â€˜The Souk at Qaryat Al Beriâ€™ is a unique venue and the first of its kind in Abu Dhabi. Ramadan flavours

Abu Dhabi is a city where Arabian culture and traditions combine with urban life. The development of Abu Dhabi over the last decade has been dramatic, making the emirate an important tourist destination. Some of the main attractions in the UAE capital include the Corniche, which features parks, beach access and sporting activities. Additionally, there’s the world’s largest indoor theme park, Ferrari World Abu Dhabi on Yas Island. The majestic Sheikh Zayed Grand Mosque is a national landmark. The main prayer hall features one of the world’s largest chandeliers – 10 metres in diameter, 15 metres in height and weighing over nine tonnes. The mosque’s seven gold-coloured chandeliers also feature thousands of Swarovski crystals and intricate glasswork. For more great photo opportunities, head to the beach at Saadiyat Island and Marina area. Other historical attractions in the emirate include Heritage Village at the Corniche Breakwater and Qasr Al Hosn – the city’s oldest building – which was home to the emirate’s ruling Al Nahyan family. A permanent, free-to-enter exhibition at Qasr Al Hosn Centre features oral testimonies and historic photographs that help bring this important monument to life. The Women’s Craft Centre is a souvenir shop with a difference. Run by the government, the centre helps local women sell traditional handicrafts. If visitors are interested in high-end shopping, The Galleria on Al Maryah Island is an ideal choice and houses all the best luxury brands. For a special night out, reserve a table at Abu Dhabi’s only revolving lounge bar and grill – Stratos at Le Royal Méridien Abu Dhabi. The chic destination boasts fantastic 360-degree views of the city, best enjoyed at sunset as the city begins to sparkle against the night sky.

Before the holy month of Ramadan comes to a close around July 17, make sure to attend one of the iftars or sohours taking place every night at hotels, including Rosewood Abu Dhabi (pictured) and Emirates Palace. Iftar is the meal taken after sunset when Muslims break the day’s fast, while sohour takes place later on, from 9pm onwards and is typically a more leisurely affair. The dress codes of the different Gulf states vary subtly. In the UAE, men opt for a crisp white kandoura teamed with a white ghutra or headdress while the preference in some neighbouring countries, including Saudi Arabia and Oman, is towards checked or coloured fabric. The ghutra is worn over a tight crochet cap known as a gahfiyya and held in place by the coiled agal band.

Ahead of Louvre Abu Dhabi’s planned opening in December, new additions to the museum’s permanent collection are being showcased at Manarat Al Saadiyat. The latest acquisitions are divided into two public displays. Louvre Abu Dhabi Stories: Al Qalam, hosted from June 21st to July 25th, explores the art of the written word with rare manuscripts and a dual-sided folio from a Colonel Polier album (pictured). Louvre Abu Dhabi Stories: Immortal Figures follows from July 28th until August 30 th and features historic sculptures from around the world. Desert People have long called the UAE desert home. For hundreds of years the native Bani Yas tribe navigated its way through this harsh environment and forged a living from the arid landscape. Known as Bedouin, meaning ‘desert dwellers’, the tribe was originally based at Liwa Oasis, 150 kilometres from the city of Abu Dhabi. At the time, the waters of the Arabian Gulf brought with it fish supplies and herds of gazelles that are indigenous to this region, while the freshwater springs of Jebel Hafeet – one of the UAE’s tallest mountains – and a number of small oases scattered throughout the desert provided them with a lifeline. Today, the Liwa Oasis in Abu Dhabi is a popular attraction in part due to its location on the northern edge of the Rub Al Khali desert. Known as the largest sand desert in the world, it’s believed to cover nearly 650,000 square kilometres and includes parts of Saudi Arabia, Oman andYemen.

A wonderful way to learn more about Bedouin life is by visiting Al Jahili Fort in Al Ain that houses a permanent exhibition on British explorer Wilfred Thesiger’s journey through Arabia. It also tells the story of his two Bedouin companions Salim bin Kabina and Salim bin Ghabaisha, in the historic fort’s visual room. Thesiger embarked on his legendary journey through the Empty Quarter during the late 1940s, which led to a book of his experiences, Arabian Sands, which is widely respected the world over as one of the first examples of travel literature.

