brazil to Asturias in Spain at the age of 11. After school, I used to visit my uncle’s restaurant. I vividly remember him cooking the traditional Brazilian picanha. I still remember the way he used to cut and prepare the meat with such dexterity, the sounds of the outer part of the tender meat crackling under the intense heat and the delicious scents emanating from the grill.” What’s your favourite dish on the menu? “It’s the traditional Brazilian picanha. I have so many childhood memories associated with this simple yet f lavourful dish. It brings all those fond memories back. My uncle once told me the story behind its name. It originated in the city of São Paulo at a popular churrascaria called Bambu, which Brazilian industrialist Francisco Pignatari often visited. His favourite type of meat was the top sirloin but on one occasion, the restaurant mistakenly served him another cut of meat instead. Although he did not notice the difference initially, he ate it, loved it and enquired about the cut, to which the Argentine server replied, ‘donde se pica la aña, which means, where the cow is branded with a hot iron.” How do you spend your free time when you’re not busy in the kitchen? “You will find me with my wife, Marta, and our kids. We are always in the quest for new adventures. I like to bring them with me on my travels to cultural events and different countries. It helps broaden our horizons as a family.” Any tips for up and coming chefs? “I truly believe that real food doesn’t have ingredients. Real food is ingredients. To be a great chef, you have to be willing to experiment. All great chefs are willing to try something new and push the boundaries of what they know.” For bookings or more information   04 5713999  or    reservations@amazonico.ae

The art of tea ——— Somewhere between lunch and dinner lies afternoon tea, a centuries-old tradition that, with a dash of luxury, is a blissful way to pass the time

Roman Lounge, Caesars Palace Bluewaters Dubai

The tradition of taking afternoon tea was made fashionable in 19th century England when aristocrats gathered to sip blends from fine china crockery and indulge in sumptuous cakes, pastries and breads. Although the custom was first introduced to the royal court by Catherine of Braganza, wife of King Charles II during the 1660s, it was only in the 1830s that the practice came to be seen as a new form of society soirée. Anna Maria Russell, the 19th-century Duchess of Bedford, requested that light sandwiches be brought to her room in the afternoons to stave off hunger pangs, as the evening meal wasn’t usually served until 8.30pm. The duchess invited others in her inner circle to join her and the convivial custom caught on, giving birth to a timely tea tradition that has been passed down through the years. Traditionally consisting of tea with sandwiches, scones and pastries, the concept has been developed to include the finest ingredients and has become an occasion in its own right. The UAE, with its penchant for luxury, has pinned this special tea service down to a fine art with an offering to suit any occasion and taste. From themed menus to decadent touches with bubbles, Concierge savours the best afternoon teas in town.

ESCAPES JAPAN As springtime begins in Japan, the country waits eagerly for sakura (cherry) trees to burst into blooms. Once they do, the world f locks to the Far Eastern nation for the famous cherry blossom season as cities become engulfed in blush tones and trees in the countryside form f loral pink canopies. Hike in the foothills of Mount Fuji and you’ll witness an ocean of cherry blossoms beneath. While it makes for a remarkable sight, the season is but f leeting, with most blooms lasting only a week or two. The sakura zensen or cherry blossom line starts from Kyūshū in the south mid-March and advances towards the north, passing Kansai and Kantō, before culminating in Tōhoku at the end of April. Balkan beauty —— With majestic mountains, breathtaking beaches and lush landscapes, Montenegro proves that good things come in small packages

Brooding mountains running along the Bay of Kotor give this town an almost laidback feel, but Kotor is anything but that. The bustling city streets by day and buzzing mood by night seem juxtaposed against the city’s medieval architecture. Eager to acquaint ourselves a little more with the local vibe, we made our way to the Old Town Square. A maze of museums, churches, art galleries, street food stalls, cafés, clubs and shops selling all manner of trinkets, it is here where you can feel the city’s pulse. It made for a truly eventful afternoon that we spent taking in the chaos and the calm. A little further down the street from the Old Town Square lies one of the town’s biggest highlights – the Castle of San Giovanni, a 19th-century fortress that towers 1,200 metres above the city. Although it’s a rigorous walk up to the top (approximately 1,350 steps), we were accompanied by several other travellers on our journey, eager to capture a stunning shot with the Montenegrin flag perched at its highest point with panoramas of the entire city in the background. Although the ramparts appeared dilapidated in several places, the fortress itself was remarkably well preserved – it was almost like journeying back in time.

