Crust:
1. Place graham crackers in a food processor; pulse until finely crumbled.
2. Add butter; pulse until crumbs are moistened.
3. Transfer to a 9-inch pie dish, pressing firmly into bottom and up sides. Refrigerate for 1 hour.
Peanut butter mixture:
1. Place cream cheese, peanut butter, and powdered sugar in mixing bowl and beat on medium-high speed until light and fluffy, 2 to 3 minutes. Transfer to a large bowl, and set aside.
2. Clean mixer bowl and whisk attachment, and wipe dry.
• 1/2 cups of chocolate graham cracker crumbs
• 1/4 cup unsalted butter (or margarine), melted
• 8 oz. cream cheese, softened
• 1 cup creamy peanut butter
• 3/4 cup unsifted powdered sugar
• 2 cups heavy whipping cream
3. Add whipping cream to cleaned mixer bowl; beat on medium-high speed until medium peaks form, 2 to 3 minutes. Gently fold 2 cups of the whipped cream into peanut butter mixture. Transfer filling to prepared pie crust, and gently smooth top using a rubber spatula.
6. Top with remaining whipped cream. Refrigerate at least 3 hours or up to 8 hours (or overnight).
7. To garnish, sprinkle top with chocolate covered peanuts, chocolate syrup or any topping of your choice!