Mountains

A short two-hour drive south from Abu Dhabi city is Al Ain, home to Jebel Hafeet. The mountain rises 1,249 metres and straddles the border with Oman. A popular attraction, visitors can drive up to strategically located look-out points for impressive views over the city. There is a Mercure Grand Jebel Hafeet property located just over 900 metres up so visitors can stop for quick meal and take in the views, while at the base of the mountain is the Green Mubazarrah area, which features hot water springs and charming streams.

For thousands of years, the mountain was a focal point for early settlements in the country and people today are still drawn to its charms. Closely monitored by the Environment Agency – Abu Dhabi (EAD), Jebel Hafeet still remains home to several rare animal species such as Blandford’s Fox, the Egyptian vulture and Brandt’s Hedgehog, while recent sightings of newborn Arabian tahr – an endangered mountain goat – have bolstered the mountain’s significance to the emirate’s biodiversity. Jebel Hafeet is often mistakenly referred to as the highest mountain in the emirates, but that honour actually goes to Jebel Jais in Ras Al Khaimah which peaks at a lofty 1,910 metres.

Islands Abu Dhabi’s mainland coastline is around 764 kilometres long and its waters feature around 215 islands, including Saadiyat Island. Set to become a global arts destination with the opening of the Louvre Abu Dhabi in December, followed by Zayed National Museum and Guggenheim Abu Dhabi in the coming years, its cultural developments are being nurtured

with the surrounding natural environment. The Saadiyat Beach area regularly plays host to Hawksbill turtles who live in the shallows offshore and come here to nest between April and July. Access to the beach is also restricted to visitors in order to avoid damage to the low coastal dunes that are vital to the emirate’s flora and fauna. Arabian gazelles, birds, reptiles and smaller mammals such as gerbils can often be spotted within the Saadiyat Dune Protection Zone, while Humpback and Bottlenose dolphins, stingrays and sharks call the coastal waters off Saadiyat Island home. The biggest natural island in the country is Sir Bani Yas, which is accessible by both boat and plane. The tranquil desert island is also home to one of the region’s largest wildlife parks where more than 10,000 animals roam free, a number of which are endangered and extremely rare. One such creature is the Arabian oryx, a breed that is now extinct in the wild but is carefully nurtured on Sir Bani Yas island, now home

to a herd of around 500. Other animals that coexist harmoniously on the park’s wide, open plains include gazelles, emus, giraffes, Arabian leopards and an enormous variety of birds with some 170 species spotted here over the years. Visitors can get up close and watch them in their natural environment on safari drives, nature walks or kayaking around the island with Desert Islands Resort & Spa by Anantara. The five-star property, which received the internationally recognised Green Globe Certification in December 2011, is the only hotel presently operating on the island.

Mangroves

A highlight of the emirate’s varied topography are its abundant mangrove forests. The mangroves are commonly seen around Abu Dhabi’s islands and sheltered coastal areas. Known as Qurm, the forests stretch for miles and provide essential shelter to local marine life, including fish, turtles, sea snakes and birds.

The closest mangrove forest from Abu Dhabi city is the Eastern Mangrove Lagoon National Park, which is a 15 minute drive from the Corniche. Several tour operators, including Noukhada Adventure Company (02 5581889) and Sea Hawk (02 6736688) offer kayaking tours around the waters of the tranquil Eastern Mangroves. Additionally, there are vast areas of mangrove forests that can be found along Dalma, Sir BaniYas, Bu Tinah, Abu Abyadh, Al Aryam, Al Dhabeia and Saadiyat. Efforts are also underway to ensure the forests continue to thrive in the emirate. For example, the Environment Agency (EAD) has recently partnered with Abu Dhabi’s Tourism Development and Investment Company (TDIC) to plant a remarkable 750,000 mangrove saplings on 25 percent of Saadiyat Island. It is yet another reflection of the government’s commitment to preserving the emirate’s natural assets.

