Tight Hamstrings

Tight hamstrings are a common complaint from a range of our populace, from office workers to athletes. Your hamstrings are a group of 3 muscles that run along the back of your thigh. 3 of the biggest causes of tight hamstrings are: • Too much sitting • Compensation because other muscles are weak • Overuse or underuse Here's an exercise that helps relieve hamstring tightness, prevent injury and improve range of motion in your hips: Start by laying on your back. With one leg straightened flat on the floor, raise the other leg with your hands wrapped around back of your thigh. Very slowly begin to bend and extend your knee. You'll feel your hamstring muscle at work. Repeat 12-15 reps on each leg. Remind yourself to move through these slowly. Don't hold your breath. This exercise gently increases the length of your hamstring and helps to increase range of motion. If you can make this part of your daily routine, you'll find that you have amazingly gained flexibility and improved your function. As with any exercise, consult with your doctor if there is a concern. Live better, feel better, be your best self. Quinoa Stuffing INGREDIENTS

1 butternut squash - peeled, seeded & cubed 1 red onion, peeled & diced 3-5 cloves garlic, with peel on 1 Tbsp. vegetable or canola oil salt & pepper 1½ cups quinoa, rinsed 3 cups chicken or vegetable broth or water zest of one orange 2 cups roughly-chopped fresh spinach ⅔ cup dried cranberries ½ cup shelled pistachios

INSTRUCTIONS

Pre-heat oven to 425°. Line a baking sheet with aluminum foil. In a large mixing bowl, toss butternut squash, onion, and garlic cloves until they are evenly coated with oil. Spread in an even layer on the baking sheet. Season generously with salt and pepper. Roast for 30 minutes, or until soft and cooked and the edges begin to slightly brown. Remove and set aside. Discard the garlic peels. Meanwhile, stir together quinoa, broth (or water) and orange zest. Cok according to package instructions. Once cooked, set aside. Add the cooked veggies, quinoa, spinach, cranberries and pistachios to a large mixing bowl, and gently toss to combine. Season with additional salt and pepper if need be. Serve warm.