Kotor

We decided to reward our three-hour effort of hiking up the fortress with a lazy evening by the beach. Jazz Beach, located 20 minutes away from Kotor, is one of the largest sandy stretches in Montenegro and also incredibly popular, which, for us, meant that there was not a single empty spot in sight on the sand. Luckily, a hot dog vendor revealed that a hidden beach existed roughly 10 minutes away from where we were. A well-guarded secret among locals, there are no references to it online. But if you walk along the stretch of food stalls towards the east from Jazz Beach, you’ll know you’ve found the spot when you stumble upon a pebbly shore with deep blue waters in the backdrop Day two in Montenegro took us close to the southern tip of the country, where, in the tiny town of Stari Bar, a 2,000-year-old olive tree is still standing strong. The town itself doesn’t have much to offer aside from this living piece of heritage, but history buffs will love the medieval architecture with olden-style houses and cobbled streets. From Stari Bar, the capital city of Podgorica can be easily accessed. It might not be as vibrant as Kotor, but it’s home to one of the country’s most stunning sights – The Niagara Falls. While the attraction might not resemble its namesake – the thundering cascades in Canada – it’s beautiful in its own right. During our visit on a Sunday afternoon, we saw families setting up a picnic by the stream, and taking breaks for a dip. Having not packed a picnic for ourselves, the nearby restaurant, also called Niagara, made for a wonderful lunchtime spot. With tables set along the river, we enjoyed our afternoon feeding the ducks that swam up close to the banks before dipping into the warm waters ourselves. On our way back to Kotor, we took a slighter longer (albeit scenic) detour for a photo stop along Skadar Lake. The largest lake in Southern Europe, the views are best found up the winding road just before descending down to the lake, from where you can see the border of Albania. It gets eerily quiet after sunset and with no streetlights to guide you

back down the mountainous road, it’s better to plan Lake Skadar as an early stop. The most adventurous of all, day three began with a heavy downpour in Montenegro, but it did not dampen our plans. Having decided to move our base further north, we planned our day to make as many stops along the way to take in the country’s most prominent tourist attractions. We started out towards Mount Lovcen, where the mausoleum of Petar II PetrovićNjegoš, an early 19th-century ruler of Montenegro, lies at its peak. We drove up to the highest point possible and from there, it was a 460-stair climb to the summit. While the imposing structure itself is a stunning architectural marvel built in black stone and marble, it’s the views from the top that are equally worth your attention. From this point, we continued on our journey further north with one pitstop in the central town of Zeta. It is here that you will find one of the world’s most visited religious sites among Orthodox Christians. Resting almost miraculously in a cliff face 900 metres above the Zeta valley, the gleaming white Ostrog Monastery is a true Montenegrin symbol. Such is its legacy, it is said that even nonbelievers commonly “swear to Ostrog” when promising to do something. Sectioned into two parts, the lower monastery has vivid frescoes which were created in the 17th century and from here, pilgrims can walk barefoot up the steep road to the upper monastery. After taking a few moments to admire the stunning murals, we chose to drive up the narrow winding path to the shrine on top. Although

magnificent, its position at the edge of the cliff doesn’t give visitors the chance to grab a glorious shot from the front. But it’s a wonder to behold because its creation still remains a mystery as no one has been able to figure out how the structure was built. In fact, it gives the impression that it has grown out of the rock, which adds to its intrigue. Finally, we set out on a stretch towards our new base in the sleepy town of Zabljak. Dotted with glittering glacial lakes, dizzying canyons and limestone peaks piercing the clouds at 2,000 metres, this sleepy town is one of Mother Nature’s true masterpieces. Its biggest highlight is Durmitor National Park, which sprawls out generously over the entire town and runs along the boundary of the Durmitor mountain range, where expert hikers flock to in search of adventurous pursuits. For beginners like us, there were several smaller, well-marked trails in the national park, some traversing lower peaks, a few others boasting high chances of encounters with brown bears and wolves. But with no inclination whatsoever to make new furry friends (or potentially turn into their food), we decided to trek the easiest and most scenic route on our first day in this new town. The main walking path in Durmitor National Park begins and ends at the entry point to the Black Lake (or Crno Jezero as it’s locally known). Being tucked away in the heart of a conifer forest gives this glacial lake its striking emerald colour. Spanning over three kilometres, the path took us a little less than two hours to complete. Park benches, placed at various points along the trail, offered momentary relief from

  FLIGHTS  Flydubai offers direct flights from Dubai to Tivat in Montenegro on Mondays and Fridays from June to September. Connecting flights are available all year round.