Abu Dhabi is a city that is known for its budding art scene. With Louvre Abu Dhabi anticipated to open later in 2015 and the Guggenheim following suit next year, this sandswept corner of the Arabian Gulf is establishing itself as an international art hub, set to rival major players such as London, New York and Paris. Yet while the big-name art projects have caused a surge of global interest, there is also a homegrown art scene, with many regional names that have become internationally established in recent years. This was underlined recently when Texasbased photographic and arts education organisation, FotoFest, held the View From Inside exhibition in the capital during Abu Dhabi Festival. The showcase, which ran from March 20 to April 20, featured more than 140 works by 35 leading Arab artists from 12 countries in the MENA region. Among them were Emirati talents including Lamya Gargash who is known for her haunting images of Emirati architecture; Mohammed Kazem who is respected as one of the UAEâ€™s most prestigious conceptual artists; and leading multi-media artist Khalil Abdul Wahid whose evocative video work has been the source of much praise. Concierge chats to the artists about their thoughts on their homeland and inspirations.

“The term ‘stop and smell the roses’ sums up my approach to art,” says visual artist and photographer Lamya Gargash. “Life is very fast paced and, as a result, there are things that are overlooked. That’s where I see beauty.” A keen observer, Gargash honed her skills at Central Saint Martins College in London and has received acclaim in recent 1

years, thanks to her haunting photographs of Emirati interior and exterior architecture. Earlier this year she showed two images from her Majlis series (2009) at the View From Inside exhibition. “I am very interested in what people consider banal and ordinary,” explains Gargash, when quizzed about the inspiration behind Majlis. The collection, which focuses on the room in Emirati homes where people traditionally gather to socialise, is Gargash’s attempt to share ideas about culture and how entertaining plays a huge role in Emirati society. “The majlis comes from the Arabic verb ‘jalasa’ which means ‘to sit’. Some majlises serve as communal social spaces, others are designated for women or men only, while some are more casual and designed for everyday use. It is very much part of our culture and I wanted to highlight that aspect of Emirati home life.” This isn’t the first time Gargash has used UAE architecture as an inspiration for her work. In 2007 her series Presence consisted of photographs of Emirati homes through different stages of abandonment. “The series came about because I was shooting at my parent’s old house. It occurred to me that experiences lay within the rooms and spaces

and I knew I wanted to explore this further. What intrigued me most while working on this series was the lack of attachment that individuals and families have to their former quarters in this region and how they want to move to new sites. I wanted to engage people’s psyche and perhaps both celebrate and mourn these spaces.” Gargash, whose work is exhibited at The Third Line gallery in Dubai, is the first to admit that her desire to capture the nuances and details about her homeland is somewhat at odds in a country that often has a strong preoccupation with the future. “Someone once told me that I am crying over spilt milk because, through my work, I am not letting go of the past, but I see myself as an observer. I see so much beauty around me that people fail to acknowledge sometimes and I hope I can open their eyes to what they might otherwise overlook,” Gargash explains.

Mohammed Kazem In 1998, when Emirati artist Mohammed Kazem photographed everyday objects piled on top of domestic weighing scales, not only was he pushing the boundaries of contemporary art in the UAE, but he was also raising a social issue about the exactitude of modern life. “Scale was part of a series called Autobiography. Basically, I weighed everyday objects on a scale and took pictures of them. The point of the piece was to show how people try to measure everything in life,” explains Kazem. Kazem’s multi-media work, exhibited at Gallery Isabelle van den Eynde in Dubai, is often inspired by social and political issues. As one of the UAE’s most prolific conceptual artists he has addressed topics as diverse as the rights of labourers to the Arab Spring through his work. “There are two sides to my art. Sometimes I will raise a social or political issue and relate it to a specific area; on the other hand, I have many pieces that are just inspired by my thoughts and the way I look at nature.” Certainly, the latter is evident in some of the recent work from the Directions series. It consists of a series of GPS co-ordinates

that Kazem built into the installation, filling the numbers with actual material (sand or rocks) from where he was standing when he collected the data. “Directions is about existentialism about myself and where I am going. It is a continuing project. I will keep going with it until I die.” With a career spanning more than 30 years, Kazem has observed the growth of the art scene and credits efforts by Abu Dhabi Tourism & Culture Authority to “put the UAE on the map in the art world”.

