Baked Chicken Thighs With Cherry Tomatoes
Preheat the oven to 375°F. Place chicken thighs in a 9x13 baking dish & sprinkle both sides with salt. Cut the tomatoes in half & place in a bowl with the garlic cloves. Toss with balsamic vinegar and olive oil. Pour the cherry tomato mixture over the chicken squeezing the tomatoes and garlic around the chicken pieces. Keep the chicken skins to be exposed so they brown. Lay sprigs of rosemary over the tomatoes. (If you are using dry rosemary, just mix it in with the tomatoes.) Bake, uncovered for 45 minutes, until the chicken is well browned on top and cooked through. Remove from the oven and cool for 5 minutes. Serve with toasted crusty bread, noodles or rice! NOTE: This produces a lot of flavorful liquid. You can use it for dipping crusty toasted bread. Or you can remove the chicken, tomatoes, and garlic to a serving dish and pour the strained liquid into a small saucepan, and boil until reduced to a thicker sauce. Pour this sauce back over the chicken or pour it over rice or pasta.

WALKING SPEED Live better, feel better, be your best self.
This simple exercise will help improve your walking speed and increase distance. The key is to HOLD for 3 seconds, and as you get stronger, try increasing the hold. You’ll notice your muscles engage deeper and your steps will miraculously be more powerful.

• Stand with feet shoulder-width apart (hold onto something lightly for support). • Lift your heels, focus on pushing UP from your toes while activating your calves. Squeeze together thighs and buttocks. Pull in your navel. Everything from the waist down is strong and straight. Relax your shoulders and breathe. Hold for 3 seconds. • Lower your heels, then lift your toes up (you will need to bend forward at the waist). Hold for 3 seconds. Work towards 10-15x, for 2 sets, 2x per day (gradually increasing hold time). I recommend doing this exercise upon waking and before bed in order for it to become a regular daily routine.