Dotted with glacial lakes, dizzying canyons and limestone peaks, Zabljak is nature’s masterpiece navigating the undulating terrain while doubling up as vantage points to stop and admire the breathtaking landscape. We playfully indulged every impulse to pick up strewn pinecones, steered kayaks down the lake and also witnessed a local memorial service by the banks. Barring a handful of cosy cafés that serve up delicious local staples, the town almost comes to a standstill after sunset. But we were pleasantly surprised to discover that Zabljak is the country’s hub for adventure sports. Fitting, once you learn that it is home to Tara Canyon, which is Europe’s deepest canyon. Tara River, on the eastern edge of the National Park, pierces through the mountain to form this 1,300-metre-deep gorge. The stunning cascades of green running along the edges of the mountain are best viewed from the Tara Bridge that arches over the canyon. But for those who like taking in scenic sights with a side of thrills (much like my travel partner), zip lining and rafting are two popular activities offered here. Following three eventful days in the north, which filled our diaries with new hiking adventures, zip lining expeditions and rafting excursions, we returned back to Kotor on our last day in the country. With one last evening on our itinerary, some well-deserved relaxation was on the cards, which we accomplished by checking into a plush beachside retreat in Porto Montenegro to wrap up our visit in style.

Sheikh Zayed Grand Mosque

The American-born, UAE-based author recently launched her first book at the Emirates Airline Festival of Literature last month. Read on as she explains how Dubai has served as a source of inspiration

The UAE has always been home to me. When I was just beginning high school, my family left the United States and settled in Dubai. Even though I travelled abroad for university, I always came home for the holidays and after graduating, I returned to the emirates to start my own family. Living in Dubai means that I have the best of both worlds: the Western one in which I was raised and the Eastern side in which my heritage is rooted. I love that during prayer time, you always hear the adhan from a nearby mosque. The city may be cosmopolitan and heavily westernised, but hearing the call to prayer has an immediate grounding effect. It’s a reminder to stay in tune with one’s spirituality, even in a city that stands for all things futuristic. I love witnessing these stark contrasts, though some might find it unsettling. It’s proof of a tolerant and open-minded society, symbolising a culture where both extremes can thrive side by side in harmony. It’s this juxtaposition that offers abundant inspiration for creative types. Dubai is always pulsing with optimistic, forward-thinking energy – the perfect stimulus for designers, artists, stylists and writers like me. The emirate’s dynamic vibe has had a tremendous influence on my work. The stories I take on are primarily fashion-related and culture-based, heavily inspired by fashion, local talent and entrepreneurs in the Middle East. My new book, Modesty: A Fashion Paradox, revolves around similar themes. Away from the desk, the city has plenty to offer. When the weather is pleasant, an outing to Kite Beach is always a treat, especially if it includes indulging in a lotus shake from Salt. Winter weekends in Dubai often involve trips to the desert, where we build campfires, roast delicious s’mores and exchange stories. When it comes to dining, my favourite café in the city is Tania’s Teahouse. It’s clear why this cosy spot is the seventh most Instagrammed café in the world. The vibe is upbeat yet soothing and the décor is peppy and uplifting. As for the food, the pastas are delicious and the earl grey scones are a must-try. Lately, I’ve been recommending XStrike Dubai to everyone. It’s a newly-opened combat simulation experience where players are split into two teams and equipped with vests and guns to accomplish missions. The thrilling experience helps to develop teamwork, leadership and strategising skills, and is also a great outlet to let off some steam. For shopping, I always recommend a visit to Global Village during the winter months for a break from the airconditioned malls and a taste of the various cultures that make up our cosmopolitan city. And it might sound clichéd but a desert safari is a must. It’s the most experienced tourist activity in Dubai but it’s sure to be an adventure you won’t forget. In the capital, the Sheikh Zayed Grand Mosque truly stands out. Besides being a prime example of Middle Eastern architecture, this Abu Dhabi icon is a mesmerising sight. And finally, when life gets hectic, as it often does, a getaway to Ras al Khaimah is the perfect antidote. The emirate is my go-to staycation spot when I need time away from the bustling city. It promises complete serenity and beachside bliss.