The desert is a dominant landscape in the UAE, from the enormous rolling dunes in the Empty Quarter to the flat gravel plains stretching towards the Hajar Mountains, yet how many of us take the time to observe its intricate beauty? This was exactly the inspiration behind video and acrylic artist Khalil Abdul Wahid’s piece, The Road. “The recurring theme in my work is that beauty is all around us, even if we can’t always see it,” says Abdul Wahid. “For The Road, I filmed a dirt track in the desert out in the

middle of nowhere and captured the movement of the sand on a windy day. Visually, I wanted to show the beauty of the desert, but I also wanted to show that there are beautiful moments that pass us by without us even realising it.” As well as its natural beauty, Abdul Wahid also draws inspiration from the UAE’s builtup environment. “When it comes to getting the creative juices flowing, Saadiyat and Yas Island are very inspiring places,” says Abdul Wahid. “The development happening there is amazing. It’s a moment of change and you can literally see it taking place in front of your eyes. When I am there I get an injection of creative energy.” An accomplished artist since childhood, Abdul Wahid is also the director of visual arts at the Dubai Culture and Arts Authority, where he assists both up-and-coming as well as established artists to showcase their work. “We are at an international level,” says Abdul Wahid of the UAE art scene. “You only have to look at the recent View From Inside exhibition at Abu Dhabi Festival to see that. It was such a great selection of work from all the artists and I genuinely felt proud to be among them.”

Long before the discovery of oil, pearls were a source of wealth for the people of the United Arab Emirates. Pearl divers would sail for months at a time, working from sunrise to sunset, scouring the depths of the Arabian Gulf for the natural treasure. Making scents An icon of the fragrance industry, Michael Edwards charts the history of perfumes and looks to the future

When it comes to fragrances, Michael Edwards literally wrote the book. As author of Fragrances of the World, which is referred to as an industry bible because of its breadth and insight into perfume classification, Edwards has helped shape the way people perceive and enjoy perfumes today. Recently, Edwards entered into a partnership with International Group of Luxury Fragrances (IGLF), a consortium of Saudi Arabian retailers, fragrance experts and international brands that have united to foster awareness and promote global fragrances in the region. On a recent trip to Dubai, Concierge met Edwards for an insight into the industry and the future of perfumery.

Allure of perfumes Enigmatic Michael Edwards is a walking encyclopedia of fragrances – he can name niche ingredients from iconic perfumes and the exact launch dates of certain brands at a moment’s notice. To Edwards, perfumes are not mere commodities, they are a “sociological phenomenon” reflective of the times. “The pivotal change in the industry came in 1973 with the launch of Charlie by Revlon. At the end of the ’60s and beginning of the ’70s, women began to work. Until that time, perfume had been mainly gifts that men bought and gave to women. However, Charlie was the first fragrance that triggered a change. Suddenly, women started to buy it. Then came Opium by Yves Saint Laurent in 1977, so that by the end of the ’70s, women were spending more money on perfumes than men. That changed the whole game,” explains Edwards.

The ’80s saw an explosion of designer fragrances by Oscar de la Renta, Ralph L auren, Calv in K lein and more, and the world of fragrances became headily glamorous. “That was when the west fell in love with perfumes. Now, perfume has almost become, in many ways, a commodity. There are so many new fragrances. Twenty years ago, for Fragrances of the World, we tracked just over a 100. Ten years ago, we tracked over 700 and last year alone, it was over 1,700. When you’re faced with that many fragrances, unless something stands out, the passion isn’t there,” says Edwards. The industry remains just as strong, however, and niche fragrance brands are leading the charge, capturing some of the magic from scents of the past.

“What is moving the passion back into perfumes is the rise of the artisan fragrances such as Kilian and L’Artisan Parfumeur,” says Edwards, who also credits the Middle East as surprising the world of perfumery, not only by being one of the fastest growing markets for consumption of fragrances but also for its unique approach to promoting them. “When I was approached by the distributors in the International Group of Luxury Fragrances (IGLF) in Saudi Arabia and asked to lend my expertise, I was intrigued. For the first time, someone was taking the whole region and saying, let’s show them something different,” says Edwards. The global popularity of perfumes inspired by oudh – an ingredient long celebrated in the region – has been tremendous, with luxury brands including Gucci, Tom Ford and Chopard all boasting their own elixirs. “People in the Middle East wear oudh in the morning and put something else on top of that later in the day. They are masters at mixing and this is where they have an advantage because many western fragrances just don’t last long enough,” states Edwards.

Secret to success Traditional homegrown fragrances from the Middle East have the same potential for success as Chanel No. 5 and Yves Saint Laurent’s Opium. After all, the secret ingredient is luck, says Edwards. “There was a time in the 1960s and ’70s when Chanel No. 5 was cheap, but by the time Charlie was launched, it was prestigious. Chanel in the US was distributed in thousands upon thousands of pharmacies. Chanel’s Alain Wertheimer, at the end of the ’70s, said enough was enough and bought back the business and cut distribution. Its quality had never changed

but its promotion did. Then Karl Lagerfeld arrived and we saw a re-establishment of the previous magic. Today, we forget that Chanel went through a tough time for 30 years. They were great in the 1950s and then in the 1960s and ’70s they faded, only to come back stronger in the 1980s.” Brands today have a vision to ensure perfumes are of the highest quality, which is why Burberry brought its fragrance division in-house and Hermès appointed Jean-Claude Ellena who enjoys total creative freedom. “That is key,” Edwards stresses. “Give people the freedom to create. Part of the problem with modern perfumes is that because it costs so much to launch, brands want the best chance of getting their money back. They want most people to like a perfume but every great fragrance polarises. When Angel by Thierry Mugler launched, people didn’t understand it. Still, to this day, 80 percent of people loathe it and the rest are totally addicted to it. Every great work of art must polarise, otherwise it is just Musak for your senses.”

Future of perfumery

While natural resources are in danger of depletion, Edwards insists the quality of fragrances is not likely to waiver and they have a bright future ahead. “For me, a great perfume would have a body of fine natural ingredients on a skeleton of innovative synthetics. Yes, natural resources are dying out and brands like Chanel are buying up their fields for the long-term. However, the other side of it is that headspace technology [a technique developed in the 1980s to elucidate odour compounds present in the air] allows us to clone many natural ingredients that couldn’t be done before,” says Edwards. Ginger f lower is an ideal example as it blooms and dies within 24 hours. Headspace technolog y lets perfumers identif y the molecules and recreate them for fragrances, while also opening the door to unique, synthetic molecules. It’s opening up a whole

world of possibilities, as Edwards explains: “I was talking to a young perfumer about his fascination with the potential of new molecules. He uses them in big strokes, much like a painter paints with wild strokes. We’re coming into a new style of perfumery so what was the past is the past. The future is only what we’re starting to glimpse now. Just as tools in art change, I think that the tools in perfumery have changed.”

Fragrance Wheel Edwards’ decades of experience has led to several innovations, including the Fragrance Wheel, which is still used as a reference tool to understand fragrance classifications in a retail environment. He is currently working on an update of his famed book, Perfume Legends: French Feminine Fragrances, which sparked critical insight into the history of perfumery. Edwards explains: “I didn’t think Perfume Legends would open up the world for perfumers as it did. I’m now working on the next edition, American Legends. My database from Fragrances of the World now acts as a reference for the industry with information on 18,000 fragrances. I think I’ve created enough...I’m in my 70s now and I’m happy that I’m still doing something I love. Perfume is my passion; it really is my life.”

Talking tapas Michelin-starred chef Sergi Arola serves his signature take on Spanish cuisine in Abu Dhabi

Sergi Arola is a man of many surprises. Not only does he boast a two-Michelinstar restaurant but he was also awarded a national gastronomic award and plays guitar in an alternative rock band called Los Canguros. There are many layers to the enigmatic chef and this is also reflected in his new restaurant p&c by Sergi Arola, at Shangri-La Hotel Qaryat Al Beri, Abu Dhabi. Like many celebrated chefs, Arola’s passion for cooking started at a young age, but for rather unexpected reasons as Concierge finds out. “There are a few contributing aspects to why I started cooking. As a child I was an extremely picky eater. So much so that I took matters into my own hands and started to cook exactly what I wanted to eat. That fuelled my understanding of cooking but my main inspiration was my grandfather. He launched me on my culinary journey and gave me the drive to turn my passion into my lifestyle,” says chef Arola. “I now also understand that you take inspiration from all around you and can learn on a daily basis. My experiences, family, friends, loves, travels – these all form the basis of my daily inspiration.”

Arola went on to enrol at the Hospitality and Catering School in Barcelona while also exploring his interest in music, playing guitar and composing songs for the Los Canguros (Kangaroos) alternative band that gained acclaim in the late ’80s. To help cover expenses, Arola began to work in small restaurants in Barcelona before stepping through the doors of L’Aram. Arola then joined Talaia Mar under the guidance of Ferran Adria, as well as award-winning el Bulli, and honed his craft before being offered the chance to take charge of a small restaurant in Madrid: La Broche, a cosy neighbourhood restaurant. A year later, it was awarded its first Michelin star. Another star and more restaurants in some of the world’s most iconic cities followed, but Arola remains grounded and still retains an inherent raw energy, passion and respect for fine flavours. In fact, he tells Concierge,

that he could happily live on simple Spanish Jamón Ibérico ham and olive oil for the rest of his life. “Success is relative and is for others to judge. My children are my greatest success and the ability to do what I love every day surrounded by great people is the measure of success. That said, achieving my first Michelin star when I was 28 was a proud moment. It really was the product of hard

work and a cornerstone from which to build,” says Arola, adding that he’s now excited about his latest restaurant in the UAE capital – p&c by Sergi Arola. “Abu Dhabi strikes me as an authentic city. I strive for authenticity in all I do, so that’s what drew me here. p&c by Sergi Arola is my first venture in the Middle East so the location was important. I fell in love with Abu Dhabi the first time I experienced it. There is a beautiful calmness here. Thomas Guss, the general manager of Shangri-La Hotel was the person who first suggested Abu Dhabi to me and once I started exploring it, I knew it made sense. I am excited about incorporating Arabic tastes and styles into my cooking, taking inspiration from the environment,” says Arola. chance its popularity is set to cross borders to Gulf shores. Since opening in April, the restaurant, which was previously Pearls & Caviar, has been well received in Abu Dhabi’s discerning community. With ambient lighting and jazz legends on the radio, it’s an elegant setting that also stands out for its flavourful yet uncomplicated take on Spanish cuisine. “p&c follows my main cooking mantra – simplicity. The concept here is picapica tapas-style. The menu is designed to share, picking at different dishes while enjoying each other’s company, so it’s very social. The cuisine is Catalan, highlighting many of my favourite dishes from my other restaurants in Madrid, Barcelona and Istanbul,” says the chef. 4

The menu includes traditional Spanish favourites, including paella, signature patatas bravas and lots of seafood and sweet delights, but with a twist. For every creation, it is the little details that make the difference. For example, a popular Catalan dish is pan con tomate (tomato with bread) where a toasted baguette is rubbed with fresh garlic, and topped with ripe tomato and finally, drizzled with olive oil and a bit of salt. However, Arola likes to add the salt to the bread before the tomatoes, which sounds

quite insignificant, but does change the overall flavour. This playful experimentation of ingredients and balance of flavours is one of the reasons why Arola is in a league of his own. The chef also plans to marry the best of Arabian and Spanish cuisine, as he explains: “I want to bring local flavours to the food. However, it takes time – sometimes up to a year – to find the right balance and mix. I was at the souk in Abu Dhabi recently and smelt traditional oudh and straightaway started to think about how to incorporate this into my cooking. I am excited to see what we can create. I find Mediterranean and Arabic cuisine very similar in terms of the sharing approach, importance of family meals and even the f lavours and style. Tapas and mezze have the same vision and philosophy. I am a fan of any cuisine that is rooted in good ingredients and is true to itself. “I plan to open more restaurants and am going for my third Michelin star this year, something which will require much dedication and hard work. “Every restaurant I am involved in, I put part of my soul into it. I don’t just put my name above a door and walk away. So by visiting p&c by Sergi Arola you get a little slice of me.”

Grand finale Savour innovative Emirati desserts in the capital

A culinary celebration of local customs and traditions, Emirati desserts are quickly rising in popularity, offering visitors an entirely unique experience. Dishes boast rich, fragrant flavours using aromatic honey, milk, nuts, dates and exotic spices such as saffron, cloves and cardamom. Local desserts complement, yet contrast, with conventional western desserts. For example, the Emirati favourite, awamat, is essentially a dish of delicious crispy, sticky dough balls, while chobab, a local take on the humble pancake, is further sweetened with the use of date juice and enhanced with saffron. Concierge speaks to experts in the capital to learn more about different desserts, new ingredients and modern interpretations of classic sweets.

When it first opened its doors in Emirates Palace in 2010, Mezlai was the first and only five-star restaurant dedicated to local cuisine in the country. “The ultimate aim was to create a platform for Emirati cuisine and also to reintroduce it in a luxurious context, allowing it to enter the fine dining scene,” explains chef Ali Salem.

“Emirati food is characterised by an incredible richness of flavours. As a trade hub between Iran, the Levant and India, the country’s cuisine represents a mixture of different regional tastes,” says Salem. “Emirati sweets are an integral part of the health regime in local society. Families consume them at various times of the day, whether for breakfast, lunch or dinner and

especially as a snack in the afternoon, or what’s locally known as ‘huyour’. “Most commonly prepared desserts include balaleet or deep fried-noodles with rose water and mohalla, a fried mixture of eggs, flour, milk and water with sugar. “I would say that festive banquets are never complete without Emirati desserts, whether for special occasions or religious holidays,” says Salem. One of the many reasons the flavours of Emirati desserts are so unique is the fact that, unlike western desserts, flour is not just mixed in but also fried. Also, instead of butter, a local form of clarified butter, known as ghee, is used. “Emirati desserts involve the mixture of spices such as cardamom and saffron. The difficulty stems from using them in the right amounts and keeping a balance between the different flavours so none of them dominates. I make sure to prepare my own spice mix, then I fry the spices and lastly I grind them,” adds Salem. He has succeeded in putting his own spin on Emirati desserts at Mezlai, paying great attention to presentation and by adding a new, unexpected ingredient. For example, a traditional rice pudding called farni is presented in an elegant long-stemmed glass, while chobab crêpes appear as thin, creme-stuffed rolls delicately garnished with gold-plated and silver leaves. Drawing inspiration from ancestral culinary arts, Salem went on to create a new dessert called ‘House of Emirati Honey’.

Inspired by aseeda, a traditional pumpkin pudding, the delicious treat consists of pumpkin slices resting on a rich, creamy base of Syrian yoghurt with honey sauce, and topped with refreshing mint and zaatar ice-cream. The charming Al Fanar Restaurant & Café at Venetian Village, nestled within The Ritz-Carlton Abu Dhabi, Grand Canal, is another restaurant gaining attention for its authentic Emirati menu. “While Emirati food is inf luenced by Indian cuisine – due to historical trading links with the country – authentic Emirati desserts have their own identity as they are mainly made with dates. In the past, it was the only ingredient available for making sweets until the early 1970s,” explains the restaurant’s owner, Hashem Al Marzouqi. Asidat Al Tamor is the most popular dessert at the restaurant. Made from dates and roasted flour, it is also not commonly available at other restaurants in Abu Dhabi, which many visitors appreciate. “We serve Emirati history on a plate. Here, diners get to enjoy not only the most authentic local cuisine, but they also have

the chance to travel back in time to discover our way of life and how it has evolved over the decades with the restaurant’s barastihut design and displays of historic artefacts. “Food is an essential part of any country’s culture and Al Fanar Restaurant & Café offers a fascinating insight into our past,” explains Al Marzouqi. Like chef Ali Salem at Mezlai, another man driven to try new and innovative varieties of traditional desserts is executive chef Hareesh Gopalan from Fanr Restaurant

at Manarat Al Saadiyat in the Saadiyat Cultural District. The restaurant offers a contemporary fusion of Mediterranean, European and Asian as well as traditional Arabic cuisine. “There are many really great Emirati desserts that aren’t well-known outside the region. “Favourites of mine are balaleet, a sweet vermicelli dish, followed by ataif, which are Arabic-style filled pancakes and kunafa, the Middle Eastern-inspired cheese pastry. All of these desserts individually boast unique ingredients that make them special, but, by adding a creative, modern twist, they can become all the more exciting,” says Gopalan. Fanr Restaurant recently introduced an innovative Camel Experience menu that features a new take on the traditional Arabic bread and butter pudding, Umm Ali. “I make this particular pudding using camel milk instead of cow’s milk and I’ve also added chocolate chips, making the dessert a favourite for anyone with a sweet tooth. “Recently, the team and I experimented with traditional sagaw. This is made with coffee and served with caramelised banana, butterscotch sauce, qabeet and homemade ice-cream. It’s a new and exciting dish for the menu,” says Gopalan. Interest in Emirati cuisine is increasing both regionally and internationally, thanks in part to talented chefs who are keen to preserve the country’s culinary heritage, while boldly devising and presenting new interpretations of the classics.

YAS MARINA CIRCUIT Home to the annual Formula 1 Etihad Airways Abu Dhabi Grand Prix, Yas Marina Circuit is one of the capital’s most famous sporting attractions. Visitors can experience it all year round at one of the many events on the annual calendar or on a tour that takes in its state-ofthe-art facilities, from the drag strip and karting centre to the track itself, which boasts the longest straight in Formula 1.

5 SHEIKH ZAYED GRAND MOSQUE Built by the late Sheikh Zayed to help create a bridge between faiths and create greater cross-cultural understanding, the Sheikh Zayed Grand Mosque is a must-see for any visitor to Abu Dhabi. The third-largest mosque in the world, this majestic structure is comprised of over 1,000 columns and 82 domes embellished with semi-precious stones, gold and marble. Inside, the spectacle is equally impressive with glittering chandeliers, spectacular floral motifs adorning the walls and a vast hand-woven Persian carpet in the main prayer hall.

FERRARI WORLD ABU DHABI The first ever Ferrari theme park is home to Formula Rossa, the fastest roller coaster on the planet, which reaches speeds of up to 240 kilometres per hour as well as the Fiorano GT Challenge, which offers an exhilarating simulated racing experience. There are rides for all the family here, from fastpaced coasters to leisurely tours and interactive games.

Originally from Brest in France, I have lived in the UAE since 1998. I joined Yas Marina, Abu Dhabi, in 2009 as general manager to oversee its development into a world-class five-star international yachting, food and beverage and leisure destination. There’s so much to see and do here. I like staying active at weekends and a favourite pastime of mine is taking to the seas with one of our yacht charters at Yas Marina such as Captain Tony’s, Azure Marine or Safwa Marine and relaxing as I take in the views or wakeboarding with Broadie Boats. When I feel homesick, I dine at Bord Eau in the Shangri-La Hotel Qaryat Al Beri, Abu Dhabi, where the chef de cuisine prepares seasonal fresh produce that is flown in directly from France. 55&5th, The Grill at The St. Regis Saadiyat Island Resort has to be one of my favourite steakhouses in Abu Dhabi – not only great food but exceptional service. I also enjoy dining at Cipriani in Yas Marina, which has a beautiful outdoor terrace with stunning views. The menu features signature dishes from Harry’s

Bar in Venice and classic Italian favourites. Afterwards, Iris at Yas Marina is a great spot for a nightcap or sundowners with friends. The Corniche is a great place to relax with a coffee and take in the stunning views. Asia de Cuba on the Corniche overlooks the beachfront and fuses Asian with Latin flavours really well. I can’t recommend the sweet and sour tofu or the black bean and plantain enough. I always take visitors to the Sheikh Zayed Grand Mosque as it’s such an iconic landmark and architectural marvel. Everything from the elaborate Islamic designs in the interior of the mosque to the stunning landscaped gardens outside make it so special. When it comes to shopping, I’m a fan of the new Yas Mall in Abu Dhabi. I really admire its sustainable design and the range of stores it has is unrivalled. One of the best events in Abu Dhabi is the Formula 1 Etihad Airways Abu Dhabi Grand Prix in November. Yas Marina really comes to life then and I love the bustle of the crowds. The atmosphere is electric.
